As a result of intensive anthropogenic impact in the biosphere there is a rapid process of accumulation of heavy metal salts. They have led to the aggravation of problems associated with the pollution of ecosystems and basic food products of plant and animal origin. Environmental pollution by these compounds is caused by their persistence in environmental objects, migration ability, accumulation by plants. This contributes to their accumulation in the human environment. A number of studies have shown that heavy metals have mutagenic, toxic effects and affect the intensity of biochemical processes. Therefore, the presence of heavy metals in the environment is extremely undesirable. Moreover, the ecological state of the environment is directly related to changes in the human internal environment. Deficiency or excess of certain bioelements in soils and drinking water or non-compliance with its stable chemical composition causes the development of dysmicroelementosis. The ecological situation of the Carpathian region is closely related to the state of soils and water resources. In this regard, it is advisable to study and control the level of cadmium compounds in the environment of the region. The study of the effect of cadmium intoxication on the macro- and microelement composition of the brain and myocardium of experimental animals is also worthwhile. Materials and methods. Soils and drinking water of the plain, foothill and mountainous zones of the region, as well as organs and tissues of experimental animals served as the object of research. Cadmium levels in drinking water and myocardial tissues and brain of experimental animals have been measured by atomic absorption spectroscopy. Results and discussion. The study of soils in the Prykarpattia region has revealed an increase in the toxic element cadmium. Its content is 1.1-1.5 times higher than background levels. The analysis of drinking water allowed to establish that a significant number of people living in the plain and foothill zone of the region consume water with a high content of cadmium. The main stages of cadmium intake and accumulation in plants have been analyzed. Significant disorders in the body of experimental animals under conditions of excessive intake of cadmium compounds have been revealed. It was accompanied by the accumulation of cadmium in the myocardium and brain, on the background of redistribution of vital macronutrients calcium and magnesium along with micronutrients copper and zinc. Thus, excessive intake of cadmium salts causes the development of dysmicroelementosis, which is accompanied by a violation of the homeostasis of a living organism. It is suggested to conduct continuous monitoring of the level of toxicants in the ecosystem as an integral component of environmental monitoring.


Como consequência do intenso impacto antrópico na biosfera, um rápido processo de acúmulo de sais de metais pesados ocorre. Esse processo tem é um agravante para os problemas associados à poluição dos ecossistemas e dos produtos alimentares básicos de origem vegetal e animal. A poluição ambiental por esses compostos é causada por sua persistência em objetos ambientais, capacidade de migração, acúmulo pelas plantas. Isso contribui para o seu acúmulo no ambiente humano. Vários estudos mostraram que os metais pesados têm efeitos mutagênicos, tóxicos e afetam a intensidade dos processos bioquímicos. Portanto, a presença de metais pesados no meio ambiente é extremamente indesejável. Além disso, o estado ecológico do meio ambiente está diretamente relacionado às mudanças no ambiente interno humano. A deficiência ou excesso de certos bioelementos nos solos e na água potável ou o não cumprimento de sua composição química estável provoca o desenvolvimento da dismicroelementose. A situação ecológica da região dos Cárpatos está intimamente relacionada com o estado dos solos e dos recursos hídricos. Nesse sentido, é aconselhável estudar e controlar o nível de compostos de cádmio no ambiente da região. O estudo do efeito da intoxicação por cádmio na composição de macro e microelementos do cérebro e miocárdio de indivíduos experimentais também devem ser analisados. Solos e água potável das zonas plana, sopé e montanhosa da região, bem como órgãos e tecidos de indivíduos experimentais serviram de objeto de pesquisa. Os níveis de cádmio na água potável e nos tecidos do miocárdio e cérebro de indivíduos experimentais foram medidos por espectroscopia de absorção atômica. Nesse sentido, o estudo dos solos da região de Prykarpattia revelou um aumento do elemento tóxico cádmio. Seu conteúdo é 1,1-1,5 vezes maior que os níveis de fundo. A análise da água potável permitiu constatar que um número significativo de pessoas residentes na zona de planície e sopé da região consome água com elevado teor de cádmio. As principais etapas da ingestão e acúmulo de cádmio nas plantas foram analisadas. Distúrbios significativos no corpo de indivíduos experimentais sob condições de ingestão excessiva de compostos de cádmio foram revelados, acompanhados pelo acúmulo desse elemento no miocárdio e no cérebro, no contexto da redistribuição dos macronutrientes cálcio e magnésio, juntamente com os micronutrientes cobre e zinco. Assim, a ingestão excessiva de sais de cádmio causa o desenvolvimento de dismicroelementose acompanhada por uma violação da homeostase de um organismo vivo. Sugere-se a realização de monitoramento contínuo do nível de tóxicos no ecossistema como um componente integral do monitoramento ambiental.

