Various management practices can influence milk quality traits in dairy cattle. As an example, an increasing investment in automatic milking system to substitute milking parlors has been observed in the last 2 decades in dairy farms which could have affected certain bulk milk quality traits. What is more, milking practices can also affect certain milk parameters; as an example, teat disinfectants containing I are used in commercial farms where pre- or postdipping is performed, leading to presence of some I in the bulk milk. However, this trace mineral is also supplied in cows' diet to fulfill their nutritional requirements, partly contributing to the milk I final concentration. Therefore, the aim of this study was to evaluate the sources of variation of milk I along with other traditional milk quality traits. A total of 91 dairy farms in northeastern Italy were enrolled in the study. In each farm, diet and bulk milk samples were collected on the same day for chemical analysis. Concentration of I, in particular, was determined in both milk and feed with gold standard. Pearson correlations were calculated among the traits available for milk and diet, and a general linear model was used to test significance of fixed effects (feeding system, milking system, farming system, herd size, herd stage of lactation, and sampling month) on milk quality traits including the I concentration. In the case of milk I, diet I and presence of I-based predipping and postdipping teat disinfect application were also tested as fixed effects. Results showed a positive linear correlation between milk and diet I content (correlation coefficient [r] = 0.78). Although milk I was also positively correlated with lactose content (r = 0.25), dietary I was not correlated with other milk traits. Milk I content was significantly affected by dietary I, I-based predipping teat disinfectant application, and herd composition. Compared with conventional farms, organic farms showed lower protein content and greater somatic cell score (SCS) but similar milk I. Milking system significantly affected only lactose content and SCS of milk. Sampling month was only significant for milk urea nitrogen and herd composition, feeding system, herd size, and herd average days in milk did not modify milk gross composition and SCS. In conclusion, dietary supply of I is the main factor affecting milk I concentration and findings suggest that I level in milk can be naturally improved in dairy cows by modulating the I content in the diet administered. However, further research is needed to evaluate the effect of I-based sanitizers on milk I.

Portable handheld devices based on near-infrared (NIR) technology have improved and are gaining popularity, even if their implementation in milk has been barely evaluated. Thus, the aim of the present study was to assess the feasibility of using short-wave pocket-sized NIR devices to predict milk quality. A total of 331 individual milk samples from different cow breeds and herds were collected in 2 consecutive days for chemical determination and spectral collection by using 2 pocket-sized NIR spectrophotometers working in the range of 740 to 1,070 nm. The reference data were matched with the corresponding spectrum and modified partial least squares regression models were developed. A 5-fold cross-validation was applied to evaluate individual device performance and an external validation with 25% of the dataset as the validation set was applied for the final models. Results revealed that both devices' absorbance was highly correlated but greater for instrument A than B. Thus, the final models were built by averaging the spectra from both devices for each sample. The fat content prediction model was adequate for quality control with a coefficient of determination (R2ExV) and a residual predictive deviation (RPDExV) in external validation of 0.93 and 3.73, respectively. Protein and casein content as well as fat-to-protein ratio prediction models might be used for a rough screening (R2ExV >0.70; RPDExV >1.73). However, poor prediction models were obtained for all the other traits with an R2ExV between 0.43 (urea) and 0.03 (SCC), and a RPDExV between 1.18 (urea) and 0.22 (SCC). In conclusion, short-wave portable handheld NIR devices accurately predicted milk fat content, and protein, casein, and fat-to-protein ratio might be applied for rough screening. It seems that there is not enough information in this NIR region to develop adequate prediction models for lactose, SCC, urea, and freezing point.

Moving from conventional (CMS) to automatic (AMS) milking systems could impact milk quality. Moreover, the type and preservation methods of the forages used in the total mixed ration (TMR) (such as alfalfa hay -HTMR- or corn silage -STMR-) have been demonstrated to modify milk composition. Thus, this study investigated the effect of implementing AMS and different diet forage types on the quality of Italian Holstein-Friesian bulk milk. Milk samples (n = 168) were collected monthly from 21 commercial farms in northern Italy during a period of 8 mo. Farms were categorized into 4 groups according to their milking system (CMS vs AMS) and diet's forage type (HTMR vs STMR). Milk quality data were analyzed through the mixed procedure for repeated measurement of SAS with the milking system, diet's forage type, and sampling day as fixed effects. Milking through the AMS led to lower milk fat, freezing point and ß-lactoglobulin A, longer coagulation time, and higher K content, pH and ß-lactoglobulin B than CMS. Cows fed STMR produced milk with greater fat, protein, casein, Mg content, titratable acidity and ß-lactoglobulin A, while reduced curd firming time, freezing point and ß-lactoglobulin B than those fed with HTMR. In conclusion, milk quality is not only altered by the diet's forage type and characteristics but also by the milking system.

