RESUMO

The interest in Pickering emulsions is based on the possibility of replacing classical emulsifiers with solid particles. These emulsions are very attractive in the pharmaceutical field for their stability virtues and as a vehicle to deliver active ingredients. The study aimed to analyze the properties of the residual film of the Pickering emulsions on the human skin compared to conventional systems. For this project, three types of solid particles were used: titanium dioxide, zinc oxide and silicon dioxide. All of them are capable of stabilizing the oil/water interface and thus forming totally emulsified systems. To create an emulsion of reference, a classical surfactant was used as an excipient. Complementary systems containing both particles and the emulsifier were also analyzed. Then, a combined approach between physicochemical and biometrological in vivo analysis was employed. The study proved that Pickering emulsions stabilized by the metal oxides were distinct from the reference emulsion in terms of droplet sizes and organization, rheological and textural responses. Consequently, it impacted the properties of the residual film once the product was applied to the skin. The particle-stabilized emulsions formed a hydrophobic film counter to conventional excipients. Also, the Friction parameter (or the roughness of the film) was directly linked to the quantity of the particles used in the formulation and their perception on the skin surface. The use of the particles blurs the glossy effect of the oil phase. Finally, it was observed that the appearance of the residual film was impacted by the type of the particle, namely TiO2 and ZnO particles.

BACKGROUND: This study hypothesizes that a natural multicomponent emulsifier (Lipidol) could improve production performance in broiler chickens by aiding lipid digestion and addressing digestive system limitations. OBJECTIVES: The study aimed to investigate the effects of dietary emulsifier inclusion on the growth performance, nutrient digestibility, intestinal morphology, faecal microbiology, blood biochemistry and liver enzyme activities of broiler chickens fed low-energy diets. METHODS: The experiment involved 144 one-day-old male broiler chickens split into 4 treatments. Four diets were used: standard metabolizable energy (ME) as a control diet and three low-ME diets, reducing by 100 kcal/kg by adding 0.5, 1 and 1.5 g/kg of exogenous emulsifier (Em). RESULTS: No significant differences were observed in body weight gain and feed intake. However, during the finisher period (25-42 days), supplementation emulsifier to low-ME diets notably improved feed efficiency. Although crude protein, organic matter and ash digestibility remained unaffected, dry matter (DM) digestibility significantly increased in broilers fed low-ME diets with emulsifier. Broilers receiving 0.5 g/kg of emulsifier showed the highest villus width and surface area values. Moreover, including 1.5 g/kg of emulsifier led to the highest villus height to crypt depth ratio. Faecal microbiota, blood biochemistry and liver enzyme activities showed no significant differences. CONCLUSIONS: Emulsifier supplementation compensated for the energy reduction and enhanced performance, DM digestibility and some intestinal morphology parameters in broiler chickens fed low-ME diet. Using 0.5 g/kg of emulsifier per 100 kcal of ME reduction in broiler diets is suggested.

The objective of the experiment was to determine the effects of supplemental SFA sources, lysophospholipids (LPL), and their interaction on production and nutrient digestibility in lactating dairy cows. The experiment was conducted with 48 cows in a randomized complete block design. Cows were blocked (12 blocks total) by parity and days in milk and randomly assigned to 4 dietary treatments in each block (2 × 2 factorial arrangement), i.e., 2 sources of fat supplements, C16:0 (PA)- or C18:0 (SA)-enriched fat, and with or without LPL. The experiment was conducted for 6 wk to measure daily dry matter intake, milk yield, and weekly milk composition. During the last week of the experiment, spot fecal and urine samples were collected to determine total-tract nutrient digestibility. Milk samples in the last week were also collected to analyze the milk fatty acid (FA) profile. All data were analyzed using the MIXED procedure of SAS, where block was used as a random effect and FA, LPL, and the interaction of FA by LPL were used as fixed effects. Week and interactions of week by FA or LPL were included for production measures. Different sources of SFA did not affect dry matter intake and milk yield. However, the PA treatment increased (39.7 vs. 36.8 kg) energy-corrected milk compared with SA due to increased milk fat yield. No effect of LPL on production measures was observed. Total-tract digestibilities of dry matter, organic matter, crude protein, and total FA were not different between the PA and SA groups, but PA increased (41.4% vs. 38.8%) neutral detergent fiber digestibility compared with SA. Supplementation of LPL increased (64.7% vs. 60.5%) total FA digestibility, especially 18-carbon FA (74.1% vs. 68.2%). An interaction of SFA by LPL was found for 16-carbon FA digestibility. The PA diet increased the concentration of 16-carbon FA in milk fat and SA increased the concentration of preformed FA (≥18 carbons). Supplementation of LPL decreased the concentration of trans-10 C18:1. No difference in N utilization and excretion among treatments was observed. In conclusion, the PA diet was more effective in improving milk fat yield of lactating cows compared with SA. Supplementation of LPL increased digestibility of total FA, especially 18-carbon FA but did not affect production.

