BACKGROUND: The vegan diet (VEGD) has gained popularity in recent years for ecological and ethical reasons, as well as for its health benefits. In addition to the type of diet, the resistance training program (RTP) plays a fundamental role as one of the main natural anabolic stimuli to increase musculoskeletal mass and reduce fat mass. METHODS: The study was a 16-week non-randomized controlled clinical trial consisting of three RTP sessions per week. The sample included 70 Chilean individuals, aged between 18 and 59 years, who had been following a VEGD or omnivorous diet (OMND) for the past 6 months. Four groups were established: Vegan Diet Resistance Training Program (VEGD-RTP), Vegan Diet Control (VEGD-C), Omnivorous Diet Resistance Training Program (OMND-RTP), and Omnivorous Diet Control (OMND-C). RESULTS: The sample consisted of 47 women and 23 men, with a mean age of 30.1 (±8.6) years. A reduction of 1.20% in the percentage of fat mass (%FM) was observed in the VEGD-RTP group (r = 0.554, p = 0.016), as well as a reduction of 0.70 kg in kilograms of fat mass (KFM) (r = 0.480, p = 0.036). The OMND-RTP group decreased %FM by 0.90% (r = 0.210, p = 0.432) and KFM by 0.50 kg (r = 0.109, p = 0.683). CONCLUSIONS: RTP combined with VEGD or OMND significantly reduced the percentage of fat mass, although its effect was more significant in the VEGD-RTP participants.

Importance: Major concerns regarding individuals who adhere to a vegan diet are whether they meet protein and essential amino acid recommendations and how reliant they are on ultraprocessed foods. Objectives: To investigate whether individuals who adhere to a vegan diet meet protein and essential amino acid recommendations and, as secondary objectives, to determine ultraprocessed food intake and potential factors associated with inadequate protein intake in this population. Design, Setting, and Participants: This cross-sectional survey study was conducted between September 2021 and January 2023 in Brazil among male and female adults (aged 18 years or older) who adhered to a vegan diet recruited from social media platforms. Exposure: Adherence to a vegan diet and unprocessed and minimally processed foods and ultraprocessed food consumption. Main Outcomes and Measures: Protein and essential amino acid intake and food consumption by processing level were assessed using a 1-day food diary. Nutrient adequacy ratios were calculated by dividing nutrient intake by its recommendation (using scores truncated at 1) for each participant and then finding the mean across participants for each nutrient. The mean adequacy ratio was the mean of all nutrient adequacy ratios. Results: Of 1014 participants who completed the survey, 774 individuals (median [IQR] age, 29 [24-35] years; 637 female [82.3%]) were confirmed as adhering to a vegan diet and provided adequate food recalls, among whom 558 individuals reported body weight and so had relative protein and amino acid intake values available. The median (IQR) body mass index (calculated as weight in kilograms divided by height in meters squared) of participants was 22.6 (20.3-24.8). The nutrient adequacy ratio of protein was 0.93 (95% CI, 0.91-0.94); for essential amino acids, ratios ranged from 0.90 (95% CI, 0.89-0.92) for lysine to 0.98 (95% CI, 0.97-0.99) for phenylalanine and tyrosine. The mean adequacy ratio for protein and all amino acids was 0.95 (95% CI, 0.94-0.96). The median intake level was 66.5% (95% CI, 65.0%-67.9%) of total energy intake for unprocessed and minimally processed food and 13.2% (95% CI, 12.4%-14.4%) of total energy intake for ultraprocessed food. Adjusted logistic regression models showed that consuming protein supplements (odds ratio [OR], 0.06 [95% CI 0.02-0.14]; P < .001) or textured soy protein (OR, 0.32 [95% CI, 0.17-0.59]; P < .001) was associated with decreased odds of inadequate protein intake. Higher ultraprocessed food intake levels were also associated with decreased odds of inadequate protein intake (eg, fourth vs first quartile of intake: OR, 0.16 [95% CI, 0.07-0.33]; P < .001), and higher unprocessed and minimally processed protein intake levels were associated with increased odds of inadequate protein intake (eg, fourth vs first quartile of intake: OR, 12.42 [95% CI, 5.56-29.51]; P < .001). Conclusions and Relevance: In this study, most individuals who adhered to a vegan diet attained protein and essential amino acid intake recommendations, largely based their diet of unprocessed and minimally processed food, and had a significantly lower proportion of ultraprocessed food intake compared with previous reports. Participants consuming less ultraprocessed food were more likely to have inadequate protein intake, suggesting a significant reliance on ultraprocessed proteins for this population.

