ABSTRACT

Idiopathic intellectual disability (IID) encompasses the cases of intellectual disability (ID) without a known cause and represents approximately 50% of all cases. Neural progenitor cells (NPCs) from the olfactory neuroepithelium (NEO) contain the same information as the cells found in the brain, but they are more accessible. Some miRNAs have been identified and associated with ID of known etiology. However, in idiopathic ID, the effect of miRNAs is poorly understood. The aim of this study was to determine the miRNAs regulating the expression of mRNAs that may be involved in development of IID. Expression profiles were obtained using NPC-NEO cells from IID patients and healthy controls by microarray. A total of 796 miRNAs and 28,869 mRNAs were analyzed. Several miRNAs were overexpressed in the IID patients compared to controls. miR-25 had the greatest expression. In silico analysis showed that ROBO2 was the target for miR-25, with the highest specificity and being the most down-regulated. In vitro assay showed an increase of miR-25 expression induced a decrease in ROBO2 expression. In neurodevelopment, ROBO2 plays a crucial role in episodic learning and memory, so its down-regulation, caused by miR-25, could have a fundamental role in the intellectual disability that, until now, has been considered idiopathic.

ABSTRACT

We investigate whether the clinical presentations and outcomes of Legionella pneumonia in human immunodeficiency virus (HIV)-infected patients were comparable to those seen in non-HIV-infected patients (case-control design). HIV-infected individuals presented neither a more severe disease nor a worse clinical outcome than matched HIV-negative control patients.

ABSTRACT

Baking is a healthier alternative to frying, since texture, color, smell, and flavor are developed, without adding oil. The objective was to estimate the moisture content in potato slices, during baking using Fick's law of diffusion to model internal moisture transport and to assess the impact on quality attributes. Moisture transport kinetics were examined at three baking temperatures of 120, 130, and 140°C. Fick's law was employed to estimate average moisture content using different methods: considering both a constant (method of slopes by subperiods, MSS; and method of successive approximations, MSA) and a variable (represented as a quadratic function of time, QFT) behavior of effective diffusivity (De). Three quality variables were analyzed: water activity (aw, dew point hygrometry), total color difference (∆E, colorimetry), and fracturability (F, universal testing machine). The diffusivity estimated with the time-varying De method provided a more realistic description of moisture migration during baking. The aw, ∆E, and F for baked potato slices ranged from 0.234 to 0.276, 17.9 to 24.6, and 5.20 to 5.49 N, respectively. These attributes imply improved stability and extended shelf life, showing typical colors and texture changes for baked snacks. These changes are linked to variations in diffusivity, influenced by the size and quantity of micropores within the food structure. This study could allow an accurate prediction of mass transfer by considering variable De, facilitating the optimization of baking conditions. PRACTICAL APPLICATION: The analysis of the moisture content using Fick's law, considering a time-varying diffusivity, enables the optimization of the baking process for foods. This helps minimize the occurrence of defective products.

ABSTRACT

The heat and momentum transfer of tomato puree through a concentric-tube heat exchanger over a range of generalized Reynolds number (0.05 < Re < 66.5) was experimentally and numerically analyzed. Thermophysical and rheological properties of tomato puree (12°Brix) were measured from 20 to 60°C. The velocity, pressure, and temperature were calculated using the computational fluid dynamics (CFD) software FLUENTTM with temperature-dependent transport properties. The thermal operation of the concentric-tube exchanger was satisfactorily predicted using CFD, indicating accurate measurement of tomato puree properties with temperature variations. A concordance was found between the calculated Fanning friction factor and generalized Reynolds with the experimental correlation. A modified Sieder-Tate correlation was established, which allows properly expressing the Nusselt number as a function of the Peclet number. Simple correlations for the mechanical work and the heat transfer rate as a function of the volumetric flow rate were derived. The thermal efficiency was high at low puree flow rates but decreased with higher rates. However, at high flow rates, ceased its decline, instead showing a slight improvement. The analysis confirmed higher heat transfer rates in the concentric-tube heat exchanger compared to a plain tube at low puree flow rates. The results offer valuable insights for assessing diverse operational conditions in dairy, beverage, sauce, and concentrated food industries. Additionally, they also enhance the analysis and design of concentric-tube heat exchangers. PRACTICAL APPLICATION: The knowledge of the rheological and hydrodynamical behavior of fluids in concentric-tube heat exchangers allows to explore a set of different operating conditions to improve the yield and effectiveness on the system heating/cooling design.

