Linoleic acid (LA) and alpha-linolenic acid (ALA) are essential fatty acids found in variable quantities in ruminant feedstuffs. Revision of French feed unit systems in 2018 has proposed the reassessment of energy requirements through a between-experiment approach expressing metabolisable energy supply as a function of the energy expenditures for maintenance and production, with these expenditures that reflect homeorhetic regulations. Based on the same approach, LA and ALA intake can be related to animal characteristics (i.e., BW) reflecting maintenance expenditures and secretion characteristics (i.e., milk yield, milk fat content and contents of LA and ALA in milk fat). Therefore, the objective of this work was to analyse the between-experiment relationships between ingested, duodenal, or absorbed flows of LA and ALA, BW and milk LA and ALA secretion by meta-analysis in mid-lactation dairy cows. These relationships were analysed using LA and ALA subsets of 96 and 99 experiments, respectively. Between-experiment regressions of daily flows of ingested, duodenal or absorbed LA and ALA on BW and milk LA and ALA flows were studied, with statistical unit defined as the mean of within-experiment treatments. For LA, the BW-associated coefficient was 0.019 (±0.0034) g absorbed LA/d per kg BW and milk LA secretion-associated coefficient was 0.70 (±0.081) g absorbed LA/g of LA secreted into milk. For ALA, the BW-associated coefficient was 0.0058 (±0.00093) g absorbed ALA/d per kg BW and milk ALA secretion-associated coefficient was 0.57 (±0.097) g absorbed ALA/g of ALA secreted into milk. When coding the diets as either control or milk fat depression diets, the BW-associated coefficient for LA was 0.017 (±0.0032) g absorbed LA/d per kg BW for both diets. For milk fat depression diets, milk LA secretion-associated coefficient was 1.02 (±0.119) g absorbed LA/g of LA secreted into milk, whereas it was 0.70 (±0.075) g absorbed LA/g of LA secreted into milk for control diets. Significant BW and milk performance coefficients were obtained in all LA and ALA equations, allowing the calculation of ingested and intestinal flows of LA and ALA based on measured BW, milk fat yield and milk fat content of LA and ALA. The relationships between ingested and intestinal flows of LA and ALA, BW and milk performance obtained in the present work could be integrated into renewed feed unit systems for energy and protein in dairy cows.

Compared with maize silage- and concentrate-based diets, herbage-based diets were repeatedly shown to favourably influence the milk fatty acid (FA) profile. However, it is unclear how the herbage feeding mode (grazing vs indoor green-feeding) and conservation (fresh herbage vs hay vs silage) modify the milk FA profile. Therefore, the aim of the present experiment was to investigate the effect of different herbage utilisation methods (including herbage feeding mode and herbage conservation method) on the ruminal biohydrogenation of dietary FA and the consequences on the milk FA composition in cows of two breeds (Holstein and Montbéliarde). Concomitant effects of botanical composition and phenological stage of the herbage on milk FA profile were controlled for by harvesting barn-dried hay and silage simultaneously as first cut from the same ryegrass-dominated grassland in a semi-mountainous region. Seven weeks later, the first regrowth of the same plot was used as fresh herbage, either grazed or fed indoor (indoor green-feeding). Twenty-four Montbéliarde and 24 Holstein cows were randomly allocated to four groups of 12 cows balanced by breed, parity, and milk yield. In a free-stall barn, three groups were given ad libitum access to hay, silage, or fresh herbage, respectively. The fourth group was strip-grazing. All cows were supplemented with 3 kg DM/day of the same energy-rich concentrate. After 2 weeks of adaptation to the forage, samples of forage, concentrate, milk, blood, and rumen fluid were collected. Fatty acid composition of forages, rumen fluid, and milk was analysed by gas chromatography. Haymaking reduced total FA content of the herbage, in particular that of linoleic acid (LA) and α-linolenic acid (ALA). Still, rumen fluid lipids of hay-fed cows had the highest proportion of rumenic acid, LA, ALA, and total polyunsaturated fatty acids (PUFAs). Milk fat from hay-fed cows had the highest proportion of LA, and the apparent transfer rates from feed to milk of LA and ALA were higher in hay-fed cows than in silage-fed cows. The proportion of PUFAs was highest in milk fat from grazing and indoor green-fed Montbéliarde cows and lowest in silage-fed cows of both breeds. In conclusion, the herbage utilisation method affects the ruminal biohydrogenation of LA and ALA, whereby herbage drying particularly increases their transfer from herbage to milk.

This study was performed to characterize the effect of a concentrate supplemented with free palmitic acid (4% on a DM basis; PA) or rapeseed oil (4% on a DM basis; RO) compared with a no-added-lipid control concentrate (CT) on the performance of dairy cows fed a corn silage-based diet over a 9-wk period. After a 3-wk pre-experimental period, 54 Holstein cows were randomly allocated to 3 experimental treatments to receive forage ad libitum with a fixed amount of CT, RO, or PA (8 kg/d for 2-yr-old primiparous; 10 kg/d for older cows). During the experiment, dry matter intake, milk yield and composition, fatty acid (FA) yields and FA profile, and feed efficiency were determined. At wk 9 of the experimental period, the mRNA levels of 10 genes involved in lipid metabolism in mammary tissue biopsy samples were measured. Compared with CT, RO and PA increased forage intake. Compared with CT, RO increased concentrate intake, the value being intermediate for PA. Compared with CT, RO increased milk yield (+2.0 kg/d) and decreased milk fat and protein content (-3.8 and -1.2 g/kg, respectively), whereas PA increased milk fat content (+4.1 g/kg). Compared with CT and RO treatments, PA increased milk fat yield (+179 g/d) and 3.5% fat-corrected milk and energy-corrected milk output (+2.8 and +2.3 kg/d, respectively), and thus improved feed efficiency (+7.3%). Compared with CT treatment, RO increased milk contents of the sum of >C16 FA, monounsaturated FA, polyunsaturated FA, trans FA, and n-3 FA, whereas PA decreased these FA contents (except n-3 FA) and also decreased n-6 FA. The variations in milk fat yield and content and FA secretion at wk 9 were not associated with modifications in mammary expression of 10 genes involved in major lipid pathways, except for the transcription factor PPARG1, which tended to be higher in PA versus RO treatment. This study demonstrated that PA improved milk fat yield and feed efficiency compared with RO and suggests that factors other than gene expression, such as substrate availability for mammary metabolism or other levels of regulation (transcriptional, posttranscriptional, translational or posttranslational), could play a key role in milk fat and FA responses to changes in diet composition in cows.

