RESUMEN

In total, 3,840 sexed birds from 6 commercial cross broiler strains (4 male and 3 female) were raised and processed to analyze the effect of strain and sex on growth performance and carcass traits. Chicks from M1 × F1, M2 × F1, M3 × F1, M4 × F1, M3 × F2, and M4 × F3 crosses were sexed. Fifty female and 40 male chicks were randomly allocated to 24 floor pens (119 × 300 cm) covered with pine shavings in each of 4 rooms. The FCR was adjusted for the weight of dead birds (AFCR). Four birds/pen were processed at 7 wk of age. Carcasses were deboned after 2 h of chilling (n = 32 birds per treatment). There were significant strain by sex interactions for BW gain from 0 to 21 and 0 to 48 d. Strain differences in growth rate and mortality increased with age. The cross with the fastest growth rate also had the highest mortality. Because of differences in mortality and carcass yields, birds with the fastest growth (0-48 d) did not produce the most salable meat. Both the heaviest live BW per bird at 48 d (3.45 kg) and highest mortality (13.40%) were observed with the M4 × F3 cross. However, the heaviest live BW per 1,000 chicks placed was from the M3 × F2 cross (3,107 kg). The highest chilled carcass yield was from the M3 × F2 cross (76.05% of live BW) as was the highest meat yield (2,364 kg per 1,000 chicks placed) and highest pectoralis meat yield (805 kg per 1,000 chicks placed). The M3 × F2 cross produced the most total white meat (1,058 kg per 1,000 chicks placed), but interestingly the slowest-growing strain (M1 × F1) produced more white meat (breast + tenders + wings) than did the fastest-growing M4 × F3 strain (980 kg vs. 1,002 kg per 1,000 chicks placed). These results demonstrate the complexity of choosing between commercial strain crosses. The most profitable choice will be dependent on whether whole birds or parts are marketed and the relative values of the parts.

The instrument grading assessment portion of the National Beef Quality Audit (NBQA) - 2016 allows the unique opportunity to evaluate beef carcass traits over the course of a year. One week of instrument grading data was collected each month from 5 beef processing corporations encompassing 18 facilities from January 2016 through December 2016 ( = 4,544,635 carcasses). Mean USDA yield grade (YG) was 3.1 with 1.37 cm fat thickness (FT), 88.9 cm LM area, 393.6 kg HCW, and 2.1% KPH. Frequency distribution of USDA YG was 9.5% YG 1, 34.6% YG 2, 38.8% YG 3, 14.6% YG 4, and 2.5% YG 5. Increases in HCW and FT since the NBQA-2011 were major contributors to differences in mean YG and the (numerically) increased frequency of YG 3, 4, and 5 carcasses found in the current audit. Mean marbling score was Small, and the distribution of USDA quality grades was 4.2% Prime, 71.4% Choice, 21.7% Select, and 2.7% other. Frequency of carcasses grading Prime on Monday (6.43%) was numerically higher than the average frequency of carcasses grading Prime overall (4.2%). Monthly HCW means were 397.6 kg in January, 397.2 kg in February, 396.5 kg in March, 389.3 kg in April, 384.8 kg in May, 385.0 kg in June, 386.1 kg in July, 394.1 kg in August, 399.1 kg in September, 403.9 kg in October, 406.5 kg in November, and 401.9 kg in December. Monthly mean marbling scores were Small in January, Small in February, Small in March, Small in April, Small in May, Small in June, Small in July, Small in August, Small in September, Small in October, Small in November, and Small in December. Both mean HCW and mean marbling score declined in the months of May and June. The month with the greatest numerical frequency of dark cutters was October (0.74%). Comparison of overall data from in-plant carcass and instrument grading assessments revealed close alignment of information, especially for YG (3.1 for in-plant assessment versus 3.1 for instrument grading) and marbling (Small for in-plant assessment versus Small for instrument grading). These findings allow the beef industry access to the greatest volume of beef value-determining characteristics for the U.S. fed steer and heifer population than ever reported, resulting in potentially more precise targeting of future quality and consistency efforts.

