Meat, poultry, and seafood such as fish are a valuable source of protein, vitamins and minerals. Considering their high consumption in the human diet, it is necessary to study pollutants (such as PAHs) in them. This present study has focused on the PAHs level and probabilistic risk of health in meat, poultry, fish and related product samples by MSPE-GC/MS technique (magnetic solid-phase extraction with gas chromatography-mass spectrometry). The maximum mean of 16 PAH was detected in smoked fish samples (222.7 ± 13.2 µg/kg) and the minimum mean of 16 PAH was detected in chicken (juje) kebab (112.9 ± 7.2 µg/kg µg/kg). The maximum mean of 4PAHs was detected in tuna fish (23.7 ± 2.4 µg/kg) and the minimum mean of 4PAHs was seen in grilled chicken and sausage samples (non-detected). Our results showed the 4PAHs and B[a]P were lower than the EU (European Union) standard levels (these standard levels were 30 and 5 µg/kg, respectively). Furthermore, the correlation among the type and concentrations of PAHs congeners was investigated through cluster analysis by heat map and principal component analysis. The 90th percentile ILCR (incremental lifetime cancer risk) of PAH compounds in fish, poultry, meat and related products samples was 3.39E-06, which was lower than the maximum acceptable level of risk (10-4). Finally, the highest ILCR was related to hamburger (4.45E-06). Therefore, there is no risk in consuming these foods in Iran, but it is necessary to monitor PAHs concentration in different types of foods.

This study was conducted with the aim of investigating the effect of cinnamon and cocoa on the formation of acrylamide in cake samples and their carcinogenic and non-carcinogenic risks. The cake samples were prepared using alkaline extraction, xanthidrol derivative and micro-extraction, then injected into a gas chromatography-mass spectrometry (GC-MS) to identify acrylamide. The maximum and minimum mean concentration of acrylamide among samples was related to the cinnamon cakes (212.28 ng/g) and the cocoa cake samples (10.14 ng/g), respectively. Acrylamide concentration for unflavored samples, cinnamon cake samples and cocoa cake samples were 61.86 ng/g, 169.38-212.28 ng/g and 10.14-44.64 ng/g, respectively. Human health risk assessment based on Monte Carlo simulation (MCS) indicated that the target hazard quotient and incremental lifetime cancer due to ingestion of acrylamide formation in cake samples for adults and children were in the acceptable limits (THQ > 1 and CR > 1E-4). In conclusion, cocoa flavor was able to decrease the concentration of acrylamide in cakes. According to the results, it is necessary to measure the amount of acrylamide in consumer cakes by regulatory organizations.

Baby food is one of the most sensitive foods available, which is closely monitored for carcinogens. In this study, 16 Polycyclic Aromatic Hydrocarbon (PAH) compounds were evaluated by using the method of magnetic-solid-phase-extraction and gas-chromatography/mass-spectrometry (MSPE/GC-MS). The recovery, limit of detection (LOD), and limit of quantification (LOQ) of PAH compounds were 93.4-101.6%, 0.06-1.12, and 0.18-3.38 µg/kg, respectively. The results indicated the mean of total PAHs in all samples was 3.73 ± 0.8 µg/kg, and the mean of Benzo[a]pyrene (BaP) was 0.29 ± 0.14 µg/kg that were lower than the USA-Environmental Protection Agency (USEPA) standard level (1 µg/kg, BaP in baby foods). In addition, our results showed that mixed five cereal-based baby food had a maximum mean of ΣPAHs (5.06 ± 0.68 µg/kg) and mixed wheat and date-based baby food had a minimum mean of ΣPAHs (3.03 ± 0.41 µg/kg). The carcinogenic risk due to PAH in the tested baby foods sold in Iran was adequately low, and all examined products were safe for consumers. Therefore, it can be said that the consumption of baby foods does not pose a threat to consumers.

