O objetivo deste estudo foi avaliar as características de carcaça e dos componentes não carcaça de cordeiros terminados em confinamento, com diferentes proporções de caroço de algodão na dieta. Foram utilizados 45 cordeiros, machos, não castrados, da raça Ile de France. Os tratamentos foram constituídos por níveis de inclusão de caroço de algodão na matéria seca (MS) da dieta total (0%; 10%; 20%; 30% ou 40%), sendo a dieta composta por silagem de milho (Zea mays L.), grão de milho triturado (Zea mays L.), farelo de soja (Glycine max L.), caroço de algodão (Gossypium hirsutum L.), calcário calcítico e sal mineral, em proporção de volumoso:concentrado de 40:60. Os animais foram abatidos com peso de abate preestabelecido. O peso de carcaça quente e o peso de carcaça fria, bem como o índice de quebra ao resfriamento, o índice de compacidade, a conformação e o estado de engorduramento da carcaça, não foram influenciados (P>0,05) pelo nível de inclusão de caroço de algodão na dieta. As características de rendimento de carcaça quente e rendimento de carcaça fria diminuíram linearmente (P≤0,05) à medida que se incluiu caroço de algodão na dieta. Com relação à medida de espessura de gordura de cobertura, pode-se observar que houve comportamento quadrático crescente e, em relação à variável área de olho de lombo, o comportamento observado foi o linear decrescente. Quanto às proporções dos cortes comerciais da carcaça, o peso de perna diminuiu linearmente (P≤0,05) enquanto a porcentagem de perna foi influenciada de forma quadrática (P≤0,05) pela inclusão de caroço de algodão nas dietas. O trato gastrointestinal cheio e o conteúdo do trato gastrointestinal aumentam linearmente (P≤0,05) com o incremento do nível de inclusão de caroço de algodão na dieta. Algumas das características de carcaça e dos componentes não carcaça tiveram influência negativa da elevação do teor de fibra e de lipídios da dieta à medida que se incluiu caroço de algodão na dieta total.(AU)


The objective of this study was to evaluate the carcass and non carcass components characteristics of lambs finished in feedlot with different proportions of cottonseed on the diet. Forty five lambs, non castrated males, from Ile de France race. The treatments were constituted by levels of inclusion of cottonseed on dry matter (DM) of the total diet (0%; 10%; 20%; 30% or 40%), being the diet composed by corn silage (Zea mays L.), ground corn grain (Zea mays L.), soybean meal (Glycine max L.), cottonseed (Gossypiumhirsutum L.), limestone and mineral salt in a roughage: concentrate proportion of 40:60. The animals were slaughtered with a pre- established slaughter weight. The hot and cold carcass weight, as well as the carcass chilling index, the compactness index, the conformation and the fattening state of the carcass were not influenced (P> 0.05) by the level of inclusion of cottonseed on the diet. The hot and cold carcass yield decreased linearly (P≤ 0.05) as the cottonseed was included on the diet. Regarding the subcutaneous fat thickness it is possible to observe that there was a crescent quadratic behavior and in relation to the rib eye area variable, the behavior observed was linear decrescent. Regarding the proportions of the commercial cuts of the carcass, the leg weight decreased linearly (P≤ 0.05) while the percentage of leg was quadratic influenced (P≤ 0.05) by the inclusion of cottonseed on the diets. The full gastrointestinal tract and the gastrointestinal tract content increased linearly (P≤ 0.05) with the increase on the level of inclusion of cottonseed on the diet. Some of the carcass and non carcass components characteristics had negative influence of level fiber content and dietary lipids as it included cottonseed in the total diet.(AU)

