RESUMO

A new objective and standardized method for early determination of firmness of the intact pork belly in a research environment is described, and compared to the existing bar-bend method. The belly characteristics that contribute to the outcome of each method, and the relationship between the two methods are identified. •Original method requires a ribbed pork belly, and several minutes relaxation time.•New method provides an immediate measurement on an intact belly.•Advantages include early, rather than late, application in the fabrication process; rapid measurement; standardization; measurements minimally affected by animal length or belly length.

This study investigated the effects of a novel steak fabrication method, involving removal of both subcutaneous and intermuscular fats between the longissimus thoracis (LT) and spinalis dorsi (SD) muscles before cooking, on beef ribeye steak palatability and calorie content. Canada AA (n = 10) and AAA (n = 10) ribeyes were fabricated into steaks either with (fat-on) or without (fat-off) subcutaneous and intermuscular fats. Fat-on steaks had shorter cooking times and lower cooking losses than fat-off steaks (P < 0.001), regardless of quality grade. There were treatment × quality grade interactions for initial (P < 0.01) and sustainable juiciness (P < 0.05) of the LT samples and initial juiciness (P < 0.05) of the SD samples, with the fat-on AA samples being more juicy than the fat-off AA samples, but the AAA treatments were not different from each other. Regardless of quality grade, fewer panelist responses indicated livery flavour (P < 0.05) for fat-on compared to fat-off LT samples. Regardless of fat-on/fat-off treatment, AA compared to AAA samples had more responses for bloody/serumy (P < 0.01) and unidentified off-flavours (P < 0.05) in LT samples. However, AAA samples had more responses for metallic off-flavour in LT (P = 0.059) and SD (P < 0.05). There were no differences in calorie content between fat-on compared to fat-off steaks (P > 0.1) regardless of quality grade and muscle type, or between AA and AAA steaks regardless of cooking with fat-on or off (P > 0.1). Maintaining the subcutaneous and intermuscular fats while cooking will improve ribeye steak palatability without increasing calorie content, especially for leaner steaks.

This study examined the effects of constant current electrical stimulation (CCES) compared to constant voltage electrical stimulation (CVES), when applied within the same beef carcass (n = 79), on longissimus thoracis et lumborum (LTL) quality and palatability. There was a stimulation method × time interaction for pH, with CCES reducing the 3 h post-mortem pH, but increasing the 72 h post-mortem pH compared to CVES (P < 0.001). The CCES decreased the meat subjective Japanese Meat Grading Agency (JMGA) colour scores (P < 0.05) and increased the objective L⁎ (P < 0.01), a⁎ (P < 0.05) and b⁎ (P < 0.05) colour values at 3 d post-mortem and L⁎ and b⁎ values (P < 0.05) during retail display compared to CVES, although the objective values from both stimulation methods were above established consumer acceptability thresholds. Additionally, CCES reduced the purge (P < 0.05) and drip (P < 0.01) losses, and tended to reduce shear force values (P = 0.089) compared to CVES, although these did not translate into differences in juiciness or tenderness evaluated by trained panelists (P > 0.1). Regarding flavour, the CCES meat had greater bloody/serumy flavour (P < 0.05) and corn aroma (P < 0.05), less unidentified aroma (P < 0.05), and tended to have greater corn flavour (P = 0.077) and less barnyard aroma (P = 0.079) than CVES meat. There were also increased concentrations of flavour-related volatile compounds including 2-methyl-butanal, 3-methyl-butanal and 2-5-dimethyl pyrazine levels (P < 0.05) with CCES. Overall, the CCES system slightly improved meat quality and flavour compared to CVES when applied to the same beef carcasses. Further consumer studies would be warranted to determine whether these differences translate into more acceptable meat.

This study evaluated the effects of a constant current electrical stimulation (CCES) system and hormonal growth-promoting (HGP) implants on the quality and palatability of the longissimus thoracis et lumborum (LTL) from yearling-finished steers. The experiment used a total of 46 Angus cross steers, which were either non-implanted (n = 20) or implanted with trenbolone acetate and estradiol benzoate (n = 26). The CCES was applied to one side of each carcass during the slaughter process, whereas the other side remained unstimulated. Regardless of the application of HGP implants, the CCES reduced pH at 3 and 72 h post-mortem and shear force at all ageing times (P < 0.05), improved colour at 72 h post-mortem and during the retail display (P < 0.05), increased initial and overall tenderness (P < 0.01), and decreased the amount of perceived connective tissue and the proportion of trained panelists detecting spongy texture (P < 0.05) compared to meat from unstimulated carcass sides. Although CCES increased meat purge losses and reduced moisture content (P < 0.05), this did not affect meat juiciness (P > 0.10). CCES interacted with HGP to prevent increase in drip loss (P > 0.10), increase frequency of panelists detecting bloody/serumy flavour and typical texture, and reduce the proportion of panelists detecting rubbery texture in meat (P < 0.05). Regardless of stimulation treatment, meat from implanted animals had a more pronounced pH decline at 72 h post-mortem (P < 0.05) and a higher proportion of panelists finding no off-flavours (P < 0.05) or bloody/serumy flavour (P < 0.01) than non-implanted cattle. The CCES system tested in this study improved LTL quality and palatability of heavier beef carcasses.

