Consumers are increasingly looking for healthy foods without the addition of synthetic additives. The aim of this study was to evaluate the efficiency of coffee extracts as a natural antioxidant in fresh pork sausage. Firstly, the conditions for obtaining coffee green extracts were optimized (Central Composite Rotatable Design 23, variables: extraction time, ethanol-water ratio, and sample-solvent ratio) in an ultrasound bath (70 °C). The response variables were the bioactive compounds levels and antioxidant activity. Valid models were obtained (p ≤ 0.05, R2 > 0.751), with higher bioactive content and antioxidant activity in the central point region. Extracts of Robusta and Arabica coffee green (RG and AG) and medium roast (RR and AR) obtained, and central point (10 min, an ethanol concentration of 30%, and a sample-solvent ratio of 10 g/100 mL) and optimized (14.2 min, 34.2%, and 5.8 g/100 mL) parameters were characterized. The RG presented a significantly (p ≤ 0.05) higher content of caffeine (3114.8 ± 50.0 and 3148.1 ± 13.5 mg/100 g) and 5-CQA (6417.1 ± 22.0 and 6706.4 ± 23.5 mg/100 g) in both extraction conditions, respectively. The RG and RR coffee presented the highest antioxidant activity. Two concentrations of RG and RR coffee extracts were tested in fresh pork sausage. The Robusta coffee extract presented the highest antioxidant activity in both roasted and green states. However, when applied to a meat product, the extract prepared with RG coffee showed better results, with efficiency in replacing synthetic antioxidants (content of malonaldehyde/kg of sample below 0.696 ± 0.059 in 20 days of storage), without altering the sensory attributes of the product (average scores above 7.16 ± 1.43 for all attributes evaluated). Therefore, the RG coffee extract was a suitable alternative as a natural antioxidant applied to fresh pork sausage.

In recent years, the interest in products of natural origin has boosted the exploitation and use of plants as food and sources of bioactive compounds, especially wild plants widely used in different cultures for several purposes. Commelina erecta is a wild edible plant (WEP) traditionally used as food and medicine, about which few studies exist. Thus, this study aimed at enhancing the knowledge about its nutritional, chemical and bioactive profile, considering different plant parts and development stages, in order to increase its inclusion in the diet of South American communities. The nutritional profile was found to be similar to other WEP frequently consumed in Brazil. Thirteen phenolic compounds (HPLC-DAD-ESI/MS) were tentatively identified, with apigenin, luteolin and quercetin derivatives being the most abundant. Fructose and oxalic acid were the major sugar and organic acid, respectively, in the aerial parts of C. erecta, and four isoforms of tocopherols were also identified. Regarding the plant's antioxidant activity, the EC50 values varied between 18.4 and 1060 µg/mL in the inhibition of lipid peroxidation assay (TBARS) and between 53 and 115 µg/mL in the oxidative haemolysis inhibition (OxHLIA) assay. The hydroethanolic extract obtained from stems at the flowering stage also presented anti-inflammatory activity. In general, all the extracts evidenced promising antimicrobial activity. Altogether, these results reinforce the traditional use of this plant species as food and medicine to support the diet of needier populations and also promote food sovereignty and sustainability.

This study evaluated the inhibitory effect of phytic acid (PA) on the spore germination and vegetative cells growth of Clostridium perfringens type A, as well as its effect in combination with maltodextrin (MD) in cooked sausages. The addition of 1% PA showed a satisfactory inhibition of spores' germination and vegetative cells growth of C. perfringens in BHI media. The inhibitory effect of 1% PA on vegetative cells was similar to the additive sodium sorbate (SS) at 10%. Subsequently, a mixture of PA-MD (1:1; w/w) was evaluated for the inhibition of C. perfringens spores in cooked sausages. The PA-MD 1.5% and 2.5% had a similar performance to SS 10% and a similar or higher performance than 0.015% NO2 (p < 0.05). In an unprecedented way, the present study demonstrated that PA inhibited spore germination and vegetative cells growth of C. perfringens, highlighting its potential use as an alternative and natural preservative for the meat industry.

