RESUMEN
The nitrite-rodanide method was suggested to determine the content of iodine in food. It was shown that this method, provided the exposure of the test solutions during colorimetry was appropriately chosen, enables the determination in an aliquot of 0.5 g of both low and high (2-600 microgram/100 ml) concentrations of iodine. The determination of high concentrations can be realized by an ordinary diluting of the solutions under colorimetry.

The effect produced by different quantities of sunflower seed oil on some iodine metabolic rates was studied in experiments on 44 albino male-rats. Rations containing 27 and 54 per cent (in terms of calorific value) of sunflower seed oil were found to have an adverse effect on the condition of the thyroid gland. Rations with the said quantities of vegetable oil inhibit the mechanisms governing the transformation of inorganic and hormonally inactive organic compounds of iodine in its hormonally active forms. With the iodine content in the diet in an amount of 40-80 microgram this circumstance, however, does not have any essential effect on the level of the iodine binding by the thyroid tissue proteins and blood serum.

Menu, formulation of meals, chemical composition and calorific value embracing 10 different dietary patterns for students of vocational technical schools disposed within an area of endemic goitre are cited. In compiling the rations account has been taken of the age-specific features of the students, the physiological standard rates now in force, a collection of meals formulations and the funds allocated for alimentation in the said schools. The proposed rations may be of prophylactic importance in the foci of endemic goitre and should help strengthen the health of the students.

It has been shown in experiments on male rats fed with balanced diet having a low iodine content that nitrites supplied with food at a rate of 5 mg per 100 g body weight lead to the goiter growth.

The paper deals with the studies of the human status and immunological responsiveness of workers engaged in copper-smelting industry. The examinees were found to more frequently develop lower environmentally induced immunological responsiveness followed by leuko- and lymphopenia, higher lymphocytic CD4+/CD8+ ratios, phagocytic dysfunction in peripheral blood. Preventive use of beta-carotene prevented negative changes in immunological parameters.
