RESUMO

The migration of heavy metals into aquatic ecosystems is a concern for the safety of aquatic organisms and human health. However, the migration of heavy metals from habitats to the food chain in freshwater ecosystems requires extensive exploration. We extensively investigated the levels of heavy metals in multiple media of freshwater ecosystems and explored their migration from freshwater habitats to the food chain. The results showed that the concentrations of Cr, Cu, Cd, Zn, Sb, and Pb in sediments, Cr in mollusks, and Cd in clams exceeded their standard limit values. Feeding habits, species, and body length considerably affected heavy metal levels in fish, whereas regional differences, body length, and weight considerably affected heavy metal levels in mollusks. The bioconcentration capacity (improved biotawater (sediment) accumulation factors) of the muscles was higher than that of the gills and visceral mass. Mollusks were strongly enriched in Cu, Cd, Zn, and Mn in their habitats, whereas fish were more favourable for the accumulation of Cu, Zn, and Cr. Heavy metals in sediments pose a higher risk to aquatic organisms than those in the overlying water. Trophic level (TL) (δ15N) considerably diluted levels of most metals, whereas Cu and Zn levels increased along the organic matter pathway (δ13C) in the entire aquatic food chain. The levels of typical pollutants, such as Cu, Zn, As, Cd, Pb, and Cr changed considerably along the organic matter pathway in mollusks. The levels of heavy metals in fish were not affected by TL or organic matter pathway, except for Cu. The potential risk of consuming aquatic organisms from Poyang Lake was ranked as clams > snails > fish for adults and children and As in aquatic organisms was the primary contributor to health risk.

The term food loss and waste (FLW) refers to discarded food during the different stages of the food chain. Food loss occurs during the initial stages of the food chain, and food waste occurs during the final stages. The relation between FLW and circular economy (CE) is particularly important for countries which are beginning to implement actions or regulations on this topic. These proposals may have an impact in strategic sectors of their economy. The objective of this review document was to analyse the regulations of FLW and CE in some countries located throughout the European Union, Asia, Africa and Latin America. To fulfil this objective, FLW and CE regulations were identified and analysed in 12 countries located in the aforementioned regions. The analysis showed that France, Spain, Japan and Uruguay included objectives related to FLW in their CE legislations focusing on food waste reduction, whereas China, Chile, Argentina and Mexico did not include FLW in their CE legislations. African countries did not have CE legislations in place yet. France and Japan have had more success in the reduction of FLW. In conclusion, CE regulation should include FLW regulation to achieve more efficiency at reducing and reusing these residues.

The emergence of human exposure (HE) to micro/nano-plastics (MN-P) via the food chain is a significant public health concern. This study aimed to evaluate HE from ingesting vegetables, fruits, and grains using linear regression models to analyse MN-P size-concentration relationships and bioaccumulation factors (BF). For Irish adults, the Estimated Daily Intake (EDI) of MN-Ps was calculated, considering potential internalisation in these foods, with a sensitivity analysis addressing variability and uncertainty. The simulated mean (SM) root stomatal diameter in selected plants was 620 nm, indicating the potential uptake of MN-Ps smaller than this size. The SM BF for vegetables was 24.24 for nanoplastics (NP). Limited NP data led to the use of metal nanoparticle (MNP) data, yielding an overall BF of 3.22 for pooled vegetables, fruits, and grains. Potential HE levels of MN-Ps in agricultural soil were simulated at 6.05 × 104 n/kg (SM), with predicted MN-P levels in edible plants at 1.47 × 106 n/kg of food products. The simulated EDI of MN-Ps through all crops was 1.62 × 103 n/kg bw/day, with vegetables contributing the most to MN-P exposure, followed by fruits and grains. Sensitivity parameters are ranked as MN-P abundance in soil > bioaccumulation factor > food consumption.

Infections caused by bacteria originating from tainted food sources are a widespread concern due to their large economic impact and detrimental effects on public health. We aimed to explore literature focusing on the presence of Salmonella in the food supply chains of Gulf Cooperation Council (GCC) countries and to provide an overview of available information concerning health-related issues and the status of salmonellosis in humans in GCC countries. The reviewed evidence underscored a gap in our comprehensive understanding of the prevalence of Salmonella in the food supply of GCC countries. Molecular characterization efforts to pinpoint the sources of Salmonella in these nations were limited. Surveys targeting Salmonella in the food supply of GCC countries have been infrequent. While qualitative data indicated the presence or absence of Salmonella, there was a noticeable lack of quantitative data detailing the actual quantities of these bacteria in chicken meat supplies across GCC countries. Although reports regarding Salmonella in animal-derived foods were common, the literature highlighted in this review emphasized the persistent challenge that Salmonella pose to food safety and public health in GCC countries. Addressing this issue requires concerted efforts to enhance surveillance, improve control measures, and promote greater awareness among stakeholders in the food supply chain.

