RESUMO

An inheritable muscular hypertrophy was recently described in sheep and shown to be determined by the callipyge gene mapped to ovine chromosome 18. Here, the callipyge phenotype was found to be characterized by a nonmendelian inheritance pattern, referred to as polar overdominance, where only heterozygous individuals having inherited the callipyge mutation from their sire express the phenotype. The possible role of parental imprinting in the determinism of polar overdominance is envisaged.

RESUMO

The objective of this study was to compare maternal ability under natural and fostered rearing conditions in four breeds of sheep for lamb survival and growth to weaning age. Data included records from 1981 through 1991 of 24,696 lambs of four breeds, Rambouillet, Columbia, Targhee, and Polypay, reared by their natural dam, and 720 records of lambs fostered within their breed or across breeds. The majority (94%) of the foster lambs were from multiple-birth litters and were approximately .5 kg lighter than lambs reared by their natural dams (P < .05). Viability up to 3 wk of age was influenced by breed of foster dam; lambs reared by Polypay dams had the highest viability (96%) and lambs reared by Targhee dams the lowest (81%). Targhee dams were less successful in rearing foster lambs (75%) to weaning than the other breeds studied (average 84%). The lower viability of Targhee-reared foster lambs could not be explained by lower birth weights of foster lambs, increased starvation, or lower milk scores for Targhee dams. Although there were breed differences in weaning weights at 120 d of age, the foster lambs were lighter but the ranking by breed did not change. These results suggest that there are small breed differences in maternal ability for a ewe to raise her own lamb or foster lamb(s), except for the Targhee ewe, which has a lower success in rearing a foster lamb. Management practices to reduce the mortality rate of foster lambs should be investigated.(ABSTRACT TRUNCATED AT 250 WORDS)

Milk production and lamb growth were characterized in 118 multiparous, 3- to 7-yr-old Rambouillet, Columbia, Polypay, and Suffolk ewes under spring sage range and high mountain meadow grazing from 28 to 98 d postpartum. Daily milk yield as measured by the lamb suckling weight differential technique did not differ (P greater than .05) among breeds, although milk production of Suffolk ewes tended to be higher than that of the other three breeds. Within the Rambouillet, Columbia, and Polypay breeds, total estimated yield of ewes with twins was 13 to 17% higher than that of ewes with singles, whereas in the Suffolk breed, suckling twins increased total milk yield 61% over that of ewes with singles. Twin lambs induced a larger differential in dam milk production in late lactation (70 to 98 d) than in earlier lactation (28 to 70 d). Number of lambs did not influence milk protein, Ca, or P content (P greater than .05). Fat levels in colostrum and 4-d milk were elevated 14 and 20%, respectively, in ewes suckling twins compared with ewes suckling singles. Under range conditions, Suffolk ewes suckling single or twin lambs lost more BW (12 and 21% of 4-d postpartum body weight, respectively) than Rambouillet (4 and 7%), Columbia (5 and 8%), or Polypay (8 and 8%) ewes. Correlation coefficients of milk production and lamb growth rate were positive and significant (P less than .05) up to 56 d of age. Growth rate was less closely associated with milk production for twin than for single lambs.

The objectives of this study were to estimate (co)variance components for growth and feed efficiency measures, and to compare selection strategies to improve economic efficiency of gain. Variance components for pre- and postweaning growth, body weight, and measures of feed efficiency were estimated from data collected on 1,047 Targhee lambs over 7 yr. Approximately 21 d after weaning, lambs were group-fed for 4 wk, with ad libitum access to a diet of 37% whole barley grain and 63% pelleted alfalfa hay. Lambs were then individually fed for 6 wk. Lambs were then returned to group feeding for another 4-wk period. The mean feed conversion ratio (gain/intake) for the individual feeding period was 0.11. Mean postweaning ADG for the total 14-wk feeding period was 0.26 kg. (Co)variance components were estimated from single- and two-trait animal models using REML. The selection strategies compared included direct selection, index selection, and restricted index selection. Estimates of (co)variances derived from single- and two-trait models were similar, except for mid-test body weight. Preweaning growth had a low heritability estimate (0.03 +/- 0.04) compared with postweaning growth measures (0.25 to 0.39), but all measures of growth were highly correlated (r2 > 0.98). Heritability estimates of measures of gain efficiency were variable (total feed intake = 0.39; feed conversion ratio = 0.26; residual feed intake = 0.26). Total feed intake was strongly correlated genetically with feed conversion ratio (0.79) and residual feed intake (0.77). The estimate of genetic correlation between feed conversion ratio and residual feed intake was low (0.23). Comparison of selection strategies showed the superiority of index selection (ADG, total feed, body weight) for economic improvement compared with other strategies. Economic response to direct selection for ADG was at least twice that for direct selection for feed conversion ratio or against total feed intake, and that for restricted indices (selecting against residual feed, while holding body weight and/or gain constant). Selection for ADG may be a practical approach for indirectly improving efficiency of gain in lambs.

