RESUMEN
Aspergillus unguis belongs to the Aspergillus section Nidulantes. This species is found in soils and organisms from marine environments, such as jellyfishes and sponges. The first chemical study reported in the literature dates from 1970, with depsidones nidulin (1), nornidulin (2), and unguinol (3) being the first isolated compounds. Fifty-two years since this first study, the isolation and characterization of ninety-seven (97) compounds have been reported. These compounds are from different classes, such as depsides, depsidones, phthalides, cyclopeptides, indanones, diarylethers, pyrones, benzoic acid derivatives, orcinol/orsenillate derivatives, and sesterpenoids. In terms of biological activities, the first studies on isolated compounds from A. unguis came only in the 1990s. Considering the tendency for antiparasitic and antibiotics to become ineffective against resistant microorganisms and larvae, A. unguis compounds have also been extensively investigated and some compounds are considered very promising. In addition to these larvicidal and antimicrobial activities, these compounds also show activity against cancer cell lines, animal growth promotion, antimalarial and antioxidant activities. Despite the diversity of these compounds and reported biological activities, A. unguis remains an interesting target for studies on metabolic induction to produce new compounds, the determination of new biological activities, medicinal chemistry, structural modification, biotechnological approaches, and molecular modeling, which have yet to be extensively explored.

Objetivo: Avaliar a percepção dos estudantes sobre a promoção da saúde em uma instituição de ensino superior, relacionando com a qualidade de vida (QV). Métodos: Trata-se de um estudo transversal, descritivo, de natureza quantitativa, realizado em uma faculdade privada, de natureza confessional e filantrópica, localizada no Sul do Brasil, no mês de novembro de 2019. Aplicaramse questionários a 390 estudantes universitários, configurando uma amostra representativa de 62,4% dos matriculados. Para avaliação da promoção da saúde sob a percepção dos estudantes, utilizou-se o questionário IAPSU Instrumento de Avaliação da Promoção da Saúde na Universidade. Para avaliação da QV dos acadêmicos, utilizou-se o instrumento de avaliação da QV - WHOQOL-bref. Analisaram-se os dados, estatisticamente, por meio de tabelas de frequências cruzadas, através dos testes de Wilcoxon, com nível de confiança de 95% (α=0,05). Resultados: Os universitários mostraram percepção positiva da instituição como promotora da saúde, alcançando escore médio superior a 90 (de 0 a 100) nos domínios atividade física, alimentação e fatores ambientais. Verificou-se que a média obtida na qualidade de vida geral do instrumento WHOQOL-bref diferiu significativamente entre os participantes que relataram praticar atividade física e recreativa (p=0,0001), e que participaram de atividades sobre alimentação saudável oferecidas pela instituição (p=0,005). Conclusão: Conclui-se que os estudantes avaliaram positivamente as ações promotoras da saúde na universidade avaliada, com melhor percepção da qualidade de vida entre os estudantes que relataram praticar atividade física e recreativa, e que participaram de atividades sobre alimentação saudável.
Objective: To assess students' perception of health promotion in a higher education institution relating it to quality of life (QoL). Methods: This is a quantitative descriptive cross-sectional study carried out in November 2019 in a private denominational and philanthropic university located in Southern Brazil. Questionnaires were applied to 390 university students in a representative sample of 62.4% of the students enrolled. To assess health promotion based on students' perception, the Health Promotion at the University Assessment Tool (Instrumento de Avaliação da Promoção da Saúde na Universidade IAPSU) was used. To assess the students' QoL, the QoL assessment instrument - WHOQOL-bref was used. Data were analyzed statistically using crosstabs and Wilcoxon test with a confidence level of 95% (α=0.05). Results: The university students showed a positive perception of the institution as a promoter of health, exhibiting a mean score above 90 (from 0 to 100) in the physical activity, food and environmental factors domains. It was found that the mean scores for general quality of life in the WHOQOL-bref instrument differed significantly between participants who reported practicing physical and recreational activities (p=0.0001), and those who participated in healthy eating activities offered by the institution (p=0.005). Conclusion: The studentspositively rated the health-promoting actions at the university analyzed, with a better perception of quality of life seen among students who reported practicing physical and recreational activities, and who participated in healthy eating activities.
Objetivo: Evaluar la percepción de los estudiantes sobre la promoción de la salud en institución de educación superior relacionando con la calidad de vida (CV). Métodos: Se trata de un estudio transversal, descriptivo, de naturaleza cuantitativa realizado en una facultad privada, de naturaleza confesional y filantrópica, localizada en el Sur de Brasil en el mes de noviembre de 2019. Se aplicaron cuestionarios con 390 estudiantesuniversitarios que ha sido una muestra representativa del 62,4% de los matriculados. Para la evaluación de la promoción de la salud bajo la percepción de los estudiantes, se utilizó el cuestionario IAPSU Instrumento de Evaluación de la Promoción de la Salud en la Universidad. Para la evaluación de la CV de los académicos, se utilizó el instrumento de evaluación de la CV el WHOQOL-bref. Se analizaron los datos, estadísticamente, a través de tablas de frecuencias cruzadas, a través de las pruebas de Wilcoxon con el nivel de confianza del 95% (α=0,05). Resultados: Los universitarios mostraron percepción positiva de la institución como promotora de la salud alcanzando una puntuación media más de 90 (de 0 a 100) para los dominios actividad física, alimentación y factores ambientales. Se verifico que la media de la calidad de vida general del instrumento WHOQOL-bref ha sido significativamente distinta entre los participantes que relataron la práctica de actividad física y de recreación (p=0,0001) y los que participaron de actividades sobre alimentación saludable ofrecidas por la institución (p=0,005). Conclusión: Se concluye que los estudiantes evaluaron positivamente las acciones de promoción de la salud de la universidad evaluada con mejor percepción de la calidad de vida entre los estudiantes que relataron la práctica de actividad física y de recreación y los que participaron de actividades de alimentación saludable.