Changes in the existence of mangroves will have an impact on changes in food webs in their respective areas. The purpose of this study was to determine the food source of the macrozoobenthos community within the Lubuk Damar mangrove ecosystem. Stable isotopes, carbon and nitrogen were used to describe the food sources for macrozoobenthos in the mangrove ecosystem of the Lubuk Damar Ecosystem, Aceh Tamiang, Indonesia. The stable isotope analysis of 13C and 15N was carried out using Isotopic-Ratio Mass Spectrometry. Potential food sources at the study site based on stable isotope ratios ranged between -29.08‰ to -20.66‰ (δ13C) and 4.07‰ to 5.63‰ (δ15N); macrozoobenthos -25.00‰ to -14.76‰ (δ13C) and 5.59‰ to 7.73‰ (δ15N). The potential food sources tested at the study site consisted of seven sources, but not all food sources in the ecosystem were consumed by the invertebrate community. This study shows that mangrove leaf litter serves as a food source for some invertebrates, such as the bivalves, gastropods, polychaetes, sipunculans, brachiopods and crustaceans. The results of this study evidence that the examined mangrove ecosystem has a function as a provider of food sources in the surrounding waters, therefore its existence is very important supporting diversity of coastal waters.

With the increasing amounts of microplastic (MP) deposited in soil from various agricultural activities, crop plants can become an important source of MP in food products. The last three years of studies gave enough evidence showing that plastic in the form of nanoparticles (<100 nm) can be taken up by the root system and transferred to aboveground plant parts. Furthermore, the presence of microplastic in soil affects plant growth disturbing metabolic processes in plants, thus reducing yields and crop quality. Some of the adverse effects of microplastic on plants have been already described in the meta-analysis; however, this review provides a comprehensive overview of the latest findings about possible adverse effects and risks related to wide microplastic occurrence in soil on crop production safety, including topics related to changes of pesticides behavior and plant pathogen spreading under the presence MP and possibly threaten to human health.

BACKGROUND: Seasonal movements of animals often result in the transfer of large amounts of energy and nutrients across ecosystem boundaries, which may have large consequences on local food webs through various pathways. While this is known for both terrestrial- and aquatic organisms, quantitative estimates on its effects on food web structure and identification of key pathways are scarce, due to the difficulty in obtaining replication on ecosystem level with negative control, i.e. comparable systems without migration. METHODS: In this study, we estimate the impact of Arctic charr (Salvelinus alpinus) migration on riverine ecosystem structure, by comparing multiple streams with strictly resident populations above natural migration barriers with streams below those barriers harboring partially migratory populations. We compared density estimates and size structure between above and below populations. Diet differences were examined through the analysis of stomach contents, changes in trophic position were examined by using stable isotopes. To infer growth rate of resident individuals, back-growth calculation was performed using otoliths. RESULTS: We find higher densities of small juveniles in partially migratory populations, where juvenile Arctic charr show initially lower growth, likely due to higher intraspecific competition. After reaching a size, where they can start feeding on eggs and smaller juveniles, which are both more frequent in partially migratory populations, growth surpasses that of resident populations. Cannibalism induced by high juvenile densities occurred almost exclusively in populations with migration and represents an altered energy pathway to the food web. The presence of large cannibalistic charr feeding on smaller ones that have a similar trophic level as charr from strictly resident populations (based on stomach content) coupled with steeper δ15N-size regression slopes illustrate the general increase of food chain length in systems with migration. CONCLUSIONS: Our results thus suggest that the consumption of migration-derived resources may result in longer food chains through middle-up rather than bottom-up effects. Furthermore, by occupying the apex of the food chain and feeding on juvenile conspecifics, resident individuals experience reduced competition with their young counterparts, which potentially balances their fitness with migratory individuals.