A series of simulations were performed to evaluate the effects of mature size (WMA; 60, 70, 80 and 90 kg), slaughter weight (SW; 55, 60 and 65 kg) and three diets fed to feedlot lambs. Rations included a traditional diet (C2L) or placing weaned lambs on alfalfa for either 30 (A30) or 60 (A60) d before placing them on the C2L diet (A30-C2L and A60-C2L). Two lamb pricing schemes were used in the financial analysis of the biological results: sale price based on weight with or without adjustment for carcass fat. Placing lambs on alfalfa pasture increased ownership by 22 d on average compared to C2L. As WMA and SW increased, ownership increased from 3 to 11 d. Across nutritional treatments, fat decreased by 5.8 to 9.0% as WMA increased from 60 and 90 kg. When market lambs were priced on weight, net returns per lamb were greatest for A30-C2L or A60-C2L ($2.34 and $5.21, respectively above C2L) and for greater SW ($4.77 and $7.16 greater for SW 60 and 65 kg than for SW 55). The combination WMA of 90 kg, a SW of 65 kg and nutritional treatment of A60-C2L proved most profitable. However, when sale price was discounted for excessive fat content, the combinations WMA of 60 or 70 with a SW of 65 and A60-C2L were most profitable. The rank correlation between biological efficiency (weight gain/dry matter feed consumption) and net return, when sale price was based on weight, was found to be -.51. This was because lambs slaughtered at lighter weights had high biological efficiencies but low net returns due to a negative price margin. With negative price margins but positive feeding margins, net returns are greatest for heavier, fatter lambs fed longer.

The objective was to determine the effect of periods of adjustment and duration of performance test on estimating genetic variance parameters for ADG. Variance components were estimated from ADG data collected from 1978 to 1984 on a total of 1,047 Targhee ewe and ram lambs at the U.S. Sheep Experiment Station (Dubois, ID). Across all years, lambs averaged 84 +/- 9 d of age and 25 +/- 5.4 kg of weight when placed on test. Lambs were provided ad libitum access to a commercial pellet of barley grain and ground alfalfa for 14 wk. Every 2 wk, ADG was recorded. Overall mean ADG for the entire 14-wk period across all years was 249.3 +/- 56.5 g. Variance components were estimated from a single-trait animal model using REML for cumulative combinations of time on feed in 2-wk intervals from 4 to 14 wk and varying the adjustment period from 2 to 6 wk. The model included fixed effects for year (1978 to 1984), sex of lamb (ewe or ram), and genetic line (selected or control), and two covariates (age and weight at beginning of performance test). As the duration of the performance test increased, phenotypic variances for ADG decreased: 54 and 13 g2 at 4 and 14 wk on test, respectively. Also, estimates of direct heritability increased with extended duration on test: 0.20 +/- 0.06 and 0.35 +/- 0.07 at 4 and 14 wk on test, respectively. Heritability estimates increased little after 8 wk on feed (0.33, 0.33,0.38, and 0.35 for 8, 10, 12, and 14 wk, respectively). Genetic and environmental correlations among durations of the performance test were estimated from two-trait models. All genetic correlations among durations of performance test were greater than 0.88 which suggests that all measures of ADG were genetically similar. However, environmental correlations among duration of performance test ranged from 0.31 to 1.00 with the smaller environmental correlations occurring between 4 to 6 wk with 12 to 14 wk on feed. These results indicate that a period of 8 wk or greater was sufficient to observe differences among animals for ADG due to direct genetic effects under this environment.

