Chicken claw products with their unique texture are loved by consumers, and cooking is a key step to affect the taste of chicken claw consumption, through the moderate hydrolysis of proteins and a series of physicochemical changes, so that the chicken claw gets tender and presents a crispy taste, but the current research on the optimal cooking conditions for chicken claw is still relatively small. In the present work, combinations of time (11, 13, 15, 17, and 19 min) and temperature (82, 86, 90, 94, and 98°C) were applied to the cooking of chicken claws. The effects of different cooking conditions on the quality characteristics of chicken claws were investigated, with special emphasis on the cooking loss rate, color, texture properties, lipid oxidation, myofibrillar fragmentation index (MFI), and total sulfhydryl content. The results showed that the cooking loss rate, lipid oxidation, and MFI value of chicken claws gradually increased, and the total color difference (∆E), puncture force, shear force, and total sulfhydryl content gradually decreased with the increase of cooking temperature and cooking time. Overall, chicken claws cooked at 86, 90, and 94°C for 15 and 17 min had better texture and flavor.

Corkscrew claw (CC) in dairy cattle is increasingly reported in dairy herds. CC is a progressive deformity of the claw capsule with uncertain aetiology and pathogenesis. Genetics and specific environmental factors are suspected of contributing to the development of this irreversible condition. CC has been found in lame cows; however, the cause and effect has not been established. To perform analysis of risk factors, treatment and pathogenesis, a definition of severity scores is called for. The aim of this study was to measure and analyse CC characteristics from photos of cows' feet to describe and evaluate a scoring system for CC. Width of the visible part of the axial wall, degree of contact between the toe and the floor and angle of the distal part of the abaxial wall as a proxy for the deviation of the abaxial wall was measured from 393 pictures of CC. Based on the measurements on the claws, the parameter "width of the axial wall" was chosen to define the scores. The parameter was divided into three intervals to define either mild CC 0.3-2.0 cm, moderate CC 2.1-3.5 cm or severe CC>3.5 cm and correlation between the parameters; level of contact between the toe and the floor and the angle of the distal abaxial wall was evaluated. There was a significant positive linear correlation between width of the axial wall and angle of the distal part of the abaxial wall (r=0.91), the wider the axial wall, the more the abaxial wall deviated in the distal part. As the width of the axial wall increased the toe increasingly lost contact with the floor, this association was significant for mild CC and moderate CC but not for severe CC. The Interobserver agreement of the CC Scoring system was tested by 30 claw trimmers each scoring 32 cadaver feet and by 2 trained observers on 28 photos of feet using Cohen´s weighted kappa and showed substantial to almost perfect agreement between untrained and trained observers, respectively.

Hoof overgrowth in commercial housed dairy goats is a major health and welfare concern; thus, it is important to better understand hoof trimming, a priority practice which addresses hoof growth. We evaluated the immediate effects of trimming on external conformation, internal joint positions, and hoof wall overgrowth of front and hind hooves. Eighty female goats were enrolled. Pre and post hoof trimming data were collected at 13, 17, 21 and 25 months of age. Overall, before trimming, a high percentage of hooves were scored as overgrown (77.8%). Trimming decreased the percentage of overgrown hooves (17.6%: P < 0.001) and other moderate/severe conformational issues: dipped heels (49.3% vs. 26.7; P < 0.001), misshaped claws (37.0% vs. 17.6%; P < 0.001), splayed claws (73.7% vs. 56.7%; P < 0.001). More hind than front hooves had dipped heels pre-trimming and (91.3% vs. 7.3%; P < 0.001) and post-trimming (52.8% vs. 0.6%; P < 0.001); over half of the hind heels were not restored to an upright position. A greater proportion of toe length was removed from the hind hooves compared to the front (0.50 vs. 0.43, P < 0.001), with the greatest proportion of hoof wall overgrowth removed from the hind hoof medial claw at the 13-month assessment (P < 0.001). Following trimming, distal interphalangeal joint angle decreased more in hind compared to front hooves (11.0° vs. 6.9°; P < 0.001); distal interphalangeal joint height decreased (0.21 cm, P < 0.001), and proximal interphalangeal joint, and heel, angles increased (7.76° and 8.93°, respectively; P < 0.001). Trimming did not restore conformation of all hooves when trimmed every 4 months, suggesting a need to investigate reasons for underlying poor conformation, including trimming frequency.