We sought to establish predictive response models of milk fatty acid (FA) yields or concentrations from their respective duodenal flow, rumen digestive parameters, or diet characteristics in dairy cows, with a special focus on cis and trans isomers of C18:1, C18:2, odd- and branched FA, and mammary de novo synthesized FA. This meta-analysis was carried out using data from trials with nature of forage, percentage of concentrate, supplementation of diets with vegetable oils or seeds, and marine products' animal fats as experimental factors. The data set included 34 published papers representing 50 experiments with 142 treatments. Increasing duodenal C18 FA flow induced a quadratic increase in milk total C18 yield and a linear decrease in milk C4:0 to C14:0 concentration. Intra-experimental predictive response models of individual milk cis C18:1 isomers (Δ 11 to 15 position) from their respective duodenal flows had coefficients of determination (R2) ranging from 0.74 to 0.99, with root mean square error varying from 0.19 to 0.96 g/d, 0.02 to 0.10% of total FA, and 0.03 to 0.29% of C18 FA. Models predicting milk trans C18:1 isomer yields or concentrations had R2 greater than 0.90 (except for trans-4 and trans-10 C18:1) with root mean square error varying from less than 0.1 to 5.2 g/d. Linear regressions for C18:2n-6, trans-10,cis-12 CLA, and trans-11,trans-13 CLA were calculated according to their respective duodenal flows. Quadratic models of milk C18:3n-3 yield or concentration from its duodenal flow had R2 values above 0.97. Models of amounts desaturated from C18:0 into cis-9 C18:1 and trans-11 C18:1 into cis-9,trans-11 CLA indicated that the contribution of C18:0 and trans-11 C18:1 desaturation to respective cis-9 C18:1 and cis-9,trans-11 CLA yields in milk fat was 83.8% (±0.75) and 86.8% (±2.8). Furthermore, when cows were fed marine products, our results could indicate a lower mammary uptake of C18:0 and trans-11 C18:1 in proportion to their respective duodenal flow, with no associated change in mammary Δ9-desaturase activity. Yields or concentrations of C15:0, C17:0, iso-C15:0, iso-C17:0, anteiso-C15:0, and anteiso-C17:0 were dependent on their respective duodenal flow or concentration at duodenum, but synthesis of these FA from C3 units for linear-chain odd FA, and from C2 units for branched-chain FA was suggested, respectively. Several milk C18 FA concentrations were closely related to their duodenal concentrations with slopes of the linear models close to the bisector; this could reflect a priority for the use of these duodenal C18 FA by the mammary gland to favor their high concentration in plasma triglycerides and nonesterified FA, which are preferentially taken up by the mammary gland.

Dietary and ruminal factors modify the ruminal biohydrogenation (RBH) of polyunsaturated fatty acids (FA), with duodenal FA flows being quantitatively and qualitatively different from FA intake. Using a meta-analysis approach from a database on duodenal flows of FA in ruminants, this study aimed to determine predictive equations for duodenal and absorbed flows of saturated FA, C18:1, C18:2 and C18:3 isomers, odd- and branched-chain FA (OBCFA), C20:5n-3, C22:5n-3 and C22:6n-3 and to quantify the effects of dietary and digestive factors on those equations. The database was divided into four subsets: forage, seed, vegetable oils or animal fats (oil/fat), and fish products (fish) subsets. Models of duodenal and absorbed FA flows were obtained through variance-covariance analysis. Effects of potential interfering factors (conservation mode and botanical families of forages, lipid source, technological processing of lipid supplements, diet composition and animal characteristics) were analysed. We obtained 83 models for duodenal FA flows as a function of FA intake for saturated FA (C14:0, C16:0 and C18:0), C18:1, C18:2 and C18:3 isomers and seven other models for OBCFA. For the seed/oil/fat subset, intakes of total C18:3, C18:2 and starch content increased the duodenal t11-C18:1 flow with 0.08, 0.16 and 0.005 g/kg of dry matter intake (DMI), respectively, whereas intake level [(DMI×100)/BW] decreased it. The c9c12c15-C18:3 RBH was higher for oil/fat than seed (96.7% v. 94.8%) and a protective effect of Leguminosae v. Gramineae against RBH for that FA appeared in the forage subset. The duodenal C17:0 flow increased with starch content and decreased with ruminal pH, respectively, whereas duodenal iso-C16:0 flow decreased with dietary NDF content for the seed/oil/fat subset. The duodenal C20:5n-3, C22:5n-3 and C22:6n-3 flows depended on their respective intake and the inhibitory effect of C22:6n-3 on duodenal C18:0 flow was quantified. Thirteen models of absorbed FA flows were performed depending on their respective duodenal flows. This study determined the effects of different qualitative and quantitative dietary and digestive factors, allowing for improved predictions of duodenal and absorbed FA flows.

