ABSTRACT

The National Beef Quality Audit (NBQA)-2022 serves as a benchmark of the current market cow and bull sectors of the U.S. beef industry and allows comparison to previous audits as a method of monitoring industry progress. From September 2021 through May 2022, livestock trailers (n = 125), live animals (n = 5,430), and post-slaughter hide-on animals (n = 6,674) were surveyed at 20 commercial beef processing facilities across the U.S. Cattle were transported in a variety of trailer types for an average distance of 490.6 km and a mean transport time of 6.3 h. During transit, cattle averaged 2.3 m2 of trailer space per animal indicating sufficient space was provided according to industry guidelines. Of all trailers surveyed, 55.3% transported cattle from an auction barn to a processing facility. When surveyed, 63.6% of all truck drivers reported to be Beef Quality Assurance certified. The majority (77.0%) of cattle were sound when evaluated for mobility. Mean body condition scores (9-point scale) for beef cows and bulls were 3.8 and 4.4, respectively, whereas mean body condition scores (5-point scale) for dairy cows and bulls were 2.3 and 2.6, respectively. Of the cattle surveyed, 45.1% had no visible live animal defects, and 37.9% had only a single defect. Of defects present in cows, 64.6% were attributed to an udder problem. Full udders were observed in 47.5% of all cows. Nearly all cattle were free of visible abscesses and knots (97.9% and 98.2%, respectively). No horns were observed in 89.4% of all cattle surveyed. Beef cattle were predominantly black-hided (68.9% and 67.4% of cows and bulls, respectively). Holstein was the predominant dairy animal observed and accounted for 85.7% of the cows and 98.0% of the bulls. Only 3.1% of all animals had no form of identification. Findings from the NBQA-2022 show improvements within the industry and identify areas that require continued education and research to improve market cow and bull welfare and beef quality.

ABSTRACT

The objective of this study was to evaluate a novel multi-blade Shear (MBS) method for measuring texture properties of both raw and cooked broiler fillets (pectoralis major) with the woody breast (WB) myopathy. A total of 180 broiler breast fillets (60 normal [NOR], 60 moderate WB [MOD], and 60 severe WB [SEV]) in two meat states (fresh never-frozen, n = 144; frozen/thawed, n = 36) were chosen based on their WB scores. In each trial, half of the fillets were used for measuring raw meat texture and the other half for cooked meat texture measurement. Blunt Meullenet-Owens Razor Sear (BMORS) was used for comparison. In fresh raw broiler fillets, both the MBS and BMORS methods detected differences between NOR, MOD, and SEV fillets (P < 0.001). In cooked broiler fillets, the methods were equivalent in their ability to separate SEV from NOR fillets. The MBS measurements showed greater Spearman correlation coefficients with the WB scores (rs ≥ 0.70 in raw and ≥ 0.33 in cooked) compared to the BMORS measurements (rs = 0.63 in raw and ≤ 0.27 in cooked) for both fresh and cooked breast fillets. In addition, the MBS measurements were either as precise as or more precise than BMORS measurements regardless of meat condition (fresh vs. cooked) and the shear parameter. These results suggest that the MBS method is more reliable in measuring tactile characteristics of broiler breast fillets with the WB myopathy compared with the BMORS method.

ABSTRACT

Woody breast (WB) myopathy is a quality defect, afflicting a large portion of commercial broilers to some degree. The WB myopathy is commonly attributed to rapid bird growth and characterized by excessive fibrosis within the pectoralis major, which is thought to cause the palpably hardened texture observed in the afflicted breast meat. These phenotypically tough breast fillets are not marketed for traditional intact muscle products owing to poor quality and eating experience. Potential avenues for these afflicted breast fillets include their use in formulation of fresh and cooked sausages. Two degrees of WB fillets (moderate and severe) were used as a replacement for normal (unafflicted) breast fillet meat at levels of 25, 50, and 100%, in a sausage formulation with 1.5% salt and 15% chicken fat. All 6 treatments were compared with a control formulation (100% normal breast meat) and analyzed for texture profile, cook loss, color, and proximate composition. Moisture and fat content for all formulations were similar (P = 0.95 and P = 0.33, respectively), but with increase in the inclusion rate of WB meat, lower protein content (P < 0.01) was observed. Raw sausage color indicated a lighter (P < 0.05) color for the control sausage (100% normal) than with both 100% moderate and 100% severe formulations. Similarly, sausages containing 100% severe WB meat were the darkest (L∗; P < 0.05), but they were similar to sausages containing 100% moderate (P > 0.05) WB meat. Texture profile analysis indicated a decrease in hardness, cohesiveness, and springiness with use of 100% severe WB meat, while inclusion of lower proportions of severe WB meat resulted in similar textural characteristics. These results indicate the possibility of using WB fillet meat in a sausage formulation with minimal impact on sausage texture profiles.

