ABSTRACT

The present review aims to analyze the anatomical and physiological characteristics of the mammary gland and udders of water buffalo by making an anatomofunctional comparison with dairy cattle. It will also discuss the knowledge generated around the physiological regulation of milk ejection in the water buffalo. It was found that buffalo's average udder depth and width is approximately 20 cm smaller than Bos cattle. One of the main differences with dairy cattle is a longer teat canal length (around 8.25-11.56 cm), which highly influences buffalo milking. In this sense, a narrower teat canal (2.71 ± 0.10 cm) and thicker sphincter muscle are associated with needing higher vacuum levels when using machine milking in buffalo. Moreover, the predominant alveolar fraction of water buffalo storing 90-95% of the entire milk production is another element that can be related to the lower milk yields in buffalo (when compared to Bos cattle) and the requirements for prolonged prestimulation in this species. Considering the anatomical characteristics of water buffalo's udder could help improve bubaline dairy systems.

ABSTRACT

The production of beef carries significant environmental repercussions on a worldwide level. Considering that the production of beef in Alpine mountainous regions, such as South Tyrol (Italy), constitutes a modest yet progressively growing segment within the local agricultural sector focus must be put on minimizing the environmental impact of producing one kilogram of meat, while also accounting for the carbon sequestered by Alpine pastures in such marginal areas. To this end 20 beef farms distributed in the South Tyrolean region (Italy) were divided based on the age at slaughter of the beef cattle: 10 farms with a slaughter age of 12 months (SA12) and 10 farms with a slaughter age of 24 months (SA24). Live cycle assessment (LCA) approach was used, and the impact was estimated using two functional units (FU): 1 kg of live weight (LW) and 1 kg of carcass weight (CW). Global warming potential (GWP100, kg CO2-eq), acidification potential (AP, g SO2-eq), and eutrophication potential (EP, g PO4-eq) were investigated. Furthermore, within the account, the carbon sequestered by pastures and permanent grassland has been included for estimated the overall carbon footprint. In terms of GWP100, the SA12 system proved to be significantly lower for both two functional units under studies, with reductions of 8.5 % and 7.4 % in terms of LW and CW, respectively, compared to the SA24 system, specifically, the SA12 system showed an environmental impact in terms of GWP100 of 19.5 ± 1.1 kg CO2-eq/kg LW, which was significantly lower than the SA24 system that exhibited a value of 22.9 ± 1.1 kg CO2-eq/kg LW (P < 0.05). When accounting for the carbon sequestered within the system, the observed values in terms of GWP100 are significantly lower for SA12 compared to SA24, 17.6 ± 1.5 vs. 20.9 ± 1.5 kg CO2-eq/Kg LW (P < 0.05), and 29.2 ± 2.5 vs. 38.7 ± 2.5 kg CO2-eq/Kg CW (P < 0.01). These differences are due to less purchase of concentrated feed and greater use of natural resources such as pastures and permanent grasslands. The research indicated that the production of beef in the Alpine region of South Tyrol predominantly occurs within extensive parameters, leading to a satisfactory environmental profile, also including the C sequestration.

ABSTRACT

In this study, we have included the water footprint (WF) in the process of optimizing animal feed rations. The global footprint of cattle production accounts for the largest share (33%) of the global water footprint of livestock production. Using two homogeneous groups of Limousine × Podolian young bulls, two different diets were compared: corn silage feeding (CSF), with a corn silage-based diet; and triticale silage feeding (TSF), with a triticale silage-based diet. Silage constituted about 41% and 46% of the feed composition (for CSF and TSF, respectively). Diets were characterised by the same energy and protein content. Despite the lower WF in the TSF group than in the CSF group (7726 vs. 8571 L/day/calf respectively), no significant differences were found in animal performances (i.e., daily weight gain and final weight), feed conversion or income over feed costs. These results show that simple production decisions can have a significant impact on water resource. Therefore, the use of triticale silage should be further promoted, especially in world regions with limited water resources where low WF feed formulation is more strategic than elsewhere.