Honey is one of the best nutritious substances in the world, having different services in the body functions regulation. Ten elements (K, Na, Ca, Co, Cr, Mn, Mo, Ni, Pb, Se) from honey samples were analyzed from 80 different locations of Punjab and ten floras. The aim of the present study was to determine the quality and quantity of minerals and Physico-chemical analysis in honey. A flame photometer was used to measure the concentration of major minerals (K, Ca and Na). The concentration of micro minerals (Co, Cr, Mn, Mo, Ni, Pb and Se) was analyzed using Atomic Absorption Spectrometer. The concentration of macro-elements obtained was as follow (in ppm): K (166-1732), Na (107-418) and Ca (07-99), while the concentration of microelements (in ppm) Co (1-2), Cr (>1), Mn (<1), Mo (1.818), Ni (1.911), Pb (<1) and Se (1.968). The most abundant minerals were potassium, calcium and sodium, ranging between 396-810.5, 17.5-640.63 and 169.88-238.62 ppm, respectively. However, the trace mineral elements of honey were obtained in the order of decreasing Se > Co > Ni > Pb > Cr > Mo > Mn. The findings showed that all the heavy metals like Co, Cr, Ni and Pb were present in trace amounts and close to International Honey Quality Standard. The result of given honey samples represented highest value of moisture (31.23%), color (80 mm pfund), pH (8.23), acidity (72.02 meq/kg), electrical conductivity (0.85 ms/cm) and ash contents (0.83%).


O mel é uma das substâncias mais nutritivas do mundo, possuindo diversos serviços na regulação das funções do organismo. Dez elementos (K, Na, Ca, Co, Cr, Mn, Mo, Ni, Pb, Se) de amostras de mel foram analisados em 80 locais diferentes de Punjab e dez floras. O objetivo do presente estudo foi determinar a qualidade e quantidade de minerais e análises físico-químicas em mel. Um fotômetro de chama foi usado para medir a concentração dos principais minerais (K, Ca e Na). A concentração de microminerais (Co, Cr, Mn, Mo, Ni, Pb e Se) foi analisada utilizando espectrômetro de absorção atômica. A concentração de macroelementos obtida foi a seguinte (em ppm): K (166-1732), Na (107-418) e Ca (07-99), enquanto a concentração de microelementos (em ppm) Co (1-2), Cr (> 1), Mn (< 1), Mo (1,818), Ni (1,911), Pb (< 1) e Se (1,968). Os minerais mais abundantes foram potássio, cálcio e sódio, variando entre 396-810,5, 17,5-640,63 e 169,88-238,62 ppm, respectivamente. No entanto, os oligoelementos do mel foram obtidos na ordem decrescente Se > Co > Ni > Pb > Cr > Mo > Mn. Os resultados mostraram que todos os metais pesados ​​como Co, Cr, Ni e Pb estavam presentes em quantidades vestigiais e próximos ao Padrão Internacional de Qualidade do Mel. O resultado de determinadas amostras de mel representou o maior valor de umidade (31,23%), cor (80 mm pfund), pH (8,23), acidez (72,02 meq/kg), condutividade elétrica (0,85 ms/cm) e teor de cinzas (0,83%).