In the recent past, tissue materials such as hair/coat and nails/claws have proved to be useful for the study of long-term hormonal changes in humans and animals and shown to be advantageous in terms of being collectable without invasiveness, with a benefit in terms of animal welfare. However, studies using these tissue materials in cats are scarce, especially on sexual hormone measurement. In this study, the concentrations of 17-ß-estradiol (E2) and testosterone (T) were assessed in 20 male and 18 female domestic postpubertal cats at the time of neutering/spaying during the breeding season. Hormones were measured in coat shaved from the forearm (ACOAT) and from the surgical area (SCOAT); claws were collected from the forearms (CLAWS) and the dewclaws (DCLAWS). Although all these tissue materials were shown to be useful for E2 and T long-term measurement, only T concentrations were higher (p < 0.001) in males from both ACOAT and SCOAT samples when compared to females and therefore useful for distinguishing between the two sexes. Within each sex, E2 and T concentrations can be assessed on coat, but also on the dewclaws, providing an alternative, practical, matrix for sexual steroid measurement in postpubertal cats during the breeding season.

Bird species have been widely used as suitable bioindicators of environmental mercury (Hg). However, there is still some debate about the most suitable tissue to indicate Hg body burden in birds. For a long time, blood and feathers have proved to be relevant to monitor Hg at different time scales, and recently, bill sheath has been suggested as a potential tissue to this end. In the present study, we evaluated THg in muscle, liver, feathers, claws, and bill sheath in two waterbird species (i.e. the ringed and the Amazon kingfishers) from the Teles Pires, Juruena and Paraguay rivers. Considering all species and sites, feathers (5.47 ± 2.15 µg/g) and bill sheath (3.39 ± 1.37 µg/g) had mean THg concentrations about 2-, 3- and 10-times higher than claws, liver and muscle, respectively. When bird species were segregated, the ringed kingfisher showed THg values 1.8 times higher than the Amazon kingfisher in all tissues. Moreover, results showed that the Amazon kingfisher from the Juruena and Teles Pires rivers was clearly separated from the Paraguay River (control site), and was associated with higher THg values in the claws and feathers. Results obtained for the THg concentrations in bill sheath, muscle and liver tissues of the Amazon kingfisher using multivariate analysis of canonical variates (CVA) showed a pattern of segregation between the sampling areas, being the highest THg values in Teles Pires River samples. The largest bill sheath vector in the CVA suggests that this tissue is a key variable in the segregation of the samples. Overall, feathers may be useful for effects monitoring or spatial patterns, whereas bill sheath, which are more invasive, may be advantejous for temporal trends and retrospective studies of Hg pollution.

The link between claw morphology and function has been historically difficult to quantify, analyze, and interpret. A confounding factor is the ambiguous morphological relationship between the ungual and the sheath and whether one structure or the other is more useful for inferring function from morphology. In this study, the functional morphology of vertebrate claws is analyzed using sheath and ungual measurements taken from modern claw specimens spanning birds and mammals. Claw measurements were chosen for their potential biomechanical significance and a revised, expanded categorization of claw function is used. When corresponding claw measurements from the ungual and sheath are compared independently, some features are highly correlated whereas others are not. A principal component analysis of the claw measurements reveals that some of the morphological disparity is related to functional differences; however, different functional categories are not clearly separated based solely on morphology. A linear discriminant analysis incorporating a supervised dimensionality reduction method (J-function) successfully classifies 94.52% of the claw specimens to their documented functional categories. When the posterior probabilities of each classification are examined, and the next highest probabilities are considered, the analysis can successfully classify 98.63% of the claw specimens. Sheath measurements perform better than ungual measurements but combining measurements from both structures perform better than considering either structure individually. Both structures contribute valuable morphological information when it comes to inferring claw function from morphology.