ABSTRACT

The high demand for PDO buffalo mozzarella cheese is leading to the use of new strategies for feeding supplementation. Spirulina is acknowledged as a valuable source of protein with antioxidant and immune-modulatory effects in humans and animals. This investigation aimed to examine the effect of Spirulina integration in buffalo diets on mozzarella cheese quality, sensory profile, consumer acceptability, and willingness to pay (WTP). The trial was carried out on two groups of 12 buffaloes that differed in Spirulina integration: 50 g/head/d before calving (1 month) and 100 g/head/d after calving (2 months). Both the bulk milk and mozzarella cheese samples from the two groups did not differ in chemical composition. However, Spirulina inclusion influenced the sensory quality of mozzarella cheese, which resulted it being externally brighter, with a higher butter odour and whey flavour and greater sweetness, bitterness, juiciness, tenderness, oiliness, and buttermilk release than the control. The consumer test showed that information about Spirulina affected consumer liking, causing them to be in favour of the Spirulina group, leading to a higher price for it. In conclusion, Spirulina inclusion in buffalo diets affected the sensory quality of mozzarella cheese. The provision of product information to consumers can be a crucial factor in determining their liking and WTP.

ABSTRACT

Water buffaloes have morphological and behavioral characteristics for efficient thermoregulation. However, their health, welfare, and productive performance can be affected by GW. The objective of this review was to analyze the adverse effects of GW on the productive behavior and health of water buffaloes. The physiological, morphological, and behavioral characteristics of the species were discussed to understand the impact of climate change and extreme meteorological events on buffaloes' thermoregulation. In addition, management strategies in buffalo farms, as well as the use of infrared thermography as a method to recognize heat stress in water buffaloes, were addressed. We concluded that heat stress causes a change in energy mobilization to restore animal homeostasis. Preventing hyperthermia limits the physiological, endocrine, and behavioral changes so that they return to thermoneutrality. The use of fans, sprinklers, foggers, and natural sources of water are appropriate additions to current buffalo facilities, and infrared thermography could be used to monitor the thermal states of water buffaloes.

ABSTRACT

Hypothermia is one of the principal causes of perinatal mortality in water buffaloes and can range from 3% to 17.9%. In ruminants, factors affecting hypothermia in newborns may be of intrinsic (e.g., level of neurodevelopment, birth weight, vitality score, amount of brown fat, skin features) or extrinsic origin (e.g., maternal care, environmental conditions, colostrum consumption). When newborn buffaloes are exposed to cold stress, thermoregulatory mechanisms such as peripheral vasoconstriction and shivering and non-shivering thermogenesis are activated to prevent hypothermia. Due to the properties of infrared thermography (IRT), as a technique that detects vasomotor changes triggered by a reduction in body temperature, evaluating the central and peripheral regions in newborn buffaloes is possible. This review aims to analyze behavioral, physiological, and morphological strategies and colostrum consumption as thermal compensation mechanisms in newborn water buffalo to cope with environmental changes affecting thermoneutrality. In addition, the importance of monitoring by IRT to identify hypothermia states will be highlighted. Going deeper into these topics related to the water buffalo is essential because, in recent years, this species has become more popular and is being bred in more geographic areas.

ABSTRACT

The production of game meat is a proven way of promoting sustainable food, which is also consistent with the proper management of the expansion of the wild boar population in Italy. In the present study, we investigated consumer response to sensory attributes and consumer preference for ten types of "cacciatore" salamis prepared with different mixtures of wild boar/pork (30/50 or 50/50) and spice ingredients. PCA analysis showed a clear characterization of the salamis based on the first component with the hot pepper powder and fennel types differing from the others. For the second component, salamis without flavorings could be discriminated by those flavored with aromatized garlic wine or with black pepper only. The main findings of the hedonic test revealed that products with hot pepper and fennel seeds received the highest ratings, as well as satisfactory acceptance in the consumer test sensory analysis for eight out of ten products. The panelists and consumers' ratings were influenced by the flavors used, but not by the ratio of wild boar to pork. This gives us the opportunity to produce more cost-effective and environmentally friendly products, as doughs with a high proportion of wild boar meat can be used without affecting product preference.