ABSTRACT Objective To evaluate factors associated with dietary practices in students of a institution of higher education, included in the PADu study: "Anxiety and depression symptoms among university students in Minas Gerais: a longitudinal study". Methods Cross-sectional study of PADu project baseline with undergraduate first period students, who responded in person to a printed and self-administered questionnaire. Dietary practices were evaluated through a 24 items scale based on recommendations of Dietary Guidelines for the Brazilian Population. Answer choices are four-point Likert scale: "strongly agree", "agree", "disagree" and "strongly disagree". The sum of the items corresponded a score ranging (0-72 points), a high score indicating greater adequacy. The explanatory variables were: sociodemographics (gender, age, knowledge area, skin color, marital status, monthly household income), behaviors (excess alcohol consumption, physical exercise, screen exposure, internet use), health conditions (self-rated health, nutritional status, symptoms of depression, anxiety, stress). Adjusted multiple linear regression model was used to estimate the coefficients and their 95% CI. Results 356 students participated in the study. The average of dietary practices was 34.9±9.3 (0-63) points. Physical exercise practice (β: 3.75; CI: 1.83; 5.67) was associated with higher scores in the eating students score. We observed factors associated with the lowest score greater exposure to screens (β: -0.44; CI: -0.67; -0.13), excessive internet use (β: -3.05; CI: -5.22; -0.88), poor health self-assessment (β: -3.63; CI: -4.97; -1.21), excessive alcohol consumption (β: -2.09; CI: -3.92;-0.26) and stress symptoms (β: -2.81; CI: -4.72; -0.77). Conclusion Most students have inadequate dietary practices associated with internet use, alcohol consumption and stress.


RESUMO Objetivo Avaliar os fatores associados às práticas alimentares em estudantes de uma instituição de Ensino Superior incluídos no estudo PADu: "Sintomas de ansiedade e depressão em universitários de Minas Gerais: um estudo longitudinal". Métodos Estudo transversal da linha de base do projeto PADu com alunos do primeiro período da graduação, que responderam pessoalmente a um questionário impresso e autoaplicável. As práticas alimentares desses estudantes foram avaliadas por meio de uma escala de 24 itens baseada nas recomendações do Guia Alimentar para a População Brasileira. As opções de resposta foram coletadas em escala Likert de quatro pontos: "concordo totalmente", "concordo", "discordo" e "discordo totalmente". A soma dos itens correspondeu a uma pontuação (0-72 pontos), onde uma pontuação alta indicava maior adequação. As variáveis explicativas foram: características sociodemográficas (sexo, idade, área do conhecimento, cor da pele, estado civil, renda familiar total mensal), comportamentos (consumo excessivo de álcool, exercícios físicos, exposição a telas e uso de internet) e condições de saúde (autoavaliação saúde, estado nutricional, sintomas de depressão, ansiedade e stress). O modelo de regressão linear múltipla ajustado foi usado para estimar os coeficientes e seus IC 95%. Resultados 356 alunos participaram do estudo. A média das práticas alimentares foi de 34,9±9,3 (0-63) pontos. A prática de exercícios físicos (β: 3,75; IC: 1,83; 5,67) esteve associada a maiores escores no escore de hábitos alimentares dos escolares. Foram observados fatores associados ao menor escore maior exposição a telas (β: -0,44; IC: -0,67; -0,13), uso excessivo de internet (β: -3,05; IC: -5,22; -0,88), ruim autoavaliação de saúde (β: -3,63; IC: -4,97; -1,21), consumo excessivo de álcool (β: -2,09; IC: -3,92; -0,26) e sintomas de estresse (β: -2,81; IC: -4,72; -0,77). Conclusão A maioria dos estudantes apresenta práticas alimentares inadequadas associadas ao uso da internet, consumo de álcool e estresse.