INTRODUCTION: Cirrhosis affects liver functions and compromises much of the body's organs. The significant increase in chronic diseases, including cirrhosis, has led to changes in medical practice and health systems, leading the informal caregiver to play a major role because of family ties or some level of proximity to the patient, assuming daily care function. However, the burden generated by informal caregivers for uninterrupted care is present at different levels (physical, mental, social, professional, and financial) and even in the prognosis of the patient. OBJECTIVE: The present study aims to evaluate the impact of stressors and overload on informal caregivers of cirrhosis patients. METHOD: Cross-sectional study, conducted with 54 informal caregivers of cirrhosis patients, followed up at the Liver Transplant Service Outpatient Clinic of the University of São Paulo School of Medicine Hospital das Clínicas, where they had access to a sociodemographic questionnaire, history of the patient's disease and the scale Burden Scale for Family Caregivers. RESULTS: It was observed that higher levels of education and income of the caregiver correlates with a lower degree of stress. In addition, there is a significant difference found in the caregiver's age variable, which indicates that the youngest are those who have the highest degree of stress. The variable Na mEg/l of the patient also presents a statistically significant difference. CONCLUSION: Our study was a precursor using the BSFC scale of worldwide coverage and that had not yet been applied in any study in Brazil, thus allowing a look at the various aspects that affect the quality of life of caregivers of patients with cirrhosis. Our results and the literature corroborate the importance not only of the patient, but also the informal caregiver's health.

BACKGROUND: The underlying mechanisms by which rheumatic heart disease (RHD) lead to severe valve dysfunction are not completely understood. OBJECTIVE: The present study evaluated the histopathological changes in mitral valves (MV) seeking an association between the pattern of predominant valvular dysfunction and histopathological findings. METHODS: In 40 patients who underwent MV replacement due to RHD, and in 20 controls that underwent heart transplant, histological aspects of the excised MV were analyzed. Clinical and echocardiographic data were also collected. Histological analyses were performed using hematoxylin-eosin staining. Inflammation, fibrosis, neoangiogenesis, calcification and adipose metaplasia were determined. A p value<0.05 was considered to be statistically significant. RESULTS: The mean age of RHD patients was 53±13 years, 36 (90%) were female, whereas the mean age of controls was 50±12 years, similar to the cases, with the majority of males (70%). The rheumatic valve endocardium presented greater thickness than the controls (1.3±0.5 mm versus 0.90±0.4 mm, p=0.003, respectively), and a more intense inflammatory infiltrate in the endocardium (78% versus 36%; p=0.004), with predominance of mononuclear cells. Moderate to marked fibrosis occurred more frequently in rheumatic valves than in control valves (100% vs. 29%; p<0.001). Calcification occurred in 35% of rheumatic valves, especially among stenotic valves, which was associated with the mitral valve area (p=0.003). CONCLUSIONS: Despite intense degree of fibrosis, the inflammatory process remains active in the rheumatic mitral valve, even at late disease with valve dysfunction. Calcification predominated in stenotic valves and in patients with right ventricular dysfunction.