Fifteen models were compared for the birth weight of 33,994 lambs recorded at the U.S. Sheep Experimental Station (1950 to 1998). The initial intent was to estimate fractions of variance due to cytoplasmic line (c2; n = 892) and sire by cytoplasmic line interaction (sc2; n = 17,557). The basic model included direct genetic (fractional variance, a2; n = 35,684), maternal genetic (m2, with correlation r-am), and maternal permanent environmental (p2; n = 8,418) effects. The model with sc2 was significantly better than the basic model with and without c2. When other random effects were added, sc2 became zero. Significant effects were associated with random dam x year (dy2; n = 24,801), sire x dam (sd2; n = 23,924), and dam x number born (dn2; n = 12,944) interaction effects. Estimates with all effects in the model were a2, 0.24; m2, 0.19; r-am, 0.11; p2, 0.05; c2, 0.00; dn2, 0.04; dy2, 0.06; sd2, 0.05; sc2, 0.00. Estimates for a2, m2, and r-am were the same for all models. Estimate of p2 changed when other effects were added to the model. Largest estimates for nongenetic effects were: p2, 0.08; c2, 0.00; dy2, 0.13; sd2, 0.11; and sc2, 0.04. Regardless of whether Westell groups (n = 91) were in the model, estimates were similar. For weaning weight (120-d, n = 32,715), estimates of variances of effects added to the basic model were all near zero (a2, 0.18; m2, 0.12; r-am, -0.01; p2, 0.06). For number born (NB, n = 37,020) and fleece weight (FW, n = 36,197), animal permanent environmental effects were added to the model (ap2; n = 9,871 and 9,760) and r-am was dropped. For these traits, effects not in the basic model had small variances. Nonzero estimates with full model were a2, 0.10; ap2, 0.01; dy2, 0.02; and sc2, 0.01 for NB, and a2, 0.54; m2, 0.02; ap2, 0.02; dy2, 0.04; and sc2, 0.02 for FW. Cytoplasmic effects were not important. The addition of unusual random effects to the model did not change estimates for the basic parameters. Although some of these effects were significant, especially for BW, the effects on genetic evaluations are likely to be small.

Genetic parameters from both single-trait and bivariate analyses for prolificacy, weight and wool traits were estimated using REML with animal models for Columbia sheep from data collected from 1950 to 1998 at the U.S. Sheep Experiment Station (USSES), Dubois, ID. Breeding values from both single-trait and seven-trait analyses calculated using the parameters estimated from the single-trait and bivariate analyses were compared with respect to genetic trends. Number of observations were 31,401 for litter size at birth and litter size at weaning, 24,741 for birth weight, 23,903 for weaning weight, 29,572 for fleece weight and fleece grade, and 2,449 for staple length. Direct heritability estimates from single-trait analyses were 0.09 for litter size at birth, 0.06 for litter size at weaning, 0.27 for birth weight, 0.16 for weaning weight, 0.53 for fleece weight, 0.41 for fleece grade, and 0.55 for staple length. Estimate of direct genetic correlation between littersize at birth and weaning was 0.84 and between birth and weaning weights was 0.56. Estimate of genetic correlation between fleece weight and staple length was positive (0.55) but negative between fleece weight and fleece grade (-0.47) and between staple length and fleece grade (-0.70). Estimates of genetic correlations were positive but small between birth weight and litter size traits and moderate and positive between weaning weight and litter size traits. Fleece weight was lowly and negatively correlated with both litter size traits. Fleece grade was lowly and positively correlated with both litter size traits, while staple length was lowly and negatively correlated with the litter size traits. Estimates of correlations between weight traits and fleece weight were positive and low to moderate. Estimates of correlations between weight traits and fleece grade were negative and small. Estimates of correlations between staple length and birth weight (0.05) and weaning weight were small (-0.04). Estimated breeding values averaged by year of birth from both the single-trait and multiple-trait analyses for the prolificacy and weight traits increased over time, but were unchanged for the wool traits. Estimated changes in breeding values over time did not differ substantially for single-trait and multiple-trait analyses, except for traits highly correlated with another trait that was responding to selection.

