Consumers' growing awareness of healthy nutrition results in an increase in demand for the production of beverages with health-promoting properties. An example of such a product is kvass produced in the fermentation process. This research aimed to determine the impact of plant additives on the antioxidant and sensorial properties of kvass made from bread based on mountain rye flour. The bread extract was fermented at different temperatures (28 and 34 °C). Additives of 3, 5, and 10% were used in the tests, which included black chokeberry juice and infusion, sea buckthorn fruit juice and infusion, and peppermint leaf infusion. A higher fermentation temperature in the production process resulted in an improvement in the organoleptic and antioxidant properties of the tested kvasses. The highest antioxidant activity was demonstrated by kvass with the addition of 10% black chokeberry juice (0.734 µmol Trolox g-1 (ABTS), 4.90 µmol of Trolox g-1 (DPPH)), and a peppermint leaf infusion (0.773 µmol Trolox g-1 (ABTS), 4.71 µmol Trolox g-1 (DPPH)). The conditions of kvass production and the type and amount of the additive influenced the selected physicochemical parameters of the obtained kvasses. The chromatographic analysis confirmed the content of 13 phenolic compounds in kvass with the addition of black chokeberry juice, which was 1.68-1.73 mg/100 mL of the finished product with a 10% share of the additive. The 11 phenolic compounds in kvass with the addition of peppermint infusion were confirmed for 7.65-6.86 mg/100 mL of the finished product with 10% of the additive. Kvass enriched with additives from black chokeberry fruit and peppermint leaves may be a promising new category of functional beverages with health-promoting properties resulting from the content of polyphenol compounds. It could be a better base for enrichment with raw materials that are richer in these compounds than pasteurized products.

Field studies were conducted from 2016 to 2019 (south-eastern Poland; 49°58'40.6″ N 22°33'11.3″ E) with the aim to identify the chemical composition of winter wheat grain upon foliar application of biostimulants, of which PlanTonic BIO (containing nettle and willow extracts) showed antifungal activity. The main chemical compositions and their spatial distribution in wheat grain were characterized by Raman spectroscopy technique. It was established that applied biostimulants and hydro-thermal conditions changed the chemical composition of the grain during all the studied years. A similar chemical composition of the grain was achieved in plants treated with synthetic preparations, including both intensive and extensive variants. The second group, in terms of an increase in fatty acid content, consists of grains of plants treated with biostimulants PlanTonic BIO, PlanTonic BIO + Natural Crop and PlanTonic BIO + Biofol Plex. The future of using biostimulants in crop production, including those containing salicylic acid and nettle extracts, appears to be a promising alternative to synthetic crop protection products.

Salt stress is one of the main stressors limiting plant growth and yield. As a result of salt stress, unfavorable changes in the photosynthesis process take place, leading to a decrease in plant productivity. Therefore, it is necessary to use biologically active substances that reduce the effects of this stress. An example of such a substance is quercetin, classified as a flavonoid, which plays an important role in alleviating the effects of salt stress, mainly by the inactivation of reactive oxygen species (ROS) and by improvement of the photosynthesis process. A study was made of the effect of the quercetin-copper complex (Q-Cu (II)), which has a stronger antioxidant effect than pure quercetin. By means of a pot experiment, the influence of solutions of the Q-Cu (II) complex (100 mg∙L-1 [Q1], 500 mg∙L-1 [Q2] and 1000 mg∙L-1 [Q3]) on the physiological and biochemical processes occurring in wheat plants subjected to salt stress was investigated. The plants were given two sprays of Q-Cu (II) solution, and their physiological parameters were examined both 1 and 7 days after each application of this solution. The level of ROS and the activity of antioxidant enzymes (catalase [CAT], superoxide dismutase [SOD] and guaiacol peroxidase [GPOX]) were also determined. It has been shown that spraying with Q2 and Q3 solutions improves the chlorophyll content, the values of chlorophyll fluorescence parameters (the photochemical efficiency of PS II [Fv/Fm], the maximum quantum yield of primary photochemistry [Fv/F0], and the performance index of PS II [PI]), and gas exchange (net photosynthetic rate [Pn], stomatal conductance [gs], transpiration rate [E] and intercellular CO2 concentration [Ci]). As a result of the application of Q2 and Q3 solutions, the level of ROS and the activity of the antioxidant enzymes tested decreased, which means that these concentrations are most effective in counteracting the effects of salt stress.

