RESUMO

Cell wall polysaccharides and physicochemical properties are the major quality characteristics of fruit, but they are significantly affected by the postharvest disease. In this study, the influence of Alternaria alternata-induced disease on the contents of cell wall polysaccharides and physicochemical properties in 'Korla' pear flesh during storage, as well as their relationships of the optical absorption (µa) and reduced scattering (µs') were explored. The infected pear had lower individual sugars, covalent-soluble pectin, cellulose and hemicellulose contents than the healthy ones. The successive decreases of µa and increases of µs' in pears were observed while the process of pathogen infection. Path-coefficient analysis indicated the ionic-soluble pectin was the main reason responsible for the change of µs' in infected pear at 675 nm and 980 nm. This study indicated the optical properties have the possibility to present the physicochemical characteristics and cell wall polysaccharides of pears during postharvest pathogen infection.

This research measured the optical absorption (µa) and reduced scattering (µs') properties in peaches during quality deterioration, and determine the relationships of the optical parameters with select structural and biochemical parameters. Spatially resolved reflectance was measured for healthy and fungal infected peaches, followed by physical (the size and tissue color), structural [membrane permeability and SEM], and biochemical (Vc, soluble sugar, titratable acid, chlorophyll, total phenolic content) measurements. Both µa and µs' were correlated well with the cellulosic structural and biochemical parameters of peaches, and they had the best correlations with those quality parameters at 675 nm. The correlation of µs' with membrane permeability was the highest from -0.962-0.743, while µa had the best correlation with the chlorophyll content at 675 nm which is an indicator of plant maturation and senescence. These findings would be useful for further development of an effective optical technique for early disease detection of peach fruit.

The dissipation of six pesticides (carbendazim, thiabendazole, procymidone, bifenthrin, λ-cyhalothrin, and ß-cyfluthrin) in shiitakes from cultivation to postharvest drying process was investigated, and the dietary exposure risk was estimated thereafter. The field trial study indicates that the half-lives of carbendazim, thiabendazole, and procymidone were much shorter than those of bifenthrin, λ-cyhalothrin, and ß-cyfluthrin. Furthermore, the effects of two drying processes on the residues and processing factors (PFs) were investigated. The results showed that hot-air drying resulted in higher residues than sunlight exposure drying. Both drying processes led to pesticide residue concentration (with PF > 1), except for thiabendazole upon sunlight exposure treatment. The estimated daily intakes (EDIs) ranged from 0.06% of the acceptable daily intake (ADI) for thiabendazole to 42.43% of the ADI for procymidone. The results show that the six pesticide residues in dried shiitakes are still within acceptable levels for human consumption on the basis of a dietary risk assessment.
