RESUMO

Highly prized for its unique taste and appearance, pitaya is a tasty, low-calorie fruit. It has a high-water content, a high metabolism, and a high susceptibility to pathogens, resulting in an irreversible process of tissue degeneration or quality degradation and eventual loss of commercial value, leading to economic loss. High quality fruits are a key guarantee for the healthy development of economic advantages. However, the understanding of postharvest conservation technology and the regulation of maturation, and senescence of pitaya are lacking. To better understand the means of postharvest storage of pitaya, extend the shelf life of pitaya fruit and prospect the postharvest storage technology, this paper analyzes and compares the postharvest quality changes of pitaya fruit, preservation technology, and senescence regulation mechanisms. This study provides research directions for the development of postharvest storage and preservation technology.

The changes in the qualities and sweet-substance levels of Junzao jujube during variable-temperature drying (VTD) were investigated. The results showed that VTD retains the original color of jujube, reduces its hardness and chewiness, and decreases its wrinkling while shortening the drying time by 13.2% compared with that of constant temperature drying (CTD). "Electronic-tongue" taste analysis showed that the sweetness of VTD jujube is significantly higher than that for CTD. This is shown to be related to the contents of sucrose, fructose, and glucose, as well as the activities of invertase and sucrose synthase enzymes. In addition, the content trends for sweet amino acids are correlated with the temperature gradient used in VTD. Thus, the present study elucidates the factors governing the transformation of sugar substances in jujube during VTD, as well as providing a practical reference for the application of VTD in the jujube industry.

The effects of ultrasonic pretreatment on the drying characteristics and microstructure of strawberry slices were investigated. The rehydration characteristics of freeze-dried products, which were pre-frozen at -20 °C and - 80 °C were explored, with a focus on water mobility and distribution. The ultrasonic pretreatment significantly increased the water mobility of the strawberry slices, resulting in a reduction in their water content. However, the application of ultrasound significantly decreased the rehydration speed, indicating a lower moisture absorption capacity in the pretreated sample. The micrographs revealed that the structure of the tissue was more uniform after ultrasonic treatment, and water loss was accelerated. In addition, the contact angle measurements showed that the samples were more hydrophobic after ultrasonic treatment, and the eutectic temperature and fold point of the samples increased. Therefore, this study found that ultrasonic-assisted freeze vacuum drying technology effectively reduces hygroscopicity, improves product storage, and represents a potential method for dried production.

This study aimed to compare the frying performance of palm oil (PO) and high oleic sunflower oil (HOSO) during frying aquatic products. The quality change and frying performance of HOSO and PO during frying of fish cakes were investigated. The oxidation and hydrolysis products of both oils were explored by the nuclear magnetic resonance technique. The results showed that the color deepening rate of PO was higher than that of HOSO. After 18 h of frying, the total polar compound content of PO and HOSO reached 25.67% and 27.50%, respectively. HOSO had lower degree of oxidation than PO after 24 h of continuous frying. The polyunsaturated fatty acid content in HOSO and PO significantly decreased. The oleic acid content in HOSO remained above 80% during the frying process. The major aldehydes in both oils were (E, E)-2,4-alkadienals and n-alkanals and glycerol diesters (DAGs) were abundant in PO. Furthermore, the addition of fish cakes had slight effect on the quality of the frying oil. Therefore, HOSO is an appropriate candidate for frying owing to its excellent frying stability and nutritional value.

The folk proverb "the older, the better" is usually used to describe the quality of Citrus grandis "Tomentosa" (CGT) in China. In this study, CGT aged for 6-, 12-, 16-, and 19-years were collected for the investigation of infusion color, main bioactive components, antioxidant activity, metabolic composition, and pathway. The results found that infusion color, the total phenolic and flavonoid, and antioxidant activity of CGT were obviously changed by aging process. Through untargeted metabolomics, 55 critical metabolites were identified to in discrimination of CGT with different storage ages, mainly including phenylpropanoids, lipids, and organic oxygen compounds. Twenty compounds that showed good linear relationships with storage ages could be used for year prediction of CGT. Kyoto encyclopedia of genes and genomes enrichment pathway analysis uncovered important metabolic pathways related to the accumulation of naringin, kaempferol, and choline as well as the degradation of benzenoids, thus supporting that aged CGT might be more beneficial to health. Correlation analysis provided that some key metabolites with bitter taste and biological activity were involved in the darkening and reddening of CGT infusion during aging, and total phenolic and flavonoid were more strongly associated with the antioxidant activity of CGT. This study systematically revealed the quality changes and key metabolic pathways during CGT aging at first time. PRACTICAL APPLICATION: This study reveals the differences in quality attributes and metabolic profile between CGT with different storage ages, providing guidance for consumers' consumption, and also providing more scientific basis for the quality evaluation and improvement of CGT.