INTRODUCTION: Heart failure (HF) is a clinical syndrome resulting from the structural and/or functional impairment of blood supply to tissues. Congestion and edema associated with water retention are the main symptoms presented by patients. Fluid (FR) and sodium restriction are non-pharmacological measures indicated in clinical practice to mitigate this symptom, despite their low evidence level. AIM: Assessing the impact of sodium and/or fluid restriction on nutritional parameters of adult patients with HF, based on systematic review with meta-analysis. METHODS: The study was conducted in June 2020, on the following databases: EMBASE, PubMed/MEDLINE, Cochrane Central Register of Controlled Trials (CENTRAL) and Web of Science. Citations were also collected in the gray literature such as thesis banks and preprints. Randomized clinical trials conducted with patients in the age group 18 years, or older, who were hospitalized or under outpatient/clinical follow-up, and who were subjected to intervention based on fluid and/or sodium restriction in comparison to the control, were herein selected. RESULTS: Although FR-based diets are effective in reducing liquid intake, they increase individuals' thirst sensation and body weight in comparison to non-FR diets. The association between this intervention and sodium restriction is also effective in reducing liquid intake as sodium intake decreases. However, the association of the most severe (<2000 mg/day) and moderate (2000-2400 mg/day) sodium restrictions with FR has reduced energy intake, although without evidence of weight change - only the most severe sodium restriction was capable of keeping individuals' thirst sensation. In addition, moderate sodium restrictions (2300 to 3000 mg/day) in association with FR were capable of decreasing urinary sodium excretion. On the other hand, prescriptions of severe or moderate sodium restriction (<2,400 mg/d) alone have reduced individuals' body weight and BMI, although they did not change their caloric intake. However, severe sodium restriction (<2,000 mg) has led to higher body weight than the low-sodium diet (2000 to 2,4000 mg/day). CONCLUSION: Sodium restriction may not be an effective strategy because it adversely affects individuals' weight, a fact that suggests increased congestion. Weight-based FR is supported to bethe best way to individualize this non-pharmacological treatment and it does not appear to affect nutritional parameters capable of putting patients with HF at higher malnutrition risk.

Intestinal mucositis (IM) caused by antineoplastic chemotherapy is characterized by an important inflammatory process, which may compromise ongoing treatment. Our study aimed to investigate the effect of Açaí (Euterpe oleracea Martius) on the antioxidant response in BALB/c mice pretreated with Açaí pulp (200 g/kg) for 14 day. A group of animals receiving a single intraperitoneal injection of 5-FU (200 mg/kg) were euthanized on day three (D3) or seven (D7) after administration, the distal jejunum was isolated for the analyses of histology, superoxide dismutase (SOD) and catalase (CAT) enzyme activities, and concentration of total sulfhydryl groups (GSH). Seven days after induction, the intake of Açaí by the IM group almost completely regenerated tissue histology. Notably, SOD activity decreased in the MUC + Açaí group (D3). CAT activity reduced on D3 and D7 in the IM groups and Açaí treatment groups, respectively. No change was observed in the total GSH concentration at the tissue level. Our results demonstrated the protective effect of Açaí pulp components on intestinal damage induced by 5-FU, as well as the ability to control the response to oxidative stress, in order to mobilize defense pathways and promote tissue repair.

The inclusion of edible wild plants in human diet has been receiving an increasing attention, as they represent an easily accessible source of nutrients, vitamins and antioxidants. In this work, the leaves of Umbelicus rupestris (Salisb.) Dandy, an edible species for which only scarce data is available in literature, were thoroughly evaluated for its nutritional profile, chemical characterization and bioactive properties. Being considered a succulent plant, the leaves revealed a very high content of moisture, with several beneficial compounds, including omega-3 polyunsaturated fatty acids, tocopherols and different polyphenols. A total of twelve flavonoids, three phenolic acids and one phenylpropanoid glucoside were identified in the decoction and/or hydroethanolic extracts, with most of them being described for the first time in this plant. Both extracts showed antioxidant activity and potential to inhibit some of the assayed bacteria, while not presenting cytotoxic effects on a non-tumour primary cell culture.

Recently, there has been an interest regarding the consumption of wild edible plants in modern diets. However, there is still scarce information about several wild vegetables traditionally consumed. Therefore, this work aims on documenting the nutritional and chemical composition of wild radish (Raphanus raphanistrum L.), as well as its bioactive potential. Results showed that wild radish is a potential source of beneficial compounds, including vitamin E, polyunsaturated fatty acid (particularly α-linolenic acid) and different phenolic compounds, in which fourteen phenolics were identified, with kaempferol-3,7-O-di-rhamnoside being the most abundant. The bioactive potential was exploited using hydroethanolic and decoction extracts. Both proved to inhibit several Gram-positive and Gram-negative bacteria and revealed antioxidant activity, while cytotoxicity against non-tumor cell was not observed. In general, results evidence the interest in recovering the use of this wild vegetable as part of a varied diet, which can bring several health benefits.

