RESUMEN

Fermented whey dairy beverages are dairy products obtained by fermentation from a mixture of milk and whey. These beverages have important health benefits, which could be improved with the addition of probiotic cultures. This study assessed the protective effect of the cosupplementation of a probiotic culture (Lactobacillus casei 01) with a fermented whey dairy beverage against infection by Salmonella enterica ssp. enterica serovar Typhimurium in a murine model. Two fermented whey dairy beverages were prepared: conventional (FWB; starter culture) and probiotic (PFWB; starter and probiotic cultures). In the first set of experiments, Balb/C female mice were treated with FWB or PFWB, challenged with Salmonella Typhimurium, and analyzed for clinical signs, weight loss, and mortality for 20 d postinfection. In the second set of experiments, mice were treated with FWB or PFWB, challenged with Salmonella Typhimurium, and killed on d 10 postinfection. The liver, colon, and ileum were used for myeloperoxidase, eosinophil peroxidase, and histological analysis and translocation to the liver. The contents from the small intestine were used for secretory IgA determination. The FWB treatment showed a better effect on animal survival (70%), translocation of the pathogen to the liver (2 out of 10), histopathology (fewer lesions), and inflammation than PFWB, which presented 50% animal survival, translocation in 5 out of 10 animals, and higher lesions. The control group presented 40% animal survival, translocation in 6 out of 10 animals, and severe lesions. Therefore, FWB was deemed to have a greater protective effect against Salmonella Typhimurium infection in the murine model compared with PFWB.

Prato cheese, a typical ripened Brazilian cheese, contains high levels of sodium, and the excess intake of this micronutrient is associated with hypertension and cardiovascular diseases. A technological alternative to reduce the sodium content in foods is to replace NaCl with KCl and the addition of flavor enhancers. The present study aimed to combine quantitative descriptive analysis (QDA) and temporal dominance of sensations (TDS) to assess the sensory profile of reduced-sodium probiotic prato cheese with the addition of flavor enhancers. Five formulations of probiotic prato cheese were manufactured using 1% (wt/wt) salt as follows: C1 (100% NaCl), C2 (50:50 NaCl:KCl), C3 (50:50 NaCl:KCl + 1% arginine), C4 (50:50 NaCl:KCl + 1% yeast extract), and C5 (50:50 NaCl:KCl + 1% oregano extract). Both methods indicated that the addition of flavor enhancers modified the sensory profile of the reduced-sodium probiotic prato cheese. The QDA revealed that flavor enhancers-in particular, yeast and oregano extract-increased the saltiness of samples C4 and C5, respectively, and that the other flavor enhancer, arginine (sample C3), most modified the attributes of prato cheese. The TDS dominance curves revealed that the addition of yeast extract (sample C4) had a positive effect on cheese flavor because it minimized the bitter taste perception resulting from the addition of potassium chloride. Overall, QDA and TDS used together provided interesting insights for establishing the sensory profile of reduced-sodium probiotic prato cheese.

The purpose of this study was to evaluate the influence of castor and licuri palm oils supplemented to milking goats on the physical, chemical, and sensory characteristics of milk. A double Latin square experimental design (5x5) using 10 confined crossbred Moxotó-Alpine goats was performed according to the following treatments: nonsupplemented (control), 3% castor oil, 5% castor oil, 3% licuri oil, and 5% licuri oil. Oils in each treatment were supplemented in the dry matter. Castor oil supplementation reduced the fat content and increased the lactose and density of milk. Considering the sensory analysis, a lower acceptability was observed for milk from goats supplemented with castor oil. On the other hand, licuri oil supplementation led to higher acceptability scores for flavor and odor of goat milk.