Genetic parameters from both single-trait and bivariate analyses for prolificacy, weight, and wool traits were estimated using REML with animal models for Targhee sheep from data collected from 1950 to 1998 at the U.S. Sheep Experiment Station, Dubois, ID. Breeding values from both single-trait and seven-trait analyses calculated with the parameters estimated from the single-trait and bivariate analyses were compared across years of birth with respect to genetic trends. The numbers of observations were 38,625 for litter size at birth and litter size at weaning, 33,994 for birth weight, 32,715 for weaning weight, 36,807 for fleece weight and fleece grade, and 3,341 for staple length. Direct heritability estimates from single-trait analyses were 0.10 for litter size at birth, 0.07 for litter size at weaning, 0.25 for birth weight, 0.22 for weaning weight, 0.54 for fleece weight, 0.41 for fleece grade, and 0.65 for staple length. Estimate of direct genetic correlation between litter size at birth and weaning was 0.77 and between birth and weaning weights was 0.52. The estimate of genetic correlation between fleece weight and staple length was positive (0.54), but was negative between fleece weight and fleece grade (-0.47) and between staple length and fleece grade (-0.69). Estimates of genetic correlations were near zero between birth weight and litter size traits and small and positive between weaning weight and litter size traits. Fleece weight was slightly and negatively correlated with both litter size traits. Fleece grade was slightly and positively correlated with both litter size traits. Estimates of correlations between staple length and litter size at birth (-0.14) and litter size at weaning (0.05) were small. Estimates of correlations between weight traits and fleece weight were positive and low to moderate. Estimates of correlations between weight traits and fleece grade were negative and small, whereas estimates between weight traits and staple length were positive and small. Estimated breeding values averaged by year of birth from both the single- and seven-trait analyses for the prolificacy and weight traits increased over time, whereas those for fleece weight decreased slightly and those for the other wool traits were unchanged. Estimated changes in breeding values over time did not differ substantially for the single-trait and seven-trait analyses, except for traits highly correlated with another trait that was responding to selection.

Statistical models (16) were compared for birth weight of 24,741 Columbia lambs recorded at the U.S. Sheep Experiment Station (USSES; 1950 to 1998). The goal was to estimate fractions of variance due to cytoplasmic line (c2; n = 590) and sire x cytoplasmic line interaction (sc2; n = 12,831) with other nuclear and environmental effects included in the model. The basic model included direct genetic (fractional variance, a2; n = 26,623), maternal genetic (m2, with direct-maternal correlation ram), and maternal permanent environmental (p2m; n = 6,385) effects. The model with sc2 was significantly (P < 0.05) better than the basic model with c2, but with other random effects added, sc2 became zero. Significant (P < 0.05) variance components were associated with random dam x year (dy2) and dam x number born (dn2) interaction effects. Estimates with all effects in the model were: a2, 0.26; m2, 0.24; ram, -0.05; p2m, 0.02; c2, 0.00; dn2, 0.04; dy2, 0.08; sd2, 0.04; sc2, 0.00. Estimates for a2, m2, and ram were the same for all models. Estimate of p2 changed when other effects were added to the model. The largest estimates for nongenetic effects were: p2m, 0.06; c2, 0.00; dy2, 0.14; sd2, 0.13; and sc2, 0.04. Parameter estimates were similar regardless of whether fixed genetic groups (n = 84) were in the model. For weaning weight (120 d, n = 23,903), estimates of variances of effects added to the basic model were all near zero (a2, 0.14; m2, 0.09; ram, 0.23; p2m, 0.04). For fleece weight (FW, n = 29,024) and number born (NB, n = 29,688), animal permanent environmental effects were added to the model (p2a; n = 7,741 and 7,840) and ram was dropped. For these traits, effects not in the basic model had small variances. For FW, estimates with the full model were: a2, 0.52; m2, 0.01; p2m, 0.00; p2a, 0.06; c2, 0.00; dy2, 0.00; sd2, 0.02; and sc2, 0.06, and for NB they were: a2, 0.08; m2, 0.00; p2m, 0.00; p2a, 0.02; c2, 0.00; dy2, 0.00; sd2, 0.00; and sc2, 0.01. Cytoplasmic effects were not important. Unusual random effects in the model did not change estimates for basic parameters. Although some effects were significant, especially for BW, effects on genetic evaluations are likely to be small.

