BACKGROUND: The global beef market demands the meat industry to ensure product quality and safety in markets that are often very distant. The present study aimed to evaluate the effects of chilled (CH, 120 d) and chilled-then-frozen (CHF, 28 d + 92 d) storage conditions of beef vacuum packaged (VP) and vacuum packaged with antimicrobial (VPAM) on meat quality, oxidative status and microbial loads. Treatments resulted from the combination of storage condition and packaging type: VP + CH, VP + CHF, VPAM + CH and VPAM + CHF. RESULTS: Warner-Bratzler shear force values decreased in all treatments after 28 d of chilling. Except for VP + CH, L* values (lightness) of meat color did not differ in each treatment as the storage time increased. Meat from VP + CH had greater a* values than CHF treatments on day 120 of storage. A consumer panel did not detect differences in tenderness, flavor and overall liking between VP and VPAM beef, but they preferred CHF steaks rather than CH beef. TBARS values did not differ between VP and VPAM and between CH and CHF at any time during the storage period. At the end of storage time, all treatments except VP + CHF presented a greater concentration of thiols than at 48 h post-mortem. On day 120 of storage, VP + CH had greater catalase enzyme activity than CHF treatments while VP + CH and VP + CHF showed a greater superoxide dismutase activity than VPAM + CHF. Storage condition (CH or CHF) had a greater impact on microbial counts than the type of packaging. CONCLUSION: Freezing meat after an ageing period represents a suitable strategy to extend beef storage life without a detrimental impact on its quality. © 2023 The Authors. Supplementing growing cattle grazing native subtropical Campos grasslands during winter improves the low, even negative, average daily weight gain (ADG) typical of extensive animal production systems in Uruguay. Nonetheless, to render the practice profitable, it is crucial to control supplement feed efficiency (SFE), that is, the difference in ADG between supplemented and control animals (ADGchng) per unit of supplement dry matter (DM) intake. Little has been studied specifically on how SFE varies in these systems. The objective of this study was to quantify the magnitude and variation in SFE of growing beef cattle grazing stockpiled native Campos grasslands during winter and assess putative associations with herbage, animals, supplements, and climatic variables. We compiled data from supplementation trials carried out in Uruguay between 1993 and 2018, each evaluating between one and six supplementation treatments. The average ADG of unsupplemented and supplemented animals were 0.13 ±â€…0.174 and 0.49 ±â€…0.220 kg/animal/day, respectively. In both cases, ADG decreased linearly as the proportion of green herbage in the grazed grassland was lower, but the ADG of unsupplemented animals was further reduced when winter frosts were numerous. Estimated SFE were moderately high, with an average of 0.21 ±â€…0.076 ADGchng/kg DM, resulting from average ADGchng of 0.38 ±â€…0.180 kg/animal/day in response to an average supplementation rate of 1.84 ±â€…0.68 kg supplement DM intake/animal/day (0.86%  ±â€…0.27% body weight). No association was found between SFE and supplementation rate or type (protein vs. energy-based; P > 0.05), but forage allowance negatively affected it, and herbage mass positively affected it, yet in a smaller magnitude, suggesting that a balance is needed between the two to maximize SFE. Weather conditions during trials affected SFE (P < 0.05), with greater SFE in winters with lower temperatures and more frosts. Daytime grazing time was consistently lower in supplemented animals compared to their unsupplemented counterparts, whereas ruminating time during the day was similar, increasing as the proportion of green herbage decreased. Herbage intake estimated from energy balance suggested the existence of some substitution effect. This agrees with the moderately high SFE and with the total digestible nutrients-to-protein ratio of these subtropical humid grasslands being higher than in semi-arid rangelands and dry-season tropical pastures but lower than in sown pastures.