Diabetes mellitus (DM) and arterial hypertension are considered serious public health problems. Several studies have shown that oxidative stress is usually related to the onset of DM and hypertension, as well their associated complications. Moreover, the levels of some minerals are closely related to the pathophysiology of these diseases. Thus, in this study we aimed to evaluate the effect of metformin on the redox profile and mineral levels in the serum of patients with DM type 2 and hypertension. We also tested the effect of metformin on the viability and redox profile of peripheral blood mononuclear cells (PBMCs) for 24 h. As expected, we found that patients with type 2 DM and hypertension + type 2 DM had higher fasting glucose and triglyceride levels. As groundbreaking research, we found that both patients DM type 2 and Hypertension + DM type 2 had reduced myeloperoxidase (MPO) activity. On the other hand, the levels of total thiols (PSH) and vitamin C were increased. There was no statistical significance for the alterations in mineral levels. In addition, metformin treatment had no cytotoxic effect on PBMCs. Similarly, in patients of both groups, MPO activity was reduced and PSH levels were increased in PBMCs. We have shown that metformin is a drug with a protective effect in patients with DM type 2 against oxidative stress by reducing MPO activity and improving the levels of PSH and antioxidant defenders such as vitamin C. The results of in vitro assays support the antioxidant effect of metformin. Furthermore, we suggest studies to assess the biochemical mechanisms of metformin and how it can be used in a pharmacological therapeutic perspective against oxidative damage.

This study aimed to evaluate the effect of the inclusion of spineless cactus (Opuntia stricta Haw) in the diet of sheep on the balance of macrominerals, renal function, and blood metabolites. Five sheep cannulated in the rumen (61.5±9.5kg body weight) were used in a 5 × 5 Latin square composed of five diets and five experimental periods. The experimental period lasted 105 days, with five periods of 21 days each. Four diets containing levels of spineless cactus (121, 245, 371, and 500g/kg of dry matter (DM)), and a control diet were evaluated. Samples of the ingredients, orts, feces, urine, and blood were collected. Spineless cactus inclusion in sheep diets increased the DM intake, ash, oxalate, and all macrominerals intake (P < 0.05), but did not affect the urinary and fecal excretion of P, as well as the concentration of P in the blood (P > 0.05). It is possible to verify that the inclusion of spineless cactus, up to the level of 500g/kg of DM in the sheep diets, does not appear to cause damage to the animal's health. Its inclusion does not compromise kidney function or blood metabolites evaluated herein.


O objetivo deste estudo foi avaliar o efeito da inclusão de palma forrageira (Opuntia stricta Haw) na dieta de ovinos sobre o balanço dos macrominerais, a função renal e os metabólitos sanguíneos. Cinco ovinos canulados no rúmen (61,5±9,5kg de peso corporal) foram distribuídos em um quadrado de 5 × 5 latinos, composto de cinco dietas e cinco períodos experimentais. O período experimental teve duração de 105 dias, sendo cinco períodos de 21 dias cada. Foram avaliadas quatro dietas contendo níveis de palma forrageira (121, 245, 371 e 500g/kg de matéria seca (MS)), e uma dieta controle. Foram coletadas amostras dos ingredientes, sobras, fezes, urina e sangue. A inclusão de palma forrageira na dieta dos ovinos aumentou o consumo de MS, cinzas, oxalato e todos os macrominerais (P<0,05), mas não afetou a excreção urinária e a fecal de P, bem como a concentração de P no sangue (P>0,05). É possível verificar que a inclusão de palma forrageira, até o nível de 500g/kg de MS na dieta de ovinos, não parece causar danos à saúde do animal. Sua inclusão não compromete a função renal ou os metabólitos sanguíneos avaliados.

This paper describes studies for the determination of total concentration and bioaccessible fraction of minerals in peaches by MIP OES. The PCA analysis identified 3 distinct groups of elements concerning the total concentration, which was attributed to the origin of each cultivar. Among the macroelements, K presented higher values for total concentration, while B and Fe predominated among the microelements. Regarding the bioaccessible fraction, Mn presented the highest percentage (46-84%), followed by Zn and B (10-63% and 33-57%, respectively). Pearson's correlation coefficient revealed that reducing sugars and titratable acidity can influence the mineral bioaccessibility, highlighting the strong positive correlations between reducing sugars with Mn and total acidity with Fe. Peach cultivars have satisfactory nutritional value, but the total and bioaccessible concentrations of minerals obtained do not meet the recommended daily needs, requiring the consumption of other fruits and vegetables to complement the diet.

