The increasing and diversified use of rare earth elements (REE) is considered a potential source of pollution of environmental media including soils. This work documents critically overview data on the occurrence of REE in the fruiting bodies of wild and farmed species of edible and medicinal mushrooms, as this was identified as the largest published dataset of REE occurrence in foodstuff. Most of the literature reported occurrences of cerium (Ce) and lanthanum (La), but a number of studies lacked data on all lanthanides. The Ce, La, and summed REE occurrences were assessed through the criteria of environmental geochemistry, analytical chemistry, food toxicology, mushroom systematics, and ecology. Ce and La accumulate similarly in fruiting bodies and are not fractionated during uptake, maintaining the occurrence patterns of their growing substrates. Similarly, there is no credible evidence of variable REE uptake because the evaluated species data show natural, unfractionated patterns in accordance with the Oddo-Harkins' order of environmental lanthanide occurrence. Thus, lithosphere occurrence patterns of Ce and La as the first and the third most abundant lanthanides are reflected in wild and farmed mushrooms regardless of substrate and show that Ce is around twice more abundant than La. The current state of knowledge provides no evidence that mushroom consumption at these REE occurrence levels poses a health risk either by themselves or when included with other dietary exposure. Macromycetes appear to bio-exclude lanthanides because independently reported bioconcentration factors for different species and collection sites, typically range from < 1 to 0.001. This is reflected in fruiting body concentrations which are four to two orders of magnitude lower than growing substrates. KEY POINTS: •Original REE occurrence patterns in soils/substrates are reflected in mushrooms •No evidence for the fractionation of REE during uptake by fungi •Mushrooms bio-exclude REE in fruiting bodies.

AIM: In order to avoid side effects of lithium doses in some patients, some commonly cultivated mushroom species including A. bisporus have been successfully lithiated, with the potential to provide more acceptable sources of Li. This study assessed the in vitro release (potential bioaccessibility) and possible intake of Li using the action of artificial gastrointestinal juices on lithiated and nonlithiated (control) button mushrooms (Agaricus bisporus) that were subjected to certain modes of culinary processing. METHODS: In the in vitro release study, mushrooms were processed using a number of routinely used domestic treatments including rehydrating dried mushrooms, blanching and blanching followed by pickling of fresh or frozen mushrooms. The in vitro digestion procedure used artificial gastrointestinal juices in a two-stage methodology that was adapted from 'The Bioaccessibility Research Group of Europe' method. The Li concentrations were determined using an inductively coupled argon plasma-dynamic reactive cell-mass spectrometer. RESULTS: Lithium was found to be more bioaccessible from caps of lithiated mushrooms compared with nonlithiated. Releases from the caps and stipes of blanched or blanched and then pickled mushrooms through gastric digestion ranged from 32 ± 2 to 50 ± 1% relative to the dried product and was lower for gastrointestinal digestion, which ranged from 16 ± 1 to 20 ± 1%. CONCLUSION: Losses of Li sustained through blanching or blanching followed by pickling of fresh mushrooms (41-87% wet weight) combined with limited accessibility during gastrointestinal release (16-55%) result in much lower bioavailability of the dose from lithiated products. A 300-g meal would provide <5% of the Li (6 mg) required for potential preventative treatments, such as reducing suicide rates and lowering dementia risk.

Scandium (Sc) and Yttrium (Y) along with the other rare earth elements (REE) are being increasingly extracted to meet the escalating demand for their use in modern high technology applications. Concern has been voiced that releases from this escalating usage may pollute environments, including the habitats of wild species of mushrooms, many of which are foraged and prized as foods. This review collates the scarce information on occurrence of these elements in wild mushrooms and also reviews soil substrate levels, including forested habitats. Sc and Y occurred at lower levels in mushrooms (<1.0-1000 µg kg-1 dw for Sc and<1.8-1500 µg kg-1 dw for Y) compared to the corresponding range for the sum of the lanthanides in the same species (16-8400 µg kg-1 dw). The reported species showed considerably more variation in Y contents than Sc which show a narrow median distribution range (20-40 µg kg-1 dw). Data allowing temporal examination was very limited but showed no increasing trend between the 1970s to 2019, nor were any geographical influences apparent. The study of the essentiality, toxicity or other effects of REE including Sc and Y at levels of current dietary intake are as yet undefined. High intake scenarios using the highest median concentrations of Sc and Y, resulted in daily intakes of 1.2 and 3.3 µg respectively from 300 g portions of mushroom meals. These could be considered as low unless future toxicological insights make these intake levels relevant.

