The lack of consumer feedback on beef eating quality contributes to reduced beef consumption in Europe. The Meat Standards Australia (MSA) grading scheme can assess the palatability of beef carcasses usually graded at the 10th thoracic vertebrae. However, the European beef industry relies on late-maturing breeds usually cut at the 5th vertebrae due to commercial reasons. Data from 55 young bulls and heifers of late-maturing breeds were collected in an Italian slaughterhouse following the MSA guidelines at both carcass grading sites and sides. Intramuscular fat levels were assessed through two scores and used with other variables to feed the MSA model, which predicts the MSA index, the meat-eating quality scores (MQ4) for 5 muscles and for each carcass grading site × side combination. The scores were analyzed using a mixed linear model. A correlation analysis was conducted to predict the variables measured at the 10th site using their correspondent at the 5th carcass grading site. A stepwise regression was conducted to understand the weight of each measured variable on marbling and MQ4 scores measured both at 5th and 10th carcass grading sites. Results showed significantly higher value for the studied traits at the 5th carcass grading site, while carcass side had no significant impact. The equations had high predictive capability and MSA marbling score played a key role in explaining the variability across carcass grading sites. The differences in marbling and MQ4 scores between the carcass grading sites suggest considering this factor if the MSA grading system will be applied to Europe.

The state of Minas Gerais is one of Brazil's largest animal protein producers, and its slaughterhouses generate highly polluting wastewater, which needs to be treated for discharge or reuse. As a novelty, this review article focused on assessing the characteristics and methods to treat wastewater from slaughterhouses in the state of Minas Gerais, and verifying its compliance with environmental regulatory agencies. The aim was to present data that helps to better manage this residue in other Brazilian states and countries. By analyzing the literature data, it was found that raw slaughterhouse wastewater (SWW) showed a high concentration of organic matter. For most SWW, the BOD5/COD ratio was above 0.4, which implies that it can be treated biologically. Generally, treated wastewater was in accordance with legal discharge standards, considering COD and BOD5 removals above 70% and 75%, respectively. It was found that wastewater treatment plants (WWTPs) consisted of some type of pretreatment (screens, grease traps) to remove coarse solids and fatty material, eventually followed by a flotation step and finally by biological processes, mostly anaerobic and/or aerated (or facultative) ponds. However, the absence of an aerobic process at the end of the treatment in some WWTPs, in addition to a system allowing better removal of biological flocs, might be the reason for ammoniacal nitrogen and suspended solids values being above the allowed maximum in treated wastewater, respectively. Besides the discharge into water bodies, it was verified that fertigation using treated SWW is very common in the state of Minas Gerais.

This study investigated the prevalence and associated risk factors of Campylobacter in South Korean broilers using a random-effects meta-analysis. Subsequently, to facilitate the design of preventive measures, the prevalence estimate from the meta-analysis was incorporated into a stochastic risk assessment model to quantify the Campylobacter contamination levels on broiler carcasses. The baseline model was developed based on the most common practices along the South Korean broiler processing line, with no interventions. Meta-analysis results revealed Campylobacter prevalence across the chicken supply chain in the following order: farms (60.6 % [57.3-63.4]), retail markets (43.90 % [24.81-64.99]), slaughterhouses (27.71 % [18.56-39.21]), and processing plants (14.50 % [3.96-41.09]). The model estimated a 52 % (36.1-70.8) Campylobacter prevalence at the end of chilling, with an average contamination level of 4.62 (2.50-6.74) log CFU/carcass. Sensitivity analysis indicated that Campylobacter fecal shedding (r = 0.95) and the amount of feces on bird exteriors (r = 0.17) at pre-harvest were the main factors for carcass contamination, while soft scalding (r = -0.22) and air chilling (r = -0.12) can serve as critical control points (CCPs) at harvest. Scenario analysis indicated that a combination of hard scalding, inside-outside bird washing, spray washing, and chlorinated water immersion chilling can offer a 30.9 % reduction in prevalence and a reduction of 2.23 log CFU/carcass in contamination levels compared to the baseline model. Apart from disinfection and sanitation interventions carried out during meat processing, the implementation of robust control measures is indispensable to mitigate Campylobacter prevalence and concentration at broiler farms, thereby enhancing meat safety and public health. Furthermore, given the high Campylobacter prevalence in the retail markets, future studies should explore the potential risk of cross-contamination at post-harvest stage.

