RESUMEN

High-pressure processing (HPP) of donor human milk (DM) minimally impacts the concentration and bioactivity of some important bioactive proteins including lactoferrin, and bile salt-stimulated lipase (BSSL) compared to Holder pasteurization (HoP), yet the impact of HPP and subsequent digestion on the full array of proteins detectable by proteomics remains unclear. We investigated how HPP impacts undigested proteins in DM post-processing and across digestion by proteomic analysis. Each pool of milk (n = 3) remained raw, or was treated by HPP (500 MPa, 10 min) or HoP (62.5 °C, 30 min), and underwent dynamic in vitro digestion simulating the preterm infant. In the meal, major proteins were minimally changed post-processing. HPP-treated milk proteins better resisted proximal digestion (except for immunoglobulins, jejunum 180 min) and the extent of undigested proteins after gastric digestion of major proteins in HPP-treated milk was more similar to raw (e.g., BSSL, lactoferrin, macrophage-receptor-1, CD14, complement-c3/c4, xanthine dehydrogenase) than HoP.

The climate change impacts of South Asia (SA) are inextricably linked with increased monsoon variability and a clearly deteriorating trend with more frequent deficit monsoons. One of the most climate-vulnerable nations in the eastern and central Indo-Gangetic Basin is Bangladesh. There have been numerous studies on the effects of climate change in Bangladesh; however, most of them tended to just look at a small fraction of the impact elements or were climatic projections without accounting for the effects on agriculture. Additionally, simulation studies using the CERES-Rice and CERES-Wheat models were conducted for rice and wheat to evaluate the effects of climate change on Bangladeshi agriculture. However, up to now, Bangladesh has not implemented farming system ideas by integrating cropping systems with other income-generating activities. This study was conducted as part of the Indo-Gangetic Basin (IGB) regional evaluations using the protocols and integrated assessment processes of the Agricultural Model Intercomparison and Improvement Project (AgMIP). It was also done to calibrate crop models (APSIM and DSSAT) using rice and wheat. To assist policymakers in creating national and regional plans for anticipated future agricultural systems, our work on the integrated evaluation of climate change impacts on agricultural systems produced realistic predictions. The outcome of this research prescribes a holistic assessment of climate change on future production systems by including all the relevant enterprises in the agriculture sector. The findings of the study suggested two major strategies to minimize the yield and increase the profitability in a rice-wheat cropping system. Using a short-term HYV (High Yielding Variety) of rice can shift the sowing time of wheat by 7 days in advance compared to the traditional sowing days of mid-November. In addition, increasing the irrigation amount by 50 mm for wheat showed a better yield by 1.5-32.2% in different scenarios. These climate change adaptation measures could increase the per capita income by as high as 3.6% on the farm level.

RESUMEN

High pressure processing (HPP) is a novel technology that involves subjecting foods to high hydrostatic pressures of the order of 100-600 MPa. This technology has been proven successful for inactivation of numerous microorganisms, spores and enzymes in foods, leading to increased shelf life. HPP is not limited to cold pasteurization, but has many other applications. The focus of this paper is to explore other applications of HPP, such as gelatinization, forced water absorption and infusion of nutrients. The use of high pressure in producing cold gelatinizing effects, imparting unique properties to food and improving food quality will be also discussed, highlighting the latest published studies and the innovative methods adopted.

Infant milk formula (IMF) is designed to mimic the composition of human milk (9-11 g protein/L); however, the standard protein content of IMF (15 g/L) is still a matter of controversy. In contrast to breastfed infants, excessive protein in IMF is associated with overweight and symptoms of metabolic syndrome in formula-fed infants. Moreover, the beta-lactoglobulin (ß-Lg) content in cow milk is 3-4 g/L, whereas it is not present in human milk. It is considered to be a major reason for cow milk allergy in infants. In this respect, to modify protein composition, increasing the ratio of alpha-lactalbumin (α-Lac) to ß-Lg would be a pragmatic approach to develop a hypoallergenic IMF with low protein content. Such a formula would ensure the necessary balance of essential amino acids, as 123 and 162 amino acid residues are available in α-Lac and ß-Lg, respectively. Hence, in this study, a pasteurized form of hypoallergenic and low-protein ready-to-feed (RTF) formula, a new product, is developed to retain heat-sensitive bioactives and other components. Therefore, the effects of high pressure processing (HPP) under 300-600 MPa at approximately 20-40 °C and HTST pasteurization (72 °C for 15 and 30 s) were investigated and compared. The highest ratio of α-Lac to ß-Lg was achieved after HPP (600 MPa for 5 min applied at 40.4 °C), which potentially explains the synergistic effect of HPP and heat on substantial denaturation of ß-Lg, with significant retention of α-Lac in reconstituted IMF. Industrial relevance: This investigation showed the potential production of a pasteurized RTF formula, a niche product, with a reduced amount of allergenic ß-Lg.