The reproductive biology of P. saltatrix in the southwestern Atlantic was studied using 1,102 specimens captured by the Brazilian commercial fleet between March 2014 and December 2015. The recruitment period was identified from records of juveniles in experimental beach seine hauls carried out on sandy beaches in the external sector of Guanabara Bay for four years (2012-2015). Based on the reproductive indices and on the macro- and microscopic analyses of the gonads, spawning peaks were identified in autumn and spring. The size at first maturity was estimated at 35.5, 38.3, and 37.4 cm for females, males, and general, respectively. Ovary analyses and measurements of the oocyte diameters indicated that bluefish are multiple spawners with asynchronous oocyte development. The batch fecundity estimate was 202,752.5 eggs and ranged from 9,800.9 to 426,787.0 eggs. The species reproduces throughout the entire study area, but it is more active in the south of Arraial do Cabo. The young-of-the-year were recorded on shallow water in all seasons, with modal peaks in the summer months. The parameters estimated in this study expand and update information on this species, providing important data for the evaluation and fisheries management of the stock of P. saltatrix in the southwestern Atlantic.

PURPOSE: To compare the performance in phonological processing skills, reading speed and reading comprehension before and after phonological remediation in a restricted group of schoolchildren with Attention Deficit Hyperactivity Disorder (ADHD) and with dyslexia. METHODS: Thirty-two schoolchildren from the 2nd to 8th year of Elementary School of both genders, with diagnosis of ADHD and Dyslexia according to the DSM-5, participated in this study. All patients underwent Phonological Remediation Program consisted of 18 weekly sessions. RESULTS: The results, expressed in z scores, showed a statistically significant difference between before and after remediation assessments in phonological processing skills, such as syllabic and phonemic awareness, working memory and lexical access. Rhyming task was analyzed separately because it represents another level of segmentation and, for this result, there was no significance. Besides these results, there was a statistically significant difference in reading speed and reading comprehension. CONCLUSION: The phonological remediation program contributes to the development of phonological processing, reading speed and reading comprehension in this population.
OBJETIVO: Comparar o desempenho da avaliação do processamento fonológico, velocidade de leitura e compreensão de texto antes e depois da aplicação de um programa de remediação fonológica em um grupo restrito de escolares com Transtorno do Déficit de Atenção e Hiperatividade (TDAH) e dislexia. MÉTODOS: Participaram deste estudo 32 escolares do 2º ao 8º ano do Ensino Fundamental, de ambos os sexos, com diagnóstico de TDAH e dislexia de acordo com o DSM-5, atendidos no Ambulatório de Neurologia Infantil do IPPMG/UFRJ. Todos os pacientes foram submetidos ao programa de remediação fonológica, que consistiu em 18 sessões semanais. RESULTADOS: Os resultados, expressos em escore z, indicaram diferença estatisticamente significativa entre as avaliações pré e pós-remediação nas habilidades do processamento fonológico, como em consciência silábica e fonêmica, memória de trabalho e acesso lexical. A tarefa de rima foi analisada separadamente, pois é considerada uma tarefa com nível de segmentação distinto de outros níveis silábicos e, para este resultado não houve significância. Além desses, houve diferença estatisticamente significativa também nos testes que medem velocidade de leitura e compreensão de texto. CONCLUSÃO: O programa de remediação fonológica contribui para o desenvolvimento do processamento fonológico, leitura e compreensão textual nesta população.

Objectives Evaluate the impact of microscopic extrathyroid extension (MEE) on outcome and therapy response in patients with cT1 and cT2 papillary thyroid carcinoma (PTC). Subjects and methods Retrospective study of 970 consecutive patients, who underwent surgery for PTC between 2000 and 2016. All patients had: tumours ≤ 4 cm, apparent complete tumour resection, without clinically apparent lymph node or distant metastasis at diagnosis and nonaggressive histologic variant. Results Based on the finding of MEE, 175 (18.0%) patients were upstaged to T3. They were older (53.9 versus 50.6 years; P = 0.004) and were more prone to have multifocal tumours (38.2% versus 24.8%; P = 0.001). Radioiodine ablation therapy (RAI) was administered more often to MEE patients (92% versus 40.5%; P < 0.001), as well as prophylactic lymph node resection (35.4% versus 28.6%, P = 0.048). They were more likely to have biochemical incomplete response (4% versus 0.3%; P = 0.03) at the end of the follow-up period. There was no significant association between MEE and recurrence rate, persistence of disease or disease-specific mortality. Conclusion These results support the changes made to the latest edition of the TNM staging system, regarding MEE. Although incomplete biochemical response is more common in these patients, it does not seem to affect their prognosis.

