ABSTRACT

Heavy metal contamination in leafy vegetables poses significant health risks, highlighting the urgent need for stringent monitoring and intervention measures to ensure food safety and mitigate potential adverse effects on public health. This study investigates the levels of heavy metals, including cadmium (Cd), chromium (Cr), nickel (Ni), lead (Pb), zinc (Zn), and copper (Cu), in locally grown and commercially available leafy vegetables, comparing them to the safety limits established by WHO/FAO. The results revealed that levels of Cd, Cr, Ni, and Pb in the vegetables exceeded WHO/FAO limits, while Zn and Cu remained within permissible bounds. Marketed vegetables exhibited higher metal concentrations than those from nearby farms. For Cu (0.114-0.289 mg/kg) and Zn (0.005-0.574 mg/kg), the daily intake of metals (DIM) was below the dietary intake (DI) and upper limit (UL). Cd's DIM (0.031-0.062 mg/kg) remained below the UL but exceeded the DI. Marketed kale and mint surpassed both DI and UL limits for Ni, while local produce only exceeded the DI. All vegetables had DIM below the DI, except for mint and kale. For Pb, every vegetable exceeded DI limits, with market samples contributing significantly. Cr's DIM ranged from 0.028 to 1.335 mg/kg, for which no set maximum daily intake exists. The health risk index (HRI) values for Zn, Cd, Cu, Ni, and Pb suggested potential health risks associated with leafy greens, while Cr's HRI was below 1. The study underscores the need for stringent monitoring and intervention measures to mitigate the health risks posed by heavy metal contamination in leafy vegetables. These findings suggest that consuming these leafy greens may put consumers at considerable risk for health problems related to Cd, Cu, Ni, Pb, and Zn exposure.

ABSTRACT

This study aims to evaluate the heavy metal concentration in fifteen species of vegetables as well as associated health risk. Atomic absorption spectrometry is used to assess heavy metals. The mean concentrations of Pb, Cd, Cr, Ni and Fe in vegetables were 4.78, 0.713, 9.266, 0.083, 5.06 mg/kg/fw exceeding the reference value of FAO/WHO indicating unsafe to consumption. Based on principal component analysis, the Pb, Cr, Ni and Fe are from same sources. Health risk was estimated in terms of estimated daily intake (EDI), target hazard quotient, hazard index (HI) and cancer risk (CR). The EDI values of metals except Cr were found to be lower than maximum tolerable daily intake (MTDI). The total THQs of metals were > 1 indicating non-carcinogenic health risk. The individual HI values for vegetables except potato (0.831) and total HI values were found to be > 1 (94.747). The TCR of Pb, Cd and Cr were > 1.0E-04 which indicating carcinogenic risk. Fruit and pod vegetables contribute much in carcinogenic risk for Pb and Cr whereas fruit, root and stems vegetables for Cd. The study revealed potential human health risk associated with the consumption of different types of vegetables in Bangladeshi adult population that might assist the regulatory bodies to develop new strategies to minimize the risk to human.

ABSTRACT

In many countries with wastewater irrigation and intensive use of fertilizers (minerals and organics), heavy metal deposition by crops is regarded as a major environmental concern. A study was conducted to determine the impact of mineral fertilizers, cow manure, poultry manure, leaf litter, and sugarcane bagasse on soil's trace Pb content and edible parts of vegetables. It also evaluated the risk of lead (Pb) contamination in water, soil, and food crops. Six vegetables (Daucus carota, Brassica oleracea, Pisum sativum, Solanum tuberosum, Raphanus sativus, and Spinacia oleracea) were grown in the field under twelve treatments with different nutrient and water inputs. The lead concentrations in soil, vegetables for all treatments and water samples ranged from 1.038-10.478, 0.09346-9.0639 mg/kg and 0.036-0.26448 mg/L, The concentration of lead in soil treated with wastewater in treatment (T6) and vegetable samples was significantly higher, exceeding the WHO's permitted limit. Mineral and organic fertilizers combined with wastewater treatment reduced lead (Pb) concentrations in vegetables compared to wastewater application without organic fertilizers. Health risk indexes for all treatments except wastewater treatment (T6) were less than one. Pb concentrations in mineral fertilizers, cow manure, poultry manure, leaf litter, and sugarcane bagasse treated were determined to pose no possible risk to consumers.