BACKGROUND: Both male and female food animals are slaughtered for meat. Some cows, ewes and does  slaughtered are found with viable foetuses resulting in foetal wastage and loss of future replacement stock. Foetal wastage accounts for about 20%-25% of the decline in livestock numbers in sub-Saharan Africa. Slaughter of pregnant cows, ewes and does results in economic losses and threatens food security with consequent decrease in available animal proteins to the fast growing human population. Protein requirement for healthy human development is inadequate in most developing countries including Uganda. The prevalence and economic losses associated with foetal wastage were assessed in an abattoir. OBJECTIVES: The study was cnducted to assess the prevalence of feotal wastage at the study abattoir and estimate the associated economic losses. METHODS: The researchers supported by abattoir resident meat inspectors examined all slaughtered female animals during the study period. Gravid uteri obtained from slaughtered animals after dressing of carcasses were eviscerated using a sharp knife across the long axis to recover foetuses. The crown rump lengths (CRLs) of the recovered foetuses were measured using a tape measure, weighed on a scale and categorised into first, second and third trimesters. Prevalence of pregnant animals slaughtered was determined by calculating the percentage of pregnant animals over the total number of female animals slaughtered. Economic losses were estimated based on the monetary losses at birth, weaning, maturity, and carcass loss at weaning and maturity. RESULTS: The aggregate slaughters were bovine 604 (73.6%), caprine 169 (20.6%) and ovine 48 (5.9%). The overall prevalence of foetal wastage was 21.9%. The aggregate prevalence of foetal wastage by species include 160 (88.9%) cows, 8 (4.4%) heifers, 4 (2.2%) does and 8 (4.4%) ewes. Foetal wastage of cows by trimester included 62 (38.8%), 26 (16.25%) and 72 (45.0%) in first, second and third trimesters, respectively, translating into loss of US$13,055. Foetal wastage was high and the associated economic losses were substantial which undermines sustainability of the national herd. Farmers should be sensitised about the economic losses and long-term impact associated with foetal wastage and dissuaded from this practice. A policy is needed to deter farmers from selling pregnant animals for slaughter. CONCLUSIONS: A total of 168 bovine, 8 caprine and 12 ovine foetuses were wasted within 60 days study period. These foetal wastages translated to US$ 13,224 monetary losses at birth, US$ 31,849 monetary loss at weaning and US$ 57,0896 monetary loss at maturity.

Contaminated meat has been implicated in many cases of foodborne illness and poses serious challenges in developing countries. This study aimed to assess the quality and safety of raw beef meat in Assosa Town. The finding showed that the mean of Aerobic mesophilic bacteria (AMB) and S. aureus at retail outlets was 5.04 log10cfu/g and 3.84 log10cfu/g; 4.03 log10cfu/g and 3.5 log10cfu/g at slaughterhouse, respectively. The microbial load range of AMB at the butcher shop was 2.49-5.16 log10 cfu/g, while at the abattoir it was 2.75-7.52 log10 cfu/g out of 70 raw beef meat analyzed samples. Similar to this, the butcher shop and abattoir had S. aureus microbiological load ranges of 2.74 - 4.84 log10 cfu/g and 2.71-4.72 log10 cfu/g, respectively. In contrast, 25.7% and 34.3% of the samples in the abattoir and retail shop, respectively, were contaminated with Salmonella sp. For S. aureus, just 38.71% and 17.14%, respectively, of the samples at the retail and butcher shops were satisfactory. AMB found that 80% of the examined samples from butcher shops and 57.7% from abattoirs were satisfactory. Due to poor handling and environmental hygiene procedures by Assosa Town butchers, 77.1% of the meat contact surface and 82.9% of the carcass were exposed to flies. On the other hand, only 5.7%, 28.6%, and 22.9% of the butchers kept the carcass in the refrigerator, and wore gowns and hairnets, respectively. In slaughterhouses, the majority of respondents (87.5%) concur that there were certain challenges in achieving slaughtering in the working environment.

