Reducing meat consumption is highly effective for reducing personal carbon emissions, yet most people in Western nations still eat meat. We build on recent research highlighting that group boundaries may impede dietary change by (a) promoting pro-meat norms and (b) prohibiting critical calls for a veg* diet (vegetarian and vegan, i.e., meat-free). Past research relied on self-reports and behavioural measures of engagement, leaving open whether these effects extend to food consumption settings and ad-hoc meal choice. We conducted two pre-registered experiments in which meat-eaters read critical calls to adopt a veg* diet, either by a vegan (outgroup) or a meat-eater (ingroup). In Experiment 2, participants moreover read an article either highlighting a veg* or a meat-eating norm. We then assessed actual (Experiment 1) or hypothetical (Experiment 2) meal choice as dependent variables. As predicted, intergroup criticism (i.e., voiced by veg*s) consistently led to message rejection in comparison to the same criticism voiced by meat eaters, but we did not observe effects on meal choice. Norms neither had a main nor interaction effect on self-reports and behaviour. We discuss potential intermediary processes between engagement with and adoption of a vegan diet and derive evidence-based recommendations for constructive communication across group boundaries.

BACKGROUND: The Sustainable Development Goal 12 (SDG12) promotes patterns that minimize waste and maximize resource utilization. It is therefore plausible that preventing Early Childhood Caries (ECC) and promoting oral health can contribute to sustainable consumption. In addition, sustainable consumption and production can contribute to the control of ECC. This scoping review aimed to explore the possible evidence on the link between ECC and the SDG12 targets. METHODS: This scoping review identified articles on the link between resource consumption and production and caries according to the PRISMA-ScR guidelines. Three electronic databases (PubMed, Web of Science, and Scopus) were systematically searched in August 2023, using specific search terms. Studies written in English, with full text available, addressing dental caries and linked with waste minimization and resource utilization maximisation, with results that could be extrapolated to ECC in children less than 6 years of age) were included. Descriptive statistics were planned to summarize the categories of retrieved papers. RESULTS: The initial search yielded 904 articles, with 863 screened for eligibility after the removal of duplicates. No studies were identified that reported data on an association between responsible consumption and production of resources factors and ECC. CONCLUSION: This scoping review did not identify any articles published in English on evidence of the direct associations between ECC and SDG12 targets. However, there is a plausibility of such a link using minimum intervention dentistry for ECC management as a waste prevention and resource utilisation maximization strategy.

The Basel Convention and prior studies mainly focused on the physical transboundary movements of hazardous waste (transporting waste from one region to another for cheaper disposal). Here, we take China, the world's largest waste producer, as an example and reveal the virtual hazardous waste flows in trade (outsourcing waste by importing waste-intensive products) by developing a multiregional input-output model. Our model characterizes the impact of international trade between China and 140 economies and China's interprovincial trade on hazardous waste generated by 161,599 Chinese enterprises. We find that, in 2015, virtual hazardous waste flows in China's trade reached 26.6 million tons (67% of the national total), of which 31% were generated during the production of goods that were ultimately consumed abroad. Trade-related production is much dirtier than locally consumed production, generating 26% more hazardous waste per unit of GDP. Under the impact of virtual flows, 40% of the waste-intensive production and relevant disposal duty is unequally concentrated in three Chinese provinces (including two least-developed ones, Qinghai and Xinjiang). Our findings imply the importance of expanding the scope of transboundary waste regulations and provide a quantitative basis for introducing consumer responsibilities. This may help relieve waste management burdens in less-developed "waste havens".