RESUMO Objetivo: Comparar o desempenho da avaliação do processamento fonológico, velocidade de leitura e compreensão de texto antes e depois da aplicação de um programa de remediação fonológica em um grupo restrito de escolares com Transtorno do Déficit de Atenção e Hiperatividade (TDAH) e dislexia. Métodos: Participaram deste estudo 32 escolares do 2º ao 8º ano do Ensino Fundamental, de ambos os sexos, com diagnóstico de TDAH e dislexia de acordo com o DSM-5, atendidos no Ambulatório de Neurologia Infantil do IPPMG/UFRJ. Todos os pacientes foram submetidos ao programa de remediação fonológica, que consistiu em 18 sessões semanais. Resultados: Os resultados, expressos em escore z, indicaram diferença estatisticamente significativa entre as avaliações pré e pós-remediação nas habilidades do processamento fonológico, como em consciência silábica e fonêmica, memória de trabalho e acesso lexical. A tarefa de rima foi analisada separadamente, pois é considerada uma tarefa com nível de segmentação distinto de outros níveis silábicos e, para este resultado não houve significância. Além desses, houve diferença estatisticamente significativa também nos testes que medem velocidade de leitura e compreensão de texto. Conclusão: O programa de remediação fonológica contribui para o desenvolvimento do processamento fonológico, leitura e compreensão textual nesta população.
ABSTRACT Purpose: To compare the performance in phonological processing skills, reading speed and reading comprehension before and after phonological remediation in a restricted group of schoolchildren with Attention Deficit Hyperactivity Disorder (ADHD) and with dyslexia. Methods: Thirty-two schoolchildren from the 2nd to 8th year of Elementary School of both genders, with diagnosis of ADHD and Dyslexia according to the DSM-5, participated in this study. All patients underwent Phonological Remediation Program consisted of 18 weekly sessions. Results: The results, expressed in z scores, showed a statistically significant difference between before and after remediation assessments in phonological processing skills, such as syllabic and phonemic awareness, working memory and lexical access. Rhyming task was analyzed separately because it represents another level of segmentation and, for this result, there was no significance. Besides these results, there was a statistically significant difference in reading speed and reading comprehension. Conclusion: The phonological remediation program contributes to the development of phonological processing, reading speed and reading comprehension in this population.

INTRODUCTION: Motor changes are observed in people living with HIV/AIDS. These changes may be associated with the chronicity of infection, continued use of antiretroviral medication, and/or the presence of comorbidities. OBJECTIVE: The objective of the present study was to evaluate postural sway in people living with asymptomatic HIV/AIDS under treatment with highly active antiretroviral therapy. METHODS: Twenty-seven subjects, recruited at an HIV referral center, aged between 30 and 40 years, participated in the study, divided into two groups: HIV group (n=12) and non-HIV group (n=15). The participants performed an experimental task, remaining on a force platform in a static position, in bipedal support and semi-tandem positions, in conditions with and without vision. RESULTS: The results demonstrated that visual occlusion, when the bipedal base was adopted, generated significant differences in the area of oscillation and mean velocity in both groups. Differences were also observed in the area and mean velocity of both groups when the semi-tandem position was adopted without vision. When comparing the groups, it was possible to identify significant differences in the semi-tandem base with vision. CONCLUSION: Considering these results, it was found that postural oscillation was higher in the visual occlusion condition for both groups. Concomitant to this, we conclude that in the challenging condition, where the base of support is reduced, the HIV group presents greater oscillation (medial-lateral) than the non-HIV group.
INTRODUÇÃO: Alterações motoras são observadas em pessoas vivendo com HIV/AIDS. Essas alterações podem estar associadas à cronicidade da infecção, uso contínuo da medicação antiretroviral e ou pela presença de comorbidades. OBJETIVO: O objetivo do presente estudo foi avaliar a oscilação postural de pessoas vivendo com HIV/AIDS assintomáticos em tratamento com terapia antirretroviral altamente ativa. MÉTODOS: Vinte e sete indivíduos, recrutados em um centro de referência em HIV, com idade entre 30 e 40 anos, participaram do estudo, divididos em dois grupos: grupo HIV (n=12) e grupo não HIV (n=15). Os participantes realizaram uma tarefa experimental, permanecendo em uma plataforma de força em posição estática, em posições de apoio bipodal e semi-tandem, em condições com e sem visão. RESULTADOS: Os resultados demonstraram que a oclusão visual, quando adotada a base bipodal, gerou diferenças significativas na área de oscilação e velocidade média em ambos os grupos. Diferenças também foram observadas na área e velocidade média de ambos os grupos quando a posição semi-tandem foi adotada sem visão. Ao comparar os grupos, foi possível identificar diferenças significativas na base semi-tandem com visão. CONCLUSÃO: Considerando esses resultados, constatou-se que a oscilação postural foi maior na condição de oclusão visual para ambos os grupos. Concomitante a isso, concluímos que na condição desafiadora, onde a base de suporte é reduzida, o grupo HIV apresenta maior oscilação (médiolateral) que o grupo não HIV.

