The objective of this randomized controlled trial was to determine if providing a rest stop including provision of feed and water between periods of continuous transportation mitigates the impact of long-distance transportation on markers of energy status and hydration in calves transported by road for 16 h. This study was conducted between September 2022 to January 2023 and included male and female Holstein and crossbred dairy calves ≥7 d old from 2 commercial dairy farms in Ontario, Canada (n = 96). On the day before transportation, calves were enrolled and randomly assigned to one of 2 treatment groups: 1) continuous transportation by road for 16 h or 2) 8 h of transport, 8 h of rest, and a further 8 h of transport to a single calf-raising facility. Calves that received a rest stop were fed 2 L of milk replacer at the time of unloading for the rest period and again immediately before reloading for the second leg of the journey. Blood samples were collected before and after transportation as well as daily for 3 d following arrival to the calf-raising facility. Serum was analyzed for concentrations of ß-hydroxybutyrate (BHBA), nonesterified fatty acid (NEFA), haptoglobin, and creatine kinase, while acid-base disturbances were evaluated within 1 h of collection of whole blood to assess glucose, sodium, potassium, ionized calcium, hematocrit, hemoglobin, pH, base excess, pO2, TCO2, HCO3, pCO2, and sO2. Mixed linear regression models with repeated measures were built to assess the effect of treatment group, age at transportation, breed, and sex on these parameters. Immediately after transportation, calves that received the rest period had lower BHBA (-68.04 µmol/L, 95% CI: -99.59 to -36.49), NEFA (-0.14 mmol/L, 95% CI -0.22 to -0.07), and sodium (-1.10 mmol/L, 95% CI = -2.18 to -0.02), and higher glucose (0.48 mmol/L, 95% CI = 0.21 to 0.74), potassium (0.27 mmol/L, 95% CI = 0.11 to 0.43), ionized calcium (0.06 mmol/L, 95% CI = 0.03 to 0.08), and sO2 (8.76%, 95% CI = 1.61 to 15.91) compared with calves that were continuously transported for 16 h. Additionally, calves transported between 11 and 12 d old had lower hematocrit (-1.22%, 95% CI = -2.19 to -0.25), hemoglobin (-3.07 g/L, 95% CI = -5.70 to -0.43), haptoglobin (-0.13 g/L, 95% CI = -0.23 to -0.02), and potassium (-0.13 mmol/L, 95% CI = -0.22 to -0.04) and higher sodium (0.83 mmol/L, 95% CI = 0.03 to 1.63) than 7-8 d old calves. Furthermore, calves that were 13-24 d old at transport had lower haptoglobin (-0.16 g/L, 95% CI = -0.27 to -0.06) and potassium (-0.14 mmol/L, 95% CI = -0.23 to -0.05), and higher sodium (1.02 mmol/L, 95% CI = 0.22 to 1.82) and ionized calcium (0.02 mmol/L, 95% CI = 0.002 to 0.035) compared with calves transported at 7-8 d old. The results of this trial demonstrate that a rest period improves energy status upon arrival to a calf-raising facility, suggesting that the benefit of a rest period may be mostly related to the provision of mid-journey milk meals.

Each year around 150,000 surplus calves are sold at auction markets in Québec, Canada. Surplus calves (male or female not kept in the herd of origin) are sold at a young age, but these animals are at risk of receiving lower quality neonatal care than replacement heifers. Knowledge of factors associated with a higher selling price could help convince farmers to spend more resources in the care surplus calves. Our objective was to explore the associations between farm management practices and the median percentile of surplus calf selling price per farm at auction markets. The price (CAD/kg of body weight) and the individual identification number of surplus calves sold in 2 auction markets in Québec during 4 sales days in the summer 2019 and in the winter 2020 were recorded. The recorded price of each surplus calf was transformed as percentile for each breed and day of sale. Farmers managing the surplus calves were contacted and interviewed on farm management practices. The data from farmer's interviews were analyzed as potential variables associated with the median percentile of calves' selling price per farm (farm level dependent variable) in a multivariable linear regression model. A total of 509 farmers were contacted, of which 433 farmers agreed to participate, and 409 interviews were retained for statistical analysis. The farms enrolled in the study had sold a median of 2 calves (range 1-19 calves) during the sale days considered. The main breed of surplus calves sold were Holstein (82%) and Angus crossbred calves (9%). The results from the multivariable model showed that median percentile of calves' selling price was positively associated with farms with an average milk production per cow superior to 11,000 L/years (ß 0.13, 95% confidence interval (95% CI): 0.045, 0.221) and farms with 3 or more workers available to take care of surplus calves (ß 0.08, 95% CI: 0.005, 0.167). Those results indicate that farms having an average milk production per cow superior to 11,000 L/year increase the calves' selling price by 13 percentiles (i.e., from 50th to 63rd) and that farms having at least 3 caretakers increase their median percentile calves' selling price by 8 percentiles (i.e., from 50th to 58th). Median percentile of calves' selling price was negatively associated with farms that vaccinated cows for neonatal calf diarrhea (ß -0.06, 95% CI:-0.127, -0.011), that do not disinfect the navel of newborn calves (ß -0.07, 95% CI:-0.133, -0.012), that allow transporters to enter the farm's building (ß -0.07, 95% CI:-0.130, -0.015) and that used wood shaving as bedding for surplus calves (ß -0.08, 95% CI:-0.156, -0.021). Sensitivity analyses performed on farms that have sold 2 or more surplus calves did not show significant changes in the associations found. Despite the fact that the study was based on self-reported questionnaire answers and a small number of calves per farm, it provides insight on farm management practices associated with median percentile of surplus calf selling price at the auction markets. Taking these results in consideration, farmers could potentially improve the market value of their animals.