Pectin extraction from watermelon peel (WP) and pomegranate peel (PP) was carried out using three different extraction methods: classical solvent extraction (CSE), ultrasound-assisted extraction (UAE), and microwave-assisted extraction (MAE). Extraction parameters (pH, temperature, time, and speed/amplitude/power) were optimized to target maximum crude pectin yield (CPY), while the sample-to-solvent ratio (SS) was determined to be fixed at 1:10 w/v at all experiments. CPY was increased by low pH, high temperature, and long time. The pectins obtained at optimum conditions were characterized regarding the physicochemical and rheological properties, and the pectin solutions were found to be typical pseudoplastic fluids. WP pectin extracted with MAE and PP pectin extracted with UAE were determined to have the best emulsifying properties and added to the ice cream formulations. MAE had the maximum CPY of 9.40% for WP (pH = 1.3, 6 min, 596 W) and the best emulsifying properties. UAE had the best emulsifying properties for PP and the CPY was 11.56% in conditions of pH = 1.5, a temperature of 69°C, an extraction time of 29 min, and a 32% amplitude. The use of PP pectin resulted in a significant increase in the apparent viscosity of ice cream mix and also the first dripping time and the hardness of ice cream over commercial emulsifier. Melting properties and hardness values of ice cream with WP pectin were comparatively closer to those of ice cream with commercial emulsifier. On the other hand, the first dripping time and hardness value of ice cream with PP pectin having 60.25 min and 3.84 N, respectively, were higher than those of commercial ice cream having 53.75 min and 2.14 N, respectively. Practical Application: The utilization of WP and PP, which are good sources for pectin production, benefits both a sustainable environment and a sustainable food industry. Pectin extracted from WP and PP as an emulsifier in ice cream can ensure the production of ice creams with good melting properties. Pectin can be used as a healthy, sustainable, and economical alternative emulsifier in the ice cream industry.

1. A study was conducted to assess the impact of supplementing-graded concentrations of emulsifier on the production performance, gut microbial count, and digestibility of nitrogen and energy in broiler chicken fed diets without AGP.2. Male broiler chicks (n = 1500; Vencobb-430), aged one-day-old, were randomly allocated into six dietary groups each with 10 replicates of 25 birds each. A maize-soybean and meat and bone meal-based basal diet without antibiotic (AGP) growth promoter served as negative control (NC). The basal diet was supplemented with BMD (AGP, bacitracin methylene disalicylate-BMD 100 g/T), which served as the positive control (PC). Emulsifier was added to the NC diets at either 250 g/ton in all phases (250-All), 250 g in starter and grower phases, and 500 g in the finisher phase (250:250:500), 250 g in starter and 500 g in both grower and finisher phases (250:500:500) and 500 g in all phases (500 g-All).3. Two broilers per replicate were slaughtered to record carcase traits and gut microbial count on day 43. There was significant improvement in body weight gain (BWG) and reduced FCR in broilers fed 250:250:500 and 250:500:500 g emulsifiers compared to other treatment groups. Carcase traits and faecal microbial count did not differ among treatments. The inclusion of BMD significantly improved nitrogen (N) digestibility compared to the NC group. The digestibility of emulsifier-supplemented groups was similar to those fed by the BMD group except for the 500-All group, which was an intermediary between NC and other emulsifier-fed groups.4. It was concluded that supplementation with emulsifier (250:250:500 or 250:500:500) without antibiotic growth promoter significantly improved FCR and body weight gain similar to broilers receiving antibiotic growth promoter, which was associated with increased ileal digestibility of N and energy.

