RESUMEN

Bioactive extracts were obtained from powdered carob pulp through an ultrasound extraction process and then evaluated in terms of antioxidant activity. Ten minutes of ultrasonication at 375 Hz were the optimal conditions leading to an extract with the highest antioxidant effects. After its chemical characterization, which revealed the preponderance of gallotannins, the extract (free and microencapsulated) was incorporated in yogurts. The microspheres were prepared using an extract/sodium alginate ratio of 100/400 (mg mg(-1)) selected after testing different ratios. The yogurts with the free extract exhibited higher antioxidant activity than the samples added with the encapsulated extracts, showing the preserving role of alginate as a coating material. None of the forms significantly altered the yogurt's nutritional value. This study confirmed the efficiency of microencapsulation to stabilize functional ingredients in food matrices maintaining almost the structural integrity of polyphenols extracted from carob pulp and furthermore improving the antioxidant potency of the final product.

Growing concerns about food safety and environmental protection enhanced the need for new and safe plant disease control strategies. The chemical composition of the three essential oils (EOs) extracted from leaves and fruits of Schinus terebinthifolius and leaves of Schinus molle, growing in Tunisia, was studied by GC and GC-MS. In all, 12 compounds were identified. The oils were mainly composed of terpene compounds. α-Pinene, α-phellandrene, and D-limonene were the major constituents. The aim of the current study was to evaluate the in vitro antimicrobial effectiveness of three EOs derived from plants of genus Schinus and extracted from leaves and fruits of S. terebinthifolius and leaves of S. molle. Both antifungal and antibacterial activities of the EOs were examined. The antifungal activity of the studied EOs was investigated against Colletotrichum acutatum and Botrytis cinerea in comparison with the systemic fungicide azoxystrobin used at 0.8 µL mL(-1). The antibacterial activity was evaluated against three strains of Gram-positive (G+ve) bacteria (Bacillus megaterium, Bacillus mojavensis and Clavibacter michiganensis) and four strains of Gram-negative (G-ve) bacteria (Escherichia coli, Xanthomonas campestris, Pseudomonas savastanoi, and Pseudomonas syringae pv. phaseolicola) compared with the synthetic antibiotic tetracycline at a concentration of 1600 µg mL(-1). The minimum inhibitory concentration of the studied EOs has been evaluated against the above microorganisms using the 96-well microplate method. Tested microorganisms exhibited different levels of sensitivity to each tested EO. All investigated EOs reduced the fungal mycelial growth when used at low concentrations from 250 to 1000 ppm and from 2000 to 8000 ppm against C. acutatum and B. cinerea, respectively. Higher concentrations of the same EOs exhibited a fungicidal effect against both mitosporic fungi. The EO extracted from leaves of S. terebinthifolius significantly inhibited the growth of tested bacterial strains. Nevertheless, E. coli showed a weak resistance toward the same EO and a high resistance toward the other two tested EOs. Finally, P. savastanoi and P. syringae pv. phaseolicola showed a high resistance toward all tested EOs.

Date palm (Phoenix dactylifera) is an important crop providing a valuable nutrition source for people in many countries including the Middle East and North Africa. In recent years, the amount of rain in North Africa and especially in the Tunisian palm grove areas has dropped significantly. We investigated the growth and cell wall remodelling of fruits harvested at three key development stages from trees grown with or without water supply. During development, cell wall solubilization and remodelling was characterized by a decrease of the degree of methylesterification of pectin, an important loss of galactose content and a reduction of the branching of xylan by arabinose in irrigated condition. Water deficit had a profound effect on fruit size, pulp content, cell wall composition and remodelling. Loss of galactose content was not as important, arabinose content was significantly higher in the pectin-enriched extracts from non-irrigated condition, and the levels of methylesterification of pectin and O-acetylation of xyloglucan were lower than in irrigated condition. The lower levels of hydrophobic groups (methylester and O-acetyl) and the less intensive degradation of the hydrophilic galactan, arabinan and arabinogalactan in the cell wall may be implicated in maintaining the hydration status of the cells under water deficit.

