RESUMO

The increasing need for effective analytical tools to evaluate beef quality has prompted the development of new procedures to improve the animal sector's performance. In this study, three beef breeds-Thai native (TN), crossbred Brahman × Thai native (BT), and crossbred Charolais × Brahman (CB)-were compared in terms of their physicochemical and metabolic profiles. The findings demonstrated that TN beef was lighter and tougher than other beef. Beef odor was stronger in BT. In addition, CB beef was the most tender and had the highest intramuscular fat content. Twenty-one different metabolites were found overall through NMR and chemometric approaches. The primary factors contributing to the difference in OPLS-DA loading plots were acetylcholine, valine, adenine, leucine, phosphocreatine, ß-hydroxypyruvate, ethanol, adenosine diphosphate, creatine, acetylcholine, and lactate. The multivariate analysis indicated that these metabolites in beef cattle breeds could be distinguished using NMR spectroscopy. The results of this study provide valuable information on the quality and meat metabolites of different breeds. This could help in the development of a more accurate assessment of the quality of beef in future research.

This experiment was aimed to study the effect of sugarcane bagasse (SB) fermented with Lactobacillus casei TH14, cellulase, and molasses on in vitro gas kinetics, nutrient digestibility, and ruminal fermentation patterns compared to rice straw (RS). A 2 × 2 × 2 (+1) factorial arrangement in a completely randomized design was used. Factor A was levels of L. casei TH14 at 0 and 0.05 g/kg fresh matter, factor B was levels of cellulase at 0 and 104 U/kg fresh matter, and factor C was levels of molasses at 0 and 5 g of substrate DM. The (+1) treatment referred to RS fermentation without additives. The results showed that kinetics of gas, gas production, and total volatile fatty acid were not different between RS and SB treatment. RS had significantly (p < 0.05) greater nutrient digestibility, ruminal pH, ammonia-nitrogen, and protozoa compared the control SB. Compared with control RS and SB, SB fermented with additives had greater (p < 0.05) gas from soluble fraction and rate constant of gas, in vitro dry matter and neutral detergent fiber digestibility, and ruminal propionate. In conclusion, SB fermented with L. casei TH14, cellulase, and molasses in combination promoted ruminal gas production, in vitro digestibility, and ruminal fermentation patterns.

To determine the effects of Follicle Stimulating Hormone (FSH) treatment and subsequent withdrawal on uterine proliferation and estrogen receptor (ESR), Brahman crossbred heifers (n = 12) were twice daily injected with FSH (4, 3, and 2 mg/injection) on Days 17-19 of the estrous cycle (FSH 3 days) and (4 and 3 mg/injection) on Days 17-18 (FSH 2 days) and withdrawal with saline on Day 19 and (4 mg/injection) on Day 17 (FSH 1 day) and withdrawal with saline on Days 18-19. Uterine tissue was subjectively collected on Day 20 and microscopically classified to four regions: endometrial stroma (ES), surface endometrial gland (EG), deep endometrial gland (DG), and myometrium (Myo). The cell proliferation marker, Ki-67, was quantified as labeling index (LI) in uterine regions, and tissues were immunostained to detect ESR2 followed by image analysis. The LI of ES, EG, and DG was greater (P = 0.0018, P = 0.0005, and P = 0.0103; respectively) in heifers received FSH for 3 days. The expression of ESR2 protein on ES and EG was greatest (P < 0.0001 and P = 0.0036, respectively) in FSH 3 days-treated group. Thus, FSH administration during proestrus stimulates uterine cell proliferation, and ESR2 expressions are affected by FSH during proestrus and differentially distributed in the uterine regions.

The aim of this experiment was to test the effect of yeast-fermented de-hulled rice (YDR) levels of protein-rich feed with different kinds of roughages on in vitro gas production, nutrient degradability, and rumen fermentation. The treatments were randomly assigned according to a 2 × 4 factorial arrangement in a completely randomized design (CRD). The two experimental factors were comprised of two roughages (R) (untreated rice straw (RS) and sweet grass hay (SGH)) and four ratios of roughage to yeast-fermented de-hulled rice (R:YDR) (100:0, 75:25, 50:50, and 25:75). Thus, there were 8 treatment combinations. The results revealed that the interaction between R and R:YDR ratios influenced on the gas production rate constant for the insoluble fraction ratio (c) (P < 0.01). The in vitro dry mater degradability (IVDMD) was improved by SGH and R:YDR ratios (P < 0.05). Supplementation of YDR with both of roughage sources (RS and SGH) increased propionate (C3) (P < 0.05) and total VFA production (P < 0.01); both factors showed interactive effects on rumen methane production (P < 0.01). Moreover, bacterial population was significantly increased by the SGH:YDR ratios (P < 0.05). Therefore, it could be summarized that supplementing YDR, an enriched protein source with SGH:YDR ratio at 50-75:50-25 ratio significantly enhanced nutrient degradability and in vitro rumen fermentation efficiency.