Type 2 Diabetes Mellitus (T2DM) is a chronic condition with growing worldwide prevalence. Besides genetic factors, a sedentary lifestyle, excess weight, and inadequate eating habits, characterized by an excess intake of refined carbohydrates and ultra-processed foods, are contributing factors for the development of the disease. In this scenario, promoting a plant-based diet, and limiting animal product consumption while increasing the intake of vegetables, concurrently with healthy lifestyle habits, is a promising strategy to prevent T2DM. This scoping review, carried out between 2017 and 2022, aimed to gather evidence substantiating the benefits of a plant-based diet in T2DM prevention, considering different eating patterns, such as vegetarian, vegan, Mediterranean, and DASH diets. Several studies demonstrate a significant reduction in T2DM incidence among individuals adopting plant-based eating patterns or emphasizing healthy plant-based food alongside decreased intake or exclusion of animal-based foods. There are still no robust data regarding plant-based diets and the prevention of diabetes without loss in body weight. Hence, prospective studies in plant-based diets with weight control are needed. Nevertheless, adopting plant-based diets appears to induce significant weight loss, which is crucial in an obesity-endemic context. Thus, embracing plant-based diets, along with healthy habits, emerges as a relevant strategy in obesity and T2DM prevention.

PURPOSE OF REVIEW: Bone fractures can have a devastating effect on health, especially in the elderly, undermining their independence for daily activities, and increasing the risk of comorbidities and mortality. Nutrition is a key factor in maintaining an optimal bone health across the lifespan. The number of people that choose to avoid meat or even all animal products is increasing globally, for a diversity of reasons. Properly planned vegetarian and vegan diets are widely recognized as a healthy dietary pattern, but the long-term impact of these diets on bone health and more specifically risk of bone fractures is less clear. Classic studies have observed a slightly lower bone mineral density in vegetarians but have many limitations, including inadequate adjusting for relevant confounding factors, and cross-sectional design. The aim of this review is to summarize and put into context the current evidence on the effect of vegetarian and vegan diets on bone health, with a focus on fracture risk. RECENT FINDINGS: In recent years, results from many large prospective studies have emerged, which allowed us to assess the risk of incident bone fractures in vegetarians. In these studies, vegetarian and especially vegan diets were associated with an increased risk of bone fractures. In many recent prospective cohort studies, vegetarian and especially vegan diets were associated with an increased risk of bone fractures. At least part of this risk could be due to a lower body mass index and a lower intake of nutrients such as calcium, vitamin D, and protein. Some evidence suggests that combined vitamin D and calcium supplementation and other factors such as consumption of protein-rich foods may attenuate this risk. The eventual deleterious effect of vegetarian diets on bone health should be contextualized and balanced with its benefits, such as lower risk of cardiovascular disease and cancer.

Introduction: Introduction: vegan diets are currently an essential topic of discussion because they are recognized as a prototype of a healthy diet but are also associated with deficits in the intake of critical nutrients such as protein. Evaluating the factors that influence the deficit in their intake in vulnerable populations such as university students represents an important topic of interest, considering that this is one of the groups where veganism is most popular. Given this, the present study aimed to determine the degree of protein sufficiency and its associated factors in a sample of Chilean vegan university students. Materials and methods: an exploratory cross-sectional study was conducted on 114 vegan university students who responded to an online survey on academic, attitudinal, clinical, dietary, and sociodemographic variables. Protein intake was calculated, and based on self-reported weight, daily protein adequacy was calculated according to the recommendation of 0.9 g/kg/day. Finally, the association between protein adequacy and previously consulted variables was calculated by determining the odds ratios. Results: only 53.5 % had adequate daily protein intake, which was associated with the length of time respondents had been vegan (OR, 2.86; 95 % CI, 1.07 to 7.34; p < 0.05), use of supplements (OR, 5.24; 95 % CI, 1.17 to 25.2; p < 0.05), and the frequency with which they ate lunch at home (OR, 87.7; 95 % CI, 24.1 to 304; p = 0.000). Conclusion: there needs to be more protein adequacy in the assessed sample. Protein adequacy is associated with the length of time on the vegan diet, frequency of eating lunch away from home, and use of supplements regularly.
Introducción: Introducción: en la actualidad, las dietas veganas representan una importante temática de discusión debido a que son reconocidas como prototipo de régimen saludable pero también se encuentran asociadas a déficits en la ingesta de nutrientes críticos como las proteínas. La evaluación de los factores que influyen en el déficit de su ingesta en poblaciones vulnerables como los estudiantes universitarios representa un importante tema de interés, considerando que es uno de los grupos donde mayor popularidad presenta el veganismo. Frente a esto, el presente estudio tuvo como objetivo determinar el grado de suficiencia proteica y los factores asociados a esta en una muestra de estudiantes universitarios veganos chilenos. Materiales y método: se realizó un estudio de alcance exploratorio de corte transversal en 114 estudiantes universitarios veganos que respondieron a una encuesta online sobre variables académicas, actitudinales, clínicas, dietarias y sociodemográficas. Se calculó la ingesta proteica y, en función del peso autorreportado, se calculó la adecuación proteica diaria de acuerdo con la recomendación de 0,9 g/kg/día. Finalmente se calculó la asociación entre la adecuación proteica y las variables anteriormente consultadas a partir de la determinación de los odds ratios. Resultados: solo un 53,5 % presentaron una ingesta diaria adecuada de proteínas, la cual se asocia al tiempo de antigüedad del veganismo de los encuestados (OR: 2,86; IC 95 %: 1,07 a 7,34; p < 0,05), la utilización de suplementos (OR: 5,24; II 95 %: 1,17 a 25,2; p < 0,05) y la frecuencia con la que almuerzan en el hogar (OR: 87,7; IC 95 %: 24,1 a 304; p = 0,000). Conclusión: existe una importante falta de adecuación proteica en la presente muestra evaluada. La adecuación proteica se asocia con la duración del régimen vegano, la frecuencia de almuerzos fuera de casa y la utilización de suplementos de forma regular.

