RESUMO

Herbal infusions exhibit diverse pharmacological effects, such as antioxidant, anti-inflammatory, anticancer, antihypertensive, and antineurodegenerative activities, which can be attributed to the high content of phenolic compounds (e.g., caffeoylquinic acids (CQAs)). In this study, we used ultraperformance liquid chromatography to determine the content of CQAs in the methanolic extracts of model herbs, namely, yerba mate (Ilex paraguariensis), stevia (Stevia rebaudiana), and Indian camphorweed (Pluchea indica (L.) Less.). The results revealed that yerba mate had the highest total CQA content (108.05 ± 1.12 mg/g of dry weight). Furthermore, we evaluated the effect of brewing conditions and storage at 4 °C under dark and light conditions on the antioxidant property and total phenolic and CQA contents of a yerba mate infusion. The analysis of the yerba mate infusions prepared with different steeping times, dried leaf weights, and water temperatures revealed that the amount of extracted CQAs was maximized (∼175 mg/150 mL) when 6 g of dried leaves were steeped in hot water for 10 min. A total of 10-day refrigerated storage resulted in no significant changes in the antioxidant activity and total phenolic and CQA contents of an infusion kept in a brown container (dark). However, the antioxidant properties and total phenolic and CQA contents were negatively affected when kept in a clear container, suggesting the detrimental effect of light exposure. Our study provides practical recommendations for improving the preparation and storage of herbal infusions, thus catering to the needs of consumers, food scientists, and commercial producers. Moreover, it is the first study of the influence of light exposure on the content of crucial quality attributes within plant-based beverages.

Yerba mate is increasingly acknowledged for its bioactive properties and is currently being incorporated into various food and pharmaceutical products. When roasted, yerba mate transforms into mate tea, consumed as a hot aqueous infusion, and has gained popularity. This study investigated the bioaccessibility of phenolic compounds, protein-polyphenol interactions, antioxidant activity, and bioactive peptides in roasted yerba mate infusions, utilizing whole, semi-skimmed, and skimmed bovine milk models. The phytochemical profile of roasted yerba mate was analyzed in infusions with water and milk (whole, semi-skimmed, and skimmed), before and after in vitro digestion, identifying 18 compounds that exhibited variations in composition and presence among the samples. Bioavailability varied across different milk matrices, with milk being four times more efficient as a solvent for extraction. Gastric digestion significantly impacted (p < 0.05) the release of phenolic compounds, such as chlorogenic acid and rutin, with only chlorogenic acid remaining 100 % bioavailable in the infusion prepared with skimmed milk. Protein-polyphenol interaction did not influence protein digestion in different infusions, as there was a similarity in the hydrolysis pattern during the digestive process. Changes in antioxidant activity during digestion phases, especially after intestinal digestion in milk infusions, were related to alterations in protein structures and digestive interactions. The evaluation of total phenolic compounds highlighted that skimmed milk infusion notably preserved these compounds during digestion. Peptidomic analysis identified 253, 221, and 191 potentially bioactive peptides for whole, semi-skimmed, and skimmed milk-digested infusions, respectively, with a focus on anti-inflammatory and anticancer activities, presenting a synergistic approach to promote health benefits. The selection of milk type is crucial for comprehending the effects of digestion and interactions in bioactive compound-rich foods, highlighting the advantages of consuming plant infusions prepared with milk.

Global concerns over environmental damage caused by non-biodegradable single-use packaging have sparked interest in developing biomaterials. The food packaging industry is a major contributor to non-degradable plastic waste. This study investigates the impact of incorporating different concentrations of polyvinyl alcohol (PVA) and yerba mate extract as a natural antioxidant into carboxymethyl cassava starch films to possibly use as active degradable packaging to enhance food shelf life. Films with starch and PVA blends (SP) at different ratios (SP radios of 100:0, 90:10, 80:20 and 70:30) with and without yerba mate extract (Y) were successfully produced through extrusion and thermoforming. The incorporation of up to 20 wt% PVA improved starch extrusion processing and enhanced film transparency. PVA played a crucial role in improving the hydrophobicity, tensile strength and flexibility of the starch films but led to a slight deceleration in their degradation in compost. In contrast, yerba mate extract contributed to better compost degradation of the blend films. Additionally, it provided antioxidant activity, particularly in hydrophilic and lipophilic food simulants, suggesting its potential to extend the shelf life of food products. Starch-PVA blend films with yerba mate extract emerged as a promising alternative for mechanically resistant and active food packaging.