To export Mexican mango fruit, it is required to comply with phytosanitary regulations, which implies heat transfer. Foods are biological systems with a dynamic behavior and, when they are thermally processed, their thermophysical properties change with temperature. Suitable simulation of heat transfer with temperature-dependent thermophysical properties can provide proper estimations of temperature histories to perform heat penetration analyses. The objective of this study was to predict temperatures within mango and immersion times by varying the mass of the fruit and water temperature during hydrothermal treatments. Thermal conductivity, specific heat capacity, and apparent density of ''Kent'' mango peel and pulp were determined. Finite element analysis was used to simulate heat transfer within the mango. Thermal conductivity and density were different for peel and pulp, but thermal diffusivity for both materials was not different. Predicted temperature histories adjusted properly to experimental data throughout the heating process. This indicates that thermophysical properties as a function of temperature for mango peel and pulp, the convective coefficient, the finite element model, and the methodology used to perform the estimations can be useful in the design of hydrothermal treatments for mango. PRACTICAL APPLICATION: Proper simulation of heat transfer with temperature-dependent thermophysical properties during hot water treatments for mango can provide accurate temperature histories and profiles that allow the prediction of temperatures within the fruit or immersion times by varying the mass and temperature of the heating medium. This will allow a subsequent heat penetration study to predict larval mortality, facilitating the design of quarantine treatments.

ABSTRACT

The genus Phragmatopoma included, until now, only four valid species with distributions in Eastern Pacific and Western Atlantic. Since most taxonomic studies of Phragmatopoma include poor and uninformative descriptions, the aim of this work was to expand previous descriptions of the sabellariids of Phragmatopoma genus from Tropical America. Sabellariids from two Mexican collections, the Reference Collection of El Colegio de la Frontera Sur, Chetumal, and Laboratorio de Sistemática de Invertebrados Marinos (LABSIM), Universidad del Mar, Puerto Ángel, were revised. Six hundred sixty-six specimens were revised, and eight species were identified. Three new species are proposed: Phragmatopoma balbinae n. sp., from southern Mexican Pacific, P. carlosi n. sp., from northern Mexican Pacific and P. villalobosi n. sp., from Pacific of Costa Rica. Another morphospecies, Phragmatopoma sp., from Pacific of Costa Rica is characterized; however, it is only one specimen. Two species, Phragmatopoma digitata and P. peruensis, previously buried in the synonyms of P. virgini (type locality: Straits of Magellan, Chile), are considered as valid species. Also, new records of P. californica and P. caudata were made in Baja California and Veracruz, respectively. Additionally, the use of standard terminology for the description of opercular paleae and chaetae is proposed.

ABSTRACT

The objective of this work was to model the mass transfer in corn tortilla baking using different approaches for effective diffusivity based on the Fick's law of diffusion and to evaluate the impact of the process on quality parameters. The 1st one assumes constant effective diffusivity (method of slopes by subperiods and method of successive approximations) and the 2nd one considers variable effective diffusivity (quadratic function of time and Weibull distribution). In addition, the Weibull distribution was applied to fracturability. The effective moisture diffusivity inside the tortilla during baking is not constant and the estimations generated when considering variable diffusivity with quadratic time and Weibull distribution showed better fits (both, R2 = 0.999) to the average moisture content. Quality parameter fracturability was affected by the baking process and the Weibull model adequately described (R2 = 0.996) the fracturability behavior. This work will allow an adequate estimation of the concentration profiles and histories for mass transfer operations in products that can be represented as an infinite plate. The obtained analytical solutions with variable diffusivity will help to estimate the optimal conditions of the baking process to achieve the required final moisture content for baked corn tortilla shells. PRACTICAL APPLICATION: The analytical solutions of the Fick's law of diffusion for the moisture content in products that can be represented as an infinite plate, considering variable diffusivity, can be useful in studies when accurate estimations of effective diffusivity and concentration are needed.

ABSTRACT

The objective of this work was to simulate heat transfer during blanching (90 °C) and hydrocooling (5 °C) of broccoli florets (Brassica oleracea L. Italica) and to evaluate the impact of these processes on the physicochemical and nutrimental quality properties. Thermophysical properties (thermal conductivity [line heat source], specific heat capacity [differential scanning calorimetry], and bulk density [volume displacement]) of stem and inflorescence were measured as a function of temperature (5, 10, 20, 40, 60, and 80 °C). The activation energy and the frequency factor (Arrhenius model) of these thermophysical properties were calculated. A 3-dimensional finite element model was developed to predict the temperature history at different points inside the product. Comparison of the theoretical and experimental temperature histories was carried out. Quality parameters (firmness, total color difference, and vitamin C content) and peroxidase activity were measured. The satisfactory validation of the finite element model allows the prediction of temperature histories and profiles under different process conditions, which could lead to an eventual optimization aimed to minimize the nutritional and sensorial losses in broccoli florets.

