RESUMEN

The requirement for easily adoptable technology for fruit preservation in developing countries is paramount. This study investigated the effect of pre-treatment (warm water blanching time-3, 5 and 10 min at 60 °C) and drying temperature (50, 60 and 70 °C) on drying mechanisms of convectively dried Synsepalum dulcificum (miracle berry fruit-MBF) fruit. Refined Adaptive Neuro Fuzzy Inference System (ANFIS) was utilized to model the effect and establish the sensitivity of drying factors on the moisture ratio variability of MBF. Unblanched MBF had the longest drying time, lowest effective moisture diffusivity (EMD), highest total and specific energy consumption of 530 min, 5.1052 E-09 m2/s, 22.73 kWh and 113.64 kWh/kg, respectively at 50 °C drying time, with lowest activation energy of 28.8589 kJ/mol. The 3 min blanched MBF had the lowest drying time, highest EMD, lowest total and specific energy consumption of 130 min, 2.5607 E-08 m2/s, 7.47 kWh and 37 kWh/kg, respectively at 70 °C drying temperature. The 5 min blanched MBF had the highest activation energy of 37.4808 kJ/mol. Amongst others, 3-gbellmf-38 epoch ANFIS structure had the highest modeling and prediction efficiency (R2 = 0.9931). The moisture ratio variability was most sensitive to drying time at individual factor level, and drying time cum pretreatment at interactive factors level. In conclusion, pretreatment significantly reduced the drying time and energy consumption of MBF. Refined ANFIS structure modeled and predicted the drying process efficiently, and drying time contributed most significantly to the moisture ratio variability of MBF.

RESUMEN

This work investigated the influence of process variables of extraction temperature (35-55 °C), solid to liquid ratio (1:20-1:50 g/mL) and time (100-200 min) on the total phenolic content (TPC) and yield (EY) of Carica papaya leaves (CPL) extracts using Box-Behnken experimental design available in Design Expert software. Bi-objective process optimization was also carried out using the desirability function algorithm. The optimum process variables were later used to design an integrated process for the production of CPL extracts with the assistance of SuperPro Designer software. Scale-up studies and economic analysis for CPL extracts production were investigated in the range of 0.638-20.431 × 103 kg CPL extracts/y to determine the most economically feasible production capacity based on the minimum unit production cost (UPC) of CPL extracts. The risk and sensitivity analyses of the most economically feasible production scale were carried out using the Monte Carlo simulation in Oracle Crystal Ball software. Process variables had notable influences on the TPC and EY of CPL extracts. The extraction temperature of 35 °C, solid to liquid ratio of 40.25 g/mL and time of 100 min gave the optimum TPC of 74.65 mg GAE/g d.b and EY of 18.76 % (w/w). HPLC results indicated that CPL extracts were rich in gallic, betulinic, chlorogenic, ellagic, ferulic and caffeic acids. The designed integrated process showed similar behavior with the laboratory scale of 0.18758 g CPL extracts/batch. The preliminary techno-economic analysis indicated that plant capacity has a strong dependence on the material & energy demands and process economics. Plant capacity of 19.857 × 103 kg CPL extracts/y possessed the least UPC and was selected as the most economically feasible scale. The certainty of obtaining base case UPC value of 525.21 US$/kg CPL extracts was 75.20%. Sensitivity analysis showed that extracts recovery, CPL/water, centrifuge purchase cost, extraction time, extractor purchase cost and extraction temperature contributed -5.3 %, +42.8%, +4.0%, +47.1%, +0.1%, and +0.5%, respectively to the variance in UPC of CPL extracts.

This aim of this study was to evaluate the effects of pretreatments and temperature on the hot air drying characteristics of hog plum fruits. Hog plum fruits were pretreated with olive oil/K2CO3 or sunflower oil/K2CO3 at 28 °C and olive oil/NaOH cum blanching at 96 °C for 15s, hot water at 96 °C for 15s, and dried in a hot air drier at 50, 60, and 70 °C. Mathematical models were used to fit the data of drying and rehydration kinetics. Results showed that increase in temperature reduced drying time, increased effective diffusivity and shrinkage. Sunflower oil aided chemical pretreated sample had the shortest drying time (780 min) and highest effective diffusivity (6.3 × 10-8 m2/s) at 60 °C, faster rehydration ability at 60 °C, highest retention rate for ascorbic acid (15 %), phenolic content (29 %), and antioxidant activity (12.3 %), while olive oil aided chemical (K2CO3) pretreated sample had the shortest drying time at 50 °C (990 min) and 70 °C (600 min), lowest shrinkage (48.5 %), slower rehydration capacity at 40 °C, and lowest colour change (ΔE = 11.5). Modified Henderson and Pabis and Vega-Gálvez were superior to other fitting models in predicting the drying and rehydration kinetics. Sunflower oil/K2CO3 pretreatment could help improve the drying and quality characteristics of hog plum.