Yerba maté, a herbal tea derived from Ilex paraguariensis, has previously been reported to be protective against obesity-related and other cardiometabolic disorders. Using high-resolution respirometry and reverse-phase high-performance liquid chromatography, the effects of four weeks of yerba maté consumption on mitochondrial efficiency and cellular redox status in skeletal muscle, adipose, and liver, tissues highly relevant to whole-body metabolism, were explored in healthy adult mice. Yerba maté treatment increased the mitochondrial oxygen consumption in adipose but not in the other examined tissues. Yerba maté increased the ATP concentration in skeletal muscle and decreased the ATP concentration in adipose. Combined with the observed changes in oxygen consumption, these data yielded a significantly higher ATP:O2, a measure of mitochondrial efficiency, in muscle and a significantly lower ATP:O2 in adipose, which was consistent with yerba maté-induced weight loss. Yerba maté treatment also altered the hepatic glutathione (GSH)/glutathione disulfide (GSSG) redox potential to a more reduced redox state, suggesting the treatment's potential protective effects against oxidative stress and for the preservation of cellular function. Together, these data indicate the beneficial, tissue-specific effects of yerba maté supplementation on mitochondrial bioenergetics and redox states in healthy mice that are protective against obesity.

We studied the ability of an aqueous extract from yerba mate and a dry extract obtained on the basis of this aqueous extract to remove Fe(II) ions from an aqueous medium. Aqueous extracts from mate dose-dependently reduced the concentration of free Fe(II) ions assayed by the reaction with 1,10-phenanthroline. This can be attributed to polyphenolic compounds with iron-chelating properties present in aqueous extracts from mate, namely quercetin, rutin, caffeic and chlorogenic acids. These substances effectively removed Fe(II) ions from the medium (the initial concentration of these ions was 15 µM) in the concentration range of 20-30 µM. Binding of Fe(II) ions by aqueous mate extracts (due to the formation of chelate complexes with the participation of polyphenolic compounds) modified their absorption spectra in the visible region. Binding of Fe(II) ions can be a mechanism of the antioxidant action of yerba mate.

Se conmemoran en 2023 los 250 años del nacimiento de Bonpland, francés, médico y naturalista, botánico y viajero, hacendado y político que transitó en el siglo XIX por los cuatro países que hoy integran el Mercado Común del Sur (MERCOSUR). En Argentina por Buenos Aires, Entre Ríos, Corrientes y Misiones; en Uruguay reiteradamente en Montevideo; en Paraguay por Santa María de Fe, Itapúa y Asunción; en Brasil por San Borja en Rio Grande del Sur. Vino al Río de la Plata atraído por promesas que no se cumplieron luego de explorar parte de América con el barón Alexander von Humboldt y encargarse como intendente botánico de los jardines de Malmaison, la residencia de la emperatriz Josefina, primera esposa de Napoleón Bonaparte. No pudo retornar a su patria, Francia y terminó sus días -ya octogenario- en un apartado pueblo correntino, donde hubo que sepultarlo de apuro por carecer de medios de embalsamamiento que permitieran trasladar su cuerpo a la capital provincial.


The year 2023 marks the 250th anniversary of the birth of Bonpland, Frenchman, physician and naturalist, botanist and traveler, landowner and politician who traveled in the 19th century through the four countries that today make up the Southern Common Market (MERCOSUR). In Argentina, he visited Buenos Aires, Entre Ríos, Corrientes and Misiones; in Uruguay, Montevideo; in Paraguay, Santa María de Fe, Itapúa and Asunción; in Brazil, San Borja in Rio Grande do Sul. He came to the Rio de la Plata attracted by promises that were not fulfilled after exploring part of America with Baron Alexander von Humboldt and taking charge as botanical intendant of the gardens of Malmaison, the residence of the Empress Josephine, first wife of Napoleon Bonaparte. He could not return to his homeland, France, and ended his days -already an octogenarian- in a remote town of Corrientes, where he had to be buried in a hurry due to the lack of embalming means to transfer his body to the provincial capital.