Genetic parameters for Columbia, Polypay, Rambouillet, and Targhee sheep were estimated using REML with animal models for prolificacy, weight, and wool traits. All bivariate analyses included a covariance between additive genetic effects for the two traits plus appropriate additional covariances. Number of observations by breed ranged from 5,140 to 7,095 for prolificacy traits, from 7,750 to 9,530 for weight traits, and from 4,603 to 34,746 for wool traits. Heritability estimates ranged from .03 to .11 for prolificacy traits (litter size at birth and litter size at weaning), from .09 to .26 for weight traits (birth weight and average daily gain), and from .25 to .53 for wool traits (fleece weight, fleece grade and staple length). Estimates of direct genetic correlations among prolificacy and among weight traits were positive and ranged from .58 to 1.00 and .18 to 1.00, respectively. Estimates of direct genetic correlation between fleece weight and staple length were positive (.50 to .70) but were negative between fleece weight and fleece grade (-.60 to -.34) and between staple length and fleece grade (-.72 and -.40). Prolificacy and wool traits were essentially uncorrelated. Weight and prolificacy traits were slightly positively correlated. Weight traits had a moderate positive direct genetic correlation with fleece weight and staple length, but were uncorrelated with fleece grade. These estimates of genetic parameters between prolificacy, weight, and wool traits can be used to construct multiple-trait selection indexes for dual-purpose sheep.

Wether lambs from four breeds, Rambouillet (n = 38), Targhee (46), Columbia (38), and Polypay (38), were used to estimate an optimal slaughter weight for lean lamb production. Wethers, weaned at an average of 105 d of age and 38.5 kg, had ad libitum access to a finishing diet of 85% barley grain and 15% pelleted alfalfa and were slaughtered at weights ranging from 39 to 70 kg. Fat, protein, moisture, and ash percentages were determined on fat and lean from 7-rib racks. Optimal slaughter weight was estimated by using carcass backfat depth or extracted fat in the rack as dependent variables in linear equations. An acceptable lean lamb carcass was defined to have 2.5 to 6.5 mm of backfat depth and 26 to 40% rack chemical fat. On a weight-constant basis Columbia lambs were less physiologically mature than the other breeds, having less (P < .05) kidney and pelvic fat and a lower rack fat percentage. Targhee, Rambouillet, and Polypay wethers were similar in carcass fat and protein composition at a constant slaughter weight. Optimal slaughter weights for certified lean lamb carcasses of Targhee, Rambouillet, and Polypay wethers were 45 to 47 kg, resulting in a Choice quality grade and a 2.7 yield grade. The optimal weight for Columbia was heavier, between 45 and 55 kg, producing a Choice quality grade and a 2.4 yield grade. The derived optimal slaughter weights are limited to the populations sampled and may not be specific to other populations.(ABSTRACT TRUNCATED AT 250 WORDS)