This study investigated the lithiation of white Agaricus bisporus (common button) mushrooms using compost fortified with LiOH solutions at concentrations from 1 to 500 mg kg-1 compost dw. Apart from the highest level of fortification, the median Li concentrations in the cultivated mushrooms were elevated from 0.74 to 21 mg kg-1 dw (corresponding to compost fortification from 1.0 to 100 mg LiOH, kg-1 dw), relative to control mushrooms at 0.031 mg kg-1 dw. The bio-concentration potential for Li uptake in fruiting bodies was found to decrease at higher levels of fortification e.g. 50 - 100 mg kg-1 dw, and at the highest level - 500 mg kg-1, the mycelium failed to produce mushrooms. The fortification of the compost with LiOH appears to have had little, if any, effect on the co-accumulation of other elements such as Ag, Al, As, Ba, Cd, Co, Cr, Cs, Cu, Hg, Mn, Ni, Pb, Rb, Sr, Tl, U, V and Zn in the fruiting bodies, which generally occurred at the lower range of the results reported in the literature for cultivated A. bisporus. Thus compost fortification with LiOH provides an effective means of lithiating A. bisporus for potential pro-therapeutic use.

INTRODUCTION: The objective of this study was to study associations of a wide range of halogenated biphenyls, dibenzo-p-dioxins, dibenzofurans and diphenylethers with body mass index (BMI) and evaluate changes in their concentration following bariatric surgery. METHODS: Subcutaneous fat, visceral fat and liver tissue samples were collected from 106 patients undergoing Roux-en-Y gastric bypass surgery for weight loss or patients who were undergoing abdominal surgery for nonbariatric reasons. We measured concentrations of an extensive panel of chlorinated and brominated biphenyls, dioxins, and furans, and brominated diphenylethers in the samples. We conducted linear regression to examine associations with BMI, adjusting for age and gender. Changes in concentration for indicator chemicals were evaluated in samples collected following bariatric surgery in a small subpopulation. RESULTS: After adjustments for age and gender and correction for multiple testing, seven ortho-chlorinated biphenyls, one nonortho-chlorinated biphenyl, four PCDD/Fs and one ortho-brominated biphenyl were associated with BMI. The strongest associations between BMI and lipid-adjusted concentrations were seen with PCB-105 in subcutaneous fat (beta = 16.838 P-val = 1.45E-06) PCB-126 in visceral fat (beta = 15.067 P-val = 7.72E-06) and PCB-118 (beta = 14.101 P-val = 2.66E-05) in liver. The concentrations of sum PCBs, chlorinated toxic equivalent quantity (TEQ's) and brominated compounds increased significantly with weight loss in subcutaneous fat in a group of ten individuals resampled up to five years after bariatric surgery and substantial weight loss. CONCLUSION: We show that selected polychlorinated biphenyls PCBs and structurally related polychlorinated dibenzo-p-dioxins dibenzofurans (PCDD/Fs) were associated with BMI. Concentrations of these lipophilic compounds in subcutaneous fat increased following bariatric surgery.