Spineless cactus is a useful feed for various animal species in arid and semiarid regions due to its adaptability to dry and harsh soil, high efficiency of water use and carbohydrates storage. This meta-analysis was carried out to assess the effect of spineless cactus on animal performance, and develop and evaluate equations to predict dry matter intake (DMI) and average daily gain (ADG) in meat lambs. Equations for predicting DMI and ADG as a function of animal and diet characteristics were developed using data from eight experiments. The dataset was comprised of 40 treatment means from 289 meat lambs, in which cactus was included from 0 to 75% of the diet dry matter (DM). Accuracy and precision were evaluated by cross-validation using the mean square error of prediction (MSEP), which was decomposed into mean bias, systematic bias and random error; concordance correlation coefficient, which was decomposed into accuracy (Cb) and precision (ρ); and coefficient of determination (R2). In addition, the data set was used to evaluate the predicting accuracy and precision of the main lamb feeding systems (Agricultural and Food Research Council, Small Ruminant Nutritional System, National Research Council and Institut National de la Recherche Agronomique) and also two Brazilian studies. The DMI, CP intake (CPI), metabolizable energy (ME) intake and ADG increased when cactus was included up to 499 g/kg DM (P<0.001). In contrast, animals fed high levels of cactus (>500 g/kg DM) had a decreased DMI, CPI and NDF intake, but increased feed efficiency (P<0.001) and similar ADG compared with those without cactus addition. The DMI was positively correlated with initial BW, final BW, concentrate and ADG, while it was negatively correlated with cactus inclusion and ME of the diet. On other hand, ADG was positively correlated with DMI, initial and mean BW and concentrate, and it was negatively correlated with cactus inclusion. The two developed equations had high accuracy (Cb of 0.95 for DMI and 0.94 for ADG) and the random error of MSEP was 99% for both equations. The precision of both equations was moderate, with R2 values of 0.53 and 0.50 and ρ values of 0.73 and 0.71 for DMI and ADG, respectively. In conclusion, the developed equation to predict DMI had moderate precision and high accuracy, nonetheless, it was more efficient than those reported in the literature. The proposed equations can be a useful alternative to estimate intake and performance of lambs fed cactus.

The effect of different levels of silk flower hay (Calotropis procera Sw) in the diet of confined lambs by the substitution of the commonly used foraging broom corn hay (Sorghum bicolor L) was investigated to evaluate its possible effects on the growth and quality of the lamb meat. Twenty-four male Santa Inez lambs were divided in equal numbers into four treatment groups and fed diets containing 0%, 16.7%, 33.3% and 50% of silk flower hay (SFH). Growth rate, feed intake and meat quality were investigated. Mean daily gains of lambs were 170g for control, 180.5g for 16.7% SFH, 96.8g for 33.3% SFH and 22.9g for 50% SFH. The use of silk flower hay in the diet of Santa Inez lambs affected health of the animals and meat pH when the substitution of the forage was high, up to 50%; however, the general meat quality was not affected. Meat from animals fed with levels up to 50% SFH had physical (Aw, a(∗), b(∗) and L(∗)) and chemical (moisture, ash, lipid, phosphorus, iron, phospholipid and fatty-acid profile) parameters comparable to the control group (0% SFH). Among the various levels of substitution (16.7%, 33.3% and 50%) of silk flower hay in the diet tried in this work, the use of 16.7% was found to be an attractive and technically viable option for the Northeast region of Brazil.

The objective of this study was to evaluate the effect of reduced feed intake on Moxotó and Canindé goat, which are native breeds of semi arid area of Brazil, by analyzing the resultant meat quality. Intact male goats of both genotypes (10 animals each), weighing about 15kg, were allocated to two feeding levels (AL: feed ad libitum and FR: feed restricted to 63% of the total feed consumed by AL). Water-holding capacity and a(∗) color parameter were significantly influenced (p<0.05) by genotype. Proximate composition, cholesterol, shear force, pH, cooking loss, and sensory scores did not differ significantly (p>0.05) between genotypes. The redness of the meat of the Canindé breed was much improved in FR goats. Although, feed restriction by 37% did affect the final live weight and mean daily gain weight, it had no effect on chemical, physical, and sensory quality of Moxotó and Canindé meat.