Milk filtration procedures are gaining relevance in the dairy industry because milk ultra- and nanofiltrates are used to increase milk processing efficiency, and as additives for products with improved nutraceutical properties. This study aimed to develop Fourier-transformed mid-infrared spectroscopy calibrations for ultra- and nanopermeate and retentate fractions of defatted and delactosated milk. A total of 154 samples from different milk fractions were collected and analyzed using reference methods to determine protein, solids-not-fat, glucose, and galactose content. The obtained values were matched with their respective Fourier-transformed mid-infrared spectroscopy spectra to develop new prediction models. Calibrations for each trait were built following 3 different approaches to get the best prediction models: (1) using the entire data set, (2) using 3 subsets based on component concentrations (level approach), and (3) using hierarchical clusters calculated with pairwise Mahalanobis distance among spectra (cluster approach). Calibrations were developed using partial least squares regression, after removing low signal-to-noise ratio wavelengths, and validated through a leave-one-out cross-validation procedure. In addition, the accuracy of the predicted values within each fraction was checked for each approach. Dividing the data set into subsets improved prediction models for each trait and for the samples in each milk fraction. Without considering milk fraction, the best improvement was observed for glucose and galactose. Glucose ratio performance deviation in cross-validation (RPD) increased from 7.42 to 11.31 and 11.06, for cluster and level approaches, respectively, whereas galactose RPD increased from 8.86 to 11.69 and 11.27 for cluster and level approaches, respectively. Considering milk fractions, the best improvement was observed for protein content, where RPD ranged from 0.08 to 6.06 for the whole data set calibration, whereas it ranged from 0.43 to 40.34 for the subset calibration approaches. Cluster and level approaches to build calibration models were comparable for samples from different fractions, suggesting that the 2 subsetting protocols should be both investigated to get the best prediction performances.

BACKGROUND: The new European Regulation 1169/2011 concerning nutrition declaration of food products compels the addition of saturated fatty acids, whereas the declaration of monounsaturated and polyunsaturated fatty acids remains voluntary. Therefore, the industry is interested in a more rapid, easy and less cost-effective analysis method for accomplishing this labelling regulation. The present study aimed to evaluate the ability of near infrared transmittance spectroscopy (wavelengths between 850 and 1050 nm) to predict the fatty acid (FA) composition of commercial processed meat samples (n = 310). RESULTS: Good predictions were achieved for the absolute content of saturated, unsaturated, monounsaturated and polyunsaturated FA, as well as ω-6 groups, and also for a few individual FA (C16:0, C18:0, C18:1n9, C18:2n6 and 18:1n7), with the coefficient of determination in cross-validation being > 0.90 and the residual prediction deviation being > 3.15. Unsatisfactory models were obtained for the relative content of FA. CONCLUSION: Near infrared transmittance spectroscopy can be considered as a reliable method for predicting the main groups of FA in processed meat products, whereas predictions of individual FA are less reliable. © 2017 Society of Chemical Industry.