The objective of this study was to identify a suitable alternative to the current practice of complementing the feeding of milk by-products with straw. The influence of 5 different types of solid feeds on health and performance of Swiss veal calves was investigated in 2 production cycles of 200 veal calves each with a mean initial age of 40 days (d). The calves were housed in groups of 40 in stalls with outside pen. Liquid feeding consisted of a milk by-product combined with an additional skim milk powder ad libitum. Groups were assigned to 1 of the 5 following experimental solid feeds provided ad libitum: mix (composition: soy flakes, corn, barley, wheat, oat, barley middling, plant oil, molasses), whole plant corn pellets, corn silage, hay, and wheat straw as control. Daily dry matter intake per calf averaged 2.25 kg of the liquid food, 0.16 kg of straw, 0.33 kg of mix, 0.47 kg of corn silage, 0.38 kg of corn pellets, and 0.39 kg of hay. No significant differences (P > 0.05) among groups were found in calf losses that amounted to 4.8 % (68 % because of gastrointestinal disorders). Four percent of the calves were slaughtered prematurely. Daily doses of antibiotics were higher in the mix (36.9 d, P < 0.01) and in the corn silage groups (35 d, P < 0.01) compared to control. Compared to the 4 other groups, calves of the straw group showed the highest prevalence of abnormal ruminal content (73 %, P < 0.05), of abnormal ruminal papillae (42 %, P < 0.05), of abomasal fundic lesions (13.5 %, P < 0.1), and the lowest number of chewing movements per bolus (45, P < 0.05). The hemoglobin concentration averaged 85 g/l at the beginning and 99 g/l at the end of the fattening period with no significant differences among groups (P > 0.1). The duration of the fattening period averaged 114 d, slaughter age 157 d, and carcass weight 122 kg. The average daily weight gain (ADG) was highest in the control group straw (1.35 kg), and lowest in the hay group (1.22 kg, P < 0.01). The number of carcasses classified as C, H, and T (very high to medium quality) was lower in the hay group compared to straw (P < 0.01). No significant differences between groups were found in meat color (P > 0.1): 73 % of the carcasses were assessed as pale (267/364), 18 % as pink (66/364), and 9 % (31/364) as red. The results reveal that whole-plant corn pellets are most consistent with an optimal result combining the calves' health and fattening performance. Therefore, it can be recommended as an additional solid feed for veal calves under Swiss conditions.


Le but de cette étude était de trouver une alternative adéquate à l'affouragement complémentaire de paille chez les veaux d'engraissement. Au cours de 2 périodes d'engraissement avec chaque fois 200 veaux débutant leur engraissement à l'âge de 40 jours, on a étudié l'influence de 5 fourrages grossiers différents sur la santé et la productivité. Les veaux étaient détenus par groupe de 40 avec un accès libre à un enclos extérieur. Le fourrage liquide se composait d'un sous-produit lacté complété par la poudre de lait et offert ad libitum. On a offert à chaque groupe un des fourrages expérimentaux suivant : mix (composition : flocons de soya, maïs orges, blé, avoine, farine d'orge, huile végétale, mélasse), cubes de mais plante entière, silo de mais, foin et paille de blé pour le groupe de contrôle. La consommation journalière en poids de matière sèche s'élevait en moyenne par veau à 2.25 kg pour l'aliment liquide, 0.16 kg pour la paille, 0.33 kg pour le mix, 0.47 kg pour le silo de mais, 0.38 kg pour les cubes de mais et 0.39 kg pour le foin. Il y avait pas de différence significative entre les groupe quant aux pertes qui atteignaient un total 4.8 % (68 % pour des problèmes gastro-intestinaux). 4 % des veaux ont du être abattu précocement. Les veaux des groupes mix et silo de mais ont été traités plus longtemps avec un antibiotique que le groupe de contrôle paille (groupe mix : 36.9 jours, P < 0.01, groupe silo de mais 35 jours, P < 0.01). En comparaison avec les 4 autres groupes, les veaux du groupe paille présentaient plus de contenu anormal de la panse (73 %, P < 0.05), ils avaient plus fréquemment des villosités de la panse anormales (42 %, P < 0.05), plus fréquemment des lésions de la caillette (13.5 %, P < 0.01) et ils montraient la moins bonne rumination (45 coups par bolus, P < 0.05). La concentration moyenne en hémoglobine était de 85g/l au début et 99 g/l à la fin de l'engraissement sans différence significative entre les groupes (P > 0.01). La durée moyenne d'engraissement était de 180 jours, l'âge moyen d'abattage de 157 jours et le poids moyen à l'abattage de 122 kg. La prise de poids moyenne journalière était la plus importante chez les veaux du groupe paille (1.35 Kg) et la plus faible chez les veaux du groupe foin (1.22 kg, P < 0.01) Le nombre de carcasses classées bonnes à très bonnes était plus faible dans le groupe foins que dans le groupe paille. Pour ce qui est de la couleur de la viande, on ne pouvait pas constater de différence significative entre les groupes (P > 0.1): 73 % des carcasses était classées comme claires (267/364), 18 % comme roses (66/364) und 9 % comme rouges (31/364). Les présents résultats montrent que les cubes de mais plante entière correspondent le mieux aux besoins en matière de santé et productivité des veaux d'engraissement. Ils peuvent être donc recommandés comme alternative à l'affouragement de paille chez les veaux en Suisse.