The effects of thermal processing on the texture and collagen properties of ready-to-eat chicken claws were investigated and the relationship between the texture of chicken claws and the collagen properties of connective tissue was further discussed. The texture, sensory and collagen characteristics (content, solubility, and structure), and the degradation of insoluble collagen of chicken claws underwent thermal processing at 90°C/30 min, 100°C/30 min, 115°C/15 min, and 121°C/10 min were measured. The results showed that thermal processing significantly reduced the textural parameters (hardness, springiness, cohesiveness, chewiness, and resilience) of chicken claws, and the textural deterioration intensified with the increase in temperature. Thermal processing aggravated the degradation of collagen fibers in cooked chicken claws, resulting in decreased insoluble collagen content and increased collagen solubility. Moreover, higher thermal processing temperature produced more soluble collagen components composed of low-molecular weight peptides. The textural deterioration of chicken claws caused by thermal processing was related to the decrease of insoluble collagen content and the increase of content of soluble collagen composed of low-molecular weight peptides. On the one hand, the decreased of insoluble collagen content led to the weakening of connective tissue. On the other hand, low-molecular weight peptides hindered the cooling renaturation of soluble collagen, leading to the formation of gels with poor mechanical properties.

Insect attachment devices and capabilities have been subject to research efforts for decades, and even though during that time considerable progress has been made, numerous questions remain. Different types of attachment devices are known, alongside most of their working principles, however, some details have yet to be understood. For instance, it is not clear why insects for the most part developed pairs of claws, instead of either three or a single one. In this paper, we investigated the gripping forces generated by the stick insect Sungaya inexpectata, in dependence on the number of available claws. The gripping force experiments were carried out on multiple, standardized substrates of known roughness, and conducted in directions both perpendicular and parallel to the substrate. This was repeated two times: first with a single claw being amputated from each of the animals' legs, then with both claws removed, prior to the measurement. The adhesive pads (arolia) and frictional pads (euplantulae) remained intact. It was discovered that the removal of claws had a detractive effect on the gripping forces in both directions, and on all substrates. Notably, this also included the control of smooth surfaces on which the claws were unable to find any asperities to grip on. The results show that there is a direct connection between the adhesive performance of the distal adhesive pad (arolium) and the presence of intact claws. These observations show collective effects between different attachment devices that work in concert during locomotion, and grant insight into why most insects possess two claws.

Poaching and illegal trafficking are major threats to biodiversity, especially when endangered felids are concerned. Tigers are iconic animals, and there is huge demand for their body parts both in the national and international illegal markets. India forms the largest tiger conservation unit in the world and poaching is at its peak even though there are stringent laws and strict enforcement. In the present study, we analytically estimated the tiger seizure cases in India from 2001-2021 using newspaper archives as the main source of data. The data was geo-referenced to understand the details of seizure, demand, and locality. We statistically correlated the seizure rate with the density of tigers, tiger reserves, and various other socio-economic factors. Our result shows that skin, claws, bones, and teeth have more demand, with nails and teeth being the most preferred in local markets. The bones, flesh, and other parts were mostly seized in the border states of the north and eastern states. The intensity of seizures is very high in the states of Maharashtra, Karnataka, Tamil Nadu, and Assam. From our analysis, we predict four trade routes for the export of the seized parts: the Nepal-Bhutan border, Assam border, the Brahmaputra, and the Mumbai port. This corresponds to the five tiger conservation blocks in India, and we observed the seizure rate is high near the Western Ghats region, which has not yet been noticed. Apart from the seizure, we are unconcerned with the seizure's origin or the local trading routes. The study demonstrates the importance of identifying the source population using DNA methods and carefully enforcing the rules in area of poaching. We assert that current approaches are incapable of resolving the issue and that a more precise and effective forensic procedure capable of resolving the issue at the minute local level is critical for precisely tracing trade channels. This study investigates the attachment ability of the oligophagous melon ladybird beetle Chnootriba elaterii to leaves of several Cucurbitaceae species. Using cryo-SEM, we described adult and larva tarsal attachment devices and leaf surface structures (glandular and non-glandular trichomes) in Citrullus lanatus, Cucumis melo, Cucumis sativus, Cucurbita moschata, Cucurbita pepo, Ecballium elaterium, Lagenaria siceraria and Luffa aegyptiaca. Using traction force experiments and centrifugal force tests, we measured the friction force exerted by females and larvae on plant leaves. We observed that Cucurbitaceae glandular trichomes do not affect insect attachment ability at both developmental stages, suggesting some adaptation of C. elaterii to its host plants, while non-glandular trichomes, when they are dense, short and flexible, heavily reduce the attachment ability of both insect stages. When trichomes are dense but stiff, only the larval force is reduced, probably because the larva has a single claw, in contrast to the adult having paired bifid dentate claws. The data on the mechanical interaction of C. elaterii at different developmental stages with different Cucurbitaceae species, combined with data on the chemical cues involved in the host plant selection, can help to unravel the complex factors driving the coevolution between an oligophagous insect and its host plant species.