A series of studies was performed to develop and test a method adaptable for early automated sorting of pork bellies based on firmness. Flattened and non-flattened, bone-in, skin-on primal bellies were fed skin-down, caudal end foremost on to a horizontal (0°) or raised (30°) conveyor with an adjustable nosebar (ø = 14 mm). The drop angle, after 24 cm of belly had passed the nosebar, was strongly correlated with subjective floppiness (r = 0.77-0.82; P ≤ .0001) and moderately correlated with fat thicknesses (r = 0.47-0.67; P ≤ .0001). On a 0° conveyor, drop angle relationships were generally weakest for non-flattened bellies, but moderate and similar for flattened bellies at 0°, as well as for both flattened and non-flattened bellies at 30°. The method appears to show promise for commercial production use. Further work is required on the impact of belt speed, firmness categorization, and the relationship to the current bar bend research method.

The efficacy of thermal activation of residual proteolytic enzymes on shear force and deformation of 72 beef supraspinatus (SS) and rectus femoris (RF) muscles was tested using multi-stage sous-vide cooking (M-SV; 1 h at 39 °C, 1 h at 49 °C, 4 h at 59 °C), single-stage sous-vide cooking (S-SV; 4 h at 59 °C), and waterbath cooking (22 min at 70 °C, to 59 °C). Two storage conditions (1 week at 2 °C; 2 weeks at -1.5 °C) followed, then meat was reheated to and tested at 55 °C. Shear force decreased by 17-21% with S-SV (P < 0.001) and appeared to affect both myofibrillar and collagen components, likely through heat activation of cathepsin B & L and 20S proteasome. A further 5-6% increase was realized with M-SV (P: SS = 0.006, RF = 0.12) affecting primarily the myofibrillar component, likely from calpain-2 activation. The degree of deformation increased with sous-vide cooking in general (P < 0.001). No meaningful effects of post-cooking storage were found (P > 0.05).

Eye of round primal cuts of beef were injected with brines containing a dye and Listeria innocua. The amounts of brine in portions of meat were determined from the concentrations of dye in the tissues, and the numbers of L. innocua in the tissues were determined from the numbers of colonies recovered on hydrophobic grid membrane filters incubated on a selective agar. Portions of meat from primals injected with brine after extensive mechanical tenderizing yielded L. innocua at numbers that would be expected from the amounts of brine in the meat. However, portions of meat from primals injected with brine without or before mechanical tenderizing yielded only about 10% of the expected numbers of L. innocua. The numbers of L. innocua recovered from injected meat that was not tenderized, relative to the amount of brine retained by the meat, declined with decreasing brine pressure and increasing strokes per minute of the needle head. When brine was injected at about 5% with low brine pressure and high head speed, the numbers of L. innocua retained in the meat were <1% of the expected numbers. When injected meat was examined microscopically, L. innocua were observed only between the muscle fibres in meat that was not tenderized before injection, but between fibres and in lacunae in tissue damaged by mechanical tenderizing before injection. The distributions of brine and bacteria in injected primals apparently did not alter substantially during storage in vacuum packs, at 2°C, for 2 weeks.

We explored various dimensional and compositional factors that can influence the perception of pork belly firmness. Bellies from 198 pigs of three different genotypes, two sexes, two slaughter weights and three different diets were recovered and belly firmness was assessed using the belly-flop angle and a 5-point scale subjective measurement. Dimensional and compositional factors were recorded on intact and sheet-ribbed bellies. Subjective belly score was negatively correlated with belly-flop angle (r=-0.89). Regression analysis accounted for 77 and 83% of the variability in subjective belly firmness and belly-flop angle measurement, respectively. Belly length, weight and width influenced both measures of belly firmness, but these effects were more important for the belly-flop angle. After correcting flop angle using belly length, the effect of belly weight disappeared and the effect of other traits was more like those observed for subjective scoring. Hence, undue effect of belly length should be corrected for if this set-up is to be implemented in commercial plants.

A Computer Vision System prototype for grading pork carcasses was developed at the Lacombe Research System. The system consists of two components: ultrasound imaging to scan a cross-section of the loin muscle and video imaging to capture two-dimensional (2D) and three-dimensional (3D) images of the carcass. For each of the 241 carcasses (114 barrows and 127 gilts), salable meat yield was determined from a full cutout. Linear, two- and three-dimensional, angular and curvature measurements and carcass volume were derived from each image. Muscle area and fat thickness (7 cm off the mid-line) measured by ultrasound at the next to last rib site, together with 2D and 3D measurements provided the most accurate model for estimating salable meat yield (R(2)=0.82 and RSD=1.68). Models incorporating fat thickness and muscle depth measured at the Canadian grading site (3/4 last rib, 7 cm off the mid-line) with the Destron PG-100 probe, had the lowest R(2) and highest residual standard deviation (RSD) values (R(2)=0.66 and RSD=2.15). Cross-validation demonstrated the reliability and stability of the models; hence conferring them good industry applicability. The Lacombe Computer Vision System prototype appears to offer a marked improvement over probes currently used by the Canadian pork industry.

The impact of using incorrect lighting while subjectively scoring pork colour with subjective standards (Japanese, Canadian, and Kodak grey) was explored. Lightness was more important than a good colour match between standards and meat. Subjective and image-based automated scoring with Canadian standards were correlated at 0.71-0.77 (P < 0.001) with significant differences in scale distribution (D = 0.14-0.46; P < 0.002), primarily with moderately dark meat. Automated scoring on full colour and greyscale images were strongly related (r = 0.83, P < 0.001) and showed matching score distributions when whole scores were used. Tracking automated colour categorization during blooming showed very good potential for reliable categorization after 1 min exposure to air for most meat colours, indicating that reliable automated on-line sorting of pork for colour is easily within reach.