Electrical stunning is used to capture crocodiles to perform routine management procedures. It is essential from a welfare point that electrical stunning must cause unconsciousness in animals. However, there is no information of whether or not electrical stunning causes unconsciousness in the Nile crocodile (Crocodylus niloticus). The purpose of the study was to assess brain activity before and after electrical stunning in crocodiles using a 5-channel referential electroencephalogram analysis to determine consciousness. Behavioural indicators and electroencephalogram recordings of 15 captive-bred crocodiles were captured and analysed using power spectral density analysis immediately before and after stunning and then at 60 s intervals until 5 min post-stunning. A standardised stun of 170 Volts was applied for 5-7 s on the wetted neck. Unconsciousness was defined as a decrease in alpha wave power and increase in delta wave power. Three of the electroencephalograms could not be assessed. Unconsciousness was identified in 6 out of 12 crocodiles and lasted for an average for 120 s. An increase in electroencephalogram waveform amplitude and tonic-clonic seizure-like waveform activity and behaviour indicators were not reliable indicators of unconsciousness. Further research should be focused on improving the efficiency and reliability of electrical stunning.

Taenia saginata is a zoonotic tapeworm of humans with bovines as its intermediate host (bovine cysticercosis). Traditional meat inspection is the main measure to identify the larval stage in carcasses and prevent human infection, but has a notoriously low sensitivity, especially in low prevalence settings. The legislation in multiple African countries mandates an incision in both triceps brachii muscles to detect the parasite as part of the normal post-mortem inspection, but this has an economic cost and is not universally mandated in other countries. The primary aim of this study was to investigate the epidemiology of bovine cysticercosis at an export abattoir in South Africa and determine the validity and cost of the triceps incision. Risk factors were investigated, and the effect of additional heart incisions on the current inspection. Four incisions were made into the heart in addition to the normal post-mortem inspection in 3353 carcasses. The proportion of positive animals with and without the cardiac and triceps incisions were compared using McNemar's chi-square tests, while risk factors were assessed using binary logistic regression. The economic impact of the triceps incision was estimated using a stochastic economic cost model. Thirty-three positive carcasses were identified for an apparent prevalence of 0.98 % (95 %CI, 0.69-1.36 %), while the true prevalence was estimated at 6.6 % (95 %CI, 4.3-8.8 %). All cysts were confirmed as T. saginata on histopathology with 70 % (95 %CI, 53-83 %) located in the heart. The additional cardiac incisions resulted in the detection of significantly more cases compared to the normal inspection method prevalence of 0.72 % (95 %CI, 0.47-1.05 %; P < 0.001). The apparent prevalence of T. saginata when omitting the triceps incision was not significantly lower compared to the prevalence when included in the inspection (P = 0.480). External feedlots (OR= 4.17, 95 %CI: 2.04-8.54, P < 0.001) and older animals (OR=3.90, 95 %CI: 1.17-13.03, P = 0.027) were associated with a positive detection. The current median annual financial cost to the food business operator from the triceps incision was estimated at $30387 (95 %CI: $0-$130696), with the proportion of deboned meat exported identified as the most important factor affecting cost (Spearman's rho=0.853). The identification of risk factors could aid in the development of a more effective risk-based inspection system. The current inspection should be modified to increase exposure of the heart and remove the triceps incisions. The latter should especially be considered given the minimal contribution to cysticercosis detection, the unsupported requirement for its inclusion specifically in Africa, and its economic impact, especially as beef exports increase.