The main aim of the current study was to find biomarkers of health in calves transported at different ages. The selected blood parameters were total cholesterol, insulin, and IGF-1, and the longitudinal study investigated whether or not these concentrations were different between calves that were transported from the dairy farm to the veal farm at 14 or 28 d of age. Relationships between these blood variables and health characteristics of veal calves were investigated. In a 34-wk study period, a total of 683 calves originating from 13 Dutch dairy farms were transported at an age of 14 or 28 d to 8 Dutch veal farms. Calves were blood sampled the first week after birth (mean and SD: 4.4 ± 2.1 d), 1 d before transport (mean and SD: 25.8 ± 7.3 d), and in wk 2 post-transport (mean and SD: 36.7 ± 12.2 d). In these samples, insulin, IGF-1, and total cholesterol were determined and analyzed with a linear mixed model (LMM). Individual medical treatments were recorded from birth until the day of transport at the dairy farm, and from the moment of arrival at the veal farm until slaughter, and analyzed as a binary response variable (calf treated or not) with a generalized LMM. Fecal (calf with or without loose or liquid manure) and navel (calves with or without swollen and inflamed navel) scores measured during a single visit in wk 2 post-transport were also analyzed as binary response variables, whereas carcass weights at slaughter age were analyzed with a LMM. Cholesterol, insulin, and IGF-1 were included as covariates in the previous models to test their relationships with the likelihood of calves being medically treated, fecal and navel scores, and carcass weights. One day before transport 28-d-old calves had higher blood cholesterol (Δ = 0.40 mmol/L) and IGF-1 (Δ = 53.6 ng/mL) concentrations, and evidence of higher insulin (Δ = 12.2 µU/mL) compared with 14-d-old calves. In wk 2 post-transport, 28-d-old calves had higher blood IGF-1 (Δ = 21.1 ng/mL), with evidence of higher insulin (Δ = 12.2 µU/mL) concentrations compared with 14-d-old calves. Cholesterol concentration measured 1 d before transport and in wk 2 post-transport had a positive relationship with carcass weight at slaughter (regression coefficients [ß] = 4.8 and 7.7 kg/mmol per liter, respectively). Blood cholesterol concentration in wk 2 post-transport was negatively associated with the fecal score measured at the same sampling moment (ß = -0.55/mmol/L), with the likelihood of a calf of being treated with antibiotics (ß = -0.36/mmol/L) and other medicines (ß = -0.45/mmol/L) at the veal farm. Blood IGF-1 concentration in wk 2 post-transport was negatively associated with the likelihood of a calf of being treated with antibiotics and other medicines (both ß = -0.01/ng/mL) at the veal farm, and with fecal score recorded in wk 2 post-transport (ß = -0.004/ng/mL). When looking at the blood indicators, it appeared that calves transported at 28 d of age were more developed compared with 14-d-old calves, thus transport at an older age might be more beneficial for the animals. It can be concluded that both blood cholesterol and IGF-1 concentrations seemed to be valuable biomarkers of health and energy availability in veal calves.

Salmonella Dublin and Campylobacter spp. are two foodborne pathogens of importance. A small number of studies reported that consumption of veal liver was associated with an increased risk of human illness from these two pathogens. To better characterize the risk of exposure from liver, a cross-sectional study was conducted to estimate the prevalence of white veal calf liver contamination with these two pathogens and to characterize the antimicrobial non-susceptibility patterns of isolates. Veal liver samples were collected at two slaughterhouses in Quebec, Canada, in 2016 and 2017. Samples were submitted for polymerase chain reaction (PCR) screening followed by culture of Salmonella and thermotolerant Campylobacter. Isolates were tested for antimicrobial susceptibility using broth microdilution. Salmonella Dublin was the only serotype cultured from 3.6% (95% confidence interval [CI]: 0.0-7.9) of 560 liver samples. Among them and for technical reasons, 498 were tested by PCR for Campylobacter. The prevalence of PCR-positive livers was estimated to be 65.8% (95% CI: 58.7-72.9) for Campylobacter jejuni and 7.0% (95% CI: 3.9-10.1%) for Campylobacter coli. Fourteen Salmonella Dublin isolates were submitted for antimicrobial resistance (AMR) testing; all were non-susceptible to at least eight antimicrobials from six different classes. Most (81.4%) of the 188 C. jejuni isolates submitted for AMR testing were non-susceptible to tetracycline, and 23.0% of isolates were non-susceptible to nalidixic acid and ciprofloxacin. Of the seven C. coli isolates, four were multidrug resistant. This study highlights the importance of veal liver as a potential source of exposure to multidrug-resistant Salmonella Dublin and thermotolerant Campylobacter spp.