Feed additives including natural bioactive compounds (BCs) in combination with vitamin E (VitE) and organic Se could mitigate animal stress associated with intensive livestock farming due to their anti-inflammatory and antioxidant properties. Yeast and yeast derivate are included in feed additives as probiotic products and digestion promoters. Scutellaria baicalensis is a source of bioactive compounds and has been tested in monogastrics, exhibiting many immunostimulating and hepato-protective activities. However, the literature lacks information regarding S. baicalensis effects on beef cattle performance and health status. The aim of the present study was to evaluate the impact on beef cattle's feed intake, health and oxidative status, and growth performances of the inclusion of a commercial supplement (CS) containing VitE, organic Se, yeast derivate, and S. baicalensis extract during the fattening and finishing period. A total of 143 Charolaise male cattle were allotted into 12 pens of 11-12 animals each and assigned to a control ( 463.9 ± 21.48 body weight - BW) or a treated ( 469.8 ± 17.91  BW) group. Each group included two replicates of three pens. The treated groups were supplemented with 20  g CS animal - 1 d - 1 . Feed intake was measured monthly on a pen base during two consecutive days. Total mixed ration and fecal samples were collected at three time points (monthly, from November to February) and pooled by replicate for the analyses to monitor digestibility. Blood samples were individually collected at the beginning and at the end of the trial for oxidative status and metabolic profile determination. Final BW and carcass weight were individually recorded to calculate average daily gain, feed conversion ratio, and carcass yield. Similar feed digestibility between groups were observed during the whole experiment. Feed intake, growth performances, final body weight, average daily gain, feed conversion rate, oxidative status, and metabolic profile were not affected by the dietary inclusion of the tested CS indicating no detrimental effect of the treatment. Different doses of this product should be tested in the future in order to provide a more complete report on the product efficacy.

Flexitarians have reduced their meat consumption showing a rising interest in plant-based meat alternatives with 'meaty' characteristics, and we are witnessing an unprecedented growth of meat substitutes in the Western market. However, to our knowledge, no information regarding the 'simulated beef burgers' nutritional profile compared to similar meat products has been published yet. Here we show that, whilst both plant-based and meat-based burgers have similar protein profile and saturated fat content, the former are richer in minerals and polyunsaturated fatty acids. We found that the most abundant minerals in both categories were Na, K, P, S, Ca, and Mg; being Na and S content similar between groups. Only six amino acids differed between categories, being hydroxyproline exclusively in meat-based burgers. Plant-based burgers revealed fourfold greater content of n-6 than meat-based burgers, and greater short-chain fatty acids proportion. Our results demonstrate how 'simulated beef' products may be authenticated based on some specific nutrients and are a good source of minerals. We believe that there is a need to provide complete and unbiased nutritional information on these 'new' vegan products so that consumers can adjust their diet to nutritional needs.

Scientific evidence demonstrates that plant feed additives (PFA) can be a viable alternative to synthetic antioxidant vitamins in poultry nutrition. PFA are represented by plants, essential oils, plant extracts, and by-products from herbal or crop processing. The use of PFA in the feed industry has increased in recent years as their biologically active compounds (polyphenols) have demonstrated antimicrobial and antioxidant effects in food-producing animals. However, few trials have directly compared the effects of PFA with synthetic vitamins. After a systematic literature review of studies comparing the effects of PFA and synthetic vitamins on poultry products in the last 20 years (2000-2020), a total of 44 peer-reviewed articles were included in the present work. A positive effect of PFA on poultry products' oxidative stability during storage, organoleptic characteristics, and fatty acids profile has been observed without a specific impact on their performances. The effects of PFA are variable but often similar to those of vitamin E, suggesting the opportunity for a partial substitution of the latter in poultry diets.

In the last two decades, the interest in natural plant feed additives (PFA) as alternatives to synthetic vitamins in livestock nutrition has increased. After a systematic review, a total of 19 peer-reviewed papers published between 2000 and 2020 were retained to evaluate the antioxidant effects of PFA compared to synthetic antioxidant vitamins (mainly vitamin E; VitE) in livestock nutrition. These studies demonstrated that PFAs could be as efficient as VitE in counteracting oxidative stress in pigs, rabbits, and ruminants. However, PFAs only positively affected animals' growth performance and feed efficiency in some monogastric studies. The PFA can affect antioxidant enzyme activity in a dose- and method of administration-dependent manner. The antioxidant capacity of both PFA and VitE were depressed in cows fed with diets rich in polyunsaturated fatty acids. Variability among studies could be related to species differences. Despite the interest of the feed industry sector in PFA, there are still very few studies evaluating their antioxidant effect in species other than poultry.

