A total of 138 samples including urban soil, surface dust, atmospheric dustfall, and commercial food were collected from the semi-arid industrial city of Lanzhou in Northwest China, and 22 phthalate esters (PAEs) were analyzed in these samples by gas chromatography-mass spectrometry for the pollution characteristics, potential sources, and combined exposure risks of PAEs. The results showed that the total concentration of 22 PAEs (Æ©22PAEs) presented surface dust (4.94 × 104 ng/g) â‰« dustfall (1.56 × 104 ng/g) â‰« food (2.14 × 103 ng/g) â‰« urban soil (533 ng/g). Di-n-butyl phthalate (DNBP), di-isobutyl phthalate, di(2-ethylhexyl) phthalate (DEHP), and di-isononyl phthalate/di-isodecyl phthalate were predominant in the environmental media and commercial food, being controlled by priority (52.1%-65.5%) and non-priority (62.1%) PAEs, respectively. Elevated Æ©22PAEs in the urban soil and surface dust was found in the west, middle, and east of Lanzhou. Principal component analysis indicated that PAEs the urban soil and surface dust were related with the emissions of products containing PAEs, atmosphere depositions, and traffic and industrial emissions. PAEs in the foods were associated with the growth and processing environment. The health risk assessment of United States Environmental Protection Agency based on the Chinese population exposure parameters indicated that the total exposure dose of 22 PAEs was from 0.111 to 0.226 mg/kg/day, which were above the reference dose (0.02 mg/kg/day) and tolerable daily intake (TDI, 0.05 mg/kg/day) for DEHP (0.0333-0.0631 mg/kg/day), and TDI (0.01 mg/kg/day) for DNBP (0.0213-0.0405 mg/kg/day), implying that the exposure of PAEs via multi-media should not be ignored; the total non-carcinogenic risk of six priority PAEs was below 1 for the three environmental media (1.21 × 10-5-2.90 × 10-3), while close to 1 for food (4.74 × 10-1-8.76 × 10-1), suggesting a potential non-carcinogenic risk of human exposure to PAEs in food; the total carcinogenic risk of BBP and DEHP was below 1 × 10-6 for the three environmental media (9.13 × 10-10-5.72 × 10-7), while above 1 × 10-4 for DEHP in food (1.02 × 10-4), suggesting a significantly carcinogenic risk of human exposure to DEHP in food. The current research results can provide certain supports for pollution and risk prevention of PAEs.

Halogenated aromatic pollutants (HAPs) including polychlorinated dibenzo-p-dioxins/furans (PCDD/Fs), polychlorinated biphenyls (PCBs), polybrominated dibenzo-p-dioxins/furans (PBDD/Fs), and polybrominated diphenyl ethers (PBDEs) exhibit diverse toxicities and bio-accumulation in animals, thereby imposing risks on human via animal-derived food (ADF) consumption. Here we examined these HAPs in routine ADFs from South China and observed that PBDEs and PCBs showed statistically higher concentrations than PCDD/Fs and PBDD/Fs. PCDD/Fs and PCBs in these ADFs were mainly from the polluted feed and habitat of animals, except PCDD/Fs in egg, which additionally underwent selective biotransformation/progeny transfer after the maternal intake of PCDD/F-polluted stuff. PBDEs and PBDD/Fs were mostly derived from the extensive use of deca-BDE and their polluted environments. Significant interspecific differences were mainly observed for DL-PCBs and partly for PBDD/Fs and PBDEs, which might be caused by their distinct transferability/biodegradability in animals and the different living habit and habitat of animals. The dietary intake doses (DIDs) of these HAPs via ADF consumption were all highest for toddlers, then teenagers and adults. Milk, egg, and fish contributed most to the DIDs and risks for toddlers and teenagers, which results of several cities exceeded the recommended thresholds and illustrated noteworthy risks. Pork, fish, and egg were the top three risk contributors for adults, which carcinogenic and non-carcinogenic risks were both acceptable. Notably, PBDD/Fs showed the lowest concentrations but highest contributions to the total risks of these HAPs, thereby meriting continuous attention.