Salmonella Dublin is strongly adapted to cattle causing enteritis and/or systemic disease with high rates of mortality. However, it can be sporadically isolated from humans, usually causing serious disease, especially in patients with underlying chronic diseases. The aim of this study was to molecularly type S. Dublin strains isolated from humans and animals in Brazil to verify the diversity of these strains as well as to ascertain possible differences between strains isolated from humans and animals. Moreover, the presence of the capsular antigen Vi and the plasmid profile was characterized in addition to the anti-microbial resistance against 15 drugs. For this reason, 113 S. Dublin strains isolated between 1983 and 2016 from humans (83) and animals (30) in Brazil were typed by PFGE and MLVA. The presence of the capsular antigen Vi was verified by PCR, and the phenotypic expression of the capsular antigen was determined serologically. Also, a plasmid analysis for each strain was carried out. The strains studied were divided into 35 different PFGE types and 89 MLVA-types with a similarity of ≥80% and ≥17.5%, respectively. The plasmid sizes found ranged from 2 to >150 kb and none of the strains studied presented the capsular antigen Vi. Resistance or intermediate resistance was found in 23 strains (20.3%) that were resistant to ampicillin, ciprofloxacin, chloramphenicol, imipenem, nalidixic acid, piperacillin, streptomycin and/or tetracycline. The majority of the S. Dublin strains studied and isolated over a 33-year period may descend from a common subtype that has been contaminating humans and animals in Brazil and able to cause invasive disease even in the absence of the capsular antigen. The higher diversity of resistance phenotypes in human isolates, as compared with animal strains, may be a reflection of the different anti-microbial treatments used to control S. Dublin infections in humans in Brazil.

Species of plants used by Melipona quadrifasciata Lepeletier for pollen and nectar gathering in an urban forest fragment were recorded in Belo Horizonte, Minas Gerais, Brazil. Melipona quadrifasciata visited 22 out of 103 flowering plant species. The plant species belonged mainly to Myrtaceae, Asteraceae, and Convolvulaceae (64% of the visits). Melipona quadrifasciata tended to collect pollen or nectar each time, except for Myrtaceae species, from which both pollen and nectar were collected. Bee abundance at flowers did not significantly correlate to food availability (expressed by flowering plant richness). We found a relatively high similarity (50%) between plant species used by M. quadrifasciata, which was also found in studies carried out in São Paulo State. However, low similarity (17%) was found between the results of this study and those of another done in Bahia State, Brazil.

The present study aimed to morphometrically evaluate the ruminal mucosa and ruminal fluid characteristics of Santa Inês sheep fed different levels of spineless cactus as a replacement for Tifton grass hay. A total of 32 intact male Santa Inês sheep, approximately 180 days old and with a mean weight of 32.0±1.6kg, were studied in a completely randomized design with four treatments and eight replicates. The morphometric measurements evaluated in the ruminal epithelium (papilla height and surface area) were significantly affected (P< 0.05) by supplementation of the diet with spineless cactus, and these effects showed increasing linear trends. Evaluations of the ruminal fluid also showed a significant increasing linear effect (P< 0.05) for ammonia and a quadratic effect for microbial protein. The inclusion of spineless cactus in the sheep diet affects the ruminal epithelium morphology, including the papilla height and surface area, and favors the absorption process in the rumen. The diet containing higher levels of spineless cactus led to maximum microbial protein production. These results characterize spineless cactus as a feasible alternative for feeding sheep during periods of drought, when the typical food source is scarce.(AU)


O presente estudo teve como objetivo avaliar morfometricamente a mucosa ruminal e as características do líquido ruminal de ovinos Santa Inês alimentados com diferentes níveis de palma forrageira como substituta do feno de capim-Tifton. Um total de 32 ovinos, machos inteiros, da raça Santa Inês, com aproximadamente 180 dias de idade e peso médio de 32,0±1,6kg, foi estudado em delineamento inteiramente ao acaso, com quatro tratamentos e oito repetições. As medidas morfométricas avaliadas no epitélio ruminal (altura e área superficial da papila) foram significativamente afetadas (P<0,05) pela suplementação da dieta com palma forrageira, e esses efeitos mostraram tendências lineares crescentes. As avaliações do fluido ruminal também mostraram um efeito linear crescente significativo (P<0,05) para a amônia e um efeito quadrático para a proteína microbiana. A inclusão de palma forrageira na dieta de ovinos afeta a morfologia do epitélio ruminal, englobando a altura e a área da papila, e favorece o processo de absorção no rúmen. A dieta contendo níveis mais altos de palma forrageira levou à produção máxima de proteína microbiana. Esses resultados caracterizam a palma forrageira como uma alternativa viável para a alimentação de ovelhas durante períodos de seca, quando a fonte típica de alimento é escassa.(AU)