By-product cottonseed proteins are excellent options for numerous applications due to their superior properties and lower cost. However, its complex folded structure and large molecular weight lead to lower reactivity and insufficient amphiphilicity. Cottonseed protein isolate (CPI) is less-soluble in water. Therefore, we improved the amphiphilicity of CPI with associated hydrolysis, molecular structure unfolding, and activation by alkaline-induced deamidation (at 24, 36, and 72 h) and produced three cottonseed protein hydrolysates CPH 24, 36, and 72. FTIR/UV-CD measurements confirmed the conformational changes and conversion of the structural content. Particle size decreased 2503.4-771.8 nm, while surface hydrophobicity (133.5-326.7), carboxyl content (1.13 × 10Ö¾3-2.09 × 10Ö¾3), and flexibility increased, signifying hydrolysis, unfolding, and amphiphilicity improvement. Longer deamidation (CPH 72) exhibited the best properties, its prepared emulsions were long-term stable under all the environmental stresses without visible phase separation after at least 40 days of storage except at pH 4. Compared to CPI, it had smaller droplets (939.3-264.9 nm) and larger absolute ζ-potential (-26.5 to -58.0 mV). From the in-vitro cytotoxicity test, deamidated CPI is extremely safer than commonly used synthetic surfactants. This research provides a new method for producing multifunctional emulsifiers from CPI, which could be utilized in the development of functional foods/non-foods.

We evaluated the effects of infusing an exogenous emulsifier (polysorbates-C18:1) either into the rumen or abomasum on fatty acid (FA) digestibility and production responses of lactating dairy cows. Nine ruminally cannulated multiparous Holstein cows (170 ± 13.6 d in milk) were assigned to a treatment sequence in replicated 3 × 3 Latin squares with 18-d periods consisting of 7 d of washout and 11 d of infusion. Treatments were abomasal infusions of water carrier only into the rumen and abomasum (control, CON), 30 g/d polysorbate-C18:1 (T80) infused into the rumen (RUM), or 30 g/d T80 infused into the abomasum (ABO). Emulsifiers were dissolved in water and delivered at 6-h intervals (total daily infusion was divided into 4 equal infusions per day). Cows were fed the same diet that contained [% diet dry matter (DM)] 32.2% neutral detergent fiber (NDF), 16.1% crude protein, 26.5% starch, and 3.41% FA (including 1.96% FA from a saturated FA supplement containing 28.0% C16:0 and 54.6% C18:0). Two orthogonal contrasts were evaluated: (1) the overall effect of T80 {CON vs. average of the T80 infusions [1/2 (ABO + RUM)]}, and (2) the effect of ABO versus RUM infusion. Compared with CON, infusing T80 increased the digestibilities of NDF (2.85 percentage units), total (4.35 percentage units), 16-carbon (3.25 percentage units), and 18-carbon FA (4.60 percentage units), and tended to increase DM digestibility and total and 18-carbon FA absorption. Compared with RUM, ABO decreased the intakes of total (28 g/d), 16-carbon (7 g/d), and 18-carbon FA (19 g/d); tended to increase the digestibility of total and 18-carbon FA; and had no effect on the absorption of total, 16-carbon, or 18-carbon FA. Production responses did not change among our treatments. In conclusion, infusing 30 g/d polysorbates-C18:1 increased NDF and total, 16-carbon, and 18-carbon FA digestibility. Compared with RUM, ABO tended to increase the digestibilities of total and 18-carbon FA; however, this may be related to the fact that ABO reduced the intakes of total, 16-carbon, and 18-carbon FA, not necessarily due to better emulsifying action per se. In summary, ABO and RUM both improved FA absorption.