The objective of this study was to compare the effects of Crabtree-negative ruminal yeast and Crabtree-positive yeast in ensiled rice straw (RS) on the ensilage quality, nutritive value, and microorganism composition, including the evaluation of the ensiled RS using the in vitro gas production technique. The experiment was conducted in a 4 × 3 factorial arrangement in a randomized complete design. Factor A was yeast species with no inoculant, Crabtree-negative yeasts (Pichia kudriavzevii KKU20 and Candida tropicalis KKU20), and Crabtree-positive yeast (Saccharomyces cerevisae), whereas factor B was ensilage times (7, 14, and 21 days). The rate of growth was revealed to be lower in Crabtree-positive yeasts than the other Crabtree-negative yeast strains (p < 0.01). RS ensiled with S. cerevisiae showed decreased dry matter (DM) content by 9.0% when compared to the sample without a yeast inoculant. In addition, organic matter (OM) content was greater (p < 0.01) for P. kudriavzevii KKU20 than C. tropicalis KKU20 and without an inoculant. Neutral detergent fiber (NDF) content was significantly decreased (p < 0.01) by yeast inoculants by about 2.75% when compared to the control group. Lactic acid bacteria (LAB) and aerobic bacteria were low (p < 0.05) when yeasts were added. However, no interaction was found between yeast and ensilage times on the quality of ensiled RS (p > 0.05). The P. kudriavzevii KKU20 addition was associated with the highest value (p < 0.01) of gas produced-an insoluble fraction (b), potential extent of gas production (a + b), and cumulative gas production at 96 h-when compared with S. cerevisiae or the control group. The highest in vitro dry matter digestibility and in vitro neutral detergent fiber digestibility was observed in RS ensiled with P. kudriavzevii KKU20 for 14 days (p < 0.01, p < 0.05). The maximum total volatile fatty acids (VFAs) at 4 and 8 h of incubation and the mean value were observed in RS ensiled with P. kudriavzevii KKU20 (p < 0.01). RS ensiled with all yeast strains showed an increased propionate concentration at 8 h (p < 0.01). In conclusion, ensiling RS with isolated Crabtree-negative ruminal yeasts could benefit feed digestion and in vitro gas production more than Crabtree-positive yeast does. P. kudriavzevii KKU20, an isolated Crabtree-negative ruminal yeast used to treat RS, had the highest potential for increasing cumulative gas production and enhancing in vitro digestibility.

Black rice is rich in phenolic acids and anthocyanin; however, limited studies have determined its effect on ground beef quality. The objective was to determine the effects of 0, 0.4, 0.8, and 1.2% black rice water extract (BRWE) on ground beef patties quality when packaged in polyvinyl chloride (PVC). pH, surface color, lipid oxidation, total plate count, and antioxidant capacity were determined on 0, 3, and 6 days of storage under fluorescent light at 2 °C. Addition of BRWE had no effect (P = .98) on pH. Incorporating BRWE in ground beef improved (P < .0001) redness compared with control. The addition of BRWE decreased (P < .0001) lipid oxidation compared with control during storage; while antioxidant capacity increased with the addition of extract. BRWE at 1.2% reduced (P = .007) aerobic microbial counts after 6 days of storage. These results suggested that BRWE could be used as a natural antioxidant in ground beef to limit lipid oxidation and discoloration.