The dietary fibers (DF) of 10 date varieties from Tunisian oases have been investigated. Further knowledge on the content, composition, and technological applications of those fibers could support their genetic variability and promote the socioeconomical development of growing areas. The composition, water- and oil-holding capacities, solubility, and antiradical activity have been determined. The DF content ranged from 4.7% (Matteta, Rochdi) to >7% (Deglé Nour, Garen Gaze, Smeti). Composition varied significantly among cultivars, and the results evidenced that uronic acids and lignin determine to a great extent the organoleptic quality of dates. Many of the varieties that have been studied (Garen Gaze, Matteta, Kenta, Rochdi, Mermella, Korkobbi, Eguwa) were selected because of great interest from technological and functional points of view. Among their physicochemical characteristics, these samples presented water- and oil-holding capacities of higher than 17 and 4 mL/g fiber, respectively, which make them suitable for use as additives in fiber-enriched foods. Also, DF of Garen Gaze, Smeti, Mermella, and Eguwa had a high antiradical capacity (>230 Trolox equiv/kg fiber). It was concluded that some of these varieties could be grown as potential sources of DF, which could be included in the formulation of fiber- and antioxidant-enriched foods.

Natural chemical compounds are a widely researched topic worldwide because of their potential activity against cerebrovascular diseases. Chemicals from Juniperus phoenicea berries are reported in this study. Lipids (11%) from seeds are mainly unsaturated (86%). Minerals are also quantified like Na (63.8 mg per 100 g DW) or K (373.9 mg per 100 g DW). Total reduced sugars are ca 192.6 mg g(-1) DW. Polyphenols and flavonoids from berries are highly present with an average of 1764 ± 174.3 mg gallic acid per 100 g DW and 890 ± 47.6 mg rutin per 100 g DW, respectively. Mean free radical scavenging activities, determined by DPPH and ABTS, are 1337 ± 126.2 mM TEAC per 100 g DW and 1105.7 ± 95.9 mM TEAC per 100 g DW, respectively. All findings improve the possible presence of biologically active fractions in phytocomplex that could be used as such and/or extracted for the formulation of supplements and/or ingredients for the pharmaceutical industry.

Pomegranate seed oil is considered a powerful health-benefiting agent due to its anti-oxidative and anticarcinogenic properties. Lipids from 21 pomegranate cultivars (15 Tunisian and 6 Chinese) were extracted and fatty acids were identified. Total lipids (16% on a dry weight basis) are mainly unsaturated (ca. 88%). Qualitatively, the pomegranate fatty acid composition is identical. Quantitatively, the predominant fatty acid was linolenic acid (44.51-86.14%), followed by linoleic acid (3.57-13.92%), oleic acid (3.03-12.88%), palmitic acid (3.13-11.82%), stearic acid (1.68-15.64%), gadoleic acid (0.50-4.91%), lignoceric acid ( < 2.53%), arachidic acid ( < 1.70%) and myristic acid ( < 0.85%). Statistical methods revealed how Chinese and Tunisian pomegranate fatty acid contents may be affected by the sampling location.

This article aims to determine the phenolic, tocopherol contents, and antioxidant capacities from fruits (juices, peels, and seed oils) of 6 Tunisian pomegranate ecotypes. Total anthocyanins were determined by a differential pH method. Hydrolyzable tannins were determined with potassium iodate. The tocopherol (α-tocopherol, γ-tocopherol, and δ-tocopherol) contents were, respectively, 165.77, 107.38, and 27.29 mg/100 g from dry seed. Four phenolic compounds were identified and quantified in pomegranate peel and pulp using the high-performance liquid chromatography/ultraviolet method: 2 hydroxybenzoic acids (gallic and ellagic acids) and 2 hydroxycinnamic acids (caffeic and p-coumaric acids). Juice, peel, and seed oil antioxidants were confirmed by ferric reducing antioxidant power (FRAP) and oxygen radical absorbance capacity (ORAC) methods. The highest values were recorded in peels with 25.63 mmol trolox equivalent/100 g and 22.08 mmol TE/100 g for FRAP and ORAC assay, respectively. Results showed that the antioxidant potency of pomegranate extracts was correlated with their phenolic compound content. In particular, the highest correlation was reported in peels. High correlations were also found between peel hydroxybenzoic acids and FRAP ORAC antioxidant capacities. Identified tocopherols seem to contribute in major part to the antioxidant activity of seed oil. The results implied that bioactive compounds from the peel might be potential resources for the development of antioxidant function dietary food.