ABSTRACT

ABSTRACT: Ruminants are natural reservoirs of Shiga toxin-producing Escherichia coli (STEC), and the STEC can be easily transferred to carcasses during the conversion of animals to meat. Three experiments were conducted to validate the efficacy of lactic acid (LA; 4%), peroxyacetic acid (PAA; 300 ppm), and hot water (HW; 80°C) for their individual or combined abilities to reduce STEC surrogates on bob veal carcasses pre- and postchill and through fabrication. In experiment 1, hot carcasses (n = 9) were inoculated with a five-strain cocktail (ca. 8 log CFU/mL) containing rifampin-resistant surrogate E. coli (BAA-1427, BAA-1428, BAA-1429, BAA-1430, and BAA-1431) and then treated with HW, LA, or PAA. Carcasses were then chilled (0 ± 1°C; 24 h) and split in half, and each side was treated with either LA or PAA. In experiment 2, hot carcasses (n = 3) were inoculated and chilled (24 h). After 24 h, the carcasses were split, and each side was treated with either LA or PAA. For experiment 3, carcasses (n = 3) were chilled for 24 h, split, inoculated, and treated with either LA or PAA. After chilling, carcasses from all three experiments were fabricated to subprimals and the cut surfaces were sampled to determine the translocation of bacteria. Experiment 1 showed that LA+LA was the most effective (P ≤ 0.05) treatment for reducing surrogate E. coli on veal. In experiments 2 and 3, LA and PAA were similar (P > 0.05) in their abilities to reduce E. coli on chilled veal carcasses. In experiments 1 and 2, all antimicrobial treatments resulted in undetectable levels (<0.2 log CFU/cm2) of surrogate E. coli on cut surfaces after fabrication, whereas low levels (1.7 and 1.0 log CFU/cm2 for LA and PAA, respectively) were observed in experiment 3. Of the antimicrobial interventions utilized, LA was more effective for reducing STEC surrogate populations on veal carcasses, pre- and/or postchill.

ABSTRACT

The objective of this study was to collect and interpret three-axis acceleration, temperature, and relative humidity data from six locations within commercial transport trailers shipping market-weight pigs. Transport was observed in Kansas (n = 15) and North Carolina (n = 20). Prior to loading, three-axis accelerometers were affixed to six locations on the trailers: top fore (TF), top center (TC), top aft (TA), bottom fore (BF), bottom center (BC), and bottom aft (BA) compartments. Data were post-processed to calculate root-mean-square (RMS) accelerations and vibration dose values (VDV) in the vertical direction and the horizontal plane. These values were compared with exposure action values (EAV) and exposure limit values (ELV), vibration levels deemed uncomfortable and potentially dangerous to humans. Additionally, RMS and VDV were compared among the trailer compartments. The vertical RMS accelerations for all compartments exceeded the EAV for loads measured in Kansas, and for the majority of the compartments measured in North Carolina. Many compartments, specifically the BA compartment from all trips, exceeded the vertical ELV. Regardless of where the data were collected, fewer compartments exceeded the EAV in the horizontal orientation. Only BA compartments exceeded the ELV in the horizontal orientation. There were Area × Level interactions for vertical and horizontal RMS and VDV (P < 0.01). The BF compartment had a greater vertical RMS value than the TF, TC, and BC (P < 0.02) compartments, but did not differ (P = 0.06) from the TA compartment. The vertical RMS of the TA compartment did not differ from the TF, TC, and BC compartments (P > 0.13). The BF compartment had a greater (P = 0.02) vertical VDV value than the TC location, but did not differ from the other locations (P > 0.16). All other locations did not differ in vertical VDV (P > 0.12). The BF compartment had greater horizontal RMS than the TC and TA compartments (P < 0.01), but did not differ from TF and BC compartments (P > 0.12). All other compartments did not differ in horizontal RMS (P > 0.34). All compartments, aside from the BA compartment, did not differ in horizontal VDV (P > 0.19). Vibration analyses indicated the BA compartment had the greatest vertical and horizontal vibrations and a large percentage of the compartments exceed the EAV and ELV, which indicated pigs may have experienced uncomfortable trips that could cause discomfort or fatigue.