Plant feed additives (PFA) such as essential oils, extracts, and by-products from plant processing can be included in poultry diets. A total of 39 peer-reviewed articles were selected from the literature published in the last 20 years (2000-2020) comparing PFA antioxidant effects with synthetic antioxidant vitamins (mainly vitamin E) in poultry nutrition. The PFA can be used as an effective nutritional strategy to face poultry's oxidative stress with positive impact also on their productivity and efficiency. They can partially or completely replace antioxidant synthetic vitamins (the latter administered at doses between 150 and 500 mg/kg) in animal diets, sometimes affecting important physiological functions or expressing synergistic effect with the synthetic antioxidants. It is crucial to take into consideration the issues related to the absorption and the metabolism of these additives and their interaction with gut microbiota. However, some form- and dose-dependent negative effects on growth performances are observed.

The interest for safe and natural foods of animal origin is currently increasing the use of plant feed additives (PFA) as antioxidants in animal nutrition. However, studies with livestock animals dealing with PFA as antioxidants are scarce. The aim of the present review was to evaluate the antioxidant impact of PFA compared with synthetic vitamins on animal food product yield and quality. For this purpose, peer-reviewed studies published between 2000 and 2020 were collected. Most papers were carried out on ruminants (n = 13), but PFA were also tested in swine (n = 6) and rabbits (n = 2). The inclusion of PFA in the diets of pigs, rabbits, and ruminants improved the products' quality (including organoleptic characteristics and fatty acids profile), oxidative stability, and shelf life, with some impacts also on their yields. The effects of PFA are diverse but often comparable to those of the synthetic antioxidant vitamin E, suggesting their potential as an alternative to this vitamin within the diet.

This study aimed to assess the feasibility of visible/near-infrared reflectance (Vis-NIR) and near-infrared transmittance (NIT) spectroscopy to predict total and gelatinized starch and fiber fractions in extruded dry dog food. Reference laboratory analyses were performed on 81 samples, and the spectrum of each ground sample was obtained through Vis-NIR and NIT spectrometers. Prediction equations for each instrument were developed by modified partial least squares regressions and validated by cross- (CrV) and external validation (ExV) procedures. All studied traits were better predicted by Vis-NIR than NIT spectroscopy. With Vis-NIR, excellent prediction models were obtained for total starch (residual predictive deviation; RPDCrV = 6.33; RPDExV = 4.43), gelatinized starch (RPDCrV = 4.62; RPDExV = 4.36), neutral detergent fiber (NDF; RPDCrV = 3.93; RPDExV = 4.31), and acid detergent fiber (ADF; RPDCrV = 5.80; RPDExV = 5.67). With NIT, RPDCrV ranged from 1.75 (ADF) to 2.61 (acid detergent lignin, ADL) and RPDExV from 1.71 (ADL) to 2.16 (total starch). In conclusion, results of the present study demonstrated the feasibility of at-line Vis-NIR spectroscopy in predicting total and gelatinized starch, NDF, and ADF, with lower accuracy for ADL, whereas results do not support the applicability of NIT spectroscopy to predict those traits.

Due to the increasing interest in organic farming, an overview of this research area is provided through a bibliometric analysis conducted between April and May 2019. A total of 320 documents were published up until 2018 on organic livestock farming, with an annual growth rate of 9.33% and a clear increase since 2005; 268 documents have been published in 111 journals. Germany is the country with the largest number of published papers (56 documents). Authors' top keywords (excluding keywords used for running the search) included: animal welfare (29 times), animal health (22 times), cattle (15 times), grazing (10 times), and sheep (10 times). This could indicate that more research has been done on cattle because of the importance of this species in Germany. Moreover, the prevalence of the terms 'animal welfare' and 'animal health' may indicate that the research on organic livestock production has been focused on these two areas. The bibliometric analysis indicates that: i) countries focused the organic livestock production research on their main production, and ii) more research in species other than cattle and sheep is needed.

This study aimed to describe metabolic, oxidative, and mineral blood profiles of Saanen does through lactation compared with Mediterranean breed clusters (Maltese and Rossa Mediterranea, and Jonica, Garganica, and Girgentana). Milk and blood samples of 57 dairy goats (9-10 goats per breed) were collected from the 2nd to the 30th week of lactation every 2-3 weeks. Saanen showed greater milk yield and somatic cell score, and lower fat and protein percentage through lactation (p < 0.05) than the Mediterranean breed clusters. Blood analysis revealed that stage of lactation had a greater impact than breed cluster, except for uric acid, alkaline phosphatase, and aspartate aminotransferase. Plasmatic non-esterified fatty acids indicated a greater negative energy balance in Saanen than the other breed clusters during early and medium lactation stages (p < 0.05). Serum Cl, Mg, and Ca increased in all the breed clusters from early to the following stages of lactation (p < 0.05). No significant prooxidant/antioxidant imbalances were detected in any of the three clusters during the entire lactation. In conclusion, Mediterranean breeds tended to recover earlier from negative energy balance than Saanen, but effects of breed or stage of lactation on long-term oxidative stress indicators were not evident.