En la actualidad cada vez más familias optan por seguir una alimentación basada en plantas (ABP). Es fundamental que pediatras y agentes de salud conozcan estos tipos de patrones alimentarios para asesorar adecuadamente a sus pacientes y derivarlos oportunamente a especialistas capacitados con el objetivo de garantizar un adecuado crecimiento y desarrollo principalmente en la edad pediátrica, evitando posibles consecuencias negativas sobre la salud. La mayoría de las sociedades científicas del mundo considera a las dietas vegetarianas apropiadas para todas las etapas de la vida si están correctamente planificadas, suplementadas y con un seguimiento adecuado por especialistas capacitados. Con respecto a las dietas veganas existen controversias por parte de las distintas sociedades con respecto a si son adecuadas o no en pediatría. Recientemente se han revisado las descripciones respecto a las tipificaciones de una ABP y se ha propuesto una definición estándar de estos tipos de dieta. Los riesgos más significativos asociados a la mala planificación de estas dietas son las deficiencias de calcio, vitamina D y vitamina B12, aunque también se debe tener en cuenta el estado del zinc, selenio, yodo y los ácidos grasos Omega 3. Es importante la planificación diaria de un plato nutricionalmente completo y es incuestionable que quienes siguen estos patrones alimentarios reciban suplementos con vitamina B12 adecuados para cada etapa de la vida. Se requieren más estudios en pediatría para evaluar los efectos de las distintas ABP sobre la ingesta de nutrientes, el estado nutricional, el crecimiento, desarrollo y la prevención de enfermedades no transmisibles (AU)
Currently, an increasing number of families are choosing to follow a plant-based diet (PBD). It is essential that pediatricians and healthcare agents know these types of dietary patterns in order to properly advise their patients and refer them to trained specialists to ensure adequate growth and development, especially in the pediatric age, avoiding possible negative health consequences. Most of the world's scientific societies consider vegetarian diets appropriate for all stages of life if they are adequately planned, supplemented and monitored by trained specialists. However, there is controversy among different societies regarding the appropriateness of vegan diets for children. Recently, there has been a review of descriptions concerning the characteristics of a plant-based diet, leading to a proposed standard definition for these types of diets. The most significant risks associated with poorly planned diets are calcium, vitamin D, and vitamin B12 deficiencies, although zinc, selenium, iodine and omega-3 fatty acid status should also be considered. The daily planning of a nutritionally complete meal is important and it is imperative that those who follow these dietary patterns receive vitamin B12 supplementation appropriate for each stage of life. Further studies in children are needed to evaluate the effects of different PBDs on nutrient intake, nutritional status, growth, development, and prevention of noncommunicable diseases (AU)

The article "Comparing Tattoo Removal Responses in Vegan and Omnivore Patients" by Fusano et al. investigates the clinical outcomes of Q-switched laser tattoo removal in vegans and omnivores. The study reveals that vegans required more laser sessions, exhibited poorer clinical responses, and experienced extended healing periods compared to omnivores. When well-planned vegetarian diets offer numerous health benefits. Unfortunately, the study does not assess the diets of the groups, nor does it address factors like hydration levels and prior skincare regimens, limiting the interpretation of results.

El calcio es uno de los nutrientes esenciales para la salud ósea. Objetivos: evaluar la ingesta de calcio en un grupo de mujeres pre-menopáusicas consumidoras de alimentación basada en plantas (ABP). Materiales y métodos: un grupo de mujeres premenopáusicas entre 30 y 45 años consumidoras de ABP fueron invitadas a participar. Para la evaluación de ingesta se empleó un recordatorio alimentario de 24 horas. Se utilizó la Encuesta Nacional de Nutrición y Salud (ENNyS, 2007) como información relevada disponible de ingesta de calcio en nuestra población. En un subgrupo de participantes se evaluó la densidad mineral ósea (DMO) de columna lumbar (L1-L4) por el método de absorciometría de rayos X (DXA), mientras que la microarquitectura fue estudiada a través del trabecular bone score (TBS). Resultados: se incluyeron 30 mujeres con un tiempo de adherencia promedio (X±DS) a la ABP 5,6±4 años, edad de 35,6±4 años, y un índice de masa corporal (IMC) de 23.,7±3 kg/m2. Una ingesta diaria de calcio promedio (IC al 95%) de 980 mg (639 mg-1320 mg) fue observada en las mujeres vegetarianas, mientras que en las veganas fue de 772 mg (460 mg-1085 mg), lo que resulta superior a la de la población general (406 mg). Una correlación positiva fue observada entre DMO e IMC (r=0,990; p=0,01) pero no entre DMO e ingesta de calcio. Conclusiones: en esta cohorte de mujeres premenopáusicas consumidoras de ABP, las vegetarianas y el 96,5% de las veganas cubrieron el requerimiento promedio estimado. La adecuada planificación de la ABP permite evitar deficiencias nutricionales que afecten la salud ósea. (AU)
Calcium is one of the essential nutrients intervening in bone health. Objective: To assess calcium intake in a group of premenopausal women consumers of a plant-based diet (PBD). Materials and methods: Premenopausal women between 30 and 45 y/o consumers of a PBD were invited to participate. A 24-hour food reminder was provided for the intake evaluation. Argentina's National Nutrition and Health Survey (ENNyS, 2007) was used as available information on calcium intake in our population. In a participants' subset, the bone mineral density (BMD) of the lumbar spine (L1-L4) was evaluated by dual-energy X-ray absorptiometry (DXA), while the trabecular bone score (TBS) was used to study the microarchitecture. Results: The study included 30 women with an average adherence time (X±DS) to PBD of 5.6±4 years, of 35.6±4 years and a body mass index (BMI) of 23.7±3kg/m2. An average daily calcium intake (95% CI) of 980mg (639 mg-1.320mg) was observed in vegetarian women, while in vegan women it was 772 mg (460mg-1.085mg), higher than the general population (406 mg). A positive correlation was observed between BMD and BMI (r=0.990; p=0.01), though not between BMD and calcium intake. Conclusions: In this cohort of premenopausal women consuming a PBD, the vegetarians and 96.5% of vegans met the estimated average requirement. An appropriate planning of the PBD prevents nutritional deficiencies that may affect bone health. (AU)