ABSTRACT

It has long been desired to develop rapid methods for the rapid identification and quantification of pesticides and their metabolites. Carbofuran, a representative pesticide of the carbamate group, is highly systemic and is used on vegetables, fruits and grains, which has led many countries to test for residues in food and the environment. In this study, gold and silver composite core-shell (Au@Ag) nanoparticles were used to label the carbofuran antibody and Raman molecule 5,5-dithiobis-2-nitrobenzoic acid (DTNB) to synthesize Raman immune probes. The signal value of DTNB was read using a Raman spectrometer, and the quantitative detection technology of carbofuran was established based on lateral flow immunochromatographic assay (ICA) combined with surface-enhanced Raman spectroscopy (SERS). SERS-ICA is a rapid, quantitative and ultrasensitive test for the determination of carbofuran in fruits and vegetables with a sensitivity of 0.1 pg mL-1. Consequently, the results demonstrate that the SERS-based lateral flow immunosensor developed in this study has the advantages of excellent assay sensitivity and remarkable multiplexing capability, and thus it will have great application potential in food safety monitoring.

ABSTRACT

Soilless agriculture is acknowledged worldwide because it uses organic leftovers as a means of supporting intensive and efficient plant production. However, the quality of potting media deteriorates because of lower nutrient content and excessive shrinkage of most organic materials. A current study was undertaken to identify the optimal blend of locally available organic materials with desirable qualities for use as potting media. Therefore, different ingredients, viz., Pinus roxburghii needles, sugarcane bagasse, and farmyard manure were used alone or in combination as potting media to test their suitability by growing spinach as a test crop. Results showed that an increase in Pinus roxburghii needles and sugarcane bagasse decreased medium pH and electrical conductivity. Higher pH and electrical conductivity were recorded for the treatments having a higher farmyard manure ratio (≥50%) in combination. Except for pine needles 100%, pH and electrical conductivity were in the recommended range. The growth attributes include, leaves plant-1, shoot length, fresh- and dry shoot weight along with plant macronutrients (nitrogen, phosphorous, and potassium) and micronutrients (iron, copper, manganese, and zinc) content were higher in treatment pine needles 50%+farmyard manure 50% followed by pine needles 25%+farmyard manure 50%+sugarcane bagasse 25%. Moreover, the particular treatment of pine needles 50%+farmyard manure 50% exhibited the highest concentrations of macro- (nitrogen, phosphorus, and potassium) as well as micronutrients (iron, copper, manganese, and zinc) in the potting media following the harvest. This study highlights the potential of utilizing agro-industrial litter/waste as a soilless growing medium for spinach production under greenhouse conditions. When employed in appropriate proportions, this approach not only addresses disposal concerns but also proves effective for sustainable cultivation. Further research is needed to investigate the use of these wastes as potting media by mixing various particle-size ingredients.