Research background: Nitrite salts are among the most used preservatives in meat products as they ensure their safe consumption. Despite their positive effects on food safety and stability, many side effects on human health have been reported, leading to the need to reduce their use. Therefore, the aim of this study is to produce veal products with low nitrite content through low diffusion of potassium nitrite and to study their microbiological characteristics. Experimental approach: Edible tubular cellulose from leaf celery was produced and KNO2 was encapsulated in this material. This was achieved in two ways: by impregnation of tubular cellulose in a KNO2 solution under stirring and using starch gel as a stabilizer. Two samples of impregnated cellulose were applied on the surface of two veal samples of which one was stored at room temperature and the other at 3 °C. Similarly, two samples of cellulose with starch gel were applied on the surface of two veal samples of which one was stored at room temperature and the other at 3 °C. The KNO2 diffusion in different depths of the meat was measured and its effect on the microbiological characteristics of the meat was evaluated. Τhe experiment was carried out in duplicate. Results and conclusions: A satisfactory percentage of about 70 % of the initially encapsulated amount of KNO2 was diffused in the meat, while the rest remained in the pores of the delignified leaf celery. The migrating amount of KNO2 proved to be effective in preserving meat, as the microbiological load decreased significantly (especially within the first 12 h, from a decrease of 0.6 log CFU/g up to 2.4 log CFU/g). Novelty and scientific contribution: The demand for meat products with low nitrite content is constantly increasing and the results of the present study are promising for the development of this technology in scale-up systems and on an industrial scale. This innovative approach could lead to products with controlled diffusion of the preservatives.

Surplus dairy calves often arrive at veal and dairy-beef rearing facilities with health and blood metabolite level abnormalities, which can affect their welfare and performance, predisposing them to future health challenges. The objective of this randomized controlled trial was to investigate the effects of transport duration and age at the time of transport on blood parameters in surplus dairy calves following 6, 12, or 16 h of continuous road transportation. All surplus calves from 5 commercial dairy farms in Ontario were enrolled and examined daily before transport (n = 175). On the day of transportation, calves were weighed, blood sampled, and randomly assigned to 6, 12, or 16 h of transportation. Blood samples were then collected immediately after transportation, as well as 24, 48, and 72 h thereafter. Serum was analyzed at a provincial diagnostic laboratory for nonesterified fatty acids (NEFA), ß-hydroxybutyric acid (BHBA), creatine kinase (CK), cholesterol, and haptoglobin. In addition, blood gas and electrolyte values were also assessed at the time of sample collection. Mixed models with repeated measures were used to assess the effects of transport duration, breed, sex, transfer of passive immunity status, weight before transportation, and age at transportation on blood parameters. Immediately following transportation, NEFA and BHBA were greater for calves transported for 12 h (Δ = 0.22 mmol/L NEFA, 95% CI = 0.15 to 0.30; Δ = 0.04 mmol/L BHBA, 95% CI = 0.02 to 0.06) and 16 h (Δ = 0.35 mmol/L NEFA, 95% CI = 0.27 to 0.42; Δ = 0.10 mmol/L BHBA, 95% CI = 0.08 to 0.11) compared with calves transported for 6 h. Glucose was lower immediately following transportation in calves transported for 16 h compared with 6 h (Δ = -15.54 mg/dL, 95% CI = -21.54 to -9.54). In addition, pH and HCO3- were lower in calves transported for 12 (Δ = -0.09 pH, 95% CI = -0.13 to -0.05; Δ = -1.59 mmol/L HCO3-, 95% CI = -2.61 to -0.56) and 16 h (Δ = -0.07 pH, 95% CI = -0.12 to -0.03; Δ = -1.95 mmol/L HCO3-, 95% CI = -2.95 to -0.95) compared with calves transported for 6 h. Calves transported between 15 and 19 d of age had a higher concentration of cholesterol and CK (Δ = 0.27 mmol/L cholesterol; 37.18 U/L CK) compared with 2- to 6-d-old calves, and calves 12 to 14 d old had greater reduction in HCO3- (Δ = -0.92 mmol/L) compared with 2- to 6-d-old calves. These findings show that transporting calves for long distances results in lower glucose concentration and suboptimal energy status, and that this effect varies based on the calf's age.