INTRODUCTION: The quality characteristics and stability of phenolic by-products from Cola nitida wastes are critical factors for drug formulation and food nutraceutical applications. OBJECTIVES: In this study, the effect of electromagnetic-based microwave-reflux extraction on the total phenolic content, antioxidant capacity, morphological characteristics, physisorption and chromatographic phenolic profiles were successfully investigated. These physicochemical analyses are often employed in the standardisation of dried herbal and food nutraceutical products. MATERIAL AND METHODS: In this study, the electromagnetic-based extraction process was optimised using the Box-Behnken design. The oleoresin bio-products were subsequently characterised to determine the total phenolic content, morphological and microstructural degradation. These analyses were conducted to elucidate the effect of the microwave heating on the C. nitida pod powder. RESULTS: From the predicted response, the optimal percentage yield was achieved at 26.20% under 5.39 min of irradiation time, 440 W microwave power and oven temperature of 55°C. Moreover, the rapid estimation of the phenolic content and antioxidant capacity were recorded at 124.84 ± 0.064 mg gallic acid equivalent (GAE)/g dry weight (d.w.) and 6.93 ± 0.34 µg/mL, respectively. The physicochemical characterisation results from the Fourier-transform infrared spectroscopy, field emission scanning electron microscopy and physisorption analyses showed remarkable changes in the micro-surface area (13.66%) characteristics. CONCLUSION: The recorded optimal conditions established a basis for future scale-up of microwave extraction parameters with a potential for maximum yield. The physiochemical characterisation revealed the functional characteristics of C. nitida and their tolerance to microwave heating.

The increase in wastes generated from jackfruit seeds has been largely under-utilized in Malaysia. Due to the high nutritional and medicinal content embedded in the cellulosic structure of jackfruit wastes, a need then arises for their physicochemical elucidations. In this study, the extraction of Artocarpus heterophyllus seed was carefully investigated using Taguchi orthogonal optimization design. Complete functional group characteristics and chemical profile of the A. heterophyllus seed extracts were obtained using different physicochemical characterization. The optimal conditions of the microwave extraction parameters were determined at 5 min of irradiation time, 450 W of power and 50 °C of temperature. Under this condition, the optimal yield of 17.34 (mg/g) % was achieved at an SNR ratio of 24.78. The mass spectrometry analysis tentatively identified a total of 90 and 148 secondary metabolites at positive and negative ESI modes, respectively. The chemical profile obtained provided a baseline reference for further investigation on the food and medicinal bioactive from Artocarpus heterophyllus seed oleoresins. The FT-infrared emission spectrum shows the presence of some specific carbohydrates and amide protein functional groups directly linked to C-O (1008 cm-1) the carbonyl (C=O) groups, respectively. Moreover, the morphological characteristics of the jackfruit raw and crude extracts conspicuously revealed large-sized globules which suggest the carbohydrates and protein contents. The result of this study indicates that the use of microwave extraction technology produced high-quality extracts with lower degradation of the thermal labile constituents. This will assist in determining the suitable conditions necessary for the total recovery of medicinal and nutritional constituents and conversion of agricultural waste products into useful products.

This study applied Adaptive Neuro-Fuzzy Inference System (ANFIS) to predict the moisture ratio (MR) during the drying process of yam slices (Dioscorea rotundata) in a hot air convective dryer. Also the effective diffusivity, activation energy, and rehydration ratio were calculated. The experiments were carried out at three (3) drying air temperatures (50, 60, and 70 °C), air velocities (0.5, 1, and 1.5 m/s), and slice thickness (3, 6, and 9 mm), and the obtained experimental data were used to check the usefulness of ANFIS in the yam drying process. The result showed efficient applicability of ANFIS in predicting the MR at any time of the drying process with a correlation value (R2) of 0.98226 and root mean square error value (RMSE) of 0.01702 for the testing stage. The effective diffusivity increased with an increase in air velocity, air temperature, and thickness and the values (6.382E -09 to 1.641E -07 m2/s). The activation energy increased with an increase in air velocity, but fluctuate within the air temperatures and thickness used (10.59-54.93 KJ/mol). Rehydration ratio was highest at air velocity×air temperature×thickness (1.5 m/s×70 °C × 3 mm), and lowest at air velocity × air temperature×thickness (0.5 m/s×70 °C × 3 mm). The result showed that the drying kinetics of Dioscorea rotundata existed in the falling rate period. The drying time decreased with increased temperature, air velocity, and decreased slice thickness. These established results are applicable in process and equipment design, analysis and prediction of hot air convective drying of yam (Dioscorea rotundata) slices.