The latest intrauterine fetal developmental stage and the neonatal period represent the most challenging phases for mammalian offspring. Toward the term of pregnancy, during parturition, and after birth, the hypothalamic−pituitary−adrenal axis (HPA) is a key system regulating several physiologic processes, through the production of cortisol and dehydroepiandrosterone (DHEA). This study was aimed to assess DHEA concentrations in hair and claws of 126 spontaneously dead newborn puppies, classified as premature puppies (PRE-P), stillborn puppies (STILL-P) and puppies that died from the 1st to the 30th day of life (NEON-P). The possible influence of newborn sex, breed body size, and timing of death on DHEA concentrations in both matrices was evaluated. Claw DHEA concentrations were higher in the PRE-P group when compared to STILL-P and NEON-P puppies (p < 0.05), whilst no significant differences were found in hair for all the studied factors. The results confirm the hypothesis that higher amounts of DHEA are produced during the intrauterine life in dogs, also in puppies that will die soon after birth.

Doxycycline residues in claws may pose a potential risk to humans. A study with broiler chickens was performed to find the concentrations of doxycycline in claws after treatment. For the quantification of the antibiotic of interest in claws, an ultrahigh-performance liquid chromatography-tandem mass spectrometry method was developed. Doxycycline was detectable at 3043 µg/kg at sub-therapeutic treatment, 223 µg/kg after therapeutic doses, and 14 µg/kg after spray application on the last day of the experiment (day 22). Almost 70 days is required for the concentration of doxycycline to reach zero. The obtained results show that monitoring of doxycycline in claws should be implemented.

Sporotrichosis is the most prevalent subcutaneous mycosis globally, and it is typically caused by direct inoculation of the soil saprophytic fungus Sporothrix spp. into the patients' skin. However, sporotrichosis has an important zoonotic transmission route between cats and humans in hot-spot endemic areas such as Brazil. Antifungal itraconazole is the first-line treatment; however, it is frequently associated with recurrence after withdrawal, mainly on cats. Biofilms are important resistance structures related to the environmental persistence of most microorganisms. In the present work, we evaluated Sporothrix yeasts' ability to form biofilms in an ex vivo model of infected claws of cats. Using scanning electron microscopy, we demonstrated the presence of fungal biofilms in the claws of cats diagnosed with sporotrichosis confirmed by isolation of Sporothrix spp. in culture. We present here evidence of antibiofilm activity of miltefosine and suggest its use off-label as an antifungal as a putative alternative to itraconazole against Sporothrix biofilms. Claw contamination could sustain infections through a continuous inoculation cycle between open lesions and cat claws. Our results further support the off-label use of miltefosine as a promising alternative, especially for mycosis refractory to conventional treatment.

Traumatic insemination (TI) is a rare reproductive behaviour characterized by the transfer of sperm to the female via puncture wounds inflicted across her body wall. Here, we challenge the claim made by Kamimura (Kamimura 2007 Biol. Lett.3, 401-404. (doi:10.1098/rsbl.2007.0192)) that males of species of the Drosophila bipectinata complex use a pair of claw-like processes (claws) to traumatically inseminate females: the claws are purported to puncture the female body wall and genital tract, and to inject sperm through the wounds into the lumen of her genital tract, bypassing the vaginal opening. This supposed case of TI is widely cited and featured in prominent subject reviews. We examined high-resolution scanning electron micrographs of the claws and failed to discover any obvious 'groove' for sperm transport. We demonstrated that sperm occurred in the female reproductive tract as a single-integrated unit, inconsistent with the claim that sperm are injected via paired processes. Laser ablation of the sharp terminal ends of the claws failed to inhibit insemination. We showed that the aedeagus in the complex delivers sperm through the vaginal opening, as in other Drosophila. The results refute the claim of TI in the Drosophila bipectinata species complex.