China's industrial restructuring and pollution controls have altered the contributions of individual sources to varying air quality over the past decade. We used the GEOS-Chem adjoint model and investigated the changing sensitivities of PM2.5 and ozone (O3) to multiple species and sources from 2010 to 2020 in the central Yangtze River Delta (YRDC), the largest economic region in China. Controlling primary particles and SO2 from industrial and residential sectors dominated PM2.5 decline, and reducing CO from multiple sources and ≥C3 alkenes from vehicles restrained O3. The chemical regime of O3 formation became less VOC-limited, attributable to continuous NOX abatement for specific sources, including power plants, industrial combustion, cement production, and off-road traffic. Regional transport was found to be increasingly influential on PM2.5. To further improve air quality, management of agricultural activities to reduce NH3 is essential for alleviating PM2.5 pollution, while controlling aromatics, alkenes, and alkanes from industry and gasoline vehicles is effective for O3. Reducing the level of NOX from nearby industrial combustion and transportation is helpful for both species. Our findings reveal the complexity of coordinating control of PM2.5 and O3 pollution in a fast-developing region and support science-based policymaking for other regions with similar air pollution problems.

Flos Sophorae (FS), or the dried flower buds of Sophora japonica L., is widely used as a food and medicinal material in China. The quality of S. japonica flowers varies with the developmental stages (S1-S5) of the plant. However, the relationship between FS quality and maturity remains unclear. Inductively coupled plasma optical emission spectrometry (ICP-OES) and ultra-high performance liquid chromatography coupled with electrospray ionization-triple quadrupole-linear ion trap mass spectrometry (UPLC-ESI-Q TRAP-MS/MS) were used to analyze inorganic elements and flavonoid metabolites, respectively. A combined analysis of the inorganic elements and flavonoid metabolites in FS was conducted to determine the patterns of FS quality formation. Sixteen inorganic elements and 173 flavonoid metabolites that accumulated at different developmental stages were identified. Notably, 54 flavonoid metabolites associated with the amelioration of major human diseases were identified, and Ca, P, K, Fe, and Cu were postulated to influence flavonoid metabolism and synthesis. This study offers a novel perspective and foundation for the further exploration of the rules governing the quality of plant materials.

To investigate the effects of traditional high-temperature cooking and sous-vide cooking on the quality of tilapia fillets, muscle microstructure, texture, lipid oxidation, protein structure, and volatile compounds were analyzed. In comparison with samples subjected to traditional high-temperature cooking, sous-vide-treated samples exhibited less protein denaturation, a secondary structure dominated by α-helices, a stable and compact structure, a significantly higher moisture content, and fewer gaps in muscle fibers. The hardness of the sous-vide-treated samples was higher than that of control samples, and the extent of lipid oxidation was significantly reduced. The sous-vide cooking technique resulted in notable changes in the composition and relative content of volatile compounds, notably leading to an increase in the presence of 1-octen-3-ol, α-pinene, and dimethyl sulfide, and a decrease in the levels of hexanal, D-limonene, and methanethiol. Sous-vide treatment significantly enhanced the structural stability, hardness, and springiness of muscle fibers in tilapia fillets and reduced nutrient loss, enriched flavor, and mitigated effects on taste and fishy odor.