The objective was to compare the effect of dual-task and visual manipulation on postural balance of older physical activity practitioners and older and young adult non-practitioners. Fifty-one subjects were divided into four groups: Older Practitioners of Karate (OPK), Older Practitioners of Func-tional Gymnastics (OPG), Non-practicing Older Adult Group (ONP), and Non-practicing Young Adult Group (YNP). The task was to remain in an upright, static position on a force platform, for 40 seconds, with and without a cognitive dual-task, by means of an arithmetic sum, and visual manipulation, with and without a blindfold. The analyzed variables of the Center of Pressure (COP) were: area of oscillation and mean amplitude of oscillation, in the mediolateral and anteroposterior directions. The results showed similar performances among the physical exercise groups (OPK and OPG) and the young adults (YNP), while the ONP presented greater postural oscillation in all conditions. In the visual condition, blindfolded, in the condition with the dual-task, the OPK, OPG, and YNP groups oscillated less, when compared to the condition without dual-task. Thus, it can be inferred that the practice of physical exercises, regardless of the modality, is effective in improving the postural control of older adults, with similar performances to the group of young adults, even in conditions with dual-task and sensory manipulation of vision
O objetivo do estudo foi comparar o efeito da dupla-tarefa e da manipulação visual no equilíbrio postural em idosos praticantes de diferentes modalidades de exercícios físicos, idosos e adultos jovens não praticantes. Participaram do estudo 51 indivíduos, subdivididos em quatro grupos: grupo de idosos praticantes de karatê (GPK), grupo de idosos praticantes de ginástica funcional (GPF), grupo de idosos não praticantes (GNP) e grupo de adultos jovens (GNP). A tarefa consistiu em permanecer, na posição ereta, sob plataforma de força, por 40 segundos, sem e com dupla-tarefa, por meio de soma aritmética e com manipulação visual, com e sem visão. As variáveis analisadas do Centro de Pressão (COP) foram: área de oscilação e amplitude média de oscilação, nos sentidos médio-lateral e ântero-posterior. Os resultados foram desempenhos semelhantes entre os grupos que praticavam exercícios físicos (OPK e OPG) e o de adultos jovens ( YNP), enquanto o ONP apresentou maior oscilação postural, nas variáveis área e amplitude de oscilação. Na condição visual, com vi-são e com a dupla-tarefa, os grupos OPK, OPG e YNP oscilaram menos, quando comparados a condição sem dupla-tarefa. Dessa forma, pode-se inferir que a prática de exercícios físicos, independente da modalidade, é eficaz no equilíbrio postural de idosos, com desempenho semelhante no grupo de adultos jovens, mesmo em condições com dupla-tarefa e manipulação sensorial da visão

Background: Hereditary angioedema (HAE) is an autosomal dominant disorder that affects â¼1 in 50,000 individuals. The disorder is characterized by spontaneous and gradual episodes of edema in subcutaneous tissues or mucosal membrane that may endanger the patient's life. Previous studies that concern HAE treatment and burden of illness in the United States and Europe suggest an improvement in the control of HAE. However, no similar data are available in South American patients. The purpose of the present study was to evaluate the burden of disease and compliance to therapy of patients with HAE in Brazil. Methods: We developed a structured questionnaire to assess the variables that influence the diagnosis and treatment of Brazilian patients with HAE. The questionnaire was evaluated by allergists with expertise in HAE and was reformatted before applying it. The consent form was included before survey access; approval from the ethic committee of Faculdade de Medicina do ABC (Santo André, São Paulo, Brazil) was ensured. The Brazilian association of patients with HAE distributed the survey by e-mail to associated patients all over the country, and responses were accepted within a period of 3 months after signing a consent form. Results: Ninety patients (67 women, 23 men; average age, 36.5 years) responded; the main findings were the following: 53 of 90 (64%) had no need of visiting emergency departments in the past 6 months; 71 of 90 (79%) reported life-threatening fear due to their diagnosis; 73 of 90 (83%) had other family members affected, but 54 of 73 of these affected relatives did not look for specific HAE treatment; and 26 of 90 (29%) reported death due to asphyxia or throat swelling in family members. Conclusion: Patients with HAE report understanding how severe their diagnosis represent, but they did not ponder how important their commitment to treatment may decrease the constant fear brought by the disease in its possible swelling crisis. Family data supported this conclusion.