There is no doubt that chloronaphthalenes (PCNs) and their brominated counterparts (PBNs) are dioxin-like compounds, but there is less evidence for mixed bromo/chloronaphthalenes (PXNs). In this article we review information relating to the dioxin-like potency of PCNs and PBNs obtained in vivo, in vitro, and in silico. The aim was to help and improve the quality of data when assessing the contribution of these compounds in the risk analysis of dioxin-like contaminants in foods and other sample types. In vivo and in vitro studies have demonstrated that PCN/PBN congeners are inducers of aryl hydrocarbon hydroxylase, ethoxyresorufin O-deethylase, and luciferase enzymes that are features specifically indicative of planar diaromatic halogenated hydrocarbons such as dioxin and dioxin-like compounds. PCNs in the environment are of multisource origin. The limited data on PBNs in the environment suggest that these also appear to originate from different sources. The toxicological data on these compounds is even scarcer, most of it directed toward explaining the exposure risk from accidental contamination of feed with the commercial PBN containing product, Firemaster BP-6. The occurrence of PBNs and PXNs is possible as ultra-trace environmental and food-chain contaminants produced at least from combustion processes at unknown concentrations. Available toxicological and environmental data enable a focus on PCNs as dioxin analogues to an extent that specific local or regional environmental influences could result in a risk to human health. There is the possibility that they may act synergistically with the better-known classic dioxin and other dioxin-like compounds. PBNs and PXNs are much less studied than the dioxins, but are known to be products of anthropogenic processes that contaminate the environment. A continuously increasing use of bromine for manufacture of brominated flame retardants over the past three decades is anticipated as a stream of "brominated" wastes, that when degraded (combusted), will release PBNs and PXNs. This calls for advanced analytical methods and greater interest toxicologically to understand and control pollution and exposure by PBNs and PXNs. Particular congeners of bromonaphthalene in single studies were found to be much more toxic than their chlorinated counterparts. In addition, brominated/chlorinated naphthalenes also seem to be more potent toxicants than PCNs. About 20% of PCN congeners exhibit a dioxin-like toxicity with relative potencies varying between around 0.003 and 0.000001, but additional and more rigorous data are needed to confirm these figures. Recent food surveys have estimated a small but relevant human exposure to these compounds in foods, giving an additional source of dioxin-like toxicity to those compounds already covered by the World Health Organization-Toxic Equivalency Factors (TEFs) scheme. Given the additivity of response postulated for other dioxin-like compounds, it would seem unwise to ignore this additional contribution. Few data available showed that PBN congeners also exhibit a dioxin-like toxicity and are even more potent than PCN congeners, but the relative potency values were not derived for them until now. There are no toxicological data available for PXNs.

Recycled bioresources (biosolids, compost-like-output, meat and bonemeal ash, poultry litter ash, paper sludge ash) were added to the feed of dairy cattle to simulate incidental ingestion from agricultural utilisation, to investigate the transfer of organic contaminants from the ingested materials to milk. The bioresources were blended with a loamy sand soil at agronomic rates to simulate a single application to land, which was added to the diet at 5 % of the total intake on a dry matter (DM) basis. Biosolids, and control treatments consisting of unamended soil, were also added directly to the feed at 5 % DM. The cattle were fed the bioresource amended diets for a target period of three to four weeks, depending on material, and monitoring continued for four weeks after treatment withdrawal. Milk samples were taken weekly with chemical analysis of selected samples for a range of organic contaminants including: polychlorinated, polybrominated and mixed-halogenated dioxins, furans and biphenyls, polychlorinated naphthalenes and alkanes (often called chlorinated paraffins), polycyclic aromatic hydrocarbons and chlorobenzenes. No statistically significant additional transfer of organic contaminants to the milk was detected due to the relatively low levels of contaminants present when the bioresources were incorporated with soil at agronomic rates. However, direct biosolids ingestion by cattle significantly increased the transfer of contaminants to milk in comparison to control animals. Although present in larger concentrations in biosolids than their chlorinated counterparts, the carry over rates and bioconcentration factors of brominated dioxins and furans were considerably smaller. Direct ingestion of biosolids resulted in most contaminants approaching, but not always completely reaching, steady state concentrations within the treatment feeding period, however, concentrations generally declined to control values within four-weeks after withdrawing the biosolids-amended diet.

Some types of poultry bedding made from recycled materials have been reported to contain environmental contaminants such as polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs, dioxins), polychlorinated biphenyls (PCBs) brominated flame retardants (BFRs) polychlorinated naphthalenes (PCNs), polybrominated dioxins (PBDD/Fs), perfluoroalkyl substances (PFAS), etc. In one of the first studies of its kind, the uptake of these contaminants by chicken muscle tissue, liver, and eggs from three types of recycled, commercially available bedding material was simultaneously investigated using conventional husbandry to raise day old chickens to maturity. A weight of evidence analysis showed that PCBs, polybrominated diphenylethers (PBDEs), PCDD/Fs, PCNs and PFAS displayed the highest potential for uptake which varied depending on the type of bedding material used. During the first three to four months of laying, an increasing trend was observed in the concentrations of ΣTEQ (summed toxic equivalence of PCDD/Fs, PCBs, PBDD/Fs, PCNs and polybrominated biphenyls), NDL-PCBs and PBDEs in the eggs of chickens raised on shredded cardboard. Further analysis using bio-transfer factors (BTFs) when egg production reached a steady state, revealed that some PCB congeners (PCBs 28, 81, 138, 153 and 180) irrespective of molecular configuration or chlorine number, showed the highest tendency for uptake. Conversely, BTFs for PBDEs showed good correlation with bromine number, increasing to a maximum value for BDE-209. This relationship was reversed for PCDFs (and to some extent for PCDDs) with tetra- and penta- chlorinated congeners showing a greater tendency for selective uptake. The overall patterns were consistent, although some variability in BTF values was observed between tested materials which may relate to differences in bioavailability. The results indicate a potentially overlooked source of food chain contamination as other livestock products (cow's milk, lamb, beef, duck, etc.) could be similarly impacted.

