RESUMEN

The growing interest in natural compounds is helping to improve the management of agro-industrial by-products such as the date seed as sources of such compounds. In this work, the application of a hydrothermal treatment at 160 and 180 °C for 60 min was studied to achieve the solubilization of its phenolic components and sugars in order to obtain biologically active extracts. The percentage of phenols and total sugars in the final extracts were very similar, at 45 and 25% for the 160 and 180 °C treatments, respectively. The treatment at a higher temperature allowed greater solubilization of other components. The antioxidant activity was measured as free-radical scavenging capacity. For the DPPH• method, expressed as EC50, the results were 0.34 and 0.37 mg/L, the TEAC values for the ABTS• method were 6.61 and 3.28 mg/g dried extract, and the values obtained by the ORAC method were 12.82 and 9.91 mmol Trolox/g dried extract, for 160 and 180 °C, respectively. All these values are higher than those of other plant extracts and extracts obtained using the whole date. Therefore, the date seed is a very important source of phenols, and through thermal and chromatographic processes, it is possible to obtain extracts with high antioxidant activity.

The cultivation of the date palm (Phoenix dactylifera L.) is the main activity and source of livelihood for people from arid and semiarid regions of the world. Date production is increasing every year. In addition, pitted date exportation is rising and great amounts of date seeds are produced. This biomass represents a problem for manufacturing companies. At the moment, date seeds are normally discarded or used as animal feed ingredients. However, this co-product can be used for many other applications due to its valuable chemical composition. Oil is one of the most interesting components of the date seed. In fact, date seeds contain 5-13% oil. Date seed oil contains saturated and unsaturated fatty acids with lauric and oleic as the main ones, respectively. Tocopherols, tocotrienols, phytosterols, and phenolic compounds are also present in significant amounts. These phytochemicals confer added value to date seed oil, which could be used for many applications, such as food product formulations, cosmetics, and pharmaceuticals. This review provides up-to-date data on the different extraction techniques and the chemical composition of date seed oils. The applications of date seed oil have also been reviewed.

Three common non-commercial Tunisian date varieties were treated by two thermal systems, obtaining a liquid fraction which was characterized and its antioxidant capacity determined. The concentration of total phenols in the three varieties (Smeti, Garen Gazel, and Eguwa) was increased by steam explosion treatment up to 5311, 4680, and 3832 mg/kg of fresh dates, and their antioxidant activity up to 62.5, 46.5 and 43.1 mmol Trolox/kg of fresh date, respectively. Both thermal treatments increased the content of phenolic acids. Additionally, a long scale study was carried out in a pilot plant, with steam treatment at 140 °C and 160 °C for 30 min. The liquid phase was extracted and fractionated chromatographically using adsorbent or ionic resins. The phenolic profiles were determined for each fraction, yielding fractions with interesting antioxidant activities with EC50 values of up to 0.08 mg/L or values of TEAC of 0.67 mmol Trolox/g of extract.

The dietary fibers (DF) of 10 date varieties from Tunisian oases have been investigated. Further knowledge on the content, composition, and technological applications of those fibers could support their genetic variability and promote the socioeconomical development of growing areas. The composition, water- and oil-holding capacities, solubility, and antiradical activity have been determined. The DF content ranged from 4.7% (Matteta, Rochdi) to >7% (Deglé Nour, Garen Gaze, Smeti). Composition varied significantly among cultivars, and the results evidenced that uronic acids and lignin determine to a great extent the organoleptic quality of dates. Many of the varieties that have been studied (Garen Gaze, Matteta, Kenta, Rochdi, Mermella, Korkobbi, Eguwa) were selected because of great interest from technological and functional points of view. Among their physicochemical characteristics, these samples presented water- and oil-holding capacities of higher than 17 and 4 mL/g fiber, respectively, which make them suitable for use as additives in fiber-enriched foods. Also, DF of Garen Gaze, Smeti, Mermella, and Eguwa had a high antiradical capacity (>230 Trolox equiv/kg fiber). It was concluded that some of these varieties could be grown as potential sources of DF, which could be included in the formulation of fiber- and antioxidant-enriched foods.

The purpose of this study was to determine and compare the phenolic acid composition, flavonoid content and antioxidant activity of fruits from common date cultivars. The simple phenolic content ranged from 15.73 (Mermella variety) to 54.66 mg/100 g fresh weight (Korkobbi variety). Korkobbi had also the highest content of total flavonoids (54.46 quercetin equivalents/100 g fresh weight). The percentage of inhibition can reach 83% in the lipoperoxyl radical of the Korkobbi variety, while it was about 95% with the Rotbi variety for OH.. The Trolox equivalent antioxidant capacity value provided a ranking in decreasing order at 6 min: Korkobbi > Bouhattam > Baht = Smiti > Bekreri = Garn ghzal > Mermilla = Kenta > Nefzaoui = Rotbi. It seems that the highest level of flavonoids in the Korkobbi variety was principally responsible for the highest antiradical efficiency of this cultivar.

The date palm, Phoenix dactylifera, is a palm extensively cultivated for its edible fruit. The chemical composition and the water content of ten Tunisian date varieties were determined. For all analysis, the Deglet Nour variety was taken as reference. Compositional analysis showed that the littoral varieties were very rich in reducing sugars (26 to 51%) than Deglet Nour which was rich in sucrose (54%). The relative results of the moisture content showed that the littoral varieties were classified as soft dates. The vitamin C analysis showed that the littoral varieties were very rich in this compound (24 to 46 mg/100 g) than Deglet Nour (1.12 mg/100 g). The mineral analysis showed that the littoral dates were relatively rich in potassium (283 to 733 mg/100 g) and presented a weak content in sodium (0.06 to 0.09 mg/100 g).

The chemical analysis of flesh and pit of two varieties of date palm fruit (Deglet nour and Alig) as well as the radical scavenging activity of their extracts was undertaken. The fruits were grown in Djerid region (Oasis of Tozeur, Tunisia). Total sugars was measured by HPLC method or with Fehling reagent, crude lipid content was obtained by Soxhlet's extraction, mineral elements were measured by atomic absorption photometer. The antioxidant activity of extracts from the flesh and pit of the date fruit was measured on the basis of the scavenging activity of the stable 1, 1-diphenyl-2-picrylhy-drazyl (DPPH) free radical. Our results showed that the total sugars could present over 60% of the dry weight of date flesh in two studied varieties. The content of reducing sugars was higher in Alig variety than Deglet nour. For the minerals content, dates flesh were a very good source of several minerals and could be an important source of potassium for regular consumer with a concentration of 0.61 and 0.72% (dry matter), respectively from flesh Deglet nour and Alig. Concerning the date pit composition, oils content was 10.13% in Deglet nour and 12.37% in Alig and the total sugars were less than 6% for the two varieties. In addition, ethyl acetate extracts from flesh Deglet nour, pit Deglet nour and pit Alig showed an important free radical scavenging activity towards 1-1-diphenyl-2-picrylhydrazyl (DPPH) free radical.