The 21st Supply Deposit of the Brazilian Army (21st DSup), located in the city of São Paulo provides food raw materials for 16000 meals daily, and frozen fish is among the foodstuffs distributed. The objective of this study was to evaluate the good practices of seafood storage in the 21st DSup, identify issues of non-compliance that compromise food quality, and propose solutions. The system was evaluated, applying a checklist (RDC 275/2002) to evaluate the percentage of requirements in compliance with good practices. The 21st DSup was classified in Group 3, with 41% of items in conformance ( 50%), and we found that there is no hygienic-sanitary self-control program for storing cold seafood and other food supplies. The cold stores temperatures are not able to maintain products within the required standards of conservation. The seafood cold storage protocol of the 21st DSup does not guarantee temperature conformity. It is necessary to implement a hygienic-sanitary self-control program for food supply storage, which should begin with the development of a food safety culture.
O 21º Depósito de Suprimentos do Exército Brasileiro, localizado na cidade de São Paulo fornece, diariamente, matérias primas para 16 mil refeições e, dentre os gêneros alimentícios distribuídos, está o pescado congelado. O presente trabalho avaliou as boas práticas de armazenagem de pescado congelado no 21º DSup e identificou as não-conformidades que poderiam comprometer a qualidade do produto e propoz soluções para as limitações encontradas. Foi utilizada uma o check list da RDC 275/2002 e o depósito foi classificdo quanto ao número de requisitos conformes em boas práticas. O 21º DSup foi classificado como Grupo 3, obtendo 41% de itens conforme ( 50%); não dispunha de programa de autocontrole higienicossanitário da armazenagem do pescado congelado e outros insumos alimentares. As temperaturas das câmaras de produtos congelados não eram capazes de manter o produto dentro dos padrões de conservação exigidos. O protocolo de armazenamento do pescado congelado no 21º DSup não garantia conformidade da temperatura para o produto. É necessário construir um programa de autocontrole higiênico sanitário do armazenamento de suprimentos alimentares, que deve ser iniciado com o desenvolvimento de uma Cultura de Segurança de Alimentos.

RESUMEN
Estudo qualitativo, etnográfico, realizado com oito pessoas idosas. Compreendeu os significados, os sentidos das ações, as experiências em relação às preparações regionais e a influência da família. Foram estruturadas perguntas norteadoras para embasar as entrevistas, que possibilitaram a observação de categorias envolvendo a família, as memórias e as preferências no consumo de algumas preparações; o contexto social como obstáculo em relação aos costumes que possuíam anteriormente; a valorização da comida como ato de socialização, carinho e união; memórias e costumes arraigados pelo contexto cultural como característica de cada grupo familiar e fator saúde como limitante da cultura alimentar.
It is a qualitative and ethnographic study carried out with eight elderly people. It covered the meanings, the senses of actions, the experiences in relation to regional preparations, and the influence of the family. Guiding questions were structured to support the interviews that allowed the observation of categories, involving the family, memories and preferences in the consumption of some preparations; the social context as an obstacle in relation to the customs they had previously; the valorization of food as an act of socialization, affection and union; memories and customs rooted in the cultural context as a characteristic of each family group and health factor as limiting the food culture.
Estudio cualitativo, etnográfico, realizado con ocho personas mayores. Comprendió los significados, los sentidos de las acciones, las experiencias en relación a las preparaciones regionales y la influencia de la familia. Se han estructurado preguntas orientadoras para basar las entrevistas, que posibilitaron la observación de categorías involucrando a la familia, las memorias y las preferencias en el consumo de algunas preparaciones; el contexto social como obstáculo en relación a las costumbres que poseían anteriormente; la valorización de la comida como acto de socialización, cariño y unión; recuerdos y costumbres arraigados por el contexto cultural como característica de cada grupo familiar y factor de salud como limitante de la cultura alimentaria.