Much attention has been paid to the world economy and social situations in response to the outbreak of war between Russia and Ukraine in the context of COVID-19. However, much less attention has been paid to the detrimental effect of war on the atmospheric environment. Here, we used an extended deweathered-detrended technique to quantitatively evaluate changes in ambient NO2, O3, and PM2.5 AQI levels arising from emission changes (due to pandemic-driven lockdowns and war-related activities) in European cities. Results show pandemic-induced lockdowns mitigated regional air pollution in Europe, but the war activities led to an average increase of approximately 9.78% in PM2.5 and 10.07% in NO2, along with an average decrease of about 7.93% in O3 levels in cities near the war zones. Moreover, the regional air pollution exacerbated by the war activities has offset the improvements in air quality observed during the COVID-19 pandemic. The potential mechanism analysis show that the increase in atmospheric pollutant emissions driven by the war activities led to the complexity of chemical reactions in the mixed atmospheric system, which posed a huge challenge to the alleviation of air pollution in the region. This study highlights the urgent need for a ceasefire from an environmental perspective.

This study offered a possible systematic culinary approach to spent-laying ducks. Breast meat is suitable for processing due to its amount and completeness. Sous-vide cooking resulted in lower cooking loss than poaching, pan-frying (P < 0.05), and roasting. The sous-vide duck breast had higher gumminess, chewiness, and resilience than other culinary techniques (P < 0.05). Sous-vide cooking at 65°C had a lower cooking loss than 70°C (P < 0.05), and less than 1.5-h sous-vide could keep a lower cooking loss and WB shear value (P < 0.05) as the cooking period extended, the smaller (P < 0.05) quantity of myosin heavy chain and the destroyed sarcomere arrangement were observed. A condition at 65°C for 1.5 h could be the optimal sous-vide cuisine for spent-laying duck breast. These sous-vide products stored at 4°C were still safe for consumption due to no detectible microorganisms and unchangeable physicochemical properties within 7 d.

The storage environment can significantly impact paddy quality, which is vital to human health. Changes in storage can cause growth of fungi that affects grain quality. This study analyzed grain storage monitoring data from over 20 regions and found that five factors are essential in predicting quality changes during storage. The study combined these factors with the FEDformer (Frequency Enhanced Decomposed Transformer for Long-term Series Forecasting) model and k-medoids algorithm to construct a paddy quality change prediction model and a grading evaluation model, which showed the highest accuracy and lowest error in predicting quality changes during paddy storage. The results emphasize the need for monitoring and controlling the storage environment to preserve grain quality and ensure food safety.

Changes in storage environments have a significant impact on grain quality. Accurate prediction of any quality changes during grain storage in different environments is very important for human health. In this paper, we selected wheat and corn, which are among the three major staple grains, as the target grains whose storage monitoring data cover more than 20 regions, and constructed a grain storage process quality change prediction model, which includes a FEDformer-based grain storage process quality change prediction model and a K-means++-based grain storage process quality change grading evaluation model. We select six factors affecting grain quality as input to achieve effective prediction of grain quality. Then, evaluation indexes were defined in this study, and a grading evaluation model of grain storage process quality was constructed using clustering model with the index prediction results and current values. The experimental results showed that the grain storage process quality change prediction model had the highest prediction accuracy and the lowest prediction error compared with other models.

BACKGROUND: The Maillard reaction is a promising and safe method for obtaining chitooligosaccharide conjugates with proteins or peptides as food preservatives. This study aims to investigate the moisture state, physicochemical properties, and shelf-life of sea bass fillets treated with ε-polylysine (ε-PL) and chitooligosaccharides (COS), which are Maillard reaction products (LC-MRPs), during refrigerated storage. RESULTS: The results of microbiological analysis and confocal laser scanning microscope (CLSM) revealed that LC-MRPs could retard microbial growth effectively. Compared with control, other treated groups could strongly retard the increase in the thiobarbituric acid (TBA) value, the K-value and the total volatile basic nitrogen (TVB-N) value, and also inhibited the softening of texture and the accumulation of biogenic amines in fish. The results of low-field nuclear magnetic resonance (LF-NMR) and magnetic resonance imaging (MRI) indicate that LC-MRPs could delay the water migration of fillets and increase water holding capacity (WHC). Through sensory evaluation, the application of LC-MRPs increased the shelf-life of refrigerated sea bass fillets for another 9 days. CONCLUSION: Maillard reaction products derived from chitooligosaccharides and ε-polylysine have strong potential for preserving sea bass. © 2022 Society of Chemical Industry.