Optimizing milk production efficiency implies diets allowing low methane (CH4) emissions and high dairy performance. We hypothesize that nature of energy (starch v. lipids) and lipid supplement types (monounsaturated fatty acid (MUFA) v. polyunsaturated fatty acid (PUFA) mitigate CH4 emissions and can induce low milk fat content via different pathways. The main objective of this experiment was to study the effects of starch-rich or lipid-supplemented diets that induce milk fat depression (MFD) on rumen biohydrogenation (RBH) of unsaturated fatty acids (FA) and enteric CH4 emissions in dairy cows. Four multiparous lactating Holstein cows (days in milk=61±11 days) were used in a 4×4 Latin square design with four periods of 28 days. Four dietary treatments, three of which are likely to induce MFD, were based (dry matter basis) on 56% maize silage, 4% hay and 40% concentrates rich in: (1) saturated fatty acid (SFA) from Ca salts of palm oil (PALM); (2) starch from maize grain and wheat (MFD-Starch); (3) MUFA (cis-9 C18:1) from extruded rapeseeds (MFD-RS); and (4) PUFA (C18:2n-6) from extruded sunflower seeds (MFD-SF). Intake and milk production were measured daily. Milk composition and FA profile, CH4 emissions and total-tract digestibility were measured simultaneously when animals were in open-circuit respiration chambers. Fermentation parameters were analysed from rumen fluid samples taken before feeding. Dry matter intake, milk production, fat and protein contents, and CH4 emissions were similar among the four diets. We observed a higher milk SFA concentration with PALM and MFD-Starch, and lower milk MUFA and trans-10 C18:1 concentrations in comparison to MFD-RS and MFD-SF diets, while trans-11 C18:1 remained unchanged among diets. Milk total trans FA concentration was greater for MFD-SF than for PALM and MFD-Starch, with the value for MFD-RS being intermediate. Milk C18:3n-3 content was higher for MFD-RS than MFD-SF. The MFD seems more severe with MFD-SF and MFD-RS than PALM and MFD-Starch diets, because of a decrease in milk SFA concentration and a stronger shift from trans-11 C18:1 to trans-10 C18:1 in milk. The MFD-SF diet increased milk trans FA (+60%), trans-10 C18:1 (+31%), trans-10,cis-12 CLA (+27%) and PUFA (+36%) concentrations more than MFD-RS, which explains the numerically lowest milk fat yield and indicates that RBH pathways of PUFA differ between these two diets. Maize silage-based diets rich in starch or different unsaturated FA induced MFD with changes in milk FA profiles, but did not modify CH4 emissions.

The aim of the study was to compare the effect of fiber- or starch-rich diets based on grass silage, supplemented or not with bicarbonate, on CH4 emissions and milk fatty acid (FA) profile in dairy cows. The experiment was conducted as a 4 × 4 Latin square design with a 2 × 2 factorial arrangement: carbohydrate type [starch- or fiber-rich diets with dietary starch level of 23.1 and 5.9% on a dry matter basis, respectively], without or with bicarbonate addition [0 and 1% of the dry matter intake, respectively]. Four multiparous lactating Holstein cows were fed 4 diets with 42% grass silage, 8% hay, and 50% concentrate in 4 consecutive 4-wk periods: (1) starch-rich diet, (2) starch-rich diet with bicarbonate, (3) fiber-rich diet, and (4) fiber-rich diet with bicarbonate. Intake and milk production were measured daily and milk composition was measured weekly; CH4 emission and total-tract digestibility were measured simultaneously (5 d, wk 4) when animals were in open-circuit respiration chambers. Sensors continuously monitored rumen pH (3 d, wk 4), and fermentation parameters were analyzed from rumen fluid samples taken before feeding (1 d, wk 3). Cows fed starch-rich diets had less CH4 emissions (on average, -18% in g/d; -15% in g/kg of dry matter intake; -19% in g/kg of milk) compared with fiber-rich diets. Carbohydrate type did not affect digestion of nutrients, except starch, which increased with starch-rich diets. The decrease in rumen protozoa number (-36%) and the shift in rumen fermentation toward propionate at the expense of butyrate for cows fed the starch-rich diets may be the main factor in reducing CH4 emissions. Milk of cows fed starch-rich diets had lower concentrations in trans-11 C18:1, sum of cis-C18, cis-9,trans-11 conjugated linoleic acid (CLA), and sum of CLA, along with greater concentration of some minor isomers of CLA and saturated FA in comparison to the fiber-rich diet. Bicarbonate addition did not influence CH4 emissions or nutrient digestibility regardless of the carbohydrate type in the diet. Rumen pH increased with bicarbonate addition, whereas other rumen parameters and milk FA composition were almost comparable between diets. Feeding dairy cows a starch-rich diet based on grass silage helps to limit the negative environmental effect of ruminants, but does not lead to greater milk nutritional value because milk saturated FA content is increased.