Inadequate cleaning and disinfection (C&D) in slaughterhouses can cause bacterial contamination of meat, resulting in foodborne disease and reduced meat quality. Different methods for monitoring the efficacy of C&D procedures are available, but few studies have assessed their reliability. This study examined C&D efficacy in slaughterhouses and evaluated the diagnostic performance of methods for measuring surface hygiene. One red meat and one poultry slaughterhouse in Sweden were each visited on six occasions before and six occasions after C&D. Sampling points were sampled with: swabbing and plating for total aerobic bacteria (TAB) and Enterobacterales (EB); dipslides for total viable count; and ATP-bioluminescence tests. To evaluate the diagnostic performance of the dipslide and ATP-bioluminescence methods, the results were compared with (TAB) as a reference. In total, 626 samples were collected. For the majority of samples, TAB was lower after than before C&D and EB were mainly detected before C&D, indicating C&D efficacy. Greater reductions in mean TAB were observed in processing areas (2.2 and 2.8 log CFU/100 cm2 in red meat and poultry slaughterhouse, respectively) than in slaughter areas (1.3 log CFU/100 cm2 in both slaughterhouses). Approximately half of all samples were assessed as non acceptably clean (52% for red meat and 46% for poultry slaughterhouse) according to previously published thresholds. Critical food contact surfaces that were insufficiently cleaned and disinfected were plucking fingers, shackles, and a post-dehairing table. Cleaning and disinfection of drains and floors were inadequate. The ATP-bioluminescence method showed low specificity compared with the reference (TAB) in both the red meat (0.30) and poultry slaughterhouses (0.64). The sensitivity of dipslides was low (0.26) in the red meat slaughterhouse compared with TAB. A combination of ATP-bioluminescence and dipslides could provide more accurate estimates of C&D efficacy.

In 2020, the Danish competent authority (CA) raised questions about the Salmonella exposure risk to consumers from bile-contaminated pig carcasses. This study assesses this risk related to sow carcasses. A total of 300 bile samples were collected aseptically at a large Danish sow abattoir. A selective method and medium, RAPID'Salmonella, was used to detect Salmonella and other family members. MALDI-TOF was used to identify bacterial species. None of the 300 bile samples were positive for Salmonella. A simulation model was set up to estimate the number of bile-contaminated carcasses with Salmonella that would go unnoticed on the market if the food business operator (FBO) had full responsibility for handling bile contamination. Data originated from our own and previous data collection, the Danish Meat Inspection Database and expert opinion from the CA and FBO. The FBO-scenario showed that a median of one (90% C.I. 0 - 7) carcasses carrying bile contamination with Salmonella would go unnoticed out of 281,000 in one year, whereas the CA-scenario showed a median of 14 (90% C.I. 1 - 63) such carcasses. Hence, the role of bile contamination on sow carcasses for the exposure of consumers to Salmonella seems to be negligible. Still, the FBO should be encouraged to prevent bile contamination.

International travel and the globalization of food supplies have increased the risk of epidemic foodborne infections. Salmonella strains, particularly non-typhoidal Salmonella (NTS), are major zoonotic pathogens responsible for gastrointestinal diseases worldwide. In this study, the prevalence and Salmonella contamination in pigs/carcasses throughout the South Korean pig supply chain and the associated risk factors were evaluated using Systematic reviews and meta-analyses (SRMA), and quantitative microbial risk assessment (QMRA). The prevalence of Salmonella in finishing pigs, which is one of the major starting inputs of the QMRA model was calculated through SRMA of studies conducted in south Korea in order to complement and enhance the robustness of the model. Our findings revealed that the pooled Salmonella prevalence in pigs was 4.15% with a 95% confidence interval (CI) of 2.56 to 6.66%. Considering the pig supply chain, the highest prevalence was detected in slaughterhouses (6.27% [95% CI: 3.36; 11.37]), followed by farms (4.16% [95% CI: 2.32; 7.35]) and meat stores (1.21% [95% CI: 0.42; 3.46]). The QMRA model predicted a 3.9% likelihood of Salmonella-free carcasses and a 96.1% probability of Salmonella-positive carcasses at the end of slaughter, with an average Salmonella concentration of 6.38 log CFU/carcass (95% CI: 5.17; 7.28). This corresponds to an average contamination of 1.23 log CFU/g (95% CI: 0.37; 2.48) of pork meat. Across the pig supply chain, the highest Salmonella contamination was predicted after transport and lairage, with an average concentration of 8 log CFU/pig (95% CI: 7.15; 8.42). Sensitivity analysis indicated that Salmonella fecal shedding (r = 0.68) and Salmonella prevalence in finishing pigs (r = 0.39) at pre-harvest were the most significant factors associated with Salmonella contamination in pork carcasses. Although disinfection and sanitation interventions along the slaughter line can reduce contamination levels to some extent, effective measures should be taken to reduce Salmonella prevalence at the farm level to improve the safety of pork consumption.