INTRODUCTION: There is a growing interest in vegetarian and vegan diets, but both can potentially affect tissue fatty acids (FA) composition. We aimed to evaluate the effect of vegetarian diets on plasma, erythrocytes, and sperm n-3 polyunsaturated fatty acids (n-3 PUFA) status in healthy young men. METHODS: Four groups were studied: i) men consuming a regular omnivore diet (OMV-1, n = 35); ii) men consuming an omnivore diet but excluding fish and seafood (OMV-2, n = 34); iii) men consuming a pescetarian diet (including dairy, eggs, fish, and seafood) (PESC, n = 36); and iv) men following a strict vegan diet (VEG, n = 35). Participants in each group should follow their diet for at least the previous 12 months. Diet evaluation used a structured validated food frequency questionnaire. FA composition was measured in plasma, erythrocyte phospho-lipids, and spermatozoa by gas-liquid chromatography, expressed as a mole percentage of the total FA content. RESULTS: Main findings showed higher alpha-linolenic fatty acid (ALA) and total n-3 PUFA dietary intake in the VEG group. In plasma, arachidonic and eicosapentaenoic acids were higher in OMV and PESC groups, whereas docosahexaenoic acid (DHA) level was lower in VEG. Higher ALA, but reduced DHA and total n-3 PUFA levels were found in erythrocytes and spermatozoa in the VEG group. CONCLUSION: Higher dietary ALA intake was found in pescetarians and vegan men. However, the higher ALA intake was not reflected in higher DHA content in the evaluated tissues. PUFA assessment, with particular emphasis in DHA, are necessary to improve PUFA status in vegan men.

Resumen Introducción: a nivel global, se ha ido incrementando progresivamente la cantidad de personas que adhieren a distintas variantes de dietas vegetarianas. Ello supone, entre otros desafíos, contar con profesionales de la salud y de la nutrición que puedan responder a las necesidades y demandas particulares de estos grupos. Objetivo: indagar conocimientos y actitudes de licenciadas y licenciados en Nutrición de Argentina sobre alimentación ovo-lacto-vegetariana y vegana. Materiales y método: para este estudio observacional, exploratorio y transversal, se diseñó un cuestionario orientado a evaluar conocimientos y actitudes sobre alimentación veg(etari)ana. El muestreo fue no probabilístico, de tipo intencional, convocándose a profesionales de la nutrición residentes en Argentina. Para el análisis de datos se utilizó el programa estadístico SPSS 29.0.0.0. Resultados: la muestra constó de 318 profesionales. Los mayores niveles de información acerca de temas clave de la alimentación y nutrición veg(etari)ana, así como las actitudes orientadas al interés por el impacto de la dieta en el medioambiente y/o en el bienestar animal, se asociaron significativamente con la pertenencia al intervalo de menor edad, menor cantidad de años transcurridos desde el egreso de la carrera de grado y la adherencia propia a dietas ovo-lacto-vegetarianas y veganas. La gran mayoría de los y las profesionales manifestó aceptación y comprensión hacia las elecciones de los/as pacientes veg(etari)anos/as. Conclusiones: los conocimientos y actitudes observados estarían más relacionados con circunstancias generacionales y elecciones personales que con la formación académica. Resulta necesario incluir sistemáticamente en las carreras de grado contenidos de alimentación y nutrición veg(etari)ana con un abordaje integral, contemplando aspectos nutricionales, ambientales y socioculturales.
Abstract Introduction: globally, the number of people who adhere to different variants of vegetarian diets has been progressively increasing. This involves, among other challenges, having health and nutrition professionals who can respond to the particular needs and demands of these groups. Objective: to search knowledge and attitudes of graduates in Nutrition of Argentina on ovo-lacto-vegetarian and vegan diets. Materials and method: for this observational, exploratory and cross-sectional study, a questionnaire was designed to assess knowledge and attitudes about veg(etari)an diets. The sampling was non-probabilistic, intentional, summoning nutrition professionals residing in Argentina. The statistical program SPSS 29.0.0.0 was used for data analysis. Results: the sample consisted of 318 professionals. Higher levels of information about key issues of veg(etari)an food and nutrition, as well as attitudes oriented to interest in the impact of diet on the environment and / or animal welfare, were significantly associated with belonging to the youngest age range, fewer years elapsed since graduation from the undergraduate career and adherence to ovo-lacto-vegetarian and vegan diets. The vast majority of professionals expressed acceptance and understanding towards the choices of vegan patients. Conclusions: the knowledge and attitudes observed would be more related to generational circumstances and personal choices than to academic training. It is necessary to systematically include in the undergraduate courses contents of veg(etari)an food and nutrition with a comprehensive approach, contemplating nutritional, environmental and sociocultural aspects.