This study was conducted to evaluate the concentration and health risk of trace elements in milk powder and baby food samples marketed in Iran using inductive couple plasma/optical emission spectroscopy (ICP-OES) method. The limit of detection (LOD) and limit of quantification (LOQ) were ranged from 1.80 × 10-5 to 2.17 × 10-3 and 6.00 × 10-5 to 7.22 × 10-3 mg/kg, respectively, with recoveries ranged from 92 to 105%. Zinc (Zn) was found in a high mean concentration (8.49 × 10-1 ± 3.93 × 10-2 mg/kg) in milk powder, and iron (Fe) was found in the highest mean concentration (2.04 ± 3.61 × 10-2 mg/kg) in baby food. The Monte Carlo simulation results for the infants revealed that the rank order of the hazard quotient (HQ) index was mercury (Hg) > nickel (Ni) > arsenic (As) > cadmium (Cd) > aluminum (Al). Further, the result of non-carcinogenic and probability of carcinogenic risk was lower than the limits of safe risk (HQ > 1 and cancer risk (CR) > 1 × 10-4). In conclusion, the toxic elements content in the tested products was sufficiently low, and all of the milk powder and baby food sold in Iran could be considered safe for infants and children.

Phthalic acid esters (PAEs) are compounds that are used in the bottle as the main plasticizers. Therefore, the possibility of releasing phthalate esters into beverages is very high and there is a concern to consumer health and monitoring organizations. The aim of this research was to assess the phthalic acid esters (di-n-octyl phthalate (DNOP), butyl benzyl phthalate (BBP), dimethyl phthalate (DMP), diethyl phthalate (DEP) and dibutyl phthalate (DBP), bis(di-ethylhexyl) phthalate (DEHP), and total PAEs) in bottled non-alcoholic malt beverages (n = 120) by multi-walled carbon nanotubes were magnetized with iron (MWCNT-Fe3O4) using gaschromatography/mass spectrometry (GC-MS). The results showed that the highest and the lowest levels of total phthalate esters in samples were 9483.93 and 2412.50 ng/L, respectively. The mean of DEHP which has also been found to be carcinogenic in all samples was lower than 5944.73 ng/L. The highest concentration of DEHP in four samples was upper than 8957.87 ng/L. Perceived limit of detection (LOD) ranged from 13 to 30 ng/L and the limit of quantification (LOQ) ranged from 39 to 90 ng/L. Multivariate techniques and heat map visualization were used to assess the correlation among the type and levels of PAEs with the brand, color, product date, pH, sugar, volume, and gas pressure. Therefore, based on heat map and principal component analysis (PCA) results, the DEHP and total PAEs were the closest accessions, indicating that these variables had similar trends. Based on the results, it can be stated that due to the low average of total phthalate esters in non-alcoholic malt beverages, there is no serious health hazard of these compounds for humans.

This study was conducted to determine the polycyclic aromatic hydrocarbons (PAHs) levels and health risk of yogurt and butter samples collected from Tehran using MSPE/GC-MS (magnetic solid-phase extraction/gas chromatography-mass spectrometry). The results revealed that the limit of detection (LOD) and limit of quantification (LOQ) were ranged from 0.040 to 0.060 and 0.121 to 0.181 µg/kg, respectively; with recoveries ranged from 86.1% to 100.3%. The highest mean of total PAHs was higher in butter (6.87 ± 1.21 µg/kg) than in yogurt (3.82 ± 0.54 µg/kg). The level of benzo (a)pyrene in all samples was lower than of standard levels of the European Union (EU). The highest value of all PAHs in samples was recorded in the winter season and also in the expiration date. The percentile 95% of the total hazard quotient (THQ) due to the consumption of yogurt and butter recorded 1.33E-02 and 3.69E-04 in adults and 6.12E-02 and 1.75E-03 in children, respectively. The percentile of 95% incremental lifetime of cancer risk (ILCR) due to the ingestion of yogurt and butter recorded 1.17E-06 and 2.02E-08 for adults and 5.51E-06 and 9.46E-08 for children, respectively. The rank order of 7 PAHs in adult and children based on P95% Hazard Quotient (HQ) in all samples was benzo(a)anthracene (BaA) > pyrene (P) > fluorene (F) > fluoranthene (Fl) > acenaphthylene (Ace) > anthracene (A) > naphthalene (NA). According to the Monte Carlo Simulation (MCS) method, health-risk assessment showed that children and adults are not at significant health risk.

