RESUMEN

Supply with vitamins C, A, E and B2 of 61 high school students (38 girls and 23 boys, aged 18­22 years, body mass index ­ 23.0±0.6 kg/m2) by means of determination of blood plasma concentration of ascorbic acid, retinol and carotenoids, tocopherols and riboflavin has been investigated in the period from May to September. All students were well supplied with vitamin C (only 2 boys had a reduced level of ascorbic acid) and vitamin A. Decreased level of carotenoids was more common in boys (48 versus 24% in girls). 20% of the students were insufficiently supplied with vitamin E, 38% ­ with vitamin B2. 39% of students (50% girls and 22% boys) were adequately provided with all studied vitamins. 5% of the students had a combined deficiency of 3 vitamins, 20% ­ 2 vitamins. Student's sufficiency with vitamins B2, C, A, E, carotenoids did not depend on the season. Diet intake of vitamins C, A, carotenoids and vitamin B2 has been calculated basing on the data on the frequency of food consumption during the previous month. Reduced consumption relatively to the Russia RDA of vitamins В2, C and А took place in 63, 54 and 46% of the students respectively. The lack of vitamin B2 in the diet was most pronounced, the value of probabilistic risk corresponded to the average level in 34% of students. Average probabilistic risk of inadequate intake of vitamin A was present in 17% of students, vitamin C ­ 6%. Coincidence of the results of vitamin C and A status assessment obtained by calculation of vitamin diet intake and by biochemical methods (concentration of vitamins in the blood plasma) was 94 and 83%. These methods are interchangeable if you select the value of the average probability of risk failure intake of these vitamins as a criterion. Proportion of coinciding results of the estimation of vitamin B2 status was 56%. Special well-designed studies on larger sample surveyed are needed for the final output of the interchangeability of methods to assess riboflavin status.

RESUMEN

The content of some biologically active substances such as bioflavonoids, tannins and dietary fiber in various type of biologically active additive was analyzed. The results are shown that the content of bioflavonoids ranger from 26.0 to 3970.0 mg%, tannins--from 1.19 to 857.0 mg%, insoluble dietary fiber--from 4.56 to 67.89% and soluble dietary fiber from 1.0 to 66.8%.

RESUMEN

The content of some biologically active substances such as flavonoids, tannins and soluble dietary fiber in various types of vegetative tea was analyzed. The results are shown that the content of flavonoids ranges from 0.28 to 9.87%, tannins--from 0.91 to 7.07% and soluble dietary fiber 0.37 up to 14.7%.

RESUMEN

Aim of work was to compare the chemical and biological properties of starches modified by adipinic acid acetylation. Starches in question were: native maize starch "Novation 4600"; acetylated adipat di-starch of the cold swelling "Prejeflo CH 20"; acetylated adipat di-starch of the cold swelling "Prejeflo CH 40"; acetylated adipat di-starch of the hot swelling "Clearam CH 2020". The differences between starches were connected with number of cross-cut lacings in the structure, and with abilities to be gelatinized in the cold water. Rate of hydrolysis and water-retaining capacities were higher for cold swelling starches which contained the smaller number of resistance fractions. Acetyl value of cold swelling starches was higher under elevation of cross-cut lacing.

RESUMEN

Qualitative and quanitative composition of 15 samples of dry breakfasts and 19 variants food supplements, containing wheaten brain, was studied with a help of enzyme method, based on hydrolysis of protein and starch by enzymes, analogous with enzymes of digestive tract homo. It is shown, that the common contents of dietary fibres in samples of dry breakfasts is in limits from 11 up to 39%. Greatest contents IDF is observed in samples of breakfasts with addition of a thistle from 21 up to 35%, and greatest contents SDF with addition (see text for symbol) and beet - 9% and 7% accordingly. The common contents of dietary fibres in samples biologically active additives is in limits from 26 up to 73% that is caused by qualitative and quantitative structure of initial raw material. Group IDF in biologically active additive has made from 23 up to 69%, and contents SDF changes from 1% up to 19%.

RESUMEN

For specification and entering of the data in to Tables of a chemical compound of foodstuff definition of the content of vitamins C, E, B6 beta-carotene and dietary fibers in some kinds of the mushrooms collected in woods of Moscow suburbs was carried out. The received data testify to high enough content in them of vitamin C, especiale in white mushrooms and "fox" 24.0 and 28.8 mg%. The content of vitamin E in terms of a tocopherol-equivalent has made from 0.03 to 0.98 mg%.

The data on stabilization of beta-carotene in 0.5% concentrate. The concentration of beta-carotene was analyzed by HPLC. The different available antioxidants allowed for using in food industry were tested as stabilizers. The methods of inserting of stabilizers in ready to use beta-carotene concentrate were developed.

RESUMEN

The data on beta-carotene safety in dry beverage powders during their production and storage are presented. The 30% paste and oil solutions of beta-carotene produced by Ekaterinburg's plant of medicines and by Krasnodar's polytechnical institute were used for fortification of beverages by beta-carotene. For preparing of beverages granulated and powder mixes were used with or without addition of ionol as stabilizer. Dry powder were kept at room temperature during six months in different kinds of packing: laminated paper and foil. Beta-carotene in samples was analyzed by the method of liquid chromatography in hydrophobic inverted phase.