Introduction: Shiga toxin-producing Escherichia coli (STEC) is a zoonotic pathogen that cause food-borne diseases in humans. Cattle and derived foodstuffs play a known role as reservoir and vehicles, respectively. In Uruguay, information about the characteristics of circulating STEC in meat productive chain is scarce. The aim was to characterize STEC strains recovered from 800 bovine carcasses of different slaughterhouses. Methods: To characterize STEC strains we use classical microbiological procedures, Whole Genome Sequencing (WGS) and FAO/WHO risk criteria. Results: We analyzed 39 STEC isolated from 20 establishments. They belonged to 21 different O-groups and 13 different H-types. Only one O157:H7 strain was characterized and the serotypes O130:H11(6), O174:H28(5), and O22:H8(5) prevailed. One strain showed resistance in vitro to tetracycline and genes for doxycycline, sulfonamide, streptomycin and fosfomycin resistance were detected. Thirty-three strains (84.6%) carried the subtypes Stx2a, Stx2c, or Stx2d. The gene eae was detected only in two strains (O157:H7, O182:H25). The most prevalent virulence genes found were lpfA (n = 38), ompA (n = 39), ompT (n = 39), iss (n = 38), and terC (n = 39). Within the set of STEC analyzed, the majority (81.5%) belonged to FAO/WHO's risk classification levels 4 and 5 (lower risk). Besides, we detected STEC serotypes O22:H8, O113:H21, O130:H11, and O174:H21 belonged to level risk 2 associate with diarrhea, hemorrhagic colitis or Hemolytic-Uremic Syndrome (HUS). The only O157:H7 strain analyzed belonged to ST11. Thirty-eight isolates belonged to the Clermont type B1, while the O157:H7 was classified as E. Discussion: The analyzed STEC showed high genomic diversity and harbor several genetic determinants associated with virulence, underlining the important role of WGS for a complete typing. In this set we did not detect non-O157 STEC previously isolated from local HUS cases. However, when interpreting this findings, the low number of isolates analyzed and some methodological limitations must be taken into account. Obtained data suggest that cattle constitute a local reservoir of non-O157 serotypes associated with severe diseases. Other studies are needed to assess the role of the local meat chain in the spread of STEC, especially those associated with severe diseases in humans.

We evaluated a combination of two temperatures and two packaging materials for long-term storage of vacuum-packaged (VP) beef striploins. Microbial populations and microbiome composition were monitored during refrigerated storage (120 days between 0-1.5 °C) and refrigerated-then-frozen storage (28 days between 0-1.5 °C then 92 days at -20 °C) under low-O2 permeability VP and high-O2 permeability VP with an antimicrobial (VPAM). Pseudomonas (PSE) and Enterobacteriaceae (EB) counts in VPAM samples were significantly higher (p < 0.05) than in VP samples at 28, 45, 90, and 120 days of storage. Microbiome data showed that bacteria of the genera Serratia and Brochothrix were more abundant in VPAM samples at 120 days, while lactic acid bacteria (LAB) dominated in VP samples. Frozen temperatures inhibited microbial growth and maintained a relatively stable microbiome. Refrigerated and frozen VPAM samples showed the greatest difference in the predicted metabolic functions at the end of storage driven by the microbiome composition, dominated by PSE and LAB, respectively. Although no signs of visible meat deterioration were observed in any sample, this study suggests that VP meat refrigerated and then frozen achieved better microbiological indicators at the end of the storage period.