The effects of blanching, blanching and pickling and maceration on the leaching of 137Cs and 40K from the flesh of three edible bolete mushroom species-Boletus edulis, Leccinum scabrum and Leccinum versipelle-were investigated. Significant (p < 0.05) decreases in activity were observed but varied depending on the treatment. Relative to fresh mushrooms, blanching decreased the activity concentration of 137Cs by 15 ± 13%, and of 40K, by 16 ± 7%, but blanching and pickling (vinegar) reduced activity more effectively, by 55 ± 8% and 40 ± 20% respectively. The corresponding losses of 137Cs and 40K through maceration of dried, powdered mushrooms were 38 ± 11% and 35 ± 14% ww, respectively. These results indicate that traditional domestic processing methods may not be as efficient at excluding 137Cs radioactivity as shown in some other studies. The activity concentration of 137Cs in a typically sized (100 g) portion of a processed mushroom (sourced from nearshore regions of the southern Baltic Sea coast near Gdansk in 2015) meal was projected to be low, i.e. in the range of 0.51 to 12 Bq kg-1 ww. The corresponding effective dose of 137Cs from blanched, blanched and pickled and macerated mushrooms per capita was also assessed to be low, from 0.001 to 0.010 µSv. Nutritionally, the median concentration of potassium (330 mg) in 100 g portions of blanched or pickled mushrooms would account for around 7% of the adequate adult daily intake.

The volume of occurrence data on food and animal feed contaminants such as polybrominated diphenyl ethers (PBDEs) and hexabromocyclododecanes (HBCDDs) is slowly increasing as more laboratories develop analytical capability. This data allows an evaluation of current background levels in different countries and regions and is also useful for estimating the health risk through dietary exposure and as evidence for the formulation of future control strategies. Existing data varies in the number of analytes reported and the quality measures applied. In order to ensure reliability and comparability, guidance on analytical criteria such as precision and trueness, limits of quantitation, recovery, positive identification, etc. is provided. These parameters are based on several years of collective experience and allow validation and regular quality control of analysis of individual PBDE congeners and HBCDD stereoisomers. The criteria-based approach also allows laboratories the flexibility to use different analytical methodologies and techniques for generating data. The effectiveness of this approach has been demonstrated by a successful proficiency testing scheme that has been used for a number of years and has attracted an increasing number of participants. The majority of participating laboratories (>80%) have been able to demonstrate performance within the 95% confidence interval (│z-score│≤ 2) and a further 10% of laboratories demonstrated performance with a z-score of (2 <│z-score│< 3). The combined support of these guidance criteria backed by successful proficiency testing will ensure the reliability and comparability of results, in particular, to refine risk assessments and to help the formulation of regulatory policy.

The legacy of polychlorinated naphthalenes (PCNs) manufactured during the last century continues to persist in the environment, food and humans. Metrological advances have improved characterisation of these occurrences, enabling studies on the effects of exposure to focus on congener groups and individual PCNs. Liver and adipose tissue show the highest retention but significant levels of PCNs are also retained by the brain and nervous system. Molecular configuration appears to influence tissue disposition as well as retention, favouring the higher chlorinated (≥ four chlorines) PCNs while most lower chlorinated molecules readily undergo hydroxylation and excretion through the renal system. Exposure to PCNs reportedly provokes a wide spectrum of adverse effects that range from hepatotoxicity, neurotoxicity and immune response suppression along with endocrine disruption leading to reproductive disorders and embryotoxicity. A number of PCNs, particularly hexachloronaphthalene congeners, elicit AhR mediated responses that are similar to, and occur within similar potency ranges as most dioxin-like polychlorinated biphenyls (PCBs) and some chlorinated dibenzo-p-dioxins and furans (PCDD/Fs), suggesting a relationship based on molecular size and configuration between these contaminants. Most toxicological responses generally appear to be associated with higher chlorinated PCNs. The most profound effects such as serious and sometimes fatal liver disease, chloracne, and wasting syndrome resulted either from earlier episodes of occupational exposure in humans or from acute experimental dosing of animals at levels that reflected these exposures. However, since the restriction of manufacture and controls on inadvertent production (during combustion processes), the principal route of human and animal exposure is likely to be dietary intake. Therefore, further investigations should include the effects of chronic lower level intake of higher chlorinated PCN congeners that persist in the human diet and subsequently in human and animal tissues. PCNs in the diet should be evaluated cumulatively with other similarly occurring dioxin-like contaminants.