ABSTRACT

The objective of this study was to determine the effects of the LIPEX finishing diet regimen on pork chop n-3 polyunsaturated fatty acid (PUFA) content and fresh meat quality. Twenty-eight finishing pigs (PIC 359 × F1 Hermitage/NGT; initial BW 81.5 ± 2.55 kg) were subjected to a 49-d feeding trial. Treatments consisted of a 2 × 2 factorial design with Sex (n = 14 barrows and gilts each) and Diet as main effects. Dietary treatments consisted of a 2-phase standard finishing diet regimen or a 2-phase LIPEX finishing diet regimen (EXL Milling, Lloydminster, SK, Canada). The LIPEX diet regimen added the EXL LIPEX.FA369 additive during phase 1 and the EXL LIPEX.FA369 and XFE Omega-3 Finishing Touch during phase 2. Five-days postmortem, whole boneless pork loins were transported to the Kansas State University Meats Laboratory, aged 14 d, and halved immediately behind the spinalis dorsi. After blooming for 30 min, chops were evaluated for Japanese color score and National Pork Producers Council (NPPC) color and marbling scores. A 2.54-cm chop was taken immediately anterior to the loin cut and was used for fatty acid and proximate composition analyses. Four 2.54-cm chops were cut from the posterior portion of the loin and were utilized for a 7-d simulated retail display analyses, Warner-Bratzler shear force (WBSF), and trained sensory panel. There were no Sex × Diet interactions for all variables measured in the study (P > 0.10). The LIPEX finishing regimen increased chop C18:3n-3, C20:5, and C22:5, which decreased the n-6:n-3 ratio (P < 0.01). There were no Diet effects on pH, Japanese and NPPC color and marbling scores, and proximate composition (P > 0.23). Diet did not affect cook loss, WBSF, and trained sensory panel scores (P > 0.012). There were no 2- or 3-way interactions between Diet, Sex, and Day, or Diet and Sex main effects for L*a* values, surface oxy- and metmyoglobin percentages, or visual panel chop redness and surface discoloration scores (P > 0.14). Feeding the LIPEX finishing diet regimen increased chop n-3 PUFA content without negatively impacting fresh chop palatability or color stability.

ABSTRACT

More information on expected animal performance and carcass traits of forage-finished steers grazing warm-season annual forages is needed. To achieve this objective, a grazing trial was conducted in 2014, 2015, and 2016 (70, 63, and 56 d, respectively), with variation in length of grazing based on forage availability. Sixteen pastures (0.81 ha) were assigned to 1 of 4 forage treatments in a randomized complete block design. Forage treatments were brown midrib sorghum × sudangrass (BMR; Sorghum bicolor var. bicolor*bicolor var. sudanense), sorghum × sudangrass (SS), pearl millet [PM; Pennisetum glaucum (L.)R.Br.], or pearl millet planted with crabgrass [PMCG; Digitaria sanguinalis (L.) Scop.]. Each year, British-cross beef steers (n = 32; 3 y average: 429 ± 22 kg) were stratified by weight and randomly assigned to 1 of the 16 pastures for forage finishing. Each pasture was subdivided into two 0.405-ha paddocks for rotational stocking and a put-and-take stocking method was used to maintain a forage allowance of 116 kg forage dry matter/100 kg body weight (BW). Shrunk body weight and ultrasonically measured carcass composition were recorded at the initiation, middle, and end of each grazing season. Steers were harvested once forage availability became limited and chilled carcasses (24 h) were evaluated for yield grade and quality grade attributes. Statistical analysis was conducted using the GLIMMIX procedure in SAS 9.4 (Cary, NC) with main effects of treatment, year, and the interaction. Pasture and block were considered random effects while date was assessed as a main effect when applicable. Daily stocking densities were greater (P < 0.04) for SS than PMCG in the first 20 d of 2014 and 2015. Forage treatment did not affect (P > 0.17) total gain, total average daily gain, or body weight at any time point. Ultrasound composition traits of loin muscle area, 12th rib fat thickness, intramuscular fat, and rump fat were impacted (P < 0.01) by scanning date. No differences (P > 0.08) in forage treatments were observed for carcass characteristics associated with yield grade or quality grade. The findings suggest that forage-finished cattle during the summer months on BMR, SS, PM, and PMCG perform similarly, giving producers the option to use the most economical or practical forage type for their production system.