Surplus dairy calves are commonly transported long distances from dairy farms to calf-raising facilities and livestock auctions. Current calf transportation research mainly describes physiological changes resulting from transportation. However, few studies have described the effects of transportation on calf behavior. The main objective of this study was to determine the effects of different durations of transportation (6, 12, and 16 h) on lying time and bouts in surplus dairy calves. A secondary objective of this study was to investigate whether calf age affected lying behavior around transportation. Surplus dairy calves (n = 175) were transported in 7 cohorts from 5 commercial dairy farms in Ontario to a single veal facility. On the day of transportation (d 0), calves were randomly assigned to 1 of 3 treatment groups: (1) 6 h (n = 60), (2) 12 h (n = 58), or (3) 16 h (n = 57) of continuous transportation by road. Calf lying and standing behaviors were recorded using HOBO data loggers (Hobo Pendant G Acceleration Data Logger, Onset Computer Corporation). Daily lying time (h/d) and bouts (no./d) were assessed from -1 to 3 d relative to transportation. The total time spent lying during transportation was assessed as the percentage of time lying (min lying/total min on the trailer × 100) from the time each calf was loaded onto the trailer until the time each calf was unloaded at the veal facility (n = 167). On the day of transportation (d 0), calves transported for 12 and 16 h spent less time lying (6 h: 17.1 h/d; 12 h: 15.9 h/d; 16 h: 15.0 h/d) and had more lying bouts (6 h: 21.9 bouts/d; 12 h: 25.8 bouts/d; 16 h: 29.8 bouts/d) compared with those transported for 6 h. On the day after transportation (d 1), calves transported for 16 h spent more time lying down than calves transported for 6 h (19.9 h/d vs. 18.8 h/d, respectively). In addition, during transportation, calves transported for 12 h and 16 h spent 5.8% and 7.6% more time lying down, respectively, than calves transported for 6 h. On each day relative to transportation (d -1 to 3), younger calves (2 to 5 d of age) spent a greater amount of time lying down than older calves (6 to 19 d of age) and, overall, had a greater number of lying bouts. The results of this study suggest that longer durations of transportation influence the lying behavior of surplus dairy calves, resulting in more fatigue during and after the journey and, therefore, potentially have negative implications for calf welfare. Additionally, longer durations of transportation may have greater influence on younger calves than older calves.

Calves arriving to veal and dairy-beef facilities in poor condition are at risk of future health challenges and reduced growth rates, and limited knowledge is available on how time in transit affects subsequent health and growth of these animals. The objective of this randomized controlled trial was to understand the effects of transport duration on diarrhea, respiratory disease, and growth of surplus calves destined for veal production following 6, 12, or 16 h of continuous road transport. Surplus dairy calves (n = 175; 7 transport cohorts) from 5 commercial dairy farms in Ontario, Canada, were enrolled on the day of birth. These calves were clinically examined daily on the source farms until the day before transport and on a daily basis for the first 14 d at the veal farm. On the day of transport, they were randomly assigned to 6, 12, or 16 h of transport to a veal farm. A blood sample was collected between 24 and 48 h of birth to assess transfer of passive immunity status. Calves were weighed at birth, before and immediately after transport, as well as 24, 48, and 72 h after unloading. Calves were also weighed 14 and 50 d after transport. Health exams were conducted daily at the source farm, immediately before and after transport, and once daily for 14 d thereafter to evaluate clinical signs of diarrhea, respiratory disease, dehydration, and navel inflammation. Mixed effects Poisson regression models were used to evaluate variables associated with the number of days with abnormal respiratory and fecal scores, whereas mixed logistic regression models with repeated measures were built to assess the probability of a calf having abnormal respiratory scores, abnormal fecal scores, or dehydration by day after arrival to the facility. A mixed model with repeated measures was used to evaluate calf weight at each time point at which body weight was measured after transport, whereas a mixed linear regression model was used to evaluate factors associated with average daily gain (ADG) in the 50 d after transport. Calves transported for 16 h had greater incidence of abnormal fecal scores compared with 6 h in the 14 d after transport. In addition, an interaction between age and duration of transport on the number of days with abnormal respiratory scores was identified, where calves older than 7 d of age had reduced incidence of abnormal respiratory score compared with calves 2 to 6 d old, even when transported for 16 h. As for growth, age at transport was positively associated with ADG in the 50 d of observation; however, no differences were observed between transport duration groups. These findings highlight that transporting calves for a longer duration negatively affects subsequent health, and calves greater than 1 wk of age experience improved health and growth after transport compared with their younger counterparts.

