RESUMO

Although partially hydrogenated oil (PHO) provides foods with outstanding thick tastes and pronounced "creamy" flavor, the high level of artificial trans-fatty acids (TFA; about 30%) limits its usages around the world in the near future. It is necessary to produce trans-free alternatives with similar tastes to PHO. The relationship between sensory attributes and physicochemical characteristics of PHO and four typical specialty fats were therefore analyzed in the present study. PHO exhibited the highest greasiness score (8.19), accompanying by mild creaminess and aftertaste as well as a weak coolness during swallow, which were resulted from the close-packed arrangements of TFA, its cis-counterparts and other long chain fatty acids. None of artificial trans-fats, mainly anhydrous milk fat, cocoa butter, and coconut oil and its fully hydrogenated counterpart, were similar to PHO in terms of these sensory attributes. The unique fatty acid species of PHO and their arrangements contributed to the relatively smooth solid fat content profile and melting-crystallization curve, as well as forming uniform and dense ß' crystal-structures (Db=1.80). The Pearson correlation analyses relevelled that long chain fatty acids, e.g., t-C18:1 and C18:1, and melting final temperatures were generally positive correlated with greasiness, creaminess and aftertaste; whereas these indices were negatively correlated with coolness. The melting enthalpy was highly connected with coolness, which reflected the endothermic effectiveness during the melting process of fats in the mouth. These indices screened by correlation analyses that were strongly correlated with sensory attributes could provide references for producing trans-free alternatives.

Cinnamomum camphora seed kernel oil (CCSKO) is one of the important natural medium chain triglycerides (MCT) resources, with more than 95.00% of medium chain fatty acids found in the world, and has various physiological effects. However, CCSKO has not been generally recognized as a safe oil or new food resource yet. The acute oral toxicity test and a standard battery of genotoxicity tests (mammalian erythrocyte micronucleus test, Ames test, and in vitro mammalian cell TK gene mutation test) of CCSKO as a new edible plant oil were used in the study. The results of the acute oral toxicity test showed that CCSKO was preliminary non-toxic, with an LD50 value higher than 21.5 g/kg body weight. In the mammalian erythrocyte micronucleus test, there was no concentration-response relationship between the dose of CCSKO and micronucleus value in polychromatic erythrocytes compared to the negative control group. No genotoxicity was observed in the Ames test in the presence or absence of S9 at 5000 µg/mL. In vitro mammalian cell TK gene mutation test showed that CCSKO did not induce in vitro mammalian cell TK gene mutation in the presence or absence of S9 at 5000 µg/mL. These results indicated that CCSKO is a non-toxic natural medium-chain oil.

Pterocarya stenoptera is a native deciduous tree species and a candidate for reforestation in the riparian zones of the Three Gorges Reservoir Region of Yangtze River in China. Water treatments of continuous flooding (CF) and periodic flooding-drought (PF) were applied to examine the growth dynamics of 4-month-old P. stenoptera seedlings and its effects on soil chemical properties. Results showed that P. stenoptera seedlings in both CF and PF significantly decreased leaf biomass accumulation and the height and diameter growth as compared to that in control (CK; treatment with well-watered, well-drained soil), respectively. There was no significant difference in stem biomass among the three groups, but root biomass in PF showed severe reduction compared to that in both CK and CF. Total biomass in PF was significantly decreased compared to that in CK, but comparable to that in CF. Furthermore, no significant difference was found between CF and CK in total biomass. Water treatments in the unplanted soil pots significantly influenced soil pH, soil organic matter (OM), total nitrogen (TN), and alkali hydrolysable nitrogen (AN) contents, in contrast to no significant effects in total phosphorus (TP), total potassium (TK), available phosphorus (AP), and available potassium (AK) contents. In P. stenoptera soils, there were significant effects by water treatment, time, and treatment × time in the eight tested soil chemical properties, except treatment in TK and time effect in OM content. Compared to unplanted soils, the growth of P. stenoptera seedlings significantly increased soil pH value and OM, TN, TP, and TK contents, while decreasing AN, AP, and AK contents in CK group, augmented the mean value of each of the tested soil chemical properties with an exception of AK content in CF group, and increased soil pH value and TN, AN, TP, and AP contents with no significant differences in OM, TK, and AK contents in PF group. Given the fact that TN and TP contents significantly increased in P. stenoptera soils as compared to those in unplanted soils, growth of P. stenoptera seedlings should be a successful candidate for restoration within the highly dynamic hydrologic zone of the riparian zones of the Three Gorges Reservoir Region.