Cleanliness of eggs is critical in successful hatching egg operations. The objective of this study was to investigate the effect of trans-cinnamaldehyde nanoemulsion (TCNE) wash treatments, as a sanitation strategy, on embryonic development in fertilized eggs. Trans-cinnamaldehyde is a generally recognized as safe status phytochemical obtained from cinnamon bark. TCNE were prepared with emulsifiers Tween 80 (Tw.80) or gum Arabic and lecithin (GAL) by sonication. Day-old fertilized eggs were subjected to TCNE wash treatments at 34°C for 5 min, followed by 18 d of incubation at 37.7°C. Washing of fertilized eggs with TCNE-Tw.80 or GAL at 0.48% concentration did not significantly alter the egg weight at d 18 of incubation, as compared to baseline and control (P > 0.05). The egg weight loss (calculated as percentage) did not differ significantly between eggs subjected to nanoemulsion wash treatments and control eggs (P > 0.05). In case of embryo fertility and mortality, for baseline and control, ∼ 95% fertility rate was achieved, with combined early and midterm mortality at 16%. Likewise, TCNE-Tw.80 or TCNE-GAL resulted in 95% fertility (P > 0.05), with 11% and 17% combined early and midterm mortality, respectively. Furthermore, TCNE wash treatments did not differ significantly in yolk sac and embryo weight (as compared to control) and did not affect the length of the d 18 embryo (P > 0.05). Moreover, TCNE wash treatments did not alter tibia weight and length (P > 0.05). Results suggest that TCNE could potentially be used as a natural antimicrobial for fertilized egg sanitation. Further studies in industry settings are warranted.

The current study aimed to investigate the effect of supplementing an emulsifier, xylanase or a combination of both on the growth performance, digestibility of nutrients, microflora activity and intestinal morphology in broiler chickens fed triticale-based diets. A total of 480 one-day-old male Ross 308 broiler chicks were randomly assigned to four dietary treatments: control (CON), control with an added emulsifier (EMU), control with added xylanase (ENZ) and control with emulsifier and xylanase (EMU+ENZ). Xylanase supplemented groups had diminished feed intake (FI) and enhanced body weight gain (BWG) only within the starter period (p ≤ 0.05), while the feed conversion ratio (FCR) in the ENZ and ENZ+EMU groups was lower than CON during the whole experiment period. There was significant ENZ and EMU interaction in apparent metabolisable energy corrected to N equilibrium (AMEN) as well as NDF and DM retention. The viscosity of ileum digesta was the lowest in groups with enzyme addition. Interactions show that caecal galactosidase-α activity was higher in the CON group compared to EMU supplementation, but similar to ENZ and EMU+ENZ (p < 0.05). Activity of glucosidase-α was higher in the CON group related to inclusion of EMU or ENZ alone (p < 0.05) but did not differ from the combined supplementation of EMU+ENZ, whereas the glucosidase-ß activity was higher in the CON group compared to all supplemented diets (p < 0.05). Caecal C2 concentration was greater in the CON group than supplemented diets (p < 0.05). The expression of FATP1, PEPT1 and SGLT1 in the ileum was downregulated after emulsifier addition (p ≤ 0.05). The addition of emulsifier and xylanase indicates a mutual effect on broiler chickens' performance and nutrient digestibility in triticale diets with palm oil during the first nutritional period. Additionally, concomitantly additives usage influenced intestinal microbiome activity, as well.

α-Tocopherol, as an oil-soluble vitamin with strong antioxidant activity. It is the most naturally abundant and biologically active form of vitamin E in humans. In this study, a novel emulsifier (PG20-VES) was synthesized by attaching hydrophilic twenty-polyglycerol (PG20) to hydrophobic vitamin E succinate (VES). This emulsifier was shown to have a relatively low critical micelle concentration (CMC = 3.2 µg/mL). The antioxidant activities and emulsification properties of PG20-VES were compared with those of a widely used commercial emulsifier: D-α-Tocopherol polyethylene glycol 1000 succinate (TPGS). PG20-VES exhibited a lower interfacial tension, stronger emulsifying capacity and similar antioxidant property to TPGS. An in vitro digestion study showed that lipid droplets coated by PG20-VES were digested under simulated small intestine conditions. This study showed that PG20-VES is an efficient antioxidant emulsifier, which may have applications in the formulation of bioactive delivery systems in the food, supplement, and pharmaceutical industries.