This study evaluated the associations between estimated distance from farms' locations to auction markets, and health indicators of surplus dairy calves sold during summer 2019 and winter 2020 in Québec, Canada. A total of 3,610 animals from 1,331 different farms were used in this cross-sectional cohort study. Geographic coordinates (latitude and longitude) were obtained for each farm and the 2 participating livestock auction markets. Calves' abnormal physical signs (APS) were noted upon arrival at the auction market as they were examined by trained research staff. The haversine distance between the farm and the auction market was evaluated using geographic coordinates and categorized. Generalized linear mixed models were used for statistical analyses. The main APS observed were ocular discharge (34.9%), abnormal hide cleanliness (21.2%), swollen navel (17.2%), dehydration score 1 (at least one of the 2 following clinical signs: persistent skin tent or sunken eye, 12.9%), and dehydration score 2 (both clinical signs mentioned above, 6.5%). Calves from farms located at greater distances from the auction markets (≥110 km) had a higher risk ratio [RR = 1.08; 95% confidence internal (CI) = 1.03, 1.13] for dehydration than those from lesser distances (0-25 km). During the summertime, a RR of 1.18 (95% CI = 1.15, 1.22) was observed for dehydration compared with wintertime. A 2-way interaction between estimated distance and season showed a higher prevalence of ocular discharge for calves from farms at distances greater than or equal to 110 km during the summer (RR = 1.11; 95% CI: 1.04, 1.20) than for calves from farms located at lesser distances (0-25 km). These results demonstrate that calves from farms located at greater distances from the auction markets had more APS, mainly during the summer. A better understanding of the transport conditions and interaction with management at the farm of origin is determinant to mitigate the impact of the journey on surplus calf health.

Previous research has shown surplus dairy calves arrive at 'formula-fed' veal operations in North America in sub-optimal condition; however, little is known about the condition of 'bob' veal calves on arrival at abattoirs. The objectives of this study were to assess the condition of bob veal calves on arrival at an abattoir in Ohio and determine risk factors for poor health outcomes. On arrival, 35 calves in each of 12 cohorts (n = 420 calves) were assessed using a standardised health examination. A blood sample was also collected to assess failed transfer of passive immunity (FTPI) and hypoglycaemia. Descriptive statistics were used to describe the prevalence of poor health outcomes. Mixed-effects logistic regression models were used to identify if calf breed, sex, or source were risk factors for poor health outcomes. The most common physical health concern observed on arrival at the abattoir was dehydration (mean: 68.6%), followed by thin body condition (39.8%), and navel inflammation (25.7%). Approximately one-quarter (23.4%) of calves had FTPI and 73.4% were hypoglycaemic. Male calves were more likely than females to arrive hypoglycaemic. Hydration status was associated with breed; Jersey and crossbreed calves were less likely to be dehydrated than Holstein-Friesian calves. Buying station tended to be associated with FTPI. These results underline the need for more studies investigating morbidity, mortality, and their underlying risk factors to promote calf welfare prior to slaughter in each stage of the production chain: on the dairy farm of birth, during marketing, and in transit.

Concentrate-rich starter diets are commonly fed to dairy calves to stimulate growth performance. However, feeding high amounts of starter feed with low inclusion of forage fibre may jeopardise the development of the gastrointestinal tract (GIT). Moreover, studies investigating the effects of feeding on carcass and meat quality of young calves at rearing are rare. The objective of this research was to investigate the effect of hay quality and concentrate inclusion on the traits of GIT development, slaughter performance and veal quality of young dairy calves. The feeding trial covered the first 14 weeks of life. Seventeen male and three female Holstein calves (n = 20) were randomly allocated to four experimental groups, which received besides acidified whole milk different solid feeds: (1) 100% medium-quality hay (MQH), (2) 100% high-quality hay (HQH), (3) 30% medium-quality hay and 70% concentrate (MQH+C) and (4) 30% high-quality hay and 70% concentrate (HQH+C). The acidified whole milk was fed in the first 12 weeks of life, and calves had ad libitum access to solid feed and water from birth till slaughter. Calves were kept in individual boxes equipped with straw and slaughtered at the end of week 14. After slaughter, gut development traits, rumen histology, slaughter performance and meat quality were assessed. Overall, both concentrate inclusion and hay quality showed major effects on rumen histology and development of the GIT in dairy calves with minimal effects on most carcass cuts and meat quality traits. Concentrate-fed calves had significantly higher average daily gains, final body weights, blood amounts and proportions of organs from the circulatory and respiratory systems. Proportions of liver and kidneys were lowest in MQH-fed calves. The proportion of GIT was significantly lower in groups fed concentrates, but the weight of the reticulorumen was unaffected by solid feed. Concentrate feeding led to thicker keratin layer and epithelium as well as wider papillae in the rumen. Hay quality particularly affected the width of the papilla and epithelium thickness, while feeding hay without concentrate enhanced the thickness of submucosa and muscularis, as well as the size of parotid glands. In conclusion, the type of solid feed affects the development of the GIT with concentrate feeding holding the risk to induce keratinisation of rumen epithelium while enhancing performance and carcass traits.