Sub-nutrition during pregnancy might affect the offspring´s reproductive performance through effects on the development and function of gonads. This study evaluated a maternal energy restriction in ewes from day 48-106 of gestation, on pre- and post-weaning female lambs` performance, onset of female lambs' breeding and ovulation rate during their first breeding season. Adult Polwarth ewes sired by Finnish rams bearing single or twin lambs were assigned to two dietary treatments from day 48 to day 106 of gestation: restricted (R; n = 60) at 60 % of their metabolizable energy (ME) requirements, or non-restricted (NR; n = 54) at 100 % of their ME requirements. After the restriction period, ewes grazed all together ad libitum until weaning. The ewe lambs were evaluated from birth to weaning, as well as during their first breeding season. Although NR ewes weighed 17.7 % more than R ewes (P < 0.05) at the end of the restriction period, the nutritional treatment of the dams had no effect on the weight of the ewe lambs at birth, weaning or final weight (P > 0.05). Fat depth, rib eye area, the percentage of ewe-lambs cycling and their ovulation rate during the first breeding season was not affected by the ewe´s dietary treatment. Ewes restricted at 60 % of their ME requirements in mid-gestation seemed to have the capacity to compensate any detrimental effects on growth and development as well as the reproductive potential of female lambs if adequate refeeding conditions are provided in late gestation, throughout lactation and post-weaning.

A telephone survey (n = 601) was conducted in Uruguay to explore participants' mental associations with meat and the underlying reasons changes in the quantity and type of meat consumed. Participants mentioned mostly positive associations with meat's culinary and cultural aspects and its nutritional value as source of high-quality protein. Other associations were related to meat production, specific types of meat and cuts, meat consumption and pleasure, while price was perceived negatively. Animal welfare concerns emerged as a relevant association, but minor references were made to the effects of meat production on the environment. Changes in the amount and type of meat consumed (higher pork, chicken and cheaper cuts and beef) in the last year were mainly due to price followed by health reasons. Results emphasize the strong meat culture among Uruguayans and reveal that changes in the amount and type of meat consumed last year relate to external (price) or egoistic (health) rather than altruistic motives (ethical or environmental concerns).

The use of fruit by-products such as citrus pulp represents a feeding ingredient that deserves to be evaluated as an energy source in animal rations. Thirty-six British breed steers were allotted to one of the three feeding treatments (12 steers/treatment): 0%, 15% and 30% of fresh citrus pulp inclusion in the ration in a randomized complete block design to evaluate animal performance and carcass and meat quality traits. In the present study, the inclusion of fresh citrus pulp up to 30% of the diet did not affect the animal average daily gain (p > 0.05) but steers that were fed the pulp consumed less feed (p < 0.05) and presented a lower feed conversion ratio (p < 0.05) than their counterparts without citrus pulp in their diet. No effect of fresh citrus pulp was observed on carcass and meat quality (p > 0.05). A greater lipophilic antioxidant capacity (p < 0.05) in meat was observed when fresh citrus pulp was offered at 15% of the diet. Fresh citrus pulp used up to 30% as a feed ingredient in feedlot rations does not negatively affect animal performance or meat quality but, rather, has a positive effect on dry matter intake and a better feed conversion ratio.

Pre-slaughter fasting duration affect blood parameters related to stress and metabolism, decrease live and carcass weights and impact beef quality of cattle. In three experiments, 1100 steers and heifers, finished on feedlot or on pasture, were evaluated to assess the influence of the site and duration of fasting before slaughter on physiological, carcass and meat quality traits. Cattle were allocated to one of two fasting duration - long (23-29 h) or short (2-6 h) - and to one of two sites of fasting- farm or abattoir. All animals had access to water ad libitum until slaughter, except during transportation. Cattle were assigned to two (long fasting on abattoir/normal lairage time, short fasting on farm/minimal lairage time) or three (long fasting on abattoir/normal lairage time, short fasting on farm/minimal lairage time, long fasting on farm/minimal lairage time) treatments. Seventeen slaughters were considered in a randomized complete block design. There was no effect of the site of fasting on any variable. Cattle with short fasting duration had higher carcass weights and water consumption than those under long fasting duration. Haematocrit, globulin, total protein, and lactate dehydrogenase at the time of slaughter increased with fasting duration. There was no effect of the duration of fasting on blood ions, meat quality traits, urine pH, liver weight and volume, and skin dry matter. A reduction in the fasting duration returned to farmers and abattoirs 1.2% additional kilograms of carcass, suggesting an improvement in animal welfare according to a better hydration level of cattle at the time of slaughter.