Resumen Introducción: la alimentación es uno de los factores modificables más importantes que participa en la salud ósea. Contribuye a ésta, una adecuada ingesta de calcio, vitamina D y proteínas, como así también otros nutrientes. A la alimentación basada en plantas (ABP) se le ha atribuido importantes beneficios para la salud en general, pero mal planificada podría tener efectos deletéreos sobre la salud ósea. Materiales y método: revisión narrativa con búsqueda en el sistema digital de recopilación de información biomédica PubMed cuyo objetivo fue analizar la evidencia científica disponible en la actualidad sobre el efecto de la ABP sobre la salud ósea. Resultados: dentro de los patrones de consumo de la ABP, los veganos que exhiben un consumo de calcio inferior a 525 mg/día presentan mayor riesgo de fractura por fragilidad ósea [incidencia de fractura: 1.37 (IC95%: 1,07; 1,74)]. En cambio, el papel de la hiperhomocisteinemia (HHcy) secundaria al déficit de vitamina B12 y riesgo de fractura continúa siendo controvertido en esta población. Si bien, in vitro la HHcy puede incrementar la actividad de los osteoclastos, en estudios clínicos no se observaron diferencias estadísticamente significativas en los niveles de crosslaps sérico (marcador de resorción ósea) en los consumidores de ABP (vegetarianos) comparados con los omnívoros. Conclusión: una ABP bien planificada, óptima y adecuada, que cubra los requerimientos diarios de calcio, vitamina D, vitamina B12 y proteínas aportará importantes beneficios para la salud general sin afectar la salud ósea en particular, aunque se requiere de futuros estudios para una mejor comprensión de su efecto sobre aspectos específicos del sistema musculo esquelético.
Abstract Introduction: diet is one of the most significant and modifiable factors involved in bone health, as an appropriate intake of calcium, vitamin D and proteins, as well as other nutrients, contributes to this. Significant overall health benefits have been attributed to plant-based diets (PBD); however, poorly planned PBD could have detrimental effects on bone health. Materials and Method: a narrative review through a search in the digital biomedical data collection system PubMed whose objective was to analyze currently available scientific evidence about the effects of PBD on bone health. Results: within the PBD intake patterns, vegans exhibiting calcium intakes below 525mg/day are at a higher risk of fracture due to bone fragility [incidence of fracture: 1.37 (95% CI: 1.07; 1.74)]. In contrast, the role of hyperhomocysteinemia (HHcy) secondary to vitamin B12 deficiency and fracture risk remains controversial in this population. While in vitro HHcy osteoclast activity may increase, in clinical studies no statistically significant differences in serum crosslaps levels (bone resorption marker) were observed in PBD consumers (vegetarians) when compared to omnivores. Conclusion: a well-planned, optimal and adequate PBD, covering daily calcium, vitamin D, vitamin B12 and proteins requirements, will provide significant benefits to the overall health condition without affecting bone health in particular, although future studies are required in order to better understand its effects on specific aspects of the musculoskeletal system.

Importance: It remains controversial whether adhering to a vegan diet may be associated with a higher prevalence of disordered eating. Also, main food choice motives and their association with disordered eating in this population are still unknown. Objective: To determine the association between disordered eating attitudes and food choice motives of individuals who follow a vegan diet. Design, Setting, and Participants: This is a cross-sectional online survey conducted between September 2021 and January 2023. Individuals of both sexes, aged 18 years or older, following a vegan diet for at least 6 months, currently living in Brazil were recruited through advertisements on social media. Exposure: Adherence to a vegan diet and food choice motives. Main Outcomes and Measures: Disordered eating attitudes and food choice motives. Results: Nine hundred seventy-one participants completed the online survey. Median (IQR) age and BMI of participants was 29 (24-36) years and 22.6 (20.3-24.9), respectively, and 800 participants (82.4%) were female. Most participants (908 respondents [94%]) were categorized with the lowest level of disturbed eating attitudes. "Need and hunger," "liking," "health," "habits," and "natural concerns" were the most important food choice motives in this population, while "affect regulation," "social norms," and "social image" were the less important ones. Adjusted models showed that "liking," "need and hunger," and "health" were associated with lower levels of disordered eating attitudes, while "price," "pleasure," "sociability," "traditional eating," "visual appeal," "social norms," "social image," "weight control," and "affect regulation" were associated with higher levels of disordered eating attitudes. Conclusions and Relevance: In this cross-sectional study, as opposed to previous suggestions, levels of disordered eating were very low among vegans, although certain food choice motives were associated with disordered eating attitudes. Understanding the motivations of adhering to diets that may impose restrictions, which include vegan diets, may help tailor interventions focused on promoting healthy eating and preventing or treating disordered eating.