Transportation is a stressful event for cattle, as it may involve various handling practices, commingling, deprivation of food and water, and fluctuating temperatures. Calves are particularly susceptible to these stressors because their physiological and immune systems are still developing. There has been no formal synthesis of the scientific literature evaluating the effect of transportation on young dairy calf health and performance; the aim of this scoping review is to describe and characterize this body of work. We targeted both descriptive and analytic studies examining transport of calves, including listing how the effect of transport has been evaluated. Eight databases were searched for relevant articles with eligible studies being primary research articles investigating transportation of calves of either sex who were younger than 60 d of age or weighed less than 100 kg. Two reviewers independently screened the title and abstracts of 6,859 articles with 361 potentially relevant articles screened at full text. Of these, 46 were relevant and had data extracted. Articles reporting study location were conducted in the United States (n = 5), Australia (n = 3), Japan (n = 3), and New Zealand (n = 3). Common transport-related variables evaluated included time in transit (n = 13), distance of transportation (n = 8), vehicle-related factors (n = 8), and age at time of transportation (n = 4). Outcome measures varied greatly, including blood parameters (n = 28), health assessments (n = 20), weight (n = 17), behavioral metrics (n = 14), mortality (n = 7), feed intake following transportation (n = 4), salivary cortisol concentrations (n = 3), morbidity (n = 3), and isolation of Salmonella Dublin in fecal samples (n = 2). Outcome parameters were measured during transport or ranged from immediately after to one year following transportation. As the transport-related risk factors and outcomes measured assessed varied widely between studies, future quantitative synthesis (e.g., meta-analysis) in this area may be limited. Several knowledge gaps were identified, including methods to prepare calves for transportation, such as improving nutrition, administering medication, or transporting calves at an older age or weight. Further research could also focus on consistent and clear reporting of key items related to study conduct and analysis, as well as the development of a core outcome set for calf transport studies.

The objective of this study was to investigate effects of calf transport age (14 vs. 28 d) and calf (e.g., sex and breed) and dam characteristics (e.g., parity and ease of birth) on health and performance of veal calves until slaughter age. Calves (n = 683) originated from 13 dairy farms in the Netherlands and were transported at either 14 or 28 d of age from the dairy farm to 8 Dutch veal farms. A health assessment of calves was performed on a weekly basis at the dairy farm and in wk 2, 10, 18, and 24 at the veal farm. Body weight of calves was measured on a weekly basis at the dairy farm and upon arrival at the veal farm. At the veal farm, use of antibiotics and other medicines during the rearing period (both at herd and individual level) was recorded and carcass weights were obtained from the slaughterhouse. Body weight upon arrival (Δ = 11.8 kg) and carcass weight at slaughter (Δ = 14.8 kg) were greater, and mortality risk (Δ = -3.1%) and prevalence of animals treated with medicines other than antibiotics (e.g., antiinflammatories, multivitamins, and anticoccidial drugs; Δ = -5.4%) were lower in calves transported at 28 d compared with calves transported at 14 d. Crossbreds other than Belgian Blue × Holstein Friesian received a higher number of individual treatments with antibiotics and other medicines (Δ = 14.8% and Δ = 15.1%, respectively) at the veal farm compared with Belgian Blue × Holstein Friesian calves. These findings suggest that calves transported at 28 d were more robust compared with calves transported at 14 d.

This study aimed to investigate effects of transport age of calves (14 vs. 28 d), and of calf and dam characteristics, on immunoglobulin titers and hematological variables of veal calves. Calves (n = 683) were transported to a veal farm at 14 or 28 d of age. Natural antibodies N-IgG, N-IgM, and N-IgA against phosphorylcholine conjugated to bovine serum albumin (PC-BSA) were measured in serum of the dams 1 wk before calving and in first colostrum. These antibodies were also measured in serum of calves 1 wk after birth, 1 d before transport, and in wk 2 and 10 posttransport at the veal farm. Hematological variables were assessed in calves 1 d before transport and in wk 2 posttransport. One day before transport, titers of N-IgG, N-IgM, N-IgA, and neutrophil counts were higher, and lymphocyte counts were lower in 14-d-old calves compared with 28-d-old calves. In wk 2 at the veal farm, calves transported at 14 d of age had higher N-IgG titers and neutrophil counts, but lower N-IgM and N-IgA titers, and lymphocyte counts than calves transported at 28 d. In wk 1 and 1 d before transport, N-Ig in calves were positively related to N-Ig in colostrum. In wk 2 and 10 at the veal farm, N-IgG in calves was positively related to N-IgG in colostrum. The N-IgG titers in calves at the dairy farm were negatively related to the likelihood of being individually treated with antibiotics or other medicines at the veal farm. Our results suggest that calves transported to the veal farm at 28 d of age showed a more advanced development of their adaptive immunity than calves transported at 14 d of age. Quality of colostrum might have long-term consequences for N-IgG titers and immunity in veal calves.

