Rotational crossbreeding has not been widely studied in relation to the enteric methane emissions of dairy cows, nor has the variation in emissions during lactation been modeled. Milk infrared spectra could be used to predict proxies of methane emissions in dairy cows. Therefore, the objective of this work was to study the effects of crossbreeding on the predicted infrared proxies of methane emissions and the variation in the latter during lactation. Milk samples were taken once from 1,059 cows reared in 2 herds, and infrared spectra of the milk were used to predict milk fat (mean ± SD; 3.79 ± 0.81%) and protein (3.68 ± 0.36%) concentrations, yield (21.4 ± 1.5 g/kg dry matter intake), methane intensity (14.2 ± 2.0 g/kg corrected milk), and daily methane production (358 ± 108 g/d). Of these cows, 620 were obtained from a 3-breed (Holstein, Montbéliarde, and Viking Red) rotational mating system, and the rest were purebred Holsteins. Milk production data and methane traits were analyzed using a nonlinear model that included the fixed effects of herd, genetic group, and parity, and the 4 parameters (a, b, c, and k) of a lactation curve modeled using the Wilmink function. Milk infrared spectra were found to be useful for direct prediction of qualitative proxies, such as methane yield and intensity, but not quantitative traits, such as daily methane production, which appears to be better estimated (450 ± 125 g/d) by multiplying a measured daily milk yield by infrared-predicted methane intensity. Lactation modeling of methane traits showed daily methane production to have a zenith curve, similar to that of milk yield but with a delayed peak (53 vs. 37 d in milk), whereas methane intensity is characterized by an upward curve that increases rapidly during the first third of lactation and then slowly till the end of lactation (10.5 g/kg at 1 d in milk to 15.2 g/kg at 300 d in milk). However, lactation modeling was not useful in explaining methane yield, which is almost constant during lactation. Lastly, the methane yield and intensity of cows from 3-breed rotational crossbreeding are not greater, and their methane production is lower than that of purebred Holsteins (452 vs. 477 g/d). Given the greater longevity of crossbred cows, and their lower replacement rate, rotational crossbreeding could be a way of mitigating the environmental impact of milk production.

Milk and dairy products have great importance in human nutrition related to the presence of different nutrients, including protein, fatty acid profile and bioactive compounds. Dietary supplementation with foods containing these types of compounds may influence the chemical composition of milk and dairy products and hence, potentially, the consumer. Our objective was to summarize the evidence of the effect of supplementation with antioxidants and phenolic compounds in the diets of dairy animals and their effects on milk and dairy products. We conducted a systematic search in the MEDLINE/PubMed database for studies published up until July 2022 that reported on supplementation with antioxidants and phenolic compounds in diets that included plants, herbs, seeds, grains and isolated bioactive compounds of dairy animals such as cows, sheep and goats and their effects on milk and dairy products. Of the 94 studies identified in the search, only 15 met the inclusion criteria and were analyzed. The review revealed that supplementation with false flax cake, sweet grass, Acacia farnesiana, mushroom myceliated grains and sweet grass promoted an effect on the milk lipid profile, whereas supplementation with dried grape pomace and tannin extract promoted an effect on the milk and cheese lipid profiles. In six studies, the addition of Acacia farnesiana, hesperidin or naringin, durum wheat bran, mushroom myceliated grains, dried grape pomace and olive leaves increased the antioxidant activity of milk. In conclusion, supplementation with bioactive compounds had a positive impact which ranged from an increase in antioxidant capacity to a decrease in oxidative biomarkers such as malondialdehyde.