Dietary acid load (DAL) is an important determinant of the acid-base balance in humans and has been associated with several chronic non-communicable diseases. Plant-based diets, including vegetarian and vegan diets, decrease DAL-although their alkalizing potential varies substantially. Their net effect on common DAL scores, including potential renal acid load and net endogenous acid production, has been insufficiently quantified and is poorly understood-particularly in populations outside of Europe and North America. We assessed the associations between three plant-based dietary patterns (flexitarian vs. lacto-ovo-vegetarian vs. vegan diet) and DAL scores in a healthy Venezuelan population in the metropolitan area of Puerto La Cruz, Venezuela. Substantial differences in DAL scores were observed, whereby the vegan diet yielded the highest alkalizing potential, followed by the lacto-ovo-vegetarian and the flexitarian diet. DAL scores were substantially lower in comparison to European and North American plant-based populations, probably due to the higher potassium intake (exceeding 4000 mg/d in vegans), the higher magnesium intake (390.31 ± 1.79 mg/d in vegans) and the lower intake of protein in vegans and lacto-ovo-vegetarians. Additional studies in other non-industrialized populations are warranted to allow for a better understanding of the (numeric) impact of plant-based dietary patterns on DAL scores, potentially allowing for an establishment of reference ranges in the near future.

No Brasil e no mundo é comum a oferta de produtos veganos com características complementares, seja para atender o público interessado em produtos naturais, sem aditivos e/ou orgânicos; ou por questões religiosas. A utilização da pupunha como base para a elaboração de hambúrgueres, com a substituição da farinha de trigo pela farinha de linhaça, mostrou um elevado potencial alimentício e socioeconômico de caráter regional. Diante isso, objetivou-se elaborar duas formulações de hambúrguer vegano de pupunha (f1 e f2) e realizar análises microbiológicas, físico-químicas e sensoriais, bem como avaliar o rendimento e o custo. As formulações apresentaram, nas análises físico-químicas, teores inferiores de proteínas (6,3 e 4,5% para f1 e f2, respectivamente) quando comparados com outros hambúrgueres de origem animal. Além disso, as formulações f1 e f2 apresentaram os seguintes teores, respectivamente: 58,6 e 58,5% para umidade, 13,4 e 11,5% para lipídios, 1,8 e 2,8% para cinzas, 18,6 e 21,8% para carboidratos e valor energético de 231,6 e 214,6 kcal. A análise sensorial demonstrou que a utilização de farinhas diferentes não interfere nas escolhas futuras dos consumidores. As formulações não apresentaram contaminação microbiológica, sendo ausente para salmonella (aus/25g), aeróbios mesófilos/g e escherichia coli/g, onde foram encontrados valores abaixo dos permitidos pela legislação. O estudo demonstrou um potencial produto alimentício para a indústria alimentícia, apresentando pouca perda de rendimento após cocção e oferecendo, também, uma opção mercadológica de baixo custo para três nichos: veganismo, doentes celíacos e produtos regionais.
In Brazil and in the world, it is common to offer vegan products with complementary characteristics, either to serve the public interested in natural products, without additives and/or organics, or for religious reasons. The use of peach palm as a basis for the elaboration of a hamburgers with the substitution of wheat flour for flaxseed flour showed a high food and socioeconomic potential with regional character. Thus, this study aimed to elaborate two formulations of pupunha vegan hamburger (f1 and f2) and perform microbiological, physical-chemical, and sensorial analyzes, as well as evaluate the yield and cost. The products showed, in the physical-chemical analyzes, lower protein contents (6.3 and 4.5% for f1 and f2, respectively) when compared to other hamburgers of animal origin. In addition, the formulations f1 and f2 presented the following levels, respectively: 58.6 and 58.5% for moisture, 13.4 and 11.5 for lipids 1.8 and 2.8 for ash,18.6 and 21.8% for carbohydrates, and energetic value of (231.6 and 214.6 Kcal. Sensory analysis showed that the use of different flours does not interfere with future consumer choices. The formulations showed no microbiological contamination, being absent of Salmonella (aus/25g), mesophilic Aerobes/g, and Escherichia coli/g, with values below those allowed by legislation. It demonstrated a potential food product for the food industry, presenting little loss of income after cooking, and also offering a low-cost marketing option for three niches: veganism, celiac patients, and regional products.

