RESUMEN

Effects of sex class (physically castrated, PC or immunologically castrated, IC) and diet (0 or 5mg/kg ractopamine hydrochloride, RAC) on characteristics of ham and bellies were determined from pigs slaughtered in three groups with similar ending live weights. One carcass per pen per marketing group (n=8) was selected to evaluate further processing characteristics. Data were analyzed as a 2×2 factorial design with a split plot in time and fixed effects of sex, diet, marketing group, and their interactions. IC fresh bellies were thinner (P<0.01) and softer (P<0.01) than PC bellies. IC hams and bellies were leaner (P<0.05) than those from PC pigs. RAC feeding did not affect (P>0.05) fresh ham or belly characteristics but decreased (P<0.01) fat in cured PC bellies. Marketing group affected (P<0.05) fresh quality, processing characteristics, and composition of hams and bellies. Immunological castration and RAC produced leaner finished products but did not alter processing yield of hams or bacon.

RESUMEN

Effects of feeding ractopamine (RAC; 5 mg/kg) to physically castrated (PC) and immunologically castrated (IC) pigs on carcass characteristics, cutting yields, and loin quality were evaluated using 285 carcasses. Male pigs were randomly assigned to sex treatments (PC and IC) at birth and fed the same nursery diets before allotment into 32 pens with 22 pigs per pen in a grow-finish barn. Pigs in the PC group were physically castrated at approximately 5 d of age, and pigs in the IC group were administered Improvest at 11 and 18 wk of age. Diet treatments (control or RAC) were initiated on study d 87. Pigs were marketed at 12 d (4.5 wk post-second Improvest dose), 19 d (5.5 wk post-second Improvest dose), and 33 d (7.5 wk post-second Improvest dose) following the start of final diet treatments. Three carcasses per pen were selected for evaluation of cutting yields and loin quality. Data were analyzed using PROC MIXED in SAS with fixed effects of sex, diet, market group, and their interaction; carcass (N = 285) was the experimental unit. Carcasses from RAC-fed pigs were heavier (P < 0.01) and had deeper (P = 0.02) loins than control-fed carcasses. Carcasses from IC pigs were similar (P = 0.22) in weight but had less (P < 0.01) fat and shallower (P = 0.02) loins when compared to PC carcasses. There were differences (P < 0.05) among market groups for carcass weights, fat depths, loin depths, and estimated carcass leanness. For cutting yields, RAC-fed carcasses had greater (P ≤ 0.03) bone-in lean and total carcass cutting yields than control-fed carcasses while there were no differences (P > 0.05) between RAC-fed and control-fed carcasses when evaluating LM color, marbling, firmness, pH, drip loss, and tenderness. Carcasses from IC pigs had greater (P < 0.05) boneless lean yields, bone-in lean yields, and total carcass cutting yields than PC carcasses. There were minimal differences (P < 0.05) in LM marbling, firmness, composition, and tenderness between PC and IC pigs. There was an interaction (P = 0.03) between sex and diet for LM composition. Control-fed PC loins had more (P < 0.01) lipid than all other treatment combinations. Market group had effects (P < 0.05) on carcass cutting yields, LM color, marbling and firmness scores, pH, purge loss, composition, and tenderness. The results from this study indicated RAC and immunological castration were additive in terms of improving carcass cutting yields while having minimal effects on pork quality.

