RESUMEN

The scourge of obesity arising from obesogens and poor dieting still ravages our planet as half of the global population may be overweight and obese by 2035. This metabolic disorder is intertwined with type 2 diabetes (T2D), both of which warrant alternative therapeutic options other than clinically approved drugs like orlistat with their tendency of abuse and side effects. In this review, we comprehensively describe the global obesity problem and its connection to T2D. Obesity, overconsumption of fats, the mechanism of fat digestion, obesogenic gut microbiota, inhibition of fat digestion, and natural anti-obesity compounds are discussed. Similar discussions are made for diabetes with regard to glucose regulation, the diabetic gut microbiota, and insulinotropic compounds. The sources and production of anti-obesity bioactive peptides (AOBPs) and anti-diabetic bioactive peptides (ADBPs) are also described while explaining their structure-function relationships, gastrointestinal behaviors, and action mechanisms. Finally, the techno-functional applications of AOBPs and ADBPs are highlighted.

This research aimed to assess the impact of ultrasonication on the emulsifying ability of a conjugate system composed of sodium caseinate and soluble soy polysaccharides. The study analyzed the characteristics of the particles and evaluated the emulsions produced using nanoconjugates. The results showed that ultrasonication improved the contact angle (63.7°) and decreased particle size (75 nm), resulting in more effective emulsifying efficiency. At a 2 % concentration of the nanoconjugates, stable emulsions with a 50 % oil content were successfully formed through complete coverage of the droplets' surface, and no oil release was observed. Moreover, the emulsions' creaming index remained below 25 % even after 60 days of storage. The stability of the nanoconjugate-based emulsions depended on the concentration of nanoconjugates, with an optimal concentration of 4 %. These findings suggest that the nanoconjugates have great potential as a natural stabilizer for emulsion-based products.

RESUMEN

Natural protein-based delivery systems have received special interest over the last few years. Different carriers are already developed in the food industry to protect, encapsulate and deliver bioactive compounds. Rice bran protein (RBP) is currently used as a carrier in encapsulating bioactives due to its excellent functional properties, great natural value, low price, good biodegradability, and biocompatibility. Recently, RBP-based carriers including emulsions, microparticles, nanoparticles, nanoemulsions, liposomes, and core-shell structures have been studied extensively in the literature. This study reviews the important characteristics of RBP in developing bioactive delivery systems. The recent progress in various modification approaches for improving RBP properties as carriers along with different types of RBP-based bioactive delivery systems is discussed. In the final part, the bioavailability and release profiles of bioactives from RBP-based carriers and the recent developments are described.

Pathogens are one of the supreme threats for the public health around the world in food supply chain. The on-site monitoring is an emerging trend for screening pathogens during the food processing and preserving. Traditional analytical tools have been unable to satisfy the current demands. Smartphones have enormous potentials for achieving on-site detection of foodborne pathogens, with intrinsic advantages such as small size, high accessibility, fast processing speed, and powerful imaging capacity. This review aims to synthesize the current advances in smartphone-assisted biosensors (SABs) for sensing foodborne pathogens, and briefly put forward the problem that consist in the research. We present the role of nanotechnology and recognition modes targeting foodborne pathogens in SABs, and discuss the signal conversion platforms coupling with smartphone. The challenges and perspectives in SABs are also proposed. The smartphone analytics area is moving forward, and it much be subject to careful quality standards and validation.

Driven by the new trend to build quality into products and reducing empiricism, small-scale screening techniques have been frequently used to evaluate, thermodynamic of drug solubility in the polymer, and drug-polymer kinetic amorphous miscibility. In this paper, these methods have been overviewed to shed light on their liabilities in predicting spray-dried amorphous solid dispersions' (ASDs) properties. By scrutinizing relevant open literature, several inconsistencies have been recognized, deemed to be due to the inability of conventional miniaturized means to simulate the spray drying process operations/constraints in formulating active pharmaceutical ingredients (APIs). Given the complex interplay of thermodynamics of mixing, heat and mass transfer, and fluid dynamics in this process, scaling rules have been introduced to remedy arisen issues in conventional miniaturized tools. Accordingly, spray drying process is analyzed considering the fundamental physical transformations involved, i.e. atomization and drying. Each transformation is explored from a scaling perspective with an emphasis on key response factors, and ways to retain them for each transformation across scales. Prospective bifurcated developments may improve the odds of successful formulations/process conditions later on during development stages.

In this research, bioactive peptides produced from flaxseed protein by alcalase, pancreatin, trypsin and pepsin, were encapsulated by spray drying. After analysis of amino acid composition and antioxidant properties of hydrolysates, the effect of spray-drying encapsulation via different maltodextrin (MD) to hydrolysate ratios (1:1, 2:1 and 3:1 w/w) on the production yield, physicochemical properties, functional activities, chemical structure, and morphology of final powder particles were evaluated. Among the hydrolysates, peptides produced with alcalase had the highest hydrolysis degree (38.2%), hydrophobic amino acids (255 mg/g) and antioxidants (126 mg/g). Among spray-dried samples, the powders obtained by 3:1 w/w ratio (MD: peptide) showed the highest radical scavenging activity for DPPH- (68.93%), ABTS+ (85.62%), hydroxyl (94.97%), nitric oxide (64.03%), reducing power (95.49%), total antioxidant activity (96.68%), and iron (95.31%) and copper (95.49%) chelating activity. Evaluation of chemical structure (FTIR) indicated that hydrolysates were coated and dispersed within maltodextrin matrix. SEM images showed the effect of different carrier ratios on the production of irregular and shrunk particles with different sizes and matrix-type structures.

Today, there is an ever-growing interest on natural food ingredients both by consumers and producers in the food industry. In fact, people are looking for those products in the market which are free from artificial and synthetic additives and can promote their health. These food bioactive ingredients should be formulated in such a way that protects them against harsh process and environmental conditions and safely could be delivered to the target organs and cells. Nanoencapsulation is a perfect strategy for this situation and there have been many studies in recent years for nanoencapsulation of food components and nutraceuticals by different technologies. In this review paper, our main goal is firstly to have an overview of nanoencapsulation techniques applicable to food ingredients in a systematic classification, i.e., lipid-based nanocarriers, nature-inspired nanocarriers, special-equipment-based nanocarriers, biopolymer nanocarriers, and other miscellaneous nanocarriers. Then, application of these cutting-edge nanocarriers for different nutraceuticals including phenolic compounds and antioxidants, natural food colorants, antimicrobial agents and essential oils, vitamins, minerals, flavors, fish oils and essential fatty acids will be discussed along with presenting some examples in each field.
