RESUMEN

OBJECTIVE: This study evaluated the independent and combined environmental impacts of the consumption of beef and ultra-processed foods in Brazil. DESIGN: Cross-sectional study. SETTING: Brazil. PARTICIPANTS: We used food purchases data from a national household budget survey conducted between July 2017 and July 2018, representing all Brazilian households. Food purchases were converted into energy, carbon footprints and water footprints. Multiple linear regression models were used to assess the association between quintiles of beef and ultra-processed foods in total energy purchases and the environmental footprints, controlling for sociodemographic variables. RESULTS: Both beef and ultra-processed foods had a significant linear association with carbon and water footprints (P < 0·01) in crude and adjusted models. In the crude upper quintile of beef purchases, carbon and water footprints were 47·7 % and 30·8 % higher, respectively, compared to the lower quintile. The upper quintile of ultra-processed food purchases showed carbon and water footprints 14·4 % and 22·8 % higher, respectively, than the lower quintile. The greatest reduction in environmental footprints would occur when both beef and ultra-processed food purchases are decreased, resulting in a 21·1 % reduction in carbon footprint and a 20·0 % reduction in water footprint. CONCLUSIONS: Although the environmental footprints associated with beef consumption are higher, dietary patterns with lower consumption of beef and ultra-processed foods combined showed the greatest reduction in carbon and water footprints in Brazil. The high consumption of beef and ultra-processed foods is harmful to human health, as well as to the environment; thus, their reduction is beneficial to both.

Sustainable food production and consumption are key to face the current climate and environmental crisis, hence innovation to produce food with lower impacts are taking more attention. Controlled environment agriculture, also known as vertical farming, is seen as one innovative approach to reduce impacts of producing food while also improving food security. Aeroponic is one of such innovations, which environmental impacts have not been well understood yet. Therefore, this study assesses the environmental impacts of aeroponic farm container system in the UK, including a full set of 19 indicators. The results show that energy requirements drive all the impacts, with climate change estimated at 1.52 kg CO2eq. per 1 kg of microgreens (pea shoots) using 2021 UK grid. Renewable powered systems improve almost all the impacts, with climate change reduced by up to 80 %, making this system competitive with conventional agricultural systems. This study proves that aeroponic farm container could offer lower impact food than equivalent imported to the UK, and that also could improve food security in terms of availability, stability, and access to food. Affordability issues need to be assessed in future work.

Aimed at improving the quality of school meals, the Sustainable School Program (SSP) implemented low-carbon meals, twice a week, in 155 schools of 4 municipalities, reaching more than 32,000 students. This study evaluated the environmental impact and nutritional viability of this intervention for this population. The 15 most repeated meals from the conventional and sustainable menus were selected, and we considered the school age group and number of meals served per student/day. Nutritional information was calculated using validated food composition tables, nutritional adequacy was assessed using National School Feeding Program (PNAE) requirements, the level of processing was considered using NOVA classification, and greenhouse gas emissions (GHGE) were estimated using food life cycle assessment (LCA) validated data. We found both conventional and sustainable food menus are equivalent, in terms of nutrients, except for calcium, iron, and magnesium. Sustainable food menus were cholesterol-free. However, there was a reduction of up to 17% in GHGE, depending on the school age group analysed. Considering the greater energy efficiency and lower environmental impact of these food menus, the SSP, therefore, demonstrates that a substantial reduction in climate impact is feasible, successful, and can be an inspiration to other regions globally.

RESUMEN

In this paper, we discuss the use of natural language processing and artificial intelligence to analyze nutritional and sustainability aspects of recipes and food. We present the state-of-the-art and some use cases, followed by a discussion of challenges. Our perspective on addressing these is that while they typically have a technical nature, they nevertheless require an interdisciplinary approach combining natural language processing and artificial intelligence with expert domain knowledge to create practical tools and comprehensive analysis for the food domain.

Although there is a growing body of literature on the environmental impacts of food, virtually none of the studies has addressed baby foods. Therefore, this work explored the life cycle environmental impacts of different ready-made baby foods, both at the level of individual meals and their combinations within a weekly menu. Twelve different meals were considered, based on baby food products available on the UK market, spanning breakfast, lunch and dessert. Menus following four different diets - omnivorous, vegetarian, pescatarian and dairy-free - were also evaluated. The results showed that, on average, lunch meals had the highest impacts and desserts the lowest. Breakfast has either intermediate (wet porridge) or low (dry porridge) impacts. Among the lunch meals, spaghetti Bolognese and salmon risotto had the highest impacts and among the desserts, strawberry, raspberry and banana as well as apple, pear and banana purees had the lowest. The key hotspots across the meals were raw materials and packaging. Meals with more meat and cream were found to have higher impacts. Manufacturing also played a significant role for global warming potential as well as depletion of fossil resources and the ozone layer due to the fossil fuels used in the process. When the impacts were analysed per mass of baby food consumed weekly, the dairy-free diet had higher impacts than the other three, but the difference among them was relatively small. The trends changed when nutritional value was taken into account, with the dairy-free diet exhibiting considerably higher impacts per unit of energy content. In that case, the pescatarian diet became the best option for most impacts. There was little difference between the omnivore and vegetarian diets. It is expected that these results will be of interest to baby food manufacturers and consumers, helping them to make more informed manufacturing and purchasing decisions.