Growth performance and carcass characteristics of physically castrated (PC) and immunologically castrated (IC) pigs fed ractopamine hydrochloride (RAC; 5 mg/kg) were evaluated in 64 pens of 22 pigs each. Male pigs were randomly assigned to castration method at birth. Pigs in the PC group were physically castrated at 5 d of age while IC pigs were administered Improvest at 11 and 18 wk of age. Pigs entered the grow-finish barn at approximately 9 wk of age (d 0). Dietary treatments (control or RAC) were initiated on d 87. Final treatment arrangement was a 2 × 2 factorial of castration method and diet. Data were analyzed using a mixed model with fixed effects of castration method, diet, market group, and all 2- and 3-way interactions. Pen was the experimental unit. From d 0 to 65, IC pigs had 11.2% greater (P < 0.01) G:F and 11.6% less (P < 0.01) ADFI than PC pigs, but ADG was increased 1.0% in PC pigs compared with IC pigs (P < 0.01). From d 65 to 87, IC pigs had 7.9% greater (P < 0.01) ADG and 12.1% greater (P < 0.01) G:F than PC pigs while having similar (P = 0.16) ADFI. At the initiation of diet (RAC) treatments, BW of all treatments were similar (P ≥ 0.32). From d 87 to 120 (RAC feeding period), IC pigs had 10.0% greater (P < 0.01) ADG and 10.5% greater (P < 0.01) ADFI than PC pigs while having similar (P = 0.64) G:F. Feeding RAC increased (P < 0.01) ADG by 16.9% and G:F by 17.9% while having no effect (P = 0.42) on ADFI from d 87 to 120. There were no significant interactions between castration method and diet on growth performance from d 87 to 120. For the entire study (d 0-120), IC pigs had 2.6% greater (P < 0.01) ADG, 4.6% less (P < 0.01) ADFI, and 7.3% greater (P < 0.01) G:F than PC pigs. Averaged over market groups, IC pigs were 2.5 kg heavier (P < 0.01) and had similar (P = 0.10) carcass weights and 1.8 percentage units less (P < 0.01) dressing yields than PC pigs. Additionally, IC pigs had 1.3 mm less (P < 0.01) fat and 1.7 mm less (P < 0.01) loin depth than PC pigs. Pigs fed RAC were 2.9 kg heavier (P < 0.01) and had 2.3 kg heavier (P < 0.01) carcasses and 2.2 mm deeper (P < 0.01) loins but similar (P = 0.21) dressing yields and tended (P < 0.10) to have 0.4 mm less fat than control-fed pigs when averaged over market groups. Group 3 pigs were the heaviest (P < 0.01) at slaughter and had the heaviest (P < 0.01) carcasses, greatest (P < 0.01) dressing yields, and the most (P < 0.01) carcass fat of all market groups. Overall, immunological castration and RAC were additive in terms of improving growth performance and carcass characteristics.

Our objectives were to characterize the effects of ractopamine hydrochloride (RAC) on fresh meat and further processing characteristics of muscles (serratus ventralis and triceps brachii) from the shoulders of finishing pigs. Two hundred forty shoulders originating from 120 carcasses (60 barrows and 60 gilts) were selected from a commercial population of pigs. A 2 × 2 factorial in a completely randomized design was used, with factors of RAC inclusion in the diet (0 or 7.4 mg/kg, as-fed basis) and sex (barrow or gilt). Paired shoulders (120 rights and 120 lefts) were transported from a federally inspected slaughter facility under refrigeration to the University of Illinois Meat Science Laboratory for evaluation. Subsequently, right and left shoulders were separated and designated for 2 separate experiments. Shoulders from right side were used in Exp. 1 to determine further processing characteristics. Cellar trimmed (CT) butts from the Boston butt of the shoulders were cured and dried-cured to manufacture cottage bacon and coppa, respectively. Shoulders from left side were used in Exp. 2 to determine fresh meat characteristics. Pigs fed RAC had greater shoulder weights and increased yields of cuts from the shoulder. Feeding RAC decreased Boston butt fat content (P = 0.01) but had no effect on picnic fat content (P = 0.86). Pigs fed RAC had greater (P < 0.01) iodine values than controls (67.00 vs. 64.95, respectively). Inclusion of RAC in the diet had no effect on cottage bacon cooked yield (P = 0.33), but it decreased (P < 0.01) cottage bacon fat content without having an effect on protein content (P = 0.50). In addition, cottage bacon from RAC shoulders had greater slice total area (P = 0.01) and less seam fat (P = 0.01) than controls. Ractopamine hydrochloride had no detrimental effect on coppa processing characteristics and visual appearance. Cottage bacon and coppa from RAC pigs had sensory characteristics similar to controls. Shoulders from pigs fed RAC might be of benefit to the industry because they provide more pounds of sellable product with no detrimental effects on processing characteristics.