The National Beef Quality Audit (NBQA)-2016 used in-plant cooler assessments to benchmark the current status of the fed steer and heifer beef industry in the United States. In-plant cooler assessments ( = 9,106 carcasses) were conducted at 30 facilities, where approximately 10% of a single day's production were evaluated for USDA quality grade (QG) and yield grade (YG) factors. Frequencies of evaluated traits were 66.5% steer and 33.4% heifer sex classes and 82.9% native, 15.9% dairy-type, and 1.2% estimated breed types. Mean USDA YG factors were 1.42 cm for adjusted fat thickness, 89.5 cm for LM area, 390.3 kg for HCW, and 1.9% for KPH. Mean USDA YG was 3.1, with a frequency distribution of 9.6% YG 1, 36.7% YG 2, 39.2% YG 3, 12.0% YG 4, and 2.5% YG 5. Mean USDA QG traits were Small for marbling score, A for overall maturity, A55 for lean maturity, and A for skeletal maturity. Mean USDA QG was Select with a frequency distribution of QG of 3.8% Prime, 67.3% Choice, 23.2% Select, and 5.6% lower score. Lower score included dark cutter (1.9%), blood splash (0.1%), and hard bone, which are USDA overall maturity scores of C or older (1.8%). Marbling score distributions were 0.85% Slightly Abundant or greater, 7.63% Moderate, 23.54% Modest, 39.63% Small, 23.62% Slight, and 0.83% Traces or less. Carcasses that were Choice or Select and USDA YG 2 or 3 accounted for 70.7% of the carcasses evaluated. Compared with the previous NBQA, we found a numerical increase in mean USDA YG, USDA QG, adjusted fat thickness, HCW, LM area, and marbling score with an increase in dairy-type carcasses and percentage of carcasses grading USDA Prime and Choice as well as frequency of USDA YG 4 and 5. The findings from this study will be used by all segments of the industry to understand and improve the quality of fed steer and heifer beef that is being produced.

The National Beef Quality Audit-2016 (NBQA-2016) was conducted to assess current transportation, mobility, and quality characteristics of U.S. fed steers and heifers. Data were collected at 17 beef processing facilities between March and November 2016. About 8,000 live cattle were evaluated for transportation and mobility, and about 25,000 carcasses were evaluated on the slaughter floor. Cattle were in transit to the slaughter facility for a mean duration of 2.7 h from a mean distance of 218.5 km using trailers with dimensions ranging from 17.84 m2 to 59.09 m2. Area allotted per animal averaged 1.13 m2 and ranged from 0.85 m2 to 2.28 m2. A total of 96.8% of cattle received a mobility score of 1 (walks easily, no apparent lameness). Identification types (35.1% had multiple) were lot visual tags (61.5%), individual tags (55.0%), electronic tags (16.9%), metal-clip tags (9.2%), bar-coded tags (0.05%), wattles (0.01%), and other (2.6%). Cattle were black-hided (57.8%), Holstein (20.4%), red-hided (10.5%), yellow-hided (4.8%), gray-hided (2.9%), brown-hided (1.3%), and white-hided (1.1%). Unbranded hides were observed on 74.3% of cattle; 18.6% had brands located on the butt, 6.3% on the side, and 1.3% on the shoulder (values exceed 100% due to multiple brands). For hide-on carcasses, 37.7% displayed no mud or manure; specific locations for mud or manure were legs (40.8%), belly (33.0%), tail region (15.5%), side (6.8%), and top-line (3.9%). Cattle without horns represented 83.3% of the sample, and cattle that did have horns measured: < 2.54 cm (5.5%), 2.54 to 12.7 cm (8.3%), and > 12.7 cm (2.9%). Carcasses without bruises represented 61.1% of those sampled, whereas 28.2% had 1, 8.2% had 2, 2.1% had 3, and 0.3% had 4 bruises. Of those carcasses with a bruise, the bruise was located on the loin (29.7%), round (27.8%), chuck (16.4%), rib (14.4%), and brisket/plate/flank (11.6%). Frequencies of offal condemnations were livers (30.8%), lungs (18.2%), viscera (16.3%), hearts (11.1%), heads (2.7%), and tongues (2.0%). Compared to NBQA-2011, fewer cattle were identified for traceability, fewer were black-hided, a greater number were Holstein cattle, more with no brand and no horns, fewer without bruises, more liver, lung, and viscera condemnations, and fewer heads and tongues were condemned. The NBQA remains an influential survey for the U.S. beef industry to provide benchmarks and strategic plans for continued improvement of beef quality and consistency.