Intestinal carriage of extended spectrum ß-lactamase (ESBL)-producing Escherichia coli is a frequent, increasing, and worrying phenomenon, but little is known about the molecular scenario and the evolutionary forces at play. We screened 45 veal calves, known to have high prevalence of carriage, for ESBL-producing E. coli on 514 rectal swabs (one randomly selected colony per sample) collected over 6 months. We characterized the bacterial clones and plasmids carrying blaESBL genes with a combination of genotyping methods, whole genome sequencing, and conjugation assays. One hundred and seventy-three ESBL-producing E. coli isolates [blaCTX-M-1 (64.7%), blaCTX-M-14 (33.5%), or blaCTX-M-15 (1.8%)] were detected, belonging to 32 bacterial clones, mostly of phylogroup A. Calves were colonized successively by different clones with a trend in decreasing carriage. The persistence of a clone in a farm was significantly associated with the number of calves colonized. Despite a high diversity of E. coli clones and blaCTX-M-carrying plasmids, few blaCTX-M gene/plasmid/chromosomal background combinations dominated, due to (i) efficient colonization of bacterial clones and/or (ii) successful plasmid spread in various bacterial clones. The scenario "clone versus plasmid spread" depended on the farm. Thus, epistatic interactions between resistance genes, plasmids, and bacterial clones contribute to optimize fitness in specific environments. IMPORTANCE The gut microbiota is the epicenter of the emergence of resistance. Considerable amount of knowledge on the molecular mechanisms of resistance has been accumulated, but the ecological and evolutionary forces at play in nature are less studied. In this context, we performed a field work on temporal intestinal carriage of extended spectrum ß-lactamase (ESBL)-producing Escherichia coli in veal farms. Veal calves are animals with one of the highest levels of ESBL producing E. coli fecal carriage, due to early high antibiotic exposure. We were able to show that calves were colonized successively by different ESBL-producing E. coli clones, and that two main scenarios were at play in the spread of blaCTX-M genes among calves: efficient colonization of several calves by a few bacterial clones and successful plasmid spread in various bacterial clones. Such knowledge should help develop new strategies to fight the emergence of antibiotic-resistance.

Dairy calves not kept for replacement are sold at young age in Québec auction markets for white and grain-fed veal calf production. The province of Québec produces 80% of the Canadian veal meat, but little information is available on the factors associated with the calves' price per crude weight (Can$/kg; Can$1 = US$0.78 at time of writing). The characteristics of calves sold in Québec auction markets from 12 complete years (2008-2019) were retrospectively studied. The calves' weight, breed and sex, the year and season of sale, the auction site, as well as the estimated distance traveled between the farm of origin and the auction site were analyzed as potential covariates associated with calf price. Two multivariable logistic models associated with low sale value (below the 10th or the 25th percentile of the day price) and 2 models associated with good sale characteristics (above the 50th or the 75th percentile of the day price) were built. The median distance between the farm and the auction site was 52 km (interquartile range: 30-95 km). Only 5% of calves traveled distances greater than 220 km. The weight, breed, sex, and auction sites explained most of the variability in the different models. Distance traveled and multiple interactions were also significantly associated with the outcomes. Calves with body weight from 48 to <56 kg were sold in higher percentiles of the day than lighter or heavier calves. Beef-crossed calves had better sale prices than Holstein, whereas colored dairy calves had lower sale characteristics than both Holstein and beef-crossed calves. The effect of distance traveled was complex, varying depending on the model and interactions, and explained a small portion of the total deviance in every model. Calves traveling from distances ≥110 km had lower sale characteristics in summer and fall in the different studied models. This study gives relevant insights on calves' characteristics associated with good versus low sale prices in Québec auction markets.

The transport of young calves is a welfare concern. Young calves aged ≤3 mo are particularly vulnerable to compromised welfare, and are at a relatively high risk of morbidity and mortality compared with adult cattle. Calves face several potential challenges to welfare during and after transport, including food and water deprivation, disease, injury, and stress from handling, social mixing, and new environments. The key risk factors identified for poor calf welfare associated with transport include long transport and fasting durations, young age at transport, poor colostral immunity, timing within the calving season, lack of bedding in trucks, and high stocking density. Maximizing calf welfare thus requires a multifaceted approach, such as minimizing transport and fasting durations, transporting at an appropriate stocking density with comfortable bedding, only transporting calves that are healthy and fit, and optimizing pre-transport calf management. More research is needed to understand the effect of transport on the mental or affective state of calves.

