RESUMEN

Meat from Holstein and crossbred organic and conventional dairy steers were evaluated and compared for fatty acid profiles, meat quality, sensory attributes, and consumer acceptance. Bull calves (n=49) were randomly assigned to 1 of 3 replicated groups: conventional (CONV), organic (ORG, pasture + concentrate), or grass-fed organic (GRS) and were born at the University of Minnesota West Central Research and Outreach Center (Morris, MN) between March and May 2011. The CONV steers (n=16) were fed a diet that contained 80% concentrate and 20% forage, and ORG steers (n=16) were fed a diet of organic corn, organic corn silage, and organic protein supplement. Furthermore, ORG steers consumed at least 30% of diet dry matter of high-quality organic pasture during the grazing season. The GRS steers (n=17) consumed 100% forage from pasture during the grazing season and high-quality hay or hay silage during the nongrazing season. The ORG steers had fat that was greater in oleic acid (C18:1) than the GRS and CONV steers (47.1, 36.1, and 39.9%, respectively). The GRS steers (21.9%) were lower for monounsaturated fat than the ORG (42.1%) and CONV (40.4%) steers. Furthermore, the GRS steers tended to have greater n-3 fat and had lower n-6 fat than the ORG and CONV steers. Consequently, the GRS (1.4%) steers had a lower n-6-to-n-3 fat ratio than the ORG (12.9%) and CONV (10.0%) steers. The GRS (2.6 kg) steers had steaks that were not different for Warner-Bratzler shear force than ORG (2.3 kg) steaks; however, the GRS steaks tended to have greater shear force than the CONV (2.0 kg) steaks. The 3 steer group had steaks that were not different for color brightness (L*; 0 = black and 100 = white) and yellowness/blueness (b*; positive values = yellow and negative values = blue) values; however, the GRS (10.5) steaks had lower redness/greenness (a*; positive values = red and negative values = green) values than CONV (14.5) steaks. For sensory attributes (0- to 120-point scale), no differences were observed for ORG (71.3) and CONV (69.2) steers for overall consumer liking of the beef; however, the GRS (56.3) steers had the lowest overall liking among beef consumers. The ORG (73.3) steers had greater flavor liking than the GRS (56.8) and CONV (69.2) steers. Conversely, the GRS (6.3) steers had the highest scores for off-flavor (0- to 20-point scale) compared with the ORG (3.9) and CONV (4.1) steers. The results of the current study suggest that a potential market may exist for organic grass-fed dairy steers in the United States, but quality and consistency of the beef needs to be improved.

RESUMEN

The objective of this study was to describe passive transfer of IgG and preweaning health in newborn calves fed a commercially available plasma-derived colostrum replacement (CR) product or maternal colostrum (MC). Twelve commercial Holstein dairy farms enrolled singleton newborn heifer calves to be fed fresh MC (n = 239 calves) or one dose of CR containing 125 g of Ig (n = 218 calves) as the first colostrum feeding. For 7 of these farms that routinely provided a second feeding of 1.9 L of MC to their calves 8 to 12 h after the first colostrum feeding, calves assigned to the CR treatment group were offered a second feeding consisting of 1.9 L of commercial milk replacer supplemented with one dose of a commercially available plasma-derived colostrum supplement, containing 45 g of Ig per dose, 8 to 12 h after the first colostrum feeding. A blood sample was collected from all calves between 1 to 8 d of age for serum IgG and total protein (TP) determination, and records of all treatment and mortality events were collected until weaning. Serum IgG and TP concentrations were significantly higher in calves fed MC (IgG = 14.8 +/- 7.0 mg/mL; TP = 5.5 +/- 0.7 g/dL) compared with calves fed CR (IgG = 5.8 +/- 3.2 mg/mL; TP = 4.6 +/- 0.5 g/dL). The proportion of calves with failure of passive transfer (serum IgG <10.0 mg/mL) was 28.0 and 93.1% in the MC and CR treatment groups, respectively. Though a trend was present, the proportion of calves treated for illness was not statistically different for calves fed MC (51.9%) vs. CR (59.6%). Total number of days treated per calf (MC = 1.7; CR = 2.0), treatment costs per calf (MC = $10.84; CR = $11.88), and proportion of calves dying (MC = 10.0%; CR = 12.4%) was not different between the 2 colostrum treatment groups. The mean serum total protein concentration predictive of successful passive transfer (serum IgG = 10 mg/mL) was 5.0 g/dL in calves fed MC or CR. Long-term follow-up of these calves (to maturity) is ongoing to describe the effects of feeding CR on longevity, productivity, risk for Johne's disease, and economics.