Microorganisms, genetically modified or not, may be used in the food chain either as active agents, biomasses or as production organisms of substances of interest. The placement of such microorganisms or their derived substances/products in the European market may be subject to a premarket authorisation process. The authorisation process requires a risk assessment in order to establish the safety and/or the efficacy of the microorganism(s) when used in the food chain as such, as biomasses or as production strains. This includes a full molecular characterisation of the microorganism(s) under assessment. For certain regulated products, the use of whole genome sequence (WGS) data of the microorganism is established as a requirement for the risk assessment. In this regard, data obtained from WGS analysis can provide information on the unambiguous taxonomic identification of the strains, on the presence of genes of concern (e.g. those encoding virulence factors, resistance to antimicrobials of clinical relevance for humans and animals, production of harmful metabolites or of clinically relevant antimicrobials) and on the characterisation of genetic modification(s) (where relevant). This document provides recommendations to applicants on how to describe and report the results of WGS analyses in the context of an application for market authorisation of a regulated product. Indications are given on how to perform genome sequencing and the quality criteria/thresholds that should be reached, as well as the data and relevant information that need to be reported, if required. This updated document replaces the EFSA 2021 Statement and reflects the current knowledge in technologies and methodologies to be used to generate and analyse WGS data for the risk assessment of microorganisms.

The patchy distribution of microplastics (MP) and their size range similar to planktonic organisms, are likely to have major ecological consequences, through MP ingestion, food dilution, and transfer across trophic levels. Our study applied a community module using tritrophic food chain with zooplankton as prey, and a planktivorous seabass fry as predator. We conducted a series of feeding experiments and recorded the direct uptake of MP under six different concentrations ranging from 25 to 800 particles L-1. We also estimated the indirect transfer of MP via trophic link. The ingestion rates for Brachionus plicatilis, Mesocyclops isabellae, and Lates calcarifer, were 3.7 ± 0.3 MP ind-1 min-1, 1.69 ± 0.1 MP ind-1 min-1, and 3.51 ± 0.52 MP ind-1 h-1, respectively. In the presence of a natural diet, rotifers and copepods ingested significantly lower number, whereas, fish fry ingested a higher number of MP, suggesting further vulnerability to the consumers of MP-contaminated fish and potential biomagnification at higher trophic levels. Overall, the MP uptake rate increased with increasing concentration, and finally leveled off, indicating a type II functional response to MP concentration. The presence of natural diet led to a lower Km value. In the indirect transfer experiment, 74 % of B. plicatilis and 78 % of M. isabellae individuals were contaminated with MP, when offered as prey. Brachionid mastax and MP particles were observed in the gut of copepods. The fish fry gut content also recorded brachionid mastax, MP-contaminated copepods, and MP particles, showing direct evidence of trophic transfer pointing to a cascading effect on higher trophic levels including humans via piscivory.

The pervasive presence of microplastics has emerged as a pressing global environmental concern, posing threats to food security and human health upon infiltrating agricultural soils. These microplastics primarily originate from agricultural activities, including fertilizer inputs, compost-based soil remediation, irrigation, and atmospheric deposition. Their remarkable durability and resistance to biodegradation contribute to their persistent presence in the environment. Microplastics within agricultural soils have prompted concerns regarding their potential impacts on agricultural practices. Functioning as significant pollutants and carriers of microcontaminants within agricultural ecosystems, microplastics and their accompanying contaminants represent ongoing challenges. Within these soil ecosystems, the fate and transportation of microplastics can detrimentally affect plant growth, microbial communities, and, subsequently, human health via the food chain. Specifically, microplastics interact with soil factors, impacting soil health and functionality. Their high adsorption capacity for hazardous microcontaminants exacerbates soil contamination, leading to increased adverse effects on organisms and human health. Due to their tiny size, microplastic debris is easily ingested by soil organisms and can transfer through the food chain, causing physiological and/or mechanical damage. Additionally, microplastics can affect plant growth and have the potential to accumulate and be transported within plants. Efforts to mitigate these impacts are crucial to safeguarding agricultural sustainability and environmental health. Future research should delve into the long-term impacts of environmental aging processes on microplastic debris within agricultural soil ecosystems from various sources, primarily focusing on food security and human beings.