Two experiments were conducted to evaluate the effects of adding combinations of wheat middlings (midds), distillers dried grains with solubles (DDGS), and choice white grease (CWG) to growing-finishing pig diets on growth, carcass traits, and carcass fat quality. In Exp. 1, 288 pigs (average initial BW = 46.6 kg) were used in an 84-d experiment with pens of pigs randomly allotted to 1 of 4 treatments with 8 pigs per pen and 9 pens per treatment. Treatments included a corn-soybean meal-based control, the control with 30% DDGS, the DDGS diet with 10% midds, or the DDGS diet with 20% midds. Diets were fed in 4 phases and formulated to constant standardized ileal digestible (SID) Lys:ME ratios within each phase. Overall (d 0 to 84), pigs fed diets containing increasing midds had decreased (linear, P ≤ 0.02) ADG and G:F, but ADFI was not affected. Feeding 30% DDGS did not influence growth. For carcass traits, increasing midds decreased (linear, P < 0.01) carcass yield and HCW but also decreased (quadratic, P = 0.02) backfat depth and increased (quadratic, P < 0.01) fat-free lean index (FFLI). Feeding 30% DDGS decreased (P = 0.03) carcass yield and backfat depth (P < 0.01) but increased FFLI (P = 0.02) and jowl fat iodine value (P < 0.01). In Exp. 2, 288 pigs (initial BW = 42.3 kg) were used in an 87-d experiment with pens of pigs randomly allotted to 1 of 6 dietary treatments with 8 pigs per pen and 6 pens per treatment. Treatments were arranged in a 2 × 3 factorial with 2 amounts of midds (0 or 20%) and 3 amounts of CWG (0, 2.5, or 5.0%). All diets contained 15% DDGS. Diets were fed in 4 phases and formulated to constant SID Lys:ME ratios in each phase. No CWG × midds interactions were observed. Overall (d 0 to 87), feeding 20% midds decreased (P < 0.01) ADG and G:F. Pigs increasing CWG had improved ADG (quadratic, P = 0.03) and G:F (linear, P < 0.01). Dietary midds or CWG did not affect ADFI. For carcass traits, feeding 20% midds decreased (P < 0.05) carcass yield, HCW, backfat depth, and loin depth but increased (P < 0.01) jowl fat iodine value. Pigs fed CWG had decreased (linear, P < 0.05) FFLI and increased (linear, P < 0.01) jowl fat iodine value. In conclusion, feeding midds reduced pig growth performance, carcass yield, and increased jowl fat iodine value. Although increasing diet energy with CWG can help mitigate negative effects on live performance, CWG did not eliminate negative impacts of midds on carcass yield, HCW, and jowl fat iodine value.

Ractopamine hydrochloride (RAC) has consistently led to an advantage in carcass cutting yields of finishing pigs and remains a common feed additive in US finishing pig diets. Less is known about the effect of RAC on further processing characteristics. Some researchers have reported advantages in ultimate pH of the LM in pigs fed RAC. If a greater ultimate pH was also observed in hams, the increased pH could affect further processing characteristics and lead to better protein interaction and improved textural properties. The objective of this experiment was to determine if RAC-fed pigs yielded hams with a greater ultimate pH, and if so, whether or not that advantage improves textural properties and water retention of further processed hams. Two hundred hams from barrows and gilts fed RAC or control diets were selected based on HCW. Hams were fabricated into 5 separate pieces to determine cutting yields, and 6 muscles were evaluated for ultimate pH. Hams were processed to make cured and smoked hams. Ractopamine increased cutting yields of the whole ham (P < 0.0001), inside (P < 0.01), outside (P < 0.01), and knuckle (P < 0.01) when expressed as a percentage of chilled side weight. Ultimate pH of the rectus femoris, vastus lateralis, and semitendinosus were all 0.06 pH units greater (P < 0.05), the biceps femoris was 0.04 pH units greater (P = 0.02), and the semimembranosus and adductor muscles were 0.03 pH units greater in pigs fed 7.4 mg/kg of RAC when compared with control pigs. Cured hams from RAC-fed pigs were heavier at all stages of production. No differences were detected in binding strengths (P = 0.88) or protein fat-free values (P = 0.13) between RAC (9.06 kg and 20.37) and control hams (9.01 kg and 20.13). Ractopamine increased cutting yields, total weight of cured hams, and ultimate muscle pH. Ractopamine can be fed to pigs to achieve the desired growth characteristic advantages and cutting yields without affecting further processed ham characteristics.