ABSTRACT

Demand and consumption of goat meat is increasing in the United States due to an increase in ethnic populations that prefer goat meat. As ruminant animals, goats are known reservoirs for Shiga toxin-producing Escherichia coli (STEC) and proper handling, especially during slaughter, is imperative to reduce the likelihood of carcass and meat contamination. However, the majority of antimicrobial intervention studies during the slaughter of ruminant species have focused on beef, highlighting the need for validation studies targeting small ruminants, such as goats, during slaughter and chilling procedures. The objective of this research was to evaluate 4.5% lactic acid (LA; pH 2.1), peroxyacetic acid (PAA; 400 ppm; pH 4.7), a hydrochloric and citric acid blend (Citrilow [CL]; pH 1.2), 5% levulinic acid plus 0.5% sodium dodecyl sulfate (LVA+SDS; pH 2.60), and a nontreated control (CON) for their efficacy in reducing STEC surrogates and their effect on carcass color from slaughter through 24-h chill. Fifteen goat carcasses across three replications were inoculated with a five-strain cocktail (ca. 5 log CFU/cm2 attachment), containing rifampin-resistant surrogate E. coli (BAA-1427, BAA-1428, BAA-1429, BAA-1430, and BAA-1431) and were randomly assigned to an antimicrobial treatment. Antimicrobials were applied prechill and 24 h postchill. Mean log reductions achieved after prechill treatment with LA, PAA, CL, and LVA+SDS were 2.00, 1.86, 2.26, and 1.90 log CFU/cm2, respectively. Antimicrobial treatment after the 24-h chilling, resulted in additional reductions of surrogate E. coli by 0.99, 1.03, 1.94, and 0.47 log CFU/cm2 for LA, PAA, CL, and LVA+SDS, respectively. Antimicrobial treatments did not impact goat carcass objective color (L* and a*), except for b*. The antimicrobials tested in this study were able to effectively reduce surrogate STEC populations during slaughter and subsequent chilling without compromising carcass color.

ABSTRACT

The demand for a year-round supply of fresh, locally grown, forage-finished beef products has created a need for forage-finishing strategies during the summer months in the southeast. A 3-yr study was conducted to evaluate four warm-season annual forages in a southeastern forage-finishing beef production system. Treatments were four forage species and included brown-midrib sorghum × sudangrass (Sorghum bicolor var. bicolor*bicolor var. sudanense; BMR), sorghum × sudangrass (SS), pearl millet [Pennisetum glaucum (L.) R. Br.; PM], or pearl millet planted with crabgrass [Digitaria sanguinalis (L.) Scop.; PMCG]. Treatments were distributed in a randomized complete block design with four replicates. Pastures (0.81 ha, experimental unit) were assigned to one of four forage treatments, subdivided, and rotationally stocked with a variable stocking density. British-cross beef steers (n = 32; 3-yr average: 429 ± 22 kg) grazed for 70, 63, and 56 d in 2014, 2015, and 2016, respectively. Put-and-take animals were used to maintain a forage allowance of 116 kg forage dry matter /100 kg body weight. Forage mass was measured by clipping a 4.3-m2 area in triplicate on d 0 and on 14-d intervals. Hand grab samples for forage nutritive value determination and quadrat clippings for species compositions were measured on d 0 and on 34-d intervals until termination of the trial. Forage mass was lowest (P < 0.01) for PMCG at the initiation of the grazing trial, whereas BMR was greater (P < 0.01) than SS at wk 6. Total digestible nutrients in 2014 were greater for SS compared to BMR and PM at the middle harvest (P < 0.01) and BMR, PM, and PMCG at the final harvest (P < 0.01). At the middle and final harvests in both 2015 and 2016, PM and PMCG contained greater (P < 0.01) concentrations of crude protein than SS. These results suggest that BMR, SS, PM, and PMCG may all be used in southeastern forage-finishing beef production systems, as long as the producer strategically accounts for the slight growth and nutritive value differences throughout the season.

