RESUMO

Contamination of food with mycotoxins can pose harmful effects on the health of consumers in the long term. Coffee contamination with mycotoxins has become a global concern. This study attempted to meta-analyze the concentration and prevalence of ochratoxin A (OTA) in coffee products and estimate consumers' health risks. The search was conducted among international databases, including Scopus, PubMed, Embase, and Web of Science, for 1 January 2010 to 1 May 2022. The concentration and prevalence of OTA in coffee products were meta-analyzed according to country subgroups. Health risk assessment was conducted based on Margin of Exposures (MOEs) using the Monte Carlo simulation (MCS) technique. The three countries that had the highest Pooled concentration of OTA in coffee were observed in Chile (100.00%), Kuwait (100.00%), and France (100.00%). The overall prevalence of OTA in coffee products was 58.01%, 95% CI (48.37-67.39). The three countries that had the highest concentration of OTA were Philippines (39.55 µg/kg) > Turkey (39.32 µg/kg) > and Panama (21.33 µg/kg). The mean of MOEs in the adult consumers in Panama (9,526) and the Philippines (8,873) was lower than 10,000, while the mean of MOEs in other countries was higher than 10,000. Therefore, monitoring and control plans should be carried out in different countries.

In the present work, incorporating low molecular weight chitosan (LMWCH) (0, 0.5, 1, and 2%) as a fat replacer into low-fat beef burgers and technological, textural, and oxidative stability were investigated. The weight loss and shrinkage of samples decreased with the increase of LMWCH concentration. In contrast, the water-holding capacity and color of burgers were enhanced by the addition of LMWCH. The instrumental TPA results indicated an increase in the LMWCH levels, significantly increasing the hardness, springiness, and gumminess but decreasing the cohesiveness of low-fat beef burgers. The TBARS and peroxide values and free fatty acid content in the burgers supplemented with LMWCH increase slower than the control sample during refrigerated storage.

The concentration of cadmium (Cd) and lead (Pb) in vegetable (potatoes, onions, tomatoes, lettuce, leeks, and carrots) and cereal (wheat and rice) samples collected from Iran were investigated by a graphite furnace atomic absorption spectrophotometer. In addition, we determined the health risks due to exposure to Cd and Pb through vegetable and cereal consumption by computing the estimated daily intake, the target hazard quotient (THQ), the total THQ, and the margin of exposure. The mean concentrations of Pb in potato, onion, tomato, lettuce, leek, carrot, wheat, and rice samples were measured as 0.029 ± 0.011, 0.016 ± 0.012, 0.007 ± 0.005, 0.022 ± 0.020, 0.040 ± 0.048, 0.029 ± 0.025, 0.123 ± 0.120, and 0.097 ± 0.059 mg kg-1 wet weight, respectively, and all were below the maximum allowable concentrations set by the European Union. The mean concentrations of Cd in potatoes, onions, tomatoes, lettuce, leeks, carrots, wheat, and rice samples were measured as 0.022 ± 0.013, 0.011 ± 0.009, 0.003 ± 0.003, 0.007 ± 0.005, 0.015 ± 0.024, 0.013 ± 0.011, 0.046 ± 0.043, and 0.049 ± 0.04 mg kg-1 wet weight, respectively, and all were below the permissible levels established by the European Union. The corresponding values for the estimated daily intake of Cd were acceptable and lower than the provisional tolerable daily intake. The THQ and total THQ values of Cd through consumption of all vegetables and cereals were lower than 1. The margin of exposure values for Pb in samples were >1, showing no significant human health risks for both potentially toxic elements. The findings of this study indicated there is no risk associated with exposure to Pb and Cd through the intake of selected vegetables and cereals in western Iran.

This meta-analysis was designed to review the published reports regarding the concentration and/or prevalence of aflatoxin M1 (AFM1) in human breast milk in Iran. The carcinogenic risk for Iranian infants consuming this milk was estimated with the hazard index. The PubMed and Scopus databases and the Scientific Information Database were screened for relevant studies between 1995 and 2017, and 11 of the 112 collected studies were included in the systematic review and meta-analysis. The mean (95% confidence interval) concentration of AFM1 was 5.85 ng/L (4.54 to 7.15 ng/L), which was lower than the European Union standard (25 ng/L). The mean prevalence of AFM1 in breast milk in Iran was 42% (11 to 77%). The estimated daily intakes for male and female infants were 0.02 to 5.57 ng/kg and 0.02 to 3.68 ng/kg of body weight per day, respectively. The rank order of estimated daily intake for both male and female infants according to age was 1 week > 1 month > 6 months > 12 months. The hazard index for all age groups of infants in all provinces in Iran was less than 1. Therefore, infants in Iran were not considered at carcinogenic risk from AFM1 in human breast milk.