Fourier-transform infrared (FTIR) spectra collected during milk recording schemes at population level can be used for predicting novel traits of interest for farm management, cows' genetic improvement, and milk payment systems. The aims of this study were as follows. (1) To predict cheese yield traits using FTIR spectra from routine milk recordings exploiting previously developed calibration equations. (2) To compare the predicted cheese-making abilities of different dairy and dual-purpose breeds. (3) To analyze the effects of herds' level of intensiveness (HL) and of the cow's level of productivity (CL). (4) To compare the patterns of predicted cheese yields with the patterns of milk composition in different breeds to discern the drivers of cheese-making efficiency. The major sources of variation of FTIR predictions of cheese yield ability (fresh cheese or cheese solids produced per unit milk) of individual milk samples were studied on 115,819 cows of 4 breeds (2 specialized dairy breeds, Holstein and Brown Swiss, and 2 dual-purpose breeds, Simmental and Alpine Grey) from 6,430 herds and exploiting 1,759,706 FTIR test-day spectra collected over 7 yr of milk sampling. Calibration equations used were previously developed on 1,264 individual laboratory model cheese procedures (cross-validation R2 0.85 and 0.95 for fresh and solids cheese yields, respectively). The linear model used for statistical analysis included the effects of parity, lactation stage, year of calving, month of sampling, HL, CL, breed of cow, and the interactions breed × HL and breed × CL. The HL and CL stratifications (5 classes each) were based on average daily secretion of milk net energy per cow. All effects were highly significant. The major conclusions were as follows. (1) The FTIR-based prediction of cheese yield of milk goes beyond the knowledge of fat and protein content, partially explaining differences in cheese-making ability in different cows, breeds and herds. (2) Differences in cheese yields of different breeds are only partially explained by milk fat and protein composition, and less productive breeds are characterized by a higher milk nutrient content as well as a higher recovery of nutrients in the cheese. (3) High-intensive herds not only produce much more milk, but the milk has a higher nutrient content and a higher cheese yield, whereas within herds, compared with less productive cows, the more productive cows have a much greater milk yield, milk with a greater content of fat but not of protein, and a moderate improvement in cheese yield, differing little from expectations based on milk composition. Finally, (4) the effects of HL and CL on milk quality and cheese-making ability are similar but not identical in different breeds, the less productive ones having some advantage in terms of cheese-making ability. We can obtain FTIR-based prediction of cheese yield from individual milk samples retrospectively at population level, which seems to go beyond the simple knowledge of milk composition, incorporating information on nutrient retention ability in cheese, with possible advantages for management of farms, genetic improvement of dairy cows, and milk payment systems.

The availability of portable and handheld NIR instruments on the market opens up new possibilities in meat analysis. However, there is lack of research comparing different NIR instruments for evaluating beef characteristics from spectra obtained directly on the meat surface. Our aim, therefore, was to build and test calibration and prediction models for predicting beef characteristics, and to compare the performances of three NIR instruments differing in size and characteristics: a transportable visible-NIR spectrometer (Vis-NIRS), a portable (NIRS), and a hand-held Micro-NIRS. Spectra were collected from 178 beef samples (Longissimus thoracis muscle) from the meat surface in the abattoir. The spectra were subjected to different mathematical pretreatments then partial least square regressions. The results showed that all instruments predicted dry matter, protein and lipids with R2VAL 0.23 to 0.70; pH and cooking loss R2VAL 0.19 to 0.25; and color R2VAL 0.35 to 0.77. Overall, the prediction performances of the three instruments were similar, although Micro-NIRS performed better in some respects.

The use of sexed semen to produce purebred replacement heifers allows a large proportion of dairy cows to be mated to beef sires, and quantitative and qualitative improvements to be made to beef production from dairy herds. The major dairy and beef breeds are undergoing rapid genetic improvement as a result of more efficient selection methods, prompting a need to evaluate the meat production of crossbred beef × dairy cattle produced using current genetics. As part of a large project involving 125 commercial dairy farms, we evaluated the combined use of purebreeding with sexed semen and crossbreeding with semen from beef sires, particularly double-muscled breeds. A survey of 1,530 crossbred calves revealed that, whereas purebred dairy calves are destined almost exclusively for veal production, beef × dairy crossbred calves are also destined for beef production after fattening on either the dairy farm of birth or by specialized fatteners. In veal production, compared with Belgian Blue-sired calves (taken as the reference), double-muscled INRA 95-sired calves had a lighter slaughter weight (303 vs. 346 kg), but a greater dressing percent (62.3 vs. 58.4%). Limousin (also known as Limousine)-sired calves had a smaller average daily gain (1.26 vs. 1.34 kg/d), and lighter slaughter (314 vs. 346 kg) and carcass weights (182 vs. 201 kg). Last, Simmental-sired calves had a similar growth rate, but lighter carcass weight (177 vs. 201 kg), smaller dressing percentage (55.3 vs. 58.4%), and smaller muscularity scores (3.25 vs. 3.72). In the case of young bulls and heifers fattened on the dairy farm of birth, Belgian Blue-, Piemontese (also known as Piedmontese)-, and Limousin-sired calves performed similarly; the only exception was that Piemontese-sired calves had a greater dressing percentage. Belgian Blue- and Limousin-sired calves performed similarly when fattened by specialized beef producers. In both veal and beef production, the effects of dam breed were less important than sire breed. Considering the entire project, we can conclude that the combined use of sexed semen for purebreeding and conventional beef semen for terminal crossbreeding improves meat production from dairy herds, especially when the sires are double-muscled beef breeds.