RESUMO

Aflatoxins (AFs) are secondary metabolites that represent serious threats to human and animal health. They are mainly produced by strains of the saprophytic fungus Aspergillus flavus, which are abundantly distributed across agricultural commodities. AF contamination is receiving increasing attention by researchers, food producers, and policy makers in China, and several interesting review papers have been published, that mainly focused on occurrences of AFs in agricultural commodities in China. The goal of this review is to provide a wider scale and up-to-date overview of AF occurrences in different agricultural products and of the distribution of A. flavus across different food and feed categories and in Chinese traditional herbal medicines in China, for the period 2000-2020. We also highlight the health impacts of chronic dietary AF exposure, the recent advances in biological AF mitigation strategies in China, and recent Chinese AF standards.

Dietary intake of polychlorinated dioxins and furans (PCDD/Fs) and dioxin-like polychlorinated biphenyls (dl-PCBs) from various foods (fish and seafood, meat and meat-based products, milk and dairy products, hen eggs, olive oil and fats) was investigated for various sex/age groups of the Italian population. The concentrations of PCDD/Fs and dl-PCBs and their contribution to total TEQ values varied depending on food matrix. Fish (0.50 pg WHO-TEQ/g wet weight) and seafood (0.16 pg WHO-TEQ/g wet weight) showed the highest mean concentrations of PCDD/Fs plus dl-PCBs, followed by meat (1.70 pg WHO-TEQ/g lipid weight), meat based products (1.03 pg WHO-TEQ/g lipid weight), milk and dairy products (0.78 pg WHO-TEQ/g lipid weight), hen eggs (0.71 pg WHO-TEQ/g lipid weight), fats (0.27 pg WHO-TEQ/g lipid weight) and olive oil (0.09 pg WHO-TEQ/g lipid weight). In all samples WHO-TEQ PCDD/F plus dl-PCB concentrations fulfilled the European Union food law, except in pork loin samples (1.39 pg WHO-TEQ/g lipid weight). Differences in exposure depending on the sex/age groups (children > teenagers > adults > elders) and hypotheses considered (lower bound and upper bound) were encountered. Non-cancer risk values showed a low exposure. Carcinogenicity risk results revealed that highly exposed individuals were distributed over all sex/age groups, even though the proportion of individuals exceeding the safe limit was higher in children. These data once again underline the importance of trying to control the levels of these contaminants in fishery products, particularly in fish, who represents one of the main exposure sources for consumers. PRACTICAL APPLICATION: This paper may help the consumer in making food choices to minimize the exposure risk to dioxins, furans and PCBs.

Formative research was conducted in a rural hill setting in Nepal during April-June 2012 to inform the design of an intervention to promote safe food hygiene practices. A variety of methods underpinned by Behavior Centered Design theory and Hazard Analysis Critical Control Points was used to pinpoint key risk behaviors and their environmental and psychological determinants in 68 households with a mother having a child aged 6-59 months. These included video recordings, observation of daily routine, teach-the-researcher sessions, in-depth interviews, observations of actual behaviors, focus group discussions, motive mapping, microbiological assessment, and identification of critical control points. Physical settings, especially the kitchen, form a challenging environment for mothers, including family members in rural hill settings of Nepal to practice adequate food hygiene behaviors. Prevalent food hygiene practices of mothers were inadequate, leading to frequent exposure of young children to highly contaminated food, water, and milk. We identified six critical control points; of these, five needed improving. Determinants of these behaviors included physical and social environment as well as psychological brief and individual motives. Five key food hygiene risk behaviors are suggested for prioritization. While designing a food hygiene intervention package, consideration should be given to the physical, biological, and social environment, and immediate motives behind each practice should be taken into consideration while framing key messages. Creative and engaging activities should be designed around the motives of nurture, disgust, affiliation, and social status/respect.