Brazil has one of the highest prevalence rates of female surgical sterilization in the world. At the same time there is an increased demand for sterilization reversal. In order to understand which women tend to later request reversal of the procedure, a case-control study was carried out comparing 216 women who requested reversal with sterilized women who did not, paired by year of surgery. The relative risk of requesting reversal for women sterilized before age 25 was 18 times that of women sterilized after age 29. The elevated risk remained even after controlling for a number of variables present at the time of surgery. Multiple regression analysis showed that request for reversal was associated with younger age, less information about the procedure, and fewer contraceptive methods known before sterilization. These results support the recommendation that women should be fully informed about the tubal ligation procedure and have access to other contraceptive options before being sterilized.

In Brazil, induced abortion is considered a crime in the majority of cases, the result being that there is little official data on the subject. Little is known about the conditions under which abortions are induced This research was designed to shed light on the characteristics of the women who had had an abortion and to study the reasons why and conditions under which it occurred. The sample consisted of all employees (7,359) and students (2,231) in a university program in S o Paulo who were mailed a self-administered survey. Accompanying the questionnaire was a letter and self-addressed stamped envelope. 27% of the employees and 42% of the students returned the questionnaires. Of these, 1,314 employees and 138 students had had at least one pregnancy. The results presented in this study show that 465 of the employees and students ar some point had thought of having an abortion. They were divided into two groups: those who had had an abortion and those who had nos. The objective was to analyze the association of some characteristics of the women with their decision to have/not have an abortion and how they felt when faced with this decision. The proportion of women who had had an abortion was significantly lower among married women than singles. A larger percentage of women who had talked with a friend and/or husband/partner/boyfriend had decided to have an abortion than those who had talked to a parent or had not talked to anyone. More women who said they were not prepared to raise/educate a child had had an abortion as compared to those giving other reasons. Almost half of the women undergoing an abortion said that they felt bad emotionally and physically afterwards. Among those who had not had an abortion, almost two-fifths reported that they felt good, were happy, relieved, and did not regret their decision. The conclusion drawn from the population studied was that emotional and social factors played a significant role in the decision-making process for women considering an abortion.

For the purpose of analysing the association between selected current socio-demographic characteristics and the history of induced abortion, 138 students of a Brazilian university, who had been pregnant at least once, were studied. These students were identified from among the 937 who returned, by mail, a self-administered, anonymous questionnaire distributed to all the female undergraduates. The subjects were divided into two groups, those who had and those who did not have a history of induced abortion. It was found that the largest percentage of women who had already had an induced abortion were of less than 24 years of age, were not living in marital union, had no religious affiliation and no living children at the time of the study. Analysis by logistic regression showed that having no living children was the only current characteristic associated with having had an induced abortion.

The kinetics of gas production and in vitro ruminal degradation of diets contained replacement of soybean meal (SBM) by detoxicated castorbean meal (DCBM) (0, 15, 30 and 45% of substitution) were evaluated in this study. Values of gas production of non-fibrous carbohydrates (Vf1), fibrous carbohydrates (Vf2) and total carbohydrates (V) showed quadratic behavior, and by observation of equations can be obtained inclusions of 25% the V and Vf1 obtained maximum values of 174.7 and 237.8 ml gas / g DM, respectively. The potential degradability (PD) and effective degradability (ED) of dry matter showed quadratic behavior and by observation of equations can be perceive that up to 18.0% there was an increase in the values of PD and ED that obtained maximum values of 93.7% and 55.7%, respectively. The replacement of SBM by DCBM from 15 to 30% increased the kinetics of gas production and rumen degradation.(AU)