Public interest in entomophagy (consumption of insects) has developed significantly over the past several years. Possible nutritional benefits are perceived by consumers according to several recent studies, as well as sustainability and food security. However, most European communities, including the Hungarian, do not embrace entomophagy, despite the widespread practice elsewhere globally. This study aims to evaluate the changes in the perception of entomophagy among the Hungarian population between 2016 and 2021, together with the factors differentiating between acceptive and dismissive consumers. The results of the two representative quantitative surveys indicate that more than 70% of Hungarian consumers are not willing to try entomophagy, which had not changed significantly in the observed period, despite the high media coverage of this topic in recent years. Some groups open to insect consumption can still be identified. According to the socioeconomic segmentation of the data collected in 2021, consumers who accept insect-based foods can be found in high numbers among men between 18 and 39 years old (49.3%). Positive attitudes are less likely to be observed among females; however, 27.6% of highly educated women between 18 and 59 years demonstrated a certain level of interest. Those consumers willing to consume insects are driven mainly by curiosity, and also value high protein content and sustainability, and perceive insect-based food as nutritious. Consumers who prefer local and national food tend to refuse to eat insects in a higher ratio.

Urbanization and globalization are changing the conventional constraints of seasonality and geography on food consumption, such as that of fresh cherries. The rising demand for year-round cherry consumption in China is currently satisfied by open-field, greenhouse-produced, and imported products. This study conducted a spatial-temporal life cycle evaluation of the environmental performance of cherry consumption behaviors during different seasons of the year. Moreover, based on the definitions of global and local seasonality, the additional environmental costs of out-of-season cherry consumption were estimated. Results show that seasonality was an important factor affecting the environmental burdens of cherry consumption. Eating cherries imported from Chile by air in October resulted in the highest greenhouse gas (GHG) emissions of 6.38 kg CO2-eq/kg, while eating domestic open-field cherries during May to July (the natural harvest season) was a relatively environmentally beneficial option. The total cherry consumption in China in 2019 generated GHG emissions of 126.99 × 104 t CO2-eq. Under the definitions of global and local seasonality, the out-of-season consumption led to additional environmental costs of 57.59 × 104 and 85.67 × 104 t CO2-eq, accounting for 45.35% and 67.46% of total emissions, respectively. Furthermore, the time-environment trade-off effect of cherry consumption illustrates the higher environmental costs are exchanged for satisfying the appetite for out-of-season fresh foods. Our findings emphasize the meaningful implications for developing a sustainable consumption pattern for all stakeholders involved in the entire food chain.

Environmental rating ecolabels are a new generation of ecolabels. They are intended to enable consumers to compare the environmental impacts of multiple products and make more sustainable consumption choices. Falling outside of the three types defined in the ISO 14020 environmental label and declarations series, the recent proliferation of these business-to-consumer communication instruments has resulted in the creation of a plethora of methodologies to derive product performance ratings. Interest from consumers wanting more information on the products they purchase, as well as the promise of policy instruments aiming to increase transparency and combat greenwashing, are fuelling further multiplication of schemes. A move towards more credible, evidence-based environmental rating ecolabels is therefore urgently needed to promote assessment based on scientific understanding, gain consumer trust, and realise policy objectives. We propose a framework based on four core principles - i) relevance, ii) scientific robustness, iii) trust and transparency, and iv) feasibility (scalability, affordability) - with 18 guidelines that can be followed by rating scheme developers. We characterise the rise of environmental rating ecolabels in geographical Europe and build an inventory of 33 existing schemes, at various stages of development and implementation, to which we apply the framework. This reveals the potential for significant improvement in current schemes, indicating important areas for development. The framework provides a valuable guide for the development of new schemes or an evaluation grid for existing initiatives.