Eighteen spring-born Columbia ram, wether, and zeranol-implanted ram lambs were examined to determine the influence of castration or zeranol implantation on collagen characteristics of skin, fell, and epimysium and possible relationships between collagen properties of each tissue and difficulty of pelt removal. Pelt removal force was lower in wethers than in rams (P < .05) and intermediate for zeranol-implanted rams. Collagen concentration in skin of rams was greater (P < .05) than that in wethers or implanted rams, but percentage of heat-soluble collagen in skin was higher in implanted rams. Percentage of type III collagen in skin was highest in rams and lowest in wethers (P < .05); that in the skin of implanted rams was intermediate. The fell of wethers contained a higher (P < .05) collagen concentration, higher insoluble collagen amount, and lower percentage of soluble collagen than that of rams or implanted rams. The fell had a lower percentage of type III collagen than that of rams (P < .05). Epimysium collagen concentration of rams and wethers was higher (P < .05) than that of implanted rams; however, percentage of soluble collagen was higher for the implanted rams than for the other classes. Type III collagen percentage in the epimysium did not differ by animal class (P < .05). Zeranol-implanted ram lambs had a higher percentage of soluble collagen in all tissues examined than did non-implanted rams and force required for pelt removal was reduced in implanted rams.(ABSTRACT TRUNCATED AT 250 WORDS)

Changes in muscle growth, calpastatin activity, and tenderness of three muscles were assessed in 20 callipyge and 20 normal wether lambs slaughtered at live weights (LW) of 7, 20, 36, 52, and 69 kg. At 24 h postmortem, the longissimus (LM), semimembranosus (SM), and supraspinatus (SS) muscles were removed and weighed and samples were obtained for calpastatin activity (CA; 24 h) and Warner-Bratzler shear force (WBS; aged 6 d). For muscle weights and calpastatin activity, the weight group x muscle x phenotype interaction was significant (P < 0.05). Muscle weights were similar (P > 0.05) between phenotypes for all three muscles at 7 kg LW. At 20 kg LW, the LM and SM muscles from the callipyge lambs were heavier (P < 0.05) than those from normal lambs; however, the SS did not differ (P > 0.05) between phenotypes at 7, 20, or 52 kg. From 20 to 69 kg LW, the LM and SM weights were 42 and 49% heavier (P < 0.05) for callipyge than for normal lambs. Calpastatin activity of the callipyge LM was greater (P < 0.05) than that of normal LM at 36, 52, and 69 kg. In the callipyge LM, CA was similar (P > 0.05) at 20, 36, and 52 kg LW and did not differ (P > 0.05) from 7-kg or 69-kg values. Calpastatin activity declined (P < 0.05) across the growth curve for the SM and SS, but values were higher (P < 0.05) in the SM in callipyge than in normal lambs. Shear force values of the LM were lower (P < 0.05) for normal lambs at 36, 52, and 69 kg LW than for callipyge lambs. In the SM and SS, WBS values decreased (P < 0.05) across the growth curve, but values were higher (P < 0.05) for callipyge lambs in the SM only. These data indicate that the selective muscular hypertrophy of the callipyge phenotype develops during the postnatal growth period between 7 and 20 kg LW (19 and 100 d of age). Longissimus and semimembranosus muscles in the callipyge lambs were over 40% heavier from 20 to 69 kg LW; however, they also had higher levels of calpastatin activity and Warner-Bratzler shear force during this time period, indicating the need for postmortem tenderization treatments to improve palatability.

Total litter weight weaned at 120 d postpartum per ewe lambing is often believed to be a measure of range ewe productivity. Genetic correlations for litter weight weaned at 120 d with prolificacy, growth, and wool traits for Columbia, Polypay, Rambouillet, and Targhee sheep were estimated using REML with animal models. Observations per breed ranged from 5,140 to 7,083 for litter weight weaned, from 5,140 to 7,095 for prolificacy traits, from 7,750 to 9,530 for growth traits, and from 4,603 to 18,443 for wool traits. Heritability estimates for litter weight weaned were low and ranged from 0.02 to 0.11. Fraction of variance due to permanent environmental effects averaged 0.05 and, due to effects of mates, averaged 0.01. Estimates of genetic correlations with litter weight weaned varied from breed to breed. The ranges were as follows: 0.42 to 0.65 with litter size born, 0.80 to 0.99 with litter size weaned, -0.22 to 0.28 with birth weight, -0.07 to 0.23 with average daily gain to weaning, -0.56 to 0.19 with fleece weight, -0.15 to 0.02 with fleece grade, and -0.11 to 0.08 with staple length. Results suggest that, if selection were practiced on litter weight weaned, the average correlated responses would be expected to be favorable or neutral for prolificacy, growth, and wool traits although responses might vary from breed to breed.