This study aimed to investigate the associations between severe ear, tail, and skin lesions, hernias, bursitis, and rectal prolapses and meat inspection finding in slaughter pigs, including carcass weight and financial implications associated with carcass condemnations at batch level. Data were collected from 13,296 pigs from 116 batches from a single abattoir. Spearman's correlation coefficients were calculated to analyze the degree of association between the prevalence of welfare issues and condemnation findings. The association between batch-level results of carcass weight, batch size, and the prevalence of welfare issues was analyzed using generalized linear mixed models. The prevalence of tail lesions was significantly associated with both entire (r = 0.224; p = 0.0432) and partial (r = 0.276; p = 0.0120) carcass condemnation. Batches with pigs affected by more than one welfare issue were 9.9 kg lighter than those without welfare issues (p < 0.05), which was equivalent to a potential loss of €11.28 per pig. Our findings indicate that ante-mortem inspection could be useful to predict post-mortem findings at batch level and that welfare issues in pigs represent a financial loss to producers, as they are paid on a per kg basis and have tight margins.

The work aims to study the economical losses of the condemnation of bovine and buffalo carcasses, in order to estimate the losses in animals slaughtered in Santarém-Pará, Brazil, between 2016 and 2018, with data obtained from the Municipal Department of Agriculture and Fisheries. Sex, age, origin, total number of animals slaughtered and causes of condemnation of carcasses were considered. All analyzes were performed in RStudio version 1.1.463. In this study, 71,277 bovine carcasses and 2,016 buffalo carcasses were inspected, of which 300 bovine and 71 buffalo were condemned. The highest prevalence of causes of condemnation in cattle was recorded for brucellosis (0.0020%) and tuberculosis (0.0019%). In buffaloes, tuberculosis (0.0307%) peritonitis (0,0019%) were the main causes of condemnations. Economical losses were more evident in females, for both species. The projection of economical losses related to the condemnation of carcasses showed a sharp growth for the next three years, if the average growth remains constant. The biggest projected loss was for bovine females, with an accumulated projection of $ 5,451.44. The smallest estimated loss was for buffalo males, projected at more than thirty-two thousand reais. The most important causes of condemnation report the diseases brucellosis and tuberculosis, as the ones with the greatest impact. In the buffalo species this was even more accentuated, even though the number of buffaloes slaughtered is more than 35 times smaller than the number of cattle.

BACKGROUND: Cystic echinococcosis is a neglected disease responsible for millions of infections in both animals and humans. The toll on the global economy is estimated to be in the billions of United States dollars. Although much effort has been made by public health authorities to curb the rise in new infections, the occurrence of cystic echinococcosis is still being noted, especially in low-income countries. This study was conducted in the Matabeleland region of Zimbabwe to determine the incidence of cystic echinococcosis in bovines. METHODS: Meat inspection records from 2011 through 2021 kept at licensed abattoirs in the Matabeleland region were used to generate annual total figures of bovines slaughtered in the region, together with the corresponding number of organs condemned due to cystic echinococcosis. Descriptive statistics showing the overall incidence in each year, incidence per district, and cysts in infected organs were expressed as a percentage of the total number of cattle slaughtered per category. RESULTS: Bulawayo had the highest occurrence of cystic echinococcosis (1.359%, 95% CI, 1.254-1.412), followed by Matabeleland South (0.914%, 95% CI, 0.886-0.929) and then Matabeleland North (0.848%, 95% CI 0.818-0.863) provinces. The Bulilima, Bulawayo, and Bubi districts had the highest occurrences of cystic echinococcosis at 1.749%, 1.358%, and 1.286%, respectively. The lung was the most frequently affected organ (n = 7155; at 0.854%; and 95% CI, 0.8334-0.874%, followed by the liver (0.053%; 95% CI, 0.048-0.058%). The total direct economic loss due to organ condemnation during the study period was US$ 24,812.43.