PURPOSE: This paper aims to present an overview of the definitions of "plant-based and "vegetarian diets" adopted by different organizations worldwide, proposing new standard definitions and discussing the notion of vegetarianism as a restrictive dietary pattern. METHODS: An extensive literature review on the different definitions of vegetarian and plant-based diets was conducted. Definitions of different international vegetarian and vegan organizations were also taken into account. Objective definitions for vegetarian and plant-based diets, as well as for their subcategories, were proposed. Other aspects related to how vegetarian diets are viewed and defined were also discussed. RESULTS: We proposed that a vegetarian diet should be defined as "a dietary pattern that excludes meat, meat-derived foods, and, to different extents, other animal products". This definition would include, among others, ovolactovegetarian and vegan diets. The proposed definition for a plant-based diet was "a dietary pattern in which foods of animal origin are totally or mostly excluded". Other types of diets, such as flexitarian and pescetarian diets, could be considered plant-based. A vegetarian diet should not be considered restrictive. Instead, terms such as alternative or non-conventional could be used to define it and to distinguish it from the conventional diet adopted by most of the Western population. CONCLUSION: This paper was able to elaborate objective definitions of vegetarian and plant-based diets. Standardizing nomenclatures may reduce misinterpretation and confusion in this field of study.

ABSTRACT Objective To determine the dietary and sociodemographic profile of vegetarian women of childbearing age (18 and 49 years) from the Valle de Aburrá Metropolitan Area in 2021-2022 Methods Through an online survey, 232 vegetarian and vegan women of childbearing age (18 to 49 years) from the Valle de Aburrá Metropolitan Area were surveyed regarding their sociodemographic characteristics, amount of time following this eating pattern and, type and reason for choosing vegetarianism, physical activity, use of nutritional supplements and frequency of consumption of certain food groups. Descriptive analyses, association of variables with the type of vegetarianism and multinomial regression models were performed. Results A total of 232 vegetarian women were surveyed: 60.8% were between 18 and 30 years of age and belonged mainly to the middle class. According to the type of diet, 68.1% used an ovo-lacto-vegetarian diet, 18.1% were vegan, 9.0% lacto-vegetarian and 4.8% ovo-vegetarian. Among the factors evaluated in their potential relationship with the different types of vegetarianism, it is highlighted that vitamin B12 supplementation presents a statistically significant association when using veganism as a comparison category. Conclusion According to the results, among young female adults the vegetarian eating style predominates, without significant differences as to the educational level, adequate levels of physical activity in most of the population; there was a higher prevalence of ovo-lacto-vegetarianism. Vitamin B12 supplementation was significantly higher in the vegan population, indicating that ovo-lacto and ovo-vegetarian populations may be at high risk of vitamin B12 deficiency.
RESUMO Objetivo O estudo objetivou determinar a associação entre o perfil sociodemográfico e alimentar de mulheres vegetarianas em idade fértil (18 a 49 anos) na região metropolitana de Valle de Aburrá (Colômbia) em 2021-2022. Métodos Por meio de um questionário online, 232 mulheres vegetarianas e veganas em idade fértil (18 a 49 anos) pertencentes à região metropolitana de Valle de Aburrá foram entrevistadas sobre suas características sociodemográficas, tempo, tipo e motivo da escolha do vegetarianismo, atividade física, consumo de suplementos nutricionais e frequência de consumo dos grupos dos alimentos. Foi realizada análise descritiva, associação das variáveis com o tipo de vegetarianismo e modelos de regressão multinomial. Resultados Foram entrevistadas 232 mulheres vegetarianas: 60,8% tinham entre 18 e 30 anos e pertencem principalmente à classe social média. De acordo com o tipo de dieta, 68,1% tinham uma dieta ovolactovegetariana; 18,1%, vegana; 9%, lactovegetariana; e 4,8%, ovovegetariana. Entre os fatores avaliados em sua possível relação com os diferentes tipos de vegetarianismo, destaca-se que a suplementação de vitamina B12 apresenta associação estatisticamente significativa ao ter o veganismo como categoria de comparação. Conclusão De acordo com os resultados, entre mulheres adultas jovens, predomina o estilo alimentar vegetariano, sem diferença significativa observada no nível de escolaridade e níveis adequados de atividade física na maioria da população; há também maior prevalência de ovolactovegetarianismo. A suplementação de vitamina B12 é significativamente maior na população vegana, indicando um alto risco de deficiência nas populações ovolacto e ovovegetarianas.

The justification for this review article is to understand the position of vegans and those individuals who consume food of animal origin from an unbiased perspective but with a grounding in scientific evidence. This will provide people who eat meat with scientific and ethical arguments to defend their alimentary autonomy in the context of the moral conflict that has emerged in societies regarding the consumption of meat and animal products, which is criticized sometimes even attacked by activists, ovolactovegetarians, or vegetarians with alimentary habits that stress ethical and moral respect for animals. These individuals refuse to eat meat and animal products but sometimes show disrespect for those who do. In recent decades, veganism and vegetarianism have reached an apogee in some western societies where they are often considered a healthy option for humans that simultaneously fosters animal and environmental welfare. While those diets may provide numerous benefits, they can also entail health risks by failing to provide balance and necessary dietary supplements. Various researchers concur that they are not appropriate for pregnant women, children, or carnivorous or omnivorous pets. Our review of scientific articles in favor and against dietary regimens that lack protein of animal origin leads to the conclusion that these dietary changes, on their own, do not reduce animal suffering or the contamination generated by the meat, dairy, and poultry industries. Finally, it is important to consider that, despite the popular opinion that vegetarianism and veganism are healthy diet alternatives, the diet must be individualized and well-balanced according to each stage of their life cycle.