This study investigated the effects of bacterial direct-fed microbials (DFM) on ruminal fermentation and microbial characteristics, methane (CH4) emission, diet digestibility, and milk fatty acid (FA) composition in dairy cows fed diets formulated to induce different ruminal volatile fatty acid (VFA) profiles. Eight ruminally cannulated dairy cows were divided into 2 groups based on parity, days in milk, milk production, and body weight. Cows in each group were fed either a high-starch (38%, HS) or a low-starch (2%, LS) diet in a 55:45 forage-to-concentrate ratio on a dry matter (DM) basis. For each diet, cows were randomly assigned to 1 of 4 treatments in a Latin square design of (1) control (CON); (2) Propionibacterium P63 (P63); (3) P63 plus Lactobacillus plantarum 115 (P63+Lp); (4) P63 plus Lactobacillus rhamnosus 32 (P63+Lr). Strains of DFM were administered at 1010 cfu/d. Methane emission (using the sulfur hexafluoride tracer technique), total-tract digestibility, dry matter intake, and milk production and composition were quantified in wk 3. Ruminal fermentation and microbial characteristics were measured in wk 4. Data were analyzed using the mixed procedure of SAS (SAS Institute Inc., Cary, NC). The 2 diets induced different ruminal VFA profiles, with a greater proportion of propionate at the expense of acetate and butyrate for the HS diet. Greater concentrations of total bacteria and selected bacterial species of methanogenic Archaea were reported for the HS diet, whereas the protozoa concentration in HS decreased. For both diets, bacterial DFM supplementation raised ruminal pH (+0.18 pH units, on average) compared with CON. Irrespective of diet, P63+Lp and P63+Lr increased ruminal cellulase activity (3.8-fold, on average) compared with CON, but this effect was not associated with variations in ruminal microbial numbers. Irrespective of diet, no effect of bacterial DFM on ruminal VFA was observed. For the LS diet, supplementing cows with P63+Lr tended to decrease CH4 emission (26.5%, on average, when expressed per kilogram of milk or 4% fat-corrected milk). Only P63 supplementation to cows fed the HS diet affected the concentration of some milk FA, such as cis isomers of 18:1 and intermediates of ruminal biohydrogenation of polyunsaturated FA. Overall, bacterial DFM could be useful to stabilize ruminal pH. Their effects on CH4 production mitigation and milk FA profile depended on DFM strain and diet and should be confirmed under a greater variation of dietary conditions.

We investigated the effects of increasing extruded linseed supply in diets based on hay (H; experiment 1) or corn silage (CS; experiment 2) on enteric methane (CH4) emission, rumen microbial and fermentation parameters, and rumen and total-tract digestibility. In each experiment, 4 lactating Holstein cows fitted with cannulas at the rumen and proximal duodenum were used in a 4×4 Latin square design (28-d periods). Cows were fed ad libitum a diet [50:50 and 60:40 forage:concentrate on a dry matter (DM) basis for experiments 1 and 2, respectively] without supplementation (H0, CS0) or supplemented with extruded linseed at 5% (H5, CS5), 10% (H10, CS10), and 15% (H15, CS15) of dietary DM (i.e., 1.8, 3.6 and 5.4% total fatty acids added, respectively). All measurements were carried out during the last 8 d of each period. Linseed supply linearly decreased daily CH4 emission in cows fed H diets (from 486 to 289g/d for H0 to H15, on average) and CS diets (from 354 to 207g/d for CS0 to CS15, on average). The average decrease in CH4 per kilogram of DM intake was, respectively, -7, -15, and -38% for H5, H10, H15 compared with the H0 diet, and -4, -8, and -34% for CS5, CS10, and CS15 compared with the CS0 diet. The same dose-response effect was observed on CH4 emission in percent of gross energy intake, per kilogram of nutrient digested, and per kilogram of 4% fat- and 3.3% protein-corrected milk (FPCM) in both experiments. Changes in the composition of rumen volatile fatty acids in response to increasing linseed supply resulted in a moderate or marked linear decrease in acetate:propionate ratio for H or CS diets, respectively. The depressive effect of linseed on total protozoa concentration was linear for H diets (-15 to -40%, on average, for H5 to H15 compared with H0) and quadratic for CS diets (-17 to -83%, on average, for CS5 to CS15 compared with CS0). Concentration of methanogens was similar among H or CS diets. The energetic benefits from the decreased CH4 emission with linseed supply in diets based on hay or corn silage did not improve digestibility or milk yield. Milk efficiency (kg of FPCM/kg of DM intake) was improved with linseed supply up to H10 in H diets and was unchanged in CS diets. Lower CH4 enteric emission from dairy cows fed linseed helps limit the environmental footprint of ruminant livestock.

During early lactation, milk fatty acid (FA) composition is influenced by diet, animal genetics, and the high availability of preformed FA from body-fat mobilization. Long-term prepartum dietary oilseed supplementation could, therefore, modify milk FA composition postpartum in the subsequent lactation through changes in adipose tissue (AT) FA profile. To test this hypothesis, measurements were made in 19 Holstein cows fed grass-based diets containing no additional lipid (control, CTL; n=4) or supplemented with extruded linseeds (EL; n=4), cold-pressed fat-rich rapeseed meal (FRM; n=6), or whole unprocessed rapeseeds (WR; n=5) over 2 consecutive lactations (yr 1 and 2) and 2 dry periods. Oilseed supplements were withdrawn from the diets 23 d before the calving of yr 3, following the end of the previous experimental periods in yr 1 to 2. Thereafter, all cows received a total mixed ration composed of grass silage, grass hay, and concentrates (forage:concentrate ratio of 70:30 on a dry-matter basis). Cows previously fed EL and WR had a lower milk fat content (6.32% for CTL and FRM vs. 5.46% for EL and WR) and yield (1.90kg/d for CTL and FRM vs. 1.61kg/d for EL and WR) during the first week of lactation. Treatment effects on milk fat content and yield did not persist into lactation wk 3 and 7. Whatever the week, EL and WR increased concentration of FA in milk synthesized de novo (i.e., carbon number ≤15; 17.1g/100g of FA for CTL and FRM vs. 22.2g/100g of FA for EL and WR) and decreased concentration and secretion of preformed FA (i.e., carbon number ≥17; 56.1g/100g of FA for CTL and FRM vs. 49.9g/100g of FA for EL and WR). Alterations in milk FA composition may be explained by the lower availability of mobilized FA for uptake by the mammary gland, as indicated by the lower plasma nonesterified FA concentrations for EL and WR compared with CTL and FRM. Prepartum EL feeding increased AT and milk concentration of 18:3n-3 (0.96 vs. 0.79g/100g of milk FA for EL and the other groups, respectively) and intermediates of ruminal 18:3n-3 biohydrogenation. In contrast, FRM increased AT and milk concentration of ruminal cis-9 18:1 biohydrogenation intermediates. However, EL and FRM supplements resulted in a similar profile of 18-carbon FA isomers in AT (yr 2) and milk (yr 3, 4-10 wk after removing oilseeds from the diet). In conclusion, results confirm that long-term feeding of oilseed supplements alter AT FA composition and may influence milk FA composition during periods of extensive body-fat mobilization such as early lactation.