The objective was to evaluate the effect of the supplementation with natural antioxidants from Yerba mate (Ilex paraguariensis St. Hil.) on the performance, carcass and meat characteristics, and fatty acid profile in meat and fat of Texel × Ile de France lambs kept in Brachiaria-grass pasture. Twenty lambs with a mean age of 90 days and 26.3 kg of BW were distributed in a completely randomized design in two treatments with 10 replicates/treatment: Control-protein-energy supplement based on corn and soybean meal (150 g/kg DM of crude protein) without the addition of natural antioxidant yerba mate and Yerba Mate - energy protein supplement with the addition of yerba mate (110 g/kg DM). There was no treatment effect on animal performance and carcass characteristics. The subcutaneous fat thickness was significantly higher for lambs treated without yerba mate. There was no effect of nutritional treatments on the oxidative markers of lamb meat. The muscle of the animals treated with yerba mate showed a higher concentration of unsaturated and polyunsaturated fatty acids elaidic, linolenic, thymnodonic, docosadienoic, and ceorvonic. The fat of the animals treated with yerba mate showed a higher concentration of palmitoleic acid, linoelaidic acid, heneicosanoic acid, dihomo-γ-linolenic acid, and arachidonic acid. The concentration of polyunsaturated fatty acids was significantly higher in meat and fat of lambs treated with yerba mate. Including yerba mate in the diet of lambs kept on Brachiaria pastures improves the lipid profile of polyunsaturated fatty acids in meat and fat, without altering the performance of the animals.

INTRODUCTION: Menopause and post-menopause are characterized by low levels of estrogen that can be associated with the emergence of metabolic diseases. While hormone replacement therapy can alleviate many symptoms, it can also exacerbate other diseases such as breast cancer. In the search for natural alternatives, Ilex paraguariensis (Yerba Mate) has been identified as a potential therapy for the onset of obesity. Here, the effect of MATE consumption on white adipose tissue (WAT) was studied in ovariectomized rats, an animal model for post-menopause hormone loss. METHODS: Four groups of animals were used: ovariectomy with MATE (OVX MATE) and without MATE (OVX), as well as sham surgery with MATE (Sham MATE) and without MATE (Sham). MATE was provided by gavage at 1 g/kg of body weight for eight weeks before measuring biochemical parameters in plasma and characterizing WAT morphology. RESULTS: The consumption of Yerba MATE significantly decreased weight gain in ovariectomized rats and presented near control levels of triglycerides, total cholesterol, and LDL. A morphometric analysis of WAT showed a significant decrease in the area occupied by adipocytes in the group that consumed MATE. Finally, MATE consumption increased the UCP1 content in the WAT of the ovariectomized group. Yerba MATE treatment was also associated with higher levels of SIRT1 protein. CONCLUSION: MATE consumption has a preventive effect on the weight gain observed in ovariectomized rats and potential benefits in naturally avoiding the onset of obesity post menopause.

Yerba mate (Ilex paraguariensis St. Hill.) has shown a relatively high capacity for micronutrient absorption and could be a candidate for biofortification and combating a lack of micronutrients. To further evaluate the accumulation capacity of Ni and Zn, yerba mate clonal seedlings were grown in containers under five rates of Ni or Zn (0, 0.5, 2, 10, and 40 mg kg-1) with three soils originating from different parent material (basalt, rhyodacite, and sandstone). After 10 months, plants were harvested, divided into component parts (leaves, branches, and roots), and evaluated for 12 elements. The use of Zn and Ni enhanced seedling growth under rhyodacite- and sandstone-derived soils at the first application rate. Application of Zn and Ni resulted in linear increases based on Mehlich I extractions; recovery of Ni was smaller than Zn. Root Ni concentration increased from approximately 20 to 1000 mg kg-1 in rhyodacite-derived soil and from 20 to 400 mg kg-1 in basalt- and sandstone-derived soils; respective increases in leaf tissue were ~ 3 to 15 mg kg-1 and 3 to 10 mg kg-1. For Zn, the maximum obtained values were close to 2000, 1000, and 800 mg kg-1 for roots, leaves, and branches for rhyodacite-derived soils, respectively. Corresponding values for basalt- and sandstone-derived soils were 500, 400, and 300 mg kg-1, respectively. Although yerba mate is not a hyperaccumulator, this species has a relatively high capacity to accumulate Ni and Zn in young tissue with the highest accumulation occurring in roots. Yerba mate showed high potential to be used in biofortification programs for Zn.