Heavy metal pollution in farmland soil can affect the growth, development, and yield of vegetable crops, as well as the quality and taste of vegetables, and can be continuously transmitted and enriched through the food chain, which ultimately poses a certain hazard to human health in the long term. Therefore, in order to investigate the distribution characteristics of soil heavy metals after years of multi-crop planting of vegetables supplied to Hong Kong, predict their ecological risks, and analyze the causes of pollution formation, 477 surface soil samples of vegetable fields supplied to Hong Kong in Ningxia were collected for three consecutive years from 2019 to 2021, and the contents and distribution characteristics of eight heavy metals, namely, As, Cd, Cr, Hg, Pb, Cu, Zn, and Ni were analyzed. The soil heavy metal pollution status of vegetable fields supplied to Hong Kong in Ningxia was evaluated using the single-factor pollution index method, Nemero's comprehensive pollution index method, land accumulation index method, and potential ecological risk index method, and the sources of heavy metals in vegetable fields supplied to Hong Kong in Ningxia were analyzed using the Pearson's correlation analysis and the principal component analysis method. The results showed that the mean values of As, Cd, Cr, Hg, Cu, and Zn in the soils of Ningxia's vegetable fields were higher than the background values of Ningxia soils, but the contents of all eight heavy metals were lower than the risk screening values of domestic agricultural soils; in terms of spatial distribution, As, Cr, and Ni showed contiguous high values in the northwestern, central, and southern parts of the study area, whereas Pb, Zn, Cd, Hg, and Cu showed high values in the northwestern and southern parts of the study area. The single-factor index method and the Nemero's comprehensive pollution index method showed that the soil of Ningxia's vegetable farmland for Hong Kong was at the clean level as a whole. The results of the ground accumulation index method showed that the pollution in the study area was mainly Hg and Cd pollution, and the pollution areas were mainly concentrated in the northwest and south of the study area. The potential ecological risk index showed that Hg and Cd were the main risk elements, among which Hg was dominated by moderate, strong, and very strong ecological risks, accounting for 44.65 %, 44.65 %, and 1.26 %, respectively, and Cd was dominated by moderate and strong risks, accounting for 65.83 % and 3.56 %. The comprehensive Pearson correlation analysis and principal component analysis showed that the pollution sources of eight heavy metals could be divided into three categories, namely, natural sources:Cu, Zn, Pb, As, Ni, and Cr; agricultural sources:Cd; and industrial and agricultural sources:Hg. From a comprehensive point of view, the heavy metals of the soil in the fields of vegetables supplied to Hong Kong had not exceeded the standard, and the environmental conditions of the soil were good, such that the production of vegetables supplied to Hong Kong by Ningxia was at a safe level overall. The results of the study can provide a theoretical basis for the safe utilization of soil in vegetable fields and the green production of vegetables supplied to Hong Kong in Ningxia, which were aimed to provide help for the safe production of vegetable fields supplied to Hong Kong, the rational application of fertilizers, agronomic planning, and the adjustment of planting structure.

ABSTRACT

Cold plasma treatment is an innovative technology in the food processing and preservation sectors. It is primarily employed to deactivate microorganisms and enzymes without heat and chemical additives; hence, it is often termed a "clean and green" technology. However, food quality and safety challenges may arise during cold plasma processing due to potential chemical interactions between the plasma reactive species and food components. This review aims to consolidate and discuss data on the impact of cold plasma on the chemical constituents and physical and functional properties of major food products, including dairy, meat, nuts, fruits, vegetables, and grains. We emphasize how cold plasma induces chemical modification of key food components, such as water, proteins, lipids, carbohydrates, vitamins, polyphenols, and volatile organic compounds. Additionally, we discuss changes in color, pH, and organoleptic properties induced by cold plasma treatment and their correlation with chemical modification. Current studies demonstrate that reactive oxygen and nitrogen species in cold plasma oxidize proteins, lipids, and bioactive compounds upon direct contact with the food matrix. Reductions in nutrients and bioactive compounds, including polyunsaturated fatty acids, sugars, polyphenols, and vitamins, have been observed in dairy products, vegetables, fruits, and beverages following cold plasma treatment. Furthermore, structural alterations and the generation of volatile and non-volatile oxidation products were observed, impacting the color, flavor, and texture of food products. However, the effects on dry foods, such as seeds and nuts, are comparatively less pronounced. Overall, this review highlights the drawbacks, challenges, and opportunities associated with cold plasma treatment in food processing.

