An Accidental Nutritionist.

My career as an accidental nutritionist began with my immersion in cholera control, a cyclone disaster, a smallpox epidemic, and formal training in ophthalmology and epidemiology. Interest in blindness prevention inexplicably led me to (re)pioneer the effects, treatment, and prevention of vitamin A deficiency, while faced with intense criticism by many leading scientists in the nutrition community. The resulting efforts by the World Health Organization and UNICEF in support of programs for the global control of vitamin A deficiency still face vocal opposition by some senior scientists, despite having been estimated to have saved tens of millions of children from unnecessary death and blindness. This entire journey was largely an accident!

The 80-year history of the professional associations of nutritionists in Brazil: A historical-documentary analysis / As entidades de classe na história de 80 anos do nutricionista no Brasil: uma análise histórico-documental

ABSTRACT Objective To carry out a mapping of the historical trajectory of the professional associations of nutritionists (scientific associations, councils and professional labor unions) in Brazil. Methods The study consists of a historical-documentary analysis. To obtain the data, information and documents, the websites of the Federal Council of Nutritionists; Brazilian Association of Food and Nutrition; National Federation of Nutritionists and Nutritionists' Unions were browsed. A systematic bibliographic survey was carried out in the databases of the Scientific Electronic Library Online and National Library of Medicine to retrieve scientific articles about the associations of nutritionists in Brazil over the 80 years of their history, focusing on the last ten years. Results The historical analysis indicates that, over the course of eighty years, there has been strengthening of professional associations of nutritionists and achievements concerning training regulation, professional practice, fields of work and working conditions. The labor reform act of 2017 reduces the rights related to working conditions, creating setbacks in the achievements of nutritionists. Conclusion The professional associations of nutritionists have played an important role in the process of professionalization and legitimacy of training and performance of the profession in the country. There are indications of the unified performance of professional associations, but it is still incipient and scarce. Nowadays, unified, transparent and committed action of these professional associations is imperative for the professionalization and improvements of the working conditions of Brazilian nutritionists.

RESUMO Objetivo Realizar mapeamento da trajetória histórica das entidades de classe do nutricionista (associações científicas, conselhos e sindicatos profissionais) no Brasil. Métodos O estudo consiste em uma análise histórico-documental. Para obtenção dos dados, informações e documentos foram feitas visitas aos sítios eletrônicos do Conselho Federal de Nutricionistas; Associação Brasileira de Alimentação e Nutrição; Federação Nacional de Nutricionistas e Sindicatos de Nutricionistas. Realizou-se levantamento bibliográfico sistematizado nas bases Scientific Electronic Library Online e National Library of Medicine para capturar artigos científicos sobre a temática no Brasil ao longo dos 80 anos de sua história, com ênfase nos últimos dez anos. Resultados A análise histórica da Associação Brasileira de Alimentação e Nutrição, do Sistema Conselho Federal/Conselhos Regionais de Nutricionistas e da Federação Nacional de Nutricionistas/Sindicatos de Nutricionistas indica que, ao longo da trajetória de oitenta anos, houve fortalecimento das entidades de classe, com várias conquistas no arcabouço de regulamentação da formação, exercício profissional, campos de atuação e condições de trabalho. A reforma trabalhista, instituída em 2017, imprime redução de direitos relativos às condições de trabalho, acenando para retrocessos nas conquistas trabalhistas do nutricionista. Conclusão As entidades de classes do nutricionista têm desempenhado relevante papel no processo de valorização e legitimidade da formação e atuação da profissão no país. Há indícios da atuação unificada das entidades de classe, mas ainda incipientes e pontuais. Na atualidade, urge uma atuação unificada, transparente e comprometida destas entidades de classe em busca de valorização da profissão e melhorias das condições de trabalho do nutricionista brasileiro.

Mikkel Hindhede (1862-1945): A pioneering nutritionist.