OBJECTIVES: Prostate cancer (PCa) is the most common adenocarcinoma in men >50 y of age. It has a long latency period, which provides time for preventive strategies like incorporating healthy eating habits. Yerba mate (YM) intake has been associated with numerous health benefits. Since YM is one of the most popular infusions in Argentina, the of this study was to examine the influence of YM on PCa development. METHODS: We carried out an in vivo model of PCa through subcutaneous inoculation of transgenic adenocarcinoma of the mouse prostate-C1 cells in C57BL/6 mice. Subsequently, the animals were divided into two groups: mate (25 mg/mL of YM in drinking water, n = 15), and control (only drinking water, n = 15). We also developed an in vitro model to study the direct effects of YM on three human PCa cell lines: lymph node carcinoma of the prostate (LNCaP), PC-3, and DU-145. RESULTS: Our in vivo model showed that YM intake slightly reduced body weight, increased the latency of tumor appearance (P <0.01), and diminished the tumor volume (P <0.05) compared with the control group. In agreement, the expression of proliferating cell nuclear antigen, and nuclear estrogen receptor α were lower in the tumors of the mate animals (P <0.05). In vitro, YM decreased the viability, proliferation, and adhesion of the three tumor cell lines (P < 0.001) and retarded the migration of LNCaP (P <0.05) and DU-145 (P <0.005), without modifying the migration of PC-3 cells. CONCLUSIONS: YM showed anticancer effects in vitro and in vivo and were more effective on the androgen-sensitive cell line (LNCaP).

The hypothesis tested is that the association of soybean grain and yerba mate as an antioxidant source can increase the concentration of polyunsaturated fatty acids (PUFA) with lower oxidation of milk from lactating ewes reared in tropical pastures. Sixteen ewes were randomly distributed in a 2x2 factorial scheme (with or without yerba mate at 110 g / kg of dry matter (DM); with or without soybean grain at 210 g/kg of DM). Yerba mate intake reduced DM intake, and concentrations of ether extract (EE), protein, lactose, defatted dry extract, density, omega-3 concentrations, and the ratio between saturated/monounsaturated fatty acids (FA), but increased the concentration of monounsaturated FA and the sequestering power of free radicals by DPPH without altering the concentrations of conjugated dienes and the concentrations of substances reactive to thiobarbituric acid in milk. Supplementation with soybean grain decreased the birth weight of the lambs and increased the concentrations of conjugated linoleic acid (CLA), PUFA, omega - 6, omega ratio - 6/omega - 3, and total blood cholesterol. The addition of yerba mate did not influence the oxidative profile of milk. Supplementation with soybean grain improved the FA profile of milk, increasing the concentrations of CLA and PUFA. The results suggest that the association of yerba mate and soybean grain helps to improve the fat quality of milk from ewes raised in tropical pastures, as shown by the enhanced antioxidant activity, although it does not help prevent oxidation of milk rich in PUFA.

Abstract Background The traditional infusion of "yerba mate" is widely consumed in South America and exported to countries around the world. Although generally considered a "clear fluid", there is no data to date on the gastric emptying time of yerba mate and safe preoperative fasting intervals. The objective of this study was to evaluate the gastric emptying time of a standardized infusion of yerba mate using bedside ultrasound and compare it with the time confirm of hot and cold tea. Methods This was a prospective, randomized crossover experimental study. Thirty healthy volunteers were evaluated after 8 hours of fasting for both fluids and solids. Gastric antral area and gastric volume were evaluated at baseline and every 20 minutes after drinking 300 mL of randomly assigned infusion of "yerba mate", hot tea, or cold tea. Results The mean gastric emptying time was: 69.7 ± 22.1 min, 63.1 ± 14.5 min, and 64.3 ± 23.5 min for the mate, hot tea, and cold tea respectively. No significant differences were found in emptying time among the infusion groups (p-value = 0.043). When same time measures were compared, the only significant difference detected was between hot teas and mate infusion at 20 minutes (p-value = 0.012) Conclusion Yerba mate infusion has a similar gastric emptying time to that of tea. All subject's gastric volume returned to baseline values by 100 minutes. It is reasonable to recommend a similar fasting period of 2 hours for mate infusion prior to elective surgery.