The short-term impact of biomass combustion fly ashes (BAs) fertilization on the spring rape growth, essential and trace elements accumulation in seeds, and selected soil and soil solution properties were analyzed in a pot experiment study. The pot experiment was carried out in the growing season (April-August) during the year 2018. The effect of BAs on the dry matter content in spring rape plants and the relative content of chlorophyll in leaves (SPAD) was analyzed. In addition, the effect of BAs on the accumulation of essential and trace elements in the seeds of this plant was analyzed. The impact of BAs on the basic physicochemical properties of soils was also assessed. Additionally, the solubility of compounds contained in BAs was monitored on the basis of the analysis of the changes in the physicochemical properties of soil solution during the experiment period. The present study demonstrated a positive effect of BAs fertilization on plant growth and development and improvement of soil physicochemical properties. A change has been achieved in the soil reaction class from a slightly acidic (control, NPK) to neutral (D1-D6), with the highest increase in pH induced by the highest ash dose of 3 mg ha-1 (D6). It was shown that BAs contributed to a significant increase in the content of macroelements than trace elements in the analyzed soil. In turn, the accumulation of these elements in plant seeds exhibited an inverse relationship, which was mainly influenced by the soil pH and the content of N, Ca, Mg, K, and Na in the soil, as indicated by the correlation coefficients. The highest contents of Fe, Mn, Zn, Cu, Cr, and Ni were detected in the seeds of plants fertilized with BAs at a dose of 2.0 Mg ha-1 (D4), and their respective values were 263, 363, 107, 51, 1835, and 137% higher than in the control. The Ca, Mg, S, and Na compounds introduced with BAs exhibited high solubility, as evidenced by the higher concentration of Ca2+, Mg2+, Na+, and SO42- ions in the soil solutions and the dynamic changes in pH and EC observed during the experiment. The lowest solubility after the application of BAs was exhibited by N and P. The conducted PCA analysis to a large extent explained the variability between the applied fertilization and the factors analyzed in the experiment. Despite the positive impact of ashes, attention should be paid to the potential risks associated with their use. The use of higher doses of BAs may result in excessive alkalization and salinity of soils and may enhance the accumulation of trace elements in plants. These aspects should therefore be closely monitored, especially in the case of a long-term application of these wastes, in order to avoid serious environmental problems.

Heavy metal stress can lead to many adverse effects that inhibit cellular processes at various levels of metabolism, causing a decrease in plant productivity. In response to environmental stressors, phenolic compounds fulfill significant molecular and biochemical functions in plants. Increasing the biosynthesis of phenolic compounds in plants subjected to heavy metal stress helps protect plants from oxidative stress. A pot experiment was carried out to determine the effect of the accumulation of copper (Cu) and lead (Pb) salts at concentrations of 200, 500, and 1000 ppm on seed germination, the activity of enzymes in the phenylalanine ammonia-lyase pathway (PAL) and tyrosine ammonia-lyase (TAL), along with the total phenol and flavonoid contents in seedlings of hybrid Triticum aestivum L. (winter wheat) cultivars. The accumulation of heavy metals, especially Cu, had a negative impact on the seed germination process. The cultivar "Hyacinth" reacted most strongly to heavy metal stress, which was confirmed by obtaining the lowest values of the germination parameters. Heavy metal stress caused an increase in the activity of PAL and TAL enzymes and an increase in the accumulation of phenolic compounds. Under the influence of Cu, the highest activity was shown in cv. "Hyvento" (especially at 200 ppm) and, due to the accumulation of Pb, in cv. "Hyacinth" (1000 ppm) and cv. "Hyking" (200 ppm). The cultivar "Hyking" had the highest content of phenolic compounds, which did not increase with the application of higher concentrations of metals. In other cultivars, the highest content of total phenols and flavonoids was usually observed at the lowest concentration (200 ppm) of the tested heavy metals, Cu and Pb.

Quercetin, classified as a flavonoid, is a strong antioxidant that plays a significant role in the regulation of physiological processes in plants, which is particularly important in the case of biotic and abiotic stresses. The study investigated the effect of the use of potassium quercetin solutions in various concentrations (0.5%, 1.0%, 3.0% and 5.0%) on the physiological and biochemical properties of wheat seedlings. A pot experiment was carried out in order to determine the most beneficial dose of this flavonoid acting as a bio-stimulant for wheat plants. Spraying with quercetin derivative solutions was performed twice, and physiological measurements (chlorophyll content and fluorescence as well as gas exchange) were carried out on the first and seventh days after each application. The total phenolic compounds content and the total antioxidant capacity were also determined. It was shown that the concentrations of potassium quercetin applied have a stimulating effect on the course of physiological processes. In the case of most of the tested physiological parameters (chlorophyll content and fluorescence and gas exchange) and the total antioxidant capacity, no significant differences were observed in their increase as a result of application with concentrations of 3.0 and 5.0%. Therefore, the beneficial effect of quercetin on the analysed parameters is already observed when spraying with a concentration of 3.0%.

Plant production technologies based solely on the improvement of plants themselves face obstacles resulting from the natural limitations of the biological potential of varieties. Therefore, new substances are sought that positively influence the growth and development of plants and increase resistance to various biotic and abiotic stresses, which also translates into an increase in obtained yields. The exogenous application of various phytoprotectants shows great promise in terms of cost effectiveness compared to traditional breeding methods or transgenic approaches in relation to increasing plant tolerance to abiotic stresses. Quercetin is a strong antioxidant among phenolic compounds, and it plays a physiological and biochemical role in plants. As such, the aim of this research was to assess the effect of an aqueous solution of a quercetin derivative with potassium, applied in various concentrations (0.5%, 1.0%, 3.0% and 5.0%), on the efficiency of the photosynthetic apparatus and biochemical properties of maize. Among the tested variants, compared to the control, the most stimulating effect on the course of physiological processes (PN, gs, ci, CCI, Fv/Fm, Fv/F0, PI) in maize leaves was found in 3.0 and 5.0% aqueous solutions of the quercetin derivative. The highest total antioxidant capacity and total content of polyphenolic compounds were found for plants sprayed with 5.0% quercetin derivative solution; therefore, in this study, the optimal concentration could not be clearly selected.