The National Beef Quality Audit-2016 marks the fourth iteration in a series assessing the quality of live beef and dairy cows and bulls and their carcass counterparts. The objective was to determine the incidence of producer-related defects, and report cattle and carcass traits associated with producer management. Conducted from March through December of 2016, trailers (n = 154), live animals (n = 5,470), hide-on carcasses (n = 5,278), and hide-off hot carcasses (n = 5,510) were surveyed in 18 commercial packing facilities throughout the United States. Cattle were allowed 2.3 m2 of trailer space on average during transit indicating some haulers are adhering to industry handling guidelines for trailer space requirements. Of the mixed gender loads arriving at processing facilities, cows and bulls were not segregated on 64.4% of the trailers surveyed. When assessed for mobility, the greatest majority of cattle surveyed were sound. Since the inception of the quality audit series, beef cows have shown substantial improvements in muscle. Today over 90.0% of dairy cows are too light muscled. The mean body condition score for beef animals was 4.7 and for dairy cows and bulls was 2.6 and 3.3, respectively. Dairy cattle were lighter muscled, yet fatter than the dairy cattle surveyed in 2007. Of cattle surveyed, most did not have horns, nor any visible live animal defects. Unbranded hides were observed on 77.3% of cattle. Carcass bruising was seen on 64.1% of cow carcasses and 42.9% of bull carcasses. However, over half of all bruises were identified to only be minor in severity. Nearly all cattle (98.4%) were free of visible injection-site lesions. Current results suggest improvements have been made in cattle and meat quality in the cow and bull sector. Furthermore, the results provide guidance for continued educational and research efforts for improving market cow and bull beef quality.

Pork carcasses (n = 133) were used to investigate the influence of carcass fatness and muscling on composition and yields of pork primal and subprimal cuts fabricated to varying levels of s.c. fat. Carcasses were selected from commercial packing plants in the southeastern United States, using a 3 x 3 factorial arrangement with three levels of 10th rib backfat depth (< 2.03, 2.03 to 2.54, and > 2.54 cm) and three levels of loin eye area (LEA; < 35.5, 35.5 to 41.9, and > 41.9 cm2). Sides from the selected carcasses were shipped to the University of Georgia for carcass data collection by trained USDA-AMS and University of Georgia personnel and fabrication. Sides were fabricated to four lean cuts (picnic shoulder, Boston butt, loin, and ham) and the skinned belly. The four lean cuts were further fabricated into boneless cuts with s.c. fat trim levels of 0.64, 0.32, and 0 cm. The percentages of four lean cuts, boneless cuts (four lean cuts plus skinned, trimmed belly) at 0.64, 0.32, and 0 cm s.c. fat, fat-free lean, and total fat were calculated. Data were analyzed using a least squares fixed effects model, with the main effects of 10th rib backfat and LEA and their interaction. Fatness and muscling traits increased (P < 0.05) as 10th rib backfat and LEA category increased, respectively. However, fat depth measures were not affected greatly by LEA category, nor were muscling measures greatly affected by backfat category. The percentage yield of cuts decreased (P < 0.05) as backfat category increased. Cut yields from the picnic shoulder, Boston butt, and belly were not affected (P > 0.05) by LEA category, whereas the yield of boneless loin and ham increased (P < 0.05) as LEA category increased. Compositionally, the percentage of four lean cuts, boneless cuts at varying trim levels, and fat-free lean decreased incrementally (P < 0.05) as backfat depth increased, whereas parentage total fat and USDA grade increased (P < 0.05) as backfat depth increased. As LEA increased, percentage boneless cuts trimmed to 0.32 and 0 cm s.c. fat and fat-free lean increased and total fat decreased; however, the difference was only significant in the smallest LEA category. Collectively, these data show that decreased carcass fatness plays a greater role in increasing primal and subprimal cut yields and carcass composition than muscling even in lean, heavily muscled carcasses.