Yerba mate (Ilex paraguariensis) tea is a well know source of phenolic antioxidants compounds. Caffeoyl derivatives are the primary constituents that account for the antioxidant capacity of this beverage. It was proposed that the interaction of polyphenols with lipid bilayers of various cell types provides the molecular rationale for their hallmark antioxidant and anti-inflammatory activities. In this study, atomistic molecular dynamics (MD) simulations were carried out in order to outline a detailed picture of the molecular interactions between three caffeoyl acids derivatives and two different lipid bilayers. We show that the three phenolic acids are able to interact at the upper regions of lipid bilayers, confining their action to the membrane surface; moreover, the strength of these interactions relay on the probability of metabolite protonation once inserted in the bilayer.

INTRODUCTION: Yerba mate is widely consumed in South American countries and is gaining popularity around the world. Long-term consumption of yerba mate has been proven to have health-care functions and therapeutic effects on many diseases; however, its underlying mechanism has not been clearly elucidated. In this research, we explored the pharmacological mechanism of yerba mate through a network pharmacological approach. MATERIAL AND METHODS: The bioactive components of yerba mate were screened from published literature and the Traditional Chinese Medicine System Pharmacology Database (TCMSP), and the targets and related diseases were retrieved by TCMSP. Furthermore, the component-target-disease network an protein-protein interaction (PPI) network were constructed, and combined with gene ontology (GO) functional analysis and Kyoto Encyclopaedia of Genes and Genomes (KEGG) pathway enrichment analysis to explore the pharmacological mechanism of yerba mate. RESULTS: As a result, 16 bioactive components of yerba mate were identified, which acted on 229 targets in total. Yerba mate can be used to treat 305 diseases, such as breast cancer, asthma, Alzheimer's disease, osteoarthritis, diabetes mellitus, atherosclerosis, and obesity. Protein kinase B (AKT1), signal transducer and activator of transcription 3 (STAT3), mitogen-activated protein kinase 1 (MAPK1), transcription factor AP-1 (JUN), cellular tumour antigen (p53) TP53, tumour necrosis factor (TNF), transcription factor p65 (RELA), interleukin-6 (IL6), amyloid-beta precursor protein (APP), and vascular endothelial growth factor A (VEGFA) were identified as the key targets of yerba mate playing pharmacological roles. The signalling pathways identified by KEGG pathway enrichment analysis that were most closely related to the effects of yerba mate included pathways in cancer, fluid shear stress and atherosclerosis, and human cytomegalovirus infection. CONCLUSION: the results of our study preliminarily verify the basic pharmacological action and possible mechanism of yerba mate and provide a reference for the further development of its medicinal value.

Background: Yerba mate intake is conditioned by assumptions about its benefits and risks for breastfeeding, with a lack of solid evidence. Objective: To evaluate the safety of yerba mate teas during human lactation. Material and methods: Cross-sectional study with 279 adult lactating women from Argentina (years 2013-2020), during the first six months postpartum, without current pregnancy or active pathologies. Social, reproductive, and food data were compiled. Body mass index and percentage of body fat were also established. The adherence to dietary patterns, intake of yerba mate and its phytochemicals were estimated. Milk biochemistry included nutritional, oxidative and tissue markers. Intake means were compared using the Wilcoxon's test depending on the data recorded, while the multiple nonparametric Kernel regression was used to evaluate the effects on body and milk. Results: It was found a wide range of intake, and tube-sipped tea was the main way of consumption. Concerning its constraints, in-cup tea was more used by women without a partner, whereas tube-sipped tea was consumed mainly by employed women, during late postpartum, and with 12 or more years of formal education. Additionally, these teas were an important source of 18 hydroxycinnamic acids and flavonoids. Moreover, yerba mate provided more than 35% of dietary polyphenols. No anthropometric effects or changes in milk nutrients and biomarkers were found. Conclusions: Yerba mate was a safe source of polyphenols, as it did not compromise lactation and maternal nutritional status.