The objective was to investigate the effect of short-term (7 days) and long-term (14 days) progesterone-based estrus synchronization on number of follicles, progesterone concentrations, cumulus-oocyte complex (COC) gene expression, and embryonic development in goats. Nulliparous Thai-native goats (n = 45) were randomly assigned to one of two estrus synchronization treatments. Goats were treated with intravaginal sponges containing 60-mg medroxyprogesterone acetate (MAP; Synchrogest esponjas, Spain) during 7 or 14 days (short-term or long-term protocol, respectively). Multiple follicular development was induced by intramuscularly injections of 300-IU eCG in both groups (1 day before sponge withdrawal). An ovariectomy was performed at 24 hours after sponge removal to evaluate number of follicle and collect oocyte for IVF. Oocyte quality (healthy or nonhealthy) was determined by morphology of COCs before IVM. Recovery of COCs and total cellular RNA isolation were applied to determine apoptosis-related gene expression. After IVF, embryos were evaluated during the eight-day culture as numbers of cleaved oocyte, morula, and blastocyst embryo. Total numbers of follicles and oocytes were similar for both treatments. Plasma progesterone concentrations were not different during MAP insertion period (P > 0.05). However, goats that received the short-term protocol had a greater number of 4 to 6-mm follicle, healthy oocytes, cleaved oocytes, and morula embryos than goats that received the long-term protocol (P < 0.01). In addition, the expression of B-cell lymphoma 2 messenger RNA was greater (P < 0.05) in COCs derived from the 7 days MAP-treated when compared to the 14 days MAP-treated goats. These data highlight that the 7-day progestin-based treatment may contribute to quality of oocytes and embryonic development in goats.

This experiment was conducted to determine the effects of cassava bioethanol by-product (CEP) and crude palm oil (CPO) on the carcass characteristics and meat quality of yearling heifer cattle. Eighteen crossbred Brahman × Thai heifers were randomly allotted to 2 × 3 factorial arrangement consisting of two levels of CEP (15 or 30 %, LCEP or HCEP) and 3 levels of CPO (0, 2, and 4 %). The results obtained showed that lean meat was greater (P < 0.05) in HCEP-fed cattle, but bone percentage and lean/bone ratio were less (P < 0.05) than LCEP-fed cattle. Carcass fat (P < 0.05) and fat content (P < 0.01) were significantly increased with levels of dietary CPO. Diets with 4 % CPO supplementation had better effects on redness (a*, P < 0.01) and chroma (C*, P < 0.001) values. In conclusion, up to 30 % CEP can be used to improve lean carcass and 4 % CPO can improve the redness of the meat.

The study was conducted to compare estrous rate, ovulatory response, plasma progesterone concentrations, and conception rate following cervical artificial insemination in goats given a new or once-used controlled internal drug release (CIDR) device with human chorionic gonadotropin (hCG). Fifty-six Thai-native goats with the average age and body weight of 11 months and 17.3 kg received a 14-day treatment with a new CIDR device (Eazi-Breed(TM)CIDR®, Pfizer, NY, USA) or a once-used CIDR device. All goats received a 300-IU injection of hCG (Chorulon®, Intervet International B.V., New Zealand) at the day of CIDR removal to induce ovulation. All goats displaying signs of Estrous behavior were artificially inseminated at 12 h after the onset of estrus with frozen semen. No differences in percentage of estrus and ovulation rates were observed; however, goats that received once-used CIDR devices exhibited shorter (P < 0.05) duration of estrus in comparison with new devices (21.4 ± 1.4 h vs. 26.1 ± 1.1 h) and delayed the onset of estrus (47.0 ± 3.6 h vs. 36.5 ± 1.9 h) and the time of ovulation (74.9 ± 3.9 h vs. 64.5 ± 1.3 h), respectively. Progesterone (P4) concentrations were not significantly different (P > 0.05) between treatments during CIDR device insertion and at the time of CIDR removal except on day 4. No significant differences were found in overall conception rates between the treatments. This study indicates that the once-used CIDR device with hCG could be applied to synchronize the estrus and ovulation in small-size Thai-native goats without negative effects on Estrous behavior, ovulatory response, and plasma P4 concentration.

The effects of cassava bioethanol by-product (CEP) and crude palm oil (CPO) on feed intake, nutrient digestibility, and growth performance of yearling heifers were investigated in a 150-day feeding trial. Eighteen, crossbred heifers (Brahman x Thai native) were randomly allotted according to 2 × 3 factorial arrangement. Low or high levels of CEP (15 or 30% of concentrate, LCEP, or HCEP) were basal treatments and 0, 2, and 4% CPO were daily top-dressed. Concentrate was supplemented at 1.75% of body weight (BW) and rice straw offered ad libitum. CEP level had no significance on feed intake. CPO increased roughage intake, concentrate intake, and total feed intake when expressed as %BW/d (P < 0.01) and as metabolic BW (kg(0.75)/d, P < 0.05). Intakes of dry matter (DM), organic matter (OM), and crude protein (CP) were similar (P > 0.05). Intake of fat increased with higher levels of CPO (P < 0.001). The DM, OM, CP, and EE digestibility of cattle-fed HCEP was lower than LCEP, but adding 4% CPO increased digestibility. Growth performance was similar for all diets (P > 0.05). We concluded that CEP can be used up to 30% in the diet, with or without additional fat inclusion.