Red meat is long established as an important dietary source of protein and essential nutrients including iron, zinc and vitamin B12, yet recent reports that its consumption may increase the risk of cardiovascular disease (CVD) and colon cancer have led to a negative perception of the role of red meat in health. The aim of this paper is to review existing literature for both the risks and benefits of red meat consumption, focusing on case-control and prospective studies. Despite many studies reporting an association between red meat and the risk of CVD and colon cancer, several methodological limitations and inconsistencies were identified which may impact on the validity of their findings. Overall, there is no strong evidence to support the recent conclusion from the World Cancer Research Fund (WCRF) report that red meat has a convincing role to play in colon cancer. A substantial amount of evidence supports the role of lean red meat as a positive moderator of lipid profiles with recent studies identifying it as a dietary source of the anti-inflammatory long chain (LC) n-3 PUFAs and conjugated linoleic acid (CLA). In conclusion, moderate consumption of lean red meat as part of a balanced diet is unlikely to increase risk for CVD or colon cancer, but may positively influence nutrient intakes and fatty acid profiles, thereby impacting positively on long-term health.

This study examined the effects of dietary alpha-tocopheryl acetate supplementation on antioxidant enzyme activities and fillet quality in commercial-size Sparus macrocephalus. Three hundred fish [main initial weight (350+/-12) g] were divided into three groups (E250, E500 and E1000) and reared in 9 cages. The fish were fed for 8 weeks with three diets containing different levels of dietary alpha-tocopheryl acetate (289, 553, 1 069 mg/kg). Over the experimental period, fish were fed to satiation and reached a final mean weight of (465+/-28) g without significant body weight difference and proximate composition difference. Fillet alpha-tocopherol was significantly (P<0.05) different between groups, reaching levels of 14.2, 22.1, 30.9 microg/mg fillet for groups E250, E500 and E1000, respectively. Total serum superoxide dismutase (SOD) activity increased significantly (P<0.05) in fish fed the diets high in alpha-tocopheryl acetate, but serum glutathione peroxidase (GPX) activity was unaffected. In storage on ice, fillets of fish fed the diets high in alpha-tocopheryl acetate exhibited significantly lower (P<0.05) levels of oxidation. These results suggested that increased dietary alpha-tocopheryl acetate could increase its flesh deposition, increase the activity of SOD and prevent lipid peroxidation of Sparus macrocephalus fillets in retail storage on ice.

Two experiments were conducted at two locations to determine the effects of dietary CP concentration and source on performance, carcass characteristics, and serum urea nitrogen (SUN) concentrations of finishing beef steers. British x Continental steers were blocked by BW (357 +/- 28 and 305 +/- 25 kg initial BW; n = 360 and 225; four and five pens per treatment in Exp. 1 and 2, respectively). Steam-flaked corn-based diets were arranged in a 3 x 3 factorial with three CP concentrations (11.5, 13, or 14.5% of DM) and three sources of supplemental CP (N basis): 100% urea; 50:50 blend of urea and cottonseed meal; or 100% cottonseed meal. Steers in both experiments were initially implanted with Ralgro and reimplanted with Revalor-S on d 56. Performance and carcass data were pooled across locations. Crude protein concentration x source interactions were not observed (P = 0.22 to 0.93) for performance and carcass data. Crude protein concentration affected ADG (P = 0.02) and carcass-adjusted (to a common dressing percent within location) ADG quadratically (P = 0.06). Increasing the concentration of supplemental urea linearly increased carcass-adjusted ADG and G:F (P < 0.05) and carcass-adjusted G:F (P < 0.001). Dry matter intake was not affected (P = 0.93) by either CP concentration or source. Hot carcass weight (HCW; P = 0.02), LM area (P = 0.05), and dressing percent (P = 0.03) increased linearly with increasing urea concentration, whereas increasing CP concentration quadratically affected HCW (P = 0.02), with a maximum at 13% CP. Differences in backfat thickness and yield grade were negligible across treatments. Neither marbling score nor percentage of carcasses grading USDA Choice was affected by CP concentration or source. At all times measured, SUN concentrations increased (P < 0.05) with increasing CP concentration, but effects of CP source were small and variable across time. Results indicate that increasing CP concentrations from 11.5 to 13% slightly increased ADG and carcass-adjusted ADG, whereas increasing the proportion of supplemental urea increased carcass-adjusted ADG, G:F, and carcass-adjusted G:F and increased HCW, LM area, and dressing percent. A CP concentration above 13% seemed detrimental to ADG and HCW. Serum urea N increased over time, with CP concentration having a greater effect than CP source.