Introducción: el consumo de yerba mate está condicionado por supuestos sobre sus beneficios y riesgos para la lactancia materna, los cuales carecen de evidencia sólida. Objetivo: evaluar la seguridad de las infusiones de yerba mate durante la lactancia. Material y métodos: estudio transversal con 279 mujeres lactantes adultas de Argentina (años 2013-2020), en los primeros seis meses postparto, sin embarazo ni patologías activas. Se recopilaron datos sociales, reproductivos y alimentarios, índice de masa corporal y porcentaje de grasa corporal. Se estimó adherencia a patrones alimentarios, consumo de mate y sus fitoquímicos. Se analizaron marcadores nutricionales, oxidativos y tisulares en leche. Por la prueba de Wilcoxon, se compararon las medias de consumo según las variables recopiladas y por regresión no paramétrica de Kernel múltiple se evaluaron los efectos corporales y lácteos. Resultados: se encontró un amplio rango en la ingesta de infusiones y el mate cebado fue la principal forma consumida. Respecto a sus condicionantes, el mate cocido fue más bebido por mujeres sin pareja, mientras que el mate cebado fue más consumido por puérperas tardías, con empleo y nivel educativo ≥ 12 años. Además, estas infusiones constituyeron una fuente relevante de 18 ácidos hidroxicinámicos y flavonoides, que proveyeron diariamente más del 35% de los polifenoles dietarios. No se encontraron efectos corporales ni cambios en los niveles de los nutrientes y en los biomarcadores lácteos. Conclusiones: la yerba mate fue una fuente polifenólica segura que no comprometió la lactancia ni el estado nutricional materno.

Yerba Mate (YM) is a food product derived from Ilex paraguariensis whose constituents obtained from its extract, mainly the phenolic fraction, have been linked to numerous health benefits, such as cardiovascular protection, weight reduction, glucose control, and gene modulation. However, evidences linking phenolic compounds (PC) intake and human health are still limited and often contentious. Several researches have shown that key PC elements are poorly absorbed in humans and exist predominantly as conjugates, which may not be bioactive but may play a crucial role when interacting with the gut microbiota (GM). As the intestine is the largest microorganism-populated organ in the human body, GM has been regarded as a "microbial organ", acting as a second genome for modulating the host's health phenotype. For this reason, the study of intestinal microbiota has received considerable attention in recent years. Its impact on the development of nutrition-related diseases must motivate broader researches on the interaction between YM's PC and GM regarding the production of metabolites that may influence human health. This review aimed to gather and assess the available information about how PC from YM may impact host metabolism and the immune system and GM.

OBJECTIVE: The study aimed to assess the effects of mate tea [Ilex paraguariensis] on the redox state and biochemical parameters of salivary glands in diabetic male rats. DESIGN: Twenty-four male Wistar rats (3 months old) were randomly divided into groups (n = 8 per group): control rats that received water (C); diabetic rats that received water (D); diabetic rats treated with mate tea (DMT). The treated streptozotocin-induced diabetic rats were given mate tea powder by intragastric gavage at a dose of 20 mg/kg daily for 28 days. Content of total protein, amylase, oxidative lipid damage, measured as thiobarbituric acid reactive substances (TBARs), oxidative protein damage, measured as protein carbonyl, total antioxidant capacity, uric acid, reduced glutathione (GSH), superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPx) were examined by the spectrophotometric method in the parotid and submandibular glands. RESULTS: The D group showed lower total protein, amylase, TBARs, protein carbonyl, total antioxidant capacity, GSH, uric acid, and GPx than the C group in both salivary glands, as well as higher SOD and CAT activities. The DMT group showed higher total protein, amylase, total antioxidant capacity, GSH, uric acid, and GPx than the D group in both salivary glands. Moreover, mate tea increased SOD in the parotid gland and CAT in the submandibular gland of diabetic rats but did not influence TBARs and protein carbonyl in either salivary gland compared to D group. CONCLUSION: Mate tea increased tissue protein synthesis and improved antioxidant defenses in the salivary glands of streptozotocin-induced diabetic male rats.

