RESUMO

The aim of this study was to evaluate the influence of different storage temperatures and delivery system of the milk on the microbiological and physicochemical characteristics of Grana Trentino, a long-ripened hard-cooked Italian cheese. In particular, 3 kinds of milk storage and delivery were studied: milk delivered to the dairy in the traditional manner without temperature control, milk delivered at 18°C, and milk stored at the farm and delivered at 12°C. Milk, natural whey starter, and cheeses after 18 mo of ripening were sampled for microbiological profiles, physicochemical analysis, and proteolysis evaluation, and a study of cheese volatile compounds through a solid-phase microextraction gas chromatography-mass spectrometry technique was performed. Milk microbiota was not affected by any of the treatments. At the end of ripening, free fatty acid and ester contents were significantly higher in cheeses from milk without temperature control. This was probably due to the milk delivery to the dairy in churns causing the fat globule membrane break during transport and, consequently, a greater release of fat and deeper lipolysis. Milk refrigeration at 12°C for 12h before delivery affected the distribution of nitrogen fractions in cheeses. Lower temperatures of milk storage favored a larger soluble nitrogen fraction and greater cheese proteolysis, probably caused by an enhanced plasmin activity. From this work, it is concluded that both milk temperature storage and transport system could affect cheese ripening, leading to significant differences in chemical compounds: if milk was delivered by churns, higher free fatty acid and ester content in cheeses was observed; if milk was stored at 12°C for 12h before delivery, greater cheese proteolysis was induced with consequent faster ripening.

The lactic acid populations of 2 seasonal Puzzone di Moena cheeses made from winter and summer raw cow's milk were characterized at different ripening times. Lactic acid bacteria (LAB) were isolated on selective media and subjected to genetic typing and identification. The species most frequently found during ripening were Lactobacillus paracasei ssp. paracasei, Lactobacillus plantarum, and Pediococcus pentosaceus. The different strains recognized by random amplification of polymorphic DNA-PCR were characterized for their acidifying and proteolytic activities to select nonstarter LAB to be used as secondary adjunct cultures (SAC). For each of the 3 above species, a strain showing weak acidification and high proteolytic capacity was selected. The 3 strains (Lb. paracasei ssp. paracasei P397, Lb. plantarum P399, and P. pentosaceus P41) constituted a mixed SAC used at 2 levels of concentration (10(3) and 10(4) cfu/mL) in experimental cheese making at dairy factory-scale. The analysis of volatile organic compounds as well as sensory analyses showed that the preferred level of SAC inoculation was 10(3) cfu/mL.

RESUMO

The authors conducted a study of 30 hospitalized children who were referred for psychiatric consultation and 60 hospitalized children who were not. They studied the medical charts of these children and administered a questionnaire including a checklist of behavioral symptoms to their parents. More psychopathology was found in the children referred for consultation, but about 20 percent of the children not referred also showed a high degree of psychopathology. Factors found to be associated with referral for psychiatric consultation were older age, longer hospital stay, many previous hospitalizations, and ambiguous diagnoses.

RESUMO

The transition from residency to the active practice of psychiatry is a difficult, complex, and relatively unexplored one for both men and women. Women who have faced this transition have only recently begun to share experiences, problems, fantasies, and special knowledge. The authors illustrate career choices for women that have aspects which are different from those male residents must consider and which create transitional problems. They suggest two possible strategies to those who supervise women professionals during this transition. The first is an active counseling program at the end of residency training, adequately staffed by professional men and women. The second strategy for a new psychiatrist would be to participate in a continuing women's group.

Comparison of diagnoses of childhood depression from four sets of criteria (i.e., Research Diagnostic Criteria, DSM-III, and those of Poznanski and Weinberg) used with 65 children referred to a psychiatric clinic showed complete agreement in 56 (86%) of the cases. The major disagreement resulted from differences between the clinician's rating of dysphoria based on the child's nonverbal behavior and the child's and parent's verbal report of no dysphoria. Analyses of the essential symptoms of depression among the four criteria sets indicated that the nonverbal rating was most strongly associated with a diagnosis of depression and the best predictor of the severity of depression.

RESUMO

Sleep disturbances, including disturbances in REM sleep, are common among depressed adults; it is unclear if the same is true for depressed adolescents. The authors monitored the sleep of 13 depressed adolescents and 13 normal age-matched controls. They found that, as with depressed adults, REM latency was significantly shorter and REM density significantly greater in the depressed group. There was no correlation between reduced REM latency and severity of depression, but there was a significant negative correlation between REM latency and age.

The authors evaluated 18 dysphoric children aged 6--12 years by structured clinical assessments and an overnight dexamethasone suppression test (DST) administered on an outpatient basis. Nine children met diagnostic criteria for major depressive disorder, and 8 of the 9 also met the Research Diagnostic Criteria for endogenous depression. Of the 9 depressed children, 5 had abnormal DST results; 8 of the 9 nondepressed children had normal test results. The results suggest that endogenous depression in childhood is not a rare condition and that it is clinically and neuroendocrinologically similar to the adult disorder. The DST may be useful as a diagnostic aid with depressed children.

A rating scale is needed for clinical and research studies of depression in childhood. A Children's Depression Rating Scale (CDRS) was devised and tested on 30 inpatient children in a medical hospital. A high correlation was found between the global ratings by two psychiatrists of the severity of depression and the scores on the CDRS. The items on the CDRS which had the highest correlation with a global rating of depression were social withdrawal, capacity for fun, irritability, schoolwork, expressive communication, general somatic features, hypoactivity, and depressed mood. The syndrome of depression in childhood can be characterized and rated primarily by observed behaviors.