The objective of this study was to evaluate the contribution of Fourier-transformed infrared spectroscopy (FTIR) data for dairy cattle breeding through two different approaches: (i) estimating the genetic parameters for 30 measured milk traits and their FTIR predictions and investigating the additive genetic correlation between them and (ii) evaluating the effectiveness of FTIR-derived phenotyping to replicate a candidate bull's progeny testing or breeding value prediction at birth. Records were available from 1,123 cows phenotyped using gold standard laboratory methodologies (LAB data). This included phenotypes related to fine milk composition and milk technological characteristics, milk acidity, and milk protein fractions. The dataset used to generate FTIR predictions comprised 729,202 test-day records from 51,059 Brown Swiss cows (FIELD data). A first approach consisted of estimating genetic parameters for phenotypes available from LAB and FIELD datasets. To do so, a set of bivariate animal models were run, and genetic correlations between LAB and FIELD phenotypes were estimated using FIELD information obtained at the population level. Heritability estimates were generally higher for FIELD predictions than for the corresponding LAB measures. The additive genetic correlations (r a ) between LAB and FIELD phenotypes had different magnitudes across traits but were generally strong. Overall, these results demonstrated the potential of using FIELD information as indicator traits for the indirect genetic improvement of LAB measures. In the second approach, we included genotype information for 1,011 cows from the LAB dataset, 1,493 cows from the FIELD dataset, 181 sires with daughters in both LAB and FIELD datasets, and 540 sires with daughters in the FIELD dataset only. Predictions were obtained using the single-step GBLUP method. A four fold cross-validation was used to assess the predictive ability of the different models, assessed as the ability to predict masked LAB records from daughters of progeny testing bulls. The correlation between observed and predicted LAB measures in validation was averaged over the four training-validation sets. Different sets of phenotypic information were used sequentially in cross-validation schemes: (i) LAB cows from the training set; (ii) FIELD cows from the training set; and (iii) FIELD cows from the validation set. Models that included FIELD records showed an improvement for the majority of traits. This study suggests that breeding programs for difficult-to-measure traits could be implemented using FTIR information. While these programs should use progeny testing, acceptable values of accuracy can be achieved also for bulls without phenotyped progeny. Robust calibration equations are, deemed as essential.

The aim of this study was to test the predictability of a detailed mineral profile of beef using different portable near-infrared spectrometers (NIRS). These devices are rapid, chemical waste-free, cheap, nondestructive tools that can be used directly on the meat surface in the work environment without the need to take samples. We compared a transportable Visible-NIRS (weight 5.6 kg; wavelength 350-1830 nm), a portable NIRS (2.0 kg; 950-1650 nm), and a hand-held Micro-NIRS (0.06 kg; 905-1649 nm) to predict the contents of 20 minerals (measured by ICP-OES) in 178 beef samples (Longissimus thoracis muscle) using different mathematical pretreatments of the spectra and partial least square regressions. The externally validated results show that Fe, P, Mg, S, Na, and Pb have some potential for prediction with all instruments (R2VAL: 0.40-0.83). Overall, the prediction performances of the three instruments were similar, although the smallest (Micro-NIRS) exhibited certain advantages.

The use of sexed semen to produce purebred replacement heifers allows a large proportion of dairy cows to be mated to double-muscled sires and for quantitative and qualitative improvements to be made to beef production from dairy herds. A survey of 1,285 crossbred calves showed that they are destined not only for veal production (like purebred dairy calves) but also for beef production. Crossbred calves obtained from Belgian Blue sires (sold on average at 34 d of age and 64 kg of weight) had a higher market value (€363/calf) than those obtained from double-muscled INRA 95 sires (€297/calf, used for veal production) and from Limousin sires (€216/calf for veal and €271/calf for beef production). As a sire breed, Simmental did not differ significantly from Belgian Blue, but as a dam breed, the crossbred calves fetched a higher price (€5.11/kg) than when Holstein was the dam breed (€4.50/kg). Compared with heifer calves, crossbred bull calves at sale were younger (34.1 vs. 37.2 d) and heavier (64.0 vs. 62.6 kg of live weight), fetched a higher price (€5.13 vs. €4.99/kg), and had a greater value (€328 vs. €312/calf). As the value of purebred dairy calves was about €80 to €100/calf, we are able to confirm that the combined use of sexed semen for pure-breeding and conventional beef semen for terminal crossbreeding can increase the income from dairy farms, especially when the sires are double-muscled beef bulls.