Batches (30-L) of first-milking bovine colostrum, inoculated with Mycoplasma bovis (10(8) cfu/mL), Listeria monocytogenes (10(6) cfu/mL), Escherichia coli O157:H7 (10(6) cfu/mL), Salmonella enteritidis (10(6) cfu/mL), and Mycobacterium avium subsp. paratuberculosis (Map; 10(3) cfu/mL), were heat-treated at 60 degrees C for 120 min in a commercial on-farm batch pasteurizer system. Duplicate 50-mL subsamples of colostrum were collected at 15-min intervals throughout the heat-treatment process for the purpose of bacterial culture and for measurement of IgG concentration (mg/mL) and antibody activity [log2(bovine viral diarrhea virus type 1 serum neutralization titer)]. Four replicate batches of colostrum were run for each of the 5 pathogens studied. There was no effect of heating moderate- to high-quality colostrum at 60 degrees C for at least 120 min on mean IgG concentration (pre = 60.5 mg/mL; post = 59.1 mg/mL). Similarly, there was no effect of heat-treatment on the mean log2 bovine viral diarrhea virus type 1 serum neutralization titer (pre = 12.3; post = 12.0). Viable M. bovis, L. monocytogenes, E. coli O157:H7, and S. enteritidis added to colostrum could not be detected after the colostrum was heat-treated at 60 degrees C for 30 min. Average bacteria counts showed that Map was not detected when batches were heated at 60 degrees C for 60 min. Although the authors believe that heat-treating colostrum at 60 degrees C for 60 min should be sufficient to eliminate Map from colostrum in most situations, further research is needed to determine whether these findings may be replicated, given that variability was observed in Map culture results.

The objective of this study was to identify the critical temperature, at or below which heat-treatment of bovine colostrum would produce no significant changes in viscosity, IgG concentration, or Ig activity. Results of preliminary work, using a Rapid Visco Analyzer (RVA) to heat 50-mL aliquots from 6 unique batches of bovine colostrum at 59, 60, 61, 62, and 63 degrees C, suggested that colostrum could be heated to 60 degrees C for up to 120 min without changing viscosity or IgG concentration. This finding was confirmed by heating 50-mL aliquots from 30 unique batches of colostrum in an RVA for 120 min at 60 and 63 degrees C. Heating colostrum to 63 degrees C resulted in an estimated 34% decrease in IgG concentration and 33% increase in viscosity. However, there was no difference in IgG concentration between preheat-treated (73.4 +/- 26.5 mg/mL) and post-heat-treated (74.5 +/- 24.3 mg/mL) samples after heating colostrum to 60 degrees C in an RVA for 120 min. Similarly, viscosity was unaffected after heating colostrum to 60 degrees C in an RVA for 120 min. High quality colostrum (> or =73.0 mg/mL) suffered greater losses of IgG and greater viscosity changes when heated to 63 degrees C than did moderate quality colostrum (<73.0 mg/mL). However, the effects of colostrum quality were minor if high quality colostrum was only heated to 60 degrees C. The results of a bovine viral diarrhea serum neutralization assay suggested that antibody activity was unchanged after heating colostrum to either 60 or 63 degrees C. However, these results were interpreted as being inconclusive due to a high proportion of missing results because of the congealing of many samples after heat treatment. The results of this study indicate that 50-mL volumes of bovine colostrum can be heat treated at 60 degrees C for up to 120 min in an RVA without affecting IgG concentration or viscosity.

