Condensed tannins (CT) in wine are derived from the seeds and skins of grapes, and their composition and content contribute to the bitterness/astringency characteristics and ageing potential of the wine. Global warming has accelerated the ripening process of grape berries, making them out of sync with seed ripening. To understand the influence of berry ripening on the seed CT composition and content, we analyzed the changes in the soluble and insoluble CT in the seeds of 'Cabernet Sauvignon' grapes from two vineyards over two years. The results showed that the seed-soluble CT presented a slight downward trend in fluctuation during grape berry development, while the insoluble CT increased continuously before the véraison and remained at a high level afterwards. Relatively speaking, a lower sugar increment in developing grape berries favored the conversion of seed CT towards a higher degree of polymerization. The terminal unit of soluble CT was dominated by epigallocatechin gallate, the content of which decreased as the seeds matured. It is suggested that the seeds should be fully matured to reduce this bitter component in tannins. This study provides a reference for us to control the grape ripening process and produce high-quality grapes for wine making.

The effects of two different freezing temperatures (- 20 °C and - 80 °C) on the astringency trait of persimmon fruits during 15 to 60 days of storage were investigated. The levels of soluble and insoluble tannins, proanthocyanidins and other physicochemical characteristics were evaluated. Storage at - 20 °C and - 80 °C temperatures up to 60 days has been found to be an effective method to remove astringency of persimmon fruits. Proanthocyanidin concentration was negligible at both temperatures during storage. Total soluble solid contents were decreased as 3.34 from 4.59 (mg/g DW) whereas, insoluble tannin contents were increased as 20.30 from 16.45 (mg/g DW) by freezing temperatures treatment during storage. Comparatively, higher soluble tannin content 11.68 (mg/g DW) and lower insoluble tannin content 10.02 (mg/g DW) was observed in control (day 0). Therefore, the astringency of persimmon fruits incubated at - 20 °C and - 80 °C was markedly reduced and after 15 up to 60 days of storage, the astringent taste virtually disappeared. The proanthocyanidin contents were decreased as 0.02 from 0.52 (mg/g DW) at - 20 °C storage and 0.17 from 0.47 (mg/g DW) at - 80 °C storage, in comparison with the control 2.65 (mg/g DW). The moreover, along with the removal of astringency, other physicochemical parameters including color, pH, moisture content, total soluble solid, and sensory attributes were also conserved on freezing at both the temperatures. These findings suggest that freezing temperature treatments aid the removal of astringency from persimmon fruits which could be used in different food preparations or as supplements.

Non-astringent persimmon (Diospyros kaki Thunb.) paste is typically produced by treating astringent persimmon fruit with alcohol or dry ice (to remove tannins) followed by abrasion. However, considering the large yield of astringent persimmons harvested in a short time, this long, laborious method has hindered the use of persimmon paste in food processing. Herein, the addition of polysaccharides was used to produce a non-astringent persimmon paste while maintaining its quality. Among the nine evaluated polysaccharides, high- (HM) and low-methoxyl (LM) pectins, carrageenan, xanthan gum, and sodium alginate exhibited high astringency removal efficiencies. No astringency recurrence was observed after freezing when HM or LM pectin, guar gum, carrageenan, or sodium alginate were added. Moreover, the addition of HM pectin, or LM pectin, or sodium alginate prevented astringency upon heating. Additionally, guar, xanthan, tara gum, or carrageenan effectively inhibited syneresis. Thus, high-quality pastes could be easily and efficiently produced using a combination of polysaccharides.

Persimmon is a climacteric perishable fruit with a short storage life. In recent years, using natural compounds that are safe for human health and environment have obtained more attention in postharvest investigations. The current research was conducted to study efficacy of postharvest L-arginine treatment at 0, 0.3, and 0.6 mM in improving chilling tolerance and maintaining the nutritional quality of persimmon fruit during low-temperature storage. According to the results, the highest weight loss (4.3%), malondialdehyde (MDA (5.8 nmol g-1 FW)), and hydrogen peroxide (H2O2 (22.33 nmol g-1 FW)) was detected in control fruit. Fruit firmness was gradually decreased during storage, but it was slower in L-arginine-treated fruit. The highest tissue firmness (3.8 kg cm-2) was noted in fruit treated with 0.6 mM L-arginine. The chilling was gradually increased during storage. Fruits treated with L-arginine showed a lower chilling injury than the control fruit. Total soluble tannin compound and antioxidant enzymes activities in persimmons declined during cold storage. L-arginine treatment significantly maintained antioxidant enzymes activity, antioxidant capacity, and total soluble tannin compounds, while L-arginine had no significant impact on titratable acidity and total soluble solids. It seems that a reduction in oxidative damage and an increase in quality of persimmon during low-temperature storage manifested several defense mechanisms induced by exogenous application of L-arginine. These findings indicated that the application of L-arginine to maintain the quality and increase postharvest life of persimmon is very useful and can be applied during cold storage.

The crucial features of persimmon are required to detect real-time moisture, water-soluble tannin, and soluble solids contents during the drying process. This study developed a method based on hyperspectral imaging (HSI) to execute online and non-destructive assaying of persimmon features. A total of 144 samples were collected, and 150 bands were scanned. The spectral data were analyzed by partial least squares regression (PLSR), principal component regression (PCR), least squares support vector regression (LS-SVR), and radial basis function neural network (RBFNN) with seven preprocessing methods. LS-SVR provided excellent performance for moisture content prediction, while PLSR was better in the analysis of water-soluble tannin and soluble solids contents. Successive projection algorithm (SPA) was used to select the optimal wavelengths to simplify the models, and about twenty important variables were chosen. Overall, these results indicate that HSI could be considered a valuable technique to quantify chemical constituents in dried persimmon fruits.

O objetivo do trabalho foi avaliar a eficácia da aplicação de subdosagens de etanol na remoção da adstringência de caqui 'Giombo'. Além disso, foi avaliada a influência da temperatura e do tempo de exposição ao etanol no processo de destanização dos frutos. Assim, foram testadas diferentes doses de etanol (1,75; 3,5 e 7mL kg-1 ou 0,3 e 0,6mL L-1 de câmara-1), tempos de exposição (6, 12, 24 e 36h) e temperaturas de aplicação dos tratamentos e de armazenamento após a aplicação (5, 20 e 24°C). A exposição dos frutos à concentração de 1,75mL de etanol, durante 12 horas, foi suficiente para destanizar completamente os frutos. Após a aplicação dos tratamentos, os frutos levaram quatro dias para estarem aptos ao consumo. A refrigeração de caquis 'Giombo', após o tratamento com etanol, não influenciou o posterior processo de polimerização dos taninos solúveis.


The objective of this research was to evaluate ethanol sub-doses efficacy on the astringency removal of 'Giombo'. Additionally, it was evaluated the influence of temperature and ethanol exposure time on fruit deastringency. Thus, experiments were carried out with different exposition times (6, 12, 24 and 36h) and ethyl alcohol concentrations (1.75; 3.5 e 7mL kg-1 or 0.3 and 0.6mL L-1 of chamber). Fruit exposition to ethanol concentration of 1.75mL during 12 h was sufficient to remove completely the persimmon fruit astringency. After the treatment application, the fruits needed 4 days to become suitable to consumption. The process of tannin polymerization is not influenced by cold storage.