The aim of this work was to investigate the variations of milk fatty acid (FA) composition because of changing paddocks in two different rotational grazing systems. A total of nine Holstein and nine Montbéliarde cows were divided into two equivalent groups according to milk yield, fat and protein contents and calving date, and were allocated to the following two grazing systems: a long duration (LD; 17 days) of paddock utilisation on a heterogeneous pasture and a medium duration (MD) of paddock utilisation (7 to 10 days) on a more intensively managed pasture. The MD cows were supplemented with 4 kg of concentrate/cow per day. Grazing selection was characterised through direct observations and simulated bites, collected at the beginning and at the end of the utilisation of two subsequent MD paddocks, and at the same dates for the LD system. Individual milks were sampled the first 3 days and the last 2 days of grazing on each MD paddock, and simultaneously also for the LD system. Changes in milk FA composition at the beginning of each paddock utilisation were highly affected by the herbage characteristics. Abrupt changes in MD milk FA composition were observed 1 day after the cows were moved to a new paddock. The MD cows grazed by layers from the bottom layers of the previous paddock to the top layers of the subsequent new paddock, resulting in bites with high organic matter digestibility (OMD) value and CP content and a low fibre content at the beginning of each paddock utilisation. These changes could induce significant day-to-day variations of the milk FA composition. The milk fat proportions of 16:0, saturated FA and branched-chain FA decreased, whereas proportions of de novo-synthesised FA, 18:0, c9-18:1 and 18:2n-6 increased at paddock change. During LD plot utilisation, the heterogeneity of the vegetation allowed the cows to select vegetative patches with higher proportion of leaves, CP content, OMD value and the lowest fibre content. These small changes in CP, NDF and ADF contents of LD herbage and in OMD values, from the beginning to the end of the experiment, could minimally modify the ruminal ecosystem, production of precursors of de novo-synthesised FA and ruminal biohydrogenation, and could induce only small day-to-day variations in the milk FA composition.

The aims of this work were to elucidate the potential of using milk fatty acid (FA) concentration to predict cow diet composition and altitude of bulk milk collected in 10 different European countries and to authenticate cow-feeding systems and altitude of the production area using a data set of 1,248 bulk cow milk samples and associated farm records. The predictions based on FA for cow diet composition were excellent for the proportions of fresh herbage [coefficient of determination (R2)=0.81], good for hay, total herbage-derived forages, and total preserved forages (R2>0.73), intermediate for corn silage and grass silage (R2>0.62), and poor for concentrates (R2<0.51) in the cow diet. Milk samples were assigned to groups according to feeding system, level of concentrate supplementation, and altitude origin. Milk FA composition successfully authenticated cow-feeding systems dominated by a main forage (>93% of samples correctly classified), but the presence of mixed diets reduced the discrimination. Altitude prediction reliability was intermediate (R2<0.62). Milk FA composition was not able to authenticate concentrate supplementation level in the diet (<58% of samples correctly classified). Similarly, the altitude origin was not successfully authenticated by milk FA composition (<76% of samples correctly classified). The potential of milk FA composition to authenticate cow feeding was confirmed using a data set representative of the diversity of European production conditions.

The aim of this work was to characterize the fatty acid (FA) profile of milk from intensive dairy farming systems in the Po Plain (Italy) to estimate the costs of the adopted feeding strategies and to simulate the effect of supplementary premiums on the basis of milk FA composition on milk income. Twenty dairy farms with 5 different feeding strategies were studied: 3 corn silage-based systems in which cows were supplemented with a great proportion (CCH), a medium proportion (CCM), or without commercial concentrate mix (CC0), and 2 systems in which part of corn silage was replaced with grass or legume silage (HF) or with fresh herbage (G), cut and fed indoors. Bulk milk was sampled and lactating cow performance, feeding strategies and forage characteristics were recorded through a survey, 3 times during a year. The milk FA supplementary premium was calculated considering C18:3n-3 and saturated FA (SFA) concentrations, and ratio of total cis C18:1 isomers to C16:0. The CCH, CCM, and CC0 systems bought most of their dairy cow feeds off farm, which allowed them to increase milk production to 35,000 L/yr per hectare. Their low dry matter and crude protein self-sufficiency led to higher feeding costs per liter of milk (from €0.158 to €0.184), and highest income over feed cost was achieved only for milk yield performance greater than 10,000 kg/cow per year. The use of homegrown forages in HF and G increased dry matter and crude protein self-sufficiency and reduced the feeding costs per liter of milk from 9 to 22%, compared with the other studied systems, making HF and G feeding economically competitive, even for a lower milk yield per cow. The studied systems highlighted a remarkable variation in FA profiles. The concentrations of C16:0 and SFA were the highest in CCH (31.53 and 67.84 g/100g of FA) and G (31.23 and 68.45 g/100g of FA), because of the larger proportion of commercial concentrate mix in the cow diet. The concentrations of C16:0 and SFA were the lowest in CCM (27.86 and 63.10 g/100g of FA), because of low roughage-to-concentrate ratio in the cow diet, which is known to favor milk fat depression, affecting particularly these FA. The calculated supplementary premium was the highest in the CCM system, based on milk FA profiles from those herds. The HF diet was rich in forages and resulted in greater concentration of C18:3n-3 in milk (0.57 g/100g of FA) than the other systems and thus led to an increase in milk FA supplementary premium. Milk from G and HF milk had the lowest ratio of Σn-6:Σn-3 FA compared with milk from the systems based on higher corn silage proportion in the cow diet (3.71, and 3.25, respectively, vs. 4.58 to 4.78), with the lower ratios being closer to recommendation for human nutrition.