Eight single-flow continuous culture fermenters were used to study the effects of the type of energy source on ruminal N utilization from high quality pasture. The four dietary treatments included high quality grass and legume pasture alone (50:50; wt/wt), pasture plus soybean hulls, pasture plus beet pulp, and pasture plus corn. Diets supplemented with additional sources of energy (soybean hulls, beet pulp, and corn) were isocaloric but differed in the type and rate of carbohydrate fermentation. Energy supplements constituted 45% of the total dietary dry matter and were fed twice daily at 12-h intervals in place of pasture, which is characteristic of grain feeding at milking when animals are in a grazing situation. Energy supplementation reduced pH, NH3 N flow, and NH3 N concentration and increased bacterial N flow (as a percentage of N intake). The supplementation of corn and soybean hulls resulted in the highest microbial N flow (as a percentage of N intake). Corn had a tendency to reduce fiber digestion because of excessively low NH3 N concentrations. Beet pulp was similar to corn in that it decreased NH3 N concentrations. Supplementation of soybean hulls resulted in a more synchronized fermentation, greater volatile fatty acid production, and greater fiber digestion. Nitrogen utilization by microbes was maximized by supplementation with soybean hulls or corn twice a day. With diets based on pasture, it may be more important to improve bacterial N flow and bacterial utilization of N than to maximize the efficiency of bacterial protein synthesis because better utilization of N by ruminal microorganisms results in higher bacterial N flow and higher fiber digestion.

Primiparous and multiparous sows received a single dietary supplement of either L-tyrosine, L-phenylalanine, or L-glutamate in their feed on the day after weaning and effects on various reproductive traits were evaluated in three experiments. In Exp. 1 and 2, sows received either 0 (control; n = 22 and 64, respectively) or 100 mg of L-tyrosine/kg BW (n = 24 and 62, respectively) on the day after weaning. In Exp. 1, days from weaning to estrus (5.5 +/- .3 vs 5.3 +/- .3 d) and ovulation rate (15.6 +/- .9 vs 15.6 +/- 1) were similar in control and tyrosine-supplemented sows. In Exp. 2, interval from weaning to estrus was extended (P < .01) in tyrosine-supplemented sows (6.4 +/- .5 d) compared with controls (4.5 +/- .5 d), but this was due to long return intervals in 7 of 62 tyrosine-supplemented sows. Total number of pigs born (10.2 +/- .4 vs 10.0 +/- .4) was similar in control and tyrosine-supplemented sows. In Exp. 3, sows received either no supplemental amino acids (n = 31) or their diet was supplemented with 100 mg/kg BW of either L-tyrosine (n = 31), L-phenylalanine (n = 33), or L-glutamate (n = 32). Neither days from weaning to estrus nor subsequent farrowing traits were altered in sows that received supplemental amino acids on the day after weaning. In conclusion, a single dietary supplementation of either tyrosine, phenylalanine, or glutamate to sows on the day after weaning failed to improve interval from weaning to estrus, ovulation rate, or litter traits at subsequent farrowing.