Reduced welfare and productivity of dairy goats have often been associated with poor claw health, especially conditions such as claw overgrowth and deformations. It is known that periodic claw trimmings have prophylactic and therapeutic effects on these problems, and this study aimed to evaluate if the additional use of an angle grinder to finish trimming overgrown and deformed goat claws, after the usual trimming using hoof shears, could provide further changes in these claws. For this, twelve Saanen goats (57.29 ± 11.15 kg of body weight, 3.08 ± 1.78 years old) were selected by presence of severe claw overgrowth, and absence of claw alterations of other nature. Their claws were trimmed in two steps, first using hoof shears and then using an angle grinder. Morphometric, baropodometric, and conformational aspects of all claws were assessed before claw trimming and after each trimming step. To analyse the effects of the trimming steps in each claw, the Tukey's test was used on parametric data, with 5% probability, and descriptive statistics were used on non-parametric data. Although this is a small pilot study, results suggest that using an angle grinder after the use of hoof shears, could further reduce heel length and sole width of claws, as well as reduce the number of deformed claws. The incorporation of the second trimming tool, could also further increase the frequency with which the point of maximum pressure was found in the toes, rather then in the heels of the claws as seen in deformed claws.

BACKGROUND: Chronic stress is implicated in behavioral and health issues in cats, but methods for recognition, evaluation, and measurement of stress are lacking. Cortisol concentration is typically used as an indicator of stress. OBJECTIVES: To evaluate use of an enzyme immunoassay to quantitate hair and nail cortisol concentrations (HCC and NCC) in cats and evaluate associations between HCC and NCC and behavioral, physical, and environmental correlates of chronic stress in cats. ANIMALS: Forty-eight adult, owned or community cats. METHODS: Cross-sectional study. Nail clippings and hair were collected from cats. Medical history and cat daily lifestyle questionnaires were completed by owners or caretakers. A commercial laboratory performed cortisol extraction and quantification using a validated enzyme immunoassay kit. Correlational and regression analyses were used to evaluate associations between HCC and NCC and behavioral, environmental, and medical factors. RESULTS: Hair and nail cortisol concentrations were significantly associated (rs  = 0.70; P < .001), but HCCs varied widely within and among cats. Cats with litterbox issues had significantly increased HCC (P = .02) and NCC (P = .001) as compared to cats without litterbox issues. Cats with groomed coats had lower HCCs (P = .02) as compared to cats without groomed coats, whereas cats with dander and mats had higher NCCs (P = .01) as compared to cats without dander and mats. CONCLUSIONS AND CLINICAL IMPORTANCE: The quantification of NCCs might improve identification and evaluation of chronic stress in cats. The variability of HCCs in individual cats warrants caution using this measurement in chronic stress studies.

The aim of the study was to investigate variations in lengths and lesions in claws of culled sows and to evaluate their association. All four feet of 185 sows from three Greek farrow-to-finish farms (Farm A: 57 sows; Farm B: 64 sows; Farm C: 64 sows) were examined for lesions and their lengths were measured. All claw lengths were lower in sows of farm C compared to those from sows of B and A. Claw lengths in sows of farm B were lower compared to those from A for all lateral toes of front feet and for all medial and four out of three lateral toes of rear feet. Sum of length measurements of the main toes of the front feet (SLF) associated with lesions on sole, white line and heel of front feet, while sum of length measurements of the main toes of the rear feet (SLR) associated with all lesions of the rear feet. The lengths of the main toes were correlated with the length of dew claws on front and rear feet. Overall, sows' claw lesion severity and claw lengths may differ between farms and frequency of lesions is higher in longer claws.