As a cheap source of high-quality protein, healthy fats and essential nutrients, dried fish is a common item in the daily diet of the Bangladesh populace. In this study, ten types of widely consumed dried fish (H. neherius, T. lepturu, P.chinensis, P. affinis, A. mola, P. microdon, I. megaloptera, C. dussumieri, L. calcarifer, and G. chapra) were analyzed for Cr, Mn, Fe, Co, Cu, Zn, Se, Rb, Hg, Pb, Ni and As by using an Energy Dispersive X-ray Fluorescence (EDXRF) technique. The concentration of the studied metals was found in the order Fe > Zn > Hg > Cu > Se > Cr > Mn > Co > Rb > Pb, while As and Ni were below the limit of detection. All fish species showed moderate to high pollution, where the species H. Neherius and P. Chinensis are the most and least polluted ones, respectively. The probable source of contamination is the leaching from the drying pans into the fish samples, atmospheric deposition, anthropogenic contamination, etc. of the water body where these fish were harvested. The calculated hazard index for the general population was below the maximum limiting value (i.e., < 1) except for Hg to children. The carcinogenic risk showed values lower than the acceptable limit for cancer risks (10-6 to 10-4). Periodic monitoring of trace metals in the aquatic organisms along with fish is recommended to avoid any unexpected health hazards caused by the toxic heavy metals via fish consumption.

The interference of nontarget adulterant on FT-IR-based target adulterant quantitative analysis was explored and a sequential strategy was proposed to improve the prediction accuracy of the quantitative analysis model. Based on the FT-IR data of fish oil adulterated with terrestrial animal lipid, PLS and PLS-DA results show that quantitative analysis modeled by multiple and single adulteration data do not apply to each other; quantitative models based on the fusion of single and multiple adulteration data were established and showed a low quantitative analysis precision (higher RSD); and the sensitivity and specificity of discrimination analysis for multiply and singly adulterated fish oils both all exceed 0.910. To enhance the detection accuracy, a sequential strategy was proposed; identifying singly or multiply adulterated fish oil and then quantifying the content of adulterant was considered an efficient approach.

Phthalates (PAEs), bisphenol A (BPA), and oestrogenic compounds have become major concerns due to their endocrine-disrupting effect. However, few studies related to the occurrence of PAEs, BPA, and oestrogen in food and compost from different growth age livestock have been conducted. In this study, faeces, urine and food samples were collected from a typical livestock (cow) and a special livestock (pigeon) from concentrated animal feeding operations (CAFOs). The daily total oestrogen excretion of a single cow ranged from 192 µg/day to 671 µg/day, which was significantly higher than that of a single pigeon (0-0.01 µg/day). Conjugated oestrogens represented 22.0-46.0% of the total oestrogens excreted from cow faeces and 80.7-91.8% of those from cow urine, indicating that the form of the excreted oestrogens depends on the livestock species and type of excrement. BPA was all detected in all livestock manure and food, and the concentration in pigeon was 9.2-40.2 ng/g and 23.1 ng/g respectively, while that in cattle was 50.5-72.0 ng/g and 41.1 ng/g respectively. The results indicated that the food is significant sources of BPA entering the process of cow and pigeon breeding. Diethyl phthalate (DEP) was detected at high frequency in pigeon faeces samples, suggesting that pigeons were highly exposed to these plasticisers. The total oestradiol equivalent quantity (EEQt) of livestock origin in aquatic environments was estimated to be 2.99 ng/L, which was higher than the baseline hazard value (1 ng/L) (Xu et al., 2018). The study provides data on the emissions and sources of PAEs, BPA, and oestrogenic compounds from different livestock in CAFOs and demonstrates that food is a significant source of BPA entering livestock.

Ochratoxins (OTs) are a group of mycotoxins produced by Aspergillus and Penicillium spp. which are ubiquitous. They infect the crops during pre- and post-harvest conditions and contaminate various food and feed. Among all the OTs produced, ochratoxin A (OTA) poses serious health issues like neurotoxicity and carcinogenesis. The harmful impact of the toxins is observed in both humans and animals. The toxins get accumulated in the organs of animals through the contaminated animal-feed which further contaminate the products derived from them, such as milk and meat-based products. Therefore, sensitive and robust identification, detection, and quantification methods along with efficient management and control measures are crucial. Spectrometric and spectroscopy techniques are quite sensitive and lead to better detection of the toxin in the food products. Control and preventive measures during harvesting, storage and transportation are found to be effective in managing the production of such toxins. This review insight on the occurrence, chemistry, biosynthesis, effects on human health and agriculture, detections, management, and control strategies of ochratoxins.