ABSTRACT

Demographics, anthropometrics, oral responsiveness to sensory stimuli and psycho-attitudinal traits were collected from a representative Italian population sample (n = 2384; 58% women, age 18-60 years) and considered as possible explanatory variables affecting meat liking. Differences in motives underlying individual variation in liking for meat were independently investigated by gender. Three groups of subjects were identified based on liking ratings: Slightly Likers, Likers and Lovers. Both common and gender-specific variables affecting liking for meat were identified. The interest in food (including its rewarding function) and eating experience, low food neophobia and relatively high Body Mass Index characterized meat Lovers irrespective to gender. The careful food selection and the food comforting function further characterized women meat Lovers. Men Slightly Likers were characterized by the interest for health-related food aspects, importance assigned to naturalness and restrained eating. Markers of oral responsiveness were ineffective for describing variation in liking for meat.

ABSTRACT

Maternal behavior, in water buffalo and other ruminants, is a set of patterns of a determined species, including calving, imprinting, and suckling. This behavior is mainly triggered by hormone concentration changes and their interactions with their respective receptors in the brain, particularly oxytocin. These chemical signals also influence mother-young bonding, a critical process for neonatal survival that develops during the first postpartum hours. Currently, dairy buffalo behavior during parturition has rarely been studied. For this reason, this review aims to analyze the existing scientific evidence regarding maternal behavior in water buffalo during calving. It will address the mechanisms of imprinting, maternal care, and allosuckling strategies that may influence the survival and health of calves.

ABSTRACT

The aim of the study was to evaluate the effects of GnRH administrated at day 35 after artificial insemination (AI) on the reproductive performance of buffalo cows. In ten buffalo farms in the period January−February, 481 buffalo cows were subjected to estrus synchronization protocol and fixed-time artificial insemination (Ovsynch−TAI program). Radioimmunoassays (RIA) for pregnancy-associated glycoproteins (PAGs) were used to detect pregnancy at day 28 after AI (cut-off value: ≥1 ng/mL). Among pregnant subjects, those with PAG values between 1 and 2.5 ng/mL were considered at risk of embryonic mortality (EM) and were assigned into two groups: treated (T; n = 57) control (C; n = 57). Treated buffaloes received 0.01 mg of buserelin acetate intramuscularly on day 35 after AI, whereas control buffaloes received no treatment. The pregnancy diagnosis was confirmed at day 60 through PAGs level and rectal palpation. The treatment with GnRH had a significant effect (p < 0.001) in reducing EM. Between days 28 and 60 after AI, the animals that experienced EM were only 2/57 in the T group, while were 13/57 in the C group. Moreover, GnRH treatment produced a significant increase (p < 0.001) in the PAG concentration between day 28 and day 60. Administration of GnRH at day 35 after AI in animals considered at risk of low embryo survival based on PAG levels allowed a reduction in pregnancy losses and improved the pregnancy rate during low-breeding season in buffalo.

Small-medium dairy enterprises may verify the possibility to enhance their margins by shortening the supply chain. We propose a short sequence of marketing actions with the aim to support the inclusion of transformed goods into their productive process. These actions include the assessment of the main factors affecting consumer cheese purchase decision, evaluation of the validity of the association brand product, and identification of the preferred cheese format. Eighty-two consumers were selected. Their motives for purchasing pasta filata cheese were assessed using the food choice questionnaire. They were also asked to rate their preference for 4 different traditional pasta filata cheeses and 3 well-known local cheese brands. The frequency of consumption of 4 different Mozzarella cheese formats (standard Mozzarella, bite-size Mozzarella, cherries, knots or braids) was gathered. One-way ANOVA was used to analyze the food choice questionnaire scores. Purchase intentions were subjected to ANOVA with 2 factors (brand and cheese) and their interaction. The frequencies of consumption of the 4 different Mozzarella formats was analyzed using the χ2 test for independent samples. Based on our results, the communication around pasta filata cheese should focus on intrinsic characteristics such as healthiness and sensory properties, whereas standard Mozzarella with good nutritional and eating quality should be the most produced item and marketed if the associated brand product is well received by the consumers. By shortening the supply chain an increased economic and environmental sustainability can be expected.