Purpose: The recently published first Life-LCA case study of a human being (0-49 years) did not use primary data for the "childhood and youth stage" (0-17 years). Consumption was assumed to contribute 50% of the calculated 48th baseline year. This led to uncertainties as consumer behavior changes from birth to adulthood. Furthermore, transport emissions and environmental impacts before birth were neglected. Therefore, this paper analyzes the prenatal and infancy phase (0-3 years) to develop the Life-LCA method and database further and evaluate generic assumptions. Methods: The Life-LCA method sets the reporting unit to newly defined prenatal and infancy phases. The reporting flow describes the range of all consumed products attributable to an infant. Primary data was collected with a sample of three study objects-a pregnant mother, a newborn baby, and a 3-year-old infant-living in Germany. The following environmental impact assessment categories are considered: climate change (GWP), acidification (AP), eutrophication (EP), and photochemical ozone creation (POCP). Results and discussion: Prenatal and infancy phase burdens account for a GWP of 4,011 kg CO2-eq., an AP of 22.3 kg SO2-eq., an EP of 10.7 kg PO4-eq., and a POCP of 1.7 kg C2H4-eq. The share of the prenatal phase is around 15-20% for all impact categories. Transport is a hotspot for GWP (30-60%) and POCP (45-70%) in both phases. AP (50%) and EP (45-50%) are dominated by food products, mainly meat (45%) and dairy products (35%). For the prenatal phase, energy and water consumption at birth rank third in GWP (8%). Diapers account for 6% (GWP) of the environmental burden in the infancy phase. Assumptions made in the first Life-LCA study connect closely with the values calculated for the first three years of infancy. A remaining challenge is allocating the impacts between infants and parents and developing a methodology for assessing data quality. Conclusion: Focusing on two new life phases has led to the subdivision of the "childhood and youth stage" and an extension of the system boundaries. The results' uncertainty was reduced by developing a new set of specific datasets focusing on several study objects. The case study results show the importance of primary data collection for evaluating generic assumptions. Additional studies on childhood and adolescence from 3 to 17 years are suggested for a robust assessment of the complete "childhood and youth stage." The irrational functioning of the food sector can negatively impact the environment and resources for future generations. The aim of this study is to analyse the assessment of sustainability indicators related to meal production processes and waste in the food service through a systematic literature review. The hypothesis is that these indicators are still little explored. This review was conducted according to the Preferred Reporting Items for Systematic Review and Meta-analysis Protocols. The databases consulted were Lilacs, Science Direct, Scientific Electronic Library Online (SciELO), Coordenação de Aperfeiçoamento de Pessoal de Nível Superior, OpenGrey and Greylit. Six different search strategies were applied, combining the terms sustainability and food service, plus manual searches. The search took place until April 2020 and there was no language restriction of the studies. After removing duplicates, 770 publications were identified through the search process, with 44 having been included in this review. Most publications carried out the quantification of food waste (38/44), while in 7/44 there were questionnaires, checklists and water footprint assessments. Most studies identified high indicators of waste, as well as little awareness of sustainability. Factors such as controlled portioning, omnivorous menus and dissatisfaction with the menu were reported to have caused the greatest losses in the process. This review identified a restricted assessment of sustainability in food service, countering the need to deepen these indicators and the effect of meal production processes on sustainable development.

Using food and drink disposable containers has heavy environmental and economic consequences. The widespread adoption of reusable containers is a challenge that requires understanding the psychological determinants and barriers of the behaviour. Two studies were conducted: one with a sample from the general public (study 1, N = 302) and one with respondents having access to a reusable container system at work (study 2, N = 737). Online surveys measured self-reported use of single-use and reusable containers for food and drinks takeaway (studies 1 and 2) and for food delivery (study 1). Stages of change and psychological determinants were also measured to provide behavioural levers. Results indicate that in study 1, most of the sample is aware of the issue associated with single-use containers but has not switched to reusable. In study 2, most respondents say they are already using few single-use and are willing to continue, particularly for drinks to go. Thus, accessibility at the workplace to a reusable container system is associated with higher stages of change. However, many respondents are also in the preactional phase for food takeaway, that is, willing to change but have not started yet. In both studies, perception of control on the behaviour and volitional variables are positively associated with stages of change. This suggests that making reusable containers easier to use and helping individuals plan how and when they can do it could encourage behaviour change.