AIMS: To evaluate the impact of low-grade intraventricular hemorrhage on neurodevelopmental outcome in preterm infants at 24 months of age. METHODS: We conducted a retrospective case-control study of infants with gestational age less than 34 weeks, admitted to a Neonatal Intensive Care Unit between January/2006 and December/2015. Cases were defined as those with low-grade intraventricular hemorrhage (grades I or II), diagnosed by cranial ultrasonography. For each case, a control with the same gestational age but without intraventricular hemorrhage was selected. Follow-up examinations of neurodevelopment were performed at 24 months of age in cases and controls using the Griffiths Mental Development Scale. Cerebral palsy, neurodevelopmental delay (developmental quotient <2 side deviations below the mean), hearing impairment and/or blindness were considered as severe neurodevelopmental impairment. RESULTS: The study included 172 preterm infants: 86 cases and 86 controls. In the univariate analysis, a difference between the two groups was identified for the following clinical findings: antenatal corticosteroid complete cycle (57% in cases vs. 80% in controls; p=0.001; OR: 0.33, 95%CI 0.17-0.64); male gender (63% cases vs. 41% controls; p=0.004; OR: 2.45, 95%CI 1.3-4.5); outborn (26% cases vs. 9% controls; p=0.005; OR: 3.3 95%CI 1.4-8.0); Clinical Risk Index for Babies higher than 5 (24% in cases vs. 12% in controls; p=0.029; OR: 2.4 95%CI 1.1-5.6); intubation in the delivery room (47% cases vs. 27% controls; p=0.007; OR: 2.38 95%CI 1.3-4.5); and neonatal sepsis (34% in cases vs. 20% in controls; p=0.039; OR: 2.1 95%CI 1.03-4.1). After logistic regression, differences were only maintained for antenatal corticosteroid (p=0.005; OR 0.34, 95%CI 0.16-0.72) and male gender (p=0.002; OR 2.9, 95%CI 1.4-5.8). A severe neurodevelopmental deficit was present in three cases (3.5%) and one control (1.2%). No statistically significant differences in outcome were found between cases and controls. CONCLUSIONS: In this sample, preterm infants with low-grade intraventricular hemorrhage diagnosed by cranial ultrasonography had no difference in early neurodevelopmental outcome when compared with controls.


OBJETIVOS: Avaliar o impacto da hemorragia intraventricular de baixo grau no neurodesenvolvimento de lactentes prematuros aos 24 meses de idade. MÉTODOS: Foi conduzido um estudo de caso-controle retrospectivo em lactentes com idade gestacional inferior a 34 semanas, internados em uma Unidade de Terapia Intensiva Neonatal entre janeiro de 2006 e dezembro de 2015. Os casos foram definidos como aqueles com hemorragia intraventricular de baixo grau (graus I ou II), diagnosticada por ultrassonografia craniana. Para cada caso, foi selecionado um controle com a mesma idade gestacional, mas sem hemorragia intraventricular. A avaliação do neurodesenvolvimento foi realizada aos 24 meses de idade, em casos e controles, com a Escala de Desenvolvimento Mental de Griffiths. Paralisia cerebral, atraso no neurodesenvolvimento (quociente de desenvolvimento <2 desvios padrões abaixo da média para a idade), deficiência auditiva e/ou cegueira foram considerados comprometimento grave do neurodesenvolvimento. RESULTADOS: O estudo incluiu 172 prematuros: 86 casos e 86 controles. Na análise univariada, identificou-se diferença entre os dois grupos para os seguintes achados clínicos: ciclo completo de corticosteroide pré-natal (57% nos casos vs. 80% nos controles; p=0,001; OR: 0,33; IC95% 0,17-0,64); sexo masculino (63% casos vs. 41% controles; p=0,004; OR: 2,45, IC95% 1,3-4,5); nascidos em outro hospital (26% casos vs. 9% controles; p=0,005; OR: 3,3 IC95% 1,4-8,0); Índice de Risco Clínico para Bebês acima de 5 (24% nos casos vs. 12% nos controles; p=0,029; OR: 2,4 IC95% 1,1-5,6); intubação na sala de parto (47% casos vs. 27% controles; p=0,007; OR: 2,38; IC95%: 1,3-4,5); e sepse neonatal (34% nos casos vs. 20% nos controlos; p=0,039; OR: 2,1 95% CI 1,03-4,1). Após a regressão logística, as diferenças foram mantidas apenas para o corticosteróide antenatal (p=0,005; OR 0,34, IC 95% 0,16-0,72) e sexo masculino (p=0,002; OR 2,9, IC95% 1,4-5,8). Um déficit grave de neurodesenvolvimento esteve presente em três casos (3,5%) e um controle (1,2%). Não houve diferenças estatisticamente significativas no desfecho entre casos e controles. CONCLUSÕES: Nesta amostra, os prematuros com hemorragia intraventricular de baixo grau diagnosticados pela ultrassonografia craniana não apresentaram diferença no desenvolvimento neurológico precoce quando comparados aos controles.