Proteins are essential components in human nutrition, and animal products are usually the primary sources of human ingestion. However, the number of adherents to vegetarian and vegan diets has grown significantly, highlighting the need for alternatives to replace animal proteins. Meat substitutes aim to mimic the nutritional value and sensory characteristics of meat. However, studies suggest differences in their composition. This study is the first to evaluate Brazilian meat substitutes' nutritional quality and ingredients. A quantitative cross-sectional survey was performed in three steps: (i) Sample mapping of products commercialized nationwide; (ii) Ingredients and nutritional data collection and classification; (iii) Statistical analysis. One hundred twenty-five meat substitutes were included and described. The primary protein sources were soy, gluten, and pea protein ingredients. Vegan meat substitutes presented similar energy and protein values, with few exceptions among samples, with vegan canned fish alternatives presenting less protein than their counterparts. Overall vegan products did not differ regarding sodium levels but showed high amounts to compose a lunch or dinner meal. Vegan meat substitutes showed higher carbohydrates, dietary fiber concentrations, and few differences regarding total and saturated fat. Vegan meat substitutes may contribute to the adherence and maintenance of vegan and vegetarian diets. However, future studies about the implemented ingredients are needed.

Introduction: Introduction: vegan diets exclude the consumption of animal-derived products, and health advantages have been reported when followed. However, heterogeneous eating habits, food availability, and sociocultural characteristics among regions could lead to different physiological results. Case reports: twelve patients following a strict vegan diet for an uninterrupted period of ≥ 3 years were subjected to clinical assessment. Patients significantly exceeded the suggested intake for sugar, presented six mineral deficiencies, and exhibited three vitamins below the recommended consumption. We further identified hyperglycemia, hypertriglyceridemia, subnormal serum vitamin B12 concentrations, as well as macrocytosis and microcytic anemia in several participants. Discussion: this Mexican vegan diet is strongly influenced by endemic and cultural adaptations that could limit the benefits reported in other populations. Professional guidance is required to avoid specific deficiencies with potential repercussions. We urge country-specific vegan guidelines considering local eating habits, food availability, and sociocultural perspectives around food.
Introducción: Introducción: la dieta vegana excluye el consumo de productos de origen animal y se ha vinculado con una disminución del riesgo de morbimortalidad. Sin embargo, los distintos hábitos alimentarios entre países podrían condicionar los beneficios reportados para las dietas basadas en vegetales. Casos clínicos: doce pacientes siguiendo una estricta dieta vegana por ≥ 3 años se sometieron a una evaluación clínica. Exhibieron una ingestión de azúcar que supera el consumo sugerido, presentaron tres deficiencias vitamínicas y seis de minerales. Se identificó la presencia de hiperglucemia, hipertrigliceridemia, concentraciones séricas subnormales de vitamina B12, macrocitosis y anemia microcítica en varios participantes. Discusión: la dieta vegana de este grupo resultó fuertemente influenciada por adaptaciones culturales que podrían limitar los beneficios reportados en otras poblaciones. Se requiere orientación profesional para evitar desequilibrios nutricionales. Enfatizamos la necesidad del desarrollo de guías alimentarias y de práctica clínica que consideren los hábitos alimentarios locales, la disponibilidad de alimentos en la región y las perspectivas socioculturales en torno a la dieta vegana.

OBJECTIVE: The impact of a vegan diet on sprint interval exercise performance is unknown. Thus, the purpose of the present study was to compare performance during a sprint interval exercise between omnivores and vegans. METHODS: Nine healthy omnivores (4 men and 5 women) and nine healthy vegans (4 men and 5 women), with similar levels of daily physical activity, performed four bouts (5-min rest between bouts) of a 30-s all-out sprint exercise on a cycle ergometer. Peak power, mean power, fatigue index, and time to reach maximal power output in each bout were recorded. RESULTS: There was a higher peak power in bouts 1 and 2 compared with bouts 3 and 4 (p < 0.02), and a higher mean power in bout 1 compared with bouts 2, 3 and 4 (p < 0.02). However, for all bouts, there were no significant difference between omnivores and vegans in peak power (7.60 ± 1.55 vs. 8.16 ± 1.27, 7.52 ± 1.6 vs 7.61 ± 0.73, 7.00 ± 1.44 vs. 7.00 ± 1.05 and 6.95 ± 1.42 vs. 6.49 ± 0.90 W.kg-1, all p > 0.05) and in mean power (5.35 ± 0.93 vs. 5.69 ± 0.84, 5.10 ± 0.88 vs. 5.21 ± 0.49, 4.79 ± 0.81 vs. 4.79 ± 0.45 and 4.81 ± 0.81 vs. 4.69 ± 0.47 W.kg-1, all p > 0.05). Fatigue index and time to reach maximal power output were not affected by diet or bouts (all p > 0.05). CONCLUSIONS: These findings indicate that a vegan diet does not compromise sprint interval exercise performance.