This study aimed to investigate the effect of metabolizable energy (ME) levels and exogenous emulsifier supplementation on growth performance, apparent ileal digestibility (AID), body composition, and carcass yield in broilers. The experiment was designed as a 2  ×  2 factorial arrangement with ME levels (control ME vs. reduced 100 kcal/kg ME) and exogenous emulsifier supplementation (0 vs. 0.05 %). A total of 1,000 one-day-old male Cobb 500 broilers were randomly allocated into 4 treatments with 10 replicates and 25 birds per floor pen for 42 d (starter, d 0-14; grower, d 14-28; and finisher, d 28-42). Growth performance was measured biweekly, and AID was evaluated using the indigestible indicator method during d 21 to 28. Body composition was measured at d 35 using Dual-Energy X-Ray Absorptiometry (DXA), and carcass yield was evaluated at d 42. Data were analyzed using the GLM procedure for 2-way ANOVA. Results indicated reduced ME decreased body weight gain and feed intake (P < 0.05). Exogenous emulsifier supplementation improved FCR during the finisher and overall periods (P < 0.05). Reduced ME decreased AID of dry matter (DM), fat, and gross energy (P < 0.05) but increased AID of Val (P = 0.013). Exogenous emulsifier supplementation increased AID of DM, crude protein, His, Ile, Lys, Thr, Val, Pro, Ala, and Tyr (P < 0.05). Reduced ME decreased dressing rate and the relative weight of abdominal fat (P < 0.05). DXA results indicated that reduced ME decreased bone mineral density and fat (P < 0.001) but increased bone mineral contents and muscle (P < 0.05). Therefore, a reduction of 100 kcal/kg ME in the diet had adverse effects on the growth performance and carcass characteristics, but the use of exogenous emulsifier supplementation improved growth performance and nutrient digestibility.

In our previous experiment, we found that fats with pre-emulsification (PreE), a new supplemented mode of emulsifier, had an improved bioavailability for Pekin ducks than fats without PreE based on dietary EE utilization. Therefore, this study was conducted to investigate the effects of the supplemented mode of emulsifier (PreE vs. emulsifier direct supplementation) on the growth performance, serum biochemical index, quality of meat and skin fat, and nutrient utilization in Pekin ducks. A total of 640 healthy 10-day-old Pekin male ducks (408.65 ± 12.00 g) were randomly allocated into 4 treatments with 16 replicates of 10 birds each. The 4 dietary treatments were as follows: the positive control group (PC; the oil supplemented amount of 6%), the negative control group (NC; the oil supplemented amount of 5.4%), the emulsifier group (E; NC diet with an emulsifier added directly), and the oil pre-emulsification group (PreE; NC diet with oil PreE). The results showed reducing the amount of fat in the diet (NC vs. PC) significantly decreased growth performance and quality of skin fat, and affected serum lipid metabolism (P < 0.05). Interestingly, the body weight (BW), body weight gain (BWG), and the shear force of skin fat were increased, but the feed to gain ratio (F/G) was markedly decreased in the PreE group (P < 0.05) compared to those in the NC group, and these levels were similar to those in the PC group (P > 0.05). Additionally, the utilization of dietary dry matter (DM), ether extract (EE), and total phosphorous (TP) were increased, but the activity of aspartate aminotransferase (AST) in serum was decreased in the PreE group compared to those in the NC group (P < 0.05). Furthermore, compared to the E group, the F/G was decreased (P < 0.05), and the utilization of dietary EE, the shear force of skin fat and content of collagen in skin fat were markedly increased (P < 0.05) in the PreE group. However, no differences were observed (P > 0.05) in growth performance between the group administered a direct supplementation of emulsifier and the control groups (PC and NC). These results indicate that the negative effect of reducing the oil supplementation amount (-0.6%) in the diet can be restored by supplementation with emulsifier, especially by oil with PreE.