Organophosphate esters (OPEs) have been widely produced and used, while little is known about their occurrence in the food chain and potential sources. In this study, raw cow milk, cow drinking water, and feed were collected from pastures across China, and OPEs were tested to explore the occurrence and transmission of OPEs in the food chain and to further assess daily OPE intakes for cows and humans via certain food consumption. The median level of ∑OPEs (sum of 15 OPEs) in raw milk was 2140 pg/mL, and tris(1-chloro-2-propyl) phosphate (TCIPP) was the most abundant OPE. Levels of OPEs in water were lower than those in raw milk except for triethyl phosphate (TEP), while levels of most OPEs in feed were significantly higher than those in raw milk (adjusted by dry weight). The estimated dietary intake of OPEs via feed for cows was 2530 ng/kg bw/day, which was much higher than that via water (742 ng/kg bw/day), indicating that feed was a more critical exposure source. For liquid milk consumers, the high-exposure (95th) estimated daily intakes (EDIs) of ∑15OPE were 20 and 7.11 ng/kg bw/day for 3-17 years and adults, respectively, and it is obvious that cows had much heavier OPE intake. Finally, the calculated hazard indexes (HIs) suggested that the intake of OPEs via cow milk consumption would not pose significant health risks to the Chinese population.

The distribution of deoxynivalenol (DON) and its derivatives 3-acetyldeoxynivalenol (3-Ac-DON) and 15-acetyldeoxynivalenol (15-Ac-DON) throughout the wheat processing chain were systemically evaluated by one-to-one corresponding studies of the whole processing chain. DON and its derivatives were determined by liquid chromatography-mass spectrometry (LC-MS/MS) in wheat grains and corresponding wheat bran, wheat flour, and semi-finished and finished wheat flour-based products. This investigation showed that wheat grain processing to wheat flour significantly decreased the levels of DON by approximately 52.7%-68.2%. Wheat flour processing of wheat flour-based products decreased the DON concentration by approximately 7.0%-70.6%. Among the processing methods, biscuit making showed the largest reduction (70.6%). The co-occurrence frequency of DON with low levels of 3-Ac-DON and 15-Ac-DON was significantly greater in wheat grains and wheat bran than in wheat flour. For wheat flour-based products, only the distribution pattern of 3-Ac-DON was observable in processed wheat flour products prepared using grains heavily contaminated with DON. In China, to the best of our knowledge, the processing factors (PFs) of DON in wheat flour and wheat flour-based products were systematically evaluated for the first time. The average PF of DON was 0.35 for wheat flour and the average PFs were 0.37-0.84 for wheat flour-based products, with biscuits having the smallest PF (0.37), indicating DON significantly decreasing in biscuit making. Furthermore, dietary exposure assessment of DON indicated an acceptable overall health risk in Chinese consumers, with the highest exposure being observed in infants and young children. This study provides important references for classified management of DON limits in wheat and its various products in China.

The cultivation of forage crops on wastewater-irrigated soils, while common in many developing countries, poses significant risks due to heavy metal pollution, particularly Lead (Pb) and Nickel (Ni). This practice, aimed at addressing water scarcity challenges and providing affordable irrigation, was investigated for its ecological and human health implications across three diverse sites (site A, site B, and site C). Our study unveiled increases in Pb concentrations in contaminated soil, cultivated with Sesbania bispinosa showing the highest Pb accumulation. The Ni concentrations ranged from 5.34 to 10.43 across all forage crop samples, with S. fruticosa from site C displaying the highest Ni concentration and S. bicolor from site A exhibiting the lowest. Trace element concentrations in the specimens were determined using an atomic absorption spectrophotometer. The Pb levels in the blood, hair, and feces of farm ruminants (cows, buffaloes, and sheep) varied across the sites, with buffaloes consistently displaying the highest Pb levels. Insights into daily Pb intake by ruminant's highlighted variations influenced by plant species, animal types, and sites, with site C, the cows exhibiting the highest Health Risk Index (HRI) associated with lead exposure from consuming forage crops. Soil and forage samples showed Pb concentrations ranging from 8.003 to 12.29 mg/kg and 6.69-10.52 mg/kg, respectively, emphasizing the severe health risks associated with continuous sewage usage. Variations in Ni concentrations across animal blood, hair, and feces samples underscored the importance of monitoring Ni exposure in livestock, with sheep at site B consistently showing the highest Ni levels. These findings highlight the necessity of vigilance in monitoring trace element (Pb and Ni) exposure in forage crops and livestock, to mitigate potential health risks associated with their consumption, with variations dependent on species, site, and trace element concentrations.