In most countries around the world, the total fertility rate (TFR) has been on a downward trend over recent decades. In the developed, and many less developed countries this has led to the TFR being consistently below the replacement level of 2.1 over the long term, leading to population decline in the absence of immigration. Many European governments, including that of Hungary, are spending a significant proportion of GDP on family support to prevent fertility decline. Despite these efforts, we have not seen any significant increase in the TFR. In this article, we explain the decisions of families not to have children by using a more stringent formulation of Becker's original quantity-quality trade-off. We point out that increasing family support expenditure has not achieved its goal. While huge financial effort has been made to increase fertility rates, insufficient attention has been paid to alleviating the burden of the growing elderly population.

Hot air drying is the most common processing method to extend shrimp's shelf life. Real-time monitoring of moisture content, color, and texture during the drying process is important to ensure product quality. In this study, hyperspectral imaging technology was employed to acquire images of 104 shrimp samples at different drying levels. The water distribution and migration were monitored by low field magnetic resonance and the correlation between water distribution and other quality indicators were determined by Pearson correlation analysis. Then, spectra were extracted and competitive adaptive reweighting sampling was used to optimize characteristic variables. The grey-scale co-occurrence matrix and color moments were used to extract the textural and color information from the images. Subsequently, partial least squares regression and least squares support vector machine (LSSVM) models were established based on full-band spectra, characteristic spectra, image information, and fused information. For moisture, the LSSVM model based on full-band spectra performed the best, with residual predictive deviation (RPD) of 2.814. For L*, a*, b*, hardness, and elasticity, the optimal models were established by LSSVM based on fused information, with RPD of 3.292, 2.753, 3.211, 2.807, and 2.842. The study provided an in situ and real-time alternative to monitor quality changes of dried shrimps.

A comparison of the presence of additives in airport deicers commonly used in the United States and in airport runoff was conducted with data collected before and after changes in deicer formulations. Three isomers of benzotriazoles (BTs)-4-methyl-1H-benzotriazole (4-MeBT), 5-methyl-1H-benzotriazole (5-MeBT), and 1H-benzotriazole (1H-BT)-are corrosion inhibitors added to some formulations of airport deicers and are reported to be a source of aquatic toxicity in streams receiving airport runoff. Concentrations of BT in aircraft deicers and anti-icing fluids (ADAF) were reduced over time but were not reduced in potassium acetate airfield-pavement deicer material (PDM) that was used throughout the study period. Streams receiving runoff from Milwaukee Mitchell International Airport, Milwaukee, Wisconsin, USA, were monitored from 2004 to 2019 for BTs, with concentrations of 4-MeBT varying from <0.35 to 4600 µg/L, 5-MeBT varying from <0.25 to 6600 µg/L, and 1H-BT varying from <0.25 to 150 µg/L. Median 4-MeBT concentrations at sites downstream from the airport decreased by approximately 74%, 5-MeBT by 69%, and 1H-BT by 82% following reduction in BTs in ADAF formulations, resulting in a reduction in the potential for aquatic toxicity in receiving streams. A change in residuals from regression analysis between freezing point depressants and BTs indicate that the reduction in BT concentrations in airport runoff was a result of BT reduction in ADAF formulations, but PDM may still be a substantial source of BTs in airport runoff. Because BTs are a source of aquatic toxicity in airport deicers, the reductions in BTs in the common deicers observed in this study can be used to demonstrate the potential for a reduction in the effects to aquatic organisms in airport runoff, resulting in greater likelihood of meeting aquatic toxicity requirements in airport stormwater permits, and potentially driving airports, airlines, and permit holders to advocate further reduction or elimination of BTs and other harmful contaminants in airport deicers. Managed aquifer recharge (MAR) using urban stormwater facilitates relieving water supply pressure, restoring the ecological environment, and developing sustainable water resources. However, compared to conventional water sources, such as river water and lake water, MAR using urban stormwater is a typically intermittent recharge mode. In order to study the clogging and water quality change effects of Fe, Zn, and Pb, the typical mental pollutants in urban stormwater, a series of intermittent MAR column experiments were performed. The results show that the type of pollutant, the particle size of the medium and the intermittent recharge mode have significant impacts on the pollutant retention and release, which has led to different clogging and water quality change effects. The metals that are easily retained in porous media have greater potential for clogging and less potential for groundwater pollution. The fine medium easily becomes clogged, but it is beneficial in preventing groundwater contamination. There is a higher risk of groundwater contamination for a shallow buried aquifer under intermittent MAR than continuous MAR, mainly because of the de-clogging effect of porous media during the intermittent period.