OBJECTIVE: In the present study we investigated gender-specific associations of low birth weight (LBW) and shorter relative leg length with metabolic syndrome (MetS) after adjusting for sociodemographic characteristics and health-related behaviours. We also investigated whether these associations are independent of age at menarche and BMI at 20 years old. DESIGN: Cross-sectional analysis. SUBJECTS: Baseline data from 12 602 participants (35-74 years) of the Brazilian Longitudinal Study of Adult Health (ELSA-Brasil), 2008-2010. SETTING: MetS was defined according to the revised National Cholesterol Education Program Adult Treatment Panel III guidelines. LBW (<2·5 kg) and age- and sex-standardized relative leg length (high, medium and low) were the explanatory variables studied. The strength of the associations between the explanatory variables and MetS was estimated by Poisson regression with robust variance. RESULTS: MetS prevalence was 34·2 %; it was more prevalent in men (36·8 %) than in women (32·2 %). In multivariate analysis, LBW was associated (prevalence ratio; 95 % CI) with MetS only in women (1·28; 1·24, 1·45). Shorter leg length was associated with MetS in both men (1·21; 1·09, 1·35 and 1·46; 1·29, 1·65 for low and medium lengths, respectively) and women (1·12; 1·00, 1·25 and 1·40; 1·22, 1·59 for low and medium lengths, respectively). Additional adjustments for age at menarche and BMI at 20 years old did not change the associations. CONCLUSIONS: Poor nutritional status as estimated by LBW and lower leg length in childhood was associated with a higher prevalence of MetS, although LBW was a significant factor only among women.

OBJECTIVES: The aim of the present study was to evaluate the effect of açai pulp (Euterpe oleracea Martius) intake on the prevention of oxidative damage by measuring the activity of antioxidant enzymes and biomarkers of protein oxidation in women. METHODS: A nutritional intervention study was conducted with thirty-five healthy women who were asked to consume 200 g/d of açai pulp for 4 wk. Blood samples were collected, and blood pressure and anthropometric parameters were measured before and after the experimental period. Antioxidant enzymes, superoxide dismutase, catalase, glutathione, production of reactive oxygen species, and total antioxidant capacity were evaluated in polymorphonuclear cells. Serum concentration of protein carbonyl and sulfhydryl groups were also determined. RESULTS: The açai intake increased catalase activity, total antioxidant capacity, and reduced the production of reactive oxygen species. Furthermore, it reduced serum concentration of protein carbonyl and increased total serum sulfhydryl groups. CONCLUSIONS: These results show the antioxidant benefit of dietary açai for the healthy women included in the present study, and may increase understanding of the beneficial health properties of this fruit.

The aim of the present study was to investigate the effect of a protein-free diet in the induction of food allergy and oral tolerance in BALB/c mice. The experimental model used was mice that were fed, since weaning up to adulthood, a balanced diet in which all dietary proteins were replaced by amino acid diet (Aa). The absence of dietary proteins did not prevent the development of food allergy to ovalbumin (OVA) in these mice. However, Aa-fed mice produced lower levels of IgE, secretory IgA and cytokines. In addition, when compared with mice from control group, Aa-fed mice had a milder aversive reaction to the allergen measured by consumption of OVA-containing solution and weight loss during food allergy development. In addition, mice that did not have dietary proteins in their diets were less susceptible to induction of oral tolerance. One single oral administration was not enough to suppress specific serum Ig and IgG1 levels in the Aa-fed group, although it was efficient to induce suppression in the control group. The present results indicate that the stimulation by dietary proteins alters both inflammatory reactivity and regulatory immune reactivity in mice probably due to their effect in the maturation of the immune system.

