RESUMO

A collaborative study IMEP-115 was organized by the European Union Reference Laboratory for Heavy Metals in Feed and Food (EURL-HM) to validate a method for the determination of methylmercury in seafood. The method was based on a liquid-liquid extraction with an organic solvent and with an aqueous cysteine solution. The final quantitation was done with an elemental mercury analyzer. Fifteen laboratories experienced in elemental mercury analyses, from 10 European countries, took part in the exercise. Five test items were selected to cover the concentration range from 0.013 to 5.12 mg/kg. All test items were reference materials certified for the methylmercury mass fraction: DOLT-4 (dogfish liver), TORT-2 (lobster hepatopancreas), SRM 2974a (mussel), SRM 1566b (oyster), and ERM CE-464 (tuna). Participants also received a bottle of ERM CE-463 (tuna) to test their analytical method before starting the collaborative study. Method validation showed adequate accuracy and acceptable precision for all test items, thus fitting its intended analytical purpose. The repeatability RSD ranged from 3.9 to 12.3%, while the reproducibility RSD ranged from 8.4 to 24.8%.

Diet is the major route of exposure to arsenic (As), with rice and rice products as food groups with relatively high As levels. This study was aimed at determining the concentrations of total arsenic (total As) and inorganic arsenic (InAs) in rice and rice products. The dietary exposure and health risks for infant and adult population were also estimated. Brown varieties of rice showed higher As levels than white rice (189 vs 132 µg/kg). Toddlers and infants presented the highest dietary exposure to total As (4.08 and 3.99 µg/day, respectively), but unlike the rest of population groups, the main contributor was organic arsenic. Focusing on the contribution of each food item, rice represents the major contributor to InAs exposure by the adult population, while baby cereals and breakfast cereals are the most important contributors for infant exposure. Anyhow, none of the population groups exceeded the lower limit of the BMDL01 range (from 0.3 to 8.0 µg/kg body weight/day) set by EFSA in any of the three exposure scenarios (high, mean, and low) hereby considered. Finally, consumption of white rice varieties or pre-cooked rice, as well as washing rice before cooking, are recommended in order to minimize the exposure to arsenic.

In 2017, a monitoring study was conducted in Catalonia (Spain) to analyse, in widely consumed foodstuffs, the concentrations of arsenic (As), cadmium (Cd), mercury (Hg) and lead (Pb), as well as those of inorganic As (InAs) and methylmercury (MeHg). Health risks were estimated for various population groups, classified according to age. A continued reduction of dietary exposure to these elements was observed when comparing the results from the current and previous studies performed during the last 17 years. This reduction would be associated to a decrease of As, Cd, Hg and Pb concentrations in food, as well as by changes in dietary habits. None of the adult groups exceeded the safety threshold established by the EFSA, but toddlers, infants and children exceeded the PTWI for Cd and MeHg. The greatest intake of Cd and MeHg corresponded to infants, being due to the consumption of cuttlefish and hake. The consumption of these species should be reduced to two or three weekly portions, being combined with the intake of other non-predator species. Anyhow, the current results indicate that is necessary to conduct further periodical surveys, paying special attention to the trend in the intake of Cd and MeHg.

The present study arose from the need to determine inorganic arsenic (iAs) at low levels in cereal-based food. Validated methods with a low limit of detection (LOD) are required to analyse these kinds of food. An analytical method for the determination of iAs, methylarsonic acid (MA) and dimethylarsinic acid (DMA) in cereal-based food and infant cereals is reported. The method was optimised and validated to achieve low LODs. Ion chromatography-inductively coupled plasma mass spectrometry (IC-ICPMS) was used for arsenic speciation. The main quality parameters were established. To expand the applicability of the method, different cereal products were analysed: bread, biscuits, breakfast cereals, wheat flour, corn snacks, pasta and infant cereals. The total and inorganic arsenic content of 29 cereal-based food samples ranged between 3.7-35.6 and 3.1-26.0 µg As kg(-1), respectively. The present method could be considered a valuable tool for assessing inorganic arsenic contents in cereal-based foods.

Inorganic arsenic (iAs) is considered to be a human carcinogen. In this paper, total (As) and iAs contents of 215 food products and drinks (i.e., seafood, fruits and vegetables, meat products, oils and fats, rice and rice products, seasonings, and alcoholic drinks) marketed in Catalonia (Spain) were quantified by inductively coupled plasma-mass spectrometry. The analytical method described was used for different food products, obtaining feasible results without the need to couple LC-ICP-MS for iAs. Daily As and iAs intakes for the average adult Catalan consumer were estimated at 354 and 6.1 µg/day/person, respectively, using consumption data from the Catalan Nutrition Survey (ENCAT). The highest As content was found in seafood, contributing 96% of dietary As intake, whereas rice presented the highest iAs values, corresponding to 67% of dietary iAs intake. As cooking process may affect iAs content, boiled rice was evaluated, showing an iAs reduction (up to 86%) when using higher water volumes (30:1 water/rice ratio) than those used in previous studies. This iAs exposure was slightly below the exposure risk range stated by the European Food Safety Authority (0.3-8 µg/kg of body weight/day), although the possibility of a risk to the population with high rice consumption cannot be excluded.