Sudan I is a synthetic-azo dye commonly used to adulterate foods to increase sensory appearance. However, it is banned due to its carcinogenic, mutagenic and genotoxic properties, which represent a serious risk to human health. Thus, this paper proposes a feasibility study to identify and quantify Sudan I dye in ketchup samples using colour histograms (obtained from digital images) and multivariate analysis. The successive projections algorithm coupled with linear discriminant analysis (SPA-LDA) classified correctly all samples, while the partial least squares coupled with SPA for interval selection (iSPA-PLS) quantified adequately the adulterant, attaining values of RMSEP of 11.64 mg kg-1, R2 of 0.96, RPD of 5.28, REP of 13.63% and LOD of 39.45 mg kg-1. Therefore, the proposed methodology provides a simple, fast, inexpensive, promising analytical tool for the screening of both the quality and safety of ketchup samples. As a consequence, it can help to protect the consumer's health.

The popularity of organic foods grows systematically. In the last decade, several critical reviews and meta-analysis concerning organic food consumption and their effect on some chosen health problems have been published. The aim of the work was to present the current state of knowledge regarding the influence of organic food consumption on human health. On average, organic food of plant origin is characterized by a trace presence of pesticides, a lower content of nitrates and an increased content of polyphenols and vitamin C. Organic products of animal origin contain more beneficial for health unsaturated fatty acid. Organic dairy products, in contrast to meat products, are characterized by a higher content of protein and saturated fatty acids, however, the differences more result from the length of the grazing period and access to fresh forage than to the production system. Although generally, the consumption of organic food does not provide a significant nutritional advantage compared to a conventional diet, regular and frequent consumption of organic products generally reduces the risk of overweight and obesity, both for women and men, as well as non-Hodgkin lymphoma in case of women. Besides those, consumption of organic fruits and vegetables, as well as dairy products significantly reduces the risk of pre-eclampsia in pregnancy and eczema in infants, respectively. Positive effect on selected health problems probably results from a reduced amount of pesticide residues and an increased secondary plant metabolites intake which characterize organic food. This review showed that there is a need for further, especially, large cohort studies concerning the effect of organic food consumption on specific diseases development.

Aflatoxin B1 (AFB1) contamination in foods is an important health challenge for low-and middle-income countries in subtropical regions. AFB1 has been detected in a variety of foodsin Guangzhou, while the risk of dietary exposure is unknown. This study aimed to assess the probabilistic risk of dietary exposure to AFB1 contamination in food stuffs in Guangzhou by using margin of exposure (MOE) and quantitative liver cancer risk approaches. A total of1854 AFB1-contaminated foodstuffs were sampled in supermarkets, agricultural markets, retail shops, and family workshops from 11 districts of Guangzhou, and AFB1 content was determined by HPLC-fluorescence detector. In total, 9.9% (184/1854) of the test samples had AFB1 concentrations above the limit of detection. Home-made peanut oil had the highest AFB1 concentration, with a mean value of 38.74 ± 47.45 µg kg-1. The average MOE levels of Guangzhou residents ranged from 100 to 1000. The risk of liver cancer was 0.0264 cancers (100,000 population year)-1. The health risks of suburban people were higher than those of urban people, and home-made peanut oil was the main contributorto dietary exposure to AFB1 among suburban residents in Guangzhou. The production of home-made peanut oil should be supervised to reduce the risk of AFB1 exposure.

In the province of Newfoundland and Labrador, fishing is a core occupation and also a source of marine plastic pollution. To look at this relationship, we examined 216 gastrointestinal tracts of Atlantic cod (Gadus morhua) caught by commercial fishers at Fogo Island, Newfoundland and Labrador, Canada. We found three tracts contained plastic for a frequency of occurrence of 1.4%. While this result is consistent with other cod sampled in the province, this study found two gastrointestinal tracts contained intact bait bags, used in commercial pots, and the third tract contained a polypropylene thread, likely originating from fishing rope. Our findings demonstrate the frequency of plastic ingestion in this region is low, but fishing-gear related plastics represent a key source of marine plastics in the region that should be addressed.