Avaliou-se o perfil metabólico de 40 ovinos Santa Inês, inteiros, com peso vivo médio inicial de 17±1,7kg,, submetidos à restrição alimentar seguida de realimentação em confinamento, distribuídos em quatro tratamentos: 0, 20, 40 e 60% de restrição alimentar. Dois ensaios foram desenvolvidos, um referente à restrição e outro à realimentação. Para tanto, foi utilizado delineamento experimental inteiramente ao acaso, com quatro tratamentos e 10 repetições, e distribuído em fatorial cruzado 4x3. Observou-se na fase de restrição que os níveis de fósforo foram mais altos nos animais sob restrição alimentar; o mesmo ocorrendo na fase final para as concentrações de proteínas totais (PT), albumina (Alb) e colesterol total. A gama-glutamiltransferase (GGT) decresceu de forma linear com o aumento da restrição. No segundo ensaio, verificou-se que as concentrações de PT, Alb, globulina, colesterol total, lipoproteína de alta densidade, GGT e magnésio (Mg) apresentaram diferença (P<0,05) entre os períodos de coleta. Já na restrição prévia, observou-se comportamento linear decrescente para GGT e interação tratamento versus período de coleta para a concentração de cálcio. Os níveis de restrição alimentar afetaram o metabolismo proteico e não interferiram no metabolismo energético, e a realimentação resultou em alteração no metabolismo proteico, energético e mineral.


The objective of this study was to evaluate the metabolic profile of 40 Santa Inês sheep, whole, with average weight of 17±1,7kg, submitted to food restriction followed by refeeding in confinement, distributed in four treatments: 0, 20, 40 and 60% restriction food. Two tests were developed, one for restriction and one for refeeding. In this experiment a completely randomized design was used, with four treatments and 10 repetitions, distributed in a factorial 4x3 crossover. In the constraint phase it was observed that phosphorus levels were higher in animals under food restriction, this also occurred in the final stage for of total protein (TP), albumin (Alb) and total cholesterol concentrations. The gamma-glutamyl transferase (GGT) decreased linearly with increasing restriction. On the second trial it was found that concentrations of PT, Alb, globulin, total cholesterol, high density lipoprotein, GGT and Mg were similar (P<0,05) between collection periods. In the previous restriction, a decreasing linear behavior and interaction treatment for GGT versus collection period for the concentration of calcium was observed. The levels of food restriction affect protein metabolism and did not interfere with energy metabolism, and feedback resulted in changes in protein, energy and mineral metabolism.

Avaliou-se o uso de inseticidas em tratamento de sementes de girassol no controle das pragas Cerotoma arcuatus (Olivier) (Coleoptera: Chrysomelidae), Bemisia tabaci (Gennadius) (Hemiptera: Aleyrodidae), Anticarsia gemmatalis Hübner (Lepidoptera: Noctuidae) e Spodoptera frugiperda (J.E. Smith) (Lepidoptera: Noctuidae) e a influência desses inseticidas na qualidade fisiológica das sementes, durante o armazenamento. Os resultados obtidos mostraram que tiodicarbe 600 g i.a./ 100 kg de sementes proporcionou aproximadamente 80, 100 e 85% de controle de A. gemmatalis de 1º ínstar, S. frugiperda de 2º ínstar e adultos de C. arcuatus, respectivamente. Entretanto, esse mesmo tratamento foi ineficiente no controle de lagartas de S. frugiperda de 3º ínstar e de B. tabaci. No controle de adultos de C. arcuatus, além de tiodicarbe 600 g i.a./100 kg sementes que apresentou bons resultados, tiodicarbe + imidacloprido 157,5 + 52,5 g i.a., tiametoxam 210 e 280 g i.a., imidacloprido 245 e fipronil 50 g i.a./100 kg de sementes apresentaram eficiência acima de 80% no controle dessa praga. No controle da A. gemmatalis apenas fipronil 50 g i.a./100 kg sementes e azadiractina 10 e 20 g. i.a./100 kg de sementes proporcionaram valores menores que 80% de controle, nas doses testadas, enquanto que, para o manejo da mosca-branca, nenhum dos tratamentos estudados proporcionou controle superior a 80%. Nenhum dos inseticidas avaliados nos diferentes tempos de armazenamento (até quatro meses após o tratamento) prejudicou a germinação e a emergência das sementes.