Nonreplacement dairy calves, or bobby calves, are fasted and transported to abattoirs from as young as 5 d of age in Australia. The aims of this cross-sectional observational study were (1) to assess the welfare status, as measured by blood parameters, of bobby calves in the commercial supply chain after transport and lairage, and (2) to assess whether distance and duration of transport are risk factors for poor bobby calf welfare, as measured by blood parameters. We hypothesized that bobby calves transported greater distances would be more likely to show evidence of compromised welfare, as measured by blood indicators of hydration, energy status, and muscle fatigue or damage. We also hypothesized that there would be a large amount of variability in indicators of energy status between calves from different farms. We analyzed blood samples collected at slaughter over a spring and an autumn calving period from 4,484 Australian bobby calves aged approximately 5 to 14 d old from 3 different states, after transport, fasting, and lairage. Packed cell volume (PCV), plasma glucose, and serum urea, total protein, ß-hydroxybutyrate (BHB), and creatine kinase (CK) were measured. Radio frequency identification ear tag data were used to estimate the distance that the calves were transported and to identify the farm of origin. Data were analyzed using linear mixed models, except for BHB, which was analyzed using a Goodman-Kruskal gamma test due to left censoring of the data. Twelve percent of calves showed evidence of anemia (PCV less than 0.23 L/L), and 11% had urea concentrations consistent with dehydration (urea more than 7.7 mmol/L). Thirty-six percent of calves had CK activity above normal resting values, and 1% of calves had CK >2,000 U/L, indicating muscle fatigue or damage. Distance transported had significant effects on all blood variables except urea and BHB. With increasing distance transported, calves were more likely to show evidence of a negative energy balance (low plasma glucose) or dehydration (high PCV or total protein). The estimated effect of distance overall was small, but for calves transported more than 500 km, plasma glucose concentration declined more per kilometer. The calves' farm of origin accounted for a reasonable amount of the random variation between calves for plasma glucose (20%). Our results suggest that longer transport distances may increase the risk of poor calf welfare (dehydration, negative energy balance) after transport, and on-farm calf management (e.g., nutrition, timing of feeding before transport) may affect transported calves' energy status; improving this area could result in better energy availability during fasting.

There is a strong need for management strategies that help reduce the incidence of disease and subsequent antimicrobial use in the veal industry. Biomarkers could serve as useful tools that allow producers to take preventative measures before clinical problems occur. The objective of this prospective cohort study was to identify biomarkers measured upon arrival associated with morbidity, mortality, and average daily gain (ADG) in grain-fed veal calves. Upon arrival at a grain-fed veal facility in Ontario, Canada, calves were weighed and health-scored using a standardized health-scoring system. Several metabolites were measured including creatine kinase (CK), cholesterol, haptoglobin, manganese, serum total protein, iron, cobalt, zinc, selenium, molybdenum, and IgG. Farm personnel treated calves according to their farm protocol and weighed them at 78 d after arrival. Performance, treatment, and mortality records from the facility were used for analysis. Multivariable Cox proportional hazard models were created to evaluate metabolic biomarkers associated with morbidity and mortality. A mixed linear regression model was created to determine biomarkers associated with ADG. A total of 992 male dairy calves were evaluated at arrival from January to December 2017. Of the calves evaluated, 74 calves (7.5%) died and 877 (88.4%) were treated for illness over the 11-wk period under observation. Higher levels of haptoglobin and molybdenum were associated with a greater hazard of morbidity, whereas higher weight upon arrival and higher levels of both CK and IgG were associated with a reduced hazard of morbidity. For mortality, higher weight upon arrival and higher levels of cholesterol and IgG were associated with a lower hazard of mortality occurring over the 78-d period of observation. Higher weight, cholesterol, copper, CK, iron, and IgG were associated with increased ADG, whereas increased zinc and haptoglobin were negatively associated with ADG. These results demonstrate that certain biomarkers could be used to identify high-risk calves when measured upon arrival at a veal facility. Future research should focus on determining the utility of these biomarkers to selectively target intervention strategies to improve ADG and reduce morbidity and mortality.

The objective was to determine the growth performance of Friesian calves given milk or milk replacer (MR) at varying levels. Forty-eight male Friesian calves were divided into four groups of 12 animals each. Calves were offered either milk or MR at either 10 or 15% of body weight (BW), with upper limits of 5 and 6 L/d, respectively until week 8. The calves were weaned at 10 weeks of age by gradually reducing the offered liquid to zero. In addition, from the second week, calves were offered calf starter ration (CS) until each calf reached 120 kg. The calves raised on milk had better growth rates (610 ± 25 vs. 487 ± 25 g/d; P < 0.05), displayed higher weaning weights (71 ± 1.5 vs. 55.9 ± 1.5 kg; P < 0.05) and reached the target weight of 120 kg earlier (20.9 ± 0.8 vs. 24.1 ± 0.8 weeks; P < 0.05) than those on MR. However, growth rate was not affected (535 ± 25 vs. 568 ± 25; P > 0.05) by liquid feeding level. Cost per kg live weight gain was not affected (325 ± 8 vs. 319 ± 8; P < 0.05) by feeding source or feeding levels (317 ± 8 vs. 328 ± 8). Thus, feeding milk at 10% of body weight saves time and labour required to achieve target weight in veal calves.