This study explores cherry waste valorization through sustainable green approaches. Two low-methoxy rhamnogalacturonan I (RG-I) enriched pectins were produced via mild aqueous extraction from cherry pomaces before and after yeast fermentation (RCUP and RCFP: RG-I, 52.02% and 48.81%; methylation degree, 44.71% and 37.55%). Both pectins contained galacturonic acid, arabinose, galactose, rhamnose and glucose. Compared with RCFP, RCUP was a more linear pectin with higher Mw, wider Mw distribution, longer homogalacturonans (HGs) and shorter side chains. Fermentation increased protein, mannose, glucose and galactose contents, and decreased pectin yield, total phenolic/anthocyanin and rhamnose contents, melting temperature and enthalpy, degradation enthalpy, viscosity, storage and loss moduli. Fermentation induced a much greater loss of HG (from 43.55% to 14.65%) than RG-I (from 52.02% to 48.81%). RCUP and RCFP possessed significant antioxidant activities and exhibited satisfactory emulsifying effects at 2%. RCUP was a more effective emulsifier. RCFP had a higher hydroxyl radical scavenging capacity.

The aim of this study was to determine the effect of emulsifier and multicarbohydrase enzyme supplementation on performance, nutrient utilization, and apparent metabolizable energy-nitrogen (AMEN) value of broiler diets containing rapeseed meal (RSM) as well as their influence on the gut morphological structures, excretion of total and free sialic acid, and cecum concentration of short-chain fatty acids (SCFAs) in broiler chickens. A total of 384 male broiler chicks were assigned to four dietary treatments. The diet of the control treatment (CON) consisted of soybean, maize, and RSM (5% in starter, 7% in grower, 15% in finisher) with soybean and palm oils. The diets used for the experimental treatments were the control diet supplemented with an emulsifier (EMU), enzyme (ENZ), or both (EMU + ENZ). The duodenum (n = 10/treatment) and ileum (n = 10/treatment) digesta samples were assessed to determine nutrient digestibility: crude protein (CP), ether extract (EE), starch, Ca. Throughout the experimental period, EMU + ENZ treatment indicated the lowest total average feed intake and feed conversion ratio, with the highest average weight gain among the studied treatments (P < 0.05). The EMU + ENZ treatment also resulted in higher (P < 0.05): apparent prececal digestibility (APD) of CP, total tract neutral detergent fibre (NDF) degradation, apparent total tract digestibility (ATTD) of EE, villus height to crypt depth ratio (P < 0.1). The highest APD of EE was noted in the EMU treatment (P < 0.05). No significant differences were found in the AMEN values of the diets. A greater jejunum villi surface area was found in groups supplemented by enzyme compared to CON (P < 0.05). The EMU + ENZ treatment presented lower sialic acid excretion in the ileum and concentration of cecum SCFAs compared to the CON treatment (P < 0.05). The obtained results indicate that simultaneous usage of additives had beneficial effect on production parameters, nutrient digestibility, NDF degradation, as well as gut mucosa morphology. Based on the SCFAs concentration results, separate or simultaneous addition of emulsifier or/and enzyme did not provoke excessive fermentation activity of cecal bacteria.

This study investigated the impacts of individual emulsifiers on the physicochemical stability, antioxidant ability, and in vitro digestion behavior of lutein-loaded nanostructured lipid carriers (NLCs). NLCs particles stabilized by ethyl lauroyl arginate, rhamnolipid, or tea saponin were fabricated by high-pressure microfluidization method. Differential scanning calorimetry and X-ray diffraction results confirmed the regulatory effect of emulsifiers on the crystallization behavior of NLCs. NLCs stabilized by rhamnolipid presented higher encapsulation efficiency (94.73%) for lutein than those stabilized by tea saponin (90.39%) or ethyl lauroyl arginate (88.86%). Meanwhile, the stability of embedded lutein during storage or photothermal treatments was greatly enhanced. Individual emulsifiers, together with lutein, endowed NLCs with excellent antioxidant capacity. During in vitro digestion, rhamnolipid-stabilized NLCs showed the slowest release of free fatty acids (50.87%) and provided an optimal sustained release for lutein with relatively high bioaccessibility (23.01%).