The pet food industry is interested in performing fast analyses to control the nutritional quality of their products. This study assessed the feasibility of near-infrared spectroscopy to predict mineral content in extruded dry dog food. Mineral content in commercial dry dog food samples (n = 119) was quantified by inductively coupled plasma optical emission spectrometry and reflectance spectra (850-2500 nm) captured with FOSS NIRS DS2500 spectrometer. Calibration models were built using modified partial least square regression and leave-one-out cross-validation. The best prediction models were obtained for S (coefficient of determination; R2 = 0.89), K (R2 = 0.85), and Li (R2 = 0.74), followed by P, B, and Sr (R2 = 0.72 each). Only prediction models for S and K were adequate for screening purposes. This study supports that minerals are difficult to determine with NIRS if they are not associated with organic molecules.

Fatty acid (FA) profile plays an important role on human health and on sensory quality of dairy products. There is few information about breed influence on milk FA profile of local goat breeds. This study aimed to characterize and compare the milk FA profile of 5 local endangered goat breeds (Garganica, Girgentana, Jonica, Maltese, and Mediterranean Red) and a cosmopolitan breed (Saanen) reared in the same farm during a complete lactation. A total of 252 milk samples were collected monthly from 42 goats (7 goats per breed) and analyzed for gross composition and FA profile. Individual FA was determined using gas-chromatography. Data were analyzed using a mixed model with repeated measures with breed and week of lactation as fixed effects. Results showed that the FA profile was significantly affected by week of lactation and only few FA by breed effect (p < 0.05). Overall, the main differences were found between Saanen and local breeds. This study contributed to the characterization of goat milk FA profile, and it may be of interest for the valorization of milk from local goat breeds which seem to have a healthier profile than milk of the cosmopolitan breed.

Very little information about local breed goat milk is available, which is relevant for biodiversity preservation and local cheese production. This study aimed to evaluate the effect of breed and week of lactation on milk mineral profile of five Italian local breeds (Garganica, Girgentana, Jonica, Maltese and Mediterranean Red) and a cosmopolitan breed (Saanen). Sixty goats (10 per breed) from an experimental farm were enrolled in the study and sampled every 2 weeks for milk gross composition analysis. In addition, an individual milk sample was collected monthly from 42 goats (seven goats per breed) for mineral determination through inductively coupled plasma optical emission spectrometry. Data were analysed using a mixed linear model with repeated measures, including breed and week of lactation as fixed effects. Week of lactation affected mineral contents, except for B, being lower in early than late lactation, whereas, breed affected only P, Mg and Zn. Mediterranean Red and Jonica breeds' milk was richer in P than Maltese, and in Zn than Maltese, Girgentana and Saanen breeds. For Mg, only Saanen differed from Maltese. Such information might be useful for the valorisation of goat milk produced by autochthonous breeds.

Studies on goat milk have mainly focused on cosmopolitan breeds and very limited information is available on local breeds, which is important for biodiversity preservation and local cheese production. The aim of this study was to evaluate the breed effect on milk yield, composition and somatic cell score (SCS) of five local Italian goat breeds (Garganica, Girgentana, Jonica, Maltese and Mediterranean Red) compared with a cosmopolitan specialized dairy breed (Saanen). A total of 60 goats (10 per breed) from an experimental farm were enrolled in the study. Milk yield, composition and SCS were recorded and analyzed every 2 weeks during the entire lactation. Data were analyzed using a mixed model with repeated measures. Saanen yielded between 0.27 and 0.62 kg day - 1 more milk than the local breeds. Among local breeds, Maltese and Jonica were the most productive, with an average of 1.28 and 1.25 kg day - 1 , respectively, while Mediterranean Red, Garganica and Girgentana produced ≤ 1  kg day - 1 . Saanen had the highest SCS (6.81) and the lowest fat content (3.26 %). In relation to protein, Garganica showed the greatest content (3.71 %), and Saanen had a similar content to other local breeds (3.42 %) except for Maltese, which was lower (3.11 %). Saanen and Garganica had the lowest lactose percentage (4.28 % and 4.26 %, respectively). All breeds followed a similar pattern across lactation: SCS and fat and protein content peaked at the end of the lactation, whereas lactose percentage was highest at the beginning of the lactation. Differences between Saanen and the local breeds for milk yield, composition and SCS were consistent across lactation. In conclusion, local breeds produced less milk but with lower SCS and greater fat and lactose content than the Saanen cosmopolitan breed, suggesting a better milk quality.