This study investigated the health risks associated with aflatoxins (AFs) in processed meat products (PMP) sold in Riyadh, Kingdom of Saudi Arabia. The occurrence and levels of AFs were assessed using high-performance liquid chromatography with fluorescence detection (HPLC-FD), whereas the cancer risk attributed to the consumption of meat products containing AFs was estimated by means of margin of exposure (MOE) on a scale of 100-600, representing high and low exposure, respectively. The results indicated that 37.5% of the samples were contaminated, with concentrations ranging from 0.30 to 52.93 µg/kg, at an average of 6.4 ± 12.58 µg/kg. The percentage contamination levels with total AFs higher than the permissible Saudi limit of 20 µg/kg were 4% of samples analysed and 10% of contaminated samples. AFB1 and AFG1 were the most prevalent toxins, followed by AFB2; AFG2 was not detected in any sample. The MOE was found to be 175 and 311 for total AFs in processed beef meat and poultry meat products, respectively. These results showed that the daily intake of AF-contaminated PMP may constitute a public health concern. Soybeans, as legumes, belong among food items that contribute most to the dietary intake of the heavy metal cadmium (Cd). The consumption of soy-based foods may contribute significantly to Cd intake in vegetarians as probably the most frequent consumers of these foods. In this research, the weekly dietary intake of Cd from soy-based foods was investigated in 119 participants (including vegetarians, vegans, and non-vegetarians) in the Czech Republic by means of a semi-quantitative food frequency questionnaire (SFFQ) with personal assistance and the measurement of body weight. Cd content in soy-based foods available on the market was determined by means of atomic absorption spectrometry after microwave digestion. Tofu, as the most frequently consumed food item in the vegetarian/vegan group, contributed most to the total dietary Cd intake. It contained 7.6 ± 0.1 µg Cd/kg, while the highest Cd content was observed in tempeh (18.1 ± 0.4 µg/kg). The highest mean dietary Cd intake per week from soy-based foods was 0.4 µg/kg b.w. and was found in the vegan group. The consumption of soy-based foods was the lowest in the non-vegetarian group as was the dietary intake of Cd, which was 0.04 µg/kg b.w. per week.

The Deepwater Horizon oil spill (April 20, 2010) caused concern regarding Gulf seafood safety. Communities were skeptical of governmental risk assessments because they did not take into account the higher consumption of seafood along coastal areas. The objective of this study was to perform a probabilistic risk assessment based on the consumption rates of high-end consumers of Gulf seafood. We utilized seafood consumption data from five communities across the northeastern Gulf of Mexico. This study collected finfish, shrimp, blue crab, and oysters from these communities and analyzed their tissues for polynuclear aromatic hydrocarbons (PAHs). A probabilistic risk assessment was performed using population-specific seafood consumption rates and body weights for commercial fishers, recreational fishers, and a Filipino-American community. For non-cancer effects, 95th percentile hazard quotients for these targeted populations ranged between 1.84E-04 to 5.39E-03 for individual seafood types. The 95th percentile hazard indices for total seafood consumption ranged from 3.45E-03 to 8.41E-03. Based on total seafood consumption, highest hazard indices were modeled for the Filipino-American community followed by commercial and recreational fishers. Despite higher consumption rates, hazard indices for the high-end consumers targeted in this study were two to three orders of magnitude below the regulatory limit of 1.

Bivalves are one of the key components of the biogeochemical cycle in the marine system, and respond to heavy metal (HM) sensitively as filter feeders. To determine relationship of HMs in edible bivalve and seawater and HM effects on human health when digesting bivalves, HMs were analyzed in bivalves and seawater. The results showed that the mean HM concentrations in bivalves decreased in the order of Zn > Cu > Cr > Pb > As > Cd > Hg. Generally, all the bioconcentration factor values of bivalves were higher than 100, suggesting that bivalves have a high bioaccumulation ability. Nonmetric multidimensional scaling analysis indicated that all bivalves have a high bioaccumulation capacity for Cu and Zn. It was found that there are health risks associated with consuming bivalves, and children are more vulnerable than adults. Finally, the maximum allowable consumption rates of non-carcinogenic and carcinogenic risk were determined. These results provide the underlying insights needed to guide the consumption of seafood.