Forty wether lambs were used in a 2 x 4 factorial arrangement to determine the response of animal performance, muscle growth, proteinase activity, and meat tenderness to beta-adrenergic agonist (BAA) supplementation. Lambs were fed a finishing diet with or without 4 ppm of L644,969 and slaughtered after 0, 2, 4, and 6 wk of treatment. The ADG was higher (P < .05) in the treated than in the control lambs after 2 wk and returned to control levels thereafter. Semitendinosus weight and calpastatin activity were higher and mu-calpain activity was lower in the treated than in the control lambs after 2, 4, and 6 wk. Cathepsin B activity was higher (P < .01) and cystatin-like activity was lower (P < .05) after 2 wk in treated than in control lambs but returned to control levels thereafter. Longissimus protein:DNA was higher after 4 (P < .05) and 6 (P < .01) wk in the treated lambs than in the controls. The concentration of RNA and RNA:DNA ratio were higher (P < .01) in the longissimus and semitendinosus muscles in the treated lambs after 2 wk and remained higher throughout the study. Semitendinosus protein and RNA content were higher after 2, 4, and 6 wk and DNA content was higher after 2 and 6 wk in the treated than in the control lambs. Longissimus shear-force values were higher (P < .001) in the treated than in the control lambs at all slaughter end points. These data indicate a rapid alteration of muscle growth, activity of the calpain-calpastatin system, and meat tenderness during BAA treatment.(ABSTRACT TRUNCATED AT 250 WORDS)

We used 69 steers of varying percentage Brahman (B) breeding (0% B, n = 11; 25% B, n = 13; 37% B, n = 10; 50% B, n = 12; 75% B, n = 12; 100% B, n = 11) to study the relationship between carcass traits, the calpain proteinase system, and aged meat tenderness in intermediate B crosses. Calpains and calpastatin activities were determined on fresh longissimus muscle samples using anion-exchange chromatography. The USDA yield and quality grade data (24 h) were collected for each carcass. Longissimus steaks were removed and aged for 5 or 14 d for determination of shear force and 5 d for sensory panel evaluation. Even though some yield grade factors were affected by the percentage of B breeding, USDA yield grades did not differ (P > .15) between breed types. Marbling score and USDA quality grade decreased linearly (P < .01) with increasing percentage of B breeding. Shear force after 5 and 14 d of aging was higher (P < .05) in the 100% B steers than in all other breed types, which were not significantly different. Sensory panel tenderness and connective tissue scores decreased linearly (P < .05) with increasing B breeding. A quadratic effect was also noted for tenderness and connective tissue scores; 37% B steers received the highest scores. A similar response was found in mu-calpain activities; the 37% B steers had the highest activities. Conversely, calpastatin activity increased linearly (P < .01) with increasing percentage B breeding. These data show strong linear relationships between calpastatin activity (positive), marbling score (negative), and percentage B breeding, suggesting a possible combined effect of these traits on aged tenderness of intermediate Brahman crosses.

Restaurant-ready (21-d aged, needle tenderized) loin steaks (strip, S; and T-bone, TB) representing three portion sizes (227, 284, and 340 g for S; 397, 454, and 510 g for TB) were portioned from 71 low-Choice beef carcasses representing seven ribeye size groups (70.9 cm2 and less to 103.2 cm2 and greater, in 6.3-cm2 increments). Steaks (n = 568) were cooked on a grooved grill to temperatures of either 67 or 77 degrees C and evaluated for cooking characteristics, sensory attributes (n = 284), and shear force (n = 284) to identify optimal ribeye areas for portioned steaks. As expected, thickness of all portioned steaks decreased (P < .05) as ribeye size increased, whereas thickness of steaks increased (P < .05) as portion size increased. The S were significantly thicker than TB. The TB cooked faster (P < .05) than did S for ribeye areas 77.4 to 83.8 cm2 in the average portion sizes and for ribeye areas 71.0 to 96.6 cm2 in the large portion sizes. However, S cooked significantly faster than did TB for ribeye areas less than 70.9 cm2 in the average portion sizes. The S had higher (P < .05) initial tenderness scores and lower (P < .05) shear values than did TB. Initial tenderness scores were lower (P < .05) for ribeye areas greater than 103.2 cm2 compared with ribeye areas less than 83.8 cm2 and 90.3 to 96.6 cm2, with all others being intermediate. Shear force tended (P = .08) to follow the initial tenderness results. The S cooked to both end point temperatures, and TB cooked to 67 degrees C had higher (P < .05) initial tenderness scores than did TB cooked to 77 degrees C. Tenderness was reduced in TB cooked to higher temperatures as well as in S and TB portioned from ribeye areas greater than 103.2 cm2. Steaks portioned from carcasses with ribeye areas between 77.4 to 96.6 cm2 can optimize both cooking time and tenderness for the foodservice sector.