A considerable amount of data has been published on the accumulation of radiocaesium (134Cs and particularly, 137Cs) in wild fungi since the first anthropogenically influenced releases into the environment due to nuclear weapon testing, usage and subsequently from major accidents at nuclear power plants in Chernobyl (1986) and Fukushima (2011). Wild fungi are particularly susceptible to accumulation of radiocaesium and contamination persists for decades after pollution events. Macromycetes (fruiting bodies, popularly called mushrooms) of the edible fungal species are an important part of the human and forest animal food-webs in many global locations. This review discusses published occurrences of 134Cs and 137Cs in twenty four species of Tricholoma mushrooms sourced from the Northern Hemisphere over the last five decades, but also includes some recent data from Italy and Poland. Tricholoma are an ectomycorrhizal species and the interval for contamination to permeate to lower soils layers which host their mycelial networks, results in a delayed manifestation of radioactivity. Available data from Poland, over similar periods, may suggest species selective differences in accumulation, with some fruiting bodies, e.g. T. portentosum, showing lower activity levels relative to others, e.g. T. equestre. Species like T. album, T. sulphurescens and T. terreum also show higher accumulation of radiocaesium, but reported observations are few. The uneven spatial distribution of the data combined with a limited number of observations make it difficult to decipher any temporal contamination patterns from the observations in Polish regions. When data from other European sites is included, a similar variability of 137Cs activity is apparent but the more recent Ukrainian data appears to show relatively lower activities. 40K activity in mushrooms which is associated with essential potassium, remains relatively constant. Further monitoring of 137Cs activity in wild mushrooms would help to consolidate these observations.

Validated methodology for the simultaneous determination of polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs), polychlorinated biphenyls (PCBs), polybrominated dibenzo-p-dioxins and dibenzofurans (PBDD/Fs) and polybrominated diphenyl ethers (PBDEs) in foods of animal origin is presented. Method performance indicators were equivalent or better than those required for the control of EU regulated (EU, 2017/644) PCDD/F and PCB congeners in these foods, and for risk assessment through dietary intake. The method uses a high (>90%) proportion of 13Carbon-labelled surrogates for internal standardisation combined with high resolution mass spectrometry that allow accurate quantitation, and this was confirmed by multiple successful participations in proficiency testing for PCDD/Fs, PCBs and PBDEs in food. The same validation and method performance requirements as used for PCDD/Fs were followed for PBDD/Fs. The analysis of a range of food samples (eggs, milk, fish, shellfish, pork, beef and poultry), showed the occurrence of all four classes of contaminants at varying concentration ranges. In general, PCBs were the most prominent contaminant, both, in terms of dioxin-like toxicity, as well as in the occurrence of non-dioxin-like congeners, an observation that concurs with those made in other studies on Italian foods. The levels of PCDD/F and PCB occurrence are consistent with a gradual decline in contamination as reported by some other similar studies. Although all the determined contaminants were detected in the sampled foods, there was poor correlation between the occurrences of the brominated and chlorinated contaminants, and between PBDEs and PBDD/Fs, but better associations were observed between the occurrences of the chlorinated contaminants.

The determination of chlorinated paraffins (CPs) has posed an intractable challenge in analytical chemistry for over three decades. The combination of an as yet unspecifiable number (tens - hundreds of thousands) of individual congeners in mass produced commercial CP mixtures and the steric interactions between them, contrive to defy efforts to characterise their residual occurrences in environmental compartments, food and human tissues. However, recent advances in instrumentation (mass spectrometric detectors and nuclear magnetic resonance), combined with interlaboratory studies, have allowed a better insight into the nature of the conundrums. These include the variability of results, even between experienced laboratories when there is insufficient matching between analytical standards and occurrence profiles, the poor (or no) response of some instrumentation to some CP congener configurations (multiple terminal chlorines or < four chlorines) and the occurrence of chlorinated olefins in commercial mixtures. The findings illustrate some limitations in the existing set of commercially available standards. These include cross-contamination of some standards (complex CP mixtures), an insufficient number of single chain standards (existing ones do not fully reflect food/biota occurrences), lack of homologue group standards and unsuitability of some configurationally defined CP congeners/labelled standards (poor instrument response and a smaller likelihood of occurrence in commercial mixtures). They also indicate an underestimation in reported occurrences arising from those CPs that are unresponsive during measurement. A more extensive set of standards is suggested and while this might not be a panacea for accurate CP determination, it would reduce the layers of complexity inherent in the analysis.

