RESUMO

The effect of rapid carcass chilling on breast meat quality was evaluated using commercial (COMM) and random-bred (RB) turkeys. Immediately after slaughter, 48 turkeys from COMM or RB line were randomly subjected to one of four chilling methods: 1) water-immersion chilling (WIC) of the carcasses at 0°C ice slurry, 2) WIC after temperature abuse (TA) of the carcasses at 40°C for 30 min (TA-WIC), 3) hot-boning, quarter sectioning, and crust-freeze-air-chilling (HB-(1)/4CFAC) of breast fillets at -12°C, and 4) HB-(1)/4CFAC of fillets after TA of carcasses (TA-HB-(1)/4CFAC). The TA increased carcass and fillet temperatures by ∼1.3 and ∼4.1°C, respectively, regardless of turkey line, whereas HB-(1)/4CFAC of fillets required 28 and 33% of carcass chilling time for COMM and RB, respectively. During chilling, COMM breast pH rapidly reduced from 6.04 to 5.82, resulting in a significantly lower pH than RB after chilling (P < 0.05), whereas COMM R-value sharply increased from 1.17 to 1.43, causing no difference from RB (P > 0.05). Significantly higher L* value and cooking yield (P < 0.05) were seen in the samples of TA and WIC than those of no TA and HB-(1)/4CFAC, respectively, with no difference observed between COMM and RB fillets (P > 0.05). Higher values of hardness, gumminess, and chewiness were found for RB, no TA, and HB-(1)/4CFAC gels than COMM, TA, and WIC, respectively. These results generally indicated that protein quality and textural properties of turkey fillets were improved, regardless of strains or temperature abuse, using HB-(1)/4CFAC technology.

Commercial turkey production has increased greatly in recent decades. Along with increased production, problems with turkey meat quality have also increased. Research with other species has demonstrated that differences in meat quality exist among pigs and cattle differing in characteristics such as fearfulness. However, associations between fear responses and postmortem (PM) muscle characteristics related to the meat quality of turkeys have not been examined. This study evaluated the test-retest repeatability of responses of male commercial (COMM) and randombred (RB) turkeys in an open field (OF) test, which is used to assess fear and activity levels of poultry. Another objective of this study was to evaluate the relationship between behavioral OF responses and PM breast muscle characteristics (pH and R-value) that are related to meat quality. Thirdly, this study evaluated differences in pH and R-value between the turkey lines. Male COMM and RB turkeys were each housed in groups in 4 pens. Turkeys were individually tested in an OF (2.74×2.74 m, divided into 81 squares) at 1, 4, and 11 wk (COMM N=27; RB N=33). Turkeys were then grouped into clusters based on a cluster analysis of OF behavior. Turkeys were processed and meat quality characteristics were evaluated at 15-17 wk for COMM and 20-21 wk for RB turkeys. Results were analyzed using a mixed model (SAS 9.4). Breast muscle pH and R-value did not differ between genetic lines, and there were no differences in pH and R-value among clusters within genetic lines. These findings suggest that OF responses measured during rearing are not related to PM breast muscle pH and R-value, which ultimately affect meat quality. Further research is needed to assess whether other types of fear responses are associated with meat quality and whether differences in R-value between genetic lines are associated with differences in other meat quality characteristics.

The environmental sampling of layer housing systems is essential to identifying potential pathogens that are of concern to human health. To identify the natural occurrence of pathogens (Listeria, Campylobacter, and Salmonella) at various locations in a cage-free aviary housing system, swabs were collected when hens were 22 to 39 wks of age. Duplicate environmental swabs were taken and inoculated with a low dose (101 cfu) Salmonella Enteritidis (SE) and examined for the recovery of SE from environmental samples. Detection of Listeria (P < 0.0001) and Campylobacter (P < 0.0001) varied between the environmental sample types taken: concrete dust, drag swabs, egg belt dust, manure belt scraper swabs, and wall dust. Detection of Listeria (P < 0.0001) was the highest (70.0%) at the beginning of the study (22 wk) and decreased over time. Detection of Campylobacter (P < 0.001) was also the highest at 22 wk, however the decrease over time was more gradual. Interestingly, detection of Campylobacter (P < 0.0001) was the greatest in concrete dust samples (96.25%), which can be attributed to the presence of rodent excreta in the samples. Drag swabs and manure belt scraper swabs were the best sampling types for high detection of Listeria and Campylobacter. It should be noted that Listeria recovered was not of human health concern. No naturally occurring Salmonella was identified in this study. The recovery of the SE inoculum increased over time, reaching the greatest recovery in drag (81.25%; P < 0.0001), egg belt dust (100.00%; P < 0.0001) and wall dust swabs (100.00%; P < 0.0001) by 39 wk. This high rate of SE recovery occurred just before US mandatory SE environmental monitoring at 40 to 45 wks of age. Based on this study, the use of drag and manure belt scraper swabs are effective in detecting Listeria and Campylobacter in cage-free aviary housing. Along with good pest management, the occurrence of pathogens could be monitored and reduced in laying hen flocks.