Feedlot steers (n = 36) from three biological types (Bos indicus, Bos taurus-Continental, and Bos taurus-English) were used to determine the Ca, P, and vitamin D3 status of feedlot cattle. The USDA yield and quality grade traits were measured at slaughter, and the concentrations of vitamin D3 (VITD) and the metabolites 25-hydroxyvitamin D3 (25-OH D) and 1,25-dihydroxyvitamin D3 (1,25-(OH)2 D) were determined in LM, liver, kidney, and plasma. Plasma and muscle Ca and P concentrations also were determined. Biological type of cattle affected a number of carcass traits. Carcasses from Bos taurus-English cattle had more marbling, resulting in higher quality grades (P < 0.05). Carcasses from Bos taurus-Continental cattle had lower calculated yield grades (P < 0.05) than did carcasses from cattle in the other biological types. In general, differences in carcass traits resulting from biological type were consistent with other reports. Plasma and LM Ca and P concentrations were not affected (P = 0.06) by biological type of cattle, indicating that Ca and P homeostasis is a conserved trait across the different types of cattle. Plasma VITD and 25-OH D concentrations were not affected (P = 0.41) by biological type, whereas plasma 1,25-(OH)2 D concentration was lower (P < 0.05) in Bos taurus-English cattle than in Bos taurus-Continental and Bos indicus cattle. Liver VITD and 25-OH D were not affected by biological type (P = 0.76), but liver 1,25-(OH)2 D concentration was greater (P < 0.05) in Bos indicus cattle than in Bos taurus-Continental cattle. Kidney vitamin D metabolite concentrations were not affected by biological type of cattle (P = 0.21). Muscle VITD concentration was greater (P < 0.05) in Bos taurus-English cattle than in the other two biological types, and muscle 25-OH D concentrations were greater (P < 0.05) in Bos taurus-English cattle than in Bos indicus cattle. Muscle 1,25-(OH)2 D concentration was less (P < 0.05) in the Bos taurus-Continental cattle than in the other two biological types. Cooking eliminated vitamin D metabolite differences among the biological types. Our results suggest that Bos indicus cattle had greater 1,25-(OH)2 D (the biologically active form) in tissues, and greater 1,25-(OH)2 D plasma concentrations than Bos taurus cattle. Thus, the need for VITD supplementation and optimal levels of Ca and P in feedlot diets might differ between Bos indicus and Bos taurus cattle.

Because of the Ca dependency of the calpains, oral supplementation of vitamin D3 (VITD) can increase the Ca content of muscle to activate the calpains and improve tenderness. Feedlot steers (n = 142) were arranged in a 4 x 3 factorial arrangement consisting of four levels of VITD (0, 0.5, 1, and 5 million IU/[steer x d]) for eight consecutive days antemortem using three biological types (Bos indicus, Bos taurus-Continental, and Bos taurus-English). Feedlot performance factors of ADG, DMI, and G:F were measured, and carcass quality, yield, and color data were collected. Plasma Ca and P concentrations were measured during d 4 to 6 of supplementation and at exsanguination, and carcass pH and temperature were measured in the LM at 3 and 24 h postmortem. Vitamin D3 treatment at 5 million IU/(steer x d) decreased ADG (P < 0.05) over the supplementation and feed intake for the last 2 d of feeding compared with untreated control steers. Likewise, G:F was decreased (P = 0.03) in steers supplemented with 5 million IU/d compared with controls. Overall, there was a linear decrease (P < 0.01) in ADG and G:F as a result of VITD supplementation. Plasma concentrations of Ca and P were increased (P < 0.05) by VITD concentrations of 1 and 5 million IU/(steer x d). All VITD treatments increased (P < 0.05) LM temperature at 3 h postmortem and pH at 24 h postmortem. Vitamin D3 treatments did not affect (P = 0.07) any other carcass measurements, including USDA yield and quality grade; thus, any improvements in meat tenderness as a result of VITD supplementation can be made without adversely affecting economically important carcass factors. Biological type of cattle did not interact with VITD treatment for any carcass or feedlot performance trait. Although feeding 5 million IU/(steer x d) of VITD for eight consecutive days had negative effects on performance, supplementing VITD at 0.5 million IU/ (steer x d) did not significantly alter feedlot performance.