The environmental footprint embedded in the human diet is massive. To convey the enormity of the problem, persuasive environmental messages often report large-scale, aggregate data (such as the billions of tons of greenhouse gases released to the atmosphere annually by the beef industry.) Is this strategy effective? In five studies (total N = 1237), the environmental footprint of beef was presented to participants with either aggregate, nation-level numeric data, or with the same data scaled to the individual level. Across the studies, a clear pattern emerged: Participants who received aggregate-level (versus individual-level) data perceived less of a connection between their behavior and the environment and expressed less intention to curb their meat consumption. These data suggest that aggregate environmental figures, rather than raising urgency, may instead demotivate many message recipients.

A reduction of meat consumption and shift to plant-based diets, especially in industrialized countries, is acknowledged as crucial for reaching climate targets, addressing public health problems, and protecting animal welfare. While scholarly research distilled drivers of meat consumption and barriers to its reduction, insights into the effectiveness of measures to initiate such a profound change in consumer behaviour are relatively scarce. This paper presents a systematic literature review on consumption-side interventions in the context of meat consumption across scholarly disciplines. Our analysis confirms that existing research predominantly assessed interventions addressing personal factors of behavioural change such as knowledge and emotions. Whether these interventions are effective depends on whether information (i) is provided on health, animal welfare or environmental effects, (ii) is emotionally or cognitively framed, and (iii) is aligned with consumers' information needs. Moreover, linking meat to living animals or to the humanness of animals activates negative emotions and, thus, reduces meat consumption. Further, increasing the visibility and variety of vegetarian dishes in food environments decreases meat-eating. Also, educational courses on how to shop and cook vegetarian food are effective in reducing meat consumption. There is less evidence on the effectiveness of interventions addressing socio-cultural factors such as social norms. Regarding future research directions, existing research mainly investigated the influence of interventions on attitudes and behavioural intentions. Hence, there is still a need for studies to assess more long-term effects of intervention measures on actual meat consumption and their potential to initiate fundamental changes in dietary habits.

Extending product lifespan has recently been recognized as an important strategy to achieve sustainable development. A substantial corpus of literature explores product lifespan from the perspective of product design or manufacturing practices, but the perspective of consumer has been largely overlooked. Addressing this void, this study systematically reviewed the literature on how consumer product use behavior influences the product lifespan. Insights gained from the review process guided our analysis on how product lifespan relates to consumer perceived value (comprising functional value, social value, and emotional value). We developed a five-stage framework to delineate the relationship between consumer perceived value and product use behavior across five-stages; namely, pre-acquisition, early use, middle use, late use, and pre-disposal. Furthermore, we identify promising directions for future scholarly work.

BACKGROUND: This study investigated the influence of the storage method on the physicochemical characteristics and microbial growth of m. longissimus thoracis et lumborum (LTL), m. biceps femoris (BF) and m. vastus lateralis (VL) of wild boar. Muscles were stored in a vacuum (VAC), in a modified high-oxygen atmosphere (MAP) or meat seasoning cabinet (DRY-AGED) for 21 days. RESULTS: Wild boar meat was characterised by a high protein and low fat content and a good amount of potassium, sodium, calcium, magnesium, zinc and iron. Significantly higher (P < 0.05) pH values were noted for DRY-AGED muscles stored for 21 days (up to 5.89 for VL). On day 21, a significant decrease in pH was noted for all MAP muscles (down to 5.23 for BF). Storage losses due to desiccation and water loss were significantly higher for DRY-AGED samples and ranged from 25.63% to 32.89% on day 21. MAP affected protein and lipid oxidation, which was also reflected in Warner-Bratzler shear force VAC and DRY-AGED had positive results regarding tenderness, whereas on day 21 the MAP-stored meat had toughened significantly (from 35.3 N to 50.7 N in LTL). Lipids were oxidised much faster than proteins during prolonged storage in MAP. Compared to the other methods, DRY-AGED had the best effect on microbial growth. CONCLUSION: These results indicate that the recommended methods for the storage of wild boar meat are either vacuum packing or dry ageing. The high oxygen content of MAP negatively affected the quality of wild boar meat and carried a risk of increased protein carbonylation. © 2022 Society of Chemical Industry.