The quality and processing characters of shortening are strongly influenced by the temperature fluctuation during storage and handling. Some chemical components, especially the presence of emulsifiers in shortening formula might be attributed to the quality change of shortening in response to temperature fluctuation. In this work, the effect of emulsifiers on the mechanical properties, crystalline structure, and crystalline transformation of fat was investigated with a palm oil-based shortening under varied storage temperature (4°C, 12 h - 28°C, 12 h, cycle reciprocating). Results show that the shortening without emulsifiers deteriorated easily with a severe separation of liquid oil and reduction of hardness, which was owing to the aggregation of crystals, and the appearance to high proportion of ß crystals at the later stage in storage (day 7 and day 14). However, the addition of the emulsifiers such as sorbitan monopalmitate (SMP), Glyceryl monostearate (GMS), and Glycerol monopalmitate (GMP) ameliorated the production of ß crystals effectively. Among the tested emulsifiers, the shortening adding GMS showed the best quality, which remained stable in multiple cycles up to 14 times. The findings will guide the use of emulsifiers in palm fat processing.

Galangal is rich in flavonoids and polysaccharides but underutilized. In this study, galangal flavonoids and polysaccharides (GP-HN and GP-UN) were obtained by segmented extraction, used for chemical composition determination/structural characterization, and constructed for the emulsion delivery system. The results showed that galangin accounted for 71.45 % of total flavonoids. GP-HN and GP-UN were prepared by enzymatic-assisted high-temperature and ultrasonic extraction, which were low-molecular-weight pectin-type polysaccharides mainly constructed by galacturonic acid, galactose, and arabinose. GP-UN was the best emulsifier due to interfacial activities, emulsifying properties, interfacial resistance to bile salts displacement abilities, and anti-lipid digestion abilities of GPs. GP-UN emulsion could stably deliver flavonoids. This study presented a method for orderly reorganizing flavonoids and polysaccharides, guiding for utilization of whole bioactive components in galangal.

Waxy maize starch (WMS) and tea polyphenols (TPs) were combined to prepare WMS/TP nanoparticles through precipitation. Physicochemical properties and emulsifying capacity of the WMS/TP nanoparticles were investigated. The results showed that the addition of TPs enhanced the hydrophobicity of the WMS nanoparticles, and the size of the WMS/TP nanoparticles increased with increasing TP addition (from 5 % to 15 %). The emulsions stabilized by the WMS/TP nanoparticles exhibited excellent physical stability. After 15 days of storage, the emulsified phase volume fraction remained at 100 % in the emulsion stabilized by the WMS/TP nanoparticles (15 % of TPs). Moreover, the WMS/TP nanoparticles also enhanced the oxidative stability of the emulsions characterized by a lower peroxide value and thiobarbituric acid reactive substances. The results of this study demonstrate that WMS/TP nanoparticles are potential food-grade Pickering emulsifiers with the capacity not only to stabilize emulsions but also to inhibit oil oxidation of the emulsions.