The pork industry uses pH to differentiate product of varying quality; thus, the effect of pH on shelf-life is important as time during transport is extended. The objective was to develop regression equations to predict shelf-life over a range of ultimate pH (5.42-6.26). Shelf-life was evaluated after vacuum aging pork loin sections 0, 7, 14, 21, or 28d and during 3d of simulated retail display (4.5°C) for pork loin chops. Correlation coefficients indicated a strong relationship between pH and quality measurements. Regression analysis with Aging Day and pH was able to explain 87% of the variation in aerobic plate counts for pork. After 28d of vacuum aging, loin sections from the upper end of the pH distribution had about a 3log(1000X) greater aerobic plate count than did the lower end pH product. An increase in pH resulted in pork with lower L*, a*, b* and R(630)-R(580) values and as Aging Day increased, instrumental measurements of color increased slightly. Although higher pH is associated with improved pork quality, higher pH and longer aging periods will result in increased microbial proliferation and decreased shelf-life. Thus, an intermediate pH may provide the most desirable combination of quality and shelf-life when extensive aging is used.

One hundred Hampshire x Duroc cross-bred pigs and 100 Nebraska Index line pigs were infected with porcine reproductive and respiratory syndrome virus (PRRSV) and evaluated for resistance and susceptibility. Controls (100/line) were uninfected littermates to infected pigs. Viremia (V), BW change (WTDelta), and rectal temperature at 0, 4, 7, and 14 d postinfection were recorded. Lung, bronchial lymph node (BLN), and blood tissue were collected at necropsy (14 d postinfection). Infected pigs were classified as low or high responders to PRRSV based on the first principal component from principal component analyses of all variables. Low responders to PRRSV (low PRRSV burden) and their uninfected littermates were assigned to the low (L) class. High responders to PRRSV (high PRRSV burden) and their uninfected littermates were assigned to the high (H) class. Infected pigs in the L class had large WTDelta, low V, and few lung lesions; H-class pigs had small WTDelta, high V, and many lung lesions. Ribonucleic acid was extracted from lung and BLN tissue of the 7 highest and 7 lowest responders per line and from each of their control littermates. A control reference design was used, and cDNA from each reference sample tissue was prepared from pooled RNA extracted from 2 control pigs from each line whose infected littermates had a principal component value of 0. Design variables in data analyses were line (Index vs. Hampshire x Duroc), class (H vs. L), treatment (infected vs. uninfected controls), and slide/pig as error. Oligo differential expression was based on P < 0.01 occurring in both lung and BLN. Line and treatment effects were significant for 38 and 541 oligos, respectively, in both lung and BLN. Line x class interaction existed for expression of thymosin beta-4, DEAD box RNA helicase 3, acetyl-cholinesterase, and Homo sapiens X (inactive)-specific transcript in both tissues. Treatment x class existed for expression of CCAAT/enhancer-binding delta protein, nuclear factor of kappa light polypeptide gene enhancer in B cells inhibitor alpha, thioredoxin-interacting protein, major facilitator superfamily domain containing 1, and unknown sequences SS00012040 and SS00012343. Line x treatment and line x treatment x class interactions were not significant. Possible important genetic associations for fine-mapping candidate genes related to response to PRRSV and determining causative alleles were revealed.