The first investigation into PBDE levels in food produced from flood-prone land on industrial river catchments was conducted. In August 2008 samples of cows' milk, along with grass and soil were taken from 5 pairs of flood-prone and control farms on the River Trent (Central UK). The sum of 7 BDE congeners (28, 47, 99, 100, 153, 154, and 183) was calculated. Higher PBDE levels occurred in soil on flood-prone compared to control farms (median 770 vs 280 ng/kg dry weight). These higher levels were not reflected in the grass samples indicating that PBDE contamination on soils is not transferred efficiently to grass. This observation alongside the fact that cows on flood-prone farms spend time on non-flood-prone land and are fed substantial quantities of commercial feed are reasons why higher PBDE levels were not found in milk from flood-prone farms (median 300 vs 250 ng/kg fat weight). Similar BDE47/BDE99 ratios were observed in soil and grass samples compared to the PBDE product commonly used in the UK, indicating few differences in source-pathway transfer efficiencies between congeners. The BDE47/BDE99 ratio in the milk samples was greater than those in the grass and feed indicating differential food to milk transfer efficiencies between congeners.

Polybrominated dibenzo-p-dioxins and dibenzofurans (PBDD/Fs) have been recognised as environmental pollutants for decades but their occurrence in food has only recently been reported. They elicit the same type of toxic response as analogous polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs) with similar potencies and effects, and share similar origins - inadvertent production during combustion and occurrence as by-products in industrial chemicals. Surprisingly, PBDD/Fs have received considerably less attention than PCDD/Fs, perhaps because determination requires a higher degree of analytical competence, a result of the higher adsorptivity and lability associated with carbon-bromine bonding. For most populations, the principal exposure pathway is dietary intake. The PBDD/F toxicity arising from occurrence in foods has often been expressed as toxic equivalents (TEQs) using the same scheme developed for PCDD/Fs. This approach is convenient, but resulting TEQ estimates are more uncertain, given the known differences in response for some analogous congeners and also the different patterns of PBDD/F occurrence confirmed by the newer data. Further studies to consolidate potency factors would help to refine TEQ estimates. Characteristically, most foods and human tissues show more frequent and higher PBDF concentrations relative to PBDDs, reflecting major source patterns. Occurrence in food ranges from <0.01 to several thousand pg/g (or up to 0.3 pg TEQ/g whole weight) which is comparable to PCDD/F occurrence (ΣPBDD/F TEQs are underestimated as not all relevant congeners are included). Plant based foods show higher PBDD/F: PCDD/F TEQ ratios. Reported PBDD/F dietary intakes suggest that some population groups, particularly young children, may exceed the revised tolerable weekly intake for dioxin-like contaminants (2 pg TEQ/kg bw/week), even for mean consumption estimated with lower bound data. It is evident that the omission of PBDD/Fs from the TEQ scheme results in a significant underestimation of the cumulative toxicity and associated risk arising from this mode of action.

Both mercury (Hg) and selenium (Se) occur in many mushroom species, but the morphological distribution of these elements during different developmental stages of the fruiting bodies is not known. Although Amanita muscaria can be consumed after suitable processing, they are often ignored by mushroom foragers, leaving an abundance for investigative study. Multiple specimens in each of six developmental stages (button to fully mature) were collected in excellent condition during a single morning from the same forested location and composited. With an average of 30 specimens per composite, and low temporal, spatial, and measurement uncertainty, the data are likely to be representative of the typical concentrations of Hg and Se for each developmental stage. Hg (range 0.58-0.74 mg kg-1 dry weight cap; 0.33 to 0.44 mg kg-1 dw stipe) and Se (range 8.3-11 mg kg-1 dw cap; 2.2 to 4.3 mg kg-1 dw stipe) levels were observed to vary during the developmental stages, and the variability may relate to the demands in growth. In common with some other species, the lower stipe concentrations may be consistent with nutrient/contant transport and support functions. Both Hg and Se levels were lowest during periods of maximum sporocarp growth. Selenium occurs at almost an order of magnitude greater levels than Hg. Due to its role in mitigating the effects of Hg toxicity, this property is of significance to those who consume the species either for nutritional, medicinal, or recreational purposes, although the losses of both these elements during processing are not known.