This study evaluates the elemental content in 4 types of canned tuna fish groups, each with 4 brands that are commercialized for human consumption in Brazil. The results are based on trace elements in canned tuna fish quantified by ICP OES and a comparison to limit levels set by the FAO/WHO. We also checked the carcinogenic risk (CR), non-carcinogenic risk (Hazard Index (HI) and Hazard Quotient (HQ)), and pollution index (PI) for the studied canned tuna samples. As and Se concentrations in all groups are above the intake values set by FAO/WHO considering specific groups. The carcinogenic risk values for arsenic (As) in groups are considerably unacceptable (≥10-4). Hazard quotients (HQ) were >1 for As in all groups, while no sample was below 1 for HI. The pollution index (PI) results show that the main canned tuna fish contaminant is aluminum, then selenium and arsenic, respectively. Only half of the samples did not present elemental contaminant levels. All studied brands of canned tuna presented elemental concentrations that could pose a health risk to human consumption, that could be from CR, HQ, HI, or PI. The contaminant levels are alarming and should raise a red flag for the intake of these products, especially a long-term one. These results urge the authorities to supervise and enforce better practices for this type of food, protecting their population from health hazards.

This study aimed to quantify the extent of heavy metal, non-metal and metalloid levels in the Campomanesia adamantium pulp obtained from an area crossed by road experiencing high large vehicle traffic and intensive agriculture modern farming, to monitor the health risks associated with pulp consumption by humans. For this purpose, in three spots located within this area, ripe fruits were collected on the roadside, bush and farm-margin. Pulp samples were digested by microwave-assisted equipment, and chemical elements were quantified by ICP OES. The concentrations of K, Pb, Se, Fe, Mo, Zn, Co, Ni and Mn in the pulp collected in roadside/bush points showed statistical differences (p < 0.05). The heavy metals and metalloid concentrations that exceeded FAO/WHO standards were ordered Pb > As > Mo > Co > Ni > Mn > Cr. Therefore, among these metalloid and heavy metals, As, Pb and Cr were found to be higher in farm-margin > roadside > bush (1.5 × 10-3, 1.1 × 10-3 and 6.2 × 10-4), respectively. Therefore, As is the most important metalloid with higher levels in farm-margin, roadside and bush (1.5 × 10-3, 1.0 × 10-3 and 6.0 × 10-4 > 10-6-10-4 and 3.33, 2.30 and 1.34 > 1), respectively, to total cancer risk and hazard quotient, if 10 g daily of pulp are consumed.

In Argentina, wine production is one of the most important economic activities, producing a large quantities of organic wastes. Composting is a viable alternative to treat these residues, with the possibility to obtain high-quality products. The objective of the present study was to evaluate the effect of the addition of goat manure, leaves from garden raking and alfalfa to exhausted grape marc and the influence of plastic cover on the composting process and the quality of the finished product. Composting was carried out in turned piles in a total randomized design. Temperature, moisture, pH, electrical conductivity, micro and macro elements, biological parameters, stability and structure were determined with the goal to assess product quality. Mixture compost presented higher macro and micro elements content (especially P, Mn and Zn) than grape marc compost. Plastic cover showed no significant effect on physico-chemical parameters, while microorganisms were affected, with higher cellulolytic and nitrifying content in uncovered piles. In all composts, parameters indicated stability and no pathogens (Salmonella sp.) were detected. Pot assay with Lactuca sativa suggested that all compost revealed adequate substrate quality, with higher plant biomass values than commercial substrate and sand (Control), even with fertilization. Mixture compost showed significantly higher biomass and nutrient absorption values relative to the remaining evaluated substrates, suggesting that the use of goat manure and leaves added to exhausted grape marc, as raw material resulted in higher compost quality. All together indicated that the use of polyethylene cover negatively affect microorganisms content and a higher diversity of organic residues composted would result in higher microbiological activity and nutritional grade product.

A microwave-assisted digestion procedure using diluted HNO3 and H2O2 was developed for multi-element determination in guarana samples by ICP OES. Optimization step was performed employing a mixture design with pseudocomponents using HNO3, H2O2 and H2O. The analytical signal of each element, residual acidity and residual carbon content were optimized simultaneously using the desirability function. The best condition for digestion of a 250 mg sample mass resulted from a mixture constituted by 1.0 mL of HNO3, 3.0 mL of H2O2 and 6.0 mL of H2O. This condition allowed final digests with residual acidity and residual carbon content of 0.4 mol L-1 and 6.5%, respectively. The method was validated and applied for the determination of K, Ca, Mg, S, P, Cu, Fe, Mn and Zn in 72 guarana seed samples from Bahia state. This work presents unpublished results about the mineral composition of guarana seed samples produced in Bahia state, Brazil.