Anaerobic digestion (AD) has been a widely tested alternative for the management and valorization of wastewater from the animal slaughter process. However, the integration of AD in slaughterhouses depends on technical and economic aspects. In Colombian slaughterhouses AD integration is limited by the availability of land. In the present study, a techno-economic evaluation of the AD of offal wastewater (OWW) stream in a laboratory scale mesophilic tubular digester was carried out. The digester was operated at organic loading rates (OLR) of 0.28, 0.50, 1.0, 1.5 and 2.0 kg VS/m3 d. Boilers and a CHP (combined heat and power) system were considered for energy integration of biogas. For the economic study, the cost structure of a Colombian slaughterhouse was considered. The AD of OWW at 2.0 kg VS/m3 d OLR was unstable with risk of inhibition. Increasing the OLR from 0.28 to 1.5 kg VS/m3 d caused a reduction in the specific biogas production (SBP) from 0.474 to 0.069 m3/kg VS However, the biogas production rate (BPR) remained constant at around 0.105 m3/m3dig d for OLRs > 0.28 kg VSm3 d. Therefore, OWW anaerobic digestion in low-cost mesophilic biogas plants is technically feasible with OLRs between 0.28 and 1.5 kg VS/m3 d. The implementation of boilers is economically favorable for OLR ≥ 1.0 kg VS/m3 d. Nevertheless, feasibility is very sensitive to variations in the cost structure. The implementation of CHP was feasible in the range of OLRs evaluated and its viability is not affected by changes in assumed costs.

Slaughterhouse and wet market wastes are pollutants that have been always neglected by society. According to the Food and Agriculture Organization of the United Nations, more than three billion and nineteen million livestock were consumed worldwide in 2018, which reflects the vast amount and the broad spectrum of the biowastes generated. Slaughterhouse biowastes are a significant volume of biohazards that poses a high risk of contamination to the environment, an outbreak of diseases, and insecure food safety. This work comprehensively reviewed existing biowaste disposal practices and revealed the limitations of technological advancements to eradicate the threat of possible harmful infectious agents from these wastes. Policies, including strict supervision and uniform minimum hygienic regulations at all raw food processing factories, should therefore be tightened to ensure the protection of the food supply. The vast quantity of biowastes also offers a zero-waste potential for a circular economy, but the incorporation of biowaste recycling, including composting, anaerobic digestion, and thermal treatment, nevertheless remains challenging.

This study investigated the prevalence of bovine liver condemnation due to Fasciola hepatica in abattoirs and its influence on livestock productivity. It also explored risk factors such as season, breed, age and sex in the states of Puebla and Veracruz, Mexico. A total of 5281 cattle livers were inspected in two abattoirs. The overall prevalence of the parasite in cattle throughout 2020 was 24.9% (1313 out of 5281). The highest prevalence was found in Veracruz (28.5%; tropical climate), followed by Puebla (18.4%; temperate climate). The prevalence of fluke infection during the wet season was 19.0% and 25.8% in the states of Puebla and Veracruz, respectively; during the dry season, this was 18.0% and 30.2% respectively. The annual loss caused by condemnation of the liver for both abattoirs was estimated to be US$7502. Using multivariate logistic regression analysis, two models were constructed for potential association with the prevalence of condemned livers, using season, breed, age and sex as risk factors. The results indicate that season, age and sex were significantly associated with an increased risk of parasitic infection. Cattle age was the variable most strongly associated with F. hepatica infection, with the highest prevalence in cattle over three years of age as compared to younger animals, both in the states of Veracruz with a tropical climate (OR 6.443; 95% CI: 4.487-9.251) and in Puebla with a temperate climate (OR 2.854; 95% CI: 1.531-5.321). The results indicate that different factors were significantly associated with the prevalence of condemned livers, and it highlights the importance of continuous monitoring programmes for F. hepatica infection and preventing economic losses in cattle production.