Providing environmental enrichments that increase environmental complexity can benefit poultry welfare. This Poultry Science Association symposium paper is structured around four themes on 1) poultry preferences and affective states 2) species-specific behavior, including play behavior and the relationship between behavior, activity level and walking ability, 3) environmental enrichment and its relationship with indicators of welfare, and 4) a case study focusing on the application of enrichments in commercial broiler chicken production. For effective enrichment strategies, the birds' perspective matters most, and we need to consider individual variation, social dynamics, and previous experience when assessing these strategies. Play behavior can be a valuable indicator of positive affect, and while we do not yet know how much play would be optimal, absence of play suggests a welfare deficit. Activity levels and behavior can be improved by environmental modifications and prior research has shown that the activity level of broilers can be increased, at least temporarily, by increasing the environmental complexity. However, more research on impacts of enrichments on birds' resilience, on birds in commercial conditions, and on slow(er)-growing strains is needed. Finally, incorporating farmers' expertise can greatly benefit enrichment design and implementation on commercial farms.

The fast growth rate of broiler chickens is a welfare concern that has increased consumer interest in chicken from slower growing (SG) broilers. Replacing conventional (CONV) broilers with SG broilers will reduce chicken supply and SG broilers require different management practices than CONV. This study evaluated the effects of 2 stocking densities on the carcass composition and meat quality of CONV broilers that reach market weight at 42 d and SG broilers that reach market weight at 63 d. Male broilers from each strain were exclusively stocked into 16 pens at a density of either 29 kg/m2 or 37 kg/m2. Live body, carcass without giblets (WOG), and part weights were recorded and used to calculate yield. Initial and 24-hour pH, color (L*, a*, and b*), cooking loss, and Warner Bratzler shear force of the breast and thigh muscles were measured. Birds from both strains reached similar live body and carcass WOG weights. CONV had 3.4%, 13.0%, and 2.8% greater (P ≤ 0.002), carcass WOG, breast, and tenderloin yields, while SG had 2.7%, 5.0%, 7.5%, and 1.2% greater (P < 0.0001) wings, leg quarters, frame, and skin yields, respectively. CONV breast 24-h pH and cooking loss were greater (P ≤ 0.04) than SG. While SG thigh shear force was greater than CONV (P = 0.008), breast shear force was the lowest for CONV stocked at 29 kg/m2 and the greatest for SG stocked at 37 kg/m2 (P = 0.04). SG had a paler breast than CONV, while CONV had a yellower breast than SG (P < 0.0001). While SG had a redder thigh than CONV (P = 0.002), SG stocked at 29 kg/m2 had a redder breast than SG stocked at 37 kg/m2, with both CONV groups intermediate (P = 0.04). These results indicate that differences in male broiler meat quality were affected more by strain than by stocking density. Compared with CONV, SG broiler meat quality was more affected by stocking density in this study.

The effectiveness of a pneumatic nonpenetrating captive bolt (Zephyr) was assessed for on-farm euthanasia of turkeys and compared with blunt force trauma, manual cervical dislocation, and mechanical cervical dislocation using a burdizzo. The Zephyr (n = 46) and burdizzo (n = 26) were evaluated in turkey hens (11.4 +/- 0.1 kg), the Zephyr (n = 46) and blunt trauma (n = 32) were evaluated in turkey toms (13.1 +/- 0.2 kg), and the Zephyr (n = 12), blunt trauma (n = 11), and manual cervical dislocation (n = 7) were evaluated in broiler turkeys (4.1 +/- 0.3 kg). The nictitating membrane and pupillary light reflexes were monitored continuously to determine when insensibility occurred. Time of death was estimated based on the end time of convulsions and sustained absence of breathing. The nictitating membrane reflex was present immediately after treatment in all 26 hens killed with a burdizzo versus 8 of 46 hens killed with the Zephyr (P < 0.001). The presence of eye reflexes did not differ between the Zephyr and blunt trauma for toms (1 of 26 toms killed with blunt trauma, 2 of 44 toms killed with the Zephyr, P = 1.0). The nictitating membrane reflex persisted in a greater proportion of broiler turkeys killed with cervical dislocation (7 of 7) versus the Zephyr (0 of 12, P < 0.001) and blunt trauma (2 of 9, P = 0.003) but did not differ between blunt trauma and the Zephyr (P = 0.2). End time of convulsions did not differ between the Zephyr and burdizzo for hens (204 +/- 8 vs. 114 +/- 10 s, P = 0.5) or between the Zephyr and blunt trauma for toms (200 +/- 7 s vs. 218 +/- 11.8 s, P = 0.4) but was shorter after cervical dislocation in broiler turkeys (cervical dislocation: 138 +/- 13 s, Zephyr: 165 +/- 7 s, blunt trauma: 178 +/- 13 s, P < 0.001). Results demonstrated that the Zephyr (discharged twice in immediate succession) and blunt trauma (single hit) were similarly effective at consistently causing immediate insensibility. Conversely, neither method of cervical dislocation caused immediate insensibility. This study may assist in revising current poultry euthanasia recommendations.

