RESUMEN

Smallholder farmers dominate the Kenyan dairy sector producing 95% of the total milk. However, several concerns have been raised on the quality and safety of the milk they produce. This study assessed the hygienic practices and microbial safety of milk supplied by smallholder farmers to processors in Bomet, Nyeri, and Nakuru counties in Kenya. Interviews and direct observations were carried out to assess hygiene and handling practices by farmers and a total of 92 milk samples were collected along four collection channels: direct suppliers, traders, cooperatives with coolers, and cooperatives without coolers. Microbial analysis was done following standard procedures and data analysed using GenStat and SPSS. This study revealed that farmers did not employ good hygienic practices in their routine dairy management. They used plastic containers for milking and milk storage (34.2%); they did not clean sheds (47.9%) and did not set aside cows that suffered from mastitis factors (83.6%), resulting in poor microbial quality of raw milk along the collection channels. The highest mean total viable counts (8.72 log10 cfu/ml) were recorded in Nakuru while Nyeri had the highest mean E. coli counts (4.97 log10 cfu/ml) and Bomet recorded the highest mean counts of 5.13 and 5.78 log10 cfu/ml for Staphylococcus aureus and Listeria monocytogenes respectively. Based on all above-mentioned parameters, the microbial load in most samples from all three counties exceeded the set Kenyan standards. Farmer training, improving road infrastructure, use of instant coolers at cooperatives, and quality-based payment systems are recommended as measures to curb microbial growth.

Despite growing milk demand and imports, market-oriented milk production and formal processing in Ethiopia is limited to areas around Addis Ababa, notwithstanding its competing land use demand. This study assessed biophysical and market potential for developing the dairy sector, characterizing Ethiopian dairy clusters. Biophysical data from geographic information system (GIS) sources and information from key informants were combined in mapping and ranking these clusters on milk production potential. Twenty-four indicators in six major categories were applied for this assessment: feed availability, environmental conditions for dairy cattle, current production status, access to inputs and services, output market access, and production expansion potential. Feed availability (fodder, crop residues, and agro-industrial by-products as well as land availability and affordability) were the main drivers for dairy development, followed by the current production status, mainly driven by number of (improved) dairy cattle and (formal) milk volumes. Dairy clusters close to Addis Ababa had the highest overall scores for development potential, mainly determined by local demand and access to inputs. For dairy sustainable dairy development in Ethiopia, companies seeking long-term opportunities may avoid the Addis Ababa area and develop dairy production and processing in other clusters especially in Amhara and Tigray regions, with good milk production potential but less developed market infrastructure. The combination of biophysical data and key informant knowledge offered key strengths in delivering valuable results within a short time span. It however requires a careful selection of knowledgeable key informants whose expertise cover a broad scope of the dairy value chain.

Population growth, urbanisation and increased per capita milk consumption are main reasons for recent increasing milk demand in Africa. Due to globalisation, it is important to know how competitive various production systems are, especially as most governments promote local production and disfavour dairy imports. The TIPI-CAL (Technology Impact, Policy Impact Calculations model) was used to analyse and compare costs and returns of predominant dairy farming systems in South Africa, Morocco, Uganda and Cameroon. Results show that, as farms grew larger in size, family resources (especially land and labour) became insufficient and there was need for their acquisition from external sources. Though extensive dairy farming systems had the lowest cost of milk production (<20 US-$ per 100 kg milk), their input productivities and milk yields were lower, leading to very low net cash returns from dairying. Large intensive farms in South Africa had relatively low costs (<30 US-$ per 100 kg milk) and a high Return on Investment (ROI) due to a higher efficiency of input utilisation. It was concluded that, intensification of dairy farming and simultaneously increasing the scale of production will greatly increase productivity of farm inputs, thus recommended for development of the dairy sector in African countries.

The Ugandan dairy sector is developing rapidly over recent years and is dominated by small-scale farmers owning more than 90 percent of the national cattle population. Due to market forces and higher competition for production factors, milk production systems are intensifying, necessitating proper understanding of the new production tendencies. Three intensive and four extensive production systems were identified and analysed, using TIPI-CAL (Technology Impact Policy Impact Calculations model). The results show that the production systems are very different in many respects but share similar development trends. Whereas intensive systems use graded animals and invest heavily into feeding, buildings and machinery, extensive systems use local breeds and invest minimally. Total cost of milk production falls with increasing herd size, while dairy returns vary among farms from 18 to 35 USD/100 Kg of milk. All systems make an economic profit, except the intensive one-cow farm, which heavily employs family resources in dairying. Due to better management of resources and access to inputs and markets, dairy farming closer to urban areas and using improved breeds is highly profitable, especially with larger herd sizes. Stakeholders should favour such practices as well as others which can improve productivity, especially in African countries where traditional systems dominate dairying.