Objective: This study was conducted to determine the period prevalence of hydatid cysts isolated from the livers of cattle slaughtered at a slaughterhouse in Konya. Methods: For this purpose, 49,545 cattle were slaughtered and examined for the presence of hydatid cysts in the liver. The study was conducted between June 01, 2018, and May 31, 2019. Results: The highest prevalence of hydatid cysts was observed in autumn 10.83% followed by spring 4.41%, winter 2.90%, and summer 2.66%, with an overall prevalence of 3.93%. Considering the month wise prevalence of hydatid cyst, the highest infection rate was detected in September (7.87%), June (7.16%) and August (7.14%), while the lowest prevalence was observed in February (2.72%) and January (2.83%). In gender-wise investigation, highest prevalence was observed in females (24.65%) during the summer and 18.45% inthe spring. In male animals, the infection rate was very low compared with females. However, the highest prevalence in males was observed throughout the year in autumn (2.36%) and the lowest prevalence in winter (1.68%). The highest prevalence was found among female cattle in heifers in winter (6.52%) and cows in summer (27.52%). Conclusion: The overall economic losses of 56,434 USD were estimated due to discarded hydatid cyst-infected livers during the study period. This study enlightens the prevalence and economic significance of hydatidosis in Konya.

The composting process is an option for acceptable environmental management of cattle slaughterhouse by-products. The goals of this article were (i) to make a low-cost inoculum using popular supermarket ingredients and microorganisms that are already present in the composting environment, and (ii) to compare the efficiency of the composting process with and without the application of formulated inoculum. Initially, a consortium of microorganisms already present in the composting environment (Saccharomyces cerevisiae, Bacillus subtilis, and Rhodopseudomonas palustris) was prepared in a low-cost culture medium for use as an inoculum for the composting process. The composting process with the addition of the inoculum was more efficient than the composting process without the inoculum, in terms of both the chemical composition and the process efficiency, but mainly in relation to the time required for composting, with the mean times for decay of 50% of the windrows' temperature (taking in to account the difference between internal and external windrow temperatures) being 96 days without inoculum and 65 days with inoculum. Thus, inoculum made with low-cost supermarket products reduced the composting time and yielded compost of better quality.

To ensure animal welfare at slaughter, rapid stunning is required to render the animal deeply unconscious. In cattle, captive-bolt stunners are typically used for this purpose. However, with regard to their impact force and maximum length of approximately 120 mm, such captive-bolt stunners are not suitable for stunning water buffaloes due to anatomical characteristics of the skull. In water buffaloes the bone layer is thicker and the distance from the point of attachment of the captive-bolt stunner to the relevant brain region is longer. For this reason, a special bullet-shooting stunner was developed, which is similar in size and handling to a standard captive-bolt stunner, but instead of a bolt, it fires a bullet. Actually, even two bullets can be loaded so that a follow-up shot can be fired immediately if necessary. In this study, the bullet-shooting stunner was tested using two different types of hunting ammunition for stunning water buffaloes during regular slaughter.

BACKGROUND: Ex vivo lung perfusion (EVLP), is a platform that allows simultaneous testing and treatment of the lungs. However, use of EVLP is costly and requires access to lab animals and accompanying facilities. To increase the use of EVLP for research, we developed a method to perform EVLP using abattoir procured lungs. Furthermore, we were also able to significantly decrease costs. METHODS: Six pair of lungs were procured from abattoir sheep. The lungs were then flushed and stored in ice for 3 h. A low-flow (20% of cardiac output) approach, a tidal volume of 6 ml/kg bodyweight and total perfusion time of 3 h were chosen. Perfusion fluids and circuits were self-made. Lung biopsies, perfusate collection, respiratory values, circulatory pressures were recorded and hourly blood gas analyses were performed. RESULTS: Mean pO2 remained stable from 60 min (49.3 ± 7.1 kPa) to 180 min (51.5 kPa ± 8.0), p = 0.66. Pulmonary artery pressure remained ≤15 mm Hg and the left atrial pressure remained between 3 and 5 mm Hg and peak respiratory pressures ≤20 cmH2 O. Lactate dehydrogenase increased from start (96.3 ± 56.4 U/L) to the end of perfusion (315.8 ± 85.0 U/L), p < 0.05. No difference was observed in ATP between procurement and post-EVLP, 129.7 ± 37.4 µmol/g protein to 132.0 ± 23.4 µmol/g, p = 0.92. CONCLUSIONS: Sheep lungs, acquired from an abattoir, can be ex vivo perfused under similar conditions as lab animal lungs with similar results regarding e.g., oxygenation and ATP restoration. Furthermore, costs can be significantly reduced by making use of this abattoir model. By increasing accessibility and lowering costs for experiments using lung perfusion, more results may be achieved in the field of lung diseases.