Uranium pollution in aquatic ecosystems poses a threat to organisms. However, the metabolism and toxicity of uranium along aquatic food chains remain unknown. Here, we established an artificial aquatic ecosystem to investigate the fate of uranium along the food chain and reveal its potential toxicity. The results displayed a dose- and time-dependent toxicity of uranium on algae, leading to cell deformation and impeding cell proliferation. When uranium-exposed algae are ingested by fish, uranium tends to concentrate in the intestinal system and bones of fish. Comparatively, direct water uranium exposure resulted in a remarkable uranium accumulation in the head, skin, and muscles of fish, suggesting different toxicity depending on distinct exposure pathways. High-level uranium pollution (20 mg L-1) intensifies the toxicity to fish through food intake compared to direct water exposure. It has also revealed that approximately 25 % and 20 % of U(VI) were reduced to lower valence forms during its accumulation in algae and fish, respectively, and over 10 % of U(IV, VI) converted to U(0) ultimately, through which uranium toxicity was mitigated due to the lower solubility and bioavailability. Overall, this study provides new insights into the fate of uranium during its delivery along the aquatic food chain and highlights the risks associated with consuming uranium-contaminated aquatic products.

Microplastics (MPs) are widely distributed in marine environments and ingested by marine organisms, especially zooplankton. Chaetognaths, typical carnivorous zooplankton, are pivotal in the food chain from secondary producers, such as copepods, to higher trophic level species. However, little is known about their MP ingestion. In this study, based on field observation data, for the first time, we studied seasonal characteristics and risks of MPs ingested by chaetognaths in Jiaozhou Bay and assessed effects of key prey copepods on MP ingestion by chaetognaths. MP/chaetognath values in February, May, August, and November were 0.19, 0.17, 0.15, and 0.39, respectively, showing no significant seasonal variation. Chaetognaths predominantly ingested MPs that were fiberous in shape, 101-400 µm in size and polyester in polymer type, with no significant seasonal variations. The risk of MP load in chaetognaths was low, but there are higher polymeric hazards and potential ecological risks. MP/chaetognath values were positively correlated with the copepod abundance and MP/copepod values. The characteristics of MPs ingested by chaetognaths were also highly similar to those of MPs ingested by copepods. However, the overall risk of biomagnification in the copepod-chaetognath food chain was low. This study provided field evidence for MP transfer in the planktonic food chain.

Plastics are present in almost every aspect of our lives. Polyethylene terephthalate (PET) is commonly used in the food industry. Microparticles can contaminate food and drinks, posing a threat to consumers. The presented study aims to determine the effect of microparticles of PET on the population of neurons positive for selected neurotransmitters in the enteric nervous system of the jejunum and histological structure. An amount of 15 pigs were divided into three groups (control, receiving 0.1 g, and 1 g/day/animal orally). After 28 days, fragments of the jejunum were collected for immunofluorescence and histological examination. The obtained results show that histological changes (injury of the apical parts of the villi, accumulations of cellular debris and mucus, eosinophil infiltration, and hyperaemia) were more pronounced in pigs receiving a higher dose of microparticles. The effect on neuronal nitric oxide synthase-, and substance P-positive neurons, depends on the examined plexus and the dose of microparticles. An increase in the percentage of galanin-positive neurons and a decrease in cocaine and amphetamine-regulated transcript-, vesicular acetylcholine transporter-, and vasoactive intestinal peptide-positive neurons do not show such relationships. The present study shows that microparticles can potentially have neurotoxic and pro-inflammatory effects, but there is a need for further research to determine the mechanism of this process and possible further effects.

Marine microalgae serve as an aquaculture bait. To enhance algal cell growth and breeding profits, high-intensity light conditions are standard for cultivating bait microalgae, potentially altering microalgal metabolite production. This research revealed that Thalassiosira pseudonana, when subjected to high-intensity light conditions, accumulated significant quantities of retinal (RAL) that transferred through the food chain and transformed into all-trans retinoic acid (atRA) in marine medaka. The study further explored the toxic effects on individual fish and specific tissues, as well as the mechanisms behind this toxicity. The accumulation of atRA in the liver, intestine, and spinal column resulted in structural damage and tissue inflammation, as well as oxidative stress. It also down-regulated the gene transcription levels of key pathways involved in immune function and growth. Furthermore, it disrupted the homeostasis of the intestinal microbial communities. The implications for wildlife and human health, which are influenced by the regulation of microalgal metabolite accumulation and their transfer via the food chain, require further investigation and could hold broader significance.