The purpose of this study was to determine and compare the phenolic acid composition, flavonoid content and antioxidant activity of fruits from common date cultivars. The simple phenolic content ranged from 15.73 (Mermella variety) to 54.66 mg/100 g fresh weight (Korkobbi variety). Korkobbi had also the highest content of total flavonoids (54.46 quercetin equivalents/100 g fresh weight). The percentage of inhibition can reach 83% in the lipoperoxyl radical of the Korkobbi variety, while it was about 95% with the Rotbi variety for OH.. The Trolox equivalent antioxidant capacity value provided a ranking in decreasing order at 6 min: Korkobbi > Bouhattam > Baht = Smiti > Bekreri = Garn ghzal > Mermilla = Kenta > Nefzaoui = Rotbi. It seems that the highest level of flavonoids in the Korkobbi variety was principally responsible for the highest antiradical efficiency of this cultivar.

Peels and fresh pomegranate extracts were used in the present study for the determination of the physic-chemical properties and DPPH-ABTS scavenging activities. Total sugars of juice are fructose (ca. 7 g/100 ml) and glucose (ca. 8 g/100 ml). Contents of soluble proteins in juice extracts are about 7 g/l (Bradford assays) and 22% (Kjeldhal assays) from dry pulp. Minerals in peel and juice are respectively 9.43+/-0.93 and 9.46+/-1.05 mg/100 ml for posphorus and 210.86+/-10.70 and 271.94+/-60.59 mg/100 g for potassium. The sodium contents are nearly 7 mg/100 ml in both peel and juice. Highly antioxidant contents in peels were confirmed. Free radical scavenging is about 3.58+/-0.38 microg/ml in peel. The antioxidant capacity value determined by ABTS was 7.364+/-0.403 mM Trolox equivalent antioxidant capacity/100 g dry weight. These findings implied that bio-active compounds from the peel might be potential resources for the development of antioxidant function dietary food.

The chemical analysis of flesh and pit of two varieties of date palm fruit (Deglet nour and Alig) as well as the radical scavenging activity of their extracts was undertaken. The fruits were grown in Djerid region (Oasis of Tozeur, Tunisia). Total sugars was measured by HPLC method or with Fehling reagent, crude lipid content was obtained by Soxhlet's extraction, mineral elements were measured by atomic absorption photometer. The antioxidant activity of extracts from the flesh and pit of the date fruit was measured on the basis of the scavenging activity of the stable 1, 1-diphenyl-2-picrylhy-drazyl (DPPH) free radical. Our results showed that the total sugars could present over 60% of the dry weight of date flesh in two studied varieties. The content of reducing sugars was higher in Alig variety than Deglet nour. For the minerals content, dates flesh were a very good source of several minerals and could be an important source of potassium for regular consumer with a concentration of 0.61 and 0.72% (dry matter), respectively from flesh Deglet nour and Alig. Concerning the date pit composition, oils content was 10.13% in Deglet nour and 12.37% in Alig and the total sugars were less than 6% for the two varieties. In addition, ethyl acetate extracts from flesh Deglet nour, pit Deglet nour and pit Alig showed an important free radical scavenging activity towards 1-1-diphenyl-2-picrylhydrazyl (DPPH) free radical.