ABSTRACT

To continue the series that began in 1994, the National Beef Quality Audit (NBQA) - 2016 was conducted to quantify the quality status of the market cow and bull beef sector, as well as determine improvements made in the beef and dairy industry since 2007. The NBQA-2016 was conducted from March through December of 2016, and assessed hide-on carcasses (n = 5,278), chilled carcasses (n = 4,285), heads (n = 5,720), and offal items (n = 4,800) in 18 commercial processing facilities throughout the United States. Beef cattle were predominantly black-hided; 68.0% of beef cows and 67.2% of beef bulls possessed a black hide. Holstein was the predominant type of dairy animal observed. Just over half (56.0%) of the cattle surveyed had no mud contamination on the hide, and when mud was present, 34.1% of cattle only had small amounts. Harvest floor assessments found 44.6% of livers, 23.1% of lungs, 22.3% of hearts, 20.0% of viscera, 8.2% of heads, and 5.9% of tongues were condemned. Liver condemnations were most frequently due to abscess presence. In contrast, contamination was the primary reason for condemnation of all other offal items. Of the cow carcasses surveyed, 17.4% carried a fetus at the time of harvest. As expected, mean carcass weight and loin muscle area values observed for bulls were heavier and larger than cows. The marbling scores represented by cull animal carcasses were most frequently slight and traces amounts. Cow carcasses manifested a greater amount of marbling on average than bull carcasses. The predominant fat color score showed all carcasses surveyed had some level of yellow fat. Only 1.3% of carcasses exhibited signs of arthritic joints. Results of the NBQA-2016 indicate there are areas in which the beef and dairy industries have improved and areas that still need attention to prevent value loss in market cows and bulls.

ABSTRACT

Our objective was to determine the effect of forage ensiling and ration fermentation on total mixed ration pH, ruminal fermentation and animal performance. Thirty Holstein-Zebu cross steers were allotted to feeding treatments for 188 days in a randomized complete block design including: fresh grass-total mixed ration (GTMR; pH 4.7), grass silage-TMR (STMR; pH 4.0) and fermented-TMR (FTMR; pH 3.5). Average daily gain for STMR was greatest during the first 3 months period; however, that for FTMR tended to be greater than GTMR during the second 3 months period (P < 0.10). During the second period dry matter intake for STMR was the greatest (P < 0.01), but feed conversion ratio (P < 0.01) and cost per gain (P < 0.01) were the least for FTMR. Protein digestibility tended (P < 0.10) to be greater for FTMR than STMR and fat digestibility was greater (P < 0.05) for GTMR and FTMR than STMR. FTMR had less (P < 0.01) ruminal NH3 -N content than STMR. Total volatile fatty acids post-feeding was greatest for GTMR (P < 0.01). Ruminal proportions of acetic and butyric acids were greater for FTMR than GTMR (P < 0.05); in contrast, propionic acid was greater for GTMR (P < 0.05). Utilizing silage or total ration fermentation did not negatively impact on ruminal pH. STMR and FTMRs can be used to maintain performance of growing crossbred Holstein steers.