This paper examines the economic implications of callipyge (CLPG) lamb production. The price, as it relates to competing meats and excess fat, significantly impact lamb demand, and CLPG genetics improves those factors. The CLPG phenotype does not affect number or weight of lambs weaned or postweaning ADG, but it does improve postweaning feed efficiency by approximately 10%; dressing percentage approximately 7.5%; and yields of wholesale leg (11.8%), loin (4.7%), rack (2.5%), and shoulder (2.3%). Total production costs for a 59-kg lamb are 4% lower in CLPG lambs due to improved feed efficiency. Assuming pelt and offal value pays for slaughter costs, the costs of normal (N) and CLPG carcasses are the same as for live lambs, $81 and $78, respectively; but, due to dressing percentage, the N carcass weighs 29.2 kg and the CLPG carcass, 31.4 kg. Thus, carcass costs for N and CLPG lambs are $2.77/kg and $2.49/kg, respectively. Decreased feed costs, combined with increased carcass and primal cut yields for CLPG lambs, lowers the price required to recover meat costs for leg, loin, rack, and shoulder by 19.7, 14.4, 12.6, and 11.9%, respectively. Successful marketing of CLPG loin and rack depends on the use of one of several postharvest tenderization procedures. Moisture-enhanced pork is accepted by consumers and often sells for a premium; and moisture enhancement may be appropriate for CLPG lamb. The meat cost per kilogram (including a $.10 per kilogram treatment cost) of tenderized and moisture-enhanced CLPG leg, loin, rack, and shoulder containing 10% added water and ingredients would be lowered to $2.51, $4.65, $5.34, and $1.85, respectively. That represents a total of a 20.9% reduction in cost-basis price. When expressed on the basis of increased revenue from the additional yield of cuts at a given market price, the value of CLPG and moisture-enhanced CLPG cuts from a 59-kg lamb would be, respectively, 14.2% and 23.4% higher than for N lamb. Industrywide adoption of CLPG could increase intermediate-run U.S. profits by $109 million, but the actual effects of CLPG attributes, such as a visual appeal, lower fat and cholesterol content, and reduced seam fat, on consumer demand need to be quantified. If accepted by packers and consumers, moisture-enhanced CLPG lamb has the potential to decrease the cost of lamb to consumers and increase lamb industry profitability.

Sexual performance has been subjectively measured with a libido test during screening of rams before public sale and breeding at the U.S. Sheep Experiment Station from 1990 to 2000. The objective of this study was to determine whether sexual performance was genetically influenced. Sexual performance scores ranged from 1 to 6 with scores increasing from sexually inactive to highly sexually active in the presence of estrous ewes. The overall average score was 3.5+/-0.02. Records from four breeds (Columbia, n = 807; Polypay, n = 1,668; Rambouillet, n = 1,208; and Targhee, n = 1,002) were combined into one analysis because breeds had similar phenotypic variances. Total number of records was 4,685, which included a second sexual performance test on 1,212 rams in the following year. Variance components were estimated using a REML algorithm. Fixed effects were breed of ram, selection line within breed, and year by breed. A permanent environmental effect for ram was included to account for repeated observations on individual animals. Age and weight of the rams at time of the libido test were linear covariates and were breed-specific. Adjusted means for sexual performance scores did not differ among breeds (P > 0.05). Age was a significant effect (P < 0.01), with sexual performance score increasing 0.05 units for each month of age. The additive genetic variance was estimated as 0.54. The estimate of variance due to ram permanent environmental effects was 1.19. The residual variance was estimated to be 0.67. The heritability estimate was moderate (0.22+/-0.04) and repeatability was high (0.72). These results imply that one screening for sexual performance provides a reliable measure of sexual performance and that favorable response to selection for ram serving capacity may be expected.