Optimizing the alkali treatment process alone without tracking the changes of algae and agar quality with each pretreatment process will not achieve the optimal agar yield and final quality. In this study, we monitored the changes of the morphology and weight of algae with each treatment process, and comprehensively analyzed the effects of each pretreatment process on the quality of agar by combining the changes of the physicochemical properties of agar. In conventional alkali-extraction technology, alkali treatment (7%, w/v) alone significantly reduced the weight of algae (52%), but hindered the dissolution of algae, resulting in a lower yield (4%). Acidification could solve the problem of algal hardening after alkali treatment to improve the yield (12%). In enzymatic extraction technology, agar with high purity cannot be obtained by enzyme treatment alone, but low gel strength (405 g/cm2) and high sulfate content (3.4%) can be obtained by subsequent acidification and bleaching. In enzyme-assisted extraction technology, enzyme damage to the surface fiber of algae promoted the penetration of low-concentration alkali (3%, w/v), which ensured a high desulfurization efficiency and a low gel degradation rate, thus improving yield (24.7%) and gel strength (706 g/cm2), which has the potential to replace the traditional alkali-extraction technology.

Five thawing methods such as flow water thawing, ultrasonic flowing water thawing, air thawing, microwave thawing and low temperature thawing were used, and the physical, chemical properties and structure of mackerels after thawing were assessed. The results showed that the low temperature thawing had the best water retention, lower protein and fat oxidation. The microwave thawing had the shortest thawing time, but uneven heating leads to partial maturation. Air thawing prolonged exposure to air leads to high levels of protein and fat oxidation. The flow water thawing had better water retention than that of the ultrasonic flowing water thawing, only the thawing time was slightly longer than that of the ultrasonic flowing water thawing. In general, the low temperature thawing performed well after thawing. The flow water thawing used only 1/43 of the low temperature thawing's elapsed time after sacrificing some acceptable qualities. Thus, flow water thawing is more suitable for thawing frozen mackerel.

High-quality diets have been found to be beneficial in preventing long-term weight gain. However, concurrent changes in diet quality and body weight over time have rarely been reported. We examined the association between 10-year changes in diet quality and body weight in the Multiethnic Cohort Study. Analyses included 53 977 African Americans, Native Hawaiians, Japanese Americans, Latinos and Whites, who completed both baseline (1993-1996, 45-69 years) and 10-year follow-up (2003-2008) surveys including a FFQ and had no history of heart disease or cancer. Using multivariable regression, weight changes were regressed on changes in four diet quality indexes, Healthy Eating Index-2015, Alternative Healthy Eating Index-2010, alternate Mediterranean Diet and Dietary Approaches to Stop Hypertension scores. Mean weight change over 10 years was 1·2 (sd 6·8) kg in men and 1·5 (sd 7·2) kg in women. Compared with stable diet quality (< 0·5 sd change), the greatest increase (≥ 1 sd increase) in the diet scores was associated with less weight gain (by 0·55-1·17 kg in men and 0·62-1·31 kg in women). Smaller weight gain with improvement in diet quality was found in most subgroups by race/ethnicity, baseline age and baseline BMI. The inverse association was stronger in younger age and higher BMI groups. Ten-year improvement in diet quality was associated with a smaller weight gain, which varied by race/ethnicity and baseline age and BMI. Our findings suggest that maintaining a high-quality diet and improving diet quality over time may prevent excessive weight gain.