OBJETIVO: Determinar a prevalência das ametropias e oftalmopatias na população do Quilombo São José da Serra – Valença – RJ. MÉTODOS: Foram examinados 92 indivíduos de uma população de 102 pessoas da comunidade Quilombola em São José da Serra. Todos foram submetidos à avaliação oftalmológica completa, incluindo anamnese, ectoscopia ocular, medida da acuidade visual, teste de estereopsia, reflexo vermelho, cobertura monocular, Hirschberg, refração objetiva, subjetiva, biomicroscopia, tonometria de aplanação de GoldmannR, tonometria de sopro e fundoscopia direta ou binocular indireta usando lente de 20D. RESULTADOS: Foram examinados cerca de 90,19% da população quilombola, sendo 61,95% do sexo feminino e 38,04% do sexo masculino. A idade variou de 6 meses a 89 anos. Foram encontrados ametropias com necessidade de correção óptica em 23,91% dos indivíduos sendo mais frequente a presbiopia associada à hipermetropia, miopia e/ou astigmatismo com prevalência de 59,09% dos indivíduos examinados, seguido da presbiopia isolada em 22,72%, do astigmatismo hipermetrópico em 13,63% e do astigmatismo miópico em 4,54% dos examinados. Em relação às oftalmopatias encontraram-se catarata senil em 7,61%, ambliopia refracional em 6,52%, atrofia do epitélio pigmentar da retina e atrofia peripapilar em 2,17%, glaucoma em 1,09%, pterígio em 1,09%, retinocoroidite por toxoplasmose em 1,09% e hipopigmentação retiniana (albinismo ocular) em 1,09%. CONCLUSÃO: A prevalência das ametropias e doenças oculares no Quilombo São José da Serra foi de 23,9%(22/92) e 20,6%(19/92), respectivamente.


OBJECTIVE: To determine the prevalence of refractive errors and eye diseases in the population of the Quilombo São José da Serra – Valença – RJ. METHODS: We examined 92 individuals in a population of 102 people in the community Quilombo São José da Serra. All patients underwent complete ophthalmologic examination including anamnesis, ectoscopy, visual acuity, stereopsis test, red reflex, cover/uncover test, Hirschberg test, manifest and dynamic refraction, biomicroscopy, tonometry (Goldmann and air puff tonometry), direct monocular /or indirect binocular fundoscopy. RESULTS: We examined 90.19% of the population quilombola, and 61.95% were female and 38.04% male. Ages ranged from 6 months to 89 years. Refractive errors were found requiring optical correction in 23.91% of individuals, being more frequent presbyopia associated with hyperopia, myopia and / or astigmatism with a prevalence of 59.09%, followed by presbyopia isolated in 22.72%, hyperopic astigmatism in 13.63% and myopic astigmatism in 4.54%. The ophthalmopathies observed were senile cataracts in 7.61%, refractive amblyopia in 6.52%, atrophy of the retinal pigment epithelium and peripapillary atrophy in 2.17%, glaucoma 1.09%, pterygium in 1.09%, retinochoroiditis toxoplasmosis in 1.09% and hypopigmentation retinal (ocular albinism) in 1.09%. CONCLUSION: The prevalence of ametropia and eye diseases in the Quilombo São José da Serra were 23.9%(22/92) and 20.6%(19/92), respectively.

Leishmania major infection of resistant mice causes a self-limited lesion characterized by macrophage activation and a Th1 proinflammatory response. Atherosclerosis is an inflammatory disease involving hypercholesterolemia and macrophage activation. In this study, we evaluated the influence of L. major infection on the development of atherosclerosis using atherosclerosis-susceptible apolipoprotein E-deficient (apoE KO) mice. After 6 weeks of infection, apoE KO mice exhibited reduced footpad swelling and parasitemia similar to C57BL/6 controls, confirming that both strains are resistant to infection with L. major. L. major-infected mice had increased plasma cholesterol levels and reduced triacylglycerols. With regard to atherosclerosis, noninfected mice developed only fatty streak lesions, while the infected mice presented with advanced lesions containing a necrotic core and an abundant inflammatory infiltrate. CD36 expression was increased in the aortic valve of the infected mice, indicating increased macrophage activation. In conclusion, L. major infection, although localized and self-limited in resistant apoE KO mice, has a detrimental effect on the blood lipid profile, increases the inflammatory cell migration to atherosclerotic lesions, and promotes atherogenesis. These effects are consequences of the stimulation of the immune system by L. major, which promotes the inflammatory components of atherosclerosis, which are primarily the parasite-activated macrophages.