As a means to preserve present and future generations' living conditions, sustainable consumption presents a route to the enhanced well-being of individuals. However, the occurrence of the COVID-19 pandemic raises the question of whether society is going to continue down a path of increased awareness of sustainable consumption or whether the pandemic will move people to focus more on themselves. Based on data gathered before and near the end of the first pandemic lockdown in Germany in spring 2020, this research demonstrates that ecological, social, and voluntary simplicity consciousness deteriorated in the minds of sustainability-conscious consumers, with notable impacts on their willingness to spend sustainably and their shopping affinity. Furthermore, we identify segments that show particular vulnerability to the lockdown by reacting with a decrease in their ecological consumption consciousness. This study concludes with a discussion of the pandemic's implications for the spread of sustainable consumption styles and human well-being.

The main purpose of this study is to gain an in-depth understanding of the impact of financial prudence (FIN) on social influence and environmental satisfaction in the sustainable consumption (SC) behavioural model from a cross-market intergenerational perspective in the context of COVID-19. Surprisingly, we discovered that, during the COVID-19 pandemic, significant differences emerge between the Chinese and European markets in the four factors (social influence, SC behaviour, environmental satisfaction, and FIN). Unpredictably, Generation X in the European market and Generation Y in the Chinese market had the highest FIN during the pandemic. Another substantial contribution is that, during the epidemic, the influence of social interaction promotes SC behaviour and social influence motivates users to implement SC behaviours by enhancing environmental satisfaction. However, differences arise in the moderating effect of FIN. In China, the moderating effect occurs in the relationship between social influence and SC behaviour, whereas, in Europe, it reflects in the relationship between social influence and environmental satisfaction.

Poultry meat production and consumption face several challenges under economic, social and environmental perspectives, and increasing concerns are associated with food loss and waste minimization. One of the main issues is related to the absence of a homogeneous and standardized separate collection of bio-waste at country level, which makes chicken bones, skin and food waste valorization a challenging goal. The present research, implementing the material flow analysis to the Italian poultry sector, aims at measuring poultry-related co-products and by-products, exploring food waste, chicken bones and skin and the current trends in the Italian bio-waste separate collection. Then, it discusses alternative separate collection strategies and sustainable consumption habits. Data have been collected according to a research triangulation approach, whereas system boundaries consider slaughterhouse, distribution and final consumption stage. It emerges that more than 1.50 Mt of live animals have been processed to obtain 0.46 Mt of fresh meat and 0.76 Mt of co-products and by-products, of which more than 0.32 Mt are represented by chicken bones and skin. In addition, more than 0.15 Mt of food waste have been recorded. The research adds an extra step towards the identification of awareness campaigns and separate collection strategies at national level.

Promoting sustainable food consumption is critical to meet the United Nation's Sustainable Development Goals. The existing research using average diets and the individual one-day diet recall data to obtain insights into food carbon footprints (CFs) may neglect the diverse food purchasing patterns in different households (HHs). In this paper, we analyzed detailed grocery shopping records of 57,578 U.S. HHs to evaluate the associated food CFs. The cradle-to-farm-gate CFs of 83 food items were calculated using a process-based life cycle assessment model adapted to the U.S. condition. Using the CF of a healthy and sustainable diet as the benchmark, we quantified the CF reduction potentials for each HH. Our results suggest three key strategies to reduce HH food CFs: (1) lowering the over-purchasing in small (one- or two-person) HHs can achieve two-thirds of the recognized carbon emission reduction potentials; (2) reducing the intake of snacks, ready-made food, and drinks leads to as much as, if not more, carbon emission reduction than changing diets; and (3) more attention needs to be paid to reduce the carbon intensity of food items with large purchased volume.