ABSTRACT

Sixty-four pork loins were randomly assigned to one of four treatments to evaluate the use of alkaline electrolyzed reduced water as a replacement for traditional enhancement solutions. Treatments included: alkaline electrolyzed reduced water (EOH; pH≈11.5), EOH plus 2.5% potassium-lactate (EOK), industry standard (IS; 0.35% sodium tri-polyphosphate, 0.14% sodium chloride, 2.5% potassium-lactate), and no enhancement (CON). After enhancement (targeting 110%) and rest period, chops were cut (2.54-cm) to test treatment effects on water holding capacity, Warner-Bratzler shear force (WBSF), and sensory attributes. Despite its alkaline nature EOH chops exuded more water (P<0.05) than EOK, IS, or CON chops. Control chops were similar (P>0.05) to EOK, however CON and EOK both lost more moisture (P<0.05) than IS. The use of alkaline electrolyzed reduced water did not improve WBSF or sensory characteristics compared to IS treated chops. As a stand-alone enhancement solution alkaline electrolyzed reduced water was not a suitable replacement for industry standard solutions.

ABSTRACT

The inclusion of two sources of buffered vinegar and sodium dodecyl sulfate plus levulinic acid were studied as interventions for Salmonella Typhimurium and for their effect on shelf-life and sensory characteristics of ground beef. For the Salmonella challenge, beef trimmings (80/20) were inoculated then treated with 2% (w/v) liquid buffered vinegar (LVIN), 2.5% (w/w) powdered buffered vinegar (PVIN), a solution containing 1.0% levulinic acid plus 0.1% sodium dodecyl sulfate (SDLA) at 10% (w/v), or had no intervention applied (CNT). The same trim source and production methods were followed during production of patties for shelf-life and sensory testing without inoculation. SDLA patties had the largest reduction (P<0.05; 0.70 log CFU/g) of Salmonella. However, LVIN and PVIN had the least (P<0.05) psychrotrophic growth. SDLA patties had more purge (P<0.05) and lower (P<0.05) subjective color scores. There were not large differences in sensory characteristics, except PVIN exhibited stronger off-flavor (P<0.05).

ABSTRACT

As new pathogen intervention products come to market, it is important to ensure that they maintain or improve meat quality. Shelf-life and palatability traits were measured for top sirloins enhanced to 110% with solutions containing 0.5% sodium chloride and 0.4% sodium tripolyphosphate (CNT); CNT with a 1% solution of 80% sodium citrate plus 20% sodium diacetate (SC+D); or CNT with 2% buffered vinegar (VIN) in the final product. Enhancement solution did not influence color over 7days of retail display, except VIN was subjectively more red than CNT and SC+D on d 7 and SC+D had less discoloration than CNT on d 7 (P<0.05). VIN was rated lower (P<0.05) than CNT for trained sensory tenderness and there was no difference in shear force between treatments. SC+D and VIN show promise for use in beef enhancement solutions, however, further sensory studies are warranted.

ABSTRACT

The objective of this research was to examine the effects of sodium citrate plus sodium diacetate or buffered vinegar on Escherichia coli O157:H7 and psychrotrophic bacteria when incorporated in brine solutions for injected beef. Two experiments were conducted in which 30 top rounds and 30 top sirloins were injected (110%) to contain (i) 0.5% sodium chloride and 0.4% sodium tripolyphosphate as the control (CNT); (ii) CNT with a 1% solution of 80% sodium citrate plus 20% sodium diacetate (SC + D); or (iii) CNT with 2% buffered vinegar (VIN) in the final product. For the E. coli challenge, muscles were surface inoculated to target 6 log CFU/cm(2). After injection and 10 days of storage in a vacuum package (4°C), one half of each muscle was sampled raw and the other half was cooked to an internal temperature of 60°C with a 12-min hold. For raw samples, a significant reduction of 0.6 and 1.0 log CFU/g of E. coli O157:H7 was observed in both SC + D- and VIN-injected top rounds and sirloins, respectively. All cooked samples were E. coli O157:H7 negative. For psychrotrophic analysis, subprimals were injected and vacuum packaged for 10 days at 0 ± 1°C. After 10 days of storage, steaks were fabricated and placed in aerobic display (4 ± 1°C) for 1, 7, 14, and 21 days. Psychrotrophic organism growth was restricted in SC + D and VIN samples when compared with CNT on all days except day 1. Sodium citrate plus sodium diacetate or buffered vinegar may improve the safety and shelf life of multineedle brine-injected beef.