OBJECTIVE: This study was conducted to evaluate the concentration of potentially toxic elements (PTEs) such as arsenic (As), cadmium (Cd), mercury (Hg), and lead (Pb) in fruit samples collected from Markazi Province, Iran. A probabilistic health risk assessment due to ingestion of PTEs through the consumption of these fruits was also conducted. METHODS: The concentration of PTEs in 90 samples of five types of fruits (n = 3) collected from six geographic regions in Markazi Province was measured. The potential health risk was evaluated using a Monte Carlo simulation model. RESULTS: A significant difference was observed in the concentration of PTEs between fruits as well as soil and water samples collected from different regions in Markazi Province. The order of PTE concentration in the soil and water samples was as follows: Pb > As > Hg > Cd. Furthermore, the highest level of transfer factor for Cd and Hg correlated with the grape. The estimated daily intake for adults and children was lower than the recommended tolerable daily intake. CONCLUSION: The population in Markazi Province, Iran, is not at considerable noncarcinogenic or carcinogenic risk due to the ingestion of PTEs through the consumption of the examined fruits.

Histamine is one of the most important health issues associated with consumption of canned tuna because of possible allergic and anaphylactic reactions in consumers. Although the concentrations of histamine in tuna in Iran have been investigated in several studies, definitive conclusions are elusive. This study was undertaken as a systematic review and meta-analysis of the concentration and prevalence of histamine in Iranian canned tuna, and the related health risk was assessed. An extensive search of articles in the databases Scopus, PubMed, and Scientific Information Database resulted in 11 articles and a total of 693 samples for inclusion in this review. The minimum and maximum concentrations of histamine were determined as 8.59 ± 14.24 and 160.52 ± 87.59 mg kg−1, respectively. The mean concentration was calculated as 77.86 mg kg−1 (95% confidence interval [CI], 47.51 to 108.21 mg kg−1), which was lower than the 200 mg kg−1 recommended limit by the U.S. Food and Drug Administration (FDA). The mean prevalence of histamine was 9.19% (95%; CI, 6.88 to 11.5%). The 95% value of the target hazard quotient for adult consumers was calculated as 0.10. In all studies performed in Iran, the concentration of histamine in canned tuna was lower than FDA standard. Health risk assessment indicated low histamine risk (target hazard quotient < 1) for adults in Iran from consumption of canned tuna.

In the current study, the concentration of some pollutants which are categorized as volatile organic compounds (VOCs), including benzene (B), toluene (T), ethylbenzene (E), and o-xylenes (o-X), in the air of Tehran was evaluated by the aid of a systematic review and meta-analysis approach. Also, the health risk for the exposed population was estimated using the recommended methods by the Environmental Protection Agency (EPA). The rank order based on their concentration in BTEX was benzene (149.18 µg/m³: 31%) > o-xylene (127.16 µg/m³: 27%) > ethylbenzene (110.15 µg/m³: 23%) > toluene (87.97 µg/m³: 19%). The ratio B/T in this study was calculated as 1.69, repressing that both stationary and mobile sources of emission can be considered as the main sources for benzene and toluene. Moreover, strong photochemical activity in Tehran was demonstrated by the high ratio of E/o-X. Meta-regression indicates that the concentration of BTEX has insignificantly (p-value > 0.05) increased over time. The BTEX compounds based on the target hazard quotient (THQ) were ordered as benzene > o-xylene > ethylbenzene > toluene. Percentile 95% of THQ due to benzene (4.973) and o-xylene (1.272) was higher than a value of 1. Percentile 95% excessive cancer risk (ECR) for benzene (1.25 × 106) and ethylbenzene (1.11 × 106) was higher than a value of 1.00 × 106. The health risk assessment indicated that the population of Tehran are at considerable non-carcinogenic and carcinogenic risks.

In this study, the contamination levels of aflatoxins (AFs) and ochratoxin A (OTA) in 88 collected samples from Iran's market including dried mulberry, date, fig, and apricot were evaluated. The margin of exposure (MOE) was estimated to assess the risk of dietary intake of aflatoxin B1 (AFB1) and OTA. The incidence of AFB1 in dried mulberry, date, fig and apricot samples was 45.5, 40.9, 59.1, and 81.8%, respectively. Although the mean total AFs content in contaminated samples of date (2.61 µg/kg), fig (3.43 µg/kg) and apricot (2.91 µg/kg) was lower than the maximum limit set in the European Union (EU) (4 µg/kg), dried mulberry samples showed a higher contamination level (4.12 µg/kg). The co-occurrence of OTA and AFs were noted in 4 (18.9%), 2 (9.1%), 4 (18.2%), and 10 (45.5%) in the dried mulberry, date, fig and apricot samples, respectively. Based on the calculated MOE, the dietary exposure to AFs through the consumption of dried fruit in Iran poses a potential risk to consumer health. OTA was detected in 45.45%, 22.72%, 45.45%, and 50% of mulberry, date, fig and apricot samples, respectively. However, OTA levels in all types of dried fruit were below recommended level in EU regulation (10 µg/kg) and MOE >10000, representing no toxicological concerns for consumers.
