The purpose of this study was to propose a bicompartmental nonlinear model and to identify the best-performing model between the proposed model and the bicompartmental logistic (BL) mode regarding the quality of fit to the curve of cumulative gas production (CGP) using corn silage, sunflower, and their mixtures. Gas production was measured 2, 3, 4, 6, 8, 9, 10, 12, 15, 19, 24, 30, 36, 48, 72, and 96 h after beginning the in vitro fermentation process. The generated data were used to generate the parameters of each model tested using the stats package of the R computational tool version 4.0.4. The mathematical models were subjected to the following selection criteria: the adjusted coefficient of determination (Raj.), residual mean square (RMS), mean absolute deviation (MAD), and Akaike information criterion (AIC). It was demonstrated that the proposed model had better performance with a high Raj., and lower values of RMS, AIC, and MAD than the bicompartmental logistic model for the prediction of the parameters of cumulative gas production (CGP), per to present a superior fit in the set of criteria according to the methodology and conditions in which the present study was developed.(AU)
No presente trabalho, com silagem de milho, girassol e suas misturas, objetivou-se propor um modelo não linear bicompartimental e identificar entre o modelo proposto e Logístico Bicompartimental (LB), aquele que apresenta maior qualidade de ajuste à curva de cinética de produção cumulativa de gases (PCG). A leitura da produção de gás foi realizada nos tempos 2, 3, 4, 6, 8, 9, 10, 12, 15, 19, 24, 30, 36, 48, 72 e 96 horas, após o início do processo de fermentação in vitro. Os dados gerados foram utilizados para geração dos parâmetros de cada modelo testado com auxílio do pacote stats da ferramenta computacional R versão 4.0.4. Os modelos matemáticos foram submetidos aos seguintes critérios de seleção o coeficiente de determinação ajustado (Raj.), quadrado médio do resíduo (QMR), desvio médio absoluto (DMA) e o critério de informação de Akaike (AIC). Foi demonstrado que o modelo proposto teve melhor desempenho com altos Raj., e menores valores de QMR, AIC e DMA, por apresentar um ajustamento superior no conjunto dos critérios em comparação com o modelo logístico bicompartimental para a predição dos parâmetros de produção cumulativa de gases (PCG) de acordo com a metodologia e condições em que foi desenvolvido o presente estudo.(AU)

ABSTRACT Fatty acid methyl esters (FAMEs) were obtained from vegetable oils of soybean, corn and sunflower. The current study was focused on evaluating the antifungal activity of FAMEs mainly against Paracoccidioides spp., as well as testing the interaction of these compounds with commercial antifungal drugs and also their antioxidant potential. FAMEs presented small IC50 values (1.86-9.42 μg/mL). All three FAMEs tested showed antifungal activity against isolates of Paracoccidioides spp. with MIC values ranging from 15.6-500 µg/mL. Sunflower FAMEs exhibited antifungal activity that extended also to other genera, with an MIC of 15.6 μg/mL against Candida glabrata and C. krusei and 31.2 μg/mL against C. parapsilosis. FAMEs exhibited a synergetic effect with itraconazole. The antifungal activity of the FAMEs against isolates of Paracoccidioides spp. is likely due to the presence of methyl linoleate, the major compound present in all three FAMEs. The results obtained indicate the potential of FAMEs as sources for antifungal and antioxidant activity.

ABSTRACT The purpose of this study was to develop and improve protein concentration techniques for two industrial by-products with the potential for use in fish feed. In particular, we chemically characterized crambe meal and sunflower meal and their protein concentrates. Three different protein concentration methods were tested: isoelectric pH (pHi), acid pH and alkaline pH. For crambe and sunflower meals extraction using the pHi method was most efficient in terms of protein yield and crude protein content in the concentrates; this method also increased lysine and methionine content in the concentrates. The water holding capacity of the sunflower protein concentrate was greater than that of the crambe protein concentrate. The crambe protein concentrate had a foam-formation capacity of 15%, which stabilized at 6% after 90 minutes. The protein concentration method also reduced total phenolic content by approximately 50% in the concentrates compared with the meals. Therefore, we conclude that protein concentration using the pHi method is the most efficient technique for crambe and sunflower meals, and the use of this technique can decrease total phenolic compounds while improving meal quality for fish feeding.