The Children's Depression Rating Scale is a useful and reliable instrument for measuring the severity of depression in children. The scale was initially used in a pediatric liaison population. This study reports its use in consecutive admissions to a child inpatient unit. Systematic evaluations of the children resulted in many diagnoses of depression which were missed by the clinical staff. Two relatively inexperienced raters did nearly as well as two raters who originated the scale, suggesting that the CDRS may have practical utility in many settings.

OBJECTIVE: This paper reports data on the prevalence of morbid thoughts of death or injury and the experiences of violence for a sample of 6 to 12 year old urban school children and examines the relationship of these thoughts and experiences to the child's emotional health. METHOD: Fifty-seven of the sample of 223 children who attended the same inner-city school described violent events occurring to themselves, a relative or friend. All children were interviewed and assessed on the Children's Depression Rating Scale-Revised (CDRS-R). RESULTS: Significantly higher CDRS-R sum scores, indicating the presence of suspected depression or of clinical concern, were recorded for the 57 children reporting experiences with violence. As well, the subgroup of 57 children were significantly more distressed by specific symptoms of low self-esteem, weeping, and worries about death or injury. CONCLUSIONS: Finding so many children reporting violent events occurring in their homes and community and that these children's experiences of violence were associated with emotional disturbances such as depression, dysphoric mood, low self-esteem, and excessive fears and worries about death or injury suggests the need for routine examination of the history of exposure to violence in the evaluation of inner-city children.

Nostrano di Primiero is a 6-month ripened cheese produced from raw milk collected in the Paneveggio-Pale di San Martino Natural Park area in the Italian Dolomites. In summer, this cheese is made using milk collected from two different areas, Passo Rolle and Vanoi, in the Paneveggio Natural Park. During the experiment, the milk from the two areas was separately processed, and cheeses were made in the same cheese factory using the same technological process. The microbiota of raw milk and cheeses of the two areas was isolated and the dominant population was monitored by RAPD analysis and identified by 16S rRNA sequence. The milk of the Passo Rolle area was mainly composed of mesophilic strains, thermophilic Streptococcus thermophilus, and low amounts of enterococci were also found; the milk of the Vanoi area was dominated by mesophilic microbiota mostly Lactococcus lactis ssp. cremoris and ssp. lactis and Lactobacillus paracasei ssp. paracasei. The plating of the natural starter culture revealed the presence of a relevant community of thermophilic cocci and lower amounts of enterococci. The dynamic population analysis showed the importance of the natural starter culture in the first 2 days of cheese ripening in both cheeses. Moreover, the large biodiversity observed in the raw milks was also detected in the cheeses during ripening. The Vanoi cheese was dominated by Enterococcus faecium and Streptococcus macedonicus in the first two days and mesophilic 21 Lb. paracasei ssp. paracasei became the most represented population after 15 days of ripening. In the first few days, the Rolle cheese was characterized by being mainly composed of thermophilic S. macedonicus and S. thermophilus and secondarily by mesophilic cocci. During ripening, the microbiota composition changed, and at 15 days, mesophilic lactobacilli were the dominant population, but later, this was mainly composed of mesophilic cocci and lactobacilli. The taxonomical identification by 16S rRNA sequence confirmed a large biodiversity related to raw milk microbiota and only five strains of S. macedonicus, Lactobacillus plantarum, 21 Lb. paracasei ssp. paracasei, Lactobacillus fermentum and E. faecium were detected in both cheeses.

Performance-Verbal IQ discrepancy scores are compared for 27 depressed and 15 nondepressed children all of whom experienced learning difficulties. Brumbach (1985) reported a significant association between depression and Performance IQ deficits for children with learning difficulties. In contrast to Brumbach's finding, no difference was observed in Performance IQ deficit between depressed and nondepressed children in the current study. Moreover, only 10% of depressed children showed such a deficit. This result differed significantly from Brumbach's findings (34%). Implications of these results are discussed within the context of nascent interest in the relationship between depression and learning disabilities.

The microbial composition and its spatial distribution of Grana Trentino, a hard Parmesan-like cheese, was determined, from vat milk to cheese. After cutting along the vertical axis of the cheese wheels, three layers were sampled diagonally across the cheese: under the cheese rind, an intermediate section and the cheese core. After two different ripening periods (9 and 18 months), the cheese samples were analysed using traditional culture dependent and culture independent methods. Milk samples were dominated by mesophilic and psychrophilic bacterial counts. Thermophilic bacteria (Lactobacillus helveticus) were found in high amounts in cooked whey and natural whey starter cultures. After 9 months of ripening, lactic acid bacteria (LAB) counts were higher than those after 18 months. Furthermore, the LAB numbers in the cheese core was lower than those under the rind or in the intermediate section. The main LAB species isolated from milk (Lactococcus lactis, Pediococcus pentosaceus, Streptococcus uberis and Lactococcus garvieae) were not found in the corresponding cheeses. Some differences were observed in the species composition among the three cheese sections. Microbiota under the rind and in the intermediate section was similar and dominated by Lactobacillus paracasei and Lactobacillus rhamnosus. The core, after 18 months of ripening, was characterized by a total absence of LAB. In each sample, all LAB were genotypically grouped and the different biotypes were subjected to several technological tests indicating that some non-starter LAB (NSLAB) displayed technological features that are favorable for the production of Grana Trentino cheese.