One hundred Hampshire x Duroc cross-bred pigs (HD) and 100 NE Index line (I) pigs were infected with porcine reproductive and respiratory syndrome (PRRS) virus and evaluated for resistance/susceptibility. Controls (100/line) were uninfected littermates to the infected pigs. Viremia, change in weight (WTdelta), and rectal temperature at 0, 4, 7, and 14 d postinfection were recorded. Lung, bronchial lymph node (BLN), and blood tissue were collected at necropsy (14 d postinfection). The first principal component from principal component analyses of all variables was used to rank the pigs for phenotypic response to PRRS virus. Low responders (low PRRS burden) had high WTdelta, low viremia, and few lung lesions; high responders (high PRRS burden) had low WTdelta, high viremia, and many lesions. The RNA was extracted from lung and BLN tissue of the 7 highest and 7 lowest responders per line and from each of their littermates. Expression of 11 innate and T helper 1 immune markers was evaluated with cDNA in a 2 x 2 x 2 factorial design. Significant upregulation in lung, lymph, or both of infected pigs relative to controls occurred for all but one gene. Expression differences were greater in HD than I pigs. Significant downregulation for certain immune genes in low pigs, relative to littermate controls, was detected in lung and BLN, particularly in line I. Serum levels of the immune cytokines affirmed the gene expression differences. High preinfection serum levels of IL 8 were significantly associated with PRRS virus-resistant, low pigs. After infection, low expression of interferon gamma in cDNA and in serum was also correlated with PRRS virus resistance. Important genetic associations were revealed for fine mapping of candidate genes for PRRS virus resistance and determining the causative alleles.

One hundred pigs from the NE Index Line (NEI) and 100 Hampshire-Duroc cross pigs (HD) were inoculated intranasally with porcine respiratory and reproductive syndrome virus (PRRSV 97-7895 strain) at 26 d of age to determine whether genetic variation in response to PRRSV exists. An uninfected littermate to each infected pig served as a control. Pigs were from 163 dams and 83 sires. Body weight and rectal temperature were recorded, and blood samples were drawn from each pig on d 0 before inoculation and on d 4, 7, and 14 after inoculation. Pigs were sacrificed on d 14. Lung and bronchial lymph nodes were collected, placed in optimal cutting temperature compound, and frozen at -80 degrees C. The presence of PRRSV in serum and in lung tissue and bronchial lymph nodes was determined by isolation in cell culture. The presence of antibodies in serum collected on d 14 was determined by a commercial ELISA test. Lung tissue was examined microscopically and scored for incidence and severity of lesions (score of 1 to 3; 1 = no or few lesions, and 3 = severe interstitial pneumonia). Data were analyzed with a mixed model that included random sire and dam effects. The interaction of line x treatment was significant (P < 0.001) for weight change and rectal temperature. Un-infected HD pigs gained 0.67 kg more from d 0 to 14 and averaged 0.32 degrees C higher rectal temperature than uninfected NEI pigs (P < 0.001), whereas infected NEI pigs gained 0.34 kg more and had -0.54 degrees C lower temperature than infected HD pigs (P < 0.001). Viremic titer (cell culture infectious dose 50%/mL) was greater (P < 0.05) in HD than NEI at d 4 (10(4.52) vs. 10(4.22)), 7 (10(4.47) vs. 10(3.99)), and 14 (10(3.49) vs. 10(3.23)). Viral titer loads in lung (P = 0.11) and bronchial lymph nodes tended (P = 0.07) to be greater in HD than NEI pigs. Antibody signal-to-positive (S/P) ELISA ratios in infected pigs ranged from 0.18 to 3.38, and 88% had levels > or = 0.40, which is the positive threshold for this ELISA. The S/P range in uninfected pigs was 0 to 1.11, and 99% had levels < or = 0.40. Mean S/P ratio for infected pigs was 0.23 units higher in HD than in NEI (P < 0.001). The HD pigs had a greater incidence of interstitial pneumonia and 0.65 higher mean lesion scores than NEI pigs (P < 0.001). In summary, responses of pigs of the two lines to infection with PRRSV differed, indicating that underlying genetic variation existed.