This study was conducted to determine the ability of additional ultrasound measures to enhance the prediction accuracy of retail product and trimmable fat yields based on weight and percentage. Thirty-two Hereford-sired steers were ultrasonically measured for 12th-rib fat thickness, longissimus muscle area, rump fat thickness, and gluteus medius depth immediately before slaughter. Chilled carcasses were evaluated for USDA yield grade factors and then fabricated into closely trimmed, boneless subprimals with 0.32 cm s.c. fat. The kilogram weight of end-point product included the weight of trimmed, boneless subprimals plus lean trim weights, chemically adjusted to 20% fat, whereas the fat included the weight of trimmed fat plus the weight of fat in the lean trim. Prediction equations for carcass yield end points were developed using live animal or carcass measurements, and live animal equations were developed including ultrasound ribeye area or using only linear measurements. Multiple regression equations, with and without ultrasound rump fat thickness and gluteus medius depth, had similar R2 values when predicting kilograms of product and percentages of product, suggesting that these alternative variables explained little additional variation. Final unshrunk weight and ultrasound 12th-rib fat thickness explained most of the variation when predicting kilograms of fat. Rump fat and gluteus medius depth accounted for an additional 10% of the variation in kilograms of fat, compared with the equation containing final weight, ultrasound ribeye area, and ultrasound 12th-rib fat thickness; however, the two equations were not significantly different. Prediction equations for the cutability end points had similar R2 values whether live animal ultrasound measurements or actual carcass measurements were used. However, when ultrasound ribeye area was excluded from live animal predictions, lower R2 values were obtained for kilograms of product (0.81 vs 0.67) and percentages of product (0.41 vs 0.17). Conversely, the exclusion of ultrasound ribeye area had little effect on the prediction accuracy for kilograms of fat (0.75 vs 0.74) and percentage fat (0.50 vs 0.40). These data substantiate the ability of live animal ultrasound measures to accurately assess beef carcass composition and suggest that the alternative ultrasound measures, rump fat and gluteus medius depth, improve the accuracy of predicting fat-based carcass yields.

Steers of known percentage Brahman (B) and Angus (A) breeding (100% A, n = 6; F1 B x A, n = 6; and 100% B, n = 6) were used to determine the effect of calcium chloride injection on the calpain proteinase system and meat tenderness. The steers were slaughtered in six replications (at either 9 or 14 mm of backfat, determined ultrasonically), with each breed type represented. Calpains and calpastatin activities were measured on fresh, prerigor longissimus muscle samples. Carcass data were collected after a 24-h chill, and the short loin (IMPS #180), top sirloin (IMPS #184), and top round (IMPS #168) were removed from both sides of each carcass. The cuts from the right side were then injected at 5% (wt/wt) with CaCl2 solution (2.2%). Longissimus muscle calpain and calpastatin activities were also measured at 48 h postmortem from the injected and control sides of each carcass. Warner-Bratzler shear force was measured on steaks from the three subprimals aged 1, 2, 5, 15, or 31 d. Marbling scores and USDA quality grades were higher (P<.05) in A than in F1 B x A and B carcasses. Calpastatin activity was higher (P<.05) in muscle from B than in muscle from A and F1 B x A steers, and postmortem storage (O vs 48 h) and CaCl2 injection reduced (P<.05) the activity of the calpains and calpastatin. Strip loin and top sirloin steaks from A and F1 B x A steers were more tender (P<.05) than steaks from B steers; however, top round steak tenderness did not differ (P>.05) across breed type. Calcium injection improved strip loin and top sirloin steak tenderness, but it did not affect top round steak tenderness. Collectively, these data show that CaC12 injection can be used to improve meat tenderness, with similar responses shown in cattle containing 0, 50, and 100% B inheritance. However, even with CaCl2 injection, B steaks are less tender than their A and F1 B x A counterparts.