The abuse of pesticides in home gardens may lead to contamination of home-grown eggs. This study aimed to determine the prevalence of hexachlorocyclohexane (HCH), aldrin, and malathion pesticides residues in egg white and egg yolk of home-grown eggs in Jordan; and the effect of refrigerated storage and heat treatment (boiling and frying) on residues level. High-performance liquid chromatography was used to detect pesticide residues in egg samples (n = 200) obtained from households that raise laying hens in Jordan. About 96% of the tested eggs showed pesticide residues. None of the tested egg samples showed residual level above maximum residue limit (MRL 0.02 mg/kg) for HCH, whereas 33% and 44% of samples were above MRL for aldrin and malathion, respectively. All studied pesticide residues were detected from both egg yolk and egg white. The concentrations of malathion and aldrin (0.075 and 0.067 mg/kg) in egg yolk were higher than those (0.049 and 0.058 mg/kg) in egg white samples. Pesticide residue levels were quite stable during refrigeration storage whereas heat treatment (boiling at 100 °C and frying at 160 °C) significantly reduced contamination levels to values below MRL. The high level of pesticide residues in home-grown egg in Jordan may reflect the improper use of pesticides in home gardens and thus exposing the environment to unwanted pollution and the risk they may pose on human health. PRACTICAL APPLICATION: Home-grown eggs could be exposed to pesticides more than commercial eggs as free-range hens interact directly with the environment and ingest soil or materials on/in the soil that might be contaminated with pesticides used in home gardens or farms. Exploring pesticides residues in home-grown eggs and effect of refrigerated storage and heat treatment (boiling and frying) on residue levels would be useful to consumers and health authorities.

BACKGROUND: Metal transfer along the food chain has raised concerns about impacts on human health due to dietary exposure to low but chronic concentrations. Soil-forage-milk-consumer is a short food chain through which metals are able to reach an organism. METHODS: Pb, Cu, Cd, and Zn were determined in water, soil, forage, and milk samples collected from free-range cattle farms situated near Baia Mare, Romania. The soil-to-forage (TFsf) and forage-to-milk (TFfm) transfer factors for metals and the health risk for three population groups (females, males, and children) through the consumption of milk containing low levels of metals were assessed. RESULTS: TFsf indicated that the uptake capabilities of the metals from soil to forage were in the following order: Zn > Cd > Cu > Pb. TFfm indicated a lack of metal accumulation through forage ingestion. Estimated daily (EDI) and provisional tolerable weekly (PTWI) intake values revealed a minimal exposure of the population to those metals through milk consumption. A noncarcinogenic hazard index indicated that milk consumption from local markets does not pose any risk for human health; however, the average cancer risk showed a high potential carcinogenic risk. CONCLUSIONS: The consumption of milk produced by small local farmers does not pose noncarcinogenic risks. More extended studies should be carried out in order to identify the potential carcinogenic risk caused by the low levels of metals in the milk consumed.

Aflatoxins are toxic fungal metabolites produced by Aspergillus sp. with carcinogenic properties that are a common food contaminant of many crops including maize and peanuts. In Timor-Leste malnutrition and children's stunting are frequent and maize and peanuts are staple foods. This study aimed to provide information on aflatoxin exposure nationally. The study measured levels of aflatoxin in locally-produced maize and peanuts (296 samples) and of aflatoxin-albumin conjugate in blood samples of women and young children (514 and 620 respectively) across all municipalities. The average concentration of aflatoxin in the grain samples was low with most maize (88%) and peanut (92%) samples - lower than European Commission tolerated aflatoxin level. Although aflatoxin-albumin conjugate was detected in more than 80% of blood samples, the average concentration in children and adults of 0.64 and 0.98 pg mg-1 alb, respectively, is much lower than in other similar rural-based countries. Although low in concentration, blood aflatoxin levels and aflatoxin contamination levels in maize across municipalities were correlated significantly for mothers (R2 = 37%, n = 495) but not for children (R2 = 10%). It is unlikely that the consumption of aflatoxin contaminated grain is a causative factor in the current level of malnutrition and stunting affecting Timor-Leste children.