The present study was devoted to investigate the PTE concentrations including cadmium (Cd), chromium (Cr), copper(Cu), iron (Fe), mercury (Hg), manganese (Mn), nickel (Ni), lead (Pb), arsenic(As), and zinc (Zn) among six types of edible wild, 23 cultivated mushroom samples collected from Iran's market by the aid of an inductively coupled plasma-optical emission spectrometry (ICP-OES). Also, the related health risk assessment was established by the aid of the Monte Carlo simulation method (MSC). The limit of detection (LOD) and limit of quantification (LOQ) were ranged 0.001-0.048 and 0.003-0.160 ppm, respectively. The concentrations of As, Cd, Cr, Cu, Fe, Hg, Mn, Ni, Pb, and Zn were determined in the ranges of 0.003-11. 5, 0.0008-5.89, 0.32-26.32, 9.15-110.08, 15.25-751.17, 0.16-2.24, 2.1-60.47, 1.21-24.22, 0.16-8.92, and 37.13-268.11 mg kg-1, respectively. According to findings, highest mean concentration of Cr in both types of mushrooms (cultivated and wild) was lower than recommended level by Codex Alimentarius/Food and Agriculture Organization/World Health Organization (CODEX/FAO/WHO) while the corresponding values for Hg (0.87 mg kg-1), As (1.39 mg kg-1), Ni (10.08 mg kg-1), Cu (36.65 mg kg-1), Cr (10.44 mg kg-1), Cd (0.589 mg kg-1), Fe (201.04 mg kg-1), Mn (10.30 mg kg-1), Zn (2266.43 mg kg-1), and Pb (3.81 mg kg-1) were higher than related standard levels. According to the health risk assessment, no concern regarding the non-carcinogenic risk due to the ingestion of PTEs via the consumption of the edible mushrooms, except Hg in wild mushrooms for children, was noted.

The aim of the current study was to evaluate the probabilistic health risk and the concentration of 16 polycyclic aromatic hydrocarbons (PAHs) in commercial tea and coffee samples. For determining the mentioned contaminants in sixty-four samples, a reliable and sensitive technique was validated and developed. The technique is established on magnetic solid-phase extraction and gas chromatography-mass spectrometry analysis (MSPE/GC-MS). The maximum mean of Æ©PAHs in coffee samples was 13.75 ± 2.90 µg kg-1, while the minimum mean Æ©PAHs in tea samples was 4.77 ± 1.01 µg kg-1. The mean concentration of benzo(a)pyrene (BaP) in samples ranged from 0.64 to 2.07 µg kg-1 which was lower than that of standard levels (10 µg kg-1) established by the European Union (EU). The Monte Carlo simulation results showed that the actual target hazard quotient (THQ) for the adult and children was equal to 1.63E-04 and 1.67E-04, respectively; hence, non-carcinogenic health risk for consumers is negligible. The result of actual incremental lifetime cancer risk (ILCR) was lower than the limits of safe risk (1E-4), indicating no notable possibility of cancer risk due to the digestion of tea and coffee for children and adults. Therefore, it can be concluded that the amount of contamination of popular commercial coffee and tea available in the Iranian market with PAHs is often similar to that found in other countries and was lower than the standard of EU. Thus, the processing conditions of these products must be controlled to prevent the formation of PAHs due to the suspicion of carcinogenicity and mutation.

In this study, the levels of Cd, Hg, Sn, Al, Pb and As of 72 samples (36 samples for fruits juices and 36 samples for fruits canned) of three different brands including of Peach, Orange, Cherry, and Pineapple (18 samples of each fruits) marketed in Tehran, Iran (2015) were evaluated using Inductively Coupled Plasma-Optical Emission Spectrometry (ICP-OES) technique. Also, Probabilistic risk assessment (non-carcinogenic and carcinogenic risks) was estimated by models include target hazard quotient (THQ) and cancer risk (CR) in the Monte Carlo Simulation (MCS) model. However, all samples were contaminated with the heavy metals investigated, most of them not surpassed established standards. The range of concentration for Al, Sn, As, Cd, Hg, and Pb as average in fruit juices were reported as 340.62 (65.17-1039.2), 72.33 (49.76-119.4), 3.76 (1.137-18.36), 2.12 (0.89-3.44), 0.351 and 40.86 (27.87-66.1) µg/kg, respectively. The level of heavy metals measured in different kinds of fruit juices was ranked as Al > Sn > Pb > As > Cd > Hg, and for fruits canned this rank was Pb > Al > Sn > As > Cd > Hg. The range of concentration for Al, Sn, As, Cd, Hg, and Pb in fruits canned were reported as 361.23 (43.15-1121.2), 101.42 (71.45-141.61), 3.92 (1.279-19.50), 2.78 (1.09-5.56), 0.35 and 690.54 (470.56-910.14) µg/kg, respectively. The lead (Pb) concentration in 97.22% (35 out of 36 samples) of fruit juices samples surpassed Codex limit (0.05 mg/kg) and in all samples of FC was lower than the legal limit of Codex limit (1 mg/kg). All of the samples had Tin (Sn) lower than the legal limit of Codex (fruit juices 100 mg/kg and FC 250 mg/kg). The MCS indicated that the rank order of heavy metals in both adults and children based on THQ was Al > Sn > As > Pb > Cd > Hg. The THQ of Al and Sn in the FJ and FC, for both adults, and children, was considerably higher than 1 value. Also, CR of As in both adults and children were higher than 1E-6 value. Although the mean concentration of heavy metal in the FJ and FC was lower than the standard limit, the MCS indicated that adults and children are at considerable non-carcinogenic and carcinogenic risks.