Angus bulls (n = 20) from three pure-bred herds in Georgia were acquired to determine the impact of selecting sires based on phenotypic yearling ultrasound intramuscular fat percentage (UIMF) or UIMF EPD on marbling score of steer progeny. Each year in each herd, pairs of bulls were selected to create large differences based on their age adjusted phenotypic yearling UIMF measurements. The average UIMF, weighted by number of progeny per sire, was 3.75% (SD = 1.10%) and 1.70% (SD = 0.53%) for high UIMF (HU) and low UIMF (LU) bulls, respectively. All available ultrasound measurements collected in the purebred co-operator herds were combined with other ultrasound records collected by the American Angus Association for the computation of genetic values for ultrasound fat thickness, ribeye area, and intramuscular fat percentage. Each year bulls were randomly mated to 14 to 30 commercial Angus females. Carcass weight, fat thickness at the 12th rib, ribeye area at the 12th rib, marbling score, yield grade, and quality-grade measurements were collected on 188 steer progeny. Carcass data were linearly adjusted to 480 d of age at slaughter. Steer progeny sired by HU bulls had higher age-adjusted marbling score and quality grade (P < 0.05), and smaller age-adjusted ribeye area (P < 0.05) than steer progeny sired by LU bulls. No significant differences between phenotypic UIMF lines were found for age-adjusted fat thickness (P = 0.84) and yield grade (P = 0.33) in the steer progeny. The regression of age-adjusted carcass marbling score and quality grade of the steer progeny on ultrasound intramuscular fat percentage EPD of the sires produced highly significant regression coefficients of 90.50 and 49.20, respectively. Thus, yearling Angus bulls selected for high-phenotypic UIMF and UIMF EPD can be expected to produce steer progeny with significantly higher amounts of marbling and quality grade. It also appears that marbling can be increased without corresponding increases in external fat thickness and yield grade.

The objectives of this study were to assess the influence of sire on mu- and m-calpain activities, to evaluate the relationships of activities of these enzymes to other traits related to beef palatability, and to assess the influence of sire on the rate of tenderization (as measured by myofibril fragmentation index [MFI]) in Brahman longissimus muscle. Brahman calves (n = 87), sired by nine bulls, were born, weaned, fed, and slaughtered in central Florida. Traits evaluated were mu- and m-calpain activities and MFI after 1, 7, 14, and 21 d of aging. Other traits were analyzed to determine their associations with mu- and m-calpain activity and MFI, including calpastatin activity, percentage of raw and cooked lipids, Warner-Bratzler shear force (WBSF) values after 7, 14, and 21 d of aging, and sensory panel rating of tenderness, juiciness, and connective tissue amount after 14 d of aging. Data were analyzed using a model with sire, sex, year, and slaughter group (calves of the same sex slaughtered on the same date) as fixed effects, and adjusted to a constant adjusted 12th-rib fat thickness. Sire affected mu-calpain activity (P < 0.04), calpastatin activity (P < 0.01), d-14 MFI (P < 0.02), d-7 WBSF (P < 0.05), d-14 WBSF (P < 0.04), and sensory panel juiciness score (P < 0.01), but not (P < 0.75) m-calpain activity. Measures of tenderness and palatability were generally moderately to strongly correlated (both simple and residual correlations) with calpastatin and m-calpain activity. Myofibril fragmentation index residuals (adjusted for all model components except sire) after all aging periods were fitted using nonlinear regression to the exponential curve (MFI(i) = kappa0 + kappa1 exp[kappa2 t(i)] + epsilon(i), where t(i) represents aging in days, k0 is ultimate MFI after aging, kappa1 is the difference between initial and ultimate MFI, kappa2 is the rate of increase in MFI, and epsilon(i) is the error term associated with the ith observation, assumed to be independent and identically distributed normally). Sires had different estimates and combinations of estimates, which were used to plot MFI change with time. These curves visually differed for sires and suggested that postmortem tenderization extent and rate differ as well. Use of a combination of these estimated parameters in a selection/carcass sorting program represents an alternative consideration for tenderization improvement programs.

Slaughter cows (n = 120), representing four genotypes (British, continental, Bos indicus, and dairy) and three body condition classes (thin, moderate, and fat), n = 10 per subclass, were used to identify practical and accurate prediction equations for the yield of boneless manufacturing beef of specific fat percentages. Cows and their carcasses were weighed and evaluated for USDA yield and quality grade factors and for physical muscle and fat indicators. Carcass sides were fabricated; total fat percentage (TFP) was calculated as total fat (trimmed and chemical) divided by side weight, and tissue lean percentage (TLP) was calculated as boneless fat-free lean divided by soft tissue weight. Data were analyzed using maximum R2 multiple regression. The best live trait prediction model for TFP included live preliminary yield grade (LPYG), body condition score (LCOND), visual live muscle score (LMUSC), and live weight (LWT), R2 = .83. The best carcass trait TFP prediction model included adjusted preliminary yield grade (CPYGA); kidney, pelvic, and heart fat adjustment (CKPHADJ); marbling score (CMARB); and hot carcass weight (HCW), R2 = .92. The best live trait TLP prediction model included LPYG, LCOND, LMUSC, and LWT, R2 = .82. The best carcass trait TLP prediction model included CPYGA, CKPHADJ, CMARB, and lean maturity, R2 = .91. These data indicate that TFP and TLP of slaughter cows can be accurately and practically predicted using live animal and carcass traits.