ABSTRACT

Nitrate is prevalent in environment and present in foods of plant origin as part of nitrogen cycle. It is now one of the most pervasive and persistent contaminants in animal food chain. Present work is focussed on development of a novel green nanosensor using corn silk extract for nitrate detection in leafy vegetables (Spinacia oleracea, Amaranthus viridis and Amaranthus cruentus). The green reduced graphene oxide (rGO) and a nanocomposite (G-Fe3O4@rGO) was synthesized for the first-time using corn silk extract and used for fabrication of the nanosensor. Various characterization techniques were used to expose the optical, crystallographic and surface morphology details of the nanosubstrates. Electrochemical studies of the fabricated nanosensor were conducted using the electrochemical impedance spectroscopy (EIS) technique. The performance of NiR/G-Fe3O4@rGO/ITO green nanosensor was the best, in terms of the electrochemical performance parameters among different fabricated nanosensors in the study. The developed green nanosensor demonstrated high sensitivity of 122.1 Ohm/log(mg/L)/cm2 and lower limit of detection 0.076 mg/L for detection of nitrate in leafy vegetables. The green nanosensor exhibited higher recovery rates (>86%) and high precision in nitrate detection in leafy vegetables (RSD <5.2%). Validation studies were conducted with HPLC technique also. The results of green nanosensor were found in good agreement with HPLC studies (p < 0.05) highlighting the market acceptability with usefulness and effectiveness of the nanosensor for food quality and safety evaluation.

ABSTRACT

Polycyclic aromatic hydrocarbons (PAHs) with the properties of structural stability, semi-volatility, and hydrophobicity are toxic and persistent in environments; thus, their transport and fate in agroecosystems is essential for reducing PAH accumulation in the edible parts of crops. Here, we cultivated cabbages (Brassica pekinensis L.) and carrots (Daucus carota L.) in PAH-contaminated soils under the greenhouse and field conditions. After harvesting, we observed a 9.5-46% reduction in soil ∑PAH concentrations. There were 37% of bioconcentration factors (BCFbs) > 1 and 93% of translocation factors (TFab) > 1, while low-molecular-weight (LMW) PAHs had higher BCFbs than high-molecular-weight (HMW) PAHs. The PAH concentrations showed significant and positive correlations among soils, the belowground parts, and the aboveground parts. The toxicity equivalent concentration (TEQBaP) followed the order of cabbage (greenhouse) > cabbage (field) > carrot (greenhouse) > carrot (field), suggesting potentially higher health risks in cabbage relative to carrot and vegetables under the greenhouse relative to field condition. Our study suggested growing carrots under field conditions as a management strategy for reducing the risks of vegetables grown in PAH-contaminated soils.

ABSTRACT

Umbelliferous (Apiaceae) vegetables are widely consumed worldwide for their nutritive and health benefits. The main goal of the current study is to explore the compositional heterogeneity in four dried umbelliferous vegetables viz, celery, coriander, dill, and parsley targeting their volatile profile using gas chromatography-mass spectrometry (GC-MS). A total of 133 volatile metabolites were detected belonging to 12 classes. Aromatic hydrocarbons were detected as the major components of the analyzed vegetables accounting ca. 64.0, 62.4, 59.5, and 47.8% in parsley, dill, celery, and coriander, respectively. Aliphatic hydrocarbons were detected at ca. 6.39, 8.21, 6.16, and 6.79% in parsley, dill, celery, and coriander, respectively. Polyunsaturated fatty acids (PUFA) of various health benefits were detected in parsley and represented by roughanic acid and α-linolenic acid at 4.99 and 0.47%, respectively. Myristicin and frambinone were detected only in parsley at 0.45 and 0.56%. Investigation of antibacterial activity of umbelliferous vegetables n-hexane extract revealed a moderate antibacterial activity against Gram-positive and Gram-negative bacteria with higher activity for celery and dill against Staphylococcus aureus with inhibition zone 20.3 mm compared to 24.3 mm of the standard antibacterial drug.