B. edulis, collected from 33 forested or woodland sites across Poland over 25 years since 1995, were analysed for radiocaesium. The results (137Cs activity range: 25 to 10,000 Bq kg-1 dry weight) provide a good indication of artificial radioactivity in this food material. The relatively higher levels detected in the earlier years, mostly in easterly location, is consistent with depositions from the projected Chernobyl incident (1986) fallout plumes. Nevertheless, the 137Cs concentrations during 1995-2010 were, on average, higher than those reported by other studies for Polish B. edulis over the period 1986-1994. The data concurs with the general hypothesis and observations that deposited 137Cs permeates slowly over time to deeper soil horizons which host the mycelial networks. This delay in availability shows that (apart from hotspots) higher contamination of fruiting bodies occurred around 10 to 20 years after the incident. Local consumers and recreational mushroomers were undoubtedly exposed, although reported 137Cs concentrations suggest that serious breaches of regulated levels were uncommon.

High doses of lithium salts are used for the treatment or prevention of episodes of mania in bipolar disorder, but the medication is rapidly excreted and also shows side effects. Li may also be beneficial in people with mood disorders. Nutritionally, popular foods such as wild and cultivated mushrooms have low Li contents. This study evaluated the Li enrichment of white Agaricus bisporus mushrooms using Li2CO3 solutions to fortify the commercial growing substrate at various concentrations from 1.0 to 500 mg kg-1 dry weight (dw). Fortification of up to 100 mg kg-1 dw resulted in a significant (p < 0.01) dose-dependent increase in the accumulation of Li in mushroom, but the highest fortification level was found to be detrimental to fruitification. The median values of Li in fortified mushrooms corresponded to the fortification levels, increasing from 0.49 to 17 mg kg-1 dw relative to the background concentration of 0.056 mg kg-1 dw (control substrate contained 0.10 mg kg-1 dw). The potential for Li uptake in fruiting bodies was found to decrease at higher levels of fortification, with saturation occurring at 100 mg kg-1. Resulting lithiated mushrooms were up to 300-fold richer in Li content than specimens grown on control substrate. The fortification showed some effects on the uptake of other trace minerals, but concentrations of co-accumulated Ag, Al, As, Ba, Cd, Co, Cr, Cs, Cu, Hg, Mn, Ni, Pb, Rb, Sr, Tl, U, V and Zn were similar or lower than values reported in the literature for commercial A. bisporus. These lithiated mushrooms could be considered as a pro-medicinal alternative to treatments that use Li salts.

Attempts to bio-enrich fungal biomass with an essential trace elements to produce dietary supplements have some tradition and an example is selenium. Lithium salts have medical applications, but safer forms are sought after, and lithiated foods and food supplements may be an alternative. This study evaluated the lithiation of white Agaricus bisporus mushrooms using commercial compost fortified with LiNO3 and investigated the effects on co-accumulation of trace elements. The fortifications at levels of 1.0, 5.0, 10, 50 and 100 mg·kg-1 dw, resulted in corresponding median increases in mushroom Li concentrations of 0.74, 5.0, 7.4, 19 and 21 mg kg-1 dw, respectively, relative to 0.031 mg kg-1 dw in control mushrooms. The bio-concentration potential for Li uptake decreased at higher levels of fortification, with saturation occurring at 100 mg·kg-1, and the level of 500 mg kg-1 mycelium failed to produce mushrooms. The compost fortification resulted in up to several hundred-fold enrichment of mushrooms compared to those grown on control compost, underlining their potential therapeutic use. At higher fortification levels, some effects were seen on the co-accumulation of other elements, such as Ag (stems), As, Cd, Cr, Cs, Cu, Hg (stems), Mn, Rb, Sr, U (stems) and Zn; 0.05 < p < 0.10), but no effects were seen for Ag (caps), Al, Ba, Co, Hg (caps) Ni, Tl, U (caps), and V (p > 0.05).