ABSTRACT: Although the medicinal properties of berry fruit are well known, there is relatively little information available concerning the applications of other parts of berry plants. Thus, in this study we determined the nutritional value of the leaves of selected berry species and their possible application in health promoting diets. The levels of nutrients, and macro- and microelements in the leaves of four species collected from allotment gardens in the city of Szczecin, Poland (53°2617 N, 14°3232 E; altitude 7 m a.s.l.) were identified: raspberry (Rubus idaeus L.), blackberry (Rubus fruticosus L.), chokeberry (Aronia melanocarpa L.), and sea buckthorn (Hippophae rhamnoides L.). Sea buckthorn leaves were the richest source of protein, raspberry leaves had the highest levels of lipids, and the leaves of all four species studied were a rich source of crude fibre and dietary fibre fractions. Desirable Ca:P and Na:K ratios indicated their potential as a good source of minerals essential to bone formation and the treatment of hypertension. Sea buckthorn leaves contained high but also safe Fe levels (within recommended WHO limits) and, therefore, may become an alternative rich source of this element.(AU)

O objetivo desta pesquisa foi avaliar o efeito da suplementação de levedura de cerveja e minerais orgânicos sobre o desempenho, morfometria intestinal e resposta imune humoral de frangos de corte, desafiados com a vacina de coccidiose. Foram utilizados 384 pintos de corte, distribuídos aleatoriamente em um delineamento inteiramente casualizado com quatro tratamentos (1. controle, 2. minerais orgânicos 3. levedo de cerveja, 4. associação de minerais orgânicos e levedo de cerveja) e 4 repetições de 24 aves cada. No alojamento, 12 aves de cada repetição foram identificadas com anilha e receberam a vacina contra coccidiose via ocular. Aos 7, 21, 35 e 42 dias, foi coletado sangue para análise de proteínas séricas totais e perfil eletroforético de IgA e IgG e um segmento do duodeno para análise morfométrica. A suplementação de levedo de cerveja ou de minerais orgânicos não afetou o desempenho de frangos de corte ou a produção de anticorpos. O desafio imunológico com a vacina de coccidiose não foi suficientemente eficaz em provocar uma resposta imune capaz de alterar a morfometria da mucosa duodenal e a produção de anticorpos.


The objective of this study was to evaluate the effects of beer yeast and organic minerals supplementations on the performance, intestinal morphometry and humoral immune response of broilers that were challenged with coccidiosis vaccine. Three-hundred-eighty-four chicks were used, randomly distributed in an entirely random design total with four treatments (1. control, 2. organic minerals on top, 3. beer yeast, 4. association between organic minerals and beer yeast) and four treatments with 24-bird repetition each. At housing, 12 birds of each repetition were identified and received the eye-drop vaccine against coccidiosis. At 7, 21, 35 and 42 days it was collected blood to analyze the total serum proteins and the eletrophoretic profile of IgA and IgG and a duodenal segment for morphometric analysis. Neither the beer yeast nor the organic minerals supplementation affected the broiler performance or the antibodies production. The immunological challenge like the coccidiosis vaccine was not efficacious enough to provide an immune response able to modify the duodenal mucosa morphometry and the antibodies production.

RÉSUMÉ

The objective of this study was to evaluate the effects of beer yeast and organic minerals supplementations on the performance, intestinal morphometry and humoral immune response of broilers that were challenged with coccidiosis vaccine. Three-hundred-eighty-four chicks were used, randomly distributed in an entirely random design total with four treatments (1. control, 2. organic minerals on top, 3. beer yeast, 4. association between organic minerals and beer yeast) and four treatments with 24-bird repetition each. At housing, 12 birds of each repetition were identified and received the eye-drop vaccine against coccidiosis. At 7, 21, 35 and 42 days it was collected blood to analyze the total serum proteins and the eletrophoretic profile of IgA and IgG and a duodenal segment for morphometric analysis. Neither the beer yeast nor the organic minerals supplementation affected the broiler performance or the antibodies production. The immunological challenge like the coccidiosis vaccine was not efficacious enough to provide an immune response able to modify the duodenal mucosa morphometry and the antibodies production.