Introduction: The knowledge of polychaetes from Oaxaca, Mexico, is represented by 41 families and 241 species, nevertheless, 148 species are considered questionable. The majority of taxonomic studies of polychaetes in Oaxaca have taken placed on estuarine zones or commercial ports, sidelining other marine ecosystems. Objective: To identify the polychaeta-fauna from three different marine ecosystems in Oaxaca, Mexico. Methods: Specimens analyzed came from the Sección de poliquetos de la Colección Científica at the Laboratorio de Sistemática de Invertebrados Marinos, Universidad del Mar. The material deposited in the collection was collected between 2007-2017; additionally, new collect were realized in 2017. For each locality, the family and species richness were estimated using the accumulation function of linear dependence model. Results: One hundred lots and 273 specimens were revised. Seventy-one taxa, belonging to 47 genera and 21 families were identified, only twenty of these taxa are confirmed species (28 %). Chacahua Lagoon had the highest richness and relative abundance with 37 taxa and 149 specimens, Agua Blanca was identified 21 taxa and 92 specimens, and from San Agustín 19 taxa and 32 specimens. Sabellariidae had the highest relative abundance (58 specimens), while Phyllodocidae presented the highest species richness (12 species). Conclusions: This study adds 75 new records of taxa of polychaetes to the coast Oaxaca, which increase the knowledge in this animal group, now represented by 304 species, belonging to 154 genera and 42 families.


Introducción: El conocimiento de poliquetos en Oaxaca, México, está representado por 41 familias y 241 especies, sin embargo, 148 especies son consideradas cuestionables. La mayoría de los estudios taxonómicos de poliquetos en Oaxaca se han enfocado en zonas estuarinas o puertos comerciales, dejando de lado otros ecosistemas marinos. Objetivo: Identificar la poliqueto-fauna de tres ecosistemas diferentes de Oaxaca. Métodos: Los especímenes analizados pertenecen a la Sección de poliquetos de la Colección Científica del Laboratorio de Sistemática de Invertebrados Marinos, Universidad del Mar. El material depositado en la colección fue colectado entre 2007-2017; adicionalmente, se realizaron nuevas colectas en 2017. Para cada localidad, la riqueza de especies y familias fue estimada utilizando la función de acumulación del modelo de dependencia lineal. Resultados: Se revisaron 100 lotes y 273 especímenes. Se identificaron 71 taxones, pertenecientes a 47 géneros y 21 familias, solo 20 de estos taxones corresponden a nombres específicos (28 %). La Laguna de Chacahua presentó la mayor riqueza y abundancia relativa con 37 taxones y 149 especímenes, en Agua Blanca se identificaron 21 taxones y 92 especímenes, y para San Agustín 19 taxones y 32 especímenes. La familia Sabellariidae tuvo la mayor abundancia relativa (58 especímenes), mientras que Phyllodocidae presentó la mayor riqueza de especies (12 especies). Conclusiones: Con este estudio se añaden 75 nuevos registros de poliquetos para la costa de Oaxaca, incrementando el conocimiento de este grupo, ahora representado por 304 especies pertenecientes a 154 géneros y 42 familias.

ABSTRACT

Objetivo: realizar una revisión teórica relacionada con el efecto de la cafeína en el comportamiento animal en estudios que incluyen tareas de aprendizaje, memoria y/o actividad motora, con el fin de analizar algunas condiciones experimentales. Materiales y métodos: búsqueda de artículos publicados entre los años 1995 a 2018 en las bases de datos Pubmed y Scopus por medio de la relación de palabras clave: cafeína,café, ratas, ratones, atención, memoria y aprendizaje. Se revisaron las tareas de aprendizaje y/o actividad motora, el tipo y género de cepas, así como el tratamiento con cafeína. También se incluyeron artículos de revisión de años anteriores al rango de tiempo, con el fin de ampliar el estado del arte de la cafeína y sus efectos. Resultados: mientras algunos estudios indican que la cafeína ejerce un efecto positivo sobre actividades motoras y cognitivas, otros estudios concluyen lo contrario. La variación en las condiciones experimentales de los estudios analizados puede incidir en los resultados obtenidos. Conclusión: el amplio rango de condiciones experimentales en una misma tarea de memoria no permite que se delimite el espectro de variables en los protocolos de investigación con cafeína, por ello no se logra identificar variables biológicamente importantes que, al ser identificadas, pueden convergen hacia un conjunto de procedimientos estandarizados en paradigmas específicos de aprendizaje..(AU)


Objective: the aim is realize theoretical review related to the effect of caffeine on animal behavior in studies that include task learning, memory and motor activity, with the purpose of study some experimental conditions. Materials and methods: searching of articles published since 1997-2013 in the PubMed and Scopus databases, through the relationship of keywords: caffeine, coffee, rats, mice, attention, memory and learning. The tasks of learning and/or motor activity were reviewed; the type and genus of strains, as well as the treatment with caffeine were analyzed. Results: while some studies indicate that caffeine have a positive effect on motor and cognitive activities, other studies conclude otherwise. The variation in the experimental conditions of the analyzed studies may influence the results obtained. Conclusion: the wide range of experimental conditions in the same memory task does not allow the spectrum of variables to be delineated in the caffeine research protocols, accordingly is not possible to identify biologically important variables that, when identified, may converge towards a Set of standardized procedures in specific learning paradigms..(AU)