In vivo and in vitro 3 x 2 factorial experiments were conducted concurrently to evaluate the incorporation of 0, 15, or 30% sugar beet pulp (SBP) as an energy source in diets fed to growing Holstein steers with either soybean meal (SBM) or alcohol-treated, defatted soybean flakes (ATSBF) as primary supplemental protein sources. Three groups of 42 Holstein steers each were fed six different diets from 54 kg initial BW to 320 kg in three experimental periods. There were no overall SBP level x protein source interactions (P greater than .05). Beet pulp level tended to decrease ADG (linear, P = .05) and increase feed/gain (linear, P less than .05) and DMI (quadratic, P less than .05). Each grower diet was used in a substrate for ruminal microbial metabolism in six dual-flow, continuous-culture fermenters. Organic matter and carbohydrate digestion were similar (P greater than .05) among diets. Increasing dietary levels of SBP caused a concomitant increase (P less than .05) in acetate and decrease (P less than .05) in butyrate and isobutyrate concentrations. Beet pulp level x protein source interactions (P less than .05) were observed for CP degradation, ammonia and nonammonia N, and dietary N flow. Crude protein degradation was higher (P less than .05) for the 0% SBP with SBM diet (81.3%) than for the 30% SBP with ATSBF diet (64.4%). Efficiency of bacterial synthesis was similar (P greater than .05) among diets. Results indicated that SBP is an effective dietary energy source for high-energy grower diets at 15 or 30% of the DM but may cause a decrease in some performance traits. There were no nutritional benefits of using ATSBF vs SBM as the supplemental N source.

The effects of feeding high levels of Mg were evaluated in a 130-d study with 24 steers. Six steers were allotted to each of four diets supplemented with MgO to attain .3, 1.4, 2.5 or 4.7% Mg, DM basis. Chromic oxide was used as digesta marker; fecal grab samples were collected once daily during nine consecutive 10-d periods. Steers fed 2.5 and 4.7% Mg refused some feed during the study, so their respective dietary Mg intakes were 2.4 and 3.7% (DM basis). Severe diarrhea and a lethargic appearance were observed in steers fed the two higher Mg levels. Fecal DM and apparent DM digestibility decreased linearly (P less than .01) with increased dietary Mg. Apparent Mg absorption (g/d) increased linearly (P les than .01) and apparent Ca and P absorption (g/d) decreased linearly (P less than .01) with addition of Mg to the diet. Increasing dietary Mg linearly elevated blood serum and erythrocyte Mg (P less than .01; P less than .05, respectively) and serum inorganic P (P less than .05) and linearly decreased serum Ca (P less than .01). Magnesium concentration in liver, kidney, skeletal muscle and rib-bone and P in skeletal muscle all increased linearly (P less than .05) with dietary Mg. Increasing dietary Mg in the steers caused a progressive degeneration of the stratified squamous epithelium of rumen papillae. A progressively more serious Mg toxicosis condition developed over time in steers fed diets containing 2.4 and 4.7% Mg.

The effects of feeding high levels of Mg to sheep on animal health, nutrient digestibility, metabolism of macro-minerals, blood and tissue mineral concentrations and hematological and histological tissue changes were evaluated. Six lambs were allotted to each of four diets supplemented with MgO to attain .2, .6, 1.2 or 2.4% Mg. Total fecal and urinary collections were made for the initial 20 d and last 10 d of a 50 d study. Diarrhea was noted in lambs fed the two highest Mg levels. Apparent digestibility of DM, ADF and CP decreased linearly (P less than .01) with increasing Mg levels. Dietary Mg levels did not affect (P greater than .05) rectal temperature, respiration rate or pulse rate. Apparent absorption and retention of Mg (g/d) were lowest in lambs fed 2.4% Mg until 15 d on trial, after which values increased linearly (P less than .01) with dietary Mg. Phosphorus absorption and retention decreased linearly (P less than .01) with increasing Mg levels. Increasing dietary Mg resulted in a linear increase (P less than .01) in serum Mg and variable increases (P less than .05) in erythrocyte Mg. Serum Ca was decreased linearly (P less than .05) and quadratically (P less than .05) by added Mg during the d 1 to 30 and 40 to 50 periods, respectively. Serum inorganic P was elevated consistently in lambs fed 2.4% Mg. A linear response to increasing dietary Mg (P less than .05) occurred in the Mg content of liver, kidney, rib bone and femur bone.