The objective of this study was to determine whether increased amounts of collagen and (or) hydroxylysylpyridinoline crosslinks in longissimus muscle are partially responsible for decreased tenderness when callipyge lambs are compared to normal lambs. The longissimus muscle was used because we believe tenderness is a greater problem in loin chops of callipyge lambs than it is in other cuts. Ten normal and 10 half-sibling lambs expressing the callipyge gene were compared. Lambs were slaughtered at approximately 8 mo of age when they reached a target weight of 59 kg. Dressing percentages were higher for the leaner callipyge lambs that exhibited larger longissimus muscle areas and heavier leg weights (P < .01). Warner-Bratzler shear values for longissimus muscle from callipyge lambs were higher (P < .01) than those from normal lambs. The higher shear values were not explained by amount of muscle collagen or by hydroxylysylpyridinoline crosslink concentration because both collagen percentage (P < .09) and crosslink concentration (P < .04) were lower in callipyge lambs. Therefore, attempts to modify shear values and make loin chops from callipyge lambs more acceptable to consumers should focus on the myofibrillar fraction of muscle.

Electromagnetic scanning was investigated to determine its accuracy in predicting chemical composition in live lambs. Forty-seven Rambouillet wether lambs were scanned with an electromagnetic instrument (ToBEC Model HA-2). Lambs were serially scanned and slaughtered over the weight range of 29.5 to 63.5 kg. Each lamb was scanned twice: before and immediately after 24 h of food deprivation. Chemical composition was determined from whole-animal ground samples by AOAC methods for percentage of DM, CP, ether extract (EE), and Ash. Percentage of fat-free mass (FFM) was calculated from the percentage of moisture and CP. Correlation and stepwise regression procedures were used to identify the most reliable independent variables for predicting chemical composition. Independent variables included electromagnetic scan data and live animal measures for weight, body length, and chest girth circumference. Electromagnetic data included the average scan response curve (PH0) and Fourier transformations (P1T, P1R, P2T, and P2R). Repeatability of the HA-2 model was extremely high (r = .98). Reliable prediction equations were obtained for DM, CP, EE, and FFM (R2 > .66). The percentage of ash could not be predicted from the independent variables. Electromagnetic scan responses contributed little to the model sum of squares. Body weight accounted for the majority of the model sum of squares. Depriving lambs of food for 24 h slightly improved the R2 value and significantly decreased scan responses (P < .01). Body weight was a better predictor of chemical composition over a large weight range than any of the scan responses. Further investigation of the HA-2 is needed to determine whether it is effective in determining differences in live body composition between animals of equal weight.

The histology and composition of muscles from normal (n = 10) and callipyge (n = 11) wether lambs was compared. Normal Rambouillet ewes were mated with callipyge Dorset rams, and their progeny were visually classified as callipyge or normal based on muscle definition in the loin and hind quarters. The muscles examined included three muscles that hypertrophy in callipyge lambs (semitendinosus, longissimus, and gluteus medius) and one muscle believed not to hypertrophy (supraspinatus). The hypertrophy-responsive muscles from callipyge lambs had a higher (P < .001) percentage of fast-twitch glycolytic (FG) fibers and lower (P < .001; P < .02 for SO in gluteus medius) percentages of slow-twitch oxidative (SO) and fast-twitch oxidative glycolytic (FOG) fibers. The diameters of the FG and FOG fibers were larger (P < .005 and P < .04, respectively) in hypertrophy-responsive muscles from callipyge lambs, but the SO fiber diameter was smaller (P < .05). Also, the protein:DNA ratio, an indicator of cell size, was greater (semitendinosus, P < .05); longissimus, P < .002; gluteus medius, P < .008) in the hypertrophy-responsive muscles from callipyge lambs. Thus, hypertrophy in callipyge lambs was, at least in part, due to fiber type changes and muscle cell enlargement. Hypertrophy was strongly associated with changes in the FG fibers, the only fiber type that increased in both proportion and average diameter in callipyge muscles. The protein:RNA ratio and RNA:DNA ratio, which are indicators of translational and transcriptional activity in the muscle cells, were not different between callipyge and normal muscles. This indicated that the accumulation of protein necessary for myofiber enlargement occurred without differences in the translational or transcriptional activity of callipyge muscle.