Cadmium (Cd) is a hazardous element that may jeopardize environmental safety and human health through biotransfer and trophic accumulation. Here, we tested Cd toxicity on cotton plants, cotton bollworms, and their responses. Results demonstrated that Cd accumulated in plant roots, aerial parts, insect larvae, pupae, and frass in a dose-dependent pattern. The ∼9.35 mg kg-1 of Cd in plant aerial parts, ∼3.68 in larvae, ∼6.43 in pupae, and high transfer coefficient (∼5.59) indicate significant mobility. The ∼19.61 mg kg-1 of Cd in larvae frass suggests an effective detoxification strategy, while BAFcotton (∼1.14) and BAFworm (∼0.54) indicated low bioaccumulation. Cadmium exposure resulted in compromised plant growth and yield as well as alterations in photosynthetic pigment contents, antioxidant enzyme activities, and certain life history traits of cotton bollworms. Furthermore, carboxylesterase activity and encapsulation rates of insect larvae decreased with increasing Cd concentrations, whereas acetylcholinesterase, phenol oxidase, glutathione S-transferase, and multifunctional oxidase exhibited hormesis responses.

Direct exploitation through fishing is driving dramatic declines of wildlife populations in ocean environments, particularly for predatory and large-bodied taxa. Despite wide recognition of this pattern and well-established consequences of such trophic downgrading on ecosystem function, there have been few empirical studies examining the effects of fishing on whole system trophic architecture. Understanding these kinds of structural impacts is especially important in coral reef ecosystems-often heavily fished and facing multiple stressors. Given the often high dietary flexibility and numerous functional redundancies in diverse ecosystems such as coral reefs, it is important to establish whether web architecture is strongly impacted by fishing pressure or whether it might be resilient, at least to moderate-intensity pressure. To examine this question, we used a combination of bulk and compound-specific stable isotope analyses measured across a range of predatory and low-trophic-level consumers between two coral reef ecosystems that differed with respect to fishing pressure but otherwise remained largely similar. We found that even in a high-diversity system with relatively modest fishing pressure, there were strong reductions in the trophic position (TP) of the three highest TP consumers examined in the fished system but no effects on the TP of lower-level consumers. We saw no evidence that this shortening of the affected food webs was being driven by changes in basal resource consumption, for example, through changes in the spatial location of foraging by consumers. Instead, this likely reflected internal changes in food web architecture, suggesting that even in diverse systems and with relatively modest pressure, human harvest causes significant compressions in food chain length. This observed shortening of these food webs may have many important emergent ecological consequences for the functioning of ecosystems impacted by fishing or hunting. Such important structural shifts may be widespread but unnoticed by traditional surveys. This insight may also be useful for applied ecosystem managers grappling with choices about the relative importance of protection for remote and pristine areas and the value of strict no-take areas to protect not just the raw constituents of systems affected by fishing and hunting but also the health and functionality of whole systems.

Escherichia coli can harbor a broad repertoire of virulence and antimicrobial resistance (AMR) genes, which can be exchanged across the human gastrointestinal microflora, thus posing a public health risk. In this study, 6 batches of artisanal soft cheese and a 6-month ripened fermented dried sausage were investigated to assess the occurrence, phylogeny, and genomic traits (AMR, virulence, and mobilome) of E. coli. 30 and 3 strains isolated from salami and cheese food chains, respectively, were confirmed as E. coli by whole genome sequencing. The accumulation of single nucleotide polymorphism differences within small clusters of strains encompassing batches or processing stages, combined with high serotype and phylogroup diversity, suggested the occurrence of different contamination phenomena among the facilities. A total of 8 isolates harbored plasmid-mediated resistance genes, including one cheese strain that carried an IncQ1 plasmid carrying AMR determinants to macrolides [mph(B)], sulfonamides (sul1, sul2), trimethoprim (dfrA1), and aminoglycosides [aph(3")-Ib and aph(6)-Id]. A pool of virulence-associated genes in the class of adhesion, colonization, iron uptake, and toxins, putative ColV-positive iron uptake systems sit, iro, or iuc (8 salami and 2 cheese), plasmid-encoded hemolysin operon hlyABCD (one salami), and potential atypical enteropathogenic E. coli (3 salami environment) were reported. Overall, our findings underscore the importance of routine surveillance of E. coli in the artisanal food chain to prevent the dissemination of AMR and virulence.