A anemia falciforme (AF), uma das doenças hematológicas mais difundidas no mundo, apresenta como principal característica seus portadores possuírem uma hemoglobina anormal denominada S (HbS) em suas hemácias. O objetivo deste estudo foi avaliar o perfil antropométrico e dietético de pré-escolares e escolares com AF, considerando seu status socioeconômico, consumo de energia e nutrientes e o índice de desnutrição proteico- -calórico. Este estudo foi do tipo transversal e de natureza quantitativa, realizado no município de Januária (MG), no período de outubro a dezembro de 2010. A coleta de dados foi realizada por meio da aplicação de questionário e avaliação antropométrica. Os resultados mostraram que pais/responsáveis tinham baixa escolaridade e as famílias viviam em situação de pobreza. A maioria das crianças era eutrófica e fazia o número de refeições diárias recomendado, mas a quantidade e qualidade dos alimentos eram inadequadas. Houve déficit expressivo no consumo de micronutrientes devido ao baixo consumo de frutas e verduras. Concluiu-se que a população estudada, predominantemente de baixo nível socioeconômico, apresentava indicadores antropométricos dentro dos limites de eutrofia, no entanto o consumo dietético era inadequado


Patients with the sickle cell disease (SCD), one of the most common blood diseases worldwide, carry an abnormal type of hemoglobin called S (HbS). This study evaluated the anthropometrical and dietary patterns of preschool and school-aged children with SCD, considering their socioeconomic status, energy and nutrient intake and the index of protein-calorie malnutrition. This is a quantitative, cross-sectional study carried out in Januária (MG), Brazil from October to December 2010. Data collection was conducted through questionnaire application and anthropometric measurements. The results showed that the parents/guardians had low education and the families lived in poverty. Most children had normal weight and height and received the recommended number of meals per day, but food amount and quality were inadequate. An expressive deficit in micronutrient intake was detected likely because of low fruit and vegetable consumption. In conclusion, the population studied, most of low socioeconomic status, exhibited anthropometrical indicators within normal weight and height range, but their dietary habits were inadequate.


La Anemia falciforme (AF), una de las enfermedades hematológicas más difundidas en el mundo, sus portadores presentan, como principal característica, una hemoglobina anormal denominada S(HbS) en sus hematíes. Estudio de enfoque transversal y de naturaleza cuantitativa, realizado en el municipio de Januária (MG), en el período octubre-diciembre de 2010. La recolecta de datos fue realizada a través de un cuestionario y evaluación antropométrica. Los resultados mostraron que los padres/responsables tenían baja escolaridad y las familias vivían en situación de pobreza. La mayoría de los niños era eutrófica y la alimentación diaria, en número, estaba dentro de lo recomendado, pero la cantidad y la calidad de la misma era inadecuada. Hubo un déficit expresivo en el consumo de micronutrientes debido al bajo consumo de frutas y verduras. Se concluye que la población estudiada, predominantemente de bajo nivel socioeconómico, presentaba indicadores antropométricos dentro de los límites de eutrofia, sin embargo, el consumo dietético era inadecuado.

The immature immune system requires constant stimulation by foreign antigens during the early stages of life to develop properly and to create efficient immune responses against later infections. We have previously shown that intake of antigenic dietary protein is critical for inducing maturation of the immune system as well as for the development of T helper type 1 (Th1) immunity. In this study, we show that administration of an amino acid (aa)-based diet during the development of the immune system subsequently resulted in inefficient control of Leishmania major infection in adult C57BL/6 mice. Compared with mice fed a control protein-containing diet, adult aa-fed mice showed a decreased interferon (IFN)-gamma response to parasite antigens and insufficient production of nitric oxide (NO), which is crucial to parasite death. However, no deviation towards Th2-specific immunity to L. major was observed. Phenotypic analysis of antigen-presenting cells (APCs) from aa-fed mice revealed deficient levels of the costimulatory molecules CD40 and CD80, and low levels of interleukin (IL)-12 produced by peritoneal macrophages, revealing an early stage of maturation of these cells. APCs isolated from aa-fed mice were unable to stimulate a Th1 response in vitro. Both phenotypic features of T cells from aa-fed mice and their ability to produce a Th1 response in the presence of mature APCs were unaffected when compared with T cells from control mice. The results presented here support the notion that regulation of Th1 immunity to infection includes environmental factors such as dietary proteins, which provide a natural source of stimulation that contributes to the process of maturation of APCs.