Enterobacter ludwigii is an oral growing bacteria responsible for teeth blackening. It can form biofilm. The exopolysaccharide (EPS) cluster associated with biofilm formation was isolated using ethanol precipitation and the formaldehyde-sodium hydroxide method. The chemical characterization of EPS was done using UV spectroscopy, Fourier transforms infrared spectroscopy, and gas chromatography-mass spectrometry. Energy-dispersive X-ray spectroscopy (EDS) analysis of  EPS has revealed the presence of carbon > boron > nitrogen > phosphorous > calcium > sulfur > iron > potassium > magnesium. The carbon content was quite high (72.72-77.63%) in the EPS due to polysaccharide composition. The study showed the presence of different monosaccharides glucose (16.91%), galactose (4.25%), mannose (4.04%), and xylose (8.06%) as the major components of EPS. It appears such as thin filaments with three-dimensional structure, compact, irregular lumps and stacked flakes of polysaccharides. The EPS was also examined using different 1D, 2D Nuclear Magnetic Resonance (NMR) spectroscopy techniques (1H NMR, 13C NMR, 1H-1H COSY, 1H-13C HSQC, 1H-13C HMBC) with different deuterated solvents (Protic and aprotic solvents for exchangeable protons), which showed eight distinguished monomers (seven confirmed by HSQC spectrum and one from 1H spectrum). Semi-crystalline nature and thermal stability were confirmed by X-ray diffractogram and differential scanning calorimetry analysis, respectively. The EPS further shows antioxidant potential in a concentration-dependent manner. It can form a stable emulsion against different edible oil that makes it promising alternative for use in food, and pharmaceutical industries. This study evaluated the effect of an emulsifier on the energetic values of lipids fed to yellow-feathered chickens and established prediction equations for the metabolizable energy (ME) of lipids fed with and without an emulsifier. One hundred and ninety-two Chinese yellow-feathered roosters [Wen's Yellow A; initial body weight (BW) = 2.37 ± 0.33 kg] were individually weighed, divided into four BW blocks, and randomly assigned within block to the 16 dietary treatments with replicates of three roosters. The diets consisted of a corn basal diet or the basal diet supplemented with 8% of corn oil (CO), soybean oil (SO), cottonseed oil (CSO), rice bran oil (RBO), palm oil (PO), modified palm oil (MPO), or lard were evaluated with or without an emulsifier (0.02% of diet) in an 8 × 2 factorial arrangement. Diets were fed for 8 d, with 4 d for adaptation to diets and another 4 d for excreta collection. There was an interaction between lipid sources and emulsifier on ME (apparent ME and N-corrected apparent ME) of the lipids (P < 0.05). Addition of 0.02% emulsifier had no effect on the ME of CO, SO, PO, or lard, but reduced the ME of CSO (P < 0.05) and MPO (P < 0.05), and tended to increase the ME of RBO (0.05 ≤ P < 0.10). There was a quadratic relationship between ME and concentration of stearic (C18:0) (P < 0.05) or linoleic acid (C18:2) (0.05 ≤ P < 0.10), and a linear function between ME and concentration of oleic acid (C18:1) or monounsaturated fatty acids (P < 0.05) in diets without emulsifier. The ME of lipids could be predicted by the concentration of C18:0 with C18:1 or with monounsaturated fatty acid without an emulsifier. With an emulsifier, the ME concentration was affected linearly by the concentration of myristic acid (C14:0), palmitic acid (C16:0), C18:2, polyunsaturated fatty acids, unsaturated fatty acids, saturated fatty acids, and the ratio of unsaturated to saturated fatty acids (U:S) (P < 0.05). Prediction equations for the ME of lipid were established on the content of C18:0, C16:0, C14:0, SFA, and U:S. These results indicated that the ME of RBO is positively affected by emulsifiers, but the ME of CSO and MPO declines with emulsifiers. These inconsistent results may be influenced by the relationship between ME and concentration of fatty acid across sources of dietary lipids.


Considering that commercial diets generally contain 3% to 8% added lipids to provide up to 20% metabolizable energy (ME) in broiler diets, the addition of emulsifier in diets was believed to improve the digestibility of fat. In this experiment, seven sources of lipid with or without emulsifier addition were evaluated for ME in yellow-feathered broilers. Without emulsifier addition, ME values were observed highest for cottonseed oil [4,129 kcal/kg∙ dry matter (DM)] and lowest for rice bran oil (4,036 kcal/kg∙DM) and lard (4,015 kcal/kg∙DM). With emulsifier addition, ME values were highest for soybean oil (4,177 kcal/kg∙DM) and lowest for modified palm oil (4,059 kcal/kg∙DM) and lard (4,024 kcal/kg∙DM). The emulsifier has a positive effect on the ME of rice bran oil, but the ME of cottonseed oil and modified palm oil declines with the addition of emulsifiers. These inconsistent results may be influenced by the relationship between ME and concentration of fatty acids across sources of dietary lipids. Lipids with high concentrations of unsaturated fatty acids are more easily emulsified and better digested than those rich in saturated fatty acids. Additionally, the concentration of C18:0 and C18:1 in lipids contributed to the main variance of ME prediction equation.