RESUMEN

Our objective was to estimate responses in growth and carcass traits in the NE Index line (I) that was selected for 19 generations for increased litter size. Differences between Line I and the randomly selected control line (C) were estimated in pure line litters and in F1 and three-way cross litters produced by mating I and C females with males of unrelated lines. Contrasts of means were used to estimate the genetic difference between I and C and interactions of line differences with mating type. In Exp 1, 694 gilts that were retained for breeding, including 538 I and C and 156 F1 gilts from I and C dams mated with Danbred NA Landrace (L) sires, were evaluated. Direct genetic effects of I and C did not differ for backfat (BF) at 88.2 kg or days to 88.2 kg; however, I pigs had 1.58 cm2 smaller LM area than did C pigs (P < 0.05). Averaged over crosses, F1 gilts had 0.34 cm less BF, 4.29 cm2 greater LM area, and 31 d less to 88.2 kg than did pure line gilts (P < 0.05). In Exp 2, barrows and gilts were individually penned for feed intake recording from 27 to 113 kg and slaughtered. A total of 43 I and C pigs, 77 F1 pigs produced from pure line females mated with either L or Danbred NA 3/4 Duroc, 1/4 Hampshire boars (T), and 76 three-way cross pigs produced from F1 females mated with T boars were used. Direct genetic effects of I and C did not differ for ADFI, ADG, G:F, days to 113 kg, BF, LM area, ultimate pH of the LM, LM Minolta L* score, or percentage of carcass lean. Interactions of line effects with crossing system were significant only for days to 113 kg. Pure line I pigs took 4.58+/-4.00 d more to reach 113 kg than did C pigs, whereas I cross F1 pigs reached 113 kg in 6.70+/-3.95 d less than C cross F1 pigs. Three-way cross and F1 pigs did not differ significantly for most traits, but the average crossbred pig consumed more feed (0.23+/-0.04 kg/d), gained more BW per unit of feed consumed (0.052+/-0.005 kg/kg), grew faster (0.20+/-0.016 kg/d), had less BF (-0.89+/-0.089 cm), greater LM area (5.74+/-0.926 cm2), more lean (6.21+/-0.90%), and higher L* score (5.27+/-1.377) than the average pure line pig did (P < 0.05). Nineteen generations of selection for increased litter size produced few correlated responses in growth and carcass traits, indicating these traits are largely genetically independent of litter size, ovulation rate, and embryonic survival.

Our objective was to estimate responses in reproductive traits in the Nebraska Index line (I) after 19 generations of selection for increased litter size. Responses were estimated in dams producing pure line, F1, and three-way cross litters. A total of 850 litters were produced over six year-seasons, including 224 pure line litters, 393 F1 litters produced from I and C females mated with Danbred NA Landrace (L) or Duroc-Hampshire (T) boars, and 233 litters by F1 L x I and L x C females mated with T boars. Contrasts of means were used to estimate the genetic difference between I and C and interactions of line differences with mating type. Farrowing rates of lines I (u = 91.0%) and C (u = 92.8%) did not differ. Averaged across all genetic groups, mean number born alive per litter was 10.1 pigs, and number and weight of pigs weaned per litter, both adjusted for number nursed and weaning age of 12 d, were 9.7 pigs and 34.4 kg, respectively. Averaged across mating types, direct genetic effects of I were greater than C (P < 0.05) for total born (3.53 pigs), number born alive (2.53 pigs), number of mummified pigs (0.22 pig), and litter birth weight (2.14 kg). The direct genetic effect of line I was less than C (P < 0.05) for litter weaning weight (-1.88 kg). Interactions of line effects with crossing system were significant (P < 0.05) for total number born, number of stillborn pigs, number weaned, and litter weaning weight. In pure line litters, I exceeded C by 4.18 total pigs and 1.76 stillborn pigs per litter, whereas the estimate of I-C in F1 litters was 2.74 total pigs and 0.78 stillborn pig per litter. The contrast between I and C for number weaned and litter weaning weight in pure litters was 0.32 pig and -0.28 kg, respectively, compared with 0.25 pig and -2.14 kg in F1 litters. Crossbreeding is an effective way to use the enhanced reproductive efficiency of the Index line.