Convenience is one of the main determinants of modern society where products, such as ready-made meals, play a key role. However, the continuing growth of this market has raised environmental concerns, which have not been well studied yet. This paper evaluates life cycle environmental impacts of meals consumed in the UK, the second largest consumer of ready-made meals in the world, after the US. Thirteen representative ready-made meals are evaluated in the British, Italian, Chinese and Indian cuisines, considering variations in recipes found on the market, as well as different meat replacement options. The results suggest that environmentally the most sustainable meal option is pork roast dinner while the worst alternatives are spaghetti Bolognese, cottage pie, lamb masala curry and lasagne. For example, the global warming potential of pork roast is 2.1 kg CO2 eq. and that of lasagne 5 kg CO2 eq. The ingredients contribute >50% to the impacts, followed by the distribution (~14%) and manufacturing (~12%) stages. Using seitan or soy granules as meat replacements improves five out of 11 impacts considered, including global warming potential, by up to 27%; the other impacts are largely unaffected. However, if tofu is used, four impacts are improved while four others are worsened. The annual consumption of ready-made meals in the UK accounts for GHG emissions of 12.89 Mt. CO2 eq., equivalent to emissions of a whole country, such as Jamaica. This contributes 15% to the emissions from the UK food and drink sector. It also represents 8% and 15% of the personal carbon budgets for food related to climate targets of 2 °C and 1.5 °C, respectively. The results of the study will be of interest to both food manufacturers and consumers, showing how their choices affect the environmental sustainability of this fast-growing sector.

The sustainability benefits of using solar cookers in developing countries have been analysed widely in the literature. However, the sustainability potential of solar cookers in developed economies has not been explored yet, which is the topic of this paper. Three types of solar cooker - box, panel and parabolic - were built as part of this research, using mostly (>70%) reused household materials. Their life cycle environmental and economic performance was analysed and compared to conventional microwaves. The results were first considered at the level of individual cookers and then scaled up to the levels of a city, region and country, considering a conservative (10%) uptake of solar cookers in substitution of microwaves. The contribution of home-made solar cookers to a circular economy and their social sustainability were also analysed. Spain was used as an illustrative example to demonstrate the potential sustainability benefits of using solar cookers in developed countries. The results suggest that, in comparison with microwaves, they could reduce annual life cycle costs by up to 40% and environmental impacts by up to 65%, including greenhouse gas emissions. At the national level, 42,600 t of CO2 eq. would be avoided annually while the consumption of primary energy would be reduced by 860 TJ. Furthermore, the electricity consumption would decrease by 67 GWh/yr and 4200 t/yr of household waste would be avoided. If solar cookers were built entirely by reusing household materials, up to €23.2 million could be saved per year. Finally, the development of craft activities to build and repair the cookers can help people to engage socially and reduce stress, thus enhancing their social wellbeing. It can also increase people's awareness of a more sustainable use of resources. Therefore, home-made solar cookers represent a promising opportunity to motivate behavioural changes towards a circular economy and sustainability in developed countries.

Barley is an ancient crop and a great source of nutrients. It is the third largest agricultural commodity produced in Denmark and represents a relevant crop in Italy too. Due to the increasing customers awareness of sustainability issues, it has become essential to evaluate the environmental impact and the use of resources in food production and distribution systems. However, especially in agriculture, difficulties are encountered when emissions from fertilisers and pesticides need to be modelled, due to a variety of modelling options and their dependency on the availability of site-specific information. How to address these difficulties might affect the results reliability. Hence, this study aims to evaluate, using the life cycle assessment (LCA) methodology, the influence of different models for estimating emissions from fertilisers and pesticides on the environmental impacts of barley cultivation in Denmark and Italy. Two models for fertilisers and pesticides' emissions have been applied; these differ on the extent of data requirements and complexity of calculation algorithms, which might increase the results accuracy and robustness. The results show that the modelling options do affect the environmental impacts of barley production, in particular climate change, eutrophication categories, acidification and freshwater eco-toxicity. This study estimates that the variations for such categories range from 15% in the case of climate change to 89% in the case of marine eutrophication. These findings highlight the importance of the emission modelling options as well as the constraints of data requirements, critical aspects when a LCA study on agricultural products is carried out.