The frying by immersion is a widely used cooking process and it improves the food texture and flavor. This study analyzed the initial thermal oxidation in five edible vegetable oils used for frying. Oils samples were heated twice for 30 minutes, at 180 C and then at 240 C simulating the domestic stoves temperatures. The oils decomposition temperatures were determined by TG, being all of them > 250 C. The FA profile was analyzed by GC-FID and a slight decrease of UFA was found in corn and soybean oils. In canola, olive and sunflower oils, UFA was stable after heating treatment. Minor FA decomposition was found in canola oil, and followed by corn, olive, sunflower and soybean oils. NIR spectroscopy analyzes resulted in an extensive bands overlapping. The spectra were modeled by PCA and the oils were classified into two groups: fresh oil and heated oil, mainly by differing in 1900 nm region, associated with the carboxyl signal decrease, which might be related to the initial FA degradation in samples. It could partially understand what occurs to the vegetable oil in the beginning of its thermo-decomposition. These information are useful to consumers, food industry and health surveillance agency.
A fritura por imersão é um processo de cocção utilizado pela inclusão de textura e sabor aos alimentos. Foi analisada a oxidação térmica inicial de cinco óleos vegetais comestíveis utilizados para fritura de imersão. Amostras de óleos foram aquecidas duas vezes por 30 minutos, a 180 ºC e depois a 240 ºC, simulando-se as temperaturas de fogões domésticos. As temperaturas de decomposição dos óleos foram determinadas por TG, sendo > 250 ºC. O perfil de FA foi analisado por GC-FID, detectando-se pequeno decréscimo dos UFA nos óleos de milho e soja. Nos óleos de canola, oliva e girassol, os UFA foram estáveis após o tratamento térmico. A menor decomposição dos FA foi detectado no óleo de canola, seguido de milho, oliva, soja e girassol. Análises por espectroscopia NIR resultaram em grande sobreposição das bandas. Os espectros foram modelados por PCA, classificando-se os óleos em dois grupos: óleo fresco e óleo aquecido, principalmente pelas diferenças na região de 1900 nm, relacionadas ao decréscimo do sinal de carboxilas, e associadas à degradação inicial dos FA nas amostras. Ainda que parcialmente, pode-se entender o que ocorre com os óleos vegetais no início de termo-decomposição, abrangências que são úteis para consumidores, indústria alimentícia e órgão de vigilância sanitária.

El objetivo del estudio fue conocer la composición de los ácidos grasos de cinco recetas culinarias de consumo habitual en Venezuela, preparadas con diferentes grasas vegetales, una de las cuales es la oleína de palma. Las comidas consideradas fueron el asado criollo, pabellón, revoltillo de huevos, sardinas fritas y lengua en salsa. Las preparaciones fueron analizadas utilizando el método de cromatografía en fase gas-líquida. Los resultados sugieren que la composición de los menúes en término de ácidos grasos es proporcional a la clase de aceite utilizado, apreciándose que las comidas preparadas con 100 por ciento oleína presentaron mayor proporción de ácido palmítico (C16:O), respecto a sus homólogos preparados con el aceite control y la mezcla al 50 por ciento de oleína. La diferencia con respecto al ácido linoleico (C18:2,n-6) resultó estadísticamente significativa cuando se compararon los menúes elaborados con el aceite control y los preparados con 100 por ciento oleína. De acuerdo a los resultados obtenidos, es posible combinar oleaginosas para obtener grasas o aceite vegetal, para preparar alimentos con alto contenido de aceites como mayonesa y margarina