A deep understanding of the water-food nexus it is of a paramount importance as an avenue for sustainable development. Water forms the foundation for food production and a sustainable use of this resource is essential to guarantee the long-term productivity and to build resilient capacity in food and agricultural systems. Here we present methodological challenges regarding different water footprint (WF) methods applied to different dietary scenarios. The volumetric WF of three theoretical but realistic dietary patterns has been quantified (Omnivorous(O), Vegetarian(V) and Vegan(VG)), by means of the Water Footprint Network methodology. Moreover, the AWARE methodology is applied to assess potential impacts of water use trough the Water Scarcity Footprint (WSF). Diets are set to integrate and consider different drivers for food consumption encompassing the social value of the Mediterranean diet, healthy diet recommendations, food preferences of Italian consumers and the trade dimension of foodstuffs. In terms of volumetric WF, the O diet is the most water intensive one accounting for 2800 L/capita/day. A shift from an O to a V and VG diets allows to reduce the volumetric WF respectively 10% and 14%. Green water consumption accounts for the largest share (85%) in all three scenarios. Considering the WSF, V healthy diet is similar to the VG resulting in 11,069 and 11,130 L H2Oeq/capita/day respectively, whereas the O diet resulted in 11,932 L H2Oeq/capita/day. A sensitivity analysis was performed by changing each food category, one at a time, to its maximum and minimum value, in order to evaluate the significance of changes in the volumetric WF and WSF as well as the variables that mostly contribute to them. Results show that the volumetric WF associated with V and VG diets consumption overlay the O diet in respectively 53.5% and 35.7% of runs, while overlapping is improved comparing WSFs results. In this case, the WSFs of V and VG diets overlay the O diet in 83.5% of runs, suggesting that the alternative dietary scenarios would have little effect on the overall WSF and that the results are particularly sensitive to the different countries of importation. Results demonstrate the need to consider both volumetric WF and WSF with particular attention to trade analysis in order to support the development of new policies with the aim to foster sustainable consumption patterns, while preserving water resources.

RESUMO

Marine plastic pollution (MPP) is an urgent environmental and socio-economic problem. MPP amounts to 300 million tons annually, originates largely from land-based sources and severely impacts marine ecosystem, harms livelihoods and causes costs for businesses and governments. Plastics permeate the whole width and depth of seas and oceans, near well-developed coastal zones and equally in remotest corners. This undermines economic and social value of the oceans, particularly in terms of fisheries productivity and tourism. The G20 members, responsible for about two-thirds of global plastic waste, recognize the problem and undertake preventive measures - individually and collectively. Yet, are there efficient, effective and sufficient given the urgency of MPP and the contribution of G20 countries. This article highlights existing policies and identifies further policy options using a custom framework for MPP policy that merges Circular Economy (CE) and life-cycle perspectives.

The COVID-19 pandemic has created sudden, rapid, and unprecedented change in almost every possible aspect of the general population's behavior. Despite its devastating consequences, the COVID-19 pandemic can alter individual behavior towards responsible environmental actions. This study provides an in-depth analysis of how the COVID-19 pandemic has changed pro-environmental beliefs and behavior. We compare pre-COVID-19 recycling and consumption reduction with post-COVID-19 intentions, focusing on the COVID-19 pandemic's role in catalyzing the change. The protection motivation theory is applied to investigate threat appraisal and coping appraisal as potential motivators for taking climate change more seriously and engaging in pro-environmental behavior. A tailor-made survey carried out during the national lockdown imposed in March-April 2020 in Israel served for the analysis. A generalized ordered probit estimated on a sample of 296 respondents served to validate the behavioral model. The results confirm that threat and coping appraisal are drivers of behavioral change towards pro-environmental behavior. The results show that: i) 40% of low-intensity recyclers are likely to increase recycling compared to 20% of high-intensity recyclers; ii) following the COVID-19 outbreak, 40% intend to consume less; iii) the changes are catalyzed by threat and coping appraisal; iv) taking climate change more seriously following the pandemic is a function of the individual's perceived association between COVID-19 and climate change, external knowledge, income loss due to the pandemic, self-resilience, and ecocentric beliefs; v) self-resilient attitudes lead to positive behavioral change, while anthropocentric beliefs impede changes towards sustainable behavior.