Using sexed semen to produce purebred replacement heifers makes it possible to mate a large proportion of dairy cows to double-muscled sires and to quantitatively and qualitatively improve beef production and increase the income from dairy herds. Net profit first depends on changes in the farm's overall fertility rate. The objective of this study was to analyze the conception rate in herds using a combination of conventional dairy semen (for pure- and crossbreeding), X-sorted dairy semen (to produce purebred replacement heifers), and conventional beef semen (for terminal crossbreeding). Data were obtained from 50,785 inseminations of 15,580 dairy cows (78% Holstein-Friesian, 15% Brown Swiss, 2% Simmental, and 5% crossbreds) from 106 dairy farms (average milk yield 35.1 ± 9.4 kg/d, with 3.76 ± 0.83% fat and 3.32 ± 0.39% protein contents). To account for the main potential confounders, we used separate generalized linear mixed-effects models for cows and virgin heifers. The results showed that the odds ratio of conception improved (1.00 to 1.34) with an increase in the average milk yield of the herd but worsened (1.12 to 0.70) with an increase in the milk yield of individual cows within herd. The summer months showed a strong reduction in the odds ratio of conception in cows (0.56 in July and August) but not in virgin heifers. Multiparous cows had a lower odds ratio of conception (0.85) than primiparous cows (1.00). The order of insemination did not affect the fertility of the cows or heifers, whereas the odds ratio of conception improved with advancing lactation (1.00 to 2.12). The Simmental cows were more fertile than Holstein-Friesians (1.37 vs. 1.00), whereas the fertility of the heifers was not affected by breed. Taking all these possible confounders into account simultaneously, in pure-breeding the odds ratio of conception using sexed semen did not differ from that using conventional dairy semen in cows (0.90 vs. 1.00) or in virgin heifers (0.95 vs. 1.00). However, crossbreeding using conventional beef and dairy semen improved the odds ratio of conception (1.10 and 1.17, respectively) in cows (1.37 using beef semen) and heifers (1.25 using dairy semen). The proportion of newborn heifer calves was ≥90% using sexed dairy semen. The combined use of sexed semen, especially on heifers, to produce purebred replacement females and beef semen to produce terminal crossbred calves was shown to have the potential to increase overall herd fertility, which could be further improved using sexed dairy semen to produce dairy crossbreds instead of purebred replacement heifers.

The relationship of the estrous cycle to milk composition and milk physical properties was assessed on Holstein (n = 10,696), Brown Swiss (n = 20,501), Simmental (n = 17,837), and Alpine Grey (n = 8,595) cows reared in northeastern Italy. The first insemination after calving for each cow was chosen to be the day of estrus and insemination. Test days surrounding the insemination date (from 10 d before to 10 d after the day of the estrus) were selected and categorized in phases relative to estrus as diestrus high-progesterone, proestrus, estrus, metestrus, and diestrus increasing-progesterone phases. Milk components and physical properties were predicted on the basis of Fourier-transform infrared spectra of milk samples and were analyzed using a linear mixed model, which included the random effects of herd, the fixed classification effects of year-month, parity number, breed, estrous cycle phase, day nested within the estrous cycle phase, conception, partial regressions on linear and quadratic effects of days in milk nested within parity number, as well as the interactions between conception outcome with estrous cycle phase and breed with estrous cycle phase. Milk composition, particularly fat, protein, and lactose, showed clear differences among the estrous cycle phases. Fat increased by 0.14% from diestrus high-progesterone to estrous phase, whereas protein concomitantly decreased by 0.03%. Lactose appeared to remain relatively constant over diestrus high-progesterone, rising 1 d before the day of estrus followed by a gradual reduction over the subsequent phases. Specific fatty acids were also affected across the estrous cycle phases: C14:0 and C16:0 decreased (-0.34 and -0.48%) from proestrus to estrus with a concomitant increase in C18:0 and C18:1 cis-9 (0.40 and 0.73%). More general categories of fatty acids showed a similar behavior; that is, unsaturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids, trans fatty acids, and long-chain fatty acids increased, whereas the saturated fatty acids, medium-chain fatty acids, and short-chain fatty acids decreased during the estrous phase. Finally, urea, somatic cell score, freezing point, pH, and homogenization index were also affected indicating variation associated with the hormonal and behavioral changes of cows in standing estrus. Hence, the variation in milk profiles of cows showing estrus should potentially be taken into account for precision dairy farming management.