Untargeted metabolomics analysis was applied to evaluate the phenolic profile of whole wheat bread with yerba mate (YM) during the bread-making process (flour, dough and bread). The free, bound and total phenolic contents of the samples evaluated by the Folin-Ciocalteu method showed the highest values for the flour, dough and bread samples prepared with 4.5% YM in fine and medium particle sizes (flour 181.48 - 175.26 mg GAE/g; dough 149.62 - 141.40 mg GAE/g; and bread 148.32 - 147.00 mg GAE/g). Globally, 104 phenolic compounds were tentatively identified, belonging to the five subclasses: flavonoids (35), phenolic acids (32), other polyphenols (10), stilbenes (2) and lignan (1). Of these compounds, 24 had the same m/z but showed different fragmentation profiles. A higher number of polyphenols was identified in the bound extracts (77%) than in the free extracts (59%). The addition of 4.5% of YM promoted an improved and more abundant profile of phenolic compounds in the dough and bread. The major compounds found in the samples containing YM were 5-caffeoylquinic acid and caffeic acid. The baking process did not adversely affect the abundance of phenolic compounds. The bread-making process positively affected the phenolic profile due to the release of bound phenolic compounds. At the same time, the addition of YM as a natural ingredient promoted an increase in the polyphenols in the bread.

Polyphenol supplementation may be useful during exercise. However, there is no evidence indicating yerba mate (YM) increases muscle strength. Thus, this study sought to evaluate the effect of acute YM supplementation on muscle strength following the strength test. In a crossover and pilot clinical trial, ten men were divided into two groups, receiving either supplementation with YM or a placebo. One hour after consumption of beverages, the participants were submitted to tests of one-repetition maximum (1 RM) on the bench press and leg press. The average age of the participants was 25.5 ± 4.1 years, and the average body mass index was 24.4 ± 2.9 kg/m². YM was not able to increase muscle strength when compared to the placebo in either the 1RM leg press exercise (YM: 225 ± 56.2 kg, vs. placebo: 223 ± 64.3 kg, p = 0.743, Cohen's d = 0.03) or in the 1 RM bench press exercise (YM: 59.5 ± 20.7 kg vs. placebo: 59.5 ± 21.5 kg, p = 1.000, Cohen's d = 0.) In conclusion, acute intake of YM did not change muscle strength in physically active men.

Yerba mate ( Ilex paraguariensis ) produces several secondary metabolites of interest to the phar maceutical industry, such as chlorogenic acids and methylxanthines. These compounds have been produced in vitro by callus culture from different species. However, for I. paraguariensis , no studies upon the production of these compounds in vitro have been p erformed to date. In this work, we show that the concentration of secondary metabolites from I. paraguariensis callus is possible and highly dependent on the callus growth phase. We observed that the best phase for the production of secondary compounds in calli of yerba mate is the stationary growth phase on both genotypes tested. In this phase, higher levels of phenolic compounds, chlorogenic acid and 3,5 - dicaffeoylquinic acid and greater antioxidant activity were observed. Chlorogenic acid and 3,5 - dicaffe oylquinic acid presented positive correlation with antioxidant activity. For the first time, secondary compounds were reported in yerba mate calli cultivated in vitro .


La yerba mate ( Ilex paraguariensis ) produce varios metabolitos secundarios de interés para la industria farmacéutica, como los ácidos clorogénicos y las metilxantinas. Estos compuestos se han producido in vitro mediante cultivo de ca llos de diferentes especies. Sin embargo, para I. paraguariensis , hasta la fecha no se han realizado estudios sobre la producción de estos compuestos in vitro . En este trabajo, mostramos que la concentración de metabolitos secundarios desde callos de I. pa raguariensis es posible y altamente dependiente de la fase de crecimiento del callo. Observamos que la mejor fase para la producción de compuestos secundarios en callos de yerba mate es la fase de crecimiento estacionario en ambos genotipos probados. En es ta fase se observaron niveles más altos de compuestos fenólicos, ácido clorogénico y ácido 3,5 - dicafeoilquínico y una mayor actividad antioxidante. El ácido clorogénico y el ácido 3,5 - dicafeoilquínico presentaron correlación positiva con la actividad antio xidante. Por primera vez, se reportaron compuestos secundarios en callos de yerba mate cultivados in vitro .