Thirty-six Angus x Hereford heifers (365 kg) were used to determine effects of dietary lipid supplementation from two sources during the final 32 or 60 d of feeding on serum and adipose tissue leptin concentrations, animal performance, and carcass characteristics. Following an initial feeding period of 56 d, heifers were fed one of three diets in a 3 x 2 factorial arrangement: 1) basal diet, 2) basal diet plus 4% (DM basis) corn oil, or 3) basal diet plus 2% (DM basis) rumen-protected conjugated linoleic acid (a mixture of Ca-salts of palm oil fatty acids with 31% conjugated linoleic acid). Jugular blood samples were collected at 28-d intervals (d 28 to 118) and serum subsequently harvested for leptin quantification via RIA. Real-time ultrasound measurements were collected at 28-d intervals across time on feed. At slaughter, samples were obtained from various adipose depots. Data were analyzed with dietary treatment, length of supplementation, adipose depot (when appropriate), and all two- and three-way (when appropriate) interactions in the repeated measures model. Measures of feedlot performance, including ADG, DMI, and gain:feed did not differ (P > 0.23) with dietary treatment or supplementation length. Heifers supplemented with corn oil tended (P < 0.07) to have higher marbling scores following 32 d of treatment than those supplemented with rumen-protected conjugated linoleic acid, with controls intermediate. Quality grade and hot carcass weight did not differ (P > 0.15) with treatment or length of supplementation. Leptin concentrations were higher (P < 0.05) from d 57 to 118 on feed than the initial period (d 0 to 56) of dietary adaptation when all animals received the basal diet. Circulating leptin concentrations were not affected by dietary treatment. However, leptin concentrations in adipose tissues were greater (P < 0.05) for heifers supplemented with corn oil than either control or rumen-protected conjugated linoleic acid diets, which did not differ. Compared with adipose tissues from rumen-protected conjugated linoleic acid-supplemented animals, tissues from heifers fed corn oil contained 68% greater leptin concentration. Correlations between performance, carcass traits, and serum leptin concentrations were low. Serum leptin concentrations across time on feed were not associated with carcass and performance data, including ADG, DMI, and gain:feed. Based on these data, concentrations of leptin are not related to indices of feedlot performance and carcass quality in beef cattle.

Forty-eight crossbred rabbits were used in three replications of a 2 x 4 factorial arrangement to investigate the short-term responses of tissue accretion, calpains and calpastatin activity, and nucleic acid and protein concentrations to beta-adrenergic agonist (BAA) feeding. Rabbits were fed a 17% CP diet with or without 7 ppm of L644,969 and slaughtered after 1, 4, 8, or 16 d of treatment. Empty body dressing percentage and biceps femoris weight (as a percentage of empty body weight [EBW]) were significantly higher in the treated rabbits than in the controls after 16 d of treatment. Heart and liver weights (as a percentage of EBW) were higher (P < .05) after 1 d and liver weight (as a percentage of EBW) was lower (P < .05) after 16 d in treated vs controls. Except for an elevation of skeletal muscle m-calpain after 16 d, BAA-supplementation did not affect the calpain-calpastatin system. Muscle RNA concentrations and RNA:DNA ratios were higher (P < .05) in treated rabbits after 1 d and remained higher thereafter. Protein:RNA ratios were lower (P < .01) in treated than in control rabbits after 4 d and remained lower throughout the trial. Muscle DNA content was lower after 4 d and higher after 16 d; RNA content was higher after 4, 8, and 16 d; and protein content was higher after 16 d in treated vs control rabbits. A study was conducted to examine the effects of bird age and muscle tissue type on calpain and calpastatin activities in turkey skeletal muscle. Enzymatic activities of calpains and calpastatin were found to vary with bird age and muscle type. Breast muscle from younger birds (age 5 wk) had higher mu-calpain, m-calpain, and calpastatin activities (P < 0.05) than breast muscle from older birds (9, 13, and 17 wk of age). Thigh muscle calpain activities were not affected by bird age, but thigh calpastatin activity was found to increase with age, with muscle from 17-wk-old birds having 35% higher activity than muscle from 13-wk-old birds. When extracted from 9-wk-old turkeys, breast muscle mu-calpain activity was 30% higher than thigh muscle mu-calpain. By 13 wk of age, breast muscle mu-calpain activity was 20% less than thigh mu-calpain. Thigh muscle m-calpain and calpastatin activities were found to be significantly higher (P < 0.05) than that found in breast muscle, with some values more than double in older birds (17 wk of age).