In the current study, a novel magnetic solid phase extraction (MSPE) technique combined with a gas chromatography/mass spectroscopy (GC/MS) was developed to determine the phthalate ester content of bottled Doogh samples. Doogh is a yogurt-based drinking beverage, which is frequently consumed in Middle East and Balkans. It is produced by stirring yogurt in Chern separation machine and consists of substances such as water, yogurt, and salt in addition to aqueous extracts of native herbs. The magnetic multi-walled carbon nanotubes (MWCNT-Fe3O4) were used as adsorbents of phthalate acid esters (PAEs) due to a superior adsorption capability of hydrophobic compounds. In this context, the quantity of the extractable migrated phthalate esters (dibutyl phthalate (DBP), dimethyl phthalate (DMP), butyl benzyl phthalate (BBP), diethyl phthalate (DEP), di-N-octyl phthalate (DNOP), and bis (2-ethylhexyl) phthalate (DEHP)) from polyethylene terephthalate (PET) bottles into Doogh samples was measured. The correlation between the concentration of migrated PAEs and some factors such as the type of Doogh (gaseous and without gas), difference in brand (five brands), volume (1500 and 300 mL), and the storage time also was investigated. The migration level into Doogh samples was increased by incorporating of gas as well as increasing the volume of PET bottles. Also, with elaborating of storage time, the migration of some phthalates such as DEHP (the mean from 2419.85 ng L-1 in the first week to 2716.15 ng L-1 in the second month), DEP, and total phthalate was increased. However, no significant difference in concentrations of migrated phthalate esters among different examined brands was noted. Finally, the concentration of migrated PAEs from bottle into all the examined Doogh samples was below the defined standards by EPA; 6 µg/L for DEHP in drinking water. Graphical abstract ᅟ.

A sensitive and reliable method for determination of polycyclic aromatic hydrocarbons (PAHs) in grilled meat samples was developed and validated. The method is based on magnetic solid phase extraction (MSPE) and GC-MS analysis. Magnetic carbon nanotubes (MCNTs) which have excellent adsorption capabilities, were used as adsorbent to extract PAHs, an important class of carcinogens, from meat samples. To obtain the best extraction yields, the influencing factors, including primary extraction conditions, the amount of adsorbent, adsorption and desorption time, salt addition and desorption solvent were investigated in detail. Under optimized conditions, the LODs and LOQs achieved were in the range of 0.035-0.100 and 0.075-0.200 µg Kg(-1) respectively. The calibration curves were linear (r(2) ≥ 0.988) over the concentration ranges from 0.100 µg Kg(-1) to 250 µg Kg(-1) The relative standard deviations (RSDs) obtained by carrying out intra- and inter-day precision studies were less than 13.7% and 13.9%, respectively which confirms reproducibility of the method. In addition, the recoveries of analyzed PAHs ranged from 81.3% to 96.7% with the RSDs less than 12.7 %. Finally, the established MSPE-GC-MS method was successfully applied to determine PAHs in charcoal grilled/barbecued meat samples. benzo[a]anthracene, benzo[b]fluoranthene, Benzo[a]pyrene and chrysene were detected in beef, lamb and chicken meat samples with the mean cumulative concentration of 4.000, 3.414 and 0.931 µg Kg(-1) respectively. Taken together, the MSPE-GC-MS method developed in current study provides a new option for the determination of PAHs in grilled/barbecued meat samples.