O objetivo desta pesquisa foi avaliar o efeito da suplementação de levedura de cerveja e minerais orgânicos sobre o desempenho, morfometria intestinal e resposta imune humoral de frangos de corte, desafiados com a vacina de coccidiose. Foram utilizados 384 pintos de corte, distribuídos aleatoriamente em um delineamento inteiramente casualizado com quatro tratamentos (1. controle, 2. minerais orgânicos 3. levedo de cerveja, 4. associação de minerais orgânicos e levedo de cerveja) e 4 repetições de 24 aves cada. O trabalho objetivou conhecer os teores de Cu, Mo, Fe e Zn em soro e fígado de ovinos e caprinos criados na região semiárida do estado de Pernambuco e abatidos nas épocas da chuva e seca, e estabelecer se a carência de Cu é causada por deficiência primária de Cu ou secundária à ingestão de quantidades excessivas de Fe ou Mo. Amostras de soro e fígado de 141 ovinos e 141 caprinos foram submetidas à digestão úmida em ácido nítrico-perclórico e, posteriormente, analisados em espectrofotômetro de absorção atômica indutivamente acoplado (ICPOES). A concentração sérica de Cu em caprinos teve uma média de 9,85±2,71µmol/L e em caprinos de 11,37±2,57µmol/L, enquanto que a concentração hepática média foi de 158,45±83,05mg/kg para ovinos e 152,46±79,58mg/kg para caprinos. Os teores séricos de Fe foram de 35,58± 14,89µmol/L em ovinos e de 25,06±8,10µmol/L em caprinos e as concentrações no fígado foram de 156,10±55,99mg/ kg em ovinos e 210,53±121,99mg/kg em caprinos. As concentrações médias séricas de Mo foram de 0,28±0,11µmol/ L em caprinos e 0,31±0,16µmol/L em ovinos, enquanto que no fígado sua concentração foi de 6,53±4,13mg/kg e 8,10± 4,01mg/kg, respectivamente. A concentração sérica de Zn foi de 11,9±6,07µmol/L em ovinos e 11,79±7,42µmol/ L em caprinos e a concentração no fígado foi de 126,43 ±51,50mg/kg e 132,91±55,28mg/kg em ovinos e caprinos, respectivamente. Verificou-se variação na concentração destes minerais considerando os fatores de variação, como o período sazonal, espécie e sexo. The exotic flavor of Brazilian tropical fruits led to increased consumption. Consumers awareness regarding balanced diets, makes necessary determining nutritional composition - vitamins and minerals of the fruits ordinarily consumed. This study contributed to the evaluation of macro (K, Ca) and microelements (Mn, Fe, Cu, Zn and Br) in eight exotic Brazilian tropical fruits: "abiu" (Lucuma caimito Ruiz & Pav.), "jenipapo" (Genipa americana L.), "jambo rosa" (rose apple, Eugenia Jambos L.), "jambo vermelho" (Syzygium malaccence L., Merr & Perry), "macaúba" (Acrocomia aculeata Jacq. Lood. Ex Mart.), "mangaba" (Hancornia speciosa), "pitanga" (Brazilian Cherry, Eugenia uniflora L.), and tamarind (Tamarindus indica L.), using the Energy Dispersive X-Ray Fluorescence (EDXRF) technique. "jambo vermelho" and "macaúba" presented the highest values of K concentrations, 1,558 and 1,725 mg 100 g-1, respectively. On the other hand, Ca concentrations were highest in "macaúba" (680 mg 100 g-1) and "jenipapo" (341 mg 100 g-1). The microelemental concentrations in these eight fruits ranged from: 0.9 to 2.0 mg 100 g-1 for Mn, 3.9 to 11.4 mg 100 g-1 for Fe, 0.5 to 1.0 mg 100 g-1 for Cu, 0.6 to 1.5 mg 100 g-1 for, Zn and 0.3 to 1.3 mg 100 g-1 for Br. The amounts of macro and microelements in the eight fruits analyzed were compared to other tropical fruits and it was found that some of them could be classified as rich sources for these macro and microelements.


O sabor exótico dos frutos tropicais brasileiros vem contribuindo para o aumento de seu consumo. Ao se considerar a busca por uma alimentação balanceada, por consumidores cada vez mais exigentes, o conhecimento da composição de vitaminas e sais minerais dos frutos que compõe a dieta se faz necessário.