The effect of supplementation of increasing amounts of extruded linseed in diets based on hay (H; experiment 1) or corn silage (CS; experiment 2) was investigated in regard to dairy performance and the milk fatty acid (FA) composition. In each experiment, 4 lactating multiparous Holstein cows were used in a 4 × 4 Latin square design (28-d periods). The cows were fed a diet (50:50 and 40:60 concentrate:forage ratio for experiments 1 and 2, respectively; dry matter basis) without supplementation (H0 or CS0) or supplemented with 5% (H5 or CS5), 10% (H10 or CS10), or 15% (H15 or CS15) of extruded linseed. Regardless of the forage type, diet supplementation with increasing amounts of extruded linseed had no effect on the dry matter intake, milk yield, or protein content or yield. In contrast, the milk fat content decreased progressively from H0 to H10 diets, and then decreased strongly with the H15 diet in response to increasing amounts of extruded linseed. For CS diets, the milk fat content initially decreased from CS0 to CS10, but then increased with the CS15 diet. For the H diets, the milk saturated FA decreased (-24.1g/100g of FA) linearly with increasing amounts of extruded linseed, whereas the milk monounsaturated FA (+19.0 g/100 g), polyunsaturated FA (+4.9 g/100 g), and total trans FA (+14.7 g/100 g) increased linearly. For the CS diets, the extent of the changes in the milk FA composition was generally lower than for the H diets. Milk 12:0 to 16:0 decreased in a similar manner in the 2 experiments with increasing amounts of extruded linseed intake, whereas 18:0 and cis-9 18:1 increased. The response of total trans 18:1 was slightly higher for the CS than H diets. The milk trans-10 18:1 content increased more with the CS than the H diets. The milk cis-9,trans-11 conjugated linoleic acid response to increasing amounts of extruded linseed intake was linear and curvilinear for the H diets, whereas it was only linear for the CS diets. The milk 18:3n-3 percentage increased in a similar logarithmic manner in the 2 experiments. It was concluded that the milk FA composition can be altered by extruded linseed supplementation with increasing concentrations of potentially health-beneficial FA (i.e., oleic acid, 18:3n-3, cis-9,trans-11 conjugated linoleic acid, and odd- and branched-chain FA) and decreasing concentrations of saturated FA. Extruded linseed supplementation increased the milk trans FA percentage.

Changes in the distribution of conjugated linoleic (CLA) and conjugated linolenic (CLnA) acid isomers in milk from Holstein cows in response to 4 different oilseed supplements rich in either cis-9 18:1 or 18:3n-3 were determined over 2 consecutive lactations in 58 and 35 cows during the first and second years, respectively. For the first 5 wk of the first lactation, all cows were fed the same diet. Thereafter, cows received 1 of 5 treatments for 2 consecutive lactations, including the prepartum period. Treatments comprised the basal diet with no additional lipid, or supplements of extruded linseeds (EL), extruded rapeseeds (ER), cold-pressed fat-rich rapeseed meal, or whole unprocessed rapeseeds to provide 2.5 to 3.0% of additional oil in diet dry matter. During indoor periods, cows were housed and received a mixture (3:1, wt/wt) of grass silage and hay, whereas cows were at pasture during outdoor periods. Over the entire study, EL resulted in the enrichment of ∆11,13 CLA, ∆12,14 CLA, trans-9,trans-11 CLA, trans-13,trans-15 CLA, ∆9,11,15 CLnA, and cis-9,trans-11,trans-13 CLnA (identified for the first time in bovine milk fat) in milk fat, whereas ER and cold-pressed fat-rich rapeseed meal in particular, increased milk fat trans-7,cis-9 CLA concentration. With the exception of the first indoor period, whole unprocessed rapeseeds decreased cis-9,trans-11 CLA, trans-9,cis-11 CLA, and trans-10,trans-12 CLA abundance. During the second indoor period, EL increased milk trans-9,cis-11 CLA and trans-10,cis-12 CLA concentrations, but the increases in cis-9,trans-11 CLA, cis-12,trans-14 CLA, trans-11,cis-13 CLA, and cis-9,trans-11,cis-15 CLnA concentrations to EL and ER were lower for the second than first indoor period. In contrast to the indoor periods, EL and ER decreased milk cis-9,trans-11 CLA, trans-9,cis-11 CLA, and trans-10,cis-12 CLA concentrations at pasture. The extent of changes in the relative distribution and abundance of CLA and CLnA isomers in milk fat were related to the nature (rapeseed or linseed) and form of oilseed (extruded, cold-pressed fat-rich meal or whole unprocessed) supplement and their interactions with the composition of the basal diet (conserved grass or pasture and dietary starch content). Furthermore, milk fat CLA and CLnA responses to treatments were repeatable between both outdoor periods. Variations in milk fat content and yield measured during the entire study were significantly and inversely associated with milk trans-10 18:1, trans-10,cis-12 CLA, and in particular, trans-9,cis-11 CLA concentrations.