In standing dairy cows, the medial claws carry most of the load of the forelimb. The goal of our experimental study was to investigate how even load distribution can be achieved between the paired forelimb claws through foot trimming. We measured vertical ground reaction forces, mean and maximum pressures, and contact areas under the sound forelimb claws of 28 nonlame dairy cows using a force plate and a pressure plate. The experimental setup consisted of 3 measurement situations: (1) baseline measurements made after routine foot trimming, (2) measurements made with plywood plates, 3 mm in thickness, attached to both lateral claws, and (3) measurements made with the same plywood plates attached to both medial claws. After routine foot trimming, the medial claws carried 70.1% of the entire forelimb load with its palmar zone bearing 54.0% of the entire forelimb load. Even load distribution between the paired claws was achieved when the plywood plates were attached to the lateral claws, whereas plates on the medial claws increased the load discrepancy. The pressures on the medial claws were reduced by attaching the plywood plates to the lateral claws but remained uneven between paired claws and claw zones. The palmar zone of the medial claws was the region subjected to the greatest force and highest pressures in all situations. A drawback of the study was that the plywood plates increased the contact area and therefore reduced the mean and maximum pressures in the claws they were attached to. We concluded that equal load distribution between the forelimb claws was achieved in our setting when the lateral claws were left 3 mm higher than the medial claws.

Rapid climate warming is decreasing sea ice thickness, extent and duration. Marine mammals such as bearded (Erignathus barbatus) and ringed (Pusa hispida) seals, which use sea ice for pupping, molting and resting, may be negatively affected. Claws from bearded and ringed seals store up to 14 and 12 years of sequential analyte data, respectively. These data can be used to compare reproduction, stress and diet across decades. In this study, we compare progesterone, cortisol and carbon and nitrogen stable isotopes in female bearded and ringed seals during 1953-1968 (pre-1968, a period prior to sea ice decline) to 1998-2014 (post-1998, a period during sea ice decline). When comparing these periods, bearded seals had statistically higher cortisol concentrations post-1998, and for both species δ13C was more negative post-1998, while progesterone and δ15N did not change. There was a positive relationship between progesterone and cortisol Z-scores for both species, except for ringed seals post-1998. There was a negative relationship between cortisol Z-scores and δ13C for bearded seals evident in post-1998 indicating that higher cortisol Z-scores are associated with more negative δ13C in bearded seals in recent years. This negative relationship between cortisol and δ13C in bearded seals suggests a shift to higher prey diversity, possibly due to changes in sea ice in the Pacific Arctic evident post 1998. Progesterone Z-scores corresponded to expected differences among non-pregnant, unimplanted, implanted and post-partum individuals. Using these data, pregnancy history was determined for reproductive years for each individual female sampled, which could allow for yearly pregnancy rates to be calculated given a large enough representative sample of the population. These results combine decades of observational studies with hormones and stable isotopes to infer changes in reproduction, stress and diet, as well as the connection between these life history parameters.

Here, we review the development, morphology, genes, and proteins of claws in reptiles. Claws likely form owing to the inductive influence of phalangeal mesenchyme on the apical epidermis of developing digits, resulting in hyperproliferation and intense protein synthesis in the dorsal epidermis, which forms the unguis. The tip of claws results from prevalent cell proliferation and distal movement along most of the ungueal epidermis in comparison to the ventral surface forming the subunguis. Asymmetrical growth between the unguis and subunguis forces beta-cells from the unguis to rotate into the apical part of the subunguis, sharpening the claw tip. Further sharpening occurs by scratching and mechanical wearing. Ungueal keratinocytes elongate, form an intricate perimeter and cementing junctions, and remain united impeding desquamation. In contrast, thin keratinocytes in the subunguis form a smooth perimeter, accumulate less corneous beta proteins (CBPs) and cysteine-poor intermediate filament (IF)-keratins, and desquamate. In addition to prevalent glycine-cysteine-tyrosine rich CBPs, special cysteine-rich IF-keratins are also synthesized in the claw, generating numerous SS bonds that harden the thick and compact corneous material. Desquamation and mechanical wear at the tip ensure that the unguis curvature remains approximately stable over time. Reptilian claws are likely very ancient in evolution, although the unguis differentiated like the outer scale surface of scales, while the subunguis might have derived from the inner scale surface. The few hair-like IF-keratins synthesized in reptilian claws indicate that ancestors of sauropsids and mammals shared cysteine-rich IF-keratins. However, the number of these keratins remained low in reptiles, while new types of CBPs function to strengthen claws.