The 150th anniversary of the birth of the Danish nutritionist Mikkel Hindhede (1862-1945) fell on 13 February 2012. He was brought up in a farming family and despite family traditions he chose an academic path and became a medical doctor in 1888 and he was ahead of his time and emphasized a healthy life style rather than polypharmacy. He was convinced that the Danish population ate far too much meat and investigated and debated this matter frequently. In 1910, the Danish government allocated Hindhede a laboratory to study human nutrition where he carried out several nutritional experiments on humans. Even though his research contradicted previous theories and met opposition, he had great societal influence. Hindhede's work was the reason that Denmark focused on feeding the Danish population with harvest products and therefore had to slaughter herds of cattle and pork during the food crisis of the First World War (1914-1918). According to his calculations, this may have prevented 6300 deaths in the war. Moreover, Hindhede's work later influenced both national and international nutrition policies.

Cursos e pesquisas na área de nutrição nas páginas do boletim do SAPS (Serviço de Alimentação da Previdência Social) (1944-1946) / Los cursos e investigaciones en el área de la nutrición en las páginas del boletín SAPS (Servicio de Alimentación de La securidad Social) (1944-1946) / Courses and researches in the nutrition area on the pages o f the bulletin institutional magazine of SAPS (Food Service Social Security) (1944-1946)

Object: To analyze the process of implementation regarding Nutritionist technical and professional courses and previous professional skills created by Food Service Social Security- SAPS, through the collection of its Bulletins. Method: It embodies bibliographical research of its Bulletins which were published between November of 1944 and November of 1946, having as target the workers of the SAPS Restaurants. Results: The analysis suggests that these Bulletin sources recorded the development of these courses as well as several researches developed in the Nutrition area, with extensive written documentation and imagery, through facsimile captioned within these publications. Conclusion: The bulletins bring coverage of major importance and significance for the history of the profession, consisting of 118 articles and 173 facsimiles. It shows the importance of these documents not only to the history of the Nutritionists as previous professional skills.

Objetivo: Analisar o processo de surgimento dos cursos técnicos e de profissionais Nutricionistas e antecedentes, criados pelo Serviço de Alimentação da Previdência Social-SAPS, através da Coletânea de seus Boletins. Método: Realizado pesquisa bibliográfica dos Boletins, Revista Institucional que circulou no período de novembro de 1944 a novembro de 1946, tendo como público alvo os trabalhadores dos Restaurantes do SAPS. Resultados: A análise dessas fontes sugere que esse Boletim registrou a evolução desses cursos como também várias pesquisas desenvolvidas na área da nutrição, com farta documentação escrita e imagética, através de fac-símiles legendados no interior dessas publicações. Conclusão: Os Boletins trouxeram cobertura jornalística de grande importância e significado para a história da profissão, composta de 118 artigos e 173 fac-símiles com riqueza de detalhes. Aponta-se para a relevância desses documentos não só para a história da profissão de Nutricionista como de seus antecedentes.

Objetivo: Analizar el proceso de creación de cursos técnicos y profesionales de los nutricionistas y los antecedentes creado por el Servicio de Alimentos de la Seguridad Social -SAPS a través de la colección de sus boletines. Método: La investigación realizada se basa en la literatura de estos boletines, Revista Institucional que circuló en el período noviembre 1944 a noviembre 1946 que tienen como objetivo a los empleados de los restaurantes SAPS. Resultados: El análisis de estas fuentes sugiere que el Boletín informó que la evolución de estos cursos, así como la investigación de varios desarrollado en el campo de la nutrición con una amplia documentación escrita y imágenes, através de facsímiles subtitulados dentro de estas publicaciones. Conclusión: Los Boletines llevan la cobertura de la mayor importancia y trascendencia para la historia de la profesión, que consiste en 118 artículos y 173 facsímiles en gran detalle. Apuntando la importancia de estos documentos no sólo para la historia de la profesión de nutricionista como sus antecedentes.