Forty-eight British cross heifers were used to examine the effects of ovariectomization (OVX v. intact; INT) and ractopamine-HCl inclusion (0 or 0.41 mg/kg of BW day(-1); NORAC or RAC) for the final 31 days on performance, meat yield, and tenderness of select muscles. Ractopamine supplemented heifers had heavier BW (P≤0.05) and greater dressing percent than NORAC. Dressing percent was also greater (P<0.01) for INT v. OVX. LM area tended to be larger for RAC (P=0.07) and was larger for INT (P=0.05). Neither ractopamine inclusion nor sex class affected (P>0.08) organ weights or percent intramuscular fat. Ractopamine inclusion increased (P≤0.05) subprimal weight for the shoulder clod and bottom round. However, ractopamine inclusion and sex class had minimal effects on subprimal yields or slice shear force. Heifers receiving ractopamine had increased BW, DP, carcass weight and select subprimal weights without impacting meat quality. Ovariectomization did not influence the affects of ractopamine supplementation.

The objective of this study was to examine the effects of supplemental feeding of full-fat extruded cottonseed pellets (FFECS) compared with tallow on carcass characteristics, sensory traits, retail display color, and fatty acid profiles, especially CLA isomers in finishing heifers. Twenty-one Angus heifers (450 ± 5 kg) were assigned randomly to 1 of 3 experimental diets: 1) 100% supplemental fat from tallow at 4.1% of ration DM (TAL), 2) a 50:50 ratio of supplemental fat from a combination of tallow at 2.1% and FFECS at 12.8% of ration DM (TAL/ECS), and 3) 100% supplemental fat from FFECS at 25.6% ration DM (ECS). All rations were formulated to contain 7.5% fat on a DM basis. Heifers were individually fed, ad libitum, for 82 d, and BW, G:F, DMI, ADG, and body composition via ultrasound were collected at 3 to 4 wk intervals. After 82 d on feed heifers were slaughtered under federal inspection, and carcass characteristics were measured (at 24 h). The LM was removed for retail display color (1, 3, 6, 10 d), Warner-Bratzler shear force (1, 3, 7, 14, 21 d postmortem aging), sensory analysis (1, 7, 14, 21 d postmortem aging), and fatty acid profile analysis. Subcutaneous fat, including all layers, was removed from the LM for fatty acid profile analysis, and ground beef patties (80:20) were produced with lean from the brisket and fat from the plate for retail color analysis (1, 2, 4, 7 d). Supplemental fat source did not influence feedlot performance for any of the traits measured (P > 0.12) or any carcass traits related to yield, quality, or LM color at the 12th- to 13th-rib interface (P > 0.15). Supplemental fat source did not affect Warner-Bratzler shear force or any sensory traits (P > 0.20), but LM steaks became more tender as postmortem aging time increased up to 14 d (P < 0.01). During retail display of LM steaks and beef patties, the only difference was LM steaks from ECS were darker (lower L* value) than TAL or TAL/ECS steaks (P < 0.02). As display time increased, LM steak and beef patty objective and subjective color deteriorated (P < 0.01). Although feeding FFECS compared with tallow increased linoleic acid (C18:2(n-6)) in both intramuscular and subcutaneous fat (P < 0.04), this did not lead to an increase in total CLA content (P > 0.90). Full-fat extruded cottonseed pellets are interchangeable with tallow in heifer finishing diets without impacting feeding performance, meat quality, shelf life color, or CLA content of adipose sites.