This study estimated the effect of Holstein-Friesian, Brown Swiss, Jersey, Simmental and Alpine Grey cattle breeds on milk mineral contents (Ca, Mg, P, K, and Na) in multibreed herds using data predicted with mid-infrared spectroscopy. The dataset included 139,821 observations from 16,566 cows and 977 herds. Fixed effects considered in the mixed model were breed, parity, stage of lactation and first-order interactions, and random effects were cow, herd-test-date, and the residual. Multiple comparisons of least squares means were performed for the main effect of breed, parity, and stage of lactation using Bonferroni adjustment. Holstein-Friesian yielded milk with the lowest fat, protein, and casein concentration, and Ca, Mg, and P contents, whereas Jersey cows produced milk with the greatest fat, protein, and casein concentration, and Ca and Mg contents. Results of this study suggest that mixing milk from different breeds could enhance milk composition and technological ability, and therefore contribute to improve dairy industry efficiency.

In developed countries, dogs and cats frequently suffer from obesity. Recently, gut microbiota composition in humans has been related to obesity and metabolic diseases. This study aimed to evaluate changes in body composition, and gut microbiota composition in obese Beagle dogs after a 17-wk BW loss program. A total of six neutered adult Beagle dogs with an average initial BW of 16.34 ± 1.52 kg and BCS of 7.8 ± 0.1 points (9-point scale) were restrictedly fed with a hypocaloric, low-fat and high-fiber dry-type diet. Body composition was assessed with dual-energy X-ray absorptiometry scan, before (T0) and after (T1) BW loss program. Individual stool samples were collected at T0 and T1 for the 16S rRNA analyses of gut microbiota. Taxonomic analysis was done with amplicon-based metagenomic results, and functional analysis of the metabolic potential of the microbial community was done with shotgun metagenomic results. All dogs reached their ideal BW at T1, with an average weekly proportion of BW loss of -1.07 ± 0.03% of starting BW. Body fat (T0, 7.02 ± 0.76 kg) was reduced by half (P < 0.001), while bone (T0, 0.56 ± 0.06 kg) and muscle mass (T0, 8.89 ± 0.80 kg) remained stable (P > 0.05). The most abundant identified phylum was Firmicutes (T0, 74.27 ± 0.08%; T1, 69.38 ± 0.07%), followed by Bacteroidetes (T0, 12.68 ± 0.08%; T1, 16.68 ± 0.05%), Fusobacteria (T0, 7.45 ± 0.02%; T1, 10.18 ± 0.03%), Actinobacteria (T0, 4.53 ± 0.02%; T1, 3.34 ± 0.01%), and Proteobacteria (T0, 1.06 ± 0.01%; T1, 1.40 ± 0.00%). At genus level, the presence of Clostridium, Lactobacillus, and Dorea, at T1 decreased (P = 0.028), while Allobaculum increased (P = 0.046). Although the microbiota communities at T0 and T1 showed a low separation level when compared (Anosim's R value = 0.39), they were significantly biodiverse (P = 0.01). Those differences on microbiota composition could be explained by 13 genus (α = 0.05, linear discriminant analysis (LDA) score > 2.0). Additionally, differences between both communities could also be explained by the expression of 18 enzymes and 27 pathways (α = 0.05, LDA score > 2.0). In conclusion, restricted feeding of a low-fat and high-fiber dry-type diet successfully modifies gut microbiota in obese dogs, increasing biodiversity with a different representation of microbial genus and metabolic pathways.