Data on Holstein (16,890), Brown Swiss (31,441), Simmental (25,845), and Alpine Grey (12,535) cows reared in northeastern Italy were used to assess the ability of milk components (fat, protein, casein, and lactose) and Fourier transform infrared (FTIR) spectral data to diagnose pregnancy. Pregnancy status was defined as whether a pregnancy was confirmed by a subsequent calving and no other subsequent inseminations within 90 d of the breeding of specific interest. Milk samples were analyzed for components and FTIR full-spectrum data using a MilkoScan FT+ 6000 (Foss Electric, Hillerød, Denmark). The spectrum covered 1,060 wavenumbers (wn) from 5,010 to 925 cm-1. Pregnancy status was predicted using generalized linear models with fat, protein, lactose, casein, and individual FTIR spectral bands or wavelengths as predictors. We also fitted a generalized linear model as a simultaneous function of all wavelengths (1,060 wn) with a Bayesian variable selection model using the BGLR R-package (https://r-forge.r-project.org/projects/bglr/). Prediction accuracy was determined using the area under a receiver operating characteristic curve based on a 10-fold cross-validation (CV-AUC) assessment based on sensitivities and specificities of phenotypic predictions. Overall, the best prediction accuracies were obtained for the model that included the complete FTIR spectral data. We observed similar patterns across breeds with small differences in prediction accuracy. The highest CV-AUC value was obtained for Alpine Grey cows (CV-AUC = 0.645), whereas Brown Swiss and Simmental cows had similar performance (CV-AUC = 0.630 and 0.628, respectively), followed by Holsteins (CV-AUC = 0.607). For single-wavelength analyses, important peaks were detected at wn 2,973 to 2,872 cm-1 where Fat-B (C-H stretch) is usually filtered, wn 1,773 cm-1 where Fat-A (C=O stretch) is filtered, wn 1,546 cm-1 where protein is filtered, wn 1,468 cm-1 associated with urea and fat, wn 1,399 and 1,245 cm-1 associated with acetone, and wn 1,025 to 1,013 cm-1 where lactose is filtered. In conclusion, this research provides new insight into alternative strategies for pregnancy screening of dairy cows.

Milk yield has a strong effect on fertility, but it may vary across different herds and individual cows. Therefore, the aim of this study was to assess the effects of breed and its interaction with level of milk production at the herd level (Herd-L) and at a cow-within-herd level (Cow-L) on fertility traits in dairy cattle. Data were gathered from Holstein (n = 17,688), Brown Swiss (n = 32,697), Simmental (n = 27,791), and Alpine Grey (n = 13,689) cows in northeastern Italy. The analysis was based on records from the first 3 lactations in the years 2011 to 2014. A mixed model was fitted to establish milk production levels of the various herds (Herd-L) and individual cows (Cow-L) using milk as a response variable. The interval fertility traits were interval from calving to first service, interval from first service to conception, and number of days open. The success traits were nonreturn rate at 56 d after first service, pregnancy rate at first service, and the number of inseminations. The interval from calving to first service, interval from first service to conception, and number of days open were analyzed using a Cox's proportional hazards model. The nonreturn rate at 56 d after first service, pregnancy rate at first service, and the number of inseminations were analyzed using logistic regression. There was a strong interaction between breed and productivity class at both Herd-L and Cow-L on all traits. The effects of herd and cow productivity differed from each other and differed among breeds. The dual-purpose Simmental and Alpine Grey breeds had better fertility than the specialized Holstein and Brown Swiss dairy cows; this difference is only partly attributable to different milk yields. Greater herd productivity can result in higher fertility in cows, whereas higher milk yield of individual cows within a herd results in lower fertility. These effects at both Herd-L and Cow-L are curvilinear and are stronger in dual-purpose breeds, which was more evident from low to intermediate milk yield levels than from central to high productivity classes. Disentangling the effects of milk productivity on fertility at Herd-L and Cow-L and taking the nonlinearity of response into account could lead to better modeling of populations within breed. It could also help with management-for example, in precision dairy farming of dairy and dual-purpose cattle.