ABSTRACT

Polar pesticides such as anionic or ionisable compounds have always provided a challenge for analytical chemists. Methods of analysis have been developed using a range of techniques including normal phase chromatography, ion-pairing, derivatisation and HILIC or multi-mode chromatography. These work well with some of these compounds but, except for HILIC, all of them have their limitations and none of them cover the range required by legislation. Some of these compounds, glyphosate, chlorate and phosphonic acid, are found regularly in a range of food matrices, and therefore reliable methods of analysis are essential. This study describes an ion chromatography method with tandem mass spectrometry detection which not only covers the full range of compounds required by legislation but also can be expanded to include other anionic or ionisable pesticides and metabolites. These include glyphosate and its metabolites, glufosinate and its metabolites, ethephon and its metabolites as well as fosetyl aluminium, chlorate and perchlorate. The method is fully validated according to the performance criteria from the SANTE guidelines for the analysis of pesticides in food and feed over a wide range of matrices, including milk, infant formula, cereals and fruits and vegetables. Over 300 food samples have analysed as part of our routine monitoring program.

ABSTRACT

Objective To establish a colloidal gold immunochromatography and develop the corresponding test strip for detecting organophosphorus compounds including omethoate, phoxim, dipterex, and parathion in fruits, vegetables and drinking water. Methods Artificial antigen molecules of organophosphorus compounds were synthesized using N-hydroxysuccinimide esters. Acetylcholinesterase antigen was prepared and purified, and the serum containing the corresponding antibody was prepared, purified, and labeled. The working parameters of the test strip were optimized, and the performance evaluation of it was conducted. Results The titer of the antisera ranged from 1:32 to 1:64, with a protein content of approximately 2 mg/mL. The purified polyclonal antibodies displayed target bands at relative molecular masses (Mr) of 25 000 and 55 000, indicating satisfactory purity. The reaction time of the test strips was between 5 to 10 minutes, with a detection limit for samples at 200 ng/mL. Both specificity and accuracy were satisfactory, and the test strip remained valid for 6 months. Conclusion A simple and rapid colloidal gold immunochromatography is established successfully for detecting several organophosphorus compounds and may be useful for on-site preliminary screening of samples in large quantities.

ABSTRACT

Urban agriculture is common in fertile river floodplains of many developing countries. However, there is a risk of contamination in highly polluted regions. This study quantifies health risks associated with the consumption of vegetables grown in the floodplain of the urban river 'Yamuna' in the highly polluted yet data-scarce megacity Delhi, India. Six trace elements are analyzed in five kinds of vegetable samples. Soil samples from the cultivation area are also analyzed for elemental contamination. Ni, Mn, and Co are observed to be higher in leafy vegetables than others. Fruit and inflorescence vegetables are found to have higher concentrations of Cr, Pb, and Zn as compared to root vegetables. Transfer Factor indicates that Cr and Co have the highest and least mobility, respectively. Vegetable Pollution Index indicates that contamination levels follow as Cr > Ni > Pb > Zn. Higher Metal Pollution Index of leafy and inflorescence vegetables than root and fruit vegetables indicate that atmospheric deposition is the predominant source. Principal Component Analysis indicates that Pb and Cr have similar sources and patterns in accumulation. Among the analyzed vegetables, radish may pose a non-carcinogenic risk to the age group of 1-5 year. Carcinogenic risk is found to be potentially high due to Ni and Cr accumulation. Consumption of leafy vegetables was found to have relatively less risk than other vegetables due to lower Cr accumulation. Remediation of Cr and Ni in floodplain soil and regular monitoring of elemental contamination is a priority.

ABSTRACT

The dual-frequency ultrasound-assisted enzymatic digestion (DUED) technique was developed for synchronous green extraction of five heavy metal ions in root vegetables. The combination of α-amylase, cellulase, and papain showed significant advantageous in extracting heavy metal ions. Under optimized dual-frequency ultrasonic conditions, the extraction rates of Cr, As, Cd, Pb, and Hg in carrots reached 99.04%, 105.88%, 104.65%, 104.10%, and 103.13% respectively. And the extraction process is highly efficient, completing in just 15 min. Compared to conventional microwave-assisted acid hydrolysis method, this technique eliminates the need for high-temperature concentrated acid, enhancing its environmental sustainability while maintaining mild reaction conditions, making it ideal for biosensors application. Additionally, simultaneous extraction and detection of four heavy metals in lotus roots were successfully achieved by using DUED and a fluorescent paper-based microfluidic chip. The obtained results are consistent with those obtained using conventional methods.