The aim of this study was to test various insecticides in the treatment of sunflower seeds for the control of Cerotoma arcuatus (Olivier) (Coleoptera: Chrysomelidae), Bemisia tabaci (Gennadius) (Hemiptera: Aleyrodidae), Anticarsia gemmatalis Hübner (Lepidoptera: Noctuidae) and Spodoptera frugiperda (J.E. Smith) (Lepidoptera: Noctuidae), and assessing their influence on the physiological quality of seeds during storage. The results showed that tiodicarb 600 g.a.i./100 kg of seeds achieved close to 80, 100 and 85% of control against first-instar A. gemmatalis, second instar S. frugiperda and adult C. arcuatus, respectively. However, this treatment was inefficient against third instar S. frugiperda and B. tabaci. Tiodicarb + imidacloprid 157.5 + 52.5; thiamethoxan 210; thiamethoxan 280; imidacloprid 245 and fipronil 50 g.a.i./100 kg of seeds also achieved 80% control against C. arcuatus adults. Against A. gemmatalis, only fipronil 50 g.a.i. and azarachtin 10 and 20 g.a.i./100 kg of seeds did not achieve more than 80% control. Against B. tabaci no tested treatment reached 80% of efficacy. None of the tested insecticides harmed seed germination or emergence during the different storage periods (up to 4 months after seed treatment).

Inventariaram-se as espécies de plantas utilizadas por Melipona quadrifasciata Lepeletier, para coletar pólen e néctar. Melipona quadrifasciata visitou 22 das 103 espécies de plantas floridas durante o período de estudo. Sessenta e quatro por cento das visitas foram principalmente em Myrtaceae, Asteraceae e Convolvulaceae. Melipona quadrifasciata tende a coletar apenas pólen e néctar nas suas visitas, exceto em Myrtaceae onde ambos os recursos foram coletados. A abundância de abelhas nas flores não se correlacionou com a disponibilidade de recursos (expressa pela riqueza de plantas floridas). Houve uma similaridade relativamente alta (50%) entre as espécies de plantas visitadas por M. quadrifasciata nesse estudo e outro desenvolvido em São Paulo. Uma baixa similaridade (17%) na utilização dos recursos foi verificada entre este estudo e outro conduzido na Bahia.

A manipulação da carcaça no abate propicia a proliferação de microorganismos. A produção de carne caprina que atenda aos requisitos de segurança microbiológica agrega valor ao produto, além de traduzir a eficiência do processamento em todas as suas etapas. O objetivo deste trabalho foi observar se o perfil microbiológico da carne caprina dos animais pesquisados encontra-se de acordo com padrões propostos na Resolução - RDC n. 12, de 2 de janeiro de 2001, que define o Regulamento Técnico sobre Padrões Microbiológicos para Alimentos. Determinou-se o pH, a atividade de água e o número mais provável de coliformes totais e fecais, Salmonella sp e Staphylococcus coagulase positiva. Amostras constituídas pelo conjunto de músculos que formam a perna do caprino (total de 24 animais) foram analisadas. Os resultados demonstraram que, de um modo geral, amostras desse estudo atenderam aos requisitos de segurança microbiológica da referida RDC, com exceção pra um dos grupos pesquisados (C - 30), que apresentou uma concentração de Coliformes fecais de 2,1 x 10 , valor este acima do estabelecido pela legislação vigente que é de 10. Este artigo serve de interesse para cientistas de alimentos que pesquisam a carne, e microbiologistas que trabalham com saúde pública e se interessam pela segurança das carnes em geral e da carne caprina em particular.