Thirty-two pigs were used to determine the timing effect of magnesium (Mg) supplementation given through drinking water on pork quality. Pigs (16 barrows and 16 gilts) were individually penned, provided 2.7 kg of feed (0.12% Mg) daily (as-fed basis), and allowed free access to water via a nipple waterer for the duration of the study. After 5 d of adjustment, pigs (120 +/- 0.8 kg BW) were allotted randomly by weight and sex to 900 mg/L of supplemental Mg from magnesium sulfate heptahydrate in drinking water for -6, -4, -2, or 0 d relative to slaughter. The LM and semimembranosus (SM) muscles were removed 24 h postmortem. Retail display storage was simulated for 8 d, and the LM was vacuum-packaged for 25 or 50 d at 4 degrees C. Magnesium did not affect the pH of the LM at either 45 min (P = 0.15) or 24 h postmortem (P = 0.23). However, the pH of the SM at 24 h postmortem tended to be greater (P = 0.08) for pigs consuming Mg for 2 d than for those not supplemented. Fluid loss after 8 d of storage was less (P < 0.05) in the LM of pigs supplemented with Mg for 6 d than in those without supplementation. Furthermore, fluid loss from the SM of pigs provided supplemental Mg for 2 d, but not for 4 or 6 d, was lower (P < 0.05) on each day of retail display than the SM of unsupplemented pigs. Minolta L*, a*, and b* color measurements of the LM during display storage were not (P > 0.10) affected by Mg supplementation. However, Mg supplementation for 2 or 4 d decreased paleness (lower L* value) after 25 d (P < 0.05), but not 50 d (P > 0.10) of vacuum-packaged storage. Magnesium addition for 2 d decreased the extent of oxidation (thiobarbituric acid-reactive substances) of the LM after 4 d of display storage compared with 0 d of Mg (P < 0.05). Oxidation of the SM during 8 d of display storage increased linearly (P < 0.05) as duration of supplementation increased from 2 to 6 d but did not differ (P = 0.22) from 0 d of Mg supplementation. Although the response to Mg supplementation was variable, supplementation for 2 d before slaughter was considered most efficacious because of the following: decreased fluid loss from the SM, and lower lipid oxidation formation in the LM during retail storage; a darker, more desirable LM color after 25 d of vacuum-packaged storage; and cost reductions compared with longer durations.

RESUMEN

The objective of this study was to evaluate short-duration supplementation of alpha-lipoic acid (ALA) and creatine monohydrate (CMH) to improve fresh pork quality. Forty-eight commercial hybrid barrows were blocked by BW and randomly allotted to one of four treatments: 1) no CMH or ALA; 2) supplementation of 24 g of CMH(-1) x pig(-1) x d(-1); 3) supplementation of 600 mg ALA(-1) x pig(-1) x d(-1); or 4) combined CMH and ALA supplements. Twelve pigs per treatment were individually penned with ad libitum access to water and a finishing diet. Treatments were hand-fed to individual pigs daily (divided into three equal doses) for 5 d before slaughter at 113 kg BW in two separate groups of 24 pigs each. Intramuscular pH was recorded at 45 min postmortem and again at 24 h in the ham semimembranosus (SM) and the longissimus muscle (LM) between the 10th and 11th rib. A Meatcheck (SFK Technology, Peosta, IA) conductivity probe was inserted in the same anatomical locations as pH measurement, providing an index value (PY) from 0 to 100 (a higher index value indicates more intact muscle cells and higher water-holding capacity). Color (L, a, b values) measurements were obtained at 24 h postmortem on the ham gluteus medius (GM), SM, and LM. Two 2.54-cm-thick loin chops were removed from the loin for determination of Warner-Bratzler shear force and glycolytic potential. The intact SM and the posterior portion of the boneless loin were vacuum-packaged and stored for 7 d to determine purge loss. Creatine-supplemented pigs had a higher (P = 0.03) PY value in the SM (66.67) at 45 min postmortem than either ALA, singularly (63.50), or in the combined CMH/ALA (62.27) treatments. (A higher PY index indicates superior water-holding capacity.) Lipoic acid supplementation resulted in the highest pH at 45 min (P = 0.029). These results justify further evaluation of the potential positive influence of supplementing alpha-lipoic acid to improve pork quality.