Persistency of changes in milk fatty acid (FA) composition to 4 different oilseed supplements rich in cis-9 18:1 or 18:3n-3 was determined over 2 consecutive lactations in 58 and 35 Holstein cows during the first and second years, respectively. During the initial 5 wk of the study, all experimental cows were fed the same diet. Thereafter, cows received 1 of 5 treatments for 2 consecutive lactations, including the prepartum period. Treatments comprised the basal diet with no additional lipid, or supplements of extruded linseeds (EL), extruded rapeseeds (ER), cold-pressed fat-rich rapeseed meal (FRM), or whole unprocessed rapeseeds (WR). Oilseeds were offered to provide between 2.5 to 3.0% of additional oil in diet dry matter. During indoor periods, cows received a mixture (3:1, wt/wt) of grass silage and grass hay, whereas cows were at pasture during outdoor periods. Over the entire study, oilseed supplements decreased the concentration of milk FA synthesized de novo and increased 18:0 and cis-9 18:1 content, with a ranking of treatment responses (highest to lowest) of FRM, EL, ER, and WR. Irrespective of period, both EL and FRM increased total milk trans FA content, whereas WR resulted in lower concentrations in milk from grazing cows. Relative to rapeseed, EL resulted in higher increases in milk cis-12,cis-15,trans-12 to -16 18:1, nonconjugated trans 18:2 (especially ∆11,15), and 18:3n-3. In contrast, rapeseed supplements resulted in a greater enrichment of cis-11 18:1, trans-4 to -9 18:1, and cis 20:1 than EL. Changes in milk FA composition to oilseeds were of greater magnitude during indoor than outdoor periods, where oilseed supplements often decreased cis-9,trans-11 conjugated linoleic acid content. During the second indoor period, both EL and ER resulted in higher total trans FA content, trans-10 18:1 in particular, than during the first indoor period, consistent with an interaction between dietary starch content and oilseed supplement. Overall, the extent of changes in milk FA composition were related to the nature (rapeseed or linseed) and form of oilseed (extruded, cold-pressed fat-rich meal or whole unprocessed), and their interactions with the composition of the basal diet (grass silage and hay or pasture; or dietary starch content). Milk FA responses were stable within each period and repeatable over both outdoor feeding periods, with extent of changes being comparable to reports from relatively short-term (1- to 3-mo) studies.

The aim of this study was to evaluate the effects of long-term supplementation with different oilseeds rich in 18:1 cis-9 or 18:3n-3 fatty acids on dairy cow performance over 2 consecutive lactations. This trial involved 58 Holstein cows during the first year and 35 during the second year. During the first 5 wk of the first year, all of the cows were fed the same diet; after a 4-wk transition period, the cows received 1 of 5 treatments for 2 consecutive lactations, including the dry period. Their basal diet was supplemented or not with extruded linseeds or with different forms of rapeseeds: extruded seeds, cold-pressed fat-rich meal, or whole unprocessed seeds. Oilseed amount was calculated to provide 2.5 to 3.0% additional oil in ration dry matter. Cows were fed a grass-based diet (75% grass silage and 25% hay) during indoor periods and grazed during outdoor periods. For the first year of experimentation, oilseed supplementation had no effect on milk, fat, protein, and lactose yields, body weight, or body condition score compared with the control treatment (no oilseed supplementation). During the indoor period, extruded linseed tended to decrease dry matter intake (-1.5 kg/d), whereas all of the oilseed treatments decreased milk protein content without changing protein yield. Cold-pressed fat-rich rapeseed meal decreased milk protein content independently of the period (-0.29 and -0.19 g/100 g for indoor and outdoor periods, respectively), and whole unprocessed rapeseed increased milk fat content during the outdoor period (+0.53 g/100 g compared with the control treatment). During the second year of experimentation, the effects of oilseed supplementation during the outdoor period were similar to those observed during the first outdoor period, but the effects of oilseed supplementation differed between the 2 indoor periods. This was likely due to changes in forage quality and composition and percentage in the ration of the concentrate mixtures. Thus, the effects of oilseed supplementation depended on oilseed nature (rapeseed or linseed) and form (extruded seeds, cold-pressed fat-rich meal, or whole unprocessed seeds) in interaction with the type of basal diet (grass silage and hay or pasture) and the concentrate composition and percentage in the ration. Effects were stable during the first indoor period, repeatable between the 2 outdoor periods, and were similar to effects observed previously in short-term studies (1 to 3 mo).