ABSTRACT

The complicated food matrix seriously limits the one-time test for the potential food hazards in non-targeted analysis. Accordingly, developing advanced sample pretreatment strategy to reduce matrix effects is of great significance. Herein, newly-integrated hollow-structured covalent organic frameworks (HCOFs) with large internal adsorption capacity and target-matched pore size were synthesized via etching the core-shell structured COFs. The as-prepared HCOFs could be directly applied for matrix clean-up of vegetable samples, while further modification of polydopamine (PDA) network facilitated application for animal samples. Both HCOFs and HCOFs@PDA with the comparable sizes to the matrix interference gave excellent adsorption performance to targets, achieving satisfied recoveries (70%-120%) toward 90 pesticides and 44 veterinary drugs in one-test, respectively. This work showed the great potential of the facile-integrated HCOFs with high stability and customized size to remove interference matrix and offered a universal strategy to achieve simultaneous screening of hazards with considerable quantity in high-throughput non-targeted analysis.

ABSTRACT

Anthocyanins are polyphenolic O-glycosides widely responsible for the bright red, purple, and blue colors in the plant kingdom, including a great variety of fruits and vegetables. Hence, they have attracted considerable scientific and industrial interest as potential natural food colorings. However, individual anthocyanins are intrinsically reactive molecules combining electrophilic, nucleophilic, and electron-donating properties. This reactivity may be not only a source of color diversity with, for instance, the formation of new pigments upon winemaking and storage but also a cause of great color instability involving a combination of reversible and irreversible mechanisms (e.g., water addition, autoxidation) leading to colorless products. Hence, using anthocyanin-rich plant extracts as food colorings requires a deep understanding of these color-damaging mechanisms and, no less importantly, of the color-stabilizing mechanisms developed by plants, including π-stacking interactions (self-association, copigmentation), metal binding, and a combination of both. The potential of anthocyanins from deeply colored vegetables, typically acylated by hydroxycinnamic acid residues, will be emphasized in that respect. Moreover, food-grade biopolymers (proteins, polysaccharides) may provide suitable matrices for ready-to-use formulations of anthocyanins as food colorings. In this short review, the mechanisms of color loss and color stabilization are discussed as a function of anthocyanin structure and environment, and some challenges still ahead are outlined.

ABSTRACT

This investigation assessed associations between dietary carotenoid intake and the odds of overweight/obesity, as well as inflammatory/oxidative stress biomarkers, in 851 participants with overweight/obesity (BMI ≥25 kg m-2) and 754 normal-weight controls. A 124-item food-frequency-questionnaire (FFQ) and food composition databases were employed to estimate carotenoid intake. Binary logistic regressions assessed the association of carotenoid intake with the odds of overweight/obesity, adjusting for several potential confounders. Multiple linear regression models revealed associations between carotenoid intake and biomarkers (anthropometrics, blood lipids, inflammation, antioxidant status). Logistic regression models adjusted for various confounders and fruits and vegetables showed protective associations for provitamin A carotenoids (i.e., ß-carotene + α-carotene + ß-cryptoxanthin; odds ratio (OR): 0.655, p = 0.041) and astaxanthin (OR: 0.859, p = 0.017). Similarly adjusted multiple linear regressions revealed significant associations between several carotenoids and lower levels of interleukin (IL)-6, IL-1ß, and TNF-α and increased IL-10 and total antioxidant capacity. Further analysis revealed that lycopene was significantly associated with increased odds of overweight/obesity (OR: 1.595, p = 0.032) in a model adjusted for various confounders and vegetables (i.e., unadjusted for fruits). A protective association between the sum of provitamin A carotenoid and astaxanthin dietary intake and the odds of having overweight/obesity was found. The findings that carotenoids other than lycopene were not or inversely associated with the odds of overweight/obesity may point toward differentiating effects of various carotenoids or their associations with different food groups. Provitamin A rich food items including fruits and vegetables appear to be a prudent strategy to reduce inflammation and the odds of having overweight/obesity.