We predicted that providing rumen-protected starch to the small intestine would increase adiposity of intramuscular adipose tissue, and hence marbling scores. Eighteen 15-mo-old Brangus steers were assigned randomly to one of three dietary treatment groups: 1) cracked corn (Corn); 2) casein-formaldehyde-protected lipid (Canola Lipid); or 3) casein-formaldehyde-protected starch (Marble Plus). All diets were equally balanced for ME (2.91 Mcal/kg), CP (12.5%), and DM (89%). Ether extract was 3.7, 6.9, and 6.9% for the Corn, Canola Lipid, and Marble Plus diets, respectively, and the Marble Plus also contained 3.7% protected starch. Steers were fed the diets for 126 d before slaughter. Average daily feed intake (as-fed basis), ADG, and feed:gain ratio (P > or = 0.23) did not differ among treatments. Carcasses across treatments did not differ (P = 0.26) in adjusted fat thickness, longissimus muscle area, hot carcass weight, dressing percentage, marbling scores, or USDA quality grade. Percentage of kidney, pelvic, and heart fat was higher (P < 0.01) and USDA yield grade tended (P = 0.08) to be higher, for carcasses from Canola Lipid- and Marble Plus-fed steers than for carcasses from Corn-fed steers. Of the descriptive meat sensory attributes, connective tissue amount (P = 0.06) and painty flavor (P = 0.12) tended to be greater in meat from Marble Plus steers than from Canola Lipid steers. Percentages of 18:2n-6 and 18:3n-3 were higher (P < 0.01), and 15:0, 16:0, and 17:0 were lower (P < or = 0.07) in tissues from Canola Lipid- and Marble Plus-fed steers than in Corn-fed steers. Mean adipocyte volume was greater (P = 0.02) in i.m. adipose tissue and tended (P = 0.11) to be greater in s.c. adipose tissue of Canola Lipid steers (848 pL) vs. Corn steers (536 pL). Glucose incorporation into total lipids, glyceride-glycerol, and fatty acid fractions was highest (P < 0.01) in s.c. adipose tissue from steers fed Marble Plus but was unaffected (P > or = 0.33) by diet in i.m. adipose tissue. Fatty acid synthetase activity tended (P = 0.08) to be higher in s.c. adipose tissue of Marble Plus steers, and NADP-malic dehydrogenase activity was higher (P = 0.03) in i.m. adipose tissue of Canola Lipid steers. We conclude that Marble Plus did not improve carcass quality, but also did not reduce beef sensory attributes. Any differences we observed in carcass characteristics, adipose tissue cellularity, or lipogenesis apparently were caused by the protected lipid rather than the protected starch.

Este trabalho procurou analisar alguns aspectos das exportaçöes brasileiras e produtos alimentícios industrializados, de 1968 a 1991. Foram identificados os sub-ramos mais dinâmicos nos grupos de produtos semi-elaborados da indústria alimentícia e os tradicionalmente importantes, assim como os produtos que mais contribuíram para o aumento ou queda das exportaçöes em cada sub-ramo, sendo também determinada a tendência geral das exportaçöes de cada setor. Apesar da diversificaçäo verificada em alguns sub-ramos, grande parte dos produtos näo se manteve na pauta de exportaçöes de cada setor. Estas exportaçöes ainda se baseiam em produtos semi-elaborados, com menor valor agregado e, mesmo entre os elaborados, os produtos que mais se destacaram foram aqueles com menor grau de elaboraçäo