The aim of this study was to evaluate the effects on dairy performance and milk fatty acid (FA) composition of (i) supplementation with extruded linseed (EL), (ii) supplementation with synthetic or natural antioxidants, namely vitamin E and plant extracts rich in polyphenols (PERP), (iii) cow breed (Holstein v. Montbéliarde) and (iv) time of milking (morning v. evening). After a 3-week pre-experimental period 24 lactating cows (12 Holstein and 12 Montbéliarde) were divided up into four groups of six cows: the first group received a daily control diet (diet C) based on maize silage. The second group received the same diet supplemented with EL (diet EL, fat level approximately 5% of dietary dry matter (DM)). The third group received the EL diet plus 375 IU/kg diet DM of vitamin E (diet ELE). The fourth group received the ELE diet plus 10 g/kg diet DM of a PERP mixture (diet ELEP). Compared with the diet C, feeding EL-rich diets led to lower concentrations of total saturated FA (SFA) and higher concentrations of stearic and oleic acids, each trans and cis isomer of 18:1 (except c12-18:1), non-conjugated isomers of 18:2, some isomers (c9t11-, c9c11- and t11t13-) of conjugated linoleic acid (CLA), and 18:3n-3. The vitamin E supplementation had no effect on milk yield, milk fat or protein percentage and only moderate effects on milk concentrations of FA (increase in 16:0, decreases in 18:0 and t6/7/8-18:1). The addition of PERP to vitamin E did not modify milk yield or composition and slightly altered milk FA composition (decrease in total saturated FA (SFA) and increase in monounsaturated FA (MUFA)). The minor effects of vitamin E may be partly linked to the fact that no milk fat depression occurred with the EL diet. During both periods the Holstein cows had higher milk production, milk fat and protein yields, and milk percentages of 4:0 and 18:3n-3, and lower percentages of odd-branched chain FA (OBCFA) than the Montbéliarde cows. During the experimental period the Holstein cows had lower percentages of total cis 18:1, and c9,c11-CLA, and higher percentages of 6:0, 8:0, t12-, t16/c14- and t13/14-18:1, and 18:2n-6 than Montbéliarde cows because of several significant interactions between breed and diet. Also, the total SFA percentage was higher for morning than for evening milkings, whereas those of MUFA, total cis 18:1, OBCFA and 18:2n-6 were lower. Extruded linseed supplementation had higher effect on milk FA composition than antioxidants, breed or time of milking.

Diets rich in n-3 polyunsaturated fatty acids (PUFA) improve the nutritional value of ruminant products but also increase the risk of lipoperoxidation in plasma and tissues. The relative effectiveness of dietary antioxidants such as vitamin E (vit E) given alone or with plant extracts rich in polyphenols (PERP) containing rosemary, grape, citrus, and marigold was investigated in the plasma of mid-lactation dairy cows given diets enriched in 18:3 n-3. For a 30-d period, the animals were given a maize silage-based diet (control group C, n = 6) or the same basal diet supplemented with extruded linseed rich in 18:3 n-3 [50 g of oil/kg of diet dry matter (DM); group L, n = 6], extruded linseed + vit E (375 international units/kg of diet DM; 7,500 IU/cow per day; group LE, n = 6), or extruded linseed + vit E + PERP (10 g/kg of diet DM; group LEP, n = 5). Plasma susceptibility to lipoperoxidation was evaluated using in vitro parameters of conjugated diene formation (lag phase and maximum oxidation rate). Plasma indicators of lipoperoxidation and antioxidant status were analyzed in the 4 experimental groups as well as the fatty acid (FA) composition of total plasma lipids. At d 30, group L significantly increased plasma cholesterol esters (+57%) and phospholipids (+35%) compared with group C. It also increased plasma n-3 PUFA (4.7-fold increase) to the detriment of n-6 PUFA (-30%), leading to a higher peroxidizability index (+20%). Plasma in vitro lipoperoxidation was higher in group L (rich in 18:3 n-3) than in group C. Vitamin E alone had no effect on lipoperoxidation, whereas vit E in association with PERP lowered lipoperoxidation by increasing the resistance time against peroxidation (+47%) and by decreasing the oxidation rate (-48%) compared with group L at d 30. Surprisingly, in vivo plasma lipoperoxidation estimated by the plasma level of the major lipoperoxidation product (malondialdehyde) was not significantly increased in group L. This study shows, for the first time, that PERP supplied in association with vit E were able to reduce lipoperoxidation in lactating cows given a diet rich in 18:3 n-3, thereby helping to protect cows against the deleterious consequences of lipoperoxidation and potentially ensuring antioxidant potential for 18:3 n-3-enriched dairy products.

Numerous experiments have studied the use of oilseed supplements in cow diets to alter milk fatty acid (FA) composition, but no quantitative synthesis of these studies is currently available. This article reports a meta-analysis of the response of cow milk FA composition to oilseed lipid supplements from linseed, rapeseed, soybeans, and sunflower seed. First, from a database of 145 oilseed supplementation experiments, we collected the mean FA percentages observed with unsupplemented diets and diets supplemented with the 4 oilseeds given as seeds (after various types of processing), as oils (including Ca salts and amides), or in protected forms. Second, we studied the response of the major milk FA percentages to increasing amounts of supplemental lipids from the 4 oilseeds. Responses were nonsignificant, linear, or quadratic, depending on the FA studied and the supplement. Effects of interfering factors, such as supplement form, forage component of the diet, or lactation stage, were difficult to assess from the available data. Third, we studied the response of the major milk FA percentages to increasing dietary intakes of linoleic or linolenic acids, taken separately. Overall, these results confirm the high plasticity of milk FA composition, with the widest variations being observed in the percentages of medium-chain versus C18 FA, and among the C18 in 18:0, cis-18:1, and trans-18:1. The percentages of the polyunsaturated FA cis-9 cis-12-18:2 and 18:3 were less variable, except when protected lipids (mostly formaldehyde treated) were supplied. However, trans-18:1 and polyunsaturated FA (including conjugated linoleic acid) exhibited the greatest variations when expressed relative to their respective basal values (for unsupplemented diets). Oils, compared with seeds, induced greater percentages of trans-18:1 and tended to decrease C6 to C12 FA more. Intakes of 18:2- and 18:3-rich lipid sources did not differ greatly in their effects on short- and medium-chain FA and trans-18:1 percentages, although the profiles of individual 18:1 and 18:2 isomers in milk differed. This meta-analysis provides quantitative estimates, obtained from the extensive literature produced over more than 40 yr, of the impact of oilseed supplements on milk FA composition.