Smell, which allows us to gather information about the hedonic value of an odor, is affected by many factors. This study aimed to assess the relationship among individual factors, odor sensitivity, and enjoyment, and to evaluate how overall flavor perception and liking in actual food samples are affected by odor sensitivity. A total of 749 subjects, from four different Italian regions, participated in the study. The olfactory capabilities test on four odors (anise, banana, mint, and pine), as well as PROP (6-n-prpyl-2-thiouracil) status and food neophobia were assessed. The subjects were clustered into three groups of odor sensitivity, based on the perceived intensity of anise. The liking and intensity of the overall flavor were evaluated for four chocolate puddings with increasing sweetness (C1, C2, C3, and C4). The individual variables significantly affected the perceived intensity and liking of the odors. Even if all of the odor sensitivity groups perceived the more intensely flavored samples as the C1 and C4 chocolate puddings, the high-sensitivity group scored the global flavor of all of the samples as more intense than the low-sensitivity group. The low-sensitive subjects evaluated the liking of the sweeter samples with higher scores than the moderate-sensitive subjects, whereas the high-sensitive subjects gave intermediate scores. In conclusion, odor sensitivity plays a pivotal role in the perception and liking of real food products; this has to be taken into account in the formulation of new products, suitable for particular categories with reduced olfactory abilities.

On two farms, three milking groups of buffalo cows were used to assess the consistency of entrance order and the preference for one side of the milking parlour. On Farm 1 (F1) all animals were primiparous (n=57). On Farm 2, three primiparous, 16 secondiparous and 36 multiparous cows (range 1-8) constituted group F2G1; whereas group F2G2 had 12 primiparous, 10 secondiparous and 14 multiparous cows (range 1-10). Animals were milked in auto-tandem milking parlours (2×5 and 2×6 for Farms 1 and 2, respectively). For each cow, entrance order into milking parlour, side where she was milked, milk yield, time and duration of milking were recorded. These data were derived from the computerised identification of cows. The sequence in which the cows entered the milking parlour ranged from 1 to 57 for group F1, from 1 to 55 for group F2G1 and from 1 to 36 for group F2G2. The analysis of data was conducted on 130, 120 and 92 consecutive milkings for groups F1, F2G1 and F2G2, respectively. Kendall's coefficients of concordance showed a strong constancy of the entrance order into milking parlour for groups F1 (W=0·658; χ2=4792·81; P<0·001), F2G1 (W=0·779; χ2=5046·81; P<0·001) and F2G2 (W=0·624; χ2=2030·48; P<0·001). Spearman rank correlation coefficients indicated that the more productive cows in groups F1 and F2G1 tended to enter the milking parlour first (r s=-0·221 and r s=-0·215; P<0·10; respectively). In group F2G1, a negative correlation was found between duration of milking and order of entry in the milking parlour (r s=-0·265; P<0·05). Animals in group F2G2 (r s=0·334; P<0·05) with higher days in milk entered the milking parlour latterly. In all three groups, 68 cows (45·9%) preferred the right side of the milking parlour, 73 the left side (49·3%) and the remaining seven (4·8%) showed no preference. Finally, negative correlations were found between mean entrance order and parity for both groups of Farm 2 (r s=-0·319; P<0·05 and r s=-0·325; P<0·05 for F2G1 and F2G2, respectively). As buffaloes showed higher entrance order consistency and side preference than other domestic ruminants, it is concluded that management practices that disturb their choice should be avoided in order to minimise stress during farming routines.

ABSTRACT

The relationship of body condition score (BCS) and blood urea and ammonia to pregnancy outcome was examined in Italian Mediterranean Buffalo cows mated by AI. The study was conducted on 150 buffaloes at 145 +/- 83 days in milk that were fed a diet comprising 14.8% crude protein, 0.9 milk forage units.kg-1 dry matter and a non-structural carbohydrate/crude protein ratio of 2.14. The stage of the oestrous cycle was synchronised by the Ovsynch-TAI programme and blood urea and ammonia levels were assessed on the day of AI. Energy corrected milk (ECM) production and BCS were recorded bi-weekly. The pregnancy risk was 46.7% and was slightly lower in buffaloes with BCS < 6.0 and BCS > 7.5. There were no significant differences in ECM, urea and ammonia between pregnant and non-pregnant buffaloes. However, pregnancy outcome was higher (P = 0.02) in buffaloes with blood urea < 6.83 mmol.L-1. The likelihood of pregnancy for buffaloes with low urea blood level was 2.6 greater than for high urea level and exposure to a high urea level lowered the probability of pregnancy by about 0.25. The findings indicate that buffaloes are similar to cattle and increased blood levels of urea are associated with reduced fertility when animals are mated by AI.