Consumer concern for broiler welfare has increased interest in chicken from slower growing (SG) broiler strains. Broilers from SG strains take longer to reach market weight, which may necessitate differences in management practices, such as stocking density. This study evaluated the effects of 2 stocking densities on production performance, body conformation, and welfare of broilers from 2 strains. Broilers from strains that reach market weight at age 42 D (CONV; N = 284) and at 63 D (SG; N = 284) were exclusively stocked into pens at a density of either 29 kg/m2 or 37 kg/m2. Birds were provided the same starter, grower, and finisher diets with diet phase changes occurring when SG bird body weight (BW) matched CONV. Live BW, body length, pelvic width, shank length, shank width, keel length, breast width, and breast depth were collected at 4 phases: Phase 1-chick placement, Phase 2-starter, Phase 3-grower, and Phase 4-finisher. At Phase 4, footpad dermatitis (FPD), hock burn (HB), and toe damage (TD) were scored. Feed conversion ratio (FCR) and mortality for each pen were recorded throughout the study. Final BW was similar (2.68 kg) for both strains and stocking densities of birds (P > 0.05). CONV bird FCR was 35% more efficient than SG (P < 0.0001). CONV birds had shorter bodies and shanks compared with SG birds at Phases 3 and 4 (P < 0.05). Slower growing birds stocked at 37 kg/m2 had the longest bodies and keel bones at Phase 4 (P < 0.01). Also at Phase 4, SG birds stocked at 29 kg/m2 had the lowest prevalence of HB (4%), yet the highest prevalence of TD (28%; P < 0.01). These results indicate differences in the effects of strain and stocking density on male broiler conformation, performance, and welfare and highlight the importance of tailoring management practices to the strain of broiler raised.

Stocking density, the amount of space available per animal, greatly affects the welfare of commercial turkeys. For example, stocking density has been found to affect behavior such as injurious pecking; production, such as growth rates and feed efficiency; and health-related aspects, such as leg health and the incidence of airsacculitis. Current industry guidelines and standards for turkey space requirements and stocking densities vary, and they are different from those that have been examined scientifically. Scientific research into stocking density effects on turkey behavior, welfare, and productivity have been conducted in experimental settings with flock sizes that are much different from those in the commercial turkey industry. There is currently little information available regarding how much space turkeys require for particular behavioral activities. This paper reviews the current industry guidelines and standards as well as scientific literature pertaining to stocking densities for commercial turkeys.

Three experiments were conducted to assess brain damage resulting from percussive bolt shooting and cervical dislocation by crushing (neck crushing) in turkey hens (mean [se] bodyweight 11.4 [0.1] kg); percussive bolt shooting and blunt trauma in turkey toms (13.1 [0.2] kg); and percussive bolt shooting, blunt trauma and cervical dislocation by stretching (neck stretching) in broiler turkeys (3.9 [0.3] kg). Brain and skull damage were assessed using macroscopic and microscopic evaluations and CT. Macroscopic subcutaneous haemorrhage was significantly greater with the percussive bolt in all three experiments (hens P=0.01, toms P=0.02, broilers P=0.0003), and skull fractures were more severe for toms (P<0.0001) and broilers (P=0.03) killed with the percussive bolt versus blunt trauma. In a subsample of turkeys, microscopic brain damage was present in all turkeys killed by percussive bolt shooting (five hens, 10 toms and four broilers) and blunt trauma (nine toms and three broilers), but only in one of four turkeys killed by neck crushing and one of four turkeys killed by neck stretching. Percussive bolt shooting and blunt trauma most likely caused death by directly disrupting brain function, whereas neck stretching and neck crushing probably resulted in death from cerebral hypoxia and ischaemia.