ABSTRACT

This work aimed to develop gluten-free snacks such as crispbread based on beetroot pomace (Beta vulgaris L.) and golden linseed (Lini semen). Beetroot is attracting more and more consumer attention because of its nutritional and health properties. The use of beet pomace contributes to waste management. Linseed, known as a superfood with many health-promoting properties, was used to produce crispbreads as an alternative to cereals, which are allergens. Beetroot pomace and whole or ground linseed were used in different proportions to produce crispbread snacks. Chemical and physical analyses were performed including water activity, dry matter, betalains, and polyphenols content, as well as Fourier transform infrared spectroscopy (FTIR). A sensory evaluation and microstructure observations were also performed. The obtained snacks were characterized by low water activity (0.290-0.395) and a high dry matter content (93.43-97.53%), which ensures their microbiological stability and enables longer storage. Beetroot pomace provided betalains-red (14.59-51.44 mg betanin/100 g d.m.) and yellow dyes (50.02-171.12 mg betanin/100 g d.m.)-while using linseed enriched the product with polyphenols (730-948 mg chlorogenic acid/100 g d.m.). FTIR analysis showed the presence of functional groups such as the following: -OH, -C-O, -COOH, and -NH. The most desired overall consumer acceptability was achieved for snacks containing 50% beetroot pomace and 50% linseed seeds. The obtained results confirmed that beetroot pomace combined with linseed can be used in the production of vegetable crispbread snacks.

This study aimed to evaluate heavy metals concentrations in soils and vegetables (cabbage, lettuce, and cassava) cultivated at Matola and Beluluane Industrial Parks, and to assess health risks linked to their consumption through estimated daily intake, hazard index (HI), and incremental lifetime cancer risk. Concentrations of Al, As, Co, Cd, Cr, Ni, Pb, and Zn were determined in the two sites. Soil concentrations of As at Beluluane site and As, Cd, and Cr at Matola site exceeded reference limits of the Food and Agriculture Organization/World Health Organization, showing heavy metal contamination. At Beluluane site, all studied vegetables presented As and Pb levels higher than reference limits, Cd concentrations were higher than the reference limit in cabbage, lettuce, and cassava leaves. At Matola site crops concentrations of As, Cd, Cr, and Pb exceeded the reference limits. Zinc exceeded the reference limit in all crops except in cabbage. HIs for vegetables from Beluluane exceeded 1.0 in cabbage (2.66), lettuce (2.27), and cassava leaves (2.37). Likewise, at Matola, HIs exceeded 1.0 in lettuce (1.67), cassava leaves (1.65), and root tubers (13). We found that vegetables cultivated in industrial parks present high carcinogenic risk due to heavy metal contamination, rendering them unsuitable for human consumption.

ABSTRACT

Vitamin K is a multi-function vitamin that has emerging roles in bone, brain and vascular health. Vitamin K composition data remain limited globally and Australia has lacked nationally representative data for vitamin K1 (phylloquinone) in horticultural commodities. Primary samples (n = 927) of 90 Australian-grown fruit, vegetable and nut commodities were purchased in three Australian cities. We measured vitamin K1/phylloquinone in duplicate in 95 composite samples using liquid chromatography with electrospray ionisation-tandem mass spectrometry. The greatest mean concentrations of vitamin K1/phylloquinone were found in kale (565 µg/100 g), baby spinach (255 µg/100 g) and Brussels sprouts (195 µg/100 g). The data contribute to the global collection of vitamin K food composition data. They add to the evidence that vitamin K1/phylloquinone concentrations vary markedly between geographic regions, supporting development of region-specific datasets for national food composition databases that do not yet contain data for vitamin K. Such data are needed globally.
